Abstract
One of benthic organisms exposed to contact with mercury in the southern Baltic is alien species of clam: Dreissena polymorpha. As this organism is increasingly dynamic in various regions of the world including the southern Baltic region, it is reasonable to ask whether it tolerates elevated concentrations of xenobiotics? Does it effectively eliminate Hg? The study determined the effects of biometric parameters and water temperature on the rate of accumulation and efficiency of eliminating Hg from body. Investigations focused on the shell which represents poorly-recognized role in the process of Hg distribution in clams. The results showed that especially during warm season, clams effectively reduced the levels of Hg in their body by the biodilution of Hg and reproduction. Important factor influencing detoxification was Hg transfer from the soft tissue to the shell. This protects the soft tissue against the toxic effect of Hg.

Abstract
The current understanding of the interplay between blood selenium, cadmium and lead levels, and chronic kidney disease (CKD) is limited. Our objective was to investigate whether elevated blood selenium levels can mitigate the nephrotoxic effects of lead and cadmium. The exposure variables examined in this study include blood selenium, cadmium, and lead levels measured by ICP-MS. The outcome of interest was CKD, defined as an estimated glomerular filtration rate (eGFR) below 60 mL/min/1.73 m2. In total, 10630 participants (mean (SD) age:48.9 ± 18.4; 48.3% male) were included in this analysis. The median (IQR) of blood selenium, cadmium, and lead levels was 191 (177-207) μg/L, 0.300 (0.180-0.540) μg/L, and 0.940 (0.570-1.510) μg/dL, respectively. We observed a significant positive association between cadmium and lead levels and CKD (OR; 1.86; 95%CI: 1.31- 2.64; OR:2.23; 95%CI:1.54-3.24). However, selenium had a negative association with CKD (OR:0.096; 95%CI:0.020-0.457). Based on a reference group with a selenium concentration of ≤ 191 μg/L and cadmium level of > 0.300 μg/L, a significant protective factor in the CKD was seen in subjects with high plasma selenium and lower cadmium concentrations (OR:0.685; 95%CI:0.515-0.912). Then selenium concentration of ≤ 191 μg/L and lead level of > 0.940 μg/dL were set as a reference group, and the OR for CKD decreased among the other group (OR:0.564; 95%CI;0.417- 0.762). The subgroup analysis indicated that there were no effect modifiers. Blood selenium has the potential to mitigate the nephrotoxic effects of lead and cadmium in the general population of the United States.

Abstract
In this study, concentrations of 6 different elements (copper (Cu), tin (Sn), zinc (Zn), iron (Fe), cadmium (Cd) and lead (Pb)) in 9 different processed seafood (marinated and smoked mackerel, smoked mackerel, marinated octopus tentacles, marinated octopus salad, marinated squid salad, salted and dried mackerel, marinated and smoked anchovy, smoked salmon and smoked bonito) randomly taken from markets in Mugla province (West Anatolia, Turkey) were determined with the method of inductively coupled plasma mass spectroscopy (ICP-MS) after microwave wet digestion process. In addition, risk assessment for consumer health was conducted by the determination of estimated daily intake (EDI), target hazard quotient (THQ), total target hazard quotient (TTHQ) and carcinogenic risk (CR). According to the obtained results, the seafood product samples with the highest concentrations of each metal were marinated and smoked anchovy for Fe (65.85 ± 16.03 mg kg-1), marinated and smoked anchovy for Zn (64.58 ± 25.16 mg kg-1), marinated octopus salad for Cu (26.33 ± 17.76 mg kg-1), smoked mackerel for Sn (0.42 ± 0.18 mg kg-1), smoked mackerel for Pb (0.28 ± 0.18 mg kg-1) and marinated squid salad for Cd (0.31 ± 0.12 mg kg-1). According to risk assessment for consumer health, it was found that EDI results did not exceed the tolerable daily intake (TDI) values. As a conclusion, any risk for consumer health in terms of CR, THQ and TTHQ values was not detected in the examined samples.

