Abstract
Seaweed, particularly kombu, wakame, and nori, has become increasingly popular food in Western nations. In the present study commercially available edible seaweeds (n = 100), imported from China and South Korea, and purchased from local supermarkets in the Tel Aviv, Israel, were analyzed in a recent study to assess 22 trace element concentrations for consumer health risk assessment and to construct an authenticity classification. Trace elements showed a broad concentration range, with copper (Cu), manganese (Mn), zinc (Zn), cadmium (Cd), selenium (Se), and tin (Sn) levels exceeding previously reported averages by at least double. Nori contained more Cu, vanadium (V), and molybdenum (Mo), while kombu and wakame had significantly higher iodine and total arsenic (total As) levels. Despite negligible health risks from chronic exposure to toxic elements, weekly chronic consumption of kombu and wakame may expose consumers to hazardous concentrations of iodine. In fact, kombu increased weekly iodine intake by 400-800%, and wakame by 159% and 95% in children and adults, respectively. Hence, regular consumption by children of 5 g of kombu seaweed per week, which corresponds to the average weekly intake of dried seaweed in the European population, is strongly discouraged. As for wakame, the consumption should be limited to no more than once a month, particularly for children. Finally, the study successfully classified the types of seaweed, showcasing potential for an authenticity method for seaweed products.

Abstract
Seaweed, traditionally part of the daily diet of Asian countries, has become a common dish in Western countries. In Brazil, although contributing to lesser amounts, seaweed consumption has been incorporated into the population eating habits. It is well established that seaweed contains (1) several biologically active components and (2) the ability to accumulate minerals and trace elements, both of which are essential and potentially toxic. Therefore, the objective of this study was to determine the concentrations of essential, trace and toxic elements present in edible seaweeds sold in São Paulo city market, considering the species, origin, and potential impact on the health of the consumers. Data demonstrated that the elemental distribution is characteristic of the species and due to low quantity consumption seaweed may be considered a reliable source for iodine alone.

Abstract
The early stages of human development are critical for growth, and exposure to arsenic, particularly through the placenta and dietary sources, poses significant health risks. Despite extensive research, significant gaps remain in our comprehension of regional disparities in arsenic exposure and its cumulative impacts during these developmental stages. We hypothesize that infants in certain regions are at greater risk of arsenic exposure and its associated health complications. This review aims to fill these gaps by providing a comprehensive synthesis of epidemiological evidence related to arsenic exposure during early life, with an emphasis on the underlying mechanisms of arsenic toxicity that contribute to adverse health outcomes, including neurodevelopmental impairments, immune dysfunction, cardiovascular diseases, and cancer. Further, by systematically comparing dietary arsenic exposure in infants across Asia, the Americas, and Europe, our findings reveal that infants in Bangladesh, Pakistan, and India, exposed to levels significantly exceeding the health reference value range of 0.3-8 µg/kg/day, are particularly vulnerable to dietary inorganic arsenic. This comparative analysis not only highlights geographic disparities in exposure but also underscores the variability in regulatory frameworks. Finally, the review identifies early life as a critical window for dietary arsenic exposure and offers evidence-based recommendations for mitigating arsenic contamination in infant foods. These strategies include improved agricultural practices, dietary modifications, stricter regulatory limits on arsenic in infant products, and encouragement of low-arsenic dietary alternatives. Our work establishes the framework for future research and policy development aimed at reducing the burden of arsenic exposure from source to table and effectively addressing this significant public health challenge.

Abstract
The arsenic (As) content of seaweed has been extensively studied due to its toxicological concerns. As a primary producer, seaweed plays a vital role in the biochemical cycling of As in marine environments. Several studies have focused on the growth and behavior of seaweed under a salinity gradient; however, information related to the impact of salinity on As uptake, biotransformation mechanism, and time-dependent speciation patterns of these plants is limited. This study aimed to investigate the temporal effects of salinity on these factors in seaweed. Three seaweed species, Sargassum fusiforme, Sargassum thunbergii, and Sargassum horneri, were maintained in a 1% Provasoli-enriched seawater medium for 14 d under 5‰, 15‰, 25‰, and 34‰ salinities. The results revealed that the high salinity media promoted a rapid uptake of As by all three species. Arsenic accumulation inside the cell approached 100% within seven days of culture for S. thunbergii, irrespective of the salinity content of the media. In addition, As(V) biotransformation and release by S. fusiforme and S. thunbergii were time-dependent, while S. horneri released dimethylarsinic acid (DMAA) from day 3 of the culture. All seaweed species showed methylation of As(V) to DMAA during the culture period. Furthermore, S. thunbergii released DMAA when As(V) was completely depleted from the culture media, whereas the release by S. fusiforme and S. horneri was relatively earlier than that of S. thunbergii. S. horneri showed minimal tolerance to low salinity, as the cells revealed significant damage. Based on the results of this study, a conceptual model was developed that demonstrated the effects of salinity on As uptake and the biotransformation mechanism of seaweed.

