Abstract
This study investigated the effects of adding corn distillers dried grains with solubles (DDGS) to the diet on the meat quality, chemical composition, fatty acid composition, and lipidomics profiling in the longissimus thoracis (LT) of finishing pigs. Twenty-four healthy crossbred pigs (average body weight 61.23 ± 3.25 kg) were randomly divided into two groups with three replicates per group and four pigs per pen. The control group (CON) was fed a basal diet, and the DDGS group was fed an experimental diet with 30% DDGS. The results show that adding DDGS to the diet increases the yellowness (b*), chroma (C*), linoleic acid (C18:2n-6) percentages, polyunsaturated fatty acid (PUFA) percentages and iodine value of LT (p < 0.05). Based on LC-ESI-MS/MS, 1456 lipids from 6 classes or 44 subclasses in LT were analyzed, and 50 differential lipids were observed. Triglyceride (TG) with C18:2n-6 side chains and ceramide alpha-hydroxy fatty acid-sphingosine (Cer-AS) contents increased significantly, and the decrease in multiple glycerophospholipids (GPs) content may be related to differences in the glycerophospholipid metabolic pathway. Correlation analysis suggests that triglycerides with C18:2n-6 side chains may be one of the reasons for the changes in b* and C* values in the LT. In conclusion, feeding DDGS affects the meat quality and fatty acid composition and may affect the lipid profile in the LT of finishing pigs by regulating lipid metabolism.

Abstract
An experiment was conducted to evaluate the effects of a second injection of iron dextran administered on days 6 to 8 of age. A total of 144 crossbred pigs (equal barrows and gilts; initial age 6 to 8 d; initial body weight [BW] = 2.86 ± 0.01 kg) were assigned to either the control (CON) or an added-injection treatment (+Fe). Pigs were paired by sex and BW within a litter and randomly assigned to the iron treatment within each pair. All pigs had received an initial intramuscular (IM) injection of iron dextran (200 mg Fe) <24 h after birth. Pigs assigned to the +Fe treatment received a second IM injection of iron dextran (200 mg Fe) on days 6 to 8. All pigs were weaned at 22 to 25 d, housed 6 pigs/pen, and received a common corn-soybean meal diet. BW and feed disappearance were recorded every 2 wk. Hemoglobin (Hb) concentrations were measured at birth, initiation of experiment (days 6 to 8), weaning, and the end of the nursery and end of the study. At the end of the study, 1 pig/pen (n = 12 pigs/treatment), closest to the pen mean was selected and slaughtered for carcass characteristic measures. The individual pig served as the experimental unit for BW, Hb, average daily gain (ADG), and carcass characteristic data whereas the pen served as the experimental unit for average daily feed intake, and gain/feed ratio data. The +Fe pigs had a greater Hb at weaning (13.1 vs. 10.7 g/dL, respectively; P < 0.01) and end of the nursery (12.1 vs. 11.7 g/dL, respectively; P = 0.01) compared to CON pigs. During the finisher period, +Fe pigs had a greater ADG (0.94 vs. 0.91 kg, respectively; P = 0.05) compared to CON pigs. Overall, pigs receiving the second iron injection had an ~4% increase in ADG (P = 0.04) from weaning to the end of study. The cumulative improvement in ADG from weaning to the end of study observed for +Fe group resulted in +Fe pigs having a heavier BW at the end of the study (~3 kg; P = 0.04). Following slaughter, +Fe pigs had ~7.2% heavier trimmed loin (P = 0.04) compared to the CON pigs. In conclusion, administering a second iron injection resulted in greater Hb at weaning and the end of the nursery as well as improved growth performance from weaning to the end of study weight and increased carcass weight at slaughter.