Abstract
Canning, as a preservation technique, is widely used to extend the shelf life as well as to maintain the quality of perishable foods. During the canning process, most of the microorganisms are killed, reducing their impact on food quality and safety. However, the presence of a range of undesirable chemical contaminants has been reported in canned foods and in relation to the canning process. The present review provides an overview of these chemical contaminants, including metals, polymeric contaminants and biogenic amine contaminants. They have various origins, including migration from the can materials, formation during the canning process, or contamination during steps required prior to canning (e.g. the disinfection step). Some other can-packaged foods (e.g. beverages or milk powder), which are not canned foods by definition, were also discussed in this review, as they have been frequently studied simultaneously with canned foods in terms of contamination. The occurrence of these contaminants, the analytical techniques involved, and the factors influencing the presence of these contaminants in canned food and can-packaged food are summarized and discussed.

Abstract
Microplastics (MPs) have been documented in different foodstuffs and beverages, that could affect human health due to their ingestion. Furthermore, seafood contamination with MPs puts pillars of food availability and utilization at risk. The present study investigates MPs and toxic elements pollution in commercially canned fishes from Taif governorate markets. Seven different canned fishes’ brands were used in the present study from different manufacturer countries and purchased from Taif markets. Tissue samples were digested by 10% of KOH; then, dry filters were analyzed by Fourier-transform infrared spectroscopy to detect MPs. Filtrates were used to detect any potentially toxic elements by inductively coupled plasma. Different MPs were detected in edible tissue, such as canned Tuna contaminated with nylon, 1,2-polybutadiene, and ethylene vinyl alcohol. Sardines contain ethylene vinyl alcohol and poly(vinyl stearate), but Salmon does not have any MPs. Different elements were present in the selected samples in the decreasing order of Al > Se > Zn and traces of As and Sb. Canned fishes were contaminated with MPs and potentially toxic elements. This contamination could be a warning of the potential health risks with the long-term exposure. Therefore, it is recommended to include micro-, meso-, and even nanoplastics in the guidelines of testing food safety management systems.

Abstract
This work aimed to examine the influence of the storage period on the content of toxic elements (As, Cd, Hg, and Pb) in five types of canned meat products regularly used in the Serbian Armed Forces. Cans of beef goulash (BG), pork ragout (PR), spam (SP), liver pate (LP), and meatballs in tomato sauce (MB), produced according to military standards and stored under regular conditions, were analyzed. Meat products were packed in tin cans made according to special requirements in terms of tin and varnish application and stored for up to 6 years. The content of toxic elements varied depending on the analyzed product. The highest average content of arsenic was in BG (10.00 μg/kg), cadmium in LP (35.91 μg/kg), and mercury and lead in PR (15.04 and 8.00 μg/kg, respectively). The average concentrations of As, Cd, Hg, and Pb in all types of canned meat products were significantly lower than the maximum permitted levels in food currently in force by local and EU legislation. The storage period did not significantly affect the level of toxic elements, although higher concentrations were found in samples stored for more than 2 years. Examination of raw materials, spices, and additives showed that the highest Cd and Pb concentrations, which can affect the total level of these elements in meat products, were found in red ground pepper (Cd above 150 μg/kg) and dish supplement (Pb of 250 μg/kg). The assessment of the weekly intake of toxic elements through canned meat showed that it is significantly lower than the values that affect adversely to human health, as determined by the FAO/WHO and EFSA. However, as there is a constant possibility of contamination of raw materials and food additives, primarily due to environmental pollution, it is recommended to monitor the content of heavy metals in food permanently and assess their risk to human health.