Abstract
The addition of marine macroalgae to animal feed has garnered interest due to the demonstrated benefits of gut health in many livestock species. Most macroalgae have a higher mineral content than terrestrial vegetables, making them an attractive, sustainable source of minerals. However, some macroalgae contain elevated concentrations of iodine and arsenic, which may be transferred to the meat of livestock fed with macroalgae. This study evaluated the mineral profile of rabbit serum, muscle, liver, and kidney of rabbits fed diets supplemented with different marine macroalgae, with the goal of improving post-weaning gut health and reducing reliance on antibiotics. We found increased deposition of iodine in muscle, liver, and kidney due to macroalgae supplementation, which is particularly promising for regions with low iodine endemicity. Higher, though relatively low arsenic concentrations, compared to those in other animal meats and food sources, were also detected in the muscle, liver, and kidney of macroalgae-fed rabbits. The absence of apparent interactions with other micronutrients, particularly selenium, suggests that the inclusion of macroalgae in rabbit diets will not affect the overall mineral content. Enhanced bioavailability of elements such as phosphorus and iron may provide additional benefits, potentially reducing the need for mineral supplementation.

Abstract
Arsenic-containing lipids, also named arsenolipids (AsLs), are a group of organic compounds usually found in a variety of marine organisms such as fish, algae, shellfish, marine oils, and microorganisms. Numerous AsLs have been recognised so far, from simple compounds such as arsenic fatty acids (AsFAs), arsenic hydrocarbons (AsHCs), and trimethylarsenio fatty alcohols (TMAsFOHs) to more complex arsenic-containing species, of which arsenophospholipids (AsPLs) are a case in point. Mass spectrometry, both as inductively coupled plasma (ICP-MS) and liquid chromatography coupled by an electrospray source (LC-ESI-MS), was applied to organic arsenicals playing a key role in extending and refining the characterisation of arsenic-containing lipids in marine organisms. Herein, upon the introduction of a systematic notation for AsLs and a brief examination of their toxicity and biological role, the most relevant literature concerning the characterisation of AsLs in marine organisms, including edible ones, is reviewed. The use of both ICP-MS and ESI-MS coupled with reversed-phase liquid chromatography (RPLC) has brought significant advancements in the field. In the case of ESI-MS, the employment of negative polarity and tandem MS analyses has further enhanced these advancements. One notable development is the identification of the m/z 389.0 ion ([AsC10H19O9P]-) as a diagnostic product ion of AsPLs, which is obtained from the fragmentation of the deprotonated forms of AsPLs ([M - H]-). The pinpointing product ions offer the possibility of determining the identity and regiochemistry of AsPL side chains. Advanced MS-based analytical methods may contribute remarkably to the understanding of the chemical diversity characterising the metalloid As in natural organic compounds of marine organisms.

Abstract
Seaweed farming in the United States is gaining significant financial and political support due to prospects to sustainably expand domestic economies with environmentally friendly products. Several networks are seeking appropriate synthesis of available science to both inform policy and substantiate the sector's sustainability claims. Significant knowledge gaps remain regarding seaweed-specific food hazards and their mitigation; a resource-intensive challenge that can inhibit sustainable policies. This is particularly concerning for rapidly expanding Saccharina latissima (sugar kelp) crops, a brown seaweed that is known to accumulate heavy metals linked to food hazards. Here, we present baseline information about concentrations of arsenic, cadmium, lead, and mercury, in both wild and farmed sugar kelp from the New England region. We interpret our findings based on proximity to potential sources of contamination, location on blade, and available heavy metals standards. Contrary to our expectations, high concentrations were widespread in both wild and farmed populations, regardless of proximity to contamination. We find, like others, that cadmium and arsenic consistently reach levels of regulatory concern, and that dried seaweeds could harbor higher concentrations compared to raw products. We also share unique findings that suggest some toxins concentrate at the base of kelp blades. Our results are one step towards aggregating vital data for the region to expand its seaweed farming footprint.

