Abstract
The killing of pigs for human consumption (slaughtering) can take place in a slaughterhouse or on farm. The processes of slaughtering that were assessed for welfare, from the arrival of pigs until their death, were grouped into three main phases: pre-stunning (including arrival, unloading from the truck, lairage, handling and moving of pigs); stunning (including restraint); and bleeding. Stunning methods were grouped into three categories: electrical, controlled atmosphere and mechanical. Twelve welfare consequences the pigs can be exposed to during slaughter were identified: heat stress, cold stress, fatigue, prolonged thirst, prolonged hunger, impeded movement, restriction of movements, resting problem, negative social behaviour, pain, fear and respiratory distress. Welfare consequences and relevant animal-based measures were described. In total, 30 welfare hazards that could occur during slaughter were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 29 hazards, which were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Corrective and preventive measures for these hazards were assessed: measures to correct hazards were identified, and management was shown to have a crucial role in prevention. Outcome tables linking hazards, welfare consequences, animal-based measures, origins and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences are proposed.

Abstract
The health and welfare of pigs was evaluated on the basis of the data on patho-anatomic findings obtained during the veterinary examination of pigs slaughtered in slaughterhouses in the Czech Republic in the period from 2010 to 2017. High numbers of lesions in organs found especially in lungs (finisher pigs 41%, sows 24% and piglets 52%), kidneys (finisher pigs 14%, sows 32% and piglets 15%) and liver (finisher pigs 12%, sows 18% and piglets 19 %) indicate impaired health and welfare of pigs transported for slaughter. The differences in the number of findings between finisher pigs, sows and piglets were statistically significant (p < 0.001). The character of most findings was chronic, which document health and welfare problems occurring on farms as a result of the current pig husbandry. However, acute findings were also detected and indicated processes occurring shortly before and during transport to the slaughterhouse. An important finding is the incidence of parasitic lesions in the liver in finisher pigs (finisher pigs 4%, sows 1% and piglets 1%) that documents persistent occurrence of parasitic invasions on pig farms. Findings of traumatic lesions on limbs in sows and piglets (finisher pigs 0.08%, sows 0.14% and piglets 0.15%) are far below the frequency of the findings in organs; however, their incidence should be further reduced by adjusting the technology of housing, transport and handling. In conclusion, the level of health and related welfare of pigs based on the assessment of post mortem findings in the slaughterhouses vary. Overall, the worst situation is in piglets, followed by sows and the best evaluated are finisher pigs. Post mortem inspection revealed significant numbers of patho-anatomic changes even in pigs considered fit to be transported to the slaughterhouse and slaughtered for human consumption. It is clear that there is still a considerable space for improving the level of health and welfare of the individual categories of pigs.

Abstract
One of the biggest ethical issues in animal agriculture is that of the welfare of animals at the end of their lives, during the process of slaughter. Much work in animal welfare science is focussed on finding humane ways to transport and slaughter animals, to minimise the harm done during this process. In this paper, we take a philosophical look at what it means to perform slaughter humanely, beyond simply reducing pain and suffering during the slaughter process. In particular, we will examine the issue of the harms of deprivation inflicted in ending life prematurely, as well as shape of life concerns and the ethical implications of inflicting these harms at the end of life, without the potential for future offsetting through positive experiences. We will argue that though these considerations may mean that no slaughter is in a deep sense truly 'humane', this should not undermine the importance of further research and development to ensure that while the practice continues, animal welfare harms are minimised as far as possible.

Abstract
Between November 2016 and October 2017, 23 horse transports from 18 collection points to two slaughterhouses in Argentina and one in Uruguay were monitored. The goal of this study was to characterize the current practices in commercial horse transports and to detect potential threats to horse welfare. A total of 596 horses were transported over an average distance of 295 ± 250 km. Average transport duration was 294 ± 153 min. The infrastructure did not always promote smooth loading, but the amount of horses that refused to enter the trailers was limited. In each loading space, a camera was mounted to observe horse behaviour during the journey. Ambient temperature and relative humidity (RH) were recorded every five minutes in each loading space. In 14 of the 23 transports, the maximum temperature rose above 25 °C and the average temperature was over 25 °C during six transports. The average temperature humidity index (THI) exceeded 72 during six transports. The average stocking density was 1.40 ± 0.33 m2 per horse, or 308 ± 53 kg/m2. The degree of aggression differed between the front and rear loading space. Stocking density, environmental parameters, trailer characteristics, and transport duration and distance did not influence aggressiveness.