Abstract
Objetivo El objetivo de este trabajo fue determinar la concentración de mercurio total (HgT) y metilmercurio (MeHg) en atún enlatado que se distribuye en la ciudad de Montería (Córdoba, Colombia).
Materiales y Métodos Se analizaron 160 muestras de cuatro marcas diferentes, identificadas como A, B, C y D y comercializadas de agosto a noviembre de 2017. Mensualmente se realizó un muestreo simple por atributo. El HgT y el MeHg fueron determinados usando un equipo DMA-80 (marca Milestone) y cromatógrafo de gases (Perkin Elmer Autosystem XL).
Resultados El promedio de HgT y MeHg fue 0,589 ± 0,163 y 0,536 ± 0,148 μg/g, respectivamente. La mayor concentración de HgT y MeHg en atún se presentó en la marca B (HgT: 0,792 ± 0,165; MeHg: 0,725 ± 0,127).
Conclusiones La evaluación del riesgo a la salud debido al consumo de atún enlatado, basado en la ingesta semanal estimada (ESI), sugiere que el consumo de atún de las diferentes marcas no asocia posibilidad de riesgo en la salud al grupo de adultos de la población (APG), al presentar valores por debajo de la ingesta semanal tolerable (3,2 μg/ kg/semana). Mientras que para los grupos de niños (N) y mujeres en edad fértil (MEF) representa riesgo para la salud el consumo del atún enlatado de la marca B, con la cual se superaría la ingesta semanal tolerable de 1,6 μg/kg/semana. Por lo tanto, se recomienda un monitoreo continuo de mercurio total y metilmercurio en atún enlatado.

Abstract
This study aims to quantify the selenium contribution from tuna to the Spanish diet and evidence the Se protective role against mercury and inorganic arsenic toxicity. Selenium concentrations in tuna were determined by ICP-MS spectrometry (expressed as mg kg-1), and the risk assessment was evaluated joined to Hg and iAs contrasting criteria of regulatory agencies with those that consider the Se protective role. Differences between Se average concentrations in fresh (1.24) and preserved (1.17) tuna were not statistically significant. In canned tuna species, Se presented higher mean levels in Thunnus albacares (1.28) than Thunnus alalunga (1.01) with statistically significant differences (p = 0.002), and among canned preparations a decreasing sequence was observed in different preparation-packaging media: oil (1.42) > natural (1.01) > pickled (0.92). Statistical study showed Hg-iAs as the only pair significantly correlated in all samples. The HI (sum of individual target hazard quotients -THQs-) on the consumption of tuna in Spain, due to exposure to Se, Hg and iAs, revealed the possibility of risk of adverse chronic effects in the six-year-old children group (1.09). According to the maximum allowable tuna consumption rate in meals/week (CRmw) and the THQs obtained, tuna intake, especially in children, should be moderated. The health benefit values (HBVSe) were positive in all samples, 14.53 and 15.65 in fresh and preserved tuna, respectively, which allows tuna to be considered safe. The benefit-risk value (BRV) evidenced the Se molar excess with respect to Hg that reached a surplus of 14.32% on Se AI in adults. Since iAs reduces the Se bioavailability, applying a new BRV criterion, the aforementioned percentage decreased to 13.49% of Se AI. In conclusion, tuna offers high levels of selenium to counteract adverse effects by the presence of Hg and iAs, and to provide consumers an important source of this essential element safely.

Abstract
Honeybees, due to their wide-ranging foraging behaviour, have great potentials for monitoring environmental quality. Therefore, the purpose of this study was to use honeybees as bioindicators for the detection of toxic and essential metals (Cd, Cr, Cu, and Fe) in the environment. Totally, 180 soil, plant (including root and aerial part), honeybees, and honey samples were collected from 12 sites within the main beekeeping and honey production regions in Markazi Province, Iran in 2016. After acid digestion of samples, the metal concentrations were measured by inductively coupled plasma-optical emission spectrometers. The translocation factor (TF), and bioconcentration factor (BCF) of metals were computed. The results showed that among the analyzed bee samples, Cd (mg kg-1) was detected in amounts ranging from 0.01 to 2.35, Cr (mg kg-1) ranged from 0.02 to 18.10, Cu (mg kg-1) ranged from 2.00 to 39.11, and Fe (mg kg-1) ranged from 163 to 1695. BCF and TF values obtained showed that the Astragalus gossypinus would have a great accumulation ability for Cd and Cr. The results indicated that honeybees could be used to detect the spatial patterns of metal contaminations in the environment they dwell in.

