Abstract
Ross 308 chickens were used to investigate fatty acid (FA) composition and oxidative stability of broiler chicken meat following the controlled inhibition of peroxidation in feed containing a concentrated source of omega-3 fatty acids (flaxseed oil, FLO), approximately 50% omega-3. Ninety-six one-day-old chicks were randomly allocated to four dietary treatments (n = 24/group) that included rapeseed oil (RO), flaxseed oil (FLO), RO with optimised quercetin (Q) - RO_Q, or FLO with optimised Q (FLO_Q). On day 35, breast and thigh muscles were collected in order to analyse their FA profile and malondialdehyde (MDA) levels. Dietary treatments had no effect on weight gain or feed conversion ratio in chickens. However, dietary FLO increased the deposition of α-linolenic acid in both pectoral and thigh meat (P < 0.05), and tended to decrease the ratio of omega-6/omega-3 FA in pectoral muscles (P < 0.07). Addition of an optimised concentration of Q proved to be an efficient way of limiting lipoperoxidation in breast and thigh muscles subjected to refrigeration at 2-3 °C for either 1 or 7 days. Results were consistent with the observed inhibition of peroxidation in feed mixtures and significantly correlated with MDA levels found in feed mixtures. These results provide evidence that it is possible to produce poultry meat with an improved proportion of omega-3 FA without significantly altering the performance of broiler chickens or the oxidative stability of their meat.

Abstract
Butylated hydroxyanisole (BHA) is a synthetic antioxidant analogous of vitamin E. It is used as a preservative to prevent free radical-mediated oxidation in high-fat foods, and this study's objective was to investigate the effects of BHA on oxidative stress and apoptosis in addition to delineating its efficacy as a growth-promoting feed additive. 60 weaned male rabbits (V-line) were randomly divided into four equal groups: BHA0.0 (control), BHA50, BHA100, and BHA150, administered basal diets with 0.0, 50, 100, and 150 mg BHA/kg of feed for 60 days. Animals were examined for growth performance, markers of oxidative stress and apoptosis, and meat characteristics. Compared to the control group, rabbits receiving BHA-supplemented diets exhibited increases in BW and average daily gain (P < 0.01), where BHA50 and BHA100 groups showed increased muscle content of methionine aspartic acid, serine, and glutamine (P < 0.05). These two groups also exhibited elevated catalase and superoxide dismutase activities and diminished malondialdehyde levels in the liver. Butylated hydroxyanisole upregulated fatty acid synthase gene (FASN), especially in BHA100 animals. Bcl-2-associated X/B-celllymphoma-2 (Bax/Bcl-2) ratio significantly increased in animals receiving higher doses of BHA, and the weight of the liver significantly increased following BHA treatment. Supplementing growing rabbits with lower doses of dietary BHA may promote growth performance and meat quality via maintaining the redox balance. Hence, the 50-100 mg/kg may be recommended as a safe and still effective feed additive as well as an oxidative stress attenuator.

Abstract
Lipids (fats and oils) are a concentrated source of energy in poultry diets that improves palatability, feed consistency, provides essential fatty acids and increases the absorption of fat-soluble vitamins. Fresh oil is an expensive energy source and its exposure to air, heat, metallic catalyst during storage and processing may lead to its oxidative deterioration. This review highlights the response of modern poultry to dietary oxidized oil on growth performance, nutrients digestibility, gut health, carcass characteristics, meat quality, blood chemistry and tissue oxidative status. Literature shows that in moderately (peroxide value (PV): 20 to 50 meq kg−1) and highly (PV: 50 to 100 meq kg−1 or above) oxidized oils, lipid peroxidation causes rancid odours and flavours that negatively affect feed palatability, reduces intestinal villus height that decreases the surface area available for nutrients absorption. The oxidation products also damage fat soluble vitamins (A, D, E and K) in blood resulting in an oxidative stress. The use of oxidized oil in poultry diets has no significant effect on dressing percentage, pH and meat colour, whereas carcass weight decreases and drip loss of meat increases. Overall, there is a contradictory data regarding the influence of oxidized oil in poultry feed depending on the PV and inclusion levels. The reviewed literature shows that the use of mildly oxidized (PV < 20 meq kg−1) oil in poultry feed with 4 to 5% inclusion level decreases the feed cost and ultimately cost of poultry production without compromising their growth performance. It can, therefore, partially replace fresh oil as an efficient, cost effective and sustainable energy source in poultry diets.

Abstract
BACKGROUND Restaurant oil in poultry diets increases energy content, reduces production costs, and promotes sustainability within the food supply chain. However, variable oil composition and heating temperatures among restaurant oil sources can impact broiler chicken health due to heat-induced lipid modifications. OBJECTIVES A 21-d experiment was conducted to evaluate ileal morphology, liver cytokine gene expression, and ileal immune cell populations in broilers fed control or peroxidized lipids with varying chain and saturation characteristics. METHODS Day-old broilers were housed in battery cages (5 birds per cage) and fed diets containing 5% control or peroxidized oils. Eight diets were randomly assigned in a 4 × 2 factorial arrangement consisting of oil source (palm, soybean, flaxseed, or fish) and peroxidation status (control or peroxidized). At day 21, samples were collected for ileal histomorphology [villus height (VH), crypt depth (CrD), and the VH:CrD ratio], and liver cytokine expression (qPCR). Ileum cytokine expression and T-cell markers were analyzed by RNAscope in situ hybridization (ISH). Data were analyzed as a mixed model (SAS 9.4) with fixed effects of lipid source, peroxidation, and lipid × peroxidation interaction. RESULTS CD3+ T-cells in the ileum decreased 16.2% due to peroxidation (P = 0.001) with 30.3% reductions observed in birds fed peroxidized flaxseed oil (P = 0.01). Peroxidation increased IL6+ and IL1B+ cells by 62.0% and 40.3%, respectively (P = 0.01). Soybean oil increased IFNG+ cells by 55.1% compared with palm oil, regardless of peroxidation status (P = 0.007). Lipid source and peroxidation did not alter ileal histomorphology or liver cytokine expression. CONCLUSIONS Lipid peroxidation increased ileal IL1B and IL6 in broiler chickens, whereas soybean oil diets increased IFNG. Generally, peroxidation decreased overall CD3+ T-cell populations, suggesting impaired T-cell presence or recruitment. These results identify potential immunomodulatory lipid profiles in restaurant oil while supporting RNAscope-ISH as a method to describe avian tissue-level immune responses.