Abstract
The biosorption of arsenic (As) with macroalgae has aroused much interest as a clean and low-cost technology. To evaluate arsenic biosorption by Chondracanthus chamissoi and Cladophora sp., approximately 5 kg of algae was collected from Huanchaco’s beach and Sausacocha lake (Huamachuco), La Libertad. As biosorption was carried out in four column systems, with 2 g of algae pellets each, circulating As solutions of 0.25 and 1.25 ppm, respectively, at 300 mL/min cm2. As concentration was determined at 3 and 6 h of treatment by flame atomic absorption spectrophotometry. Data were analyzed using Student’s t-test with 95% confidence. At 6 h, Chondracanthus chamissoi presented an As biosorption of 95.76% in a 0.25 ppm mg/L solution and 85.33% in a 1.25 mg/L solution. Cladophora sp., at 6 h, presented an As biosorption of 95.76% in a 0.25 mg/L solution and 42.03% in a 1.25 mg/L solution. It was concluded that Chondracanthus chamissoi achieves higher percentages of biosorption than Cladophora sp. in solutions of 1.25 mg/L As (p < 0.05), and that there is no significant difference between the biosorption percentages of Chondracanthus chamissoi and Cladophora sp. in a 0.25 mg/L solution of As at 6 h of treatment (p > 0.05).

Abstract
Sargassum strandings in the coastal environment can introduce arsenic into food webs. In this context, we assessed the risk of exposure to arsenic for consumers of Caribbean bivalves. In 2019, specimens of Asaphis deflorata and Phacoides pectinatus were collected in an Atlantic coastal zone of Martinique (island) to monitor the presence of arsenic species by LC-ICP-MS. The total arsenic (tAs) concentrations were, on average, 34.4 ± 3.8 and 76.9 ± 22.3 µg.g-1 dry weight for P. pectinatus and A. deflorata, respectively. Seven compounds of arsenic were detected in bivalve soft bodies. In P. pectinatus, monomethylarsonic acid was present at a relatively significant concentration (≈ 29.6%). These results were coupled with survey data collected in 2013 and again in 2019, from the main consumers of bivalves. The tAs intake was up to 6 mg.day-1 for a 240 g (wet weight) meal of bivalves. In addition, we proposed toxicological reference doses also based on detected toxic forms of arsenic and tested their relevance. We concluded that monitoring of total arsenic would be sufficient to ensure the protection of bivalve consumers. Consumption patterns expose consumers to a potential health risk. However, due to a decrease in consumption frequency associated with the depletion of bivalve resources by decomposing Sargassum mats, arsenic exposure has decreased. In the French Caribbean, this is the first study on the risk of human arsenic contamination from the ingestion of bivalves. This study is a contribution to the monitoring of arsenic in the Caribbean coastal environment.

Abstract
In this study we present an elemental profile of 46 edible seaweed samples purchased in the United States. The seaweeds were grouped in 13 subgroups/species based on DNA barcoding analysis. The seaweeds were decomposed by microwave accelerated acid digestion followed by quantification of 26 elements by ICP-MS. Elements were grouped into macronutrient (Na, K, Ca, S, Mg and P), essential (Fe, Zn, Mn, V, Cu, Cr, Ni, Mo and Se), non-essential including toxic elements (Sr, Ba, Th, Sn and Sb As, Cd, Pb, U, W and Hg). The highest levels were found for Na and the lowest were for Hg. The elemental profiles depended on the taxonomy of the species and several elements (Fe, Ba, Cr, Pb, W and Th) also exhibited high intraspecies variations, likely due to geographic origin or food processing conditions. Higher Cd and Pb accumulation was observed in wakame, hijiki and nori, with Cd as high 4.05 mg/kg and Pb as high as 2.85 mg/kg in kombu. A study of correlation between the elements using Pearson's coefficients revealed multiple pairs of highly correlated elements in seaweed, as well as triple and quintuple correlations of certain elements.

