Abstract
This study investigated the hypothesis that methionine supplementation of Japanese quail (Coturnix coturnix japonica) hens can reduce the effects of oxidative stress and improve the performance of the offspring exposed to heat stress during growth. For that, the quail hens were fed with three diets related to the methionine supplementation: methionine-deficient diet (Md); diet supplemented with the recommended methionine level (Met1); and diet supplemented with methionine above the recommended level (Met2). Their chicks were identified, weighed, and housed according to the maternal diet group from 1 to 14 d of age. On 15 d of age, chicks were weighed and divided into two groups: thermoneutral ambient (constant temperature of 23 °C) and intermittent heat stress ambient (daily exposure to 34 °C for 6 h). Methionine-supplemented (Met1 and Met2) hens had higher egg production, better feed conversion ratio, higher hatchability of total and fertile eggs, and offspring with higher body weight. Supplemented (Met1 and Met2) hens showed greater expression of glutathione synthase (GSS) and methionine sulfoxide reductase A (MSRA) genes, greater total antioxidant capacity, and lower lipid peroxidation in the liver. The offspring of hens fed the Met2 diet had lower death rate (1 to 14 d), higher weight on 15 d of age, weight gain, and better feed conversion ratio from 1 to 14 d of age. Among chicks reared under heat stress, the progeny of methionine-supplemented hens had higher weight on 35 d, weight gain, expression of GSS, MSRA, and thermal shock protein 70 (HSP70) genes, and total antioxidant capacity in the liver, as well as lower heterophil/lymphocyte ratio. Positive correlations between expression of glutathione peroxidase 7 (GPX7) and MSRA genes in hens and offspring were observed. Our results show that maternal methionine supplementation contributes to offspring development and performance in early stages and that, under conditions of heat stress during growth, chicks from methionine-supplemented hens respond better to hot environmental conditions than chicks from nonsupplemented hens. Supplementation of quail hens diets with methionine promoted activation of different metabolic pathways in offspring subjected to stress conditions.

Abstract
Enhanced albumen quality is reflected in increased thick albumen height, albumen weight, and Haugh unit value, while the antimicrobial, antioxidant, foaming, gelling, viscosity, and elasticity attributes are retained. Improved albumen quality is of benefit to consumers and to the food and health industries. Egg quality often declines during storage because eggs are highly perishable products and are most often not consumed immediately after oviposition. This review provides insights into albumen quality in terms of changes in albumen structure during storage, the influence of storage time and temperature, and the mitigation effects of natural dietary antioxidants of plant origin. During storage, albumen undergoes various physiochemical changes: loss of moisture and gaseous products through the shell pores and breakdown of carbonic acid, which induces albumen pH increases. High albumen pH acts as a catalyst for structural changes in albumen, including degradation of the β-ovomucin subunit and O-glycosidic bonds, collapse of the ovomucin-lysozyme complex, and decline in albumen protein–protein interactions. These culminate in declined albumen quality, characterized by the loss of albumen proteins, such as ovomucin, destabilized foaming and gelling capacity, decreased antimicrobial activity, albumen liquefaction, and reduced viscosity and elasticity. These changes and rates of albumen decline are more conspicuous at ambient temperature compared to low temperatures. Thus, albumen of poor quality due to the loss of functional and biological properties cannot be harnessed as a functional food, as an ingredient in food processing industries, and for its active compounds for drug creation in the health industry. The use of refrigerators, coatings, and thermal and non-thermal treatments to preserve albumen quality during storage are limited by huge financial costs, the skilled operations required, environmental pollution, and residue and toxicity effects. Nutritional interventions, including supplementation with natural antioxidants of plant origin in the diets of laying hens, have a promising potential as natural shelf-life extenders. Since they are safe, without residue effects, the bioactive compounds could be transferred to the egg. Natural antioxidants of plant origin have been found to increase albumen radical scavenging activity, increase the total antioxidant capacity of albumen, reduce the protein carbonyl and malondialdehyde (MDA) content of albumen, and prevent oxidative damage to the magnum, thereby eliminating the transfer of toxins to the egg. These products are targeted towards attenuating oxidative species and inhibiting or slowing down the rates of lipid and protein peroxidation, thereby enhancing egg quality and extending the shelf life of albumen.