Abstract
In poultry, the selection of broilers for growth performance has induced a deterioration in the health of the parental hens associated with poor reproductive efficiency. To improve these parameters, we administered to laying parental broiler hens a regular diet supplemented or not (Control) with a moderate (1%) or a high level (2%) of grape seed extract (GSE). The 1% GSE diet was administered from a young age (from 4 to 40 weeks of age) and the high level of 2% GSE was administered only during a 2-week period (from 38 to 40 weeks of age) in the laying period. The analysis of 40-week-old hens showed that 2% GSE displayed a reduction in the fat tissue and an improvement in fertility with heavier and more resistant eggs. Seven monomer phenolic metabolites of GSE were significantly measured in the plasma of the 2% GSE hens. GSE supplementation increased the relative abundance of the following bacteria populations: Bifidobacteriaceae, Lactobacilliaceae and Lachnospiraceae. In conclusion, a supplementation period of only 2 weeks with 2% GSE is sufficient to improve the metabolic and laying parameters of breeder hens through a modification in the microbiota.

Abstract
Methylsulfonylmethane (MSM) is an organic, sulfur-containing compound widely used as a dietary supplement to improve joint health and treat arthritic pain. An experiment was conducted to study the effects of feeding 0.05% MSM to broilers exposed to diet-induced oxidative stress on tissue MSM distribution, growth performance, oxidative stress biomarkers, and immune responsivity. A total of 528 birds were allocated to 4 dietary treatments (fresh oil-no MSM, fresh oil-MSM, oxidized oil-no MSM, oxidized oil-MSM) as provided ad libitum to 11 replicate cages of 12 birds per treatment. Blood and tissue samples were collected to analyze MSM concentrations, and oxidative stress biomarkers including concentrations of thiobarbituric acid reactive substances (TBARS), total antioxidant capacity (TAC), total glutathione, and glutathione peroxidase (GPx) and reductase (GR) activities. Additionally, blood samples collected at day 25 were used to quantify T-cell (TC) populations using flow cytometry. Overall, MSM was quantified in all tissues and plasma samples of MSM-treated groups at all time points. Oxidized oil reduced (P = 0.006) feed intake over the 21-d feeding period, but MSM did not affect growth equally across time points. No effects (P > 0.2) of MSM or oil type were observed on TC populations. In the presence of oxidized oil, MSM reduced (P = 0.013) plasma TBARS and increased (P = 0.02) liver GPx at day 21, and increased (P = 0.06) liver GR at day 7. Irrespective of dietary oil type, groups supplemented with MSM showed higher plasma TAC at day 7 (P = 0.023), liver GPx activity at day 21 (P = 0.003), and liver GR activity at day 7 (P = 0.004) compared with groups not receiving MSM. In conclusion, 0.05% dietary MSM supplementation partially protected birds from oxidative stress but did not affect immune cell profiles.

Abstract
The aim of this study was to determine the effect of vitamin E and
polyphenols on the antioxidant potential and meat quality of broiler chickens
fed diets supplemented with low-quality oil. The experimental materials
comprised 120 male Ross 308 broilers (six treatments, 10 replications, two
birds per replication). Dietary supplementation with vitamin E and/or
polyphenols was applied in the following experimental design: group I
(negative control) – without supplementation without low-quality oil; group
II (positive control) – without supplementation + low-quality oil; group
III – supplementation with 100 mg kg-1 of vitamin E+ low-quality
oil; group IV – 200 mg kg-1 of vitamin E + low-quality oil; group V
– 100 mg kg-1 of vitamin E and 100 mg kg-1 of polyphenols +
low-quality oil; group VI – 200 mg kg-1 of polyphenols +
low-quality oil. Rapeseed oil oxidised under laboratory conditions was added
to the diets of broiler chickens from groups II to VI. The applied
antioxidants had no effect on the growth performance of chickens fed oxidised
oil. Increased dietary inclusion levels of vitamin E and/or polyphenols
improved the antioxidant status in the blood and increased the content of
non-enzymatic antioxidants in the liver and breast muscles of broilers fed
low-quality oil. The tested antioxidants had no influence on carcass quality
parameters in chickens fed oxidised oil. However, birds fed diets with the
addition of vitamin E were characterised by a higher gizzard weight and
higher pH of gizzard digesta. Dietary supplementation with vitamin E and
polyphenols or polyphenols alone contributed to a lighter colour and lower pH
of breast muscles and an increase in the content of fat and ash in the breast
muscles of broilers fed oxidised oil. The breast muscles of birds given 100
or 200 mg kg-1 of supplemental vitamin E were characterised by higher
concentrations of n-6 polyunsaturated fatty acids (PUFAs) and
hypocholesterolemic fatty acids (DFAs), a more desirable DFA/OFA
ratio, and a lower
atherogenicity index (AI). Polyphenols combined with vitamin E can be a
valuable component of diets for broiler chickens when the problem of
low-quality oil occurs.

