Abstract
This study was conducted to investigate the effects of different free-range systems on the growth performance, carcass traits, and meat quality of geese. Grass pasture zones in the study area were selected, and 28 d-old male Yangzhou geese with similar body weights (1.57 ± 0.12 kg) were randomly allocated to one of three conditions: (A) free-range conditions in the apron area during 9:00 a.m.-4:00 p.m. (10-20 m from shed with grass pasture); (B) free-range conditions in the outer range from 9:00 a.m. to 4:00 p.m. (beyond 50 m from shed with grass pasture); and (C) barn system. Free range-reared geese had higher weight gain after 42 days of age than barn-reared geese, regardless of the range area. A lower feed conversion ratio was found in outer range-reared and apron area-reared geese from 28 to 63 days of age. In addition, the highest percentages of leg and breast muscle weights were observed in outer range-reared and apron area-reared geese, respectively. Finally, outer-range rearing resulted in a lower pH and lower moisture content. Therefore, these data suggest that the outer range system benefits growth performance and feed conversion ratio of geese and results in a higher percentage of leg muscle weight, lower pH, and lower moisture content.

Abstract
This study examined the effect of Medicago sativa (A), Trifolium repens (WC), Lolium perenne (PR), and their mixture (Mix) on growth performance, carcass characteristics, internal organ weights, and meat quality of slower-growing broiler chickens in a free-range production system. The animal materials comprised of mixed-sex Hubbard ISA Red JA, which were reared in the deep litter system for the first 3 weeks, and thereafter, the pop hole in each of the indoor pens was opened to allow birds access to the range containing one of the above pasture treatments. The range availability was ensured from 08:30 a.m. to 4:30 p.m. The results indicated no significant difference in broiler live body weight, feed conversion ratio, and livability between 28 and 77 days among the pasture treatments (P > 0.05). No significant variations were observed in the carcass and internal organ weights among pasture types (P > 0.05). Additionally, while the dry matter content (P < 0.01), TBA value (P < 0.05), and fatty acid profiles differed (P < 0.01), the protein, ash, water holding capacity, and oxidation stability of broiler breast meat did not differ among pasture groups (P > 0.05). Moreover, while the values of breast meat lightness (L*) and brightness (b*) differed (P < 0.05), redness and pH did not differ between the sexes (P > 0.05). Furthermore, sex significantly affected ash, protein content (P < 0.05), and TBA value (P < 0.01) of breast meat but did not affect dry matter, water holding capacity, and peroxide value of breast meat. Also, there was a significant difference in the weight of the neck, breast, thigh, live weight, hot carcass yield, heart, liver, abdominal fat, and digestive system between sexes (P < 0.05). However, breast meat fat content and fatty acid profiles were not influenced by the sex of the broilers (P > 0.05). It was concluded that access to the studied pasture species has no effect on the growth performance traits but results in notable variations in the fatty acid profiles in broiler breast meat.

Abstract
The present study was conducted to assess the growth performance, morphometric traits, muscle chemical composition and cholesterol content in four phenotypes of naked neck chicken (black, white-black, light brown and dark brown). A total of 320-day-old chicks, 80 from each phenotype, were randomly stratified into 20 replicates (16/replicate), according to a completely randomized design. The results showed higher final body weight, weight gain, and better FCR in both light brown and dark brown phenotypes whereas time of gains was found to be greater in dark brown phenotype. Keel length and shank circumference were greater in dark brown whereas wing spread was found to be higher in light brown phenotype. Drumstick circumference and body length did not show any significant differences (P > 0.05) across the phenotypes. Dry matter was found to be higher in white black, crude protein in black, white black and dark brown, moisture in light brown, and cholesterol content in black whereas ether extract and ash content were found to be greater in black and white black phenotypes. In conclusion, both light brown and dark brown phenotypes showed superior growth performance and morphometric traits. Similarly, from a health point of view, the dark brown and light brown phenotypes seem superior because their cholesterol content was low. Thus, it is strongly recommended that there should be a conscious effort to improve economically important traits of the light and dark brown birds to be used as dual-purpose slow growing chicken, especially in developing countries.