Abstract
The present study was carried out to investigate the effects of methionine (Met), lysine (Lys), isoleucine (Ile), and threonine (Thr) deficiency in a low-protein diet on laying performance, egg quality, serum biochemical indices, and the gut microbiota in laying hens. A total of 300 Peking Pink laying hens, at 38 weeks of age, were randomly allocated to five dietary treatments, each of which included six replicates of ten hens. Hens were fed an amino acid-balanced diet (Met: 0.46%; Lys: 0.76%; Ile: 0.72%; Thr: 0.56%; positive control, PC), Met deficiency diet (Met-, 0.25%), Lys deficiency diet (Lys-, 0.56%), Ile deficiency diet (Ile-, 0.54%), and Thr deficiency diet (Thr-, 0.46%) for 12 weeks. Hens were housed in pairs in 45 × 45 × 45 cm wire cages with three ladders and three birds per cage. Feed and water were provided ad libitum during the entire experimental period. All data were analyzed using one-way ANOVA with Turkey's multiple range test. Here, compared to the PC group, final body weight (FBW), average daily gain (ADG), egg production (EP), egg weight (EW), average daily egg mass (EM), average daily feed intake (ADFI), and yield of abdominal fat (AFY) in the Met-group were lower, while EW and EM were higher in the Lys-group. The feed egg ratio (FER) was increased in the Met- and Lys-groups, and EW and AFY were decreased in the Ile-group compared to the controls. Meanwhile, ADG, EP, EM, and ADFI were lower in the Thr group than the PC group. The level of triglycerides (TGs) in the four groups was lower and the concentrations of uric acid (UA) in the Met-group were higher than those in the PC group. The shell color in the Thr group was lower than the PC group. Of note, amino acid deficiency altered the gut microbial structure (e.g., increasing the level of Parabacteroides and decreasing the abundance of Lactobacillus) in hens. The correlation analysis showed that amino acid deficiency-induced gut microbiota alteration is closely associated with the change in key parameters: FER, UA, AFY, EW, EM, TG, FBW, EP, and ADFI. Collectively, our results highlight the role of adequate amino acid ratio supplementation in the low-crude-protein diet structure for laying hens.

Abstract
The main aim of this review is to consolidate the relevant published data examining amino acid requirements of layer hens and to reach a new set of recommendation based on these data. There are inconsistences in lysine, sulphur-containing amino acids, threonine, tryptophan, branched-chain amino acids, and arginine recommendations in data that have surfaced since 1994. This review finds that breed, age, basal diet composition, and assessment method have contributed toward inconsistencies in amino acid recommendations. Presently, the development of reduced-protein diets for layer hens is receiving increasing attention because of the demand for sustainable production. This involves quite radical changes in diet composition with inclusions of nonbound, essential and nonessential amino acids. Increasing inclusions of nonbound amino acids into layer diets modifies protein digestive dynamics, and it may influence amino acid requirements in layer hens. This review considers present amino acid recommendations for layer hens and proposes refinements that may better serve the needs of the layer industry in the future.

Abstract
Dietary supplementation of green tea changes the antioxidative capacity of chickens. However, the effect of green tea supplementation in the diet on egg quality and the consequent change in processing capacity is still not well known. The aim of this study was to determine whether green tea powder (GTP) supplementation could affect egg quality, egg antioxidant capacity, and sensory and egg processing characteristics. Huainan partridge chickens (1,080) at 20 wk old were divided into 2 groups, one group fed a basal diet (control) and one group fed a basal diet plus 10 g kgˆ-1 GTP for 12 wk. After the levels of yolk cholesterol had been determined, chickens from the control group were further divided into low- and high-cholesterol groups and were fed a basal diet or a diet with 10 g kgˆ-1 GTP by orthogonal design. After 4 wk, the egg processing characteristics were investigated. Egg specific gravity, shell strength, shell thickness, albumin height, Haugh unit (HU) and cholesterol content were significantly lower in the GTP group than in the control group (P < 0.05). Egg weight, albumin height, yolk color, and HU increased in a time-dependent manner in both the control and GTP groups (P < 0.01). The yolk C16:0, C20:0, C18:1, C18:2, and polyunsaturated fatty acid (PUFA) contents were higher in the GTP group than in the control group (P < 0.05). Egg whites from the GTP group showed increased radical scavenging activity (P < 0.05). Egg appearance and texture from the GTP group were more preferred than those of the control group (P < 0.05). Eggs from the GTP group had lower hardness, chewiness, and water retention capacity than those of eggs from the control group (P < 0.05). Eggs from the GTP group with high yolk cholesterol showed lower chewiness than those from the basal diet group (P < 0.05). The results suggested that GTP supplementation could enrich the PUFA content in egg yolks, improve the overall taste, and change processing characteristics.

