Abstract
Chitosan nanocapsules containing polyunsaturated fatty acid (PUFA) concentrates from tuna oil, with EPA + DHA contents around 57% (w/w), were developed by emulsification process, using different chitosan concentration (1.0%, 1.5%, 2.0%, w/v) and stirring speed (10,000, 15,000, 20,000 rpm). The effects of these parameters on particle size and zeta potential were evaluated. The physical and oxidative stabilities were used to measure the product quality during storage. Chitosan concentration, stirring speed and its interaction significantly affected (p < 0.05) the particle size. In addition, chitosan concentration significantly affected (p < 0.05) the zeta potential of nanocapsules emulsion. Based on the results of physical and oxidative stabilities, the nanocapsules were stable for 30 days under refrigeration temperature (7 °C), and with 1.5-2% chitosan resulted in improved protection against oil oxidation. The nanocapsules produced with 2% chitosan and 10,000 rpm showed the lowest variations of polydispersity index and nanocapsules size after 30 days of storage (221.8 ± 3.0 nm). These conditions can be considered the most suitable to produce nanocapsules of PUFA concentrates from tuna oil using chitosan as wall material. These nanocapsules showed physical characteristics and oxidative stability, which could enable their application in the food industry, representing an important source of EPA and DHA fatty acids.

Abstract
The emulsions prepared with most currently reported emulsifiers are stable only at room temperature and are susceptible to demulsification at higher temperatures. This thermal instability prevents their use in high-temperature and high-salt environments encountered oilfield extraction. To address this issue, in this study, two temperature-responsive emulsifiers, PSBMA and CS-PSBMA, were synthesized. Both emulsifiers exhibited the ability to form stable emulsions within the temperature range of 60-80 °C and undergo demulsification at 20-40 °C. A comprehensive investigation was conducted to assess the impact of emulsifier concentration, water-to-oil ratio, and salt ion concentration on the stability of emulsions formed by these two emulsifiers. The results demonstrated their remarkable emulsification capabilities across diverse oil phases. Notably, the novel emulsifier CS-PSBMA, synthesized through the grafting chitosan (CS) onto PSBMA, not only exhibits superior emulsion stability and UCST temperature responsiveness but also significantly enhanced the salt resistance of the emulsion. Remarkably, the emulsion maintained its stability even in the presence of monovalent salt ions at concentrations up to 2 mol/L (equivalent to a mineralization level of 1.33 × 105 mg/L in water) and divalent salt ions at concentrations up to 3 mol/L (equivalent to a mineralization level of 2.7 × 105 mg/L in water). The emulsions stabilized by both emulsifiers are resilient to harsh reservoir conditions and effectively emulsify heavy oils, enabling high-temperature emulsification and low-temperature demulsification. These attributes indicate their promising potential for industrial applications, particularly in the field of enhanced oil recovery.

Abstract
Chitosan nanoparticles (CS-NPs) are currently under investigation for a wide range of applications in nanomedicine. We investigated the structural, morphological, and molecular properties of CS-NPs synthesized via ionic gelation and designed specifically for drug delivery. The CS-NPs were prepared at concentrations ranging from 0.25 to 1.0% w/v. The 1.0% w/v CS-NPs were also functionalized with polyethylene oxide (PEO) alone and with a diblock copolymer of PEO and polypropylene glycol (PPG). The average nanoparticle size determined from TEM imaging is in the 11.3 to 14.8 nm range. The XRD and TEM analyses reveal a semi-crystalline structure with a degree of crystallinity dependent upon the nature of CS-NP functionalization. Functionalizing with PEO had no effect, whereas functionalizing with PEO-PPG resulted in a significant increase in the crystallinity of the 1.0% w/v CS-NPs. Additionally, the CS/TPP concentration (CS:TPP fixed at a 1:1 ratio) did not impact the degree of crystallinity of the CS-NPs. FTIR analysis confirmed the incorporation of TPP with CS and an increase in hydrogen bonding in more crystalline CS-NPs.

Abstract
Chronic wounds are prone to fungal infections, possess a significant challenge, and result in substantial mortality. Diabetic wounds infected with Candida strains are extremely common. It can create biofilm at the wound site, which can lead to antibiotic resistance. As a result, developing innovative dressing materials that combat fungal infections while also providing wound healing is a viable strategy to treat infected wounds and address the issue of antibiotic resistance. Present work proposed anti-infective dressing material for the treatment of fungal strains Candida-infected diabetic foot ulcer (DFU). The nanofiber was fabricated using polyvinyl Alcohol/chitosan as hydrogel base and co-loaded with silver nanoparticles (AgNP) and luliconazole-nanoparticles (LZNP) nanoparticles, prepared using PLGA. Fabricated nanofibers had pH close to target area and exhibited hydrophilic surface suitable for adhesion to wound area. The nanofibers showed strong antifungal and antibiofilm properties against different strains of Candida; mainly C. albicans, C. auris, C. krusei, C. parapsilosis and C. tropicalis. Nanofibers exhibited excellent water retention potential and water vapour transmission rate. The nanofibers had sufficient payload capacity towards AgNP and LZNP, and provided controlled release of payload, which was also confirmed by in-vivo imaging. In-vitro studies confirmed the biocompatibility and enhanced proliferation of Human keratinocytes cells (HaCaT). In-vivo studies showed accelerated wound closure by providing ant-infective action, supporting cellular proliferation and improving blood flow, all collectively contributing in expedited wound healing.