Abstract
Arsenic (As) is a toxic metalloid present in high levels in diverse regions of Argentina. The aim of this study was to determine acute As-mediated toxicity in two different populations of autochthonous Hyalella curvispina amphipods from a reference site (LB) and an agricultural one (FO) within North Patagonia Argentina. Previously, both populations exhibited significant differences in pesticide susceptibility. Lab assays were performed to determine acute lethal concentrations, as well as some biochemical parameters. Lethal concentration (LC50) values obtained after 48 and 96 hr As exposure were not significantly different between these populations, although FO amphipods appeared slightly less susceptible. LC50-48 hr values were 3.33 and 3.92 mg/L As, while LC50-96 hr values were 1.76 and 2.14 mg/L As for LB and FO amphipods. The no observed effect concentration (NOEC) values were 0.5 mg/L As. Cholinesterase (ChE) activity was significantly diminished by As acute exposure (0.5-1.5 mg/L As), indicative of a significant neurotoxic action for this metalloid in both amphipod populations. Activities of catalase (CAT) and glutathione S-transferase (GST) and levels of reduced glutathione (GSH) were differentially altered following As exposure. CAT activity was increased after 96 hr As exposure. GST activity and GSH levels were significantly elevated followed by either a decrease or a return to control values after 96 hr treatment. However, additional studies are necessary to understand the mechanisms underlying the As-mediated oxidative effects in H. curvispina. Our findings suggest that measurement of ChE activity in H. curvispina amphipods might serve as a useful biomarker of As exposure and effect.

Abstract
Marine species deteriorate rapidly post-mortem as a consequence of a variety of biochemical and microbial breakdown mechanisms. Due to the increasing demand for high-quality fresh seafood, different strategies are now available to retard spoilage for as long as possible. The present study provides an overview of a recently proposed strategy based on the addition of natural compounds to marine species. In this strategy, different kinds of natural preservative compounds are included in the flake-ice medium that is commonly used for chilled storage. Natural sources tested for this purpose include low-molecular-weight organic acids and different kinds of extracts of plants, macroalgae, and by-products resulting from marine species commercialization. The preservative action of such treatments is analyzed according to the effect on different deteriorative mechanisms (i.e., lipid hydrolysis, oxidation, and microbial activity development), as well as on the resulting sensory acceptability and shelf-life time. The basic objective of this review is to provide an overview concerning the positive effect that the presence in an icing system of natural preserving compounds may have on the quality of chilled marine species. Furthermore, various potential avenues are proposed to develop the practical and commercial employment of this technological strategy.

Abstract
Simple Summary Our aim is to introduce the mineral nutrition of fish and explain the complexity of determining requirements for these elements, which are absorbed and excreted by the fish into the surrounding water. To date, only the requirements for nine minerals have been investigated. The review is focused on the absorption and the dietary factors that reduce their absorption from feed ingredients of plant and animal origin. Some diseases, such as cataracts, anemia and bone deformity, have been linked to dietary deficiency of minerals. Abstract Aquatic animals have unique physiological mechanisms to absorb and retain minerals from their diets and water. Research and development in the area of mineral nutrition of farmed fish and crustaceans have been relatively slow and major gaps exist in the knowledge of trace element requirements, physiological functions and bioavailability from feed ingredients. Quantitative dietary requirements have been reported for three macroelements (calcium, phosphorus and magnesium) and six trace minerals (zinc, iron, copper, manganese, iodine and selenium) for selected fish species. Mineral deficiency signs in fish include reduced bone mineralization, anorexia, lens cataracts (zinc), skeletal deformities (phosphorus, magnesium, zinc), fin erosion (copper, zinc), nephrocalcinosis (magnesium deficiency, selenium toxicity), thyroid hyperplasia (iodine), muscular dystrophy (selenium) and hypochromic microcytic anemia (iron). An excessive intake of minerals from either diet or gill uptake causes toxicity and therefore a fine balance between mineral deficiency and toxicity is vital for aquatic organisms to maintain their homeostasis, either through increased absorption or excretion. Release of minerals from uneaten or undigested feed and from urinary excretion can cause eutrophication of natural waters, which requires additional consideration in feed formulation. The current knowledge in mineral nutrition of fish is briefly reviewed.

Abstract
Brown seaweed phlorotannins have shown the potential to promote several health benefits. Durvillaea incurvata and Lessonia spicata-species that are widely distributed in central and southern Chile-were investigated to obtain phlorotannin extracts with antioxidant and antihyperglycemic potential. The use of an environmentally friendly and food-grade glycerol-based pressurized hot liquid extraction (PHLE) process (15% v/v glycerol water) was assessed for the first time to obtain phlorotannins. Multiple effects were analyzed, including the effect of the species, harvesting area (Las Cruces and Niebla), and anatomical part (holdfast, stipe, and frond) on the extracts' polyphenol content (TPC), antioxidant capacity (AC), and carbohydrate-hydrolyzing enzyme-α-glucosidase and α-amylase-inhibitory activity. Contaminants, such as mannitol, heavy metals (As, Cd, Pb, Hg, and Sn), and 5-hydroxymethylfurfural (HMF), were also determined. The anatomical part used demonstrated a significant impact on the extracts' TPC and AC, with holdfasts showing the highest values (TPC: 95 ± 24 mg phloroglucinol equivalents/g dry extract; DPPH: 400 ± 140 μmol Trolox equivalents/g dry extract; ORAC: 560 ± 130 μmol TE/g dry extract). Accordingly, holdfast extracts presented the most potent α-glucosidase inhibition, with D. incurvata from Niebla showing an activity equivalent to fifteen times that of acarbose. Only one frond and stipe extract showed significant α-glucosidase inhibitory capacity. No α-amylase inhibition was found in any extract. Although no HMF was detected, potentially hazardous cadmium levels (over the French limit) and substantial mannitol concentrations-reaching up to 50% of the extract dry weight-were found in most seaweed samples and extracts. Therefore, further purification steps are suggested if food or pharmaceutical applications are intended for the seaweed PHLE extracts obtained in this study.