Abstract
SummaryThe oxidation (rancidity) of fat is a very common feed quality issue, which can negatively affect growth performance and meat quality of broilers. Besides other factors, metal ions such as Zn, Cu and Fe can facilitate lipid peroxidation in feed. The objective of the current study was to investigate the effect of feeding corn soy diets containing fresh or oxidised soybean oil with different forms of microminerals on production performance of broiler chicks. Dietary treatments consisted of a 2 × 2 factorial structure with two kinds of soybean oil (oxidised or fresh) and two forms of microminerals (inorganic or organic). Mineral proteinate (Bioplex®, Alltech Inc.) including Zn, Mn, Cu and Fe was used as the organic source and was supplemented at the level equivalent to 25% of an inorganic source in the control diets. Organic selenium (Sel-Plex®, Alltech Inc.) at 0.3 mg/kg of diet was used to replace sodium selenite used at 0.3 mg/kg of diet in control diet. Oxidised soybean oil was prepared by convection heat (90°C for a period of seven days in a convection oven). A total of 1152 one-day old chicks were allotted randomly to the four dietary treatments using 12 replicates of 24 chicks per pen. Chicks were raised in floor pens for 42 days in an environmentally controlled room with free access to feed and water. There was no statistical interaction between oil source and mineral form on performance or mineral content of breast meat. Feeding oxidised oil increased (P < 0.05) feed intake and decreased gain to feed ratio (FCE) of chicks. Supplementation with organic minerals improved (P < 0.05) weight gain and FCE of chicks. The breast meat of chicks fed organic mineral had higher (P < 0.01) Se content than those from the control group. The results indicated that the addition of organic minerals to broiler diets can minimise the negative impact of oxidised oil on the performance of broiler chicks.

Abstract
Grape seed extracts (GSE) contain several beneficial bioactive constituents; therefore, can be utilized as a potential feed additive in broiler chickens. An experiment was conducted to investigate the effect of supplementation of broiler chicken diets with GSE as a natural antioxidant at levels of 125, 250, 500, 1000 and 2000 ppm on the growth performance, serum lipid profile, liver glutathione-reduced, thigh muscle malondialdehyde and humoral immune response against Newcastle disease virus vaccines. This experiment was performed during the life-span of chickens from 0 to 42 days of age. The results of broilers fed on diet supplemented by GSE were compared with those fed on the basal diet (control) or the basal diet supplemented by butylated hydroxytoluene as a synthetic antioxidant (BHT, 125 ppm). No significant differences were observed in the growth performance, percent livability, total lipid, high and very low-density lipoprotein cholesterols when the use of GSE or BHT were compared with the control. Total cholesterol and low-density lipoprotein cholesterol were significantly decreased after intake of GSE compared with BHT in the feed diet. The glutathione-reduced level in liver tissues was significantly increased by inclusion of GSE, but not by BHT. Inclusion of GSE or BHT decreased significantly the malondialdehyde level found in meat tissue. The antibody titer against Newcastle disease virus vaccines was significantly elevated in 28 and 35-day-old broiler chickens fed with a diet supplemented with GSE or BHT, the former providing a higher response. It can be concluded that GSE can be used as an effective natural antioxidant and immunostimulant agent in broiler chicken diets, and that 125 to 250 ppm can be considered as the optimum dosage.

Abstract
Background The aim of the current study was to evaluate the effect of different thermal manipulation (TM) protocols during embryogenesis on thermotolerance acquisition parameters during subsequent thermal challenge (TC) at posthatch day 28. A total of 1500 fertile chicken eggs were divided randomly into five treatments (300 eggs each): control was maintained at 37.8 °C and 56 % relative humidity (RH) whereas, TM1, TM2, TM3 and TM4 were subjected to 38.5, 39, 39.5 and 40 °C for 18 h and 65 % RH daily during embryonic days ED 12–18. Hatched chicks from each treatment group allocated randomly into two sub-treatment groups (thermo-neutral, naïve (TN) and thermal challenge (TC). At day 28 of age, chicks subjected to TC by adjusting room temperature to 42 °C for 6 h while naïve chicks kept under regular conditions (22 ± 1 °C and 50–60 % RH). Chick’s response to TC evaluated by determination of plasma T3, T4, corticosterone, total proteins, albumin, selected enzymes and some electrolytes at the beginning (0 h) and after 1, 3 and 5 h of TC in TM and TN chicks. Furthermore, pectoral and thigh muscles mRNA expression of Atrogin-1, CK, avUCP, DIO3, DIO2 were evaluated in TC and TN sub-treatment groups. Results TM induced a significant reduction in free T3 and elevation in total proteins and albumin in plasma with significant down-regulation of Atrogin-1 and DIO2 and significant up-regulation of DIO3 mRNA expression in muscle of TM chicks compare to control. During TC at day 28, decrease in the concentrations of plasma free T3, total proteins and albumin with increase in T4 have been detected in control and TM chicks. TC induced up-regulation of Atrogin-1 and DIO3 with down-regulation of DIO2 gene expression in muscles of all TC chicks. Conclusion The present study indicated that, TM improved thermotolerance acquisition by decreasing basal metabolic rate and muscle injury during thermal stress. Basal metabolic rate decreased via reduction of plasma T3 concentration with up and down regulation of expression of DIO3 and DIO2, respectively in muscles. Muscle injury protected by stimulation of protein biosynthesis and down-regulation of Atrogin-1 expression.