Abstract
Animal welfare within the U.S. slaughter industry continues to prevail as one of the top priorities for livestock producers, businesses, and consumers alike. There are federal regulations that enforce the humane transport, handling, and slaughter of cattle. The journey that cattle must make to the slaughter facility is comprised of many environmental and human factors that can positively or negatively affect animal welfare. Cattle may be exposed to multiple stressors, such as noise, unfamiliar animals and humans, temperature extremes, temporary food/water deprivation, variable transport distances and experiences, and new pen conditions. The animal caretakers involved in these processes attempt to minimize stress and discomfort for the animals, but research is needed to focus on the gaps in knowledge and to support the implementation of strategies known to enhance the human-animal interactions that occur from farm to slaughter. This literature review will provide a summary of fed cattle welfare topics, research, and industry tools that span across the beef animal's journey from the farm/feedlot through the slaughter process. In addition, areas that have had little research focus are identified to highlight the need for future work and development of industry tools. Some of these topics include examining trailer design, the use of trailer slats during weather extremes, the welfare aspects of cattle destined for salvage slaughter, multiple preslaughter factors and interactions, abnormal mobility and nonambulatory cattle, lairage environmental conditions, new stunning methods, and the impact of a well-trained, motivated, and stable workforce on cattle and people welfare. The authors conducted a survey at the 2019 North American Meat Institute Animal Care and Handling Conference, which comprised of stakeholders within the meat packing industry, packing plant employees, and food company employees, educators, and auditors. The survey responses identified training/education and communication as areas of need in animal welfare, whereas the majority of survey responses focused on the aspects of the human-animal interaction as the top challenges for the industry. By continuously identifying, measuring, monitoring, and managing animal welfare challenges within the beef cattle slaughter industry, prioritization and execution of programs and training that improve the welfare of cattle can be achieved as animals move through this final stage of the meat production system.

Abstract
Including Denmark, modern pig production typically involves annual culling rates close to 50%. One important professional group in this process are livestock drivers transporting the animals to slaughter. By use of oral interviews, we aimed to describe experiences and opinions of Danish livestock drivers transporting sows, regarding fitness for transport and management choices relevant for animal welfare. All livestock drivers (N = 30) associated with a large slaughterhouse in Denmark accepting sows were approached in person, after having unloaded sows, and asked questions by an interviewer. A total of 22 livestock drivers (73%) answered all questions, constituting of a heterogeneous group of men of varying age, level of experience, time since they achieved the legally required certificate of competence, and daily involvement in sow transportation. Among livestock drivers included in the present study, doubt about fitness for transport was not uncommon, and specific reasons underlying their doubt were listed. All respondents reported to have experienced having to reject loading a cull sow who had been selected for slaughter by a herd manager, and approximately 40% did this several times a year. In contrast, almost 50% had never experienced having a sow rejected by the veterinarian at the slaughterhouse due to lack of fitness for transport. When asked about their management of sows during transportation, the majority (71%) reported using special condition transport (use of extra bedding and partitions to separate individual sows from rest of the load) less than once per month. All respondents considered hot days a problem for welfare of sows and the majority reported to adjust air intake of trucks daily or several times per week. In addition, approximately half of the respondents mentioned stationary periods (e.g., mandatory driver rests) as a challenge to sow welfare, to a degree where they had violated regulation on mandatory driver rests for the sake of welfare of the sows. The present study is among the few to focus on livestock drivers transporting sows, including questions about management choices and the animals' fitness for transport. The findings may form basis for future development of educational programs for drivers as well as for the formulation of hypotheses for future studies in this area, characterized by complicated underlying legislation and challenges to animal welfare.