Abstract
A study was conducted to identify the effects of standardized ileal digestible (SID) branched-chain amino acids (BCAA):lysine (Lys) ratios on the growth performance, plasma nitrogen (N) profile, carcass traits, and economic analysis of growing-finishing pigs fed diets with high corn distillers dried grains with solubles (cDDGS) inclusions. A total of 1,140 pigs (initial body weight [BW] = 28.7 ± 2.0 kg) were housed in 45 pens of 25 or 26 pigs and fed one of five diets in a randomized complete block design. Experimental diets were fed in four phases based on BW. Dietary treatments were a corn-soybean meal (SBM) based diet (PC), a corn-SBM-cDDGS-based diet (NC) with SID BCAA:Lys ratio of PIC (2020) recommendation and NC diets with SID BCAA:Lys ratios targeted for the 73% SID Val:Lys, 60% SID Ile:Lys, and 144% SID Leu:Lys during the growing phases (25 to 80 kg, Grow), targeted for the 78% SID Val:Lys, 70% SID Ile:Lys, and 160% to 170% SID Leu:Lys during the finishing phases (80 to 120 kg, finish), and both during the growing and finishing phases (Grow-Finish). One pig from each pen was bled at the end of 7 and 13 wk. After the 11-wk-feeding trial, pigs were sent to a commercial abattoir to investigate carcass traits. Pigs fed the Finish diet had a greater overall average daily gain (P < 0.05) than pigs fed the other cDDGS diets. Dietary treatments did not affect the hot carcass weight. However, feeding the Finish diet increased (P < 0.05) the iodine value of pork belly samples and decreased (P < 0.05) carcass yield. The plasma urea nitrogen (PUN) concentration at the end of the growing phase and plasma concentrations of Leu and Val were greater (P < 0.05) in pigs fed the Finish diet compared to the other cDDGS diets. Feeding pigs the cDDGS diets with different BCAA:Lys ratios had no difference in income over feed cost and income over feed and facility costs compared to the corn-SBM diet. Therefore, feeding pigs cDDGS diets with SID BCAA:Lys ratios adjusted for the previously determined finishing phase (from 80 to 120 kg of BW) recommendations by SBM inclusion supported growth performance and economic benefits equal to the corn-SBM diet.

Abstract
The study objective was to evaluate the effect of two fat source and graded levels of vitamin E (VE) supplementation on growth performance, carcass characteristics, and meat quality of pigs at heavy slaughter weight (150 kg). A total of 48 individually-fed pigs (24 barrows, 24 gilts; 28.44 ± 2.69 kg) were blocked by sex and weight and randomly assigned to eight dietary treatments in a 2 × 4 factorial arrangement. Fat treatments were 5% tallow (TW) and distiller's corn-oil (DCO) in the diets. The VE treatments included four levels of α-tocopheryl-acetate (11, 40, 100, and 200 ppm). Growth performance, carcass traits, organ weight, primal cuts, and pork quality were measured. Increasing dietary VE supplementation levels linearly increased overall Average daily gain (ADG) and average daily feed intake (P < 0.05), with an interaction between fat sources and VE supplementation levels on cumulative ADG (P < 0.05) during phases 1 and 3 (28 to 100 kg) and 1 to 4 (28 to125 kg) wherein ADG in the pigs fed the DCO diet, but not the TW diet, increased with increasing dietary VE supplementation level. A similar interaction was observed in 24 h pH and picnic shoulder (P < 0.05). No notable effect of fat source was observed in growth performance. With increasing dietary VE supplementation levels, there were quadratic responses in pork pH at 45 min and 24 h postmortem with the highest value in 40 and 100 ppm of VE levels while TBARS values on day 7 postmortem decreased linearly (P < 0.05). Compared with the TW diet, the DCO diet resulted in greater TBARS values during 7 postmortem (P < 0.05; day 5, P = 0.09). These results demonstrated that increasing dietary VE supplementation level could enhance growth rate and feed intake and reduce lipid peroxidation of pork whereas the diet containing DCO as a fat source could negatively affect pork shelf-life and carcass characteristics and that increasing VE supplementation level had no notable interaction with fat sources for carcass characteristics.