Abstract
The aim of our experiment was to determine the effect of the alfalfa meal component in feed mixtures of Ross broiler chickens on oxidative stability of meat. Proportion of alfalfa meal in feed mixtures was 4 and 6%. The results were compared to the control group without alfalfa meal in feed mixtures. At the end of the experiment (day 38), 6 pcs of broiler chickens from each group with an average live body weight over 1 800 g were randomly selected. The samples for chemical analysis consisted of identical proportion of breast and thigh muscle, and about 1 cm2 of skin with subcutaneous fat. Fat from the meat was obtained after the samples drying. A fat was determined by extraction by means of laboratory instrument Det N Gras Selecta P. The oxidative stability of meat on the basis of acid number of fat was determided by chemical analysis. Chicken meat was stored at -18 °C for 12 months and 18 months. The acid number of fat of stored meat for 12 months was 7.38 mg KOH per g in the control group, 7.42 mg KOH per g in the group with a proportion of 4% alfalfa meal, and 11.18 mg KOH per g in the group with proportion 6% alfalfa meal. An acid number of fat of stored meat for 18 months was 5.90 mg KOH per g in the control group, 4.65 mg KOH per g in the group with a proportion of 4% alfalfa meal, and 7.07 mg KOH per g in the group with a proportion of 6% alfalfa meal. Chicken meat is notably sensitive to lipid oxidation because of its high content of polyunsaturated fatty acids. Legislation in Title 5 of Part 3 of the Codex Alimentarius of the Slovak Republic and the Government Regulation No. 286/2003 Coll. in the Annex 4 in Part B provide the requirements for animal fats and meat products. Regulation of the European Parliament and Council (EC) No. 853/2004 lays down specific hygiene rules for food of animal origin. In particular, determination of free fatty acids content of rendered animal fat (tallow, lard, other animal fat). Legislative regulation does not contain requirements for the quality of chicken meat, the acid number of fat of fresh or frozen chicken meat, respectively. A chicken meat is preferred over other kinds of meat. It is characterized by certain dietary and nutritional properties that consumer prefers. A price of this kind of meat remains attractive. In terms of human health, oxidative stability of chicken meat is important, especially of stored meat. In general terms, the various food additives are currently used to maintain the food stability. Great attention is currently paid to additives of natural origin. Similar focus is presented in our study. We can state, on the basis of the oxidative stability results of chicken meat, that natural feed component has its justification. This issue requires further research.

Abstract
The objective of the study was to determine the effects of a dietary antioxidant blend (ethoxyquin and propyl gallate) and vitamin E on growth performance, liver function, and oxidative status in pigs fed diets high in oxidants. Crossbred barrows (n=100, 10.91±0.65 kg BW, 36±2 d of age, Landrace×Duroc) were allotted to 5 treatments on the basis of BW (5 replicate pens per treatment, 4 pigs per pen). Treatments included 1) HO, high-oxidant diet containing 5% oxidized soybean oil and 10% PUFA source (providing 2.05% docosahexaenoic acid in the diet), 2) VE, the HO diet with 11 IU/kg of added vitamin E, 3) AOX, the HO diet with antioxidant blend (135 mg/kg), 4) VE+AOX, the HO diet with both vitamin E and antioxidant blend, and 5) SC, a standard corn-soy control diet. The trial lasted for 118 d; on d 83, the HO diet pigs were switched to the SC diet because the animals were displaying very poor health. Compared with SC pigs, HO pigs had decreased ADG (0.92 vs. 0.51 kg for d 26 to 55, 1.29 vs. 0.34 kg for d 56 to 82; P<0.05) and ADFI (1.84 vs. 0.96 kg for d 26 to 55, 3.41 vs. 1.14 kg for d 56 to 82; P<0.05). However, switching the HO pigs to the SC diet resulted in HO pigs having a greater ADG than VE-fed pigs from d 83 to 118 (0.90 vs. 0.60 kg; P<0.05). The antioxidant blend restored pig performance to a level similar that of pigs fed the SC diet (P>0.05) with greater G:F for the entire period (0.44 vs. 0.38; P<0.05). A greater liver to BW ratio was found in HO compared with other treatments on d 55 and in VE on d 118. Total bilirubin concentration in plasma of HO pigs on d 55 was greater than that in VE+AOX pigs (P<0.05), whereas on d 118, bilirubin concentration in VE was higher than those in VE+AOX and SC (P<0.05). A similar trend was observed in aspartate transaminase. Plasma concentrations of thiobarbituric acid reactive substances (TBARS) and carbonyl were elevated (P<0.05) in the HO pigs compared with the SC pigs on d 55 but not on d 118. Liver TBARS and carbonyl concentrations showed a similar trend, except that HO pigs had the greatest carbonyl concentration on d 118. Pigs fed AOX diets had plasma and liver TBARS and carbonyl concentrations similar to those fed SC diets. In the oxidative stress model used in this study, dietary addition of antioxidant blend or antioxidant blend+vitaimin E was effective in improving growth, liver function, and plasma markers of oxidative stress, but VE alone was not.