Abstract
This study was to determine the effect of the organic raising system (OR) on growth performance, meat quality, and physicochemical properties of slow-growing chickens. Three hundred and sixty (one-day-old) Korat chickens (KRC) were randomly assigned to control (CO) and OR groups. The groups comprised six replicates of thirty chickens each. The chickens were housed in indoor pens (5 birds/m2), wherein those in OR had free access to Ruzi pasture (1 bird/4 m2) from d 21 to d 84 of age. In the CO group, chickens were fed with a mixed feed derived from commercial feedstuffs, while those in the OR group were fed with mixed feed derived from organic feedstuffs. The results revealed a lower feed intake (p < 0.0001) and feed conversion ratio (p = 0.004) in the OR. The OR increased total collagen, protein, shear force, color of skin and meat, and decreased abdominal fat (p < 0.05). The OR improved fatty acid with increased DHA, n-3 PUFA, and decreased the ratio of n-6 to n-3 PUFA in KRC meat (p < 0.05). The synchrotron radiation-based Fourier transform infrared spectroscopy and correlation loading analyses confirmed these results. In conclusion, our results proved that OR could improve growth performance and meat quality and suggested the raising system be adopted commercially. In addition, the observed differences in biochemical molecules could also serve as markers for monitoring meat quality.

Abstract
There have been a plethora of studies on the effects of access to runs on chickens’ welfare and behavioural repertoire with a paucity of information on the comparative advantage of various legume pasture and deep litter system. A total of 200‐day‐old unsexed Marshall Broiler chicks were weighed and assigned randomly into five experimental groups, viz. deep litter without access to run (DL), deep litter with access to Stylosanthes hamata (SH), Stylosanthes guanensis (SG), Mucuna pruriens (MP) and free run (FR) during dry season. Each treatment had 4 replicates of 10 birds. Data were collected on growth performance, behaviour, tonic immobility (TI), gait score and blood parameters. The data obtained were subjected to One‐Way Analysis of Variance in a Completely Randomized Design. Results showed that the final body weight of birds in SH was significantly higher (p ˂ .05) than those of SH, MP, FR and DL which were comparable. The feed intake of the birds of DL, SH and FR was higher than those of the other treatment groups. The feed conversion ratio (FCR) of the birds on legume pastures was lower than those without access to pasture. The birds of SH, SG and MP spent higher (p ˂ .05) time drinking, preening, dust‐bathing, spot pecking and walking standing behaviours while those in DL and FR spent more (p ˂ .05) time feeding. Generally, the gait score of the birds on the different legume pastures was similar but better than those without access to pasture. Tonic immobility of the DL birds was longer than that of FR whose duration was longer than those of the birds on the pastures. The study concluded that access to different legume pastures, particularly Stylosanthes hamata, improved the welfare of broiler chickens without adverse effect on the performance of the birds. There is a scarcity of information on the comparative advantage of various legume pasture. Stylosanthes hamata improved the welfare of broiler chickens without adverse effect on the performance of the birds.

Abstract
This study aimed to determine the effects of chicken genotype (fast-growing and slow-growing), various semi-intensive production systems (extensive indoor, free-range, and traditional free-range), and season (spring and summer) on animal performance, mortality, growth curve, and slaughter results under semi-environmentally controlled conditions in a subtropical region. Production systems were applied in conformity with the EU standards. While the summer experiment improved performance during brooding (1st-28th days), hot conditions led to a decline in performance during the growing period. In addition, negative effects were determined for all parameters of Gompertz growth curve in summer (P < 0.05, for all). In spring, fast-growing showed 36% higher final live weights than slow-growing, and this difference decreased in summer (16% for extensive indoor and 25% for free-range) (P < 0.05, for all). Fast-growing in extensive indoor and free-range displayed similar weight gains in the growing period, whereas grazing ones consumed less feed (P < 0.05) and thus showed better (P < 0.05) feed conversion. The same situation was true for slow-growing in spring. The mortality was approximately 1% in all groups in spring, while it was 17.36 and 18.06% for fast-growing in extensive indoor and free-range and 1.39, 2.78, and 4.29 for slow-growing in extensive indoor, free-range, and traditional free-range in summer. It is advantageous to choose fast-growing if short-term (56 days) fattening especially under optimum conditions is to be preferred. If the growing period coincides with summer, slow-growing should definitely be preferred and the fattening period should be extended to 82 days. Grazing improved feed conversion (P < 0.05) by reducing cereal-based diet consumption in both genotypes but did not affect carcass yield. However, grazing had a positive effect on fleshing.

