Abstract
Shallots (Allium ascalonicum L.) are widely used in culinary and medicinal applications due to their rich bioactive compounds and health benefits. This study examines the effects of freeze drying, sun drying, and hot air drying at 40, 60, and 80 °C on chemical and bioactive compounds in shallots. Hot air drying at 80 °C had the highest total phenolic and flavonoid contents. Freeze drying increased syringic, p-coumaric, protocatechuic, vanillic, and ferulic acids. Quercetin was highest in freeze drying. Apigenin increased in samples that was dried by hot air drying at 80 °C. Proline was the major amino acid; arginine increased by 34 % in sun drying. Fourier Transform Infrared Spectroscopy (FTIR) revealed polysaccharides, lipids-proteins, and amino acids. Eucalyptol was the predominant volatile component in fresh shallot and most preserved by freeze drying. The results underscore the significance of choosing suitable drying methods to preserve shallot bioactive compounds and antioxidant properties.

Abstract
Sunflower meal, a by-product of the oil extraction process from sunflower seeds, has high-quality protein content. Its low production cost, near-absence of toxic substances, and close to "ideal" amino acid composition give it several advantages over other plant-based protein sources. However, at the moment, the use of sunflower meal in the food industry is still limited. This is due to the high content of phenolic compounds (1-4 wt%), particularly chlorogenic acid. The oxidation products of these compounds easily bind to protein molecules, giving the final product a dark green color and bitter taste. Currently, there is a high demand for the development of methods for rapid monitoring of the content of phenolic compounds in plant materials without special processing at various stages of the technological process without preliminary sample preparation for analysis. In this study, we used non-destructive vibrational spectroscopy techniques-Raman and FTIR-to monitor the content of chlorogenic acid in the raw material. As a result, an approach for the determination of chlorogenic acid in sunflower meal using IR spectroscopy with limit of detection (LOD) 0.75 wt% has been proposed. Its content in the studied sample of sunflower meal was 5.6 wt%, which was confirmed by UV-spectroscopy and HPLC. The paper demonstrates the principal possibility of analyzing protein isolates using Raman scattering, with the LOD for chlorogenic acid content at 1 wt%.

Abstract
Biosorbents have demonstrated considerable potential for the remediation of metals in aqueous environments. An aqueous extract of Enteromorpha intestinalis L. (EiE) and its extract-coated silver nanoparticles have been prepared and employed for the removal of iron. Fourier transform infrared spectroscopy (FTIR), X-ray diffraction (XRD), UV-visible spectroscopy, transmission electron microscopy (TEM), gas chromatography-mass spectroscopy (GC-MS), and zeta potential were employed to characterize the prepared biosorbents. The adsorption properties of the biosorbents were investigated in batch experiments, with a range of factors taken into account, including pH, contact time, initial ion concentrations, biosorbent dosage, and temperature. A minimum-run resolution IV design (MRR-IV) was developed with the objective of optimizing the removal efficiency. The mechanisms of adsorption were investigated using both the Langmuir and Freundlich isotherms. Kinetic studies were conducted using the pseudo-first-order and pseudo-second-order models. A variety of active constituents, including organic acids, lipids, alcohols, and terpenes, were identified through the use of GC-MS, with the findings supported by FTIR spectra. Transmission electron microscopy (TEM) revealed that the nanoparticle size ranged from 5 to 44 nm, while X-ray diffraction (XRD) demonstrated a high degree of crystallinity. A screening study employing the MRR-IV methodology, facilitated by the Design-Experiment, Ver 13., indicates that three factors exert a considerable influence on the biosorption process. The study demonstrated that the biosorption mechanism is pH-dependent, with an optimal pH of 5. The adsorption performance was found to follow Freundlich isothermal models and pseudo-first-order kinetics.

