Abstract
The health risks (non-carcinogenic and carcinogenic risk) were calculated in both adults and children, using target hazard quotient (THQ) and carcinogenic risk (CR). The concentrations of Cd, Pb, and Ni were higher than the standard limits but they did not pose any non-carcinogenic health risks in adult and children's consumers (THQ <1). Meanwhile, the risk assessment of iAs indicates THQ > 1 for children in Egypt. Moreover, the THQ value due to Me Hg for adult in Tunisia and for children in Tunisia, Malta, Portugal, Latvia, Cambogia, Peru, South Korea, Romania, Hong Kong, United Arab Emirates, Morocco, and Egypt was higher than 1 value. In addition, the calculated CR values of iAs for the adults and children were within the threshold risk of developing cancer (Between 1.00E-4 to 1.00E-6). Therefore, it is recommended to continuously monitor the concentration of PTEs in canned tuna.

Abstract
This paper reviews the published terminology, mathematical models, and the possible approaches used to characterise the risk of foodborne chemical hazards, particularly pesticides, metals, mycotoxins, acrylamide, and polycyclic aromatic hydrocarbons (PAHs). The results confirmed the wide variability of the nomenclature used, e.g., 28 different ways of referencing exposure, 13 of cancer risk, or 9 of slope factor. On the other hand, a total of 16 equations were identified to formulate all the risk characterisation parameters of interest. Therefore, the present study proposes a terminology and formulation for some risk characterisation parameters based on the guidelines of international organisations and the literature review. The mathematical model used for non-genotoxic hazards is a ratio in all cases. However, the authors used the probability of cancer or different ratios, such as the margin of exposure (MOE) for genotoxic hazards. For each effect studied per hazard, the non-genotoxic effect was mostly studied in pesticides (79.73%), the genotoxic effect was mostly studied in PAHs (71.15%), and both effects were mainly studied in metals (59.4%). The authors of the works reviewed generally opted for a deterministic approach, although most of those who assessed the risk for mycotoxins or the ratio and risk for acrylamide used the probabilistic approach.

Abstract
The study was conducted to assess the health risks of selected metals in cultured and wild Crassostrea madrasensis in Sri Lanka over 13 months. Metal concentrations varied monthly, and Zn and Cu concentrations significantly varied between cultured and wild oysters. The mean metal concentrations (mg kg-1) were accumulated in order of Zn (1220.60) > Mg (496.97) > Fe (356.30) > Cu (114.95) > Pb (23.20) > Cd (6.15) > As (3.09) > Hg (0.12). The metal concentrations were well below the standard guidelines given by international standards except for Pb, Cd, As and Zn. The weekly intakes of Hg, Cu, Fe, and Zn from C.madrasensis were below the Provisional Tolerable Weekly Intake while Cd exceeded the established limit. The calculated non-carcinogenic and carcinogenic risk indices for Hg, As, Pb and Zn were within safe levels and the values for Cd exceeded the limit revealing carcinogenic results with long-term consumption. Hence, creating proper awareness and a suitable depuration system ensures human health and supports export-oriented markets.

Abstract
This study analyzed 34 canned fish products, including 28 tuna specimens, 3 salmon specimens, 1 mackerel specimen, and 1 anchovy specimen, from 13 different brands purchased in Türkiye. The study aimed to determine metal/metalloid levels in canned fish and potential health risks for both children and adult consumers. The metal/metalloid levels in the samples were determined using an Inductively Coupled Plasma-Mass Spectrometer (ICP-MS), with the range of levels found as follows (mg/kg, ww): Fe (12.12-101.4), Cu (2.19-11.68), Zn (4.06-33.56), Se (0.24-10.74), Al (1.41-14.45), Cr (0.06-4.08), Pb (0.10-0.43), Cd (0.001-0.110), and As (0.01-0.13). Estimated weekly intake (EWI) levels were found that the consumption of canned fish products did not pose any risk based on the EWI levels and provisional tolerable weekly intake (PTWI) limits. However, three tuna samples had target hazard quotient (THQ) levels above the threshold (>1). Arsenic levels were found to increase the carcinogenic risk for child consumers if they heavily consumed 18 canned fish products, including 15 tuna, 2 salmon, and 1 mackerel. The maximum allowable consumption rates (CRmm) for each canned fish product were calculated monthly. Consequently, the consumption of canned fish by children can pose health risks.