Abstract
Simple Summary The role of knife sharpness in slaughtering animals, from the perspective of animal welfare, is likely subconsciously ignored by the masses involved in the abattoir industry. This might be due to the difficulty in objectively quantifying the sharpness of a knife. Furthermore, a small incremental improvement in sharpness might result in a huge productivity trade-off at the abattoir when the slaughterman needs to dedicate more time to sharpen their blades in between slaughters. This study attempts to assess the effects of sharp and commercial sharp knives on the pain and stress levels of animals. After objectively measuring the sharpness of knives with an ANAGO® sharpness tester, animals were slaughtered with commercial sharp and sharp knives. The results obtained from blood and brain activities related to pain and stress revealed that the two sharpness levels had different effects on the stress and pain level in animals, suggesting that the sharp knife produced the least amount of stress and pain in animals compared to those slaughtered using a commercial sharp knife. Abstract The sharpness of the knife used for slaughter is of the utmost importance from an animal welfare perspective. The quantification of knife sharpness is almost impossible in abattoirs. The sharpness of the knife blade used to slaughter an animal, as well as its effects on animals’ pain and stress levels, is an important area of investigation that needs to be addressed. The objective of this study was to evaluate the effects of knife sharpness on blood biochemical parameters, plasma catecholamines, and electroencephalographic (EEG) responses. Twenty Brahman crossbred steers were either subjected to slaughter with a sharp knife (n = 10) or a commercial sharp knife (n = 10); knife sharpness was measured with the ANAGO® sharpness tester. There was significant increase in adrenaline (p < 0.0001), glucose (p = 0.0167), creatinine kinase (p = 0.0123) and lactate dehydrogenase (p = 0.0151) at post-slaughter compared to pre-slaughter in commercial sharp knife group than in thesharp knife group. A significant increase was observed in the median frequency (p < 0.0001) and total power (p < 0.0001) of the EEG, the parameters for pain and stress, in the animals slaughtered with the commercial sharp knife than those slaughtered with the sharp knife. Thus, EEG results also supported the hormonal and biochemical results. From the results, it is concluded that animals slaughtered with a sharp knife experienced the least amount of pain and stress compared to those slaughtered with a commercial sharp knife.

Abstract
1. In this study, classical and molecular microbiological methods for detection and quantification of Campylobacter spp. were used to estimate their prevalence in faecal samples and skin swabs collected from 31 broiler flocks (20 farms) in Portugal, and measure the impact of transport-related factors on the expected rising excretion rates from the farm to the slaughterhouse. 2. Data on husbandry practices and transport conditions were gathered, including time in transit, distance travelled or ante-mortem plant-holding time. 3. A generalised linear mixed model was used to evaluate the significance of a potential post-transport rise in Campylobacter spp. counts and to assess risk determinants. 4. At least one flock tested positive for Campylobacter spp. in 80% of the sampled farms. At the slaughterhouse, Campylobacter spp. were detected in all faecal samples, C. jejuni being the most commonly isolated. 5. A post-transport rise of Campylobacter spp. counts from skin swabs was observed using classical microbiological methods (from a mean of 1.43 to 2.40 log10 CFU/cm2) and molecular techniques (from a mean of 2.64 to 3.31 log10 genome copies/cm2). 6. None of the husbandry practices or transport-related factors were found to be associated with Campylobacter spp. counts. 7. This study highlights the need for more research to better understand the multi-factorial nature of Campylobacter spp., a public health threat that was found to be highly prevalent in a sample of Portuguese poultry farms.

Abstract
Many cows culled from dairy farms arrive at livestock markets or abattoirs in compromised condition, but it is unknown whether cows are compromised at the time of culling or deteriorate during the marketing process. This study followed cull cows from farm to abattoir, monitored any deterioration, and tested the effect of providing such information on subsequent culling. For 11 mo, data were collected from 20 dairy farms, livestock markets, and abattoirs. Cows' body condition, lameness, and udder condition (as binary outcomes) were assessed at 4 points: when placed on the culling list, before leaving the farm, at auction, and at the abattoir. Based on the first 5 mo of data (baseline period), information materials were provided to 10 randomly selected farms (Informed treatment), and the other 10 served as a Control. Logistic mixed models were used to test differences in cows' condition at the 4 points of assessment, using the assessment before leaving the farm as a reference value and cow-within-farm as a random effect. The effects of providing information on outcome measures (proportion thin, severely lame, with udder edema, poor fitness for transport, euthanized, and died) were tested with a general linear model. As demand for milk increased during the baseline period, additional linear mixed models were fitted to test whether the same outcome measures were affected by time (baseline or treatment period) and treatment (Informed or Control) using farm as a random effect. While cows were on the culling list (before shipping) the odds of being thin or having poor fitness for transport increased. After leaving the farms, cows spent (mean ± standard deviation) 82 ± 46 h in the marketing system before being slaughtered. Shipping from farm to abattoir increased the odds of being thin, having udder edema, or showing poor fitness for transport [odds ratio (OR) 5.8, 95% confidence interval 4.2 to 8.1; OR 14.7, 10.7 to 20.2; and OR 7.3, 5.7 to 9.5, respectively]. Providing this information to farmers (Informed treatment) did not affect the outcome measures. Compared with the baseline, during the treatment period fewer cows were shipped when thin (4.9 versus 9.0%) and with poor fitness for transport (15.7 versus 25.8%), and fewer cows died (5.4 versus 11.9%) or were euthanized (13.3 versus 20.5%). Increased demand for milk appeared to lead to delayed culling, such that more compromised cows were sent to slaughter. The results of this study show a need for clear and specific guidelines to assess fitness for transport of cull dairy cows.