Abstract
This study aimed to investigate the effects of maternal dietary coated methionine (Met) on egg production and the quality, growth performance, carcass traits, and meat quality of the offspring. In total, 288 female Ross parental chickens were randomly assigned to 3 groups with 3 replicates of 32 chickens each. From week 37 to 46, the hens of different groups were fed diets containing low (0.27% Met), adequate (0.27% Met + 0.1% coated Met) (AM), and high (0.27% Met + 0.2% coated Met) (HM) Met. There was a positive response in laying rate and albumen weight in AM and HM groups. For the offspring at market age, BW, eviscerated weight, and muscle weight were increased in the AM group (P < 0.05), whereas excessive supplementation was proven to be negative with those traits. The meat quality (color, pH, and shear force) of breast muscle was significantly influenced by different supplementation levels. The lightness and yellowness were increased in the HM group (P < 0.05, P < 0.01, respectively), and redness was decreased in the AM group (P < 0.05). A lower pH value occurred in chickens of the HM group (P < 0.05). The expressions of meat quality–related genes were altered in the supplementation groups. The pH-related genes PRDX4 and PRKAG2 were found to be significantly differentially expressed (P < 0.05, P < 0.01, respectively) and consistent with pH changes. The meat color–related gene BCO1 was also differentially expressed (P < 0.01) and showed a corresponding change with yellowness value. Collectively, the best production performance was in the offspring with 0.1% coated Met supplementation (AM group). Supplementation with 0.2% coated Met (HM group) seemed to be excessive, but laying rate was increased in the HM group. Both results of phenotypic measurements and gene expression demonstrated that maternal-coated Met supplementation resulted in fluctuation of some meat quality indices in the offspring, but all values were still within the range found in normal chickens.

Abstract
US organic poultry producers are under pressure to find feed alternatives to corn and wheat. Hulless oats offer advantages such as wide geographic adaptation of the plant and high concentrations of protein and oil in the grain. They have shown considerable potential in experimental work as a feed grain for poultry, but more research is needed into their influence on the sensory and nutritional properties of eggs. In this study, hulless oats were substituted for corn or wheat at 200 g kg−1 in diets fed to Hy-Line Brown hens and eggs were sampled for sensory evaluation after 8 weeks. Discrimination tests of blended and baked egg samples found evidence of difference between eggs from oat-based diets and those from the oat-free control (p < 0.05 for eggs from an oat-corn diet, p < 0.01 for eggs from an oat-wheat diet). Acceptance tests of similar samples showed that eggs from the oat-wheat diet were significantly less liked than control eggs for their texture (p < 0.01) and response to cooking (p < 0.01), while eggs from the oat-corn diet were somewhat less liked. Yolk weight was greater (p < 0.05) in control eggs (34.1 g) than eggs from oat-corn (31.6 g) or oat-wheat (31.2 g) diets, leading to smaller yolk proportion in the oat-fed eggs. Fatty acid profile differences across treatments were not of nutritional significance, and no evidence was found that the feeding of hulless oats improved storage properties of eggs. In this study, modifying the carbohydrate source in layer diets was shown to change textural properties of cooked eggs in a way that was perceptible to untrained consumers, probably by reducing the yolk proportion. This finding was not commercially relevant owing to small effect size, and results overall add to existing evidence that hulless oats can be fed to poultry at a moderate proportion of the diet with no negative effect on consumer acceptability of eggs. Regardless of the small effect size, however, findings are interesting from the food chemistry perspective because they provide novel evidence of how the thermal properties of eggs can be altered by a change in hen dietary carbohydrate source.