Abstract
Infrared (IR) spectroscopy is an efficient method for identifying unknown chemical compounds. To accelerate IR spectrum analysis, various calculation and machine learning methods for simulating IR spectra of molecules have been studied in chemical science. However, existing calculation and machine learning methods assumed a rigid constraint that all molecules are in the gas phase, i.e., they overlooked the phase dependency of the IR spectra. In this paper, we propose an efficient phase-aware machine learning method to generate phase-conditioned IR spectra from 2D molecular structures. To this end, we devised a phase-aware graph neural network and combined it with a transformer decoder. To the best of our knowledge, the proposed method is the first IR spectrum generator that can generate the phase-conditioned IR spectra of real-world complex molecules. The proposed method outperformed state-of-the-art methods in the tasks of generating IR spectra on a benchmark dataset containing experimentally measured 11,546 IR spectra of 10,288 unique molecules. Abstract
BACKGROUND Accurate and quick judgement of the food quality can protect the legitimate rights of consumers. Currently, nanozymes are widely employed in the rapid detection of food due to their stability and economy. The contents of bisphenol A and antioxidant can be used to measure the quality of beverages. However, due to the complexity of the actual samples, it is still challenging to achieve the sensitive detection of both at the same time. The development of nanozyme with high enzyme activity is essential for sensitive detection of targets in complex foods. RESULTS In this work, a novel nanomaterial (ZrTGA) was synthesized based on thioglycolic acid-modified Metal-Organic Framework (MOF-818). The interaction between Cu-S bonds and increase in the proportion of Cu1+ resulted in ZrTGA exhibiting higher peroxidase-like and polyphenol oxidase-like activities. These enzyme activities were 317 % and 200 % of the original values, respectively. With high enzyme activity can sensitively detect two important indicators of bisphenol A and antioxidants in beverages. The increased enzyme activity of ZrTGA enabled the content of both substances to be detected by smartphone extraction of RGB. Finally, through the output of the ''0″ and ''1″ signals of the logic gates, it is possible to quickly determine the level of the two substances and thus directly assess the quality of the beverages. SIGNIFICANCE The modification of nanozyme enables the detection of substances at low concentrations based on enhancing dual-enzyme activity. The combination of mobile phone photography and logic gate technology enables the continuous detection of two important indicators in beverages, overcoming the limitations of traditional large-scale instruments. It also provides an alternative strategy for food quality detection.

Abstract
The antibiofilm, antibacterial, antioxidant, and anticancer activities of the methanolic extract of Padina pavonica L. were determined. Results deduced that the algal extract had a high biofilm formation inhibitory action done via crystal violet (CV) assay, to 88-99%. The results showed a strong antibacterial against the identified bacteria species. Staphylococcus aureus, Enterococcus faecalis, Pseudomonas aeruginosa, Klebsiella pneumonia, Bacillus subtilis, and the extract had moderate antibacterial activity against Escherichia coli, Pseudomonas fluorescens and Streptococcus agalactiae. The algal extract has a concentration-dependent DPPH radical scavenging activity (84.59%, with IC50 = 170.31 µg/ml). The inhibitory percent of P. pavonica methanolic extract in vitro antiproliferative activity was 1.79-98.25% with IC50 = 15.14 µg/ml against lung carcinoma. Phenols, terpenes, amino acids, alkaloids, flavones, alcohols, and fatty acids were among the metabolites whose biological actions were evaluated. In conclusion, for the first time, P. pavonica methanolic extract exhibited effective antibiofilm, antibacterial, antioxidant, and anticancer activities. .

Abstract
The removal of n-alkanes, polycyclic aromatic hydrocarbons, and heavy metals from wastewater using three dried seaweeds Ulva intestinalis Linnaeus (green alga), Sargassum latifolium (Turner) C.Agardh (brown alga), and Corallina officinalis Kützing (red alga) has been shown to evaluate their potential usage as inexpensive adsorbents. Under natural environmental conditions, numerous analytical methods, including zeta potential, energy dispersive X-ray spectroscopy (EDX), SEM, and FT-IR, are used in this study. The results showed that n-alkanes and polycyclic aromatic hydrocarbons adsorption increased with increasing contact time for all three selected algae, with a large removal observed after 15 days, while the optimal contact time for heavy metal removal was 3 h. S. latifolium dry biomass had more potential as bioadsorbent, followed by C. officinalis and then U. intestinalis. S. latifolium attained removal percentages of 65.14%, 72.50%, and 78.92% for light n-alkanes, heavy n-alkanes, and polycyclic aromatic hydrocarbons (PAHs), respectively, after 15 days. Furthermore, it achieved removal percentages of 94.14, 92.62, 89.54, 87.54, 82.76, 80.95, 77.78, 73.02, and 71.62% for Mg, Zn, Cu, Fe, Cr, Pb, Cd, Mn, and Ni, respectively, after 3 h. Carboxyl and hydroxyl from FTIR analysis took part in wastewater treatment. The zeta potentials revealed that algal cells have a negatively charged surface, and the cell surface of S. latifolium has a more negative surface charge than U. intestinalis and C. officinalis. Our study suggests that seaweeds could play an important role in wastewater treatment and thus help as an economical, effective, and ecofriendly bioremediation system for ecological health and life protection.