Abstract
Nanofiber meshes from electrospun chitosan, highly modified with biotin and arylazides, are well-suited for application as enzyme immobilization matrices. To test this, catalytically active biomolecules were immobilized onto photocrosslinked nanofibrous nonwovens consisting mainly of biotinylated fungal chitosan and a small amount (10 w%) of poly ethylene oxide. In this study, we show that over 10 μg eugenol oxidase per milligram dry polymer matrix can be loaded on UV-crosslinked chitosan nanofibers. We further demonstrate that bound enzyme activity can be fully retained for over 7 days of storage at ambient conditions in aqueous buffer. Samples loaded at maximum enzyme carrying capacity were tested in a custom-made plug-flow reactor system with online UV-VIS spectroscopy for activity determination. High wettability and durability of the hydrophilic chitosan support matrix enabled continuous oxidation of model substrate vanillyl alcohol into vanillin with constant turnover at flow rates of up to 0.24 L/h for over 6 h. This proves the above hypothesis and enables further application of the fibers as stacked microfluidic membranes, biosensors, or structural starting points for affinity crosslinked enzyme gels. KEY POINTS: • Biotinylated chitosan-based nanofibers retain enzymes via mild affinity interactions • Immobilized eugenol oxidase shows high activity and resists continuous washing • Nanofiber matrix material tolerated high flow rates in a continuous-flow setup.

Abstract
Micro-nano metal-organic framework (MIL-68(Fe)) for efficient adsorption of azo anionic dye Congo red (CR) was successfully prepared by one-step hydrothermal method under acidic environment. And a MIL-68(Fe)/chitosan composite sponge (MIL-68(Fe)/CS) was prepared under the coating of chitosan (CS). After comparing the performance of MIL-68(Fe) and MIL-68(Fe)/CS, we focus on exploring MIL-68(Fe)/CS. It ensured the CR removal efficiency while reaching the adsorption equilibrium faster than MIL-68(Fe), and solved the defect that the powder was difficult to be stripped by water after adsorption. The physicochemical properties and surface morphology of the adsorbent were characterized by SEM, FTIR, XRD, TGA, BET, and Zeta potential. The effects of pH, contact time, adsorbent dosage, initial solution concentration and temperature on the adsorption performance of the adsorbent were systematically analyzed. The pseudo-second-order model and the Sips model were most consistent for the adsorption process, indicating that the adsorption process of MIL-68(Fe)/chitosan composite sponge on CR is a complex physicochemical process. The removal rates of CR by MIL-68(Fe) and MIL-68(Fe)/chitosan composite sponge reached the maximum values of 99.55 % and 99.51 % at 318 K, respectively. And the maximum adsorption capacity of CR by MIL-68(Fe)/chitosan composite sponge at 318 K was 1184.16 mg·g-1. After six cycles of adsorption and desorption, the removal rate of CR was still higher than 80 %. The synergistic effects of π-π stacking, electrostatic interactions, hydrogen bonding and pore filling have important effects on CR removal.

Abstract
Enzymes with industrial significance are typically used in biological processes. However, instability, high sensitivity, and impractical recovery are the major drawbacks of enzymes in practical applications. In recent years, the immobilization technology has attracted wide attention to overcoming these restrictions and improving the efficiency of enzyme applications. Chitosan (CS) is a unique functional substance with biocompatibility, biodegradability, non-toxicity, and antibacterial properties. Chitosan composites are anticipated to be widely used in the near future for a variety of purposes, including as supports for enzyme immobilization, because of their advantages. Therefor this review explores the effects of the chitosan's structure, molecular weight, degree of deacetylation on the enzyme immobilized, effect of key factors, and the enzymes immobilized on chitosan based composites for numerous applications, including the fields of biosensor, biomedical science, food industry, environmental protection, and industrial production. Moreover, this study carefully investigates the advantages and disadvantages of using these composites as well as their potential in the future.

Abstract
This study explores the fabrication of nanofibers using different types of gelatins, including bovine, porcine, and fish gelatins. The gelatins exhibited distinct molecular weights and apparent viscosity values, leading to different entanglement behavior and nanofiber production. The electrospinning technique produced nanofibers with diameters from 47 to 274 nm. The electrospinning process induced conformational changes, reducing the overall crystallinity of the gelatin samples. However, porcine gelatin nanofibers exhibited enhanced molecular ordering. These findings highlight the potential of different gelatin types to produce nanofibers with distinct physicochemical properties. Overall, this study sheds light on the relationship between gelatin properties, electrospinning process conditions, and the resulting nanofiber characteristics, providing insights for tailored applications in various fields.