Abstract
This study was conducted to evaluate the effects of various protein sources (soybean meal, SBM; cottonseed protein, CSP; double-zero rapeseed meal, DRM) on the internal quality (Haugh unit, yolk index, albumen pH, yolk hardness and yolk springiness) of eggs when stored at either 4 or 28°C for 28 d. A total of 288 laying hens (32 wk of age) were randomly allotted to 6 treatment groups (4 replicates per treatment) and fed diets containing SBM, CSP, or DRM individually or in combination with equal crude protein content (SBM-CSP, SBM-DRM, and CSP-DRM) as the protein ingredient(s). A 6 × 2 factorial arrangement was employed with dietary types and storage temperatures (4 and 28°C) as the main effects. After 12 wk of diet feeding, a total of 216 eggs was collected for egg internal quality determination. The results showed as follows: 1) lower egg quality was observed in the DRM group compared with the other groups when stored at 4 and 28°C for 28 d (P < 0.05), while there was no difference in egg internal quality among the other groups. 2) The CSP diet resulted in higher yolk hardness compared with the other diets when eggs were stored at 4°C for 28 d (P < 0.05). Lower Haugh unit was observed in the DRM and SBM-DRM groups compared with the other groups when eggs were stored for 28 d at 4°C (P < 0.05). 3) Yolk breakage occurred in the DRM group and eggs could not be analyzed for egg internal quality when stored at 28°C for 28 d. The overall results indicated that CSP or DRM as the sole dietary protein source for laying hens may adversely affect the internal quality of stored eggs as compared with the SBM diet, and half replacement of CSP combined with SBM may maintain similar egg quality to SBM diet alone for eggs stored under refrigerated conditions.

A total of 360 laying hens (32 wk of age) were randomly allotted to six treatment groups (five replicates per treatment) and fed diets containing SBM, CSP, or DRM individually or in combination with equal crude protein content (SBM-CSP, SBM-DRM, and CSP-DRM) as the protein ingredient(s). A 6×3 factorial arrangement was employed with dietary types and storage time (0 d, 2 wk, and 4 wk) as the main effects. After 12 wk of diet feeding, a total of 270 eggs were collected for egg quality determination. The egg Haugh unit (HU) in the CSP, SBM-DRM, and DRM groups were significantly lower than those in the SBM and SBM-CSP groups. The hardness and springiness of the cooked yolk in the CSP group were significantly higher than those in the other treatment groups. A lower HU, lower yolk index and higher albumen pH were observed in the DRM group compared to the SBM and SBM-CSP groups when the eggs were stored to 4 wk, and the HU was improved in the CSP-DRM group compared to the DRM group (p<0.05). Higher yolk hardness was observed in the CSP group compared to the other groups during storage (p<0.05), but the hardness of the cooked yolk in the SBM-CSP and CSP-DRM groups showed no difference in comparison to the SBM group. In conclusion, CSP may ameliorate the negative effects of DRM on the HU of refrigerated eggs, and SBM or DRM may alleviate the adverse effects of CSP on yolk hardness.

Abstract
1. In organic egg production, forage material as part of the diet for laying hens is mandatory. The purpose of the present study was to examine the effect of feeding with forage materials including maize silage, herbs or kale on egg production and various egg quality parameters of the shell, yolk colour, egg albumen, sensory properties, fatty acid and carotenoid composition of the egg yolk. 2. A total of 5 dietary treatments were tested for 5 weeks, consisting of a basal organic feed plus 120 g/hen.d of the following forage materials: 1) maize silage (control), 2) maize silage incl. 15 g/kg basil, 3) maize silage incl. 30 g/kg basil, 4) maize silage incl. 15 g/kg thyme, or 5) fresh kale leaves. Each was supplied to three replicates of 20 hens. A total of 300 hens was used. 3. Feed intake, forage intake and laying rate did not differ with treatment, but egg weight and egg mass produced increased significantly with the kale treatment. 4. The egg shell strength tended to be higher with the kale treatment, and egg yolk colour was significantly more red with the kale treatment and more yellow with basil and kale treatments. The albumen DM content and albumen gel strength were lowest with the thyme treatment. By sensory evaluation, the kale treatment resulted in eggs with less sulphur aroma, higher yolk colour score, and more sweet and less watery albumen taste. Furthermore, the eggs of the kale treatment had significantly higher lutein and β-carotene content. Also, violaxanthin, an orange xanthophyll, tended to be higher in kale and eggs from hens receiving kale. 5. In conclusion, forage material, especially basil and kale, resulted in increased egg production and eggs of high and differentiable quality.