Abstract
Green nanotechnology has recently been recognized as a more proper and safer tool for medical applications thanks to its natural reductions with low toxicity and avoidance of injurious chemicals. The macroalgal biomass was used for nanocellulose biosynthesis. Algae are abundant in the environment and have a high content of cellulose. In our study, we extracted parent cellulose from Ulva lactuca where consecutive treatments extracted cellulose to obtain an insoluble fraction rich in cellulose. The extracted cellulose has the same results obtained by matching it with reference cellulose, especially the same Fourier transform infrared (FTIR) and X-Ray diffraction (XRD) analysis peaks. Nanocellulose was synthesized from extracted cellulose with hydrolysis by sulfuric acid. Nanocellulose was examined by Scanning electron microscope (SEM) shown by a slab-like region as Fig. 4a and Energy dispersive X-ray (EDX) to examine the chemical composition. The size of nanocellulose in the range of 50 nm is calculated by XRD analysis. Antibacterial examination of nanocellulose was tested against Gram+ bacteria like Staphylococcus aureus (ATCC6538), Klebsiella pneumonia (ST627), and Gram-negative bacteria such as Escherichia coli (ATCC25922), and coagulase-negative Staphylococci (CoNS) to give 4.06, 4.66, 4.93 and 4.43 cm as respectively. Comparing the antibacterial effect of nanocellulose with some antibiotics and estimating minimal Inhibitory Concentration (MIC) of nanocellulose. We tested the influence of cellulose and nanocellulose on some fungi such as Aspergillus flavus, Candida albicans, and Candida tropicalis. These results demonstrate that nanocellulose could be developed as an excellent solution to these challenges, making nanocellulose extracted from natural algae a very important medical material that is compatible with sustainable development.

Abstract
Early cancer diagnosis plays a critical role in improving treatment outcomes and increasing survival rates for certain cancers. NIR spectroscopy offers a rapid and cost-effective approach to evaluate the optical properties of tissues at the microvessel level and provides valuable molecular insights. The integration of NIR spectroscopy with advanced data-driven algorithms in portable instruments has made it a cutting-edge technology for medical applications. NIR spectroscopy is a simple, non-invasive and affordable analytical tool that complements expensive imaging modalities such as functional magnetic resonance imaging, positron emission tomography and computed tomography. By examining tissue absorption, scattering, and concentrations of oxygen, water, and lipids, NIR spectroscopy can reveal inherent differences between tumor and normal tissue, often revealing specific patterns that help stratify disease. In addition, the ability of NIR spectroscopy to assess tumor blood flow, oxygenation, and oxygen metabolism provides a key paradigm for its application in cancer diagnosis. This review evaluates the effectiveness of NIR spectroscopy in the detection and characterization of disease, particularly in cancer, with or without the incorporation of chemometrics and machine learning algorithms. The report highlights the potential of NIR spectroscopy technology to significantly improve discrimination between benign and malignant tumors and accurately predict treatment outcomes. In addition, as more medical applications are studied in large patient cohorts, consistent advances in clinical implementation can be expected, making NIR spectroscopy a valuable adjunct technology for cancer therapy management. Ultimately, the integration of NIR spectroscopy into cancer diagnostics promises to improve prognosis by providing critical new insights into cancer patterns and physiology.

Abstract
Infrared spectroscopy (wavelengths ranging from 750-25,000 nm) offers a rapid means of assessing the chemical composition of a wide range of sample types, both for qualitative and quantitative analyses. Its use in the food industry has increased significantly over the past five decades and it is now an accepted analytical technique for the routine analysis of certain analytes. Furthermore, it is commonly used for routine screening and quality control purposes in numerous industry settings, albeit not typically for the analysis of bioactive compounds. Using the Scopus database, a systematic search of literature of the five years between 2016 and 2020 identified 45 studies using near-infrared and 17 studies using mid-infrared spectroscopy for the quantification of bioactive compounds in food products. The most common bioactive compounds assessed were polyphenols, anthocyanins, carotenoids and ascorbic acid. Numerous factors affect the accuracy of the developed model, including the analyte class and concentration, matrix type, instrument geometry, wavelength selection and spectral processing/pre-processing methods. Additionally, only a few studies were validated on independently sourced samples. Nevertheless, the results demonstrate some promise of infrared spectroscopy for the rapid estimation of a wide range of bioactive compounds in food matrices.