Abstract
Olive tree leaves are characterized for having not only a potent antioxidant power but also effects on glucose and lipid metabolism. The impact of the individual oleuropein (OLE), vitamin E + Se (VE), or a combined supplementation of oleuropein, vitamin E, and selenium (VEOLE) was evaluated on pig plasma metabolites under fasting prior to slaughter. VEOLE and OLE had lesser n-3 plasma polyunsaturated fatty acids and greater monounsaturated free fatty acids compared to control. The n-3-fatty acid mobilization was directly correlated with greater cystine and inversely with oxidized glutathione/reduced glutathione (GSSH/GSH) levels. This faster use of n-3 fatty acids might act as an indicator of glutathione synthesis mediated by an increase of cystine in plasma. Different correlations and linear adjustments were observed between plasma antioxidant power and free cystine, free glycine, free glutamine, monounsaturated free fatty acids, and total n-3. The best response to stress was found in VEOLE. Cortisol reached the greatest positive correlation with plasma total n-3 fatty acids, which suggests a faster uptake of n-3 for biological functions such as stress control or energy supply in the brain. From a practical point of view, an enhanced oxidative status as well as control of physiological stress prior to slaughter by the combined antioxidants supplementation might have positive effects on pork quality.

Abstract
Globally, China is one of the largest producers and exporters of meat, and animal welfare is an emerging focal issue for Chinese society and for primary producers. We assessed the effectiveness of a "train the trainer" program to increase awareness of animal welfare issues in stakeholders in the livestock industries of China. Chinese abattoir employees were trained in slaughter and transportation standards in either a classroom setting or using posted materials. They subsequently held training sessions within their own workplace and the participants were surveyed either before (n = 161) or after (n = 147) their training. The post-training group had more confidence to improve the welfare of animals in their care than the pre-training group (p = 0.03), and also scored better on the knowledge section of the survey (p = 0.006) only when the facilitator was trained in the classroom setting. The participants' knowledge of animal welfare was also affected by living area (p = 0.005) and education (p = 0.005). Participants with the least formal education (to middle school only) scored lower than all other participants. Female respondents reported more positive attitudes towards animal welfare than males (p = 0.009). These results indicate that training can effectively improve stakeholder knowledge on animal welfare during slaughter and transport, however, the mode of delivery has an important influence on learning success, and participant demographics, such as gender and education level, need to be considered when preparing training material.

The processes of slaughtering that were assessed, from the arrival of birds in containers until their death, were grouped into three main phases: pre-stunning (including arrival, unloading of containers from the truck, lairage, handling/removing of birds from containers); stunning (including restraint); and bleeding (including bleeding following stunning and bleeding during slaughter without stunning). Stunning methods were grouped into three categories: electrical, controlled modified atmosphere and mechanical. In total, 35 hazards were identified and characterised, most of them related to stunning and bleeding. Staff were identified as the origin of 29 hazards, and 28 hazards were attributed to the lack of appropriate skill sets needed to perform tasks or to fatigue. Corrective and preventive measures were assessed: measures to correct hazards were identified for 11 hazards, with management shown to have a crucial role in prevention. Ten welfare consequences, the birds can be exposed to during slaughter, were identified: consciousness, heat stress, cold stress, prolonged thirst, prolonged hunger, restriction of movements, pain, fear, distress and respiratory distress. Welfare consequences and relevant animal-based measures were described. Outcome tables linking hazards, welfare consequences, animal-based measures, origins, and preventive and corrective measures were developed for each process. Mitigation measures to minimise welfare consequences were also proposed.