Abstract
Human and animals are exposed to heavy metals such as arsenic (As) and mercury (Hg) through atmospheric depositions, industrial effluents, chemical pesticides and fertilizers, erosion of geological beds, and mining wastes which can result in the contamination of food chains. The aim of the current study was to review the available papers reporting contamination levels of As and Hg in commonly consumed foods in Iran. A descriptive search was carried out with specific keywords and entry criteria in databases of Science-Direct, PubMed, Scopus, Google Scholar, and Scientific Iranian Database (SID) published from January 2000 to July 2018. All articles were assessed by two reviewers, and final decision was made through discussions or a third reviewer arbitration. The articles were categorized based on the type of food groups including rice, fruit, vegetable, fish, seafood, drinking water, tea, and miscellanies. Of 221 identified articles on As and Hg contaminations in foods, 92 articles were selected using defined criteria. Published articles were reviewed to report contamination (mean and rate) of each food group in Iran. Results showed that rice and fish included the highest contamination rates of As and Hg, respectively. In general, As and Hg contents in Iranian foods cause serious health concerns due to the consumption quantities of the main foods. Further risk-based surveillance studies must be carried out to decrease exposure to As and Hg from dietary and non-dietary sources.

Abstract
The purpose of this work was to evaluate the risk-benefit associated with canned sardine consumption, considering the selenium, the mercury and the methylmercury contents and the Se:Hg molar ratio and the Se-health benefit value (HBV) index. In this study, 63 canned sardine samples were purchased worldwide and for the determination of selenium and mercury species, the inductively coupled plasma optical emission spectrometry and thermal decomposition and amalgamation atomic absorption spectrometry were employed. The mean results obtained for the Brazilian samples varied between 12.6 and 65.5 μg kg-1 for Hg; <3.7 and 45.4 μg kg-1 for methylmercury; 310 and 1370 μg kg-1 for Se. The MeHg/Hg ratio showed that the most toxic forms of Hg (MeHg) is predominant in 52 and 39% of the Brazilian samples conserved in tomato sauce and in oil, respectively. Nevertheless, the Se-HBV index and the Hg:Se and Se:Hg molar ratios indicated that the selenium content in canned sardine samples is enough to provide a protective effect on the Hg species.

Abstract
Caviar may contain high levels of toxic metals. Therefore determination of health risk assessment of the heavy metals in this luxury product is vital. In this study, an Inductively Coupled Plasma-Optical Emission Spectrometer and a Direct Mercury Analyzer were used to assess the contents of elements in caviar of wild Persian sturgeon. The results showed that the contents of Ba, Cr, Fe, Hg, Mn and Zn (mgkg-1) in caviar samples were 0.95, 0.27, 71.3, 1.44, 0.01 and 17.0, respectively. Also, Health Risk Index values were within the safe limits (HRI<1), and there is no potential health risk for adults and children via consumption of caviar. Finally, considering the contents of Fe and Hg were higher than Maximum Permissible Limits in the caviar samples related to the discharge of pollutants into the aquatic environment, monitoring of chemicals accumulation in the foodstuff is recommended.

Abstract
The presence of mercury in tuna is ubiquitous, so national authorities should guarantee food safety of canned tuna available on the market, according to legal regulations. The objective of this survey was to assess total mercury (T-Hg) levels in brands of canned tuna marketed in Cartagena, Colombia, and determine fish consumption-based risks after ingestion. For that purpose, 252 cans of tuna were collected, representing 6 brands (A-F), in 2 mediums (water and oil). Mean T-Hg levels were 0.66 ± 0.05 and 0.61 ± 0.05 µg g-1 wet weight, for water and oil, respectively. High T-Hg concentrations were measured in brands B and D. Only brands E and F guaranteed low risk for Hg-related health problems. According to Colombia's legislation, 15.5% of the samples exceeded the maximum level of 1.0 µg g-1 for mercury and 18.3% was higher than limits as recommended by Food and Agriculture Organization/World Health Organisation (0.5 µg g-1). It was concluded that consumption of canned tuna could represent a high risk for the Colombian population, particularly to vulnerable groups.