Abstract
This experiment was carried out to investigate effects of maternal ME and CP levels on growth performance, carcass traits, and meat quality of broiler offspring. A total of 1,134 thirty-week-old Chinese Yellow broiler breeders was randomly assigned to 3 dietary ME levels (11.09, 11.51, and 11.92 MJ/kg) and 3 CP levels (15.5, 16.5, and 17.5%) in a 3×3 factorial arrangement. Each dietary treatment had 6 replicates with 21 hens per replicate. At 39 wk of age, 30 settable eggs per replicate were selected for hatching. All broiler offspring were fed the same diets. There were significant ME×CP interactions in egg CP and ether extract (EE) contents, BW at d 1, 22 to 42 d ADG, ADFI during 1 to 21 d and 43 to 63 d, shear force, plasma albumin, cholesterol, and triglycerides contents of broiler offspring. Dietary ME at 11.92 MJ/kg increased average egg weight, egg EE content, and broiler 1-d-old BW compared with 11.09 MJ/kg group at 16.5%, 15.5%, and 17.5% CP levels, respectively (P<0.05). Maternal 11.51 and 11.92 MJ/kg of ME increased 1 to 21-d ADFI, and 11.51 MJ/kg of ME decreased lightness (L*) value of broiler offspring compared with 11.09 MJ/kg group at 17.5 and 16.5% CP levels, respectively (P<0.05). Broiler breeder dietary CP at 17.5% decreased egg EE content, increased average egg weight, egg CP content, BW at d 1, and 1 to 21-d ADFI of broiler offspring compared with 15.5% CP group at 11.92 MJ/kg of ME level (P<0.05). Maternal dietary 15.5% CP increased dressing percentage and decreased yellowness (b*) value of broiler offspring compared with 16.5% and 17.5% CP groups at 11.51 MJ/kg of ME level, respectively (P<0.05). Collectively, the results indicate that maternal diets composed of 11.51 to 11.92 MJ/kg of ME and 17.5% CP at 39 wk of age increased growth performance during 1 to 21 d in Chinese Yellow broiler, whereas 11.51 MJ/kg of ME and 15.5% CP improved carcass dressing percentage and meat color of their offspring.

Abstract
Avaliaram-se os efeitos de níveis de aminoácidos sulfurados digestíveis (AASD) sobre o desempenho e a qualidade interna e externa de ovos de 360 poedeiras de 25 a 41 semanas de idade. Foram formuladas seis dietas experimentais: cinco continham 0,578; 0,636; 0,694; 0,752 ou 0,810% de AASD, e em uma o nível de AASD foi o usualmente recomendado, cada tratamento com cinco repetições de 12 aves, em quatro períodos de avaliação de 28 dias cada. Melhores resultados para produção de ovos, conversão alimentar, massa de ovos e ovos viáveis foram obtidos com as aves que consumiram 729; 751; 801 e 730mg AASD/dia, respectivamente. A elevação dos níveis de AASD resultou em aumentos lineares no consumo de ração, no ganho de peso, nas porcentagens de gema e no extrato etéreo na gema. Nos ovos armazenados por sete dias, houve aumento linear da porcentagem de gema e decréscimo linear da porcentagem de casca, unidade Haugh e peso específico com a elevação dos níveis de AASD. Conclui-se que, para melhores produção e qualidade interna e externa de ovos, é necessário o consumo de 752mg de AASD ou de 864mg de aminoácidos sulfurados totais por ave/dia.