Abstract
Chitosan is produced by deacetylating the abundant natural chitin polymer. It has been employed in a variety of applications due to its unique solubility as well as its chemical and biological properties. In addition to being biodegradable and biocompatible, it also possesses a lot of reactive amino side groups that allow for chemical modification and the creation of a wide range of useful derivatives. The physical and chemical characteristics of chitosan, as well as how it is used in the food, environmental, and medical industries, have all been covered in a number of academic publications. Chitosan offers a wide range of possibilities in environmentally friendly textile processes because of its superior absorption and biological characteristics. Chitosan has the ability to give textile fibers and fabrics antibacterial, antiviral, anti-odor, and other biological functions. One of the most well-known and frequently used methods to create nanofibers is electrospinning. This technique is adaptable and effective for creating continuous nanofibers. In the field of biomaterials, new materials include nanofibers made of chitosan. Numerous medications, including antibiotics, chemotherapeutic agents, proteins, and analgesics for inflammatory pain, have been successfully loaded onto electro-spun nanofibers, according to recent investigations. Chitosan nanofibers have several exceptional qualities that make them ideal for use in important pharmaceutical applications, such as tissue engineering, drug delivery systems, wound dressing, and enzyme immobilization. The preparation of chitosan nanofibers, followed by a discussion of the biocompatibility and degradation of chitosan nanofibers, followed by a description of how to load the drug into the nanofibers, are the first issues highlighted by this review of chitosan nanofibers in drug delivery applications. The main uses of chitosan nanofibers in drug delivery systems will be discussed last.

Abstract
Chitosan (CS) is a natural biopolymer from crab shells known for its biocompatibility and biodegradability; however, CS films are extremely rigid, limiting their applications. In this study, CS composite films were prepared based on the selective dissolution of lignin by deep eutectic solvents (DES), and the toughening effect of this DES/lignin on a CS film substrate was examined, along with its corresponding mechanism. The addition of DES/lignin effectively increased the plasticity of the CS film, giving a maximum elongation at break of 62.6 % for the plasticized film, which is 12.5 times that of the CS film. Fourier transform infrared spectroscopy and nuclear magnetic resonance analyses showed that molecules in the DES/lignin complex interacted with CS to break the hydrogen bonds between the CS molecules; simultaneously, each molecule recombined with the CS molecules via hydrogen bonding. Thus, the rigidity of the CS molecular chain was weakened to achieve a plasticized CS film, thereby demonstrating the ability of DES/regenerated lignin to improve the toughness of CS films, which provides a reference for modifying plasticity and could lead to the broader utilization of CS films.

Abstract
Currently, polyvinyl alcohol (PVA) and polyethylene oxide (PEO), as tissue engineering scaffolds materials, had been widely studied, however the hard issues in cell adhesive and antimicrobial properties still seriously limited their application in biomedical respects. Herein, we solved both hard issues by incorporating chitosan (CHI) into the PVA/PEO system, and successfully prepared PVA/PEO/CHI nanofiber scaffolds via electrospinning technology. First, the hierarchical pore structure and elevated porosity stacked by nanofiber of the nanofiber scaffolds supplied suitable space for cell growth. Significantly, the PVA/PEO/CHI nanofiber scaffolds (the cytotoxicity of grade 0) effectively improved cell adhesion by regulating the CHI content, and presented positively correlated with the CHI content. Besides, the excellent surface wettability of PVA/PEO/CHI nanofiber scaffolds exhibited maximum absorbability at a CHI content of 15 wt%. Based on the FTIR, XRD, and mechanical test results, we studied the semi-quantitative effect of hydrogen content on the aggregated state structure and mechanical properties of the PVA/PEO/CHI nanofiber scaffolds. The breaking stress of the nanofiber scaffolds increased with increasing CHI content, and the maximum value reached 15.37 MPa, increased by 67.61 %. Therefore, such dual biofunctional nanofiber scaffolds with improved mechanical properties showed great potential application in tissue engineering scaffolds.

Abstract
Curcumin (Cur) is a natural pigment with excellent biological activity. The poor stability and insolubility of Cur in water severely limit its application. Therefore, to overcome these dilemmas which are big hindrances in their application, a novel derivative (COCS-Cur) was prepared by the esterification reaction of carboxylated chitosan (COCS) and Cur. The structure and properties of conjugate were determined through a series of characterizations. The derivatives had excellent solubility as well as stability. In addition, antioxidant and photodynamic antibacterial experiments proved that COCS-Cur had the excellent free radical scavenging ability and photodynamic antibacterial activity. The derivatives presented a better antibacterial effect on Staphylococcus aureus (S. aureus) than Escherichia coli (E. coli). Noteworthy, the COCS-Cur derivatives showed no obvious toxicity which makes them a stronger contender and potential antimicrobial agent or functional nutrient for application in the food industry.

