Abstract
OBJECTIVE The potential of aqueous extract of Christ's thorn jujube (Ziziphus spina-christi) leaves (SLAE) to reduce the negative impacts of heat stress on production performance and physiological traits was investigated in dual-purpose layers under subtropical farming. METHODS A total of 200, 25-week-old laying hens (Inshas strain) were randomly assigned to four dietary treatments including SLAE at 0, 2.5, 5.0, and 7.5 mL/kg, respectively. The average temperature-humidity index value was 26.69 during the experimental period. The SLAE contained saponin (0.045%), total flavonoid content of 17.9 mg of quercetin equivalent/ 100 g and overall antioxidant capacity concentration of 17.9 mg of ascorbic acid equivalent/100 g. RESULTS The maximum final body weight (BW), BW gain, egg weight, number, and mass occurred at the level of SLAE7.5 inclusion. The egg quality was significantly higher in SLAE groups than in control, and overall, SLAE7.5 had the most favorable influence at 28 and 32 weeks. Liver and kidney function, as well as lipids profile, improved significantly by SLAE inclusion; the lowest concentrations of these parameters were in SLAE7.5 hens. Treatment with SLAE7.5 increased total antioxidant capacity and endogenous antioxidant enzymes compared to control, whereas no effect on superoxide dismutase was noticed. CONCLUSION The addition of SLAE at 7.5 mL/kg diet improved egg laying performance and quality, metabolic profiles, and antioxidant status during hyperthermia conditions.

Abstract
A wide range of research has illustrated that carotenoids play a key role in human health through their versatile beneficial biological functions. Traditionally, the majority dietary sources of carotenoids for humans are obtained from vegetables and fruits, however, the contribution of animal-derived foods has attracted more interest in recent years. Livestock products such as eggs, meat, and milk have been considered as the appropriate and unique carriers for the deposition of carotenoids. In addition, with the enrichment of carotenoids, the nutritional quality of these animal-origin foods would be improved as well as the economic value. Here, we offer an overview covering aspects including the physicochemical properties of carotenoids, the situation of carotenoids fortified in livestock products, and the pathways that lead to the deposition of carotenoids in livestock products. The summary of these important nutrients in livestock products will provide references for animal husbandry and human health.

Abstract
The present study was conducted to investigate the effects of introducing hemp seeds, as a source of PUFAs, into a standard diet with or without dried fruit pomace (dried blackcurrant (DB) or dried rosehip (DR)), as a source of natural antioxidants, on the laying performance of hens and the FA profile, cholesterol level, antioxidant content, and lipid oxidative status in the yolks of fresh eggs or eggs stored at 4 °C for 28 days. The experiment used 128 Tetra SL hens at 35 weeks of age, which were divided into four groups and randomly assigned to four dietary treatments: a standard corn-wheat-soybean meal diet (C), standard diet containing 8% ground hemp seed (H), hemp seed diet containing 3% dried blackcurrant pomace (HB), and hemp seed diet containing 3% dried rosehip pomace (HR). The laying rate, feed conversion ratio (FCR), egg weight, and yolk weight were improved by the use of hemp seeds. The yolks of the H, HB, and HR eggs had a lower cholesterol (p ˂ 0.01) and SFA content, while the concentration of total and individual PUFAs (n-6 and n-3 FAs) was significantly higher (p ˂ 0.01) compared to C. In addition, the introduction of hemp seeds into the diets alone or with dried fruit pomace (DB or DR) led to increased (p ˂ 0.001) content of α-linolenic acid (ALA, 18:3n-3), eicosapentaenoic acid (EPA, 20:5n-3), and docosahexaenoic acid (DHA, 22:6n-3) and hypo-/hypercholesterolemic FA ratio and decreased arachidonic acid (AA, 20:4n-6) content, n-6/n-3 ratio, and thrombogenicity index (TI) compared to the control eggs. The introduction of dried fruit pomace (DB or DR) into the diets had no effect on the laying performance of the hens or the cholesterol content and FA profile of the egg yolks, compared to the diet supplemented only with hemp seeds. The dried fruit pomace improved the color, accumulation of antioxidants, and oxidative stability of fats in the yolks of the fresh eggs and eggs stored at 4 °C for 28 days. The DR was found to have the most desirable effects, producing the most intense color of egg yolks, the highest content of natural antioxidants, and the best oxidative stability of yolk lipids.