Abstract
This study was a 3 x 8 factorial arrangement of 3 nutrient densities (low, medium, and high) and 8 commercial Leghorn strains. The objective of this experiment was to determine the effect of increasing both dietary energy and other nutrients (amino acids, Ca, and available P) on performance, egg composition, egg solids, egg quality, and profits in 8 commercial Leghorn strains during phase 1 (from 21 to 36 wk of age). This experiment lasted 16 wk. Eight strains of hens (n = 270 of each strain) at 21 wk of age were randomly divided into 24 treatments (6 replicates of 15 birds/treatment). There were no interactions between strain and diet except for BW. Strain had a significant effect on all measured parameters except mortality, whole egg solids, and yolk color. As nutrient density increased, hens linearly adjusted feed intake to achieve similar energy intakes so that the similar quantities of dietary energy (5.8 to 5.9 kcal) were used to produce 1 g of egg. As nutrient density increased, egg mass linearly increased, and feed conversion linearly improved. Egg-specific gravity and Haugh unit linearly decreased with increasing nutrient density. There was a quadratic response of the percentage of albumen solids to the increased nutrient density. Increasing both dietary energy and other nutrient (amino acids, Ca, and available P) contents significantly increased yolk and albumen weight at the same time, resulting in a significant increase of egg weight during early egg production. Egg weight may be maximized to genetic potential by increasing both dietary energy and other nutrient (amino acids, Ca, and available P) contents during early egg production. Because egg prices and ingredient prices often change, there can be no fixed optimal nutrient density for optimal profits.

Abstract
1. As hens age, egg weight increases but the eggs contain proportionally more yolk and less albumen and shell. However, at a given age, larger eggs contain proportionally more albumen. When modelling the nutrient requirements of the hen over a production cycle, based on the daily outputs of each nutrient, egg weight needs to be predicted as the sum of the three components, since each has a unique chemical composition, and these proportional changes will therefore influence the nutrient requirements of the hen. 2. Yolk weight is related to hen age and may be calculated using a logistic or Gompertz function. Allometric functions are used to predict albumen weight from yolk weight and shell weight from the weight of the egg contents. 3. A mechanistic, stochastic population model for layers may be used to verify that these functions correctly reflect the proportional changes in the egg components with advancing hen age and at a given age, over a range of egg weights. 4. The various parameters used in the equations need to be defined for the available genotypes.

Abstract
Six groups of organically fed hens were studied for egg production, feed parameters, and egg quality from 20 to 31 wk of age. Treatments were 3 diets (0, 15, and 25% blue lupin) with or without supplements of foraging material (whole carrots and corn silage). Increased lupin content increased nonstarch polysaccharides content and reduced methionine content below the hens' requirement. Egg production at 31 wk was lower with the 25% lupin diet without (69%) and with foraging material (76%) compared with the other diets (approximately 90%). Egg weight was highest with the 0% lupin diet (64 g), and 15% lupin diet (60 g), whereas the 25% lupin diet without and with foraging material resulted in egg weights of 58 and 56 g, respectively. Feed intakes were approximately 113 g of diet/ hen per d and 113 g of supplement/hen per d in 0 and 15% lupin treatments, respectively. Feeding the 25% lupin diet significantly reduced diet intake to approximately 91 g, and increased supplement intake to 118 g for the treatment with foraging material. Eggs from treatments with foraging material had significantly higher sulfur-like aftertaste in sensory evaluation. Yolk color became significantly lighter and more yellow with lupin content, but darker and less greenish with foraging material. Increased lupin levels decreased albumen DM, whereas foraging material had no effect. Inclusion of 25% lupin in layer diets is only recommended when supplying some methionine source, as egg production and quality parameters are dramatically impaired. However, supplement of foraging material significantly improves egg production.