Abstract
Vários fatores negativos podem afetar a saúde intestinal de frangos de corte e reduzir o seu desempenho. Aditivos para alimentação animal, chamados melhoradores de crescimento são utilizados na produção de frangos para controlar os problemas intestinais. Entretanto, a dificuldade de se induzir enterites em condições experimentais torna difícil a avaliação destes produtos. O objetivo deste estudo foi avaliar o melhor modelo experimental para induzir enterite em frangos de corte. Foram utilizados 192 pintinhos de corte, machos (Cobb 500®), divididos em esquema fatorial 2x4 (com boa ou baixa qualidade do óleo na dieta e com ou sem vacina contra coccidiose e doença de Gumboro), com oito tratamentos. As aves foram alojadas em cama de maravalha, com água e ração à vontade, e foram pesadas semanalmente. Nos dias 14, 21, 28 e 35, seis aves por tratamento foram abatidas para avaliação de lesões macroscópicas e microscópicas mediante a implementação de um sistema padrão de classificação de severidade das lesões que considerou infiltração linfocítica, morfologia dos enterócitos, edema intersticial e dilatação dos vasos linfáticos na mucosa do intestino. Foi observado que frangos alimentados com gordura de baixa qualidade na ração apresentaram menor ganho de peso e maior severidade de lesões histológicas em todos os segmentos intestinais. Estas lesões foram mais severas em aves desafiadas com coccidiose e doença de Gumboro. Estes resultados sugerem que a inclusão de gordura de baixa qualidade na ração, associada ao desafio com cocciciose no primeiro dia de vida e contra doença de Gumboro no 16º dia, é o melhor protocolo para induzir enterite em frangos de corte em condições experimentais, e ainda que o sistema padrão de classificação de severidade de lesões intestinais foi adequado para avaliar as enterites em frangos de corte.

The aim of the study was to determine the effects of a dietary antioxidant blend (AB) and vitamin E on performance, oxidative status, and meat quality. Cobb 500 male broilers (n = 1,200, d 0) were randomly distributed into 6 treatments with 10 replicate pens. Treatments included 1) HO: high oxidant diet, vitamin E at 10 IU/kg, 3% oxidized soybean oil, 3% polyunsaturated fatty acid (PUFA) source; 2) VE: the HO diet with vitamin E at 200 IU/kg; 3) AOX: the HO diet with AB at 135 mg/kg; 4) VE+AOX: the HO diet with vitamin E at 200 IU/kg and AB at 135 mg/kg; 5) SC: standard control; and 6) PC: positive control, the SC diet with AB at 135 mg/kg. From d 0 through d 21, high oxidant diet treatment birds had greater BW, ADG, and ADFI than the SC birds; the AOX birds had better G:F on d 10 and 42, and from d 0 to 42 than SC birds (P < 0.05). The plasma TBA reactive substance level was lower in the AOX birds than the VE treatment birds in all phases (P < 0.05). High oxidant diet treatment birds had greater α-1-acid glycoprotein levels on d 10 than SC and PC birds (P < 0.05). The AOX, PC, and SC birds had a greater level of uric acid than the HO and VE+AOX birds on d 10. Superoxide dismutase expression in the liver was less with the HO treatment compared with the SC treatment on d 7 (P < 0.05). The vitamin E concentration in the breast muscle was greatest in the VE birds, whereas vitamin A concentration was greater in the PC birds compared with the SC birds on d 21 (P < 0.05). Compared with VE and AOX, the HO treatment had greater drip loss (P < 0.05). In conclusion, dietary addition of AOX was effective in improving growth, moderately restored the whole body antioxidant capability, and reduced drip loss.

Abstract
The objective of this experiment was to evaluate peroxidation in 4 lipids, each with 3 levels of peroxidation. Lipid sources were corn oil (CN), canola oil (CA), poultry fat, and tallow. Peroxidation levels were original lipids (OL), slow-oxidized lipids (SO), and rapid-oxidized lipids (RO). To produce peroxidized lipids, OL were either heated at 95°C for 72 h to produce SO or heated at 185°C for 7 h to produce RO. Five indicative measurements (peroxide value [PV], p-anisidine value [AnV], thiobarbituric acid reactive substances [TBARS] concentration, hexanal concentration, 4-hydroxynonenal [HNE] concentration, and 2,4-decadienal [DDE]) and 2 predictive tests (active oxygen method [AOM] stability and oxidative stability index [OSI]) were performed to quantify the level of oxidation of the subsequent 12 lipids with varying levels of peroxidation. Analysis showed that a high PV accurately indicated the high level of lipid peroxidation, but a moderate or low PV may be misleading due to the unstable characteristics of hydroperoxides as indicated by the unchanged PV of rapidly oxidized CN and CA compared to their original state (OL). However, additional tests, which measure secondary peroxidation products such as AnV, TBARS, hexanal, HNE, and DDE, may provide a better indication of lipid peroxidation than PV for lipids subjected to a high level of peroxidation. Similar to PV analysis, these tests may also not provide irrefutable information regarding the extent of peroxidation because of the volatile characteristics of secondary peroxidation products and the changing stage of lipid peroxidation. For the predictive tests, AOM accurately reflected the increased lipid peroxidation caused by SO and RO as indicated by the increased AOM value in CN and CA but not in poultry fat and tallow, which indicated a potential disadvantage of the AOM test. Oxidative stability index successfully showed the increased lipid peroxidation caused by SO and RO in all lipids, but it too may have disadvantages similar to AnV, TBARS, hexanal, DDE, and HNE because OSI directly depends on quantification of the volatile secondary peroxidation products. To accurately analyze the peroxidation damage in lipids, measurements should be determined at appropriate time intervals by more than 1 test and include different levels of peroxidation products simultaneously.