Abstract
BACKGROUND Metal pollution of waterways directly affects human health and can impact the food chain. Seafood living in polluted water can accumulate trace metals. The purpose of this study was to analyze the toxic metals Pb and Cd and the dietary essential metals Zn and Mn in 120 cans of tuna species from four different brands processed in Iran and purchased in 2012. RESULTS The mean level of metals for each brands of canned fish obtained in mg/kg were as follows: yellowfin tuna (Pb: 0.19 ± 0.015, Zn: 5.77 ± 4.17, Mn: 0.08 ± 0.07, Cd: 0.15 ± 0.12), Kilka (Pb: 0.95 ± 0.88, Zn: 30.47 ± 29.82, Mn: 1.01 ± 0.73, Cd: 0.07 ± 0.05), Kawakawa (Pb: 0.28 ± 0.23, Zn: 6.77 ± 5.21, Mn: 0.17 ± 0.12, Cd: 0.12 ± 0.09), longtail tuna (Pb: 1.59 ± 1.56, Zn: 7.44 ± 6.11, Mn: 0.04 ± 0.03, Cd: 0.06 ± 0.04). Pb, Zn and Cd levels were generally higher than the FAO/WHO permissible limits (Pb: 0.50 mg/kg, Zn: 50.0 mg/kg and Cd: 0.50 mg/kg) and the European Union acceptable dietary limits. CONCLUSIONS Based on the United States Environmental Protection Agency health criteria, there is no health risk associated with Mn concentration in the samples analyzed. The limits of detection of the method for Pb, Zn, Mn and Cd in mg/kg were 0.01, 0.5, 0.01 and 0.01, respectively. The result of the one-way analysis of variance suggested significant variations (p < 0.05) in the concentration of the metals in the different types of canned fish with the following being outside of compliance levels.

Abstract
This work proposes a procedure for the determination of total selenium content in shellfish after digestion of samples in block using cold finger system and detection using atomic fluorescent spectrometry coupled hydride generation (HG AFS). The optimal conditions for HG such as effect and volume of prereduction KBr 10 % (m/v) (1.0 and 2.0 ml) and concentration of hydrochloric acid (3.0 and 6.0 mol L(-1)) were evaluated. The best results were obtained using 3 mL of HCl (6 mol L(-1)) and 1 mL of KBr 10 % (m/v), followed by 30 min of prereduction for the volume of 1 mL of the digested sample. The precision and accuracy were assessed by the analysis of the Certified Reference Material NIST 1566b. Under the optimized conditions, the detection and quantification limits were 6.06 and 21.21 μg kg(-1), respectively. The developed method was applied to samples of shellfish (oysters, clams, and mussels) collected at Todos os Santos Bay, Bahia, Brazil. Selenium concentrations ranged from 0.23 ± 0.02 to 3.70 ± 0.27 mg kg(-1) for Mytella guyanensis and Anomalocardia brasiliana, respectively. The developed method proved to be accurate, precise, cheap, fast, and could be used for monitoring Se in shellfish samples.

Abstract
Caviar (fish roe of sturgeon) may contain high levels of contaminants. An inductively coupled plasma-optical emission spectrometer and a direct mercury analyzer were used to assess the contents of four heavy metals (Hg, Se, Sn, and Ba) in caviar of wild Persian sturgeon sea foods. The levels of Hg ranged from 1.39 to 1.50 μg g(-1), Se from 0.90 to 1.10 μg g(-1), Sn from 0.23 to 0.33, and Ba from 0.71 to 1.17 µg g(-1). Evaluation of these levels showed that except for Hg, the average concentrations of other metals are significantly lower than adverse level for the human consumption when compared with Food and Agricultural Organization of the United Nations and World Health Organization permissible limits. Therefore, their contribution to the total body burden of these heavy metals can be considered as negligibly small given that caviar is a luxury product.