Abstract
Solid-state fermentation is a useful method for the utilization of the agri-industrial residues. This study was conducted to investigate the effects of tomato pomace (TP) and Aspergillus niger-fermented tomato pomace (FTP) on the growth performance, some carcass traits, antioxidant status, and intestinal microflora in broiler chickens. A total of 140 Ross 308 one-day-old male chicks were allocated to one of four treatment groups consisting of five replicates of seven chicks each. Chicks were fed ad libitum with the corn-soybean based basal diet (control), the basal diet supplemented with 0.25 g/kg synthetic antioxidant, 10 g/kg TP or 10 g/kg FTP for 42 days. Dietary TP increased serum glutathione peroxidase (GPx) and superoxide dismutase (SOD) but did not affect the growth performance. Dietary inclusion of FTP improved the feed conversion ratio and raised serum GPx and SOD. Carcass traits, malondialdehyde level, pH, and color of breast meat and cecal microflora were not affected by dietary treatments. The results of the study showed that TP can be used as a natural antioxidant in broiler diets without a detrimental effect on growth performance. Dietary FTP can be suggested as an alternative to synthetic antioxidants with beneficial effects on growth performance and antioxidant capacity.

Abstract
Canthaxanthin(CX) is a ketocarotenoid, which is widely used in poultry production as a lipophilic antioxidant. Huaixiang chickens are a local breed in China famous for their excellent meat quality; improving their laying rate via nutritional regulation has attracted extensive attention. The aim of this study was to evaluate the effects of dietary CX on the laying rate and follicular development in Huaixiang hens. A total of 180 Huaixiang hens were randomly divided into five groups with six replicates, and six chickens per replication. The control group (CON) were fed a basal diet, and the treatment group (NT) were fed a basal diet supplemented with 4, 6, 8 and 10 mg/kg CX. All chickens were 26 weeks old, living at an average environmental temperature of 25 ± 2 °C with a relative humidity of 65-75%. The results showed that supplementing the CX improved the laying rate and large white follicles (LWF) number (p < 0.05) and increased the concentration of reproductive hormones (LH, FSH, E2 and Prog) (p < 0.05), and the basal diet supplemented with 6 mg/kg CX worked best. Moreover, CX could increase the activities of antioxidant enzymes SOD and GSH-Px (p < 0.05) and reduce the content of the lipid peroxidation product MDA in Huaixiang chickens (p < 0.05); again, 6 mg/kg CX was best. In conclusion, dietary CX had positive effects on the laying rate, ovarian structure, reproductive hormone secretion, follicle development, and the antioxidant capacity of Huaixiang hens, and 6 mg/kg CX was recommended to be added to the diet of Huaixiang chickens.

Abstract
The emergence of safe and functional eggs for consumer acceptance has gained focus. The production of carotenoid-enriched eggs has received attention due to its multifunctional biological properties. Nutritional modification of laying hens' diet can be a strategy to produce such eggs. This review presents the chemistry of carotenoids in nature and eggs, the accumulation process of carotenoids into eggs, and the functions of carotenoids in eggs. Our findings showed that carotenoids can be deposited into the egg and contribute to improving its nutritive value. The biosynthesis, chemical structure, and metabolism pathways of carotenoids lead to the deposition of carotenoids into eggs in their original or metabolized forms. Also, some factors modulate the efficiency of carotenoids in fowls before accumulation into eggs. Carotenoid-enriched eggs may be promising, ensuring the availability of highly nutritive eggs. However, further studies are still needed to comprehend the full metabolism process and the extensive functions of carotenoids in eggs.

Abstract
Vitamin A is a fat-soluble vitamin that cannot be synthesized in the body and must be obtained through diet. Despite being one of the earliest vitamins identified, a complete range of biological actions is still unknown. Carotenoids are a category of roughly 600 chemicals that are structurally related to vitamin A. Vitamin A can be present in the body in the form of retinol, retinal, and retinoic acid. Vitamins are required in minute amounts, yet they are critical for health, maintenance, and performing key biological functions in the body, such as growth, embryo development, epithelial cell differentiation, and immune function. Vitamin A deficiency induces a variety of problems, including lack of appetite, decreased development and immunity, and susceptibility to many diseases. Dietary preformed vitamin A, provitamin A, and several classes of carotenoids can be used to meet vitamin A requirements. The aim of this review is to compile the available scientific literature regarding the sources and important functions, such as growth, immunity, antioxidant, and other biological activities of vitamin A in poultry.

Abstract
The global demand for table eggs has increased exponentially due to the growing human population. To meet this demand, major advances in hen genetics, nutrition, and husbandry procedures are required. Developing cost-effective and practically applicable strategies to improve egg production and quality is necessary for the development of egg industry worldwide. Consumers have shown a strong desire regarding the improvement of hens' welfare and egg quality. They also become interested in functional and designer foods. Modifications in the nutritional composition of laying hen diets significantly impact egg nutritional composition and quality preservation. According to previous scientific research, enriched egg products can benefit human health. However, producers are facing a serious challenge in optimizing breeding, housing, and dietary strategies to ensure hen health and high product quality. This review discussed several practical strategies to increase egg production, quality, and hens' welfare. These practical strategies can potentially be used in layer farms for sustainable egg production. One of these strategies is the transition from conventional to enriched or cage-free production systems, thereby improving bird behavior and welfare. In addition, widely use of plant/herbal substances as dietary supplements in layers' diets positively impacts hens' physiological, productive, reproductive, and immunological performances.