Simple Summary The purpose of this project was to determine how neural circuits were affected during warming by examining sensory neurons, the neuromuscular junction, and the cardiac function and behavior of the commercially important crustacean species, the red swamp crayfish (Procambarus clarkii). Various rates of heating at 1 °C/min, 12 °C/min, or 46 °C/min to 80 °C as well as placing crayfish directly in boiling water were examined. Sensory nerves and the neuromuscular junction will stop working at 44 °C within two minutes. The heart ceases functioning fastest (within 10 s) when placing the crayfish directly in boiling water, which is the quickest method to kill them while minimizing exposure to noxious stimuli. Rapid inactivation of neural function in crustaceans prior to slaughter is important to limit exposure to noxious stimuli, thus improving animal welfare. This study demonstrated that as a crayfish is warmed at 1 °C/min, the heart beat stops at 44 °C. When temperature is rapidly increased, at 44 °C synaptic transmission at the neuromuscular junction ceases and primary sensory neurons stop functioning. Even though animals do not respond to stimuli after being warmed to 44 °C, if sensory neurons are returned to 20 °C saline after two minutes, they may regain function. Conversely, the neuromuscular junction does not regain function after two minutes in 44 °C saline. Examining behavior and heart rate while warming at 1 °C/min, 12 °C/min, or 46 °C/min to 80 °C indicated that at approximately 40 °C the heart rate is altered. Within 10 s at 80 °C, the heart stops with the highest heating rate. Directly placing crayfish in boiling water stopped the heart quickest, within 10 s, which likely represents denaturing of the tissue by heat. Using an impedance measure to detect a heartbeat may also be influenced by movements in the denaturing process of the tissue. A rapid increase in the temperature of the crayfish above 44 °C is key to limit its exposure to noxious stimuli.

Abstract
The number of broilers slaughtered globally is increasing. Ensuring acceptable welfare conditions for birds at the time of slaughter is paramount in meeting legislative and retailer specifications, and in producing high quality meat. There is knowledge that welfare training programs for members of the farming and red meat slaughter industry can improve animal welfare measures and product quality, however there is little evidence of the effects of welfare training in poultry processing plants. In our study, a comprehensive welfare training program was introduced to a Costa Rican and a British commercial broiler primary processing plant, both of which slaughter birds by way of neck cut post electrical water bath stunning. The effects of this program on some welfare and product quality measures were investigated, both immediately and six months post training. The welfare measures that showed significant improvements post training included; flapping at shackling, pre-stun shocks, stun parameters and effective neck cut. Product quality measures including broken wings and red pygostyles also improved, however the positive effect of training was not seen in all quality measures. Welfare training does have the potential to improve broiler welfare and product quality at slaughter, and these data could help the development and targeting of future welfare training courses and encourage the uptake of welfare training in the poultry slaughter industry.

Simple Summary While legislation can be implemented, amended or revoked according to the requirements of a given time period, this is very difficult or even impossible with religious laws due to their sanctity. Faithful Muslims believe in the sanctity of the main Islamic laws (Quran and Hadiths) because, according to them, they originated from heavenly and divine sources (God and his prophet Muhammad). The technological means of the meat industry are constantly evolving to meet the requirements of the present day and may sometimes be inconsistent with ancient religious norms. Recently, greater attention has been paid to the halal meat industry due to the increased size of the Muslim community in Europe; the opportunity of producing and exporting meat and meat products to the Islamic world; and the ease of delivery, trade and transport. The purpose of this study is to highlight some of the controversial aspects of modern technological means and the principles of the halal meat industry. The controversial aspects that this study deals with include the practices of modern slaughter (animal fasting prior to slaughter, the animal’s body position during slaughter, the location of the incision during bleeding, stunning and mechanical slaughtering). This review may contribute to raising awareness among producers and consumers and to finding means of technology compatible with halal criteria. Abstract The halal meat industry is today a reality in many regions of the world, including the European Union. The main religious laws in the area of halal meat production were legislated in ancient times and may be unchangeable due to their sanctity perceived by faithful Muslims, while the modern technology used in the meat industry is constantly evolving and being updated. The objective of this study is to highlight the points of controversy between the principles of halal and the technological means currently used in the meat industry. Modern slaughter practices, including animal fasting prior to slaughter, animal body position, the location of the incision during slaughter, stunning and mechanical slaughter, are reviewed. The purpose of preslaughter feed availability according to halal criteria could be to ensure greater welfare for animals, though feed withdrawal is necessary today. Although there is no clear unified opinion among the Islamic sects, reversible stunning of animals is generally accepted. A neck cut at a higher position than the conventional low cut in cattle may reduce the compromise in welfare (the onset of unconsciousness), minimise false aneurysm and be compatible with halal criteria. This study may contribute towards consideration being given to technology that is not in conflict with the religious legislation, while at the same time meeting the requirements of the modern meat industry.