Abstract
Recent studies have demonstrated the metabolic benefits of phenolic compounds on human health. However, traditional analytical methods used for quantification of total phenolic compounds are time-consuming, laborious, require a high volume of reagents, mostly toxic substances, and involve several steps that can result in systematic and instrumental errors. Spectroscopic techniques have been used as alternatives to these methods for the determination of bioactive compounds directly in the food matrix by minimal sample preparation, without using toxic reagents. Therefore, this overview presents the advantages of nondestructive methods focusing on infrared spectroscopy (IR), for the quantification of total phenolic compounds in fruits. In addition, the main difficulties in applying these spectroscopic techniques are presented, as well as a comparison between the quantification of total phenolic compounds by traditional and IR methods. This review concludes by focusing on model building, highlighting that IR data are mainly processed using the partial least-squares (PLS) regression method to predict total phenolic content. The development of portable and inexpensive IR instruments, combined with multivariate data processing, could give to the consumers a straightforward technology to evaluate the total phenolic content of fruits prior to purchase.

Abstract
In recent years, the growing research interests in the applications of plant and fruit extracts (synthetic/stabilization materials for the nanomaterials, medicinal applications, functional foods, and nutraceuticals) have led to the development of new analytical techniques to be utilized for identifying numerous properties of these extracts. One of the main properties essential for the applicability of these plant extracts is the antioxidant capacity (AOC) that is conventionally determined by spectrophotometric techniques. Nowadays, electrochemical methodologies are emerging as alternative tools for quantifying this particular property of the extract. These methodologies address numerous drawbacks of the conventional spectroscopic approach, such as the utilization of expensive and hazardous solvents, extensive sample pre-treatment requirements, long reaction times, low sensitivity, etc. The electrochemical methodologies discussed in this review include cyclic voltammetry (CV), square wave voltammetry (SWV), differential pulse voltammetry (DPV), and chronoamperometry (CAP). This review presents a critical comparison between both the conventional and electrochemical approaches for the quantification of the parameter of AOC and discusses the numerous applications of the obtained bioextracts based on the AOC parameter.

Abstract
Maize (Zea mays L.) is one of the major crops of the world for feed, food, and industrial uses. It was originated in Central America and introduced into Europe and other continents after Columbus trips at the end of the 15th century. Due to the large adaptability of maize, farmers have originated a wide variability of genetic resources with wide diversity of adaptation, characteristics, and uses. Nowadays, in Europe, maize is mainly used for feed, but several food specialties were originated during these five centuries of maize history and became traditional food specialties. This review summarizes the state of the art of traditional foodstuffs made with maize in Southern, South-Western and South-Eastern Europe, from an historic evolution to the last research activities that focus on improving sustainability, quality and safety of food production.

Abstract
Rapid and sensitive detection of foodborne bacteria is a growing concern for ensuring safe food supply and preventing human foodborne infections. It is difficult for conventional methods to meet these detection requirements because they are often tedious and time-consuming. In the recent years, near infrared (NIR) spectroscopy has been found to be a promising method for all sorts of analyses in microbiology due to its highly specific absorption signature and non-destructive measurements. In this review, we first briefly introduce the fundamental and basic operational procedure of NIR spectroscopy for foodborne bacteria detection. Then we summarize the main advances and contributions of this technique in the study of foodborne bacteria. Finally, we conclude that much work still remains to be done before NIR spectroscopy really becomes a viable alternative in the field of microbiological characterization.

Abstract
The interactions between polysaccharides and phenolics in foods affect their physicochemical properties and bioactivity. Pectin and catechin/procyanidin present in plants ubiquitously and attracting more attentions for the potential health benefits. This work investigates the interactions between high methoxyl pectin and catechin/procyanidin in a simulative juice model using multiple microscopic and spectroscopic approaches and their influences on the antioxidant activity of phenolics were evaluated in the Caco-2 cells model. The results showed that pectin with either of phenolic compunds exhibited lower transmittance, zeta potential, viscosity, and larger particle size than it alone. The morphology of pectin complexes with either of phenolics under experimental conditions (pH = 3.5) was observed. The ΔH° (-6.821 kJ mol-1 ) and ΔS° (6.357×10-2 kJ mol-1 ) indicated that pectin interacts with procyanidin via electrostatic interaction, whereas hydrophobic interaction was the dominant drive force between pectin and catechin (ΔH° = 1.422 kJ mol-1 ; ΔS° = 13.048 × 10-2 kJ mol-1 ). The antioxidant activities of catechin/procyanidin decreased while binding with pectin based on indexes of glutathione peroxidase, total superoxide dismutase, total antioxidant capacity, and malondialdehyde. PRACTICAL APPLICATION: The findings of this work indicated that the physicochemical property of pectin and the antioxidant activity of catechin/procyanidin were influenced by the interactions between pectin and catechin/procyanidin in a simulative food system. This study provides insights into the molecular interactions between pectin and phenolics in a simulative food system.