The effect of astaxanthin and lycopene on the content of fatty acids in the yolks of chicken eggs under different storage regimes. POTRAVINARSTVO 2022. Abstract
The level of consumers’ satisfaction with the quality of edible chicken eggs is determined, in particular, by the attractive appearance of the yolks and their content of biologically active substances that have functional properties. Such compounds include carotenoids astaxanthin and lycopene, which can be deposited in the yolks, provide their pigmentation, and as powerful antioxidants, affect the stability of the fatty acid composition of lipids during egg storage. The aim This study aimed mine the effect of supplements of oil extracts of astaxanthin (10, 20, and 30 mg/kg of feed) or lycopene (20, 40, and 60 mg/kg of feed) on the Dion of young hens on the fatty acid composition of the yolks during eggs storage in temperature conditions 4 ±0.5 ℃ and 12 ±0.5 ℃ for 30 days. The experiment used 45 High-Line W36 crossbred laying hens at 24 weeks of age. It was found that the storage temperature of eggs (4 ±0.5 ℃ and 12 ±0.5 ℃) equally affected the fatty acid composition of lipids of egg yolks obtained from laying hens fed lycopene supplements in doses of 20, 40, and 60 mg/kg or astaxanthin in doses of 10, 20 and 30 mg/kg of feed for 30 days. Doses of lycopene from 20 to 60 mg/kg or astaxanthin from 10 to 30 mg/kg in the diet of laying hens contributed to a decrease in egg yolks at both storage temperatures of ω6 PUFA particles: Eicosatetraenoic and 6.9, 12-okadekatrienic acids until their complete disappearance. The addition of astaxanthin to the diet of laying hens reduced and stabilized the ratio of ω3/ω6 PUFA in yolks during egg storage to a greater extent than the addition of lycopene. Storage of lycopene or astaxanthin-enriched edible chicken eggs at 4 ±0.5 °C and 12 ±0.5 °C for 30 days can be used to correct the fatty acid profile of yolk lipids.

Abstract
Flavonoids, naturally-occurring compounds with multiple phenolic structures, are the most widely distributed phytochemicals in the plant kingdom, and are mainly found in vegetables, fruits, grains, roots, herbs, and tea and red wine products. Flavonoids have health-promoting effects and are indispensable compounds in nutritional and pharmaceutical (i.e., nutraceutical) applications. Among the demonstrated bioactive effects of flavonoids are anti-oxidant, anti-inflammatory, and anti-microbial in a range of research models. Through dietary formulation strategies, numerous flavonoids provide the ability to support bird health while improving the nutritional quality of poultry meat and eggs by changing the profile of fatty acids and reducing cholesterol content. A number of such compounds have been shown to inhibit adipogenesis, and promote lipolysis and apoptosis in adipose tissue cells, and thereby have the potential to affect fat accretion in poultry at various ages and stages of production. Antioxidant and anti-inflammatory properties contribute to animal health by preventing free radical damage in tissues and ameliorating inflammation in adipose tissue, which are concerns in broiler breeders and laying hens. In this review, we summarize the progress in understanding the effects of dietary flavonoids on lipid metabolism and fat deposition in poultry, and discuss the associated physiological mechanisms.

Abstract
The aim of this study was to determine the effects of dietary lycopene supplementation on growth performance and antioxidant status of broiler chickens exposed to cold environment to induce ascites. Three hundred male chickens were exposed full-day to cold stress (CT, 10°C) starting from day 15 of age until the end of experiment at day 42, while a positive control group (NT, 100 birds) was kept under normal temperature (23-25°C). The CT groups (three treatments and five replicates of 20 birds) were as follows: negative control (basal diet, CT) and CT + 200 or 400 mg lycopene per kg diet from 15 to 42 d of age. Results showed that CT without lycopene supplementation caused a reduction of feed intake and weight gain and increased the feed conversion ratio. Supplementation of lycopene during CT restored the performance to levels of the positive control, lowered the index of right ventricles/total ventricles and ascites mortality. Birds reared under CT had lower serum activities of superoxide dismutase (SOD), glutathione peroxidase (GPx) and higher malondialdehyde (MDA) concentration than birds reared under the NT environment. With lycopene supplementation, serum MDA level significantly decreased and the activity of SOD and GPx increased. Blood concentration of haematocrit, haemoglobin and red blood cells were decreased by the highest lycopene supplementation to a level comparable to NT. Moreover, increasing dietary lycopene level suppressed serum concentrations of cholesterol and enhanced high-density lipoproteins levels in blood. In conclusion, lycopene supplementation alleviates adverse effects of cold stress on performance through modulating activity of antioxidant enzymes in broiler chickens.