Abstract
The study aimed to assess the effects of vitamin E (VE) supplementation and fat source on fatty acid (FA) composition, VE concentrations, and antioxidant capacity in plasma and tissues of pigs fed to a heavy slaughter weight (150 kg). A total of 64 pigs (32 barrows, 32 gilts; 28.41 ± 0.83 kg) were blocked by sex and weight, and randomly assigned to one of eight dietary treatments (n = 8 per treatment) in a 4 × 2 factorial arrangement. Fat sources included corn starch (CS), 5% tallow (TW), 5% distiller’s corn oil (DCO), and 5% coconut oil (CN); VE supplementation levels were 11 and 200 ppm. Five-phase diets were formulated to meet requirement estimates of NRC (2012) and fed to pigs for each period of 25 kg from 25 to 150 kg. Increasing VE supplementation level increased C16:1 (P < 0.05) content but decreased C20:0 (P < 0.05) content in backfat and belly fat, while in liver, it increased C17:0 (P < 0.05) but decreased C18:0 (P < 0.05). Compared to the pigs fed the CS diet, the pigs fed the CN diet had greater (P < 0.05) content of total saturated FA, the pigs fed the DCO diet had greater (P < 0.05) content of total polyunsaturated FA content and iodine value, and the pigs fed the TW diet had greater (P < 0.05) content of total monounsaturated FA in backfat, belly fat, and liver. Plasma VE concentrations increased linearly (P < 0.05) with increasing length of feeding but faster (P < 0.05) in the pigs fed the CN and TW diets compared with the CS and DCO diets within the 200 ppm VE level; the pigs fed the DCO diet had the highest plasma VE concentrations (P < 0.05) from Phase 2 to Phase 5 within the 11 ppm VE level. The VE concentrations in liver and loin muscle (P < 0.05) increased with increasing dietary VE level from 11 to 200 ppm, but it was not affected by dietary fat source. There was no effect of VE supplementation and fat source on antioxidant capacity in plasma and liver except that pigs fed the DCO diet had greater liver SOD activity (P < 0.05) than the pigs fed the CN diet. In conclusion, dietary VE supplementation did not affect FA profile in backfat, belly fat, and liver consistently, while dietary FA composition with different fat sources affected much of the FA profile in backfat, belly fat, and liver. The higher level of VE supplementation increased liver and muscle VE concentrations and dietary fat sources affected plasma VE concentrations differently (P < 0.05), wherein the TW and CN diets increased the VE absorption greater than the DCO diet.

Abstract
The study aimed to assess the effect of vitamin E (VE) supplementation and fat source on growth performance, lean growth, organ size, carcass characteristics, and pork quality of pigs at a heavy slaughter weight of 150 kg. A total of 64 pigs (32 barrows and 32 gilts; 28.41 ± 0.83 kg) were blocked by sex and body weight, and randomly assigned to one of eight dietary treatments (n = 8 per treatment) in a 4 × 2 factorial arrangement with main effects of fat source (corn starch [CS; no fat added], 5% tallow [TW], 5% distiller's corn oil [DCO], and 5% coconut oil [CN]) and VE supplementation level (11 and 200 ppm). Five-phase diets were formulated to meet requirement estimates of NRC and fed to pigs with each period of 25 kg from 25 to 150 kg. Increasing dietary VE supplementation from 11 to 200 ppm tended to increase average daily gain (ADG) in phase 5 (P = 0.08), and gain to feed ratio (G/F) in phase 4 (P = 0.06) and phase 5 (P = 0.06) resulting in increased G/F in the overall period
(P = 0.10). Compared with the pigs fed the CS diet in the overall period, the pigs fed DCO diets had greater ADG (P < 0.05), the pigs fed the TW and CN diets had lower average daily feed intake (P < 0.05), and the pigs fed the fat-added diets had greater G/F (P < 0.05). Belly firmness was greatest in the pigs fed the CN diet and lowest in those fed the DCO diet (P < 0.05). Increasing dietary VE level from 11 to 200 ppm increased absolute and relative liver weight, absolute ham yield (P < 0.05), and tended to increase the relative yield of picnic shoulder (P = 0.07) and ham (P = 0.06) and the pigs fed the corn oil diet tended to have greater belly yield (P = 0.08) than the other fat treatments. Increasing dietary VE level increased 45-min pH and ΔpH at slaughter but decreased a* value, chroma (P < 0.10), and belly depth (P < 0.05). However, no effects of VE supplementation and fat source were observed on the other carcass traits and meat quality measurements. In conclusion, increasing dietary
VE level from 11 to 200 ppm slightly increased growth rate and feed efficiency in the late finishing periods, and the addition of fat increased feed efficiency and backfat thickness, decreased lean content, and altered belly firmness. While there were some effects of VE supplementation and fat source observed on organ weight, primal cuts, carcass traits, and meat quality, there was no strong evidence that VE supplementation and fat source materially affected these measurements except for belly firmness.