Abstract
Nanofibrous patches have attracted much attention as a solution to resolve drug delivery challenges. In this study, vitamin B12- loaded polyvinyl alcohol (PVA)/chitosan (Cs) nanofiber patch (NFP) was electrospun and cross-linked by glutaraldehyde (GA). The physicochemical properties of the nanofiber patches were assessed by morphological studies, FTIR analysis, hydrophilicity test, mechanical tests, and in-vitro evaluations including biodegradability, MTT assay, and cumulative release test of vitamin. In-vivo studies were also carried out by measuring vitamin B12 levels in the bloodstream and conducting histopathology studies on the animal models. The results showed that the mean diameter of Cs/PVA/B12 and cross-linked patch were approximately 207 and 256 nm, respectively. Cross-linking of NFP led to the lower, slower, and more continuous release of the vitamin with a slight decrease in biodegradability, and an increase in the mechanical properties of the nanofiber patches. Furthermore, the cytocompatibility assay, MTT, and in vivo results revealed no cytotoxicity of Cs/PVA/B12 NFP towards L929 cell line. No lesion or tissue damage was observed in the skin tissue of the animal models wearing these skin patches. Therefore, B12-loaded NFP can be introduced as a potential candidate for commercial transdermal routes.

Abstract
In this study, chitosan (CS) and 2-acrylamido-2-methylpropane sulfonic acid (AMPS)-based hydrogels were formulated by the free radical polymerization technique for the controlled release of gallic acid. Fourier transform infrared spectroscopy (FTIR) confirmed the successful preparation and loading of gallic acid within the hydrogel network. Differential scanning calorimetry (DSC) and thermogravimetric analysis (TGA) confirmed the increased thermal stability of the hydrogels following the crosslinking and polymerization of chitosan and AMPS. In X-ray diffraction analysis (XRD), the crystallinity of the raw materials decreased, indicating strong crosslinking of the reagents and the formation of a new polymeric network of hydrogels. Scanning electron microscopy (SEM) revealed that the hydrogel had a rough, dense, and porous surface, which is consistent with the highly polymerized composition of the hydrogel. After 48 h, the hydrogels exhibited higher swelling at pH 1.2 (swelling ratio of 19.93%) than at pH 7.4 (swelling ratio of 15.65%). The drug release was analyzed using ultraviolet-visible (UV-Vis) spectrophotometer and demonstrated that after 48 h, gallic acid release was maximum at pH 1.2 (85.27%) compared to pH 7.4 (75.19%). The percent porosity (78.36%) and drug loading increased with the increasing concentration of chitosan and AMPS, while a decrease was observed with the increasing concentration of ethylene glycol dimethyl methacrylate (EGDMA). Crosslinking of the hydrogels increased with concentrations of chitosan and EGDMA but decreased with AMPS. In vitro studies demonstrated that the developed hydrogels were biodegradable (8.6% degradation/week) and had antimicrobial (zone of inhibition of 21 and 16 mm against Gram-positive bacteria Escherichia coli and Staphylococcus aureus as well as 13 mm against Gram-negative bacteria Pseudomonas aeruginosa, respectively) and antioxidant (73% DPPH and 70% ABTS) properties. Therefore, the prepared hydrogels could be used as an effective controlled drug delivery system.

Abstract
Fresh and processed meat products are staple foods worldwide. However, these products are considered perishable foods and their deterioration depends partly on the inner and external properties of meat. Beyond conventional meat preservation approaches, electrospinning has emerged as a novel effective alternative to develop active and intelligent packaging. Thus, this review aims to discuss the advantages and shortcomings of electrospinning application for quality and safety preservation of meat and processed meat products. Electrospun fibres are very versatile, and their features can be modulated to deliver functional properties such as antioxidant and antimicrobial effects resulting in shelf-life extension and in some cases product quality improvement. Compared to conventional processes, electrospun fibres provide advantages such as casting and coating in the fabrication of active systems, indicators, and sensors. The approaches for improving, stabilizing, and controlling the release of active compounds and highly sensitive, rapid, and reliable responsiveness, under changes in real-time are still challenging for innovative packaging development. Despite their advantages, the active and intelligent electrospun fibres for meat packaging are still restricted to research and not yet widely used for commercial products. Industrial validation of lab-scale achievements of electrospinning might boost their commercialisation. Safety must be addressed by evaluating the impact of electrospun fibres migration from package to foods on human health. This information will contribute into filling knowledge gaps and sustain clear regulations.