Abstract
The slaughter of pregnant cattle gives rise to ethical controversy. We estimated the prevalence of pregnant cattle, elucidated the reasons for their slaughter, and in light of our findings, discussed the ethics of sending pregnant cattle for slaughter. Among 825 female cattle >353 days of age admitted to a Danish abattoir, 187 (23%) were found to be pregnant. There was no apparent difference in the proportion of pregnant animals between dairy and non-dairy cattle. "Health"-related slaughter was most frequent in dairy herds (70%), whereas "production"-related slaughter was most frequent in non-dairy herds (63%). While many farmers considered it unethical to slaughter pregnant cows without a good reason for doing so, many dairy farmers identified animal welfare as an important parameter in the decision, which was typically when the general condition of the cow or heifer would make it difficult for her to pass through calving and subsequent lactation. The many pregnant animals sent for slaughter were often the result of deliberate choices. Non-dairy farmers often kept a bull with their female cattle, and in many instances, this resulted in the mating of cattle intended for slaughter. Although considered ethically problematic by many dairy farmers, the slaughter of pregnant dairy cattle was often considered better for the cow compared to a stressful lactation period.

Abstract
Low atmospheric pressure stunning (LAPS) is a novel approach to pre-slaughter stunning of chickens using progressive hypobaric hypoxia by the application of gradual decompression (280s cycle) according to a set of prescribed pressure curves. Low atmospheric pressure stunning produces a non-recovery state. Concerns have been raised relating to the possible pathological and welfare consequences of expansion of air in the body during LAPS. In a randomised trial, we compared the gross pathology of broilers exposed to LAPS with a control group euthanised by intravenous injection of pentobarbital sodium (60 mixed sex broilers per treatment). The birds were exposed to each treatment in triplets and all birds were subject to necropsy examination to detect and score (1 to 5, minimal to severe) haemorrhagic lesions or congestion for all major organs and cavities (e.g. air sacs, joints, ears and heart) as well as external assessment for product quality (e.g. wing tips). Behavioural data (latency to loss of posture and motionless) and chamber cycle data (temperature, humidity, pressure and oxygen availability) confirmed that LAPS had been applied in a manner representative of the commercial process. All of the organs observed were structurally intact for both treatment groups. No lesions were observed in the external ears, oral cavity, tracheal lumen, crop and air sacs of birds from either treatment group. There was no difference between treatments in the wingtips, nasal turbinates, thymus, biceps femoralis and colon. Haemorrhagic lesions were observed in the calvaria, brains, hearts and lungs of both treatment groups, but lesions in these areas were more severe in the LAPS treatment group. It was not possible to distinguish between pathological changes induced by decompression or recompression. In the barbiturate group, more severe haemorrhagic lesions were observed in the superficial pectoral muscles as well as greater congestion of the infraorbital sinuses, liver, spleens, duodenum, kidneys and gonads. These findings provide evidence that LAPS did not result in distension of the intestines and air sacs sufficient to cause changes, which were grossly visible on postmortem examination. There was also no evidence of barotrauma in the ears and sinuses. The pathological changes observed in the barbiturate treatment were as expected based on barbiturate toxicity. Low atmospheric pressure stunning appears to produce pathological changes by a variety of well-established mechanisms, and while these pathological data have limited value as welfare indicators, the results confirm that organ integrity was not compromised by the process.

Abstract
1. The objectives of this study were to measure the exposure of workers to dust when shackling poultry in abattoirs, and to identify the most effective measures to prevent human exposure to dust. The relationship between respiratory health of workers and their occupational exposure to dust was assessed. 2. Exposure to dust (aerial particles inhaled through the nose and mouth) exceeded the occupational exposure limit (maximum 10 mg/m3 over 8 h) in 65 out of 109 workers from 27 abattoirs, in the context of high levels of ambient aerial dust in small, closed shackling cubicles. Ceiling air ducts for supply of air reduced worker exposure to dust in these buildings. 3. Two-thirds of the 86 workers interviewed reported work-related respiratory symptoms. The self-reported risk of suffering from coughing tended to be associated with the highest exposure to inhalable dust and respiratory dust (aerial particles penetrating up to alveoli) observed in the study. 4. The present study demonstrates that workers may be exposed to considerable amounts of dust when shackling birds before stunning.