Abstract
BACKGROUND Lipid peroxidation is the cause of declining the meat quality. Natural antioxidants plays a vital role in enhancing the stability and quality of meat. The supplementation of natural antioxidants in feed decreases lipid peroxidation and improves the stability of meat. METHODS The present research was conducted to determine the effect of α-lipoic acid, α-tocopherol and wheat germ oil on the status of antioxidants, quality and lipid stability of broiler meat. One day old male broilers were fed with different feeds containing antioxidants i.e. natural (wheat germ oil) and synthetic α-tocopherol and α-lipoic acid during the two experimental years. RESULTS The feed treatments have significant variation on the body weight and feed conversion ratio (FCR) while having no influence on the feed intake. The broilers fed on wheat germ oil (natural α-tocopherol) gained maximum body weight (2451.97 g & 2466.07 g) in the experimental years 2010-11 & 2011-12, respectively. The higher total phenolic contents were found in the broilers fed on wheat germ oil plus α-lipoic acid in breast (162.73±4.8 mg Gallic acid equivalent/100 g & 162.18±4.5 mg Gallic acid equivalent/100 g) and leg (149.67±3.3 mg Gallic acid equivalent/100 g & 146.07±3.2 mg Gallic acid equivalent/100 g) meat during both experimental years. Similar trend was observed for the 2,2-diphenyl-1-picrylhydrazyl (DPPH) and ferric reducing antioxidant power assay (FRAP). The production of malondialdehydes in the breast and leg meat increased with progressive increase in the time period. The deposition of α-tocopherol (AT) and α-lipoic acid (ALA) contents were found to be higher in the broilers fed on wheat germ oil plus α-lipoic acid in breast and leg meat during the both experimental years. CONCLUSION In conclusion, the combination of wheat germ oil and α-lipoic acid has more beneficial for stability and the quality of the broiler meat and more work should be needed in future for the bio-evaluation of this kind of functional meat in humans.

Abstract
The use of bioactive antioxidants in feed of broiler to mitigate reactive oxygen species (ROS) in biological systems is one of promising nutritional strategies. The aim of present study was to alleviate ROS production in mitochondrial fraction (MF) of meat by supplemented dietary antioxidant in feed of broiler. For this purpose, mitochondria specific antioxidant: α-lipoic acid (25 mg, 75 mg and 150 mg) with or without combination of α-tocopherol acetate (200 mg) used in normal and palm olein oxidized oil (4%) supplemented feed. One hundred and eighty one day old broiler birds were randomly divided into six treatments and provided the mentioned feed from third week. Feed intake, feed conversion ratio (FCR) remained statistically same in all groups while body weight decreased in supplemented groups accordingly at the end of study. The broiler meat MF antioxidant potential was significantly improved by feeding supplemented feed estimated as 1,1-di phenyl-2-picrylhydrazyl (DPPH) free radical scavenging activity, 2,2-azinobis-(3- ethylbenzothiazoline-6-sulphonic acid) (ABTS+) and thiobarbituric acid reactive substances (TBARS). The maximum antioxidant activity was depicted in group fed on 150 mg/kg α-lipoic acid (ALA) and 200 mg/kg α-tocopherol acetate (ATA) (T4) in both breast and leg MF. Moreover, TBARS were higher in leg as compared to breast MF. Although, oxidized oil containing feed reduced the growth, lipid stability and antioxidant potential of MF whilst these traits were improved by receiving feed containing ALA and ATA. ALA and ATA showed higher deposition in T4 group while least in group received oxidized oil containing feed (T5). Positive correlation exists between DPPH free radical scavenging activity and the ABTS + reducing activity. In conclusion, ALA and ATA supplementation in feed had positive effect on antioxidant status of MF that consequently diminished the oxidative stress in polyunsaturated fatty acid enriched meat.

Abstract
The importance of the linkage between nutrition and health is a hot issue. Like other food-related sectors, the meat industry is undergoing foremost transformations, driven among other things by changes in consumer requirements. The present study was designed to evaluate the lipid stability and antioxidative potential of leg and breast microsomal fraction of broiler meat fed on ALA and ATA. For the first 3 weeks of growth, broilers were fed on feed supplemented with ATA (200 mg/kg of feed) and during the last 3 weeks broilers were fed on feed supplemented with ALA (25, 75, 150 mg/kg of feed) and a constant level of ATA (200 mg/kg of feed). The body weight of the carcass was measured after every week of growth until 6 weeks. Positive correlation between the antioxidant activity and the TPC was observed. Higher values of TBARS were detected in leg muscles than in breast muscles. HPLC data revealed ALA and ATA contents were higher in T(4) (leg, 5.55 ± 0.19 and 3.87 ± 0.15 μg/mg of protein; breast, 5.63 ± 0.20 and 2.03 ± 0.10 μg/mg of protein, respectively) and lowest in T(5) (ALA, leg, 1.40 ± 0.06 μg/mg of protein; breast, 1.54 ± 0.05 μg/mg of protein; ATA, leg, 1.25 ± 0.06 μg/mg of protein; breast, 0.63 ± 0.008 μg/mg of protein), in which the only oxidized oil was used. Oxidized oil in feed reduced weight gain and increased TBARS, whereas TPC, DPPH, ALA, and ATA values decreased in both leg and breast meat.