Abstract
OBJECTIVES The aim of this study was to develop artificial neural network (ANNs) models for prediction of physical (total dissolved solids, extraction yield) and chemical (total polyphenolic content, antioxidant activity) properties of industrial hemp extracts, prepared by two different extraction methods (solid-liquid extraction and microwave-assisted extraction) based on combined UV-VIS-NIR spectra. Spectral data were gathered for 46 samples per extraction method. RESULTS The PCA analysis ensured efficient separation of the samples based on the amount of ethanol in extraction solvent using NIR spectra for both conventional and microwave-assisted extraction. CONCLUSIONS Results showed that reliable ANN models (R2 >0.7000) for describing physical, chemical, and simultaneously physical and chemical characteristics can be developed based on combined UV-VIS-NIR spectra of industrial hemp extracts without spectra pre-processing.

Abstract
According to many reports, phenolic compounds isolated from olive leaves have very good biological activities, especially antimicrobial. Presently, the resistance of microorganisms to antibiotics is greater than ever. Therefore, there are numerous recent papers about alternative solutions for inhibiting their influence on human health. Olive leaf is studied as an important source of antimicrobials with low cost and used in medicine. Numerous publications on involving green technologies for isolation of active compounds from olive leaves have appeared over the past few decades. The present review reports on current knowledge of the most isolated phenolic compounds from olive leaf extract as well as methods for their isolation and characterization. This paper uses recent research findings with a wide range of study models to describe the antimicrobial potential of phenolic compounds. It also describes the vast range of information about methods for determination of antimicrobial potential focusing on effects on different microbes. Additionally, it serves to highlight the role of olive leaf extract as an antioxidants and presents methods for determination of antioxidant potential. Furthermore, it provides an overview of presence of enzymes. The significance of olive leaves as industrial and agricultural waste is emphasized by means of explaining their availability, therapeutic and nutritional effects, and research conducted on this field.

Abstract
BACKGROUND Isaria tenuipes is one of the potent species in the members of the genus Isaria, which is well reported to possess multiple bioactive substances of therapeutic importance. Therefore, an in vitro experimental study was carried to evaluate the bioactivities of the crude methanolic extract from the mycelium of this fungus. METHODS The fungus was authenticated through morphological characters and the species discrepancy was resolved using the nuclear rDNA ITS sequence. The methanolic extract was fingerprinted by FTIR. The antioxidant components in terms of total phenols and flavonoids were determined as gallic acid and quercetin equivalents respectively. Antioxidant activities of the methanolic extract was assessed using 1, 1-diphenyl-2-picrylhydrazyl (DPPH), 2, 2/-azinobis-(3-ethylbenzthiazoline-6-sulphonic acid) radical cation (ABTS0+), Fe2+chelating activity, and hydroxyl radical scavenging assays. Cytotoxicity of the extract was determined by [3-(4, 5-dimethylthiazol-2-yl)-2, 5-diphenyltetrazolium bromide] (MTT) assay on three cancer cell lines: HeLa, HepG2, and PC3. Apoptosis was further studied by propidium iodide (PI) and Annexin-V/PI staining flow cytometric analysis. Anti-proliferation capacity was studied by colony-forming assay. RESULTS In the present study total phenol content of the dried methanol extract was 148.09 ± 3.51μg gallic acid equivalent/mg and flavonoid was 9.02±0.95 μg quercetin/mg. The antioxidant activities of methanol-water extract (8:2 v/v) from cultured mycelia of I. tenuipes investigated and evaluated with 1, 1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging assay revealed IC50 value of 5.04mg/ml with an inhibition rate of 74.77% at 10mg/ml and with an iron-chelating assay the chelating ability was recorded to be 86.76% where the IC50 value was 4.43 mg/ml. In comparison among the antioxidant assays, 2,2/-azinobis-(3-ethylbenzthiazoline-6-sulphonic acid) radical cation (ABTS0+) and hydroxyl assay exhibited radical scavenging rate of 44.42% and 49.82% respectively at a concentration of 10 mg/ml. The IC50 value of the extract in MTT assay was 43.45μg/ml with HeLa cells, 119.33μg/ml with PC3 cells, and 125.55μg/ml with HepG2 cells. CONCLUSION In this study, it can be concluded that the crude methanolic extract exhibited potent antioxidant and antiproliferative activities suggesting natural antioxidative and antiproliferative agents.