Abstract
Pork bellies (n = 198) were scanned with dual energy X-ray absorptiometry (DXA). Visible and near-infrared reflectance (Vis-NIR) spectra were collected from the lean (latissimus dorsi), subcutaneous fat and intermuscular fat layers. Belly-flop angle and subjective belly scores were collected as measures of pork belly softness. Vis-NIR spectra from a single fat layer could explain between 72.7 and 81.1% of the variation in pork belly softness (43.6-72.4% in validation set). The combination of the lean and subcutaneous layers improved the calibration model fit to 79.7-99.9% (66.3-71.5% in validation set). The DXA estimates explained 62.3% of variation in pork belly softness (65.2% in validation set). Results indicated that DXA and NIR technologies could potentially be utilized for pork belly softness sorting in the pork industry.

Abstract
Effects of dried distillers grains with solubles (DDGS) feeding strategies (a corn-soybean meal (CS) fed continously; CS+40% DDGS fed continously; CS+40, 30, 20, or 10% DDGS in 4 phases, respectively; or CS+40% DDGS in phases 1 to 3 and CS in phase 4 before slaughter) on belly and pork fat quality of immunologically castrated (n=192) pigs were evaluated. All pigs received the first Improvest dose at 11week of age, and the second dose at 9, 7, or 5week before slaughter at 24week of age. Increasing the time interval of the second Improvest dose before slaughter reduced IV in all fat depots and increased belly thickness. Gradually decreasing dietary DDGS and DDGS withdrawal feeding strategies reduced IV in all fat depots. Calculated IV were greater using the Meadus et al. (2010) equation compared with using the AOCS (1998) equation because it includes more long-chain unsaturated fatty acids.

Abstract
Diets containing more than 20% distiller's dried grains with solubles (DDGS) reduce fat firmness in pork, but supplementation of cottonseed oil or crude glycerol may improve fat firmness. The objective of this study was to assess the effect of feeding minimally refined cottonseed oil or crude glycerol on growth performance, carcass composition, and fat quality of growing-finishing pigs. Mixed sex pigs ( = 216; 24 ± 4 kg initial BW) were blocked by BW and allotted to 1 of 3 dietary treatments: 1) a basal corn-soybean meal diet with 40% DDGS (CON), 2) CON diet plus 5% minimally refined cottonseed oil added throughout the experiment (COT), or 3) CON fed during the first 8 wk and CON + 8% crude glycerol fed during the last 6 wk of the experiment (GLY). Although diets were not isocaloric, total AA-to-ME ratios were calculated to be equal among diets. Carcass composition was estimated using real-time ultrasound 2 d before harvest. Gilts (16/treatment) closest to the mean BW of each pen were harvested (115 ± 8 kg BW), and bellies were retrieved for in-depth analysis of fat quality. Belly fat was sampled and analyzed for fatty acid composition. Overall, ADFI of pigs fed COT (2.30 kg/d) was less ( < 0.01) than that of pigs fed CON or GLY (2.47 and 2.49 kg/d, respectively). Pigs fed COT (0.93 kg/d) had greater ( < 0.01) ADG compared with pigs fed CON or GLY (0.88 and 0.87 kg/d, respectively). Greater ( < 0.01) G:F was observed for pigs fed COT (0.41) than for pigs fed CON or GLY diets (0.36 and 0.35, respectively). Final BW of pigs fed COT (124.3 kg) was greater ( < 0.01) than that of pigs fed CON or GLY (118.9 and 118.6 kg, respectively). Pigs fed COT had greater ( < 0.01) HCW (94.9 kg) compared with pigs fed CON or GLY (89.9 and 89.2 kg, respectively). No differences were observed for dressing percentage (75.7, 76.3, and 75.3%), fat-free carcass lean percentage (50.5, 49.7, and 50.0%), and belly flop angle (6.21, 8.57, and 6.06°) for CON, COT, and GLY, respectively. Pigs assigned to COT had higher ( < 0.01) melting point of belly fat compared with pigs assigned to CON or GLY (30.4 vs. 26.3 and 25.3°C, respectively). Pigs fed COT had increased ( < 0.05) SFA, PUFA, and iodine value (IV) compared with CON-fed pigs. Glycerol supplementation had no influence on SFA, MUFA, and PUFA concentrations or IV of belly, jowl, and back fat compared with CON. In conclusion, COT diets improved growth performance due to greater energy density, but carcass composition was not affected by treatments. In this experiment, feeding neither COT nor GLY improved fat firmness of pigs fed diets containing 40% DDGS.