Abstract
Preslaughter stunning; the induction of unconsciousness and insensibility of animals prior to slaughter, is an important process for the welfare of livestock. The application of stunning is required by legislation in some countries, and rarely practised in others. In order to effectively advocate the implementation of stunning in the regions that do not include the practice as standard, it is first important to understand attitudes towards stunning, barriers to implementing stunning, and stakeholder willingness to embrace the practice. To this purpose, 17 focus group sessions were held with leaders in livestock production in China, Malaysia, Thailand, Vietnam, India and Bangladesh. Leaders were asked to rate their perceived willingness of livestock stakeholders to embrace stunning, and their rationales were discussed. In addition to this, the leaders were asked to present ideas to improve the willingness of stakeholders to embrace stunning. The data were qualitatively analysed used thematic analysis, quantified, and presented within this manuscript. Importantly, different attitudes and solutions existed by country, mostly in line with the predominating religion within the country, and the stage of economic development. Concerns around nonstatic and constantly evolving animal welfare benchmarks were also presented as important factors impacting the adoption of stunning, and the technical methods used. The findings of this study may aid in the development of programs that aim to increase the adoption of preslaughter stunning practices, to the purpose of improving animal welfare during slaughter.

Simple Summary The potential to improve stakeholders’ knowledge of animal welfare in the livestock industries through training programs and its influence on their attitudes to livestock welfare is unclear. Stakeholders in East and Southeast Asia responded to a questionnaire on their knowledge of animal welfare considerations during livestock transport and slaughter, as well as indicating their attitudes towards the welfare of livestock at these times. They then received training, after which their knowledge scores increased. Knowledge scores had few connections to attitudes, but whether the respondents were certain or not about their attitudes to livestock welfare was most likely to have the strongest correlation to knowledge. Regional differences were evident and suggested that these differences should be considered in future training provisions. Abstract The World Organisation for Animal Health (OIE) sets standards and guidelines for international animal welfare for the international livestock trade. The growing economic advancement in the East and Southeast Asian region suggested the potential benefit of a research study to examine stakeholders’ understanding of animal welfare during the transport and slaughter of livestock. A survey of stakeholders’ knowledge of livestock welfare in the transport and slaughter industries was conducted in four Southeast Asian countries, Malaysia, China, Vietnam and Thailand, in association with trainer and stakeholder workshops conducted in each country. The attitudes of participants towards animal welfare during slaughter and transport were also identified. Knowledge scores were in accordance with the respondents’ assessment of their own knowledge level. The biggest knowledge improvement was among Thai respondents, who tended to be younger and less experienced than in other countries. The respondents with the biggest improvement in knowledge scores were most likely to be involved in the dairy industry and least likely to be involved in the sheep and goat industries, with meat processors and those involved in pig or poultry production intermediate. The respondents who obtained their knowledge from multiple sources had most knowledge, but it increased the least after training. Connections between attitudes to improving animal welfare and knowledge were limited, being mainly confined to ambivalent responses about their attitudes. The study suggests that knowledge can be improved in animal welfare training programs focused on livestock welfare around transport and slaughter, but that local cultural backgrounds must be considered in designing the program.

Abstract
Undetected injury of horses sustained during road transport to slaughter is a welfare concern. This study evaluated digital infrared thermography (DT) for the detection of ante-mortem bruising in horses following transport to a slaughter plant. The sensitivity and specificity of DT for the detection of bruises following transport was evaluated. DT images were obtained from 93 horses (2-3 horses per load; 40 loads) at a Canadian federally approved slaughter plant. From an elevated platform 5 m from the horses, left and right lateral DT images, and one caudal pelvic area image were obtained from each horse. After slaughter the carcasses were examined for bruising (a visually discolored area on the carcass caused by damage to the blood vessels) and findings documented. Sensitivity, specificity, and predictive values were calculated for DT assessment of bruising. The prevalence of bruising on post mortem inspection was 54%. The DT approach to bruise detection at the region of interest level of 93 horses (n = 186 sides) resulted in a sensitivity of 42% and specificity of 79%. As the sensitivity was low, a more sensitive DT camera and allowing for a longer equilibration time for horses after transport may improve this approach to post transport assessment of subclinical injury.