Abstract
Mid-infrared spectroscopy is finding an increasing number of applications; however, many of its potential uses remain unexplored. In this study, mid-infrared spectroscopy is applied to predict total antioxidant capacity and phenolic contents of powdered matrices of 14 diverse plant species. In all instances, the optimum prediction models were found using standard normal variate smoothing as a pre-processing method. The results show high correlation between the FTIR predicted and chemically determined values, namely R2 values of 0.962 for total phenolics, 0.829 for cupric reducing antioxidant potential (CUPRAC) and 0.911 for ferric reducing antioxidant potential (FRAP). The relative RMSE found for validation indicated that total phenolic content could be predicted with higher accuracy than CUPRAC or FRAP. This pilot study highlights the promise of this technology for plant breeders and a range of industries where rapid screening of many samples for antioxidant and/or phenolic content is envisaged.

Abstract
This paper proposes a perspective literature review of the antioxidant properties in fruit-based juices. The total antioxidant properties due to compounds such as carotenoids, polyphenolic compounds, flavonoids, and tannins as well as the assessment of interactions between natural active compounds and other food matrix components can be seen as the first step in the study of potential health benefits of fruit-based juices. A brief summary is given on the significance of antioxidant properties of fruit juices, the conventional methods for antioxidant activity evaluation, and on the newly emerged sample analysis and data interpretation strategies, that is, chemometric analysis based on spectroscopic data. The effect of fruit processing techniques and the addition of ingredients on the antioxidant properties of fruit-based juices are also discussed.

Abstract
Horticultural commodities (fruit and vegetables) are the major dietary source of several bioactive compounds of high nutraceutical value for humans, including polyphenols, carotenoids and vitamins. The aim of the current review was dual. Firstly, toward the eventual enhancement of horticultural crops with bio-functional compounds, the natural genetic variation in antioxidants found in different species and cultivars/genotypes is underlined. Notably, some landraces and/or traditional cultivars have been characterized by substantially higher phytochemical content, i.e., small tomato of Santorini island (cv. "Tomataki Santorinis") possesses appreciably high amounts of ascorbic acid (AsA). The systematic screening of key bioactive compounds in a wide range of germplasm for the identification of promising genotypes and the restoration of key gene fractions from wild species and landraces may help in reducing the loss of agro-biodiversity, creating a healthier "gene pool" as the basis of future adaptation. Toward this direction, large scale comparative studies in different cultivars/genotypes of a given species provide useful insights about the ones of higher nutritional value. Secondly, the advancements in the employment of analytical techniques to determine the antioxidant potential through a convenient, easy and fast way are outlined. Such analytical techniques include electron paramagnetic resonance (EPR) and infrared (IR) spectroscopy, electrochemical, and chemometric methods, flow injection analysis (FIA), optical sensors, and high resolution screening (HRS). Taking into consideration that fruits and vegetables are complex mixtures of water- and lipid-soluble antioxidants, the exploitation of chemometrics to develop "omics" platforms (i.e., metabolomics, foodomics) is a promising tool for researchers to decode and/or predict antioxidant activity of fresh produce. For industry, the use of optical sensors and IR spectroscopy is recommended to estimate the antioxidant activity rapidly and at low cost, although legislation does not allow its correlation with health claims.

Abstract
As less consumed animal by-product, beef and pork offal have chances to sneak into the authentic ground beef meat products, and thus a rapid and accurate detection and quantification technique is highly required. In this study, Fourier transformed-infrared (FT-IR) spectroscopy was investigated to develop an optimized protocol for analyzing ground beef meat potentially adulterated with six types of beef and pork offal. Various chemometric models for classification and quantification were constructed for the collected FT-IR spectra. Applying optimized chemometric models, FT-IR spectroscopy could differentiate authentic beef meat from adulterated samples with >99% accuracy, to identify the type of offal in the sample with >80% confidence, and to quantify five types of offal in an accurate manner (R2 > 0.81). An optimized protocol was developed to authenticate ground beef meat as well as identify and quantify the offal adulterants using FT-IR spectroscopy coupled with chemometric models. This protocol offers a limit of detection <10% w/w of offal in ground beef meat and can be applied by governmental laboratories and food industry to rapidly monitor the integrity of ground beef meat products.