Abstract
Dekalb Delta hens were randomly assigned to one of eight dietary treatment groups. Two intakes of lysine (860 and 959 mg/hen per day) and 4 intakes of TSAA (635, 689, 811, 877 mg/hen per day) were combined in a 2 x 4 factorial treatment arrangement and fed from 20 to 43 wks of age. A phase feeding regimen was implemented at 43 wk with lysine intake lowered to 715 or 816 mg/hen per day and TSAA to 578, 607, 699, or 779 mg/hen per day. Cage was the experimental unit (5 hens/cage), and dietary treatments were replicated 8 times. Egg production (EP) and feed consumption were not affected by dietary treatments. Feed efficiency improved linearly by increasing TSAA intake during phase I only. Hen weight gain was improved (P < or = 0.03) by increased dietary lysine (94.2 vs. 135.2 g weight gain/hen). During phase I, hen weight gain was affected quadratically (P < or = 0.02) by TSAA. Increasing TSAA intake up to 689 mg/hen per day increased hen weight gain, but gain decreased at the highest intake. Egg weights (EW) increased (P < or = 0.02) from 59.02 to 60.21 g with increased lysine intake. Increasing lysine intake increased wet and dry albumen percentage, whereas dry yolk percentage decreased with increasing lysine. Total sulfur amino acid intake affected wet yolk, dry yolk, and solids in a quadratic trend, with hens fed 811 and 699 mg/d producing eggs with the greatest yolk solids. Wet and dry shell percentages were not affected by lysine or TSAA, and specific gravity decreased linearly during phase II and overall, with increased dietary TSAA. In conclusion, the dietary lysine at 959 and 816 mg/hen per day for phases I and II, respectively, optimized EW and feed efficiency. Because EP was not affected by dietary lysine, the dietary level for optimizing EP is closer to 860 and 715 mg/hen per day for phases I and II, respectively. Dietary TSAA level for maximum EP and feed efficiency was near 811 and 699 mg/hen per day but for EW may be closer to 877 and 779 mg/hen per day for phases I and II, respectively.

Abstract
Selection can be a useful way to alter yolk proportion and thereby egg dry matter which, owing to its economic importance, is a trait of substantial importance for the egg-processing industry. However, the egg is primarily the chamber of embryonic development. The main purpose of this study was to estimate genetic correlations between the maternal effect on chick weight at hatching and the direct effect on different egg composition traits, in particular, yolk proportion. Additionally, genetic parameters were estimated for egg composition traits. To create a data set suitable for estimation of genetic parameters, a three-round selection experiment was set up. Birds were selected based on their predicted breeding values for the genetic maternal effect on chick weight and the direct genetic effect on yolk proportion according to the theory of elliptical selection. Genetic parameters were estimated using a multiple trait animal model and restricted maximum likelihood. The maternal heritability for chick weight was 0.5, whereas the direct heritability was dose to 0. The genetic correlations between the maternal effect on chick weight and the direct effect on yolk proportion, yolk weight, albumen weight, albumen dry matter concentration, and egg weight were 0.14, 0.76, 0.93, 0.14, and 0.99, respectively. The heritabilities for yolk proportion, yolk weight, albumen weight, albumen dry matter concentration, and egg weight were 0.33, 0.43, 0.57, 0.38, and 0.60, respectively. We conclude that breeding ought to be a useful way to increase egg dry matter with no expected unfavorable correlated effects on chick weight.

Abstract
This study evaluated the effects of two dietary doses of vitamins E and C supplemented separately and together, on the content of vitamin E in the yolk, on the lipid stability of fresh and stored eggs, and on their sensory and functional properties. Hy-Line Brown hens (n = 216) received a basal diet for 8 wk supplemented with 100 or 200 mg DL-alpha-tocopheryl acetate (E100 or E200, respectively)/kg, 500 or 1,000 mg ascorbic acid (C500 and C1000, respectively)/kg, or 100 mg DL-alpha-tocopheryl acetate plus 500 mg ascorbic acid (E100+C500)/kg, whereas the control group received no supplementation. Fresh eggs and eggs stored 30,60, and 90 d at 4 C or stored 28 d at room temperature were analyzed for vitamin E content and TBA-reactive substances (TBARS). We also evaluated functional properties of fresh and cooked eggs and sensory properties of boiled and scrambled eggs. The yolk content of vitamin E depended on the level of dietary addition and decreased after 90 d of storage at 4 C or after 28 d at 25 C. Vitamin supplementation had no effect on fresh or refrigerated eggs, whereas 4 wk of storage at room temperature increased TBARS in the control and the group supplemented with the highest doses of vitamins. Ascorbic acid improved Haugh units and elasticity of albumen gels, whereas cohesiveness and hardness of yolk, albumen and whole-egg gels were not affected by dietary treatment. Panelists were not able to distinguish treated eggs from control eggs.