Abstract
We explored various dimensional and compositional factors that can influence the perception of pork belly firmness. Bellies from 198 pigs of three different genotypes, two sexes, two slaughter weights and three different diets were recovered and belly firmness was assessed using the belly-flop angle and a 5-point scale subjective measurement. Dimensional and compositional factors were recorded on intact and sheet-ribbed bellies. Subjective belly score was negatively correlated with belly-flop angle (r=-0.89). Regression analysis accounted for 77 and 83% of the variability in subjective belly firmness and belly-flop angle measurement, respectively. Belly length, weight and width influenced both measures of belly firmness, but these effects were more important for the belly-flop angle. After correcting flop angle using belly length, the effect of belly weight disappeared and the effect of other traits was more like those observed for subjective scoring. Hence, undue effect of belly length should be corrected for if this set-up is to be implemented in commercial plants.

Abstract
Background The immense growth in global bioethanol production has greatly increased the supply of by-products such as whole stillage and condensed distiller’s solubles, which could be potentially used for animal feeding. The objective of this study was to investigate effects of liquid feeding high levels of corn condensed distiller’s solubles (CCDS) and whole stillage (CWS) on growth performance, carcass characteristics, belly firmness and meat sensory traits of pigs. Methods A total of 256 pigs were blocked by sex and initial BW (13.5 ± 2.5 kg), and pens of pigs (8 pigs/pen) were randomly allocated to 1 of 4 dietary treatments (8 pens/treatment): 1) corn-soybean meal based diet as control, 2) 25% CWS + 5% CCDS, 3) 19.5% CWS + 10.5% CCDS, and 4) 19.5, 26, and 32.5% CWS + 10.5, 14, and 17.5% CCDS in phases 1 (28 d), 2 (38 d), and 3 (60 d), respectively. Inclusion levels of CCDS and CWS for Treatments 1, 2, and 3 were fixed during all the three phases of the experiment. Inclusion levels of CWS and CCDS were on 88% dry matter basis. The liquid feeding system delivered feed from the mixing tank to feed troughs by high-pressure air, had sensors inside feed troughs, and recorded daily feed intake on the basis of a reference feed intake curve. The pigs were fed 5 to 10 times per day with increasing frequency during the experiment. Results Control pigs had greater (P < 0.05) average daily gain (0.91 vs. 0.84, 0.85, 0.85 kg/d) and gain to feed ratio (0.37 vs. 0.33, 0.34, 0.34) than pigs in the other three treatments during the overall period. Compared with the control, the other three groups had (P < 0.05) or tended to have (P < 0.10) lower carcass weight and backfat depth due to lighter (P < 0.05) slaughter body weight, but similar (P > 0.10) dressing percentage, loin muscle depth, and lean percentage were observed among the four treatments. Inclusion of CWS and CCDS reduced (P < 0.05) or tended to reduce (P < 0.10) belly firmness but did not influence (P > 0.10) the overall like, flavor, tenderness and juiciness of loin chops when compared with the control group. Conclusion In conclusion, our results indicate that including 30–50% of a mixture of whole stillage and condensed distiller’s solubles in the growing-finishing diets may reduce growth performance, carcass weight and belly firmness, but does not affect pork sensory traits.