Abstract
Nanotechnology based therapeutics has emerged as a promising approach for augmenting the activity of existing antimicrobials due to the unique physical and chemical properties of nanoparticles (NPs). Nickel oxide nanoparticles (NiO-NPs) have been suggested as prospective antibacterial and antitumor agent. In this study, NiO-NPs have been synthesized by a green approach using Eucalyptus globulus leaf extract and assessed for their bactericidal activity. The morphology and purity of synthesized NiO-NPs determined through various spectroscopic techniques like UV-Visible, FT-IR, XRD, EDX and electron microscopy differed considerably. The synthesized NiO-NPs were pleomorphic varying in size between 10 and 20 nm. The XRD analysis revealed the average size of NiO-NPs as 19 nm. The UV-Vis spectroscopic data showed a strong SPR of NiO-NPs with a characteristic spectral peak at 396 nm. The FTIR data revealed various functional moieties like C=C, C-N, C-H and O-H which elucidate the role of leaf biomolecules in capping and dispersal of NiO-NPs. The bioactivity assay revealed the antibacterial and anti-biofilm activity of NiO-NPs against ESβL (+) E. coli, P. aeruginosa, methicillin sensitive and resistant S. aureus. Growth inhibition assay demonstrated time and NiO-NPs concentration dependent decrease in the viability of treated cells. NiO-NPs induced biofilm inhibition was revealed by a sharp increase in characteristic red fluorescence of PI, while SEM images of NiO-NPs treated cells were irregular shrink and distorted with obvious depressions/indentations. The results suggested significant antibacterial and antibiofilm activity of NiO-NPs which may play an important role in the management of infectious diseases affecting human health.

Abstract
The present study explores an alternative method for antioxidants determination in buckwheat (Fagopyrum) samples. Buckwheat contains different amounts of the antioxidants rutin, quercetin and quercitrin in different plant parts. Buckwheat seeds are most commonly used as food; however, preparations from the herb can also be used as a rich source of rutin. Infrared spectroscopy was used for individual and sum quantification of rutin, quercetin and quercitrin in whole and ground flowers and leaves of seven different buckwheat species. Correlation coefficients R of calibration and independent validation set for rutin, quercetin and quercitrin were 1.00 and 0.98, 0.94 and 0.99, 0.99 and 0.95, respectively. Some of the developed models had accuracy comparable to the reference HPLC method. Additionally many different parameters that give an important insight into the FTIR technique are discussed (different plant parts, whole and ground untreated samples, 3 different resolutions, 7 spectra pre-treatments, using individual or averaged spectra, reducing spectral data input, considering additional non-spectral data). The implemented technique used no sample preparation, is non-destructive and uses very little amounts of sample. Result show that infrared spectroscopy can be a fast and environmentally friendly alternative technique for routine analysis of main flavonoids in aerial parts of buckwheat.

Abstract
Improvement of the nutritional quality of soybean is usually facilitated by a vast range of soybean germplasm with enough information about their multiple phytonutrients. In order to acquire this essential information from a huge number of soybean samples, a rapid analytic method is urgently required. Here, a nondestructive near-infrared reflectance spectroscopy (NIRS) method was developed for rapid and accurate measurement of 25 nutritional components in soybean simultaneously, including fatty acids palmitic acid, stearic acid, oleic acid, linoleic acid, and linolenic acid, vitamin E (VE), α-VE, γ-VE, δ-VE, saponins, isoflavonoids, and flavonoids. Modified partial least squares regression and first, second, third, and fourth derivative transformation was applied for the model development. The 1 minus variance ratio (1-VR) value of the optimal model can reach between the highest 0.95 and lowest 0.64. The predicted values of phytonutrients in soybean using NIRS technology are comparable to those obtained from using the traditional spectrum or chemical methods. A robust NIRS can be adopted as a reliable method to evaluate complex plant constituents for screening large-scale samples of soybean germplasm resources or genetic populations for improvement of nutritional qualities. Abstract
Large-scale synthesis and release of nanomaterials in environment is a growing concern for human health and ecosystem. Therefore, we have investigated the cytotoxic and genotoxic potential of zinc oxide nanoparticles (ZnO-NPs), zinc oxide bulk (ZnO-Bulk), and zinc ions (Zn2+) in treated roots of Allium cepa, under hydroponic conditions. ZnO-NPs were characterized by UV-visible, XRD, FT-IR spectroscopy and TEM analyses. Bulbs of A. cepa exposed to ZnO-NPs (25.5 nm) for 12 h exhibited significant decrease (23 ± 8.7%) in % mitotic index and increase in chromosomal aberrations (18 ± 7.6%), in a dose-dependent manner. Transmission electron microcopy and FT-IR data suggested surface attachment, internalization and biomolecular intervention of ZnO-NPs in root cells, respectively. The levels of TBARS and antioxidant enzymes were found to be significantly greater in treated root cells vis-à-vis untreated control. Furthermore, dose-dependent increase in ROS production and alterations in ΔΨm were observed in treated roots. FT-IR analysis of root tissues demonstrated symmetric and asymmetric P=O stretching of >PO2- at 1240 cm-1 and stretching of C-O ribose at 1060 cm-1, suggestive of nuclear damage. Overall, the results elucidated A. cepa, as a good model for assessment of cytotoxicity and oxidative DNA damage with ZnO-NPs and Zn2+ in plants.