Abstract
1. This study investigates the slaughter, carcass and meat quality traits of artificially and naturally hatched geese in intensive and free-range production systems. 2. The study was conducted with 114 naturally hatched and 102 artificially hatched geese. From each replicate of the intensive and free-range systems, one female and one male goose were slaughtered at the ages of 14, 16 and 18 weeks (a total of 32 geese per slaughter week). 3. Artificially hatched geese had higher slaughter weights (5280 vs. 4404 g), carcass weights (3520 vs. 2863), dressing percentages (66.6-65.2% vs. 65.0-63.6%) and carcass part, feather and edible inner organ weights. The ratio of both edible inner organs and abdominal fat was higher in naturally hatched geese. Breast meat L*, a* and pH values and thigh meat dry matter values were higher in artificially hatched geese, whereas thigh meat b* and pH values were higher in naturally hatched geese. 4. Intensively reared geese had higher slaughter weights (4900 vs. 4783 g), carcass weights (3253 vs. 3130 g) and abdominal fat weights (280 vs. 250 g), as well as higher dressing percentages (66.3-64.9% vs. 65.3-63.9%). Breast meat b* and thigh meat L* values were higher in the intensive system, while breast and thigh pH values, dripping loss and cooking loss were higher in the free-range system. Water-holding capacity was higher in the intensive system. 5. In conclusion, artificially hatched, intensively reared geese had the highest slaughter weights; however, both artificially and naturally hatched geese raised in a free-range system reached acceptable slaughter weights and can thus be recommended for use with this type of production system.

Abstract
1. This experiment was conducted to evaluate the effect of production system on the meat quality of slow- and medium-growing chickens. A total of 1075 1-d-old male chicks were equally divided into 6 experimental groups, represented by three strains (SG: TETRA-H, MG1: TETRA HB Color, MG2: Shaver Farm) and were reared in a poultry house in floor pens (12 males/m(2)). 2. On d 49, 150 healthy birds (50/genotype) were placed in a free-range family farm while the rest of the birds remained indoors. All birds were fed ad libitum and consumed the same diet. On d 70, 20 birds of each experimental group were slaughtered and muscle samples were taken from the left breast and thigh muscles. 3. Thigh muscle of SG males kept on free range was darker (L* = 75.12 vs. 78.33) with lower frying loss (45.9% vs. 55.9%) compared with the indoor group. Similar results were obtained from the MG1 group. Free-range MG2 males had lighter thigh meat (L* = 50.7 vs. 57.8) and lower frying loss compared to the indoor group. 4. In general, the indoor treatment had a lower impact on breast meat than the outdoor system. Regardless of the rearing system, genotypic differences were more pronounced in thigh than in breast muscle.