Abstract
This study aimed to evaluate the inclusion of tomato pomace (TP) into Japanese quail breeders' diet by investigating its effects on digestive enzymes, immune response, antioxidant status, blood biomarkers, productive performance, and the deposition of carotenoids into the egg yolk. A total of 150 mature 8-wk of age Japanese quails (100 females and 50 males) were allocated into 5 treatment groups, with 5 replicates, each of 6 quails (4 females and 2 males). The experimental diets were isoenergetic and isonitrogenous, based on corn and soybean meal, and included 0, 3, 6, 9, and 12% of tomato pomace, respectively. The results showed that dietary supplementation of tomato pomace up to 12% significantly improved the immune response, antioxidant response, and digestive enzymes of Japanese quail breeders, significantly decreased cholesterol, low-density lipoprotein (LDL), and increased high-density lipoprotein (HDL). Also, TP increased egg weight, egg mass and hatchability , where TP 6% had the greatest egg weight, egg mass and hatchability among other groups. Moreover, tomato pomace inclusion significantly had a positive effect on the deposition of lycopene into the egg yolk and it can be used as a good delivery system to improve human health. Tomato pomace up to 12% could be used as an alternative feedstuff in quail breeders' diets.

Abstract
Lupinus albus seeds from low-alkaloid varieties are a valuable alternative source of protein for reducing the dependence on soybean meal for the feeding of monogastric animals. Therefore, the aim of this research was to evaluate the dehulling influence of lupine seeds (L. albus, cv. Amiga) and the effect of their use in the laying quails feed on live performance and egg quality. A total of 200 laying quails (Coturnix japonica), with an age of 10 weeks, were randomly assigned to five experimental groups (five replicates/group). Each group was randomly assigned to one of five dietary treatments: the control group (C) diet was based on soybean meal, while the experimental groups received either 200 g/kg (WLS20) or 250 g/kg (WLS25) of whole lupine seeds in their diets, or 200 g/kg (DLS20) or 250 g/kg (DLS25) of dehulled lupine seeds in their diets. The results show that by dehulling the lupine seeds, the nutritional value of the seeds increased. The use of dehulled lupine seeds in the diet of laying quails did not affect the live performance (egg production, feed intake, feed conversion ratio), yolk cholesterol content, and physico-chemical quality indices of the eggs, compared with control. The presence of dehulled lupine seeds in the diet improved the nutritional quality of the yolk lipids because of the increase in the content of polyunsaturated fatty acids. Thus, the lipid quality indices of the yolk became more favorable to consumer health because of an increase in the h/H ratio (hypocholesterolemic/Hypercholesterolemic FA) and a decrease in the atherogenic index and thrombogenic index values. The higher content in carotenoids also contributed to the higher nutritional quality of the eggs obtained by lupine utilization. In conclusion, dehulling of lupine seeds had a positive influence on the nutritional quality of the seeds, the live performance of quails, and the quality of eggs.

Abstract
The present study aimed to evaluate the effect of supplementing the diet of laying hens with linseed meal and carotenoids from different sources on egg characteristics, yolk fatty acid and carotenoid profile, and lipid peroxidation. A 4-week experiment was conducted on 168 Lohmann Brown layers (43 weeks of age), assigned to four dietary treatments (42 hens/group; 21 replicate/groups with 2 birds/pen) consisting of a control diet (C) and three diets simultaneously supplemented with 6% linseed meal and 2% dried kapia pepper (E1), 2% dried sea buckthorn pomace (E2) and 2% dried carrot (E3). Every 2 weeks, 18 eggs/group/period were collected randomly from each group and used to determine the egg quality and nutritional parameters. The results showed that dietary linseed meal and carotenoids sources improved egg color, carotenoids’ accumulation in egg yolk and fatty acid profile, especially the n-3 PUFA content. Dietary carotenoids supplementation reduced, n-6/n-3 ratio, cholesterol content of the egg yolk and improved yolk pH, egg thickness and yolk oxidative stability. In conclusion, the use of these sources of carotenoids in the linseed meal enriched diets could be an effective way to improve the nutritional properties of the eggs without affecting their quality and consumer’s safety.