Abstract
Phaleria macrocarpa, known as "Mahkota Dewa", is a widely used medicinal plant in Malaysia. This study focused on the characterization of α-glucosidase inhibitory activity of P. macrocarpa extracts using Fourier transform infrared spectroscopy (FTIR)-based metabolomics. P. macrocarpa and its extracts contain thousands of compounds having synergistic effect. Generally, their variability exists, and there are many active components in meager amounts. Thus, the conventional measurement methods of a single component for the quality control are time consuming, laborious, expensive, and unreliable. It is of great interest to develop a rapid prediction method for herbal quality control to investigate the α-glucosidase inhibitory activity of P. macrocarpa by multicomponent analyses. In this study, a rapid and simple analytical method was developed using FTIR spectroscopy-based fingerprinting. A total of 36 extracts of different ethanol concentrations were prepared and tested on inhibitory potential and fingerprinted using FTIR spectroscopy, coupled with chemometrics of orthogonal partial least square (OPLS) at the 4000-400 cm-1 frequency region and resolution of 4 cm-1. The OPLS model generated the highest regression coefficient with R2Y = 0.98 and Q2Y = 0.70, lowest root mean square error estimation = 17.17, and root mean square error of cross validation = 57.29. A five-component (1+4+0) predictive model was build up to correlate FTIR spectra with activity, and the responsible functional groups, such as -CH, -NH, -COOH, and -OH, were identified for the bioactivity. A successful multivariate model was constructed using FTIR-attenuated total reflection as a simple and rapid technique to predict the inhibitory activity.

Abstract
Phenylpropanoids are a diverse chemical class with immense health benefits that are biosynthesized from the aromatic amino acid L-phenylalanine. This article reviews the progress for accessing variation in phenylpropanoids in germplasm collections, the genetic and molecular basis of phenylpropanoid biosynthesis, and the development of cultivars dense in seed-phenylpropanoids. Progress is also reviewed on high-throughput assays, factors that influence phenylpropanoids, the site of phenylpropanoids accumulation in seed, Genotype × Environment interactions, and on consumer attitudes for the acceptance of staple foods rich in phenylpropanoids. A paradigm shift was noted in barley, maize, rice, sorghum, soybean, and wheat, wherein cultivars rich in phenylpropanoids are grown in Europe and North and Central America. Studies have highlighted some biological constraints that need to be addressed for development of high-yielding cultivars that are rich in phenylpropanoids. Genomics-assisted breeding is expected to facilitate rapid introgression into improved genetic backgrounds by minimizing linkage drag. More research is needed to systematically characterize germplasm pools for assessing variation to support crop genetic enhancement, and assess consumer attitudes to foods rich in phenylpropanoids.

Abstract
There are many studies in which the antioxidant potential of different foods have been analyzed. However, there are still conflicting results and lack of information as a result of unstandardized assay techniques and differences between the principles of the methods applied. The measurement of antioxidant activity, especially in the case of mixtures, multifunctional or complex multiphase systems, cannot be evaluated satisfactorily using a simple antioxidant test due to the many variables influencing the results. In the literature, there are many antioxidant assays that are used to measure the total antioxidant activity/capacity of food materials. In this review, reactive oxygen and nitrogen species (ROS/RNS) scavenging assays are evaluated with respect to their mechanism, advantages, disadvantages, and potential use in food systems. On the other hand, in vivo antioxidant activity (AOA) assays including oxidative stress biomarkers and cellular-based assays are covered within the scope of this review. Finally, chromatographic and chemometric assays are reviewed, focusing on their benefits especially with respect to their time saving, cost-effective, and sensitive nature.