Abstract
There is community concern about the treatment of farm animals post-farm gate, particularly animal transport and slaughter. Relationships between lamb behavioural and physiological variables on farm, stockperson, dog and lamb behavioural variables pre-slaughter and plasma cortisol, glucose and lactate in lambs post-slaughter were studied in 400 lambs. The lambs were observed in three behavioural tests, novel arena, flight distance to a human and temperament tests, before transport for slaughter. Closed-circuit television video footage was used to record stockperson, dog and lamb behaviour immediately before slaughter. Blood samples for cortisol, glucose and lactate analyses were collected on farm following the three behavioural tests and immediately post-slaughter. The regression models that best predicted plasma cortisol, glucose and lactate concentrations post-slaughter included a mixture of stockperson and dog behavioural variables as well as lamb variables both on-farm and pre-slaughter. These regression models accounted for 33%, 34% and 44% of the variance in plasma cortisol, glucose and lactate concentrations post-slaughter, respectively. Some of the stockperson and dog behaviours pre-slaughter that were predictive of the stress and metabolic variables post-slaughter included the duration of negative stockperson behaviours such as fast locomotion and lifting/pulling lambs, and the duration of dog behaviours such as lunging and barking at the lamb, while some of the predictive lamb behaviour variables included the durations of jumping and fleeing. Some of the physiological and behavioural responses to the behavioural tests on farm were also predictive of the stress and metabolic variables post-slaughter. These relationships support the well-demonstrated effect of handling on fear and stress responses in livestock, and although not direct evidence of causal relationships, highlight the potential benefits of training stockpeople to reduce fear and stress in sheep at abattoirs.

Abstract
This guidance defines the process for handling applications on new or modified stunning methods and the parameters that will be assessed by the EFSA Animal Health and Welfare (AHAW) Panel. The applications, received through the European Commission, should contain administrative information, a checklist of data to be submitted and a technical dossier. The dossier should include two or more studies (in laboratory and slaughterhouse conditions) reporting all parameters and methodological aspects that are indicated in the guidance. The applications will first be scrutinised by the EFSA's Applications Desk (APDESK) Unit for verification of the completeness of the data submitted for the risk assessment of the stunning method. If the application is considered not valid, additional information may be requested from the applicant. If considered valid, it will be subjected to assessment phase 1 where the data related to parameters for the scientific evaluation of the stunning method will be examined by the AHAW Panel. Such parameters focus on the stunning method and the outcomes of interest, i.e. immediate onset of unconsciousness or the absence of avoidable pain, distress and suffering until the loss of consciousness and duration of the unconsciousness (until death). The applicant should also propose methodologies and results to assess the equivalence with existing stunning methods in terms of welfare outcomes. Applications passing assessment phase 1 will be subjected to the following phase 2 which will be carried out by the AHAW Panel and focuses on the animal welfare risk assessment. In this phase, the Panel will assess the outcomes, conclusions and discussion proposed by the applicant. The results of the assessment will be published in a scientific opinion. A total of 200 guinea fowl was reared in either barn or free-range systems and slaughtered at 14, 16, or 18 wk of age in order to determine the effects of production system on live weight, feed consumption, and some carcass and slaughter traits. Production system had a significant effect on live weight until 14 wk of age. Live weights were similar between free-range and indoor production systems at 16 (1,150 g vs. 1,152 g) and 18 (1,196 g vs. 1,203 g) wk of age. Guinea fowl reared in a free-range system consumed more feed (7,693 g vs. 6,983 g), and guinea fowl reared in a barn had better feed conversion ratio (5.80 vs. 6.43) (P < 0.05). Production system, gender, and slaughter age did not affect the dressing percentage. Guinea fowl reared in a free-range system had significantly less abdominal fat (P < 0.05).

Abstract
Each year 500.000 sows, equal to 50% of Danish sows, are culled and transported to slaughter. However, the clinical condition, behavior, and welfare of cull sows have received almost no scientific attention. The aim of the current observational study was to describe the clinical condition of cull sows on the day of transportation to slaughter, including examination of possible differences between lactating and nonlactating sows. On the day of transportation, the participating farms were visited by trained technicians who conducted a thorough clinical examination of all sows selected by the farmer for slaughter. Four sows could not be transported because they were unfit according to the European Council Regulation regarding fitness for transportation, and they were not included in the present data. A total of 522 sows, with a median parity of 5 (range: 1-11), from 12 Danish farms were included in the study. Approximately, 10% showed signs of changed gait, and 0.8% were obvious lame. Wounds were observed in 54.6% of the sows, and 11% had decubital shoulder ulcers. Almost 40% of the cull sows were lactating. At culling, the lactating sows were of higher parity than the nonlactating sows, and lactating sows were at higher risk of having deviations from normal on clinical variables related to examination of the udder, such as udder swellings and inflammations. Nonlactating sows had 3.5 times more superficial skin lesions than lactating sows. Our findings warrant for further studies exploring different aspects of the life of cull sows in what is here defined as the The Cull Period, which is the interval from the culling decision is made until the sows are slaughtered.