Abstract
The chicken egg is one of nature's flawlessly preserved biological products, recognized as an excellent source of nutrients for humans. Selenium (Se) is an essential micro-element that plays a key role in biological processes. Organic selenium can be produced biologically by the microbial reduction of inorganic Se (sodium selenite). Therefore, the possibility of integrating Se enriched bacteria as a supplement in poultry feed can provide an interesting source of organic Se, thereby offering health-related advantages to humans. In this study, bacterial selenoproteins from Stenotrophomonas maltophilia was used as a dietary supplement with other Se sources in Lohman brown Classic laying hens to study the egg yolk color, egg yolk and breast antioxidant profile, oxidative stability, and storage effect for fresh and stored egg yolk at 4 ± 2 °C for 14-days. The results showed that dietary Se supplementation significantly (p < 0.05) improved egg yolk color, the antioxidant profile of egg yolk, and breast meat (total carotenoid and phenol content). When the Se treated groups were compared to control groups, there was a significant (p < 0.05) decrease in total cholesterol in fresh and stored egg yolk and breast muscle. In hens that were fed ADS18-Se, the primary oxidation products (MDA) concentrations in the eggs, breast, and thigh muscle, and plasma were significantly (p < 0.05) lower. However, the MDA content increased (p < 0.05) with an extended storage time in egg yolk. In comparison to inorganic Se and basal diets, egg yolk from hens fed organic Se remained fresh for two weeks. The egg yolk color, antioxidant profile, and oxidative status of egg yolk and tissue improve with dietary Se organic supplementation (ADS18 > Se-Yeast). The source of supplemented organic Se is critical for egg enrichment and antioxidant properties. As a result, ''functional eggs'' enriched with organic Se becomes possible to produce.

Abstract
Ensuring an attractive commercial appearance of egg yolks involves the introduction to the feed of laying hens of the dyes of various origins. Recently, egg producers have preferred natural dyes, which include carotenoids: lycopene and astaxanthin, which can be deposited in chicken egg yolks. The aim of this study was to determine the quality of egg yolks, colour intensity and carotenoid composition of yolks when oil extracts of lycopene (20, 40 and 60 mg/kg feed) or astaxanthin (10, 20 and 30 mg/kg feed) are included in the chickens’ diet. 45 High Line W36 chickens at the age of 24 weeks were used for the experiment. Feeding laying hens with supplements of lycopene oil extracts at doses of 30, 40 and 60 mg/kg and astaxanthin at doses of 10, 20 and 30 mg/kg of feed for 30 days in increasing concentrations did not affect egg weight, albumen height, Haugh unit, strength and the thickness of the shell. The addition of lycopene to the diet of chickens at doses of 20 mg/kg of feed increased the content of lycopene, unidentified carotenoids and the total content of carotenoids in the yolks, but did not change the intensity of their colour. Increasing the dose of lycopene in the diet of chickens to 40 and 60 mg/kg of feed increased the content of lycopene in yolks and the intensity of their colour to 7.4 and 8.0 points against 5.6–6.1 points in the control, but did not affect the content of β-carotene and total carotenoids in the yolks. The addition of astaxanthin oil extract at doses of 10, 20 and 30 mg/kg of feed increased the content of astaxanthin, β-carotene and total carotenoids in chicken egg yolks and increased the intensity of their colour to 12.8, 14.8 and 14.4 points on a 16-point colour scale YolkFanTM. To obtain chicken table eggs with a given colour of the yolks, it is advisable to use the addition of astaxanthin oil extract in doses from 10 to 20 mg/kg of feed for 30 days. The results of the research can be used to develop a technology for the production of functional table eggs enriched with carotenoids of natural origin with an attractive colour for consumers.

Abstract
1. This work examined the effects of purified lycopene (LYC) supplementation or a source of LYC as tomato powder (TP) on productive performance, egg yolk cholesterol levels as well as gene expression related to mechanism and regulation of cholesterol.2. One hundred and fifty laying hens (Lohman LSL, hybrid) were randomly divided into one of three treatments, with 10 replicates of five hens per cage, totalling 50 hens per treatment. The hens were fed either a standard diet (control) or a standard diet supplemented with 20 mg purified lycopene/kg diet (LYC) or an equal amount of lycopene-containing tomato powder (TP) for 12 weeks.3. Feed consumption, egg production, and feed efficiency remained similar among treatments (P ≥ 0.27). Supplementing lycopene, either as a purified form or in TP, increased the levels of serum and egg yolk lycopene and reduced serum and egg yolk cholesterol concentrations (P < 0.001). Supplementation in either form decreased gene expression for intestinal NPC1L1, MTP, ACAT2, hepatic SREBP1c, ACLY, and LXRα but increased hepatic ABCG5 and ABCG8 (P < 0.001).4. The results of the present work revealed that egg yolk cholesterol metabolism is regulated by the modulation of a group of genes, particularly with LYC supplementation.