Abstract
Mental health and active aging are two of the main concerns in the 21st century. To search for new neuroprotective compounds, extracts of Codium tomentosum Stackhouse and Fucus vesiculosus L. were obtained through multi-step (four step) subcritical water extraction using a temperature gradient. The safety assessment of the extracts was performed by screening pharmaceutical compounds and pesticides by UHPLC-MS/MS, and iodine and arsenic levels by ICP-MS. Although the extracts were free of pharmaceutical compounds and pesticides, the presence of arsenic and high iodine contents were found in the first two extraction steps. Thus, the health-benefits were only evaluated for the fractions obtained in steps 3 and 4 from the extraction process. These fractions were tested against five brain enzymes implicated in Alzheimer’s, Parkinson’s, and major depression etiology as well as against reactive oxygen and nitrogen species, having been observed a strong enzyme inhibition and radical scavenging activities for the step 4 fractions from both seaweed species. Regarding the variation of the chemical composition during the extraction, step 1 fractions were the richest in phenolic compounds. With the increase in temperature, Maillard reaction, caramelization and thermo-oxidation occurred, and the resulting products positively affected the antioxidant capacity and the neuroprotective effects.

Abstract
As the use of food supplements increases, voices are being raised questioning the safety of these products. As a contribution to understanding the trace and major elemental composition of food supplements and their potential health risks, this study presents concentrations of 71 elements in 138 supplements, categorised into synthetic products and three groups of products with natural ingredients. Concentrations were converted into average daily doses (ADDs) and compared to tolerable daily intakes (TDIs). For elements where we found significant ADDs relative to the TDI a comparison was also made to the normal dietary intake. Our main findings are that: 1) Most elements display highly variable concentrations in food supplements; more so than in normal foodstuff; 2) For ten of the analysed elements some products rendered ADDs > 50 % of the TDI. Half of the elements were essential (Fe, Mn, Se, Mo, Zn), and as such motivated in food supplements. The other half (As, Pb, Cd, Al, Ni) represent non-essential and highly toxic elements, where the occurrence in food supplements ought to be viewed as contamination. Although none of these toxic metals were declared on any product's table of content, several products gave high ADDs - in several cases even exceeding the TDIs; 3) The risk of reaching high ADDs for the toxic elements is strongly associated with products that contain marine ingredients (e.g. algae, mussels etc), and to some degree products of terrestrial plant-based origin. The health of consumers would benefit if food regulatory frameworks were updated to better address the risks of food supplements occasionally being contaminated with different toxic metals, for example by setting maximum permissible concentrations for a longer list of elements.

Abstract
Arsenic speciation analysis in dried seaweeds was carried out using an on-line HPLC-UV-thermo-oxidation-HG-AFS system. Species separated and quantified were: arsenite [As(III)], arsenate [As(V)], monomethylarsonic acid (MMA), dimethylarsinic acid (DMA) and different arsenosugars. Extraction efficiency ranged between 38 and 83%. Chromatographic separation was achieved in gradient elution mode using (NH4)2CO3 as mobile phase in the pH range 9-10.3. Total As concentration was quantified by ICP-MS after microwave digestion. Limits of detection were in the range 3.0 to 6.0 ng g-1 for the species under study based on peak height and the relative standard deviation was <8% at 10 µg L-1 As. The accuracy of the procedure was verified by analyzing the CRM BCR-279 Ulva lactuca. Results for total As were in agreement with the certified values. The HPLC-(UV)-HG-AFS system resulted suitable for quantification of eight As compounds. Results showed that arsenosugars are the most abundant compounds in the investigated seaweeds.