Abstract
Caused by Toxoplasma gondii, toxoplasmosis has aroused great threats to public health around the world. So far, no effective vaccine or drug is commercially available, and the demands for a safe and effective therapeutic strategy have become more and more urgent. In the current study, we constructed a DNA vaccine encoding T. gondii ribosomal P2 protein (TgP2) and denoted as TgP2-pVAX1 plasmid. To improve the immunoprotection, nanomaterial poly-lactic-co-glycolic acid (PLGA) and chitosan were used as the delivery vehicle to construct TgP2-pVAX1/PLGA and TgP2-pVAX1/CS nanospheres. Before vaccinations in BALB/c mice, TgP2-pVAX1 plasmids were transiently transfected into Human Embryonic Kidney (HEK) 293-T cells, and the expression of the eukaryotic plasmids was detected by laser confocal microscopy and Western blotting. Then the immunoprotection of naked DNA plasmids and their two nano-encapsulations were evaluated in the laboratory animal model. According to the investigations of antibody, cytokine, dendritic cell (DC) maturation, molecule expression, splenocyte proliferation, and T lymphocyte proportion, TgP2-pVAX1 plasmid delivered by two types of nanospheres could elicit a mixed Th1/Th2 immune response and Th1 immunity as the dominant. In addition, TgP2-pVAX1/PLGA and TgP2-pVAX1/CS nanospheres have great advantages in enhancing immunity against a lethal dose of T. gondii RH strain challenge. All these results suggested that TgP2-pVAX1 plasmids delivered by PLGA or chitosan nanomaterial could be promising vaccines in resisting toxoplasmosis and deserve further investigations and applications.

Abstract
A wide variety of materials, strategies, and methods have been proposed to face the challenge of wastewater pollution. The most innovative and promising approaches include the hybrid materials made of polymeric nanofibers and photocatalytic nanoparticles. Electrospun nanofibers with unique properties, such as nanosized diameter, large specific surface area, and high aspect ratio, represent promising materials to support and stabilize photocatalytic nanosized semiconductors. Additionally, the role performed by polymer nanofibers can be extended even further since they can act as an active medium for the in situ synthesis of photocatalytic metal nanoparticles or contribute to pollutant adsorption, facilitating their approach to the photocatalytic sites and their subsequent photodegradation. In this paper, we review the state of the art of electrospun polymer/semiconductor hybrid nanofibers possessing photocatalytic activity and used for the remediation of polluted water by light-driven processes (i.e., based on photocatalytic activity). The crucial role of polymer nanofibers and their versatility in these types of procedures are emphasized.

Abstract
To date, available review papers related to the electrospinning of biopolymers including polysaccharides for wound healing were focused on summarizing the process conditions for two candidates, namely chitosan and hyaluronic acid. However, most reviews lack the discussion of problems of hyaluronan and chitosan electrospun nanofibers for wound dressing applications. For this reason, it is required to update information by providing a comprehensive overview of all factors which may play a role in the electrospinning of hyaluronic acid and chitosan for applications of wound dressings. This review summarizes the fabricated chitosan and hyaluronic acid electrospun nanofibers as wound dressings in the last years, including methods of preparations of nanofibers and challenges for the electrospinning of both pure chitosan and hyaluronic acid and strategies how to overcome the existing difficulties. Moreover, in this review the biological roles and mechanisms of chitosan and hyaluronic acid in the wound healing process are explained including the advantages of nanofibers for ideal wound management using the common solvents, copolymers enhancing spinning process, and the most biologically active incorporated substances thereby providing drug delivery in wound healing.

Abstract
This study aimed to fabricate food-grade Pickering emulsions stabilized by chitosan-phytic acid-β-cyclodextrin (CS-PA-CD) nanoparticles. The CS-PA-CD nanoparticles were characterized with FITR, XRD, and TGA to prove its successfully crosslinking, then characterized by DLS system and scanning electron microscopy showing the smallest average particle size was 434.2 ± 2.5 nm and it increased with the ratio of PA-CD to CS increasing. Pickering emulsions stabilized by CS-PA-CD nanoparticles was prepared and it showed the best stability at around pH 6. The particle concentration higher than 1.0% (w/v) and the oil fraction above 0.5% (v/v) could reach the emulsion stability. In addition, the Pickering emulsions were stable at various temperature (30–70 °C) and influenced by the certain change of ionic strength (0–500 mM). These CS-PA-CD Pickering emulsions showed great application in the formation of functional foods and pharmaceutical industries.

Abstract
Chitosan is a natural biopolymer that can be suitable for a wide range of applications due to its biocompatibility, rigid structure, and biodegradability. Moreover, it has been proven to have an antibacterial effect against several bacteria strains by incorporating the advantages of the electrospinning technique, with which tailored nanofibrous scaffolds can be produced. A literature search is conducted in this review regarding the antibacterial effectiveness of chitosan-based nanofibers in the filtration, biomedicine, and food protection industries. The results are promising in terms of research into sustainable materials. This review focuses on the electrospinning of chitosan for antibacterial applications and shows current trends in this field. In addition, various aspects such as the parameters affecting the antibacterial properties of chitosan are presented, and the application areas of electrospun chitosan nanofibers in the fields of air and water filtration, food storage, wound treatment, and tissue engineering are discussed in more detail.