Abstract
Total mercury and fatty acids contents were determined in muscles of croaker, snapper, dolphinfish, blue marlin, and shark, from different markets in the Metropolitan District of Quito, Ecuador. Fifty-five samples were collected and analyzed for total mercury using cold vapor atomic fluorescence spectrometry, and the fatty acids were analyzed using gas chromatography equipped with a flame ionization detector. The lowest total mercury levels were found in snapper [0.041 µg·g-1 wet weight (ww)] while blue marlin showed the highest (5.883 µg·g-1 ww). EPA + DHA ranged from 1.0 mg·g-1 in snapper to 2.4 mg·g-1 in shark. A high omega-3/omega-6 ratio was found for all fish types; however, the HQEFA for the benefit-risk ratio was above 1, suggesting an evident risk to human health. Based on our results, consumption of croaker and dolphinfish is recommended up to one serving per week, considering the importance of EFAs intake and avoiding fish with elevated MeHg content. Therefore, Ecuadorian authorities could enhance public standards for seafood safety and develop consumer advice for pregnant women and young children to determine good fish choices or those to avoid.

Abstract
Benefits and risks of the fish consumption should be assessed to balance the ingestion of healthy omega-3 fatty acids and adverse chemicals. Persistent organic pollutants-POPs (organochlorine pesticides-OCPs and polychlorinated biphenyls-PCB), macro- and micro-elements and fatty acid contents were determined in six fish species from the Adriatic Sea to assess health risks for consumers (worst-case scenario, diseases development risks and benefit-risk). 16 element, 24 POPs and 14 fatty acid contents were determined in six pelagic species which can be used in human diet. Element concentrations were determined by inductively coupled plasma mass spectrometry (ICP-MS), POPs by high-resolution gas chromatography and fatty acid content by gas-liquid chromatography. Diet based on chub mackerel and round sardinella showed lower daily intake (DI) of POPs and highest DI of essential omega-3 fatty acids than other investigated species. Lower ingestion of toxic elements can be observed by consuming anchovy and round sardinella. Based on POP concentrations, there was not observed non-carcinogenic (HI) nor carcinogenic (CR) risks for consumers. Based on element concentrations, there was low HI (0.1 ≥ HI ≥ 1), while the maximum HIs and outlier values (horse mackerel and anchovy samples) implied the presence of HI (HI > 1). The most significant contributor to total non-carcinogenic and carcinogenic risks was inorganic arsenic (inorganic As). Acceptable CR for consumers was assessed, but maximum CR for consumers of horse mackerel and anchovy (CR ≥ 1 × 10-6) showed adverse effects on human health. There were low HIs for developing cardiovascular, nervous, and reproductive diseases, and maximum HIs were higher than 1. Acceptable (1 × 10-4≥CR ≥ 1 × 10-6) risks were observed for developing cancer of nervous system and reproductive organs. Among investigated fish samples, those with higher ƩBR (benefit-risks) and BR for arsenic (As) than median value have a higher risk than benefits in the human diet.

Abstract
This work aimed to examine the influence of the storage period on the content of toxic elements (As, Cd, Hg, and Pb) in five types of canned meat products regularly used in the Serbian Armed Forces. Cans of beef goulash (BG), pork ragout (PR), spam (SP), liver pate (LP), and meatballs in tomato sauce (MB), produced according to military standards and stored under regular conditions, were analyzed. Meat products were packed in tin cans made according to special requirements in terms of tin and varnish application and stored for up to 6 years. The content of toxic elements varied depending on the analyzed product. The highest average content of arsenic was in BG (10.00 μg/kg), cadmium in LP (35.91 μg/kg), and mercury and lead in PR (15.04 and 8.00 μg/kg, respectively). The average concentrations of As, Cd, Hg, and Pb in all types of canned meat products were significantly lower than the maximum permitted levels in food currently in force by local and EU legislation. The storage period did not significantly affect the level of toxic elements, although higher concentrations were found in samples stored for more than 2 years. Examination of raw materials, spices, and additives showed that the highest Cd and Pb concentrations, which can affect the total level of these elements in meat products, were found in red ground pepper (Cd above 150 μg/kg) and dish supplement (Pb of 250 μg/kg). The assessment of the weekly intake of toxic elements through canned meat showed that it is significantly lower than the values that affect adversely to human health, as determined by the FAO/WHO and EFSA. However, as there is a constant possibility of contamination of raw materials and food additives, primarily due to environmental pollution, it is recommended to monitor the content of heavy metals in food permanently and assess their risk to human health.