Abstract
<p>Objetivou-se avaliar o desempenho produtivo e características de carcaça de frangos caipiras alimentados com dietas contendo farelo integral de mandioca em níveis crescentes de inclusão de 12, 24, 36 e 48%. Foram utilizados 360 pintos, machos da linhagem Label Rouge, com oito dias de idade, distribuídos em delineamento inteiramente casualizado com cinco tratamentos e seis repetições, contendo 12 aves por parcela. As aves foram alimentadas com dietas isoproteicas e isocalóricas dos oito aos 84 dias. Os parâmetros avaliados foram consumo de ração, ganho de peso, conversão alimentar. Foram abatidas duas aves por parcela com desvio padrão de ± 5% do peso médio da parcela para avaliação do rendimento de carcaça e de cortes comerciais, asa, peito, coxa, sobrecoxa, dorso, gordura abdominal e vísceras comestíveis (fígado, coração e moela). Os dados foram submetidos a analises de variância e regressão ao nível de 5% de probabilidade com uso do programa computacional SAS (2001). Conclui-se que houve aumento linear no ganho de peso das aves e no consumo de ração com o aumento dos níveis de inclusão do farelo integral de mandioca, podendo ser utilizado em até 48% na ração sem prejuízo do desempenho zootécnico.</p>

Abstract
The purpose of this work was to evaluate the effect of genotype and sex on the performance characteristics (weight gain, feed conversion and livability) and yields (carcass, breast and legs) of six free-range genotypes: Pesadão Vermelho (GEN1), Carijó (GEN2), Pescoço Pelado 1 (GEN3), Pescoço Pelado 2 (GEN4), Pescoço Pelado 3 (GEN5) and Pescoço Pelado 4 (GEN6). A total of 1584 sexed one day old chicks (792 males and 792 females) were housed in 48 pens, 33 birds per pen. The experimental design was a completely randomized factorial 2 x 6 (six genotypes and two sexes) design, with four replicates each. Diets were based on corn and soybean meal (no animal protein) provided in a feeding program in four phases: pre-starter (1 to 21 days), starter (22 to 42 days), growth (43 to 77 days) and finisher (78 to 91 days). Feed intake, feed conversion and livability were measured at 21, 42, 77 and 91 days of age. There was no genotype x sex interaction. The effect of sex was observed in all ages regarding weight gain, feed conversion (except at 21 days) and yields. For all these characteristics, males performed better than females, except in breast yield, which was higher in females. For the livability and feed conversion at 21 days no effect of sex was found. The effect of genotype was observed only in carcass and breast yields. The fast (GEN1) and intermediate (GEN2, GEN5 and GEN6) growing genotypes showed higher weight gain than the slow growing genotypes (GEN4 and GEN3). Carcass and breast yields of naked neck genotypes (GEN3, GEN4, GEN5 and GEN6) did not differ among themselves, and were higher than the Carijó genotype (GEN2) and are therefore recommended for production systems that sell industrialized birds.

Abstract
Some consumers have reported preferences for meat from alternative broiler strains as compared with meat from conventional broiler strains relative to taste and texture, but relatively few objective measurements have been conducted on these particular strains. To directly compare meat quality from a Label Rouge-type alternative and a conventional broiler strain available at retail, 4 ready-to-cook conventional and 6 alternative strain carcasses were obtained from retail or a processing plant on each of 6 d. Boneless skinless breast fillets and boneless thighs were taken from each carcass and weighed. Raw meat was then assigned to different testing lots for cooking to evaluate yield, objective texture, meat color, sensory profile, and proximate composition (percentage protein, moisture, fat, and ash). Analyses of data revealed no significant difference (P < 0.05) due to broiler strain for percentage protein, moisture, fat, and ash, for either breast or thigh meat. Conventional breast (raw and cooked) weights were significantly higher than the alternative strain, but there was no difference in cooked yield. There were no differences between strain for thigh weights or yield. Both thigh and breast meat from the conventional broilers was more tender than meat from alternative broilers. Cooked conventional breast meat was darker and yellower, whereas cooked thigh was lighter, less red, and more yellow than alternative meat. Sensory analysis found no difference between strains for breast meat attributes. Conventional thigh meat scored higher than alternative for appearance, tenderness, juiciness, and how well the panelist liked the appearance, but there was no difference in aftertaste or overall liking. Although minimal differences were observed for cooked breast meat due to strain, conventional cooked thigh meat scored higher than the thigh meat from the Label Rouge-type alternative for most of the sensory attributes.