Abstract
The objective was to determine the extent to which feeding low-energy, high-fiber (LEHF) and high-energy, low-fiber (HELF) diets impacts meat quality and carcass composition of pigs divergently selected for residual feed intake (RFI). Two experiments were conducted in the divergently selected Iowa State University RFI lines: Exp. 1 evaluated carcasses of generation (G) 8 pigs fed on commercial feeders; Exp. 2 evaluated composition, pork quality, sensory, and postmortem proteolysis of pigs fed on electronic single-space feeders in G 8 and 9. Pigs (N = 177) in Exp. 1 were randomly assigned a pen (mixed sex and line; N = 8). Groups (n = 3) of pigs were slaughtered at a mean BW of 121.5 kg. Pigs in Exp. 2 (G8: n = 158; G9: n = 157) were randomly assigned to 1 of 6 pens of each diet per G. Pigs from G8 were slaughtered at a mean BW of 122.5 kg and G9 at a mean of 128.4 kg. Data were analyzed using the mixed procedure of SAS. Fixed effects were line, diet, sex, and all appropriate interactions. Random effects were group, pen, litter, and sire and covariate of off-test BW. For Exp. 2, G was added as a fixed effect and sensory day was added as a random effect when applicable. In Exp. 1, carcasses from low RFI (LRFI) pigs were leaner and had less fat depth (P < 0.01). Carcasses from pigs fed the LEHF diet had a lighter HCW and greater estimated percent lean than pigs fed HELF diet (P < 0.01). In Exp. 2, LRFI pigs on the HELF diet had the greatest loin depth (P < 0.01). Chops from HRFI pigs had greater drip loss, color scores, lean tissue a*, and percent lipid and lesser percent moisture than LRFI ( P< 0.05). Chops from pigs on the LEHF diet had lesser muscle L* values and greater percent moisture than chops from pigs fed the HELF diet (P < 0.05). Chops from LRFI pigs were juicer than those from HRFI pigs (P < 0.05). Protein extracted at d 2 postmortem from LRFI pigs on the LEHF diet had a greater 38 kDa desmin degradation product than protein from LRFI pigs fed the HELF diet (P < 0.05). Day 5 postmortem extracted protein from HRFI pigs had greater 38 kDa desmin degradation product than LRFI (P = 0.05). Pigs fed LEHF (P < 0.01) had adipose with a greater iodine value than adipose from HELF fed pigs. Pork sensory quality from pigs differentially selected for residual feed intake was not influenced by energy content of the diet the pigs were fed.

Abstract
Two experiments were conducted to determine the effects of pelleting, diet type (fat and fiber level), and withdrawal of dietary fiber and fat before marketing on growth performance, carcass yield, and carcass fat iodine value (IV) of finishing pigs. Each experiment used 288 pigs (initially 49.6 and 48.5 kg BW, respectively) with 6 dietary treatments arranged as 2 × 3 factorials. In Exp. 1, main effects were diet form (meal vs. pellet) and diet regimen. Diet regimens were 1) a low-fiber, low-fat (corn-soybean meal) diet from d 0 to 81, 2) a high-fiber, high-fat (30% dried distillers grains with solubles [DDGS] and 19% wheat middlings [midds]) diet from d 0 to 64 followed by the low-fiber, low-fat diet from d 64 to 81 (fiber and fat withdrawal), and 3) the high-fiber, high-fat diet fed from d 0 to 81. Pigs fed pelleted diets had increased ( < 0.05) ADG and G:F compared with those fed meal diets. Pigs fed pelleted diets had increased belly fat IV (2.9 mg/g) compared with those fed meal diets, with a greater increase when fed high-fiber, high-fat diets throughout the entire study (interaction, < 0.05). Pigs fed the low-fiber, low-fat diet throughout had increased ( < 0.001) G:F compared with pigs fed the other 2 treatments. Pigs fed low-fiber, low-fat diets throughout the study or pigs withdrawn from high-fiber, high-fat diets had increased ( < 0.001) carcass yield compared with pigs fed high-fiber, high-fat diets throughout. In Exp. 2, treatment main effects were diet form (meal vs. pellet) and diet type (corn-soybean meal-based control, the control with 30% DDGS and 19% midds, or the control diet with 3% corn oil). The diet containing corn oil was calculated to produce carcass fat IV similar to diets containing DDGS and midds. Overall, pigs fed pelleted diets had increased ( < 0.05) ADG, G:F, and belly fat IV (1.3 mg/g) compared with those fed meal diets. Pigs fed the diets containing DDGS and midds had decreased ( < 0.05) ADG, carcass yield, and HCW compared with pigs fed the control or corn oil diets and decreased ( < 0.001) G:F compared with pigs fed added corn oil. Belly IV was greatest ( < 0.001) for pigs fed diets with DDGS and midds and lowest for pigs fed the control diet, with pigs fed the corn oil diets intermediate. In conclusion, pelleting diets improves pig ADG (approximately 3%) and G:F (approximately 6%); however, a novel finding of this study is that pelleting diets fed to finishing pigs also increases belly fat IV.