Abstract
The aim of the present study was to evaluate the effects of dietary supplementation with tomato peels (TP) and rosehip meal (RM) on their phytochemicals transfer to the egg, the antioxidant profile and the markers of lipid peroxidation in stored eggs. The experiment was conducted on 42-week-old TETRA SL laying hens, which were assigned to three dietary treatments with 30 birds each: the Control group (CON) received a corn-soybean diet containing 6% flaxseed meal without any by-product addition. Groups TP and RM received Diet CON with additionally 2% TP and 2% RM, respectively. Average daily feed intake, feed conversion ratio and laying percentage were not significantly changed by the dietary treatments. Compared to the other groups, the inclusion of dietary TP led to a significant increase in egg weight (p < 0.05) and vitamin E content in eggs (p < 0.05). The dietary inclusion of RM generated a higher vitamin A content in eggs compared to Groups CON and TP (p < 0.10). After 40 d of storage, in Groups CON, TP and RM the vitamin E contents of eggs deceased by 10.1%, 14.2% and 13.3%, respectively, whereas the reduction of the lutein and zeaxanthin concentration in eggs was more pronounced (by 24.8%, 21.8% and 25.5%, respectively). For the most primary as well as for secondary oxidation products, storage time had a significant influence (p < 0.05) on the degradation process of the eggs. After 40 d of storage, the most distinct reduction in the formation rate of secondary oxidation products was observed in Group RM (by more than 30%), while the reduction for Group TP amounted from 15% to 25%, when compared with Group CON. Therefore, the results of the present study showed a significantly positive effect of RM in retarding the lipid peroxidation process during storage.

Abstract
AbstractThis article focused on the content of lycopene in fresh and dried tomatoes and tomato pomace, as well as in tomato paste at different harvest times (harvest 1 – August and harvest 2 – September). The lycopene content of tomatoes and tomato products was evaluated by using high-performance liquid chromatography (HPLC). The results showed that the highest content of lycopene was estimated in the tomato paste independent of the time of harvest (211.73 mg/100 g dm in August and 184.29 mg/100 g dm in September) and the lowest content in fresh pomace (20.45 and 16.11 mg/100 g dm in August and September, respectively). Good sources of lycopene are tomato by-products, in particularly dried tomato pomace (25.11 mg/100 g dm – harvest 1 and 19.30 mg/100 g dm – harvest 2). This study showed that tomato waste can be considered as a promising source of lycopene for the production of functional foods.

Abstract
Carotenoids are one of the widespread and ubiquitous lipid-soluble pigments that produce a wide range of colours which are universally found in various plants, microalgae, bacteria and fungi. Recently, interest in using carotenoids as feed ingredients has increased markedly owing to their bioactive and health-promoting properties. In terms of applications, carotenoid-rich products are widely available in the form of food and feed additive, supplements and natural colourants. Carotenoids play a versatile biological role that contributes to therapeutic effects, including anticancer, immunomodulators, anti-inflammatory, antibacterial, antidiabetic and neuroprotective. Dietary supplementation of carotenoids not only improves the production performance and health of poultry birds, but also enhances the quality of egg and meat. Several studies have suggested that the supplementation of plant derived carotenoids revealed numerous health-promoting activities in poultry birds. Carotenoids reduce the oxidative stress in pre-hatched and post-hatched birds through different mechanisms, including quench free radicals, activating antioxidant enzymes and inhibiting the signalling pathways. Use of carotenoids in poultry feed as a part of nutrient that confers bird health and improve product quality. Carotenoids play a critical role for the pigmentation of egg yolk, skin, legs, beak, comb, feather and fat. Birds consumed carotenoid deficient diet resulting hues of their egg yolk or pale coloured skin. Therefore, uniform pigmentation generally indicates the health status and quality of the poultry products. This review aims to gather recent information regarding bioactive properties of carotenoids and highlight pharmaceutical and health beneficial effects of carotenoids for the poultry industry. Additionally, it explores the importance of carotenoids as alternative feed ingredients for poultry to boost the production performance and replace synthetic medicine and nutrients.