Abstract
The present experiment was conducted in order to evaluate the effects of caponization on growth, carcass composition and meat quality of males of a layer line reared until the 34th week of age. Two hundred and fifty males of a layer line were purchased and randomly divided in two equal groups: intact males and capons. Caponization was conducted at 45 days of age. Three slaughters were performed at the ages of 26, 30 and 34 weeks of age. Caponization did not affect feed intake and final live weight. Capons had a heavier breast and lighter leg than intact males. Lipid accumulation was enhanced by the caponization and fat was stored mainly at the fat pad and the skin of the commercial parts excluding the drumstick. The Pectoralis major muscle of capons had higher intramuscular fat content, lightness (L) and yellowness (b*) values and lower redness values (a*). In conclusion, caponization could be applied to a layer genotype in order to produce commercial chicken meat.

Abstract
A pesquisa foi realizada para avaliar o efeito dos níveis de inclusão da raspa integral da raiz da mandioca sobre o desempenho produtivo de frangas da linhagem Ross no período de um a 42 dias de idade, bem como as características da carcaça aos 42 dias de idade. O delineamento experimental foi de blocos ao acaso, com cinco tratamentos e quatro repetições. A unidade experimental foi representada por 20 aves, alojadas em cada box. Os tratamentos consistiram de rações que continham diferentes níveis de inclusão da raspa da raiz integral de mandioca (0; 5; 10; 15 e 20%), formuladas para atender as exigências nutricionais de acordo com cada fase da criação, e foram utilizados quatro programas de alimentação. A inclusão da raspa integral não afetou o ganho de peso e a viabilidade da criação de frangas de corte no período de um a 42 dias, para ganho de peso e viabilidade da criação. No entanto, o consumo de ração e a conversão alimentar foram influenciados pelos níveis de inclusão da raspa integral de mandioca. Pode-se utilizar em dietas balanceadas de frangas de corte, no período de 1 a 42 dias, até o nível de 6,77%, sem comprometer as características da carcaça e o rendimento dos principais cortes e dos órgãos comestíveis.

Abstract
The effects of feed removal for 6, 8, or 10 h during the day from 8 to 28 days of age followed by ad libitum feeding to market age on the growth performance of two strains of broiler chickens, Ross 308 and Hubbard, were studied over 7 weeks. Ross 308 was superior to Hubbard in weight gain and final body weight but consumed more feed and deposited more abdominal fat. Overall, daily feed removal reduced feed intake and improved feed efficiency in all feed-restricted birds, and the longer the period of feed removal the better the efficiency of utilization, but it had no significant effect on weight gain and market weight. It is suggested that for broiler production in the tropics, Ross 308 could be used on a 10-h daily feed removal program from 8 to 28 days of age.

Abstract
The influence of major genes for crested-head (Cr), frizzle-feather (Fr) and naked-neck (Na) on body weights and growth patterns of indigenous chickens reared intensively was investigated and compared with normal-feather (na) gene. Birds were individually weighed at hatch and every two weeks up to 30 weeks of age. Growth patterns were modelled using the Gompertz-Laird function. The genes influenced body weights and growth patterns at various ages. The Cr gene had significant (P < 0.05) negative effects on body weights (between 52.2 g and 112.3 g) from 18 weeks onwards and low absolute growth rate from 10 to 22 weeks than na, but higher initial specific growth and maturation rates than the Na gene. The Fr gene had significant negative effects on body weights (between 28.2 g and 75.1 g) from 8 to 16 weeks than na, but a higher relative growth rate than Cr from 12 to 16 weeks. The Na gene had significant negative effects on body weights (between 24.7 g and 134.6 g) from 8 weeks onwards than na. It was concluded that Frfr and Nana genotypes are not ideal for cool environments in Kenya and indigenous chicken genotypes have varied growth potentials and patterns that can be improved to increase production.