Abstract
The objective of the present study was to evaluate the effect of antioxidant inclusion and oil quality on broiler performance, meat quality, shelf life, and tissue oxidative status. Ross 308 male broilers were allotted to a randomized complete block design in a 2 × 2 factorial arrangement. Factors consisted of antioxidant (ethoxyquin and propyl gallate) inclusion at 2 levels (0 or 135 mg/kg) and oil quality (fresh soybean oil, control diet peroxide value <1 mEq/kg, or oxidized soybean oil, diet peroxide value 7 mEq/kg). Each treatment included 12 pen replicates comprising 24 birds for a total of 1,152 birds on trial allotted to 48 pens. On the final day of the study, 1 bird from each pen was killed by cervical dislocation and used for determination of tissue oxidative status. Another 5 broilers from each pen were processed at a commercial slaughtering facility. Immediately after processing, carcasses were transported to the University of Illinois Meat Science Laboratory (Urbana) for further analysis. With the exception of 2 responses (liver vitamin A and serum vitamin A), no interactions were found between antioxidant inclusion and oil quality. Body weight and weight gain were increased by dietary antioxidant inclusion (P < 0.001) and fresh oil (P < 0.001). Feed intake was increased in broilers fed the antioxidant (P = 0.047) and fresh oil (P = 0.062). Antioxidant inclusion had no effect on G:F (P = 0.18). Antioxidant supplementation had no effect on carcass weight (P = 0.202), dressing percentage (P = 0.906), breast yield (P = 0.708), or breast ultimate pH (P = 0.625) and had minimal effect on breast color. Antioxidant supplementation (P = 0.057) reduced breast thiobarbituric acid reactive substances after 7 d of display. Fresh oil decreased liver thiobarbituric acid reactive substances, whereas antioxidant inclusion increased serum and liver vitamin A and E concentration. The presence of an antioxidant in the feed protects lipids from further oxidizing, therefore increasing broiler performance and improving shelf life when using oxidized oil.

Abstract
BACKGROUND The experiment was conducted to determine the effects of dietary supplementation of oxidised oil with or without vitamin E on performance, nutrient digestibility, some blood traits, lipid peroxidation and antioxidant defence system of male broilers. RESULTS The supplementation of oxidised oil with or without vitamin E to the grower diets did not significantly affect performance, the pH and viscosity values of excreta and nutrient digestibilities in male broilers. Oxidised oil supplementation slightly increased plasma triglyceride and cholesterol concentrations but did not alter plasma glucose concentration. Although malondialdehyde (MDA) and nitric oxide concentrations tended to be higher in the oxidised oil group, these increases were not significant. Birds fed the diet containing oxidised oil had significantly lower superoxide dismutase (SOD) activity. However, no differences were observed in glutathione peroxidase (GSH-Px) activity and uric acid concentrations of broilers fed oxidised oil as compared to the control group. Dietary vitamin E supplementation decreased MDA concentration whereas increasing SOD activity, suggesting that vitamin E supplementation reduced susceptibility to lipid peroxidation. CONCLUSION The results showed that a milder oxidative stress occurred by supplementation of moderately oxidised oil to the diet of broilers and vitamin E supplementation had been helpful in alleviating lipid peroxidation.

Abstract
A total of 120 4-week-old broiler chickens were allotted to 12 pens and fed one of three diets including control, oxidized diet (5% oxidized oil), or antioxidant-added diet (500 IU vitamin E) for 2 weeks. Blood samples were collected at the end of feeding trial, and breast muscles were sampled immediately after slaughter. Breast meats were also collected 24 h after slaughter and used for meat quality measurements. Oxidative stress in blood, lipid and protein oxidation, and sarcoplasmic reticulum Ca²(+)-ATPase (SERCA) activity of breast muscle were determined. The oxidized diet increased oxidative stress in blood and increased carbonyl content in breast meat compared with the other two dietary treatments (P < 0.05). Lipid oxidation of breast muscles with the antioxidant-supplemented diet was lower than that with the oxidized and control diet groups (P < 0.05). Meat from birds fed the oxidized diet showed higher drip loss after 1 and 3 days of storage and greater 0-1 h post-mortem pH decline (P < 0.05). Significant differences in specific SERCA activity in breast muscles from birds fed control and oxidized diets (P < 0.05) were detected. This suggested that dietary oxidized oil induced oxidative stress in live birds and increased lipid and protein oxidation in breast muscle. Decrease in SERCA activity in breast muscles due to oxidative stress in live animals accelerated post-mortem glycolysis, which sped the pH drop after slaughter and increased drip loss, indicating that oxidation of diet can cause PSE-like (pale, soft, and exudative) conditions in broiler breast muscles.