Abstract
In this study, designing of a stable electrospun blended chitosan (CS)-poly(vinyl alcohol) (PVA) nanofibers for colorimetric glucose biosensing in an aqueous medium was investigated. CS and PVA solutions were blended to acquire an optimum content (CS/PVA:1/4) and electrospunned to obtain uniform and bead-free CS/PVA nanofiber structures following the optimization of the electrospinning parameters (33 kV, 20 cm, and 1.2 ml.h-1). Crosslinking process applied subsequently provided mechanically and chemically stable nanofibers with an average diameter of 378 nm. The morphological homogeneity, high fluid absorption ability (>%50), thermal (<230 °C) and morphological stability, surface hydrophilicity and degrability properties of cross-linked CS/PVA nanofiber demonstrated their great potential to be developed as an eye-readable strip for biosensing applications. The glucose oxidase (GOx) and horseradish peroxidase (HRP) was immobilized by physical adsorption on the cross-linked CS/PVA nanofiber. The glucose assay analysis by ultraviolet-visible (UV-Vis) spectrophotometry using the same enzymatic system of the proposed glucose strips in form of absorbance versus concentration plot was found to be linear over a glucose concentration range of 2.7 to 13.8 mM. The prepared naked eye colorimetric glucose detection strips, with lower detection limit of 2.7 mM, demonstrated dramatic color change from white (0 mM) to brownish-orange (13.8 mM). The developed cross-linked CS/PVA nanofiber strips, prepared by electrospinnig procedure, could be easily adapted to a color map, as an alternative material for glucose sensing. Design of a practical, low-cost, and environmental-friendly bio-based CS/PVA testing strips for eye readable detection were presented and suggested as an applicable medium for a wide range of glucose concentrations.

Abstract
Packaging is used to protect foods from environmental influences and microbial contamination to maintain the quality and safety of commercial food products, to avoid their spoilage and to extend their shelf life. In this respect, bioactive packaging is developing to additionally provides antibacterial and antioxidant activity with the same goals i.e., extending the shelf life while ensuring safety of the food products. New solutions are designed using natural antimicrobial and antioxidant agents such as essential oils, some polysaccharides, natural inorganic nanoparticles (nanoclays, oxides, metals as silver) incorporated/encapsulated into appropriate carriers in order to be used in food packaging. Electrospinning/electrospraying are receiving attention as encapsulation methods due to their cost-effectiveness, versatility and scalability. The electrospun nanofibers and electro-sprayed nanoparticles can preserve the functionality and protect the encapsulated bioactive compounds (BC). In this review are summarized recent results regarding applications of nanostructured suitable materials containing essential oils for food safety.

Abstract
The combination of fiber and hydrogel in a system can provide substantial benefits for both components, including the development of three-dimensional structures for the fiber, followed by modifications in the rheological and mechanical properties of the hydrogel. Despite a large increase in the use of fiber-hydrogel composites (FHCs) in various sciences and industries such as biomedicine, tissue engineering, cosmetics, automotive, textile, and agriculture, there is limited information about FHCs in the realm of food application. In this regard, this study reviews the mechanism of FHCs. The force transmission between fiber and hydrogel, which depends on the interactions between them during loading, is the main reason to enhance the mechanical properties of FHCs. Moreover, articles about such FHCs that have the potential for foods or food industries have been described. Additionally, the information gaps about edible FHCs were highlighted for further research. Finally, the methods of fiber formation have been summarized.

Abstract
The widespread application of soluble enzymes in industrial processes is considered restrict due to instability of enzymes outside optimum operating conditions. For instance, enzyme immobilization can overcome this issue. In fact, chitosan-based nanofibers have outstanding properties, which can improve the efficiency in enzyme immobilization and the stability of enzymes over a wide range of operating conditions. These properties include biodegradability, antimicrobial activity, non-toxicity, presence of functional groups (amino and hydroxyl), large surface area to volume ratio, enhanced porosity and mechanical properties, easy separations and reusability. Therefore, the present review explores the advantages and drawbacks concerning the different methods of enzyme immobilization, including adsorption, cross-linking and entrapment. All these strategies have questions that still need to be addressed, such as elucidation of adsorption mechanism (physisorption or chemisorption); effect of cross-linking reaction on intramolecular and intermolecular interactions and the effect of internal and external diffusional limitations on entrapment of enzymes. Moreover, the current review discusses the challenges and prospects regarding the application of chitosan-based nanofibers in enzyme immobilization, towards maximizing catalytic activity and lifetime.

Abstract
Chitosan has many useful intrinsic properties (e.g., non-toxicity, antibacterial properties, and biodegradability) and can be processed into high-surface-area nanofiber constructs for a broad range of sustainable research and commercial applications. These nanofibers can be further functionalized with bioactive agents. In the food industry, for example, edible films can be formed from chitosan-based composite fibers filled with nanoparticles, exhibiting excellent antioxidant and antimicrobial properties for a variety of products. Processing 'pure' chitosan into nanofibers can be challenging due to its cationic nature and high crystallinity; therefore, chitosan is often modified or blended with other materials to improve its processability and tailor its performance to specific needs. Chitosan can be blended with a variety of natural and synthetic polymers and processed into fibers while maintaining many of its intrinsic properties that are important for textile, cosmeceutical, and biomedical applications. The abundance of amine groups in the chemical structure of chitosan allows for facile modification (e.g., into soluble derivatives) and the binding of negatively charged domains. In particular, high-surface-area chitosan nanofibers are effective in binding negatively charged biomolecules. Recent developments of chitosan-based nanofibers with biological activities for various applications in biomedical, food packaging, and textiles are discussed herein.