Abstract
A research was conducted to determine the influence of the conventional and the free-range broiler housing systems using female broiler chicks had low hatching weight on growth performance, breast meat characteristics and some blood plasma parameters. In the conventional (totally confined) housing system sixty one-day-old female Ross broiler chicks were placed in indoor floor pens with three replicates of 20 chicks. In the free-range (partly-confined) housing system, sixty one-day-old Ross broiler chicks were placed in indoor floor pens and also accessed to a grass paddock during 44 day experimental period after 7 days old. Birds of both systems were fed the same commercial broiler diet. The free-range housing system significantly decreased the total feed intake and body weight of broilers (p<0.05). The redness (a* color) and yellowness (b* color) in breast meat were affected by the housing systems (p<0.05). The housing systems had no affect on fatty acids composition of breast meat (p>0.05). The plasma triglyceride and VLDL levels of the conventional reared birds were significantly higher than those reared the free-range (p<0.05). In conclusion, longer growth period was necessary to the free-range reared broilers.

Abstract
Consumer interest in free-range and organic poultry is growing. An experiment was conducted to assess the impact of alternative genotype and production systems on the sensory attributes of chicken meat. Specifically, a slow-growing genotype and a fast-growing genotype were raised for 91 and 63 d. The slow-growing birds were placed before the fast-growing birds to achieve a similar final BW at processing. Each genotype was assigned to 4 pens of 20 birds each and raised in indoor floor pens in a conventional research facility; each genotype was also assigned to 4 floor pens in a small facility with outdoor access. The diet was formulated to be low in energy and protein for slow growth. Birds were commercially processed and deboned at 4 h postmortem. A descriptive analysis of breast and thigh meat was conducted on all treatments by a trained descriptive panel. A consumer analysis was also conducted on the breast and thigh meat from only 2 treatments: slow-growing birds raised with outdoor access and fast-growing birds raised indoors. A descriptive analysis indicated that the breast meat from birds with outdoor access was more cohesive than the meat from indoor birds (P < 0.05). There were no significant differences for most basic tastes; however, both the breast meat and thigh meat of the fast-growing birds tasted saltier than that of the slow-growing birds (P < 0.05). Meat of the slow-growing birds had more dark meat fat flavor than that of the fast-growing birds (P < 0.05). Results from the consumer panel showed no significant differences in overall liking, appearance, texture, or flavor of the breast meat or thigh meat. Just-About-Right distributions of consumer responses did not vary between slow-growing birds with outdoor access and fast-growing birds raised indoors for most attributes; however, more panelists found the breast meat of slow-growing birds with outdoor access too dry (P < 0.05). Although a descriptive panel detected some differences in texture and flavor among treatments, the consumer panel did not indicate differences in liking between conventional and specialty products.

Two concurrent experiments were conducted to assess 1) the impact of alternative genotype and production system and 2) the impact of genotype and diet on meat quality of chickens for specialty markets. Specifically, a slow-growing genotype (slow) and a fast-growing genotype (fast) were raised for 91 and 63 d (females), respectively, or 84 and 56 d in the case of the second trial (males). In each trial, the slow birds were placed before the fast birds to achieve a similar final BW at processing. Each genotype was assigned to 4 pens of 20 birds each and raised in indoor floor pens in a conventional poultry research facility; each genotype was also assigned to 4 floor pens in a small facility with outdoor access. A low-nutrient diet was used, formulated for a slower rate of production. Birds were commercially processed and deboned at 4 h postmortem. In the second trial, the diets compared were a conventional diet that met NRC requirements or the low-nutrient diet, and all birds were raised indoors. There was an interaction between genotype and production system for the color (b*; P < 0.05). The meat and skin of the slow birds became more yellow when the birds had outdoor access; however, this did not occur when the fast birds had outdoor access. The breast meat of the slow birds had more protein and alpha-tocopherol (P < 0.05) than the fast birds and half the amount of fat (P < 0.05). In addition, the meat of the outdoor birds had more protein than the indoor birds (P < 0.05). The slow birds had poorer water-holding capacity but were more tender than the fast birds (P < 0.05). The type of diet had little impact on meat quality. These data indicate that meat quality differences exist between genotypes with different growth rates and raised in alternative production systems.