Abstract
The effects of the dietary inclusion of fats with different origin (lard or vegetal oil), fatty acid profile (linseed or sunflower), oxidation level (fresh, peroxidised: 11 d at 55ºC or oxidised: 31 h at 140ºC) and vitamin E supplementation (0 or 100 ppm) on the rabbit diet apparent digestibility were studied. Digestibility coefficients of dry matter, organic matter, crude protein, ether extract and gross energy were determined in eight diets using 58 rabbits aged 49 d. Contrast analysis between groups of diets showed that lard, characterised by a greater saturated fatty acid content, compared with vegetal oils, rich in unsaturated fatty acid, reduced the apparent digestibility of ether extract (62.3 vs. 68.4%; P=0.0329). However, there were no significant differences in the nutrient digestibility when linseed or sunflower oils (rich in ω-3 or in ω-6 polyunsaturated fatty acids, respectively) were compared. The results showed that supplemental vitamin E in diet significantly increased alpha-tocopherol contents of breast and thigh muscles, reduced the drip loss and improved tenderness but did not influence carcase yield, meat colour or pH value 24 h after slaughter. 4. Thiobarbituric acid reactive substance (TBARS) values decreased with increase in dietary vitamin E, and the addition of 100 mg/kg or more vitamin E had a beneficial effect on oxidative stability as indicated by TBARS values during storage up to 7 d. 5. Dietary vitamin E supplementation significantly altered fatty acid composition of breast muscle. Supplementing with 200 mg/kg vitamin E led to lower saturated fatty acids and greater polyunsaturated fatty acids proportions in breast muscle than control and 10 mg/kg vitamin E treatments. 6. Vitamin E supplementation significantly inhibited expression of the cytosolic phospholipase A(2) gene (cPLA(2)) in breast muscle, while enhancing that of the peroxisome proliterator-activated receptor beta (PPAP-beta) and heart fatty acid binding protein genes (H-FABP). The results indicate that dietary supplementation with vitamin E increased lipid stability in muscle and improved meat quality and fatty acid composition, probably by its influence on the expression of genes related to lipid metabolism.

Abstract
The effect of a 2% dietary administration to pigs of oxidized linseed oil (targeted level of 150mEq.O(2)/kg oil after heating at 50°C and exposure to air for 3-4 days following addition of 10ppm CuSO(4)), either or not in combination with antioxidants, on the oxidative stability of raw and cooked pork during illuminated chill storage was assessed. The antioxidant treatments were: 40ppm α-tocopheryl acetate, 40ppm rosemary extract, 40ppm rosemary extract+2ppm gallic acid, and 40ppm α-tocopheryl acetate+40ppm rosemary extract. A total of 20ppm of α-tocopheryl acetate (ATA) was added to all diets in order to meet the physiological requirement of the animals. The antioxidant treatments did not exert any effect on colour and protein oxidation. Lipid oxidation was only decreased by dietary ATA when comparing the ATA supplemented groups combined versus a control treatment group for raw but not for cooked meat. This was due to a higher content of α-tocopherol in the meat and subcutaneous fat. The lipid oxidation results suggested a lack of antioxidant effect for the rosemary extract. No evidence for a synergistic effect of the antioxidant combinations was observed.

Abstract
There is clear evidence of the nutritional benefits of consuming long-chain n-3 PUFA, which are found predominantly in oily fish. However, oily fish consumption, particularly in the United Kingdom, is declining, as is the consumption of all meats with the exception of poultry, which has increased in consumption by 73% in the last 30 yr. This pattern, if less marked, is reflected throughout Europe, and therefore one means of increasing long-chain n-3 PUFA consumption would be to increase the long-chain n-3 PUFA content in the edible tissues of poultry. This review considers the feasibility of doing this, concentrating particularly on chickens and turkeys. It begins by summarizing the benefits to human health of consuming greater quantities of n-3 FA and the sources of n-3 PUFA in the human diet. The literature on altering the FA composition of poultry meat is then reviewed, and the factors affecting the incorporation of n-3 PUFA into edible tissues of poultry are investigated. The concentration of alpha-linolenic acid (ALA) in the edible tissues of poultry is readily increased by increasing the concentration of ALA in the birds' diet (particularly meat with skin, and dark meat to a greater extent than white meat). The concentration of EPA in both white and dark meat is also increased when the birds' diet is supplemented with EPA, although supplementing the diet with the precursor (ALA) does not result in a noticeable increase in EPA content in the edible tissues. Although supplementing the birds' diets with relatively high concentrations of DHA does result in an increased concentration of DHA in the tissues, the relationship between dietary and tissue concentrations of DHA is much weaker than that observed with ALA and EPA. The impact that altering the FA composition of edible poultry tissue may have on the organoleptic and storage qualities of poultry products is also considered.

Abstract
Dietary oxidized lipids can increase oxidative stress and potentially contribute to a variety of disease syndromes. This research describes the first use of a canine model to assess the effects of dietary oxidized lipids on growth, antioxidant status, and some immune functions. Three groups of eight, two-month old coon-hound puppies were pair fed diets for 16 weeks. The control diet contained <50 ppm aldehydes, and two additional diets contained thermally oxidized lipids targeted to contain 100 ppm aldehydes (medium-oxidation) and 500 ppm aldehydes (high-oxidation). Dogs fed the high-oxidation diet weighed less than those from the medium-oxidation (P < 0.05) and control groups (P < 0.001) at the end of the study. Oxidized lipids reduced serum vitamin E levels, total body fat content, and bone appositional rate. At different time points of the study, peripheral blood neutrophils and monocytes from dogs fed the HO diet had reduced oxidative burst capacity and produced less superoxide and hydrogen peroxide when stimulated with phorbol esters compared to the control group. Lymphocyte blastogenesis in response to concanavalin A was suppressed by dietary oxidized lipid. This study indicates that dietary oxidized lipids negatively affect the growth, antioxidant status, and some immune functions of dogs. Importantly, some effects are evident at 100 ppm aldehydes in the diet, which is a moderate level of oxidation. The rapid growth and weight gain of the dog during the first 6 months of life may also provide a better model for assessing the risks of dietary oxidized lipid in children and adolescents than previously used rodent models.