Abstract
The ever-growing demand for cost-effective and innocuous biocatalytic transformations has prompted the rational design and development of robust biocatalytic tools. Enzyme immobilization technology lies in the formation of cooperative interactions between the tailored surface of the support and the enzyme of choice, which result in the fabrication of tremendous biocatalytic tools with desirable properties, complying with the current demands even on an industrial level. Different nanoscale materials (organic, inorganic, and green) have attracted great attention as immobilization matrices for single or multi-enzymatic systems. Aiming to unveil the potentialities of nanobiocatalytic systems, we present distinct immobilization strategies and give a thorough insight into the effect of nanosupports specific properties on the biocatalysts' structure and catalytic performance. We also highlight the development of nanobiocatalysts for their incorporation in cascade enzymatic processes and various types of batch and continuous-flow reactor systems. Remarkable emphasis is given on the application of such nanobiocatalytic tools in several biocatalytic transformations including bioremediation processes, biofuel production, and synthesis of bioactive compounds and fine chemicals for the food and pharmaceutical industry.

Abstract
Nanotechnology has opened new opportunities for delivering bioactive agents. Their physiochemical characteristics, i.e., small size, high surface area, unique composition, biocompatibility and biodegradability, make these nanomaterials an attractive tool for β-carotene delivery. Delivering β-carotene through nanoparticles does not only improve its bioavailability/bioaccumulation in target tissues, but also lessens its sensitivity against environmental factors during processing. Regardless of these benefits, nanocarriers have some limitations, such as variations in sensory quality, modification of the food matrix, increasing costs, as well as limited consumer acceptance and regulatory challenges. This research area has rapidly evolved, with a plethora of innovative nanoengineered materials now being in use, including micelles, nano/microemulsions, liposomes, niosomes, solidlipid nanoparticles, nanostructured lipids and nanostructured carriers. These nanodelivery systems make conventional delivery systems appear archaic and promise better solubilization, protection during processing, improved shelf-life, higher bioavailability as well as controlled and targeted release. This review provides information on the state of knowledge on β-carotene nanodelivery systems adopted for developing functional foods, depicting their classifications, compositions, preparation methods, challenges, release and absorption of β-carotene in the gastrointestinal tract (GIT) and possible risks and future prospects.

Abstract
In this study, a series of chitosan derivatives bearing active halogenated aromatic imines were successfully synthesized via Schiff bases with the high degrees of substitution. Detailed structural characterization was carried out using Fourier transform infrared (FTIR) spectroscopy, solid-state 13C nuclear magnetic resonance (NMR) spectroscopy, and elemental analysis. Besides, the antifungal activity against three common plant pathogenic fungi, including Botrytis cinerea, Fusarium oxysporum f. sp. cucumerinum, and Fusarium oxysporum f. sp. niveum, was investigated using in vitro hyphal measurements. The results showed that double Schiff bases of chitosan derivatives exhibited enhanced antifungal activity compared with chitosan, especially at 1.0 mg/mL. The double Schiff bases of chitosan bearing halogeno-benzenes showed >95% inhibitory indices at 1.0 mg/mL against Botrytis cinereal since halogens had the stronger electron-withdrawing property. The higher degree of substitution was another positive effect to improve the antifungal activity. This study provides a practical strategy to synthesize new double Schiff bases of chitosan derivatives bearing halogeno-benzenes, which could be developed into stronger antifungal agents.

Abstract
The random discharge of marine fish waste into the coast generates environmental pollution. However, a better valorization of these by-products leads to the extraction of sustainable biomolecules. Chitosan is a natural biopolymer that can be produced from various marine by-products, in particular the crustacean shells, crabs, and fish scales. The aim of this current study is the extraction of chitin and characterization of chitosan obtained after a deacetylation reaction from sardine scales (S. pilchardus) as a new marine source. The β form of chitin extracted undergoes deacetylation in 40% NaOH at 121°C for 20 min. The chemical structure of obtained chitosan was characterized based on Fourier transforms infrared spectroscopy (FTIR), X-ray powder diffraction (XRD), Scanning electron microscope (SEM), and Energy-dispersive X-ray spectroscopy (EDS). The physicochemical properties of obtained chitosan such as the ash, moisture, nitrogen, solubility, molecular weight, fat, and water-binding capacity were also determined. According to the results of FTIR and XRD analysis, the degree of deacetylation (DDA), and the crystalline index (CrI) value of obtained chitosan is respectively about 87% and 95%. The SEM and EDS analysis revealed respectively fibrillar and pleated morphology with the presence of three major elements characterizing the chitosan, which are C, O, and N. The physicochemical analysis showed that the rate of ash, moisture, and nitrogen in obtained chitosan were respectively about 0.10, 0.34, and 7%. The solubility, molecular weight, fat, and water-binding capacity of produced chitosan were found to be 93%, 5.86 kDa, 310, and 510% respectively. Sardina pilchardus scales could be considered a promising and alternative source of chitin and chitosan, which will be applicable in a large number of fields. Implications: Direct rejection of marine biowaste as fish scales in nature, port, or fish processing plants, is a dramatic problem that is growing day after day. These uncontrollable discharges cause marine pollution and promote bacterial growth, which leads to a degradation of the soil and air quality. Taking into account the objectives of sustainable development, better development of these by-products would make it possible to produce valuable biomaterials that will be applied in various fields and which have benefits for the environment and humans. The central objective of this research is accentuated on the enhancement of Sardina pilchardus scales; by the conversion of chitin into chitosan and the determination of its physicochemical characterization. The obtained chitosan from Sardina pilchardus scales could be applied in the agricultural and food industry.