Abstract
The presence of metals in canned fish has been associated with adverse effects on human health. The aim of this study was to evaluate risk-based fish consumption limits based on the concentrations of eight essential elements and four elements of toxicological concern in sardines and tuna brands commercially available in the Latin American canned goods market. One brand of canned sardines and six of canned tuna were collected and evaluated by ICP-MS and direct mercury analysis. The Hg content was much higher than that previously observed in scientific literature. According to the calculated hazard quotients, all brands may present some risk in terms of this element, especially brand F in which levels up to 3.1 µg/g were measured. Sardine samples surpassed the maximum limits of Mn and As. Stricter quality control in retail chains and industries should be implemented in order to guarantee safe levels in fishery products.

Abstract
Several microwave-assisted digestion methods were tested at the Centro de Estudios Aplicados en Química laboratory in Quito, Ecuador, to determine the accuracy and performance efficiency of the mineralization process for the determination of total mercury in fish tissue by cold vapor atomic fluorescence spectrophotometry. The use of MARSEasyPrep high-pressure vessels, low amounts of reagents (1 cm3 HNO3, 1 cm3 H2O2, and 1 cm3 HClO4), an irradiation temperature of 210 °C, and 35 min of mineralization time resulted in accurate performance, with recoveries of certified reference material DORM-4 between 90.1% and 105.8%. This is better than the Association of Official Analytical Chemists 2015.01 method, which has a reported accuracy of 81%. The repeatability precision and intermediate precision were established at three concentration levels (0.167, 0.500, and 0.833 mg·kg−1) and expressed as the percentage of the relative standard deviation ranging from 1.5% to 3.0% and 1.7% to 4.2%, respectively. Further, the method was satisfactorily applied to analyze fortified samples of tilapia (Oreochromis niloticus), with recoveries ranging from 98.3% to 104.3%. The instrumental limits of detection and quantification were 0.118 µg·dm−3 and 0.394 µg·dm−3, respectively.

Abstract
Mercury (Hg) in fish and aquatic products is a potential threat to human health and international trade, and guidelines of international advisory bodies are established for assessing Hg in these foods. As fish are the most consumed animal protein in Sri Lanka, this assessment summarises for the first-time total mercury concentrations in Sri Lankan marine and freshwater fish, invertebrates, aquatic plants, and fisheries products. It reveals that Hg levels in fish and other edible aquatic species are mostly below the published safety limits, except for certain top trophic level fish (swordfish, tuna, marlin). The review also highlights gaps in Sri Lankan Hg assessments such as a total lack of data for methyl‑mercury in these aquatic species and food products. This data compilation and assessment will serve as an initial baseline for comparison with results from future monitoring and research studies in Sri Lanka while adding to the world-wide Hg database.

Abstract
The literature review presented in this paper covers the risk assessment process that is important to human health as well as the health of ecology in the form of receptors. One of the important objectives of present review is to provide summary of the scientific studies published in the year 2018. The review starts with literature published on the assessment of health risks, which are valuable to human and ecology. Most of the literature in the entire article focuses on techniques used for the analysis of scientific data and methods. In addition, review also highlights data interpretation, uncertainty, policy, and regulatory guidance associated with the management of human and ecological risks. Particularly, the review on the risk assessment related to human health and ecology is divided into two main sections. These sections provide broad state of knowledge on the risk assessment process used to health of human and ecological systems focused on investigation of polluted sites, techniques of remediation, and tools required for natural resource management.

Abstract
This systematic review (SR) evaluated evidence of lead (Pb) levels in foods consumed or produced in Brazil. Seventy-seven publications were included in this review, corresponding to a total of 8466 food samples that were grouped into 12 food categories with similar characteristics (infant food; sugar; beverages; meat and meat products; nuts, cocoa and products; fruits and fruit products; grains, cereals and products; milk and milk products; eggs; oil and fat spreads; vegetables and vegetable products and other foods). The random model was used to establish levels of Pb in food categories. We used the software R® to perform the meta-analysis. The overall occurrence of Pb was estimated at 0.0541 mg/kg, and ranged from 0.0004 mg/kg to 0.4842 mg/kg. The SR and meta-analysis presented relevant results about Pb contamination on foods, despite the high heterogeneity. They were understood as a viable strategy to answer questions regarding prevalence of Pb which is necessary for the risk assessment of Pb intake in foods.