Abstract
This study evaluated the effect of dietary incorporation of linseed alone or along with dried tomato paste-pepper powder mix on egg physical characteristics, antioxidant profiles, lipid oxidative status, and yolk coloration before and after storage at 4 °C for one month. Sixty Novogen White laying hens, 27 weeks-old, were divided into three groups and given 100 g/hen/day of a standard diet (C), standard diet containing 4.5% of ground linseed (L), linseed diet containing 1% of dried tomato paste and 1% of sweet red pepper (LTP). Linseeds increased (p < 0.05) egg yolk antioxidant capacity but not lipid oxidative stability (p > 0.05). However, dietary inclusion of LTP did not improve fresh egg yolk antioxidant activity and lipid oxidation stability (p > 0.05). With reference to the stored eggs, only antioxidant activity measured by phosphomolybdenum reduction and lipid oxidative stability were influenced (p < 0.05) by the dietary treatment. Fresh egg yolk of hens fed on linseeds tended to have a slightly more yellow, redder, and less light color than the eggs of hens fed with the control diet. Dietary supplementation of LTP increased (p < 0.05) the Roche yolk color fan (RYCF) score and redness (a*) and decreased (p < 0.05) lightness (L*) without affecting (p > 0.05) saturation (C*). Storage of hens’ eggs fed on the control diet did not influence (p > 0.05) yolk color.

Abstract
The aim of this study was to investigate the effects of simultaneous supplementation of laying hens with dietary sources of n-3 polyunsaturated fatty acids (PUFA) and carotenoids on egg quality, fatty acids and carotenoid profile of the egg yolk and on feed and yolk lipid peroxidation. A 6-week experiment was carried out with 53-week old laying hens (96 Tetra SL) assigned to a control and three treatment groups supplemented with 5% flaxseeds and different levels of dried tomato waste (DTW, 2.5%, 5.0% and 10.0%). Hens from the groups supplemented with 5% and 7.5% DTW had a significantly lower average daily feed intake and laying percentage as compared to the control. Increased doses of dietary DTW enhanced yolk Roche colour score in direct correlation with the enrichment of egg yolk in carotenoids but decreased their transfer efficiency from feed to egg. After 4 weeks, egg yolk from hens fed with 5% flaxseeds and 7.5% DTW had increased lutein and zeaxanthin levels (by 29% and 24%, respectively) and the colour score was 3.5 fold higher compared to the control group. As a result of the dietary supplementation with flaxseed, the n-3 fatty acid content was 3.1-3.7-fold higher in egg yolk compared with the control and the n-6/n-3 ratio decreased from 18.3 (control) to 4.1-5.4 in supplemented diets. Dietary supplementation with 5% DTW effectively prevented lipid oxidation of eggs enriched with n-3 PUFA, but the increase in DTW content depressed the absorption and deposition of n-3 PUFA in egg yolk.

Abstract
This study evaluated the effect of linseed incorporation in laying hens’ feed (alone or along with a tomato-red pepper mix) on laying hens’ egg yolk fatty acids profile, as well as on their atherogenic (IA) and thrombogenic (IT) health lipid indexes, and the ratio between the hypocholesterolemic and hypercholesterolemic fatty acids (HH). Sixty 27 weeks-old Novogen White laying hens were divided into three groups and given 100 g/hen/day of a standard diet (Control, C) containing 4.5% of ground linseed (Linseed diet, L), containing 1% of dried tomato paste and 1% sweet red pepper (Lineseeds-Tomato-Pepper, LTP). The linseed dietary inclusion significantly reduced the egg yolk content of palmitic acid from 25.41% (C) to 23.43% (L) and that of stearic acid from 14.75% (C) to 12.52% (L). Feeding 4.5% ground linseed did not affect the egg yolk content of α-Linolenic acid but significantly increased the egg yolk concentration of eicosapentaenoic acid (EPA) from 0.011% (C) to 0.047% (L) and that of docosahexaenoic acid (DHA) from 1.94% (C) to 2.73% (L). The IA and the HH were not affected (p > 0.05) by the dietary addition of linseed, whereas the IT decreased (p < 0.05) from 1.16 (C) to 0.86 (L). Adding tomato-sweet red pepper mix to the linseed-supplemented feed did not affect the measured parameters as compared to the linseed dietary treatment.

Abstract
The present study was undertaken to investigate the effect of dietary, synthetic lycopene or tomato paste on laying performance and egg qualities in laying hens, and on lipid oxidation of stored eggs. One hundred and sixty 38-week-old Hy-line Brown laying hens were randomly housed in cages (two birds per cage, five cages per replicate) equipped with nipples and a trough-type feeder and subjected to one of four experimental diets. Each treatment had four replicates. A corn and soybean meal base diet was added with or without either synthetic lycopene to contain 10 or 20 mg per kg of diet, or with 17 g of tomato paste per kg of diet. The feeding trial lasted four weeks. Feed intake did not differ between dietary treatments. Laying hens fed diets containing lycopene or tomato paste laid lighter eggs (P<0.05) compared with those fed on the control diet. Egg production was higher (P<0.05) in tomato paste-fed layers, but lower (P<0.05) in those fed on a diet containing 20 mg/kg of lycopene compared with the control diet-fed counterparts. Dietary lycopene did not affect egg quality, except for yolk color, nor did serum lipid profiles. Malondialdehyde (MDA) content in serum samples and eggs that had been stored at 24°C for four weeks was reduced (P<0.05) by lycopene or tomato paste. Adding lycopene or tomato paste into a diet of laying hens increased the incorporation of lycopene into the liver and egg yolk. Collectively, the present study shows that addition of low levels of lycopene or tomato paste into the layers' diet is an effective nutritional strategy to enhance oxidative stability of fresh eggs.