Abstract
Marine resources exist in vast numbers and show enormous diversity. As a result, there are likely many possible applications for marine molecules of interest in the cosmetic industry, whether as excipients or additives, but especially as active substances. It is possible to obtain extracts from active substances; for example, quite a few algae species can be used in moisturizing or anti-ageing products. In the field of topical photoprotection, mycosporine-like amino acids and gadusol are important lines of enquiry that should not be overlooked. In the field of additives, the demonstration that certain seaweed (algae) extracts have antimicrobial properties suggests that they could provide alternatives to currently authorized preservatives. These promising leads must be explored, but it should be kept in mind that it is a long process to bring ingredients to market that are both effective and safe to use.

Abstract
Chitosan film, Spirulina sp. film and its blend were developed as biosorbents to remove Cr6+ and Pb2+ ions from aqueous solutions. The kinetic study and the pH effect on biosorption efficiency were evaluated to comprehend the interactions between the ions and biosorbents. The characterization analyses pointed out that occurred interaction between both biomaterials, which resulted in structural alterations through the blend. The Spirulina sp. film exhibited the highest biosorption capacities for Cr6+ (43.2 mg g-1) and Pb2+ (35.6 mg g-1) ions, however, its physical integrity was not kept in acid medium. The blend film showed results slightly lower (35.8 mg g-1 for Cr6+ and 31.6 mg g-1 for Pb2+), but its physical integrity remained intact in all assays. Chitosan film presented the lower biosorption capacities (15.4 mg g-1 for Cr6+ and 20.9 mg g-1 for Pb2+). Elovich and pseudo-second order models were the most suitable to express the kinetic behaviors for Cr6+ and Pb2+, respectively. Therefore, chitosan/Spirulina sp. blend could be a green alternative for Cr6+ and Pb2+ removal, because this biosorbent showed high biosorption capacity obtained from Spirulina sp. and great physical integrity obtained of chitosan.

Abstract
Herein, we synthetized and characterized polysaccharide-based complex coacervates starting from two water-soluble biopolymers, i.e., hydrochloride chitosans and sodium hyaluronan. We used chitosans encompassing a range of molecular weights from 30,000 to 400,000 and showing different fraction of acetylated units (i.e., FA = 0.16, 0.46, and 0.63). This set of chitosans was mixed with a low molecular weight hyaluronan to promote electrostatic interactions. Resulting colloids were analyzed in terms of size, polydispersity and surface charge by Dynamic Light Scattering. The weight ratio between the two polyelectrolytes was studied as additional parameter influencing the liquid-liquid phase separation. Main results include the following: the polymers weight ratio was fundamental in dictating the colloids surface charge, whereas chitosan physical-chemical features influenced the dimension and homogeneity of colloids. This contribution presents additional understanding of the complex coacervation between these two oppositely charged polysaccharides, with the potential translation of present system in food and biomedical sectors.

In our previous study, we could achieve high soluble expression of Candida antarctica lipase B (CalB) in E. coli by fusion poly‑amino acid tags on CalB (pCalB). Herein, we are surprised to find that pCalB can be easily and directly covalent binding on a simply oxidized aspen powder (OAP) by the aid of poly‑lysine tags. Under the optimal conditions, 72.9 ± 3.6% of the total protein could be immobilized, and the activity recovery of immobilized pCalB (pCalB-OAP) was 98.9 ± 3.8%. The analysis of scanning electron microscopy (SEM) and Fourier transform infrared spectroscopy (FTIR) indicated that OAP was a suitable carrier for enzyme immobilization. The immobilized pCalB-OAP could exhibit excellent thermal stabilities, and it retained a residual activity of 58.4 ± 2.8% at 55 °C, whereas only 21.2 ± 2.2% of its initial activity for free pCalB was observed. And it could also display a nice tolerance for the changes of pH environment, compared with that of free pCalB. The results that pCalB-OAP could retained 73.6 ± 2.9% of their initial activity in (R, S)-NEMPAME hydrolysis after the tenth cycles, suggested that pCalB-OAP could be effectively recycled. The immobilization strategies established here were simple and inexpensive.