Carotenoids are present in ingredients of feed for poultry. Their content can be further increased by supplementation of feed mixtures with synthetic or natural carotenoids. The present paper recapitulates knowledge on the use of carotenoids in broiler chickens and laying hens, and deals with synthetic or natural carotenoids derived from plants. The review describes effects of carotenoids on productive performance, oxidative stability of poultry products, colouring of yolks and accumulation of carotenoids in yolks. There are several alternatives to synthetic carotenoids which are usable in poultry diets and satisfy the interest of consumers in poultry products free of undesirable side effects.

Abstract
This study evaluated the antioxidant ability of Taisung No. 3 mulberry leaf extract (MLE) as well as the potential of mulberry leaf (ML)-based dietary supplementation for modulating the antioxidative status of laying hens. The results showed that the MLE had a total phenolic compound content of 7.4 ± 0.15 mg of gallic acid equivalent/g dry weight (DW) and a total flavonoid content of 4.4 ± 0.19 mg of quercetin equivalent/g DW. The 2, 2-diphenyl-1-picrylhydrazyl free-radical-scavenging ability was 45.9% when 0.1 mg/mL MLE was added. The lipid oxidation inhibition ability was 43.9% when 50 mg/mL MLE was added. We subjected 96 laying hens (Hendrix Genetics) to 4 treatments, namely diets supplemented with dry ML at 0 (control), 0.5, 1, or 2% for 12 weeks. Each treatment involved 8 replicates with 3 hens each. The results indicated that the 0.5% ML-supplemented group exhibited significantly higher mRNA levels of antioxidant-regulated genes, such as Nrf2, HO-1, and GST, and significantly lower ROMO1 gene expression levels at wk 12. The serum malondialdehyde level was lower and the catalase activity and superoxide dismutase activity were higher in all the ML-supplemented groups than in the control group. The egg mass and feed conversion rate significantly improved in the ML-supplemented groups compared with the control group, and, overall, 1% ML supplementation had the most favorable effects at one to 12 weeks. The egg yolk weight, shell weight, shell strength, shell thickness, yolk color, and Haugh unit were increased among all ML-supplemented groups at one to 12 weeks. On the basis of these observations, we conclude that 0.5% ML can be used as a new feed additive to potentially modulate the antioxidative status of laying hens and improve their production performance and egg quality.

Abstract
Oxidative stress suppresses animal health, performance, and production, subsequently impacting economic feasibility; hence, maintaining and improving oxidative status especially through natural nutrition strategy are essential for normal physiological process in animals. Phytochemicals are naturally occurring antioxidants that could be considered as one of the most promising materials used in animal diets in various forms. In this review, their antioxidant effects on animals are discussed as reflected by improved apparent performance, productivity, and the internal physiological changes. Moreover, the antioxidant actions toward animals further describe a molecular basis to elucidate their underlying mechanisms targeting signal transduction pathways, especially through the antioxidant response element/nuclear factor (erythroid-derived 2)-like 2 transcription system.

Abstract
Intake of antioxidants through diet is known to be important in reducing oxidative damage in cells and improving human health. Although eggs are known for their exceptional, nutritional quality, they are not generally considered as antioxidant foods. This review aims to establish the importance of eggs as an antioxidant food by summarizing the current knowledge on egg-derived antioxidants. Eggs have various natural occurring compounds including the proteins ovalbumin, ovotransferrin and lysozyme in egg white, as well as phosvitin, carotenoids and free aromatic amino acids in egg yolk. Some lipophilic antioxidants such as vitamin E, carotenoids, selenium, iodine and others can be transferred from feed into egg yolk to produce antioxidant-enriched eggs. The bioactivity of egg antioxidants can be affected by food processing, storage and gastrointestinal digestion. Generally thermal processing methods can promote loss of antioxidant properties in eggs due to oxidation and degradation, whereas gastrointestinal digestion enhances the antioxidant properties, due to the formation of new antioxidants (free amino acids and peptides). In summary, in addition to its well-known nutritional contribution to our diet, this review emphasizes the role of eggs as an important antioxidant food.