Several factors can affect pork belly quality and, subsequently, bacon quality. Going by the recent trends in the bacon market and bearing in mind the more choosy nature of the consuming populace, it is imperative to consider the factors that can affect or improve bacon quality, thereby sustaining the current market surge. In as much as both genetic and environmental factors have been identified as largely affecting muscle food quality, nutritional interventions also seem to be a very viable tool to improve the quality of meat and its products. Processing and storage methods can also affect bacon quality, including microbial quality, physicochemical attributes and palatability. Both objective and subjective measures have been explored in assessing belly quality, most of which use belly softness and fatty acid profile as yardsticks, whereas bacon quality has been widely assessed only subjectively in terms of fat quality and slice integrity. Although consumers’ and producers’ quality perceptions seem to be in conflict, it is the responsibility of all stakeholders in the bacon industries to come together in ensuring a balanced approach to satisfy both parties along the production chain.

Abstract
Crossbred pigs (n = 315) were blocked by initial BW (6.8 ± 1.1 kg) and randomly assigned to 1 of 4 dietary treatments to evaluate the effects of dietary inclusion of tallow and corn distillers dried grains with solubles (DDGS) on pig growth, carcass traits, and pork fat quality. Diets consisted of a corn-soybean meal control diet (CON) and another 3 corn-soybean meal diets containing 5% tallow (T), 30% DDGS (D), or 5% tallow plus 30% DDGS (TD) in a 2 × 2 factorial arrangement of treatments. Diets were formulated to contain similar levels of available P and standardized ileal digestible Lys:ME among treatments. Pigs were housed in 40 pens, with 7 to 8 pigs per pen, to provide 10 replicates per treatment. Overall ADG did not differ among treatments. Compared with CON (2.76 kg/d) and T (2.59 kg/d), feeding 30% DDGS reduced the ADFI (interaction, P > 0.05) of pigs when fed with 5% tallow (2.45 kg/d for TD) but not when fed alone (2.76 kg/d for D). There was no effect of DDGS on overall G:F, but pigs fed diets with tallow had greater (P < 0.01) G:F (0.4) than pigs fed no tallow (0.37). Feeding tallow increased (P < 0.01) HCW, carcass yield, and backfat depth of pigs independent of DDGS. Feeding DDGS reduced (P < 0.01) belly firmness, as measured by belly flop angle, independent of tallow (D = 71.8° and TD = 57.7° vs. CON = 134.0° and T = 113.4°) and tallow also tended to reduce belly firmness (P < 0.10). Feeding DDGS and tallow reduced the concentration of SFA in belly fat, while the concentration of MUFA were increased (P < 0.01) by feeding tallow but not DDGS. Conversely, feeding DDGS increased (P < 0.01) the concentration of PUFA in belly fat but there was no effect of tallow. An interaction (P = 0.03) between DDGS and tallow for iodine value (IV) of belly fat was observed, in which addition of tallow or DDGS increased the IV of belly fat (64.22 for T and 71.22 for D vs. 59.01 for CON) but addition of both reduced IV (67.88 for TD). The IV of belly fat and backfat were correlated (P < 0.01) with the IV product of the diet fed in phase 3 (r = 0.49 and r = 0.81, respectively). In conclusion, adding 5% tallow to 30% DDGS diets improved G:F and carcass yield while reducing the IV of belly fat. However, pork fat firmness as measured by belly flop angle was not improved.

Abstract
Swine producers are supplementing animal diets with increased levels of dried distillers grains with solubles (DDGS) to offset the cost of a standard corn-soybean meal (CSBM) diet. However, the environmental impact of these diets on emissions of greenhouse gases, ammonia (NH), and hydrogen sulfide (HS) is largely unknown. Twenty-four pigs (103.6 kg initial body weight) were fed a standard CSBM diet or a CSBM diet containing 35% DDGS for 42 d. Pigs were fed and their manure was collected twice daily over the 42-d trial. Pigs fed diets containing DDGS had reduced manure pH ( < 0.01), increased surface crust coverage ( < 0.01), increased manure dry matter content ( < 0.01), and increased manure C ( < 0.01), N ( < 0.01), and S ( < 0.01) contents. Animals fed DDGS diets also had significantly higher concentrations of total ammoniacal nitrogen ( < 0.01) and sulfide ( < 0.01) in their manure compared with animals fed CSBM diets. Manure emissions of NH ( < 0.01) and HS ( < 0.05) were significantly higher in animals fed the CSBM diet. There was no dietary treatment effect for methane or nitrous oxide emissions from manure. This study demonstrates that diets containing DDGS can significantly affect manure composition and potentially lower emissions of NH and HS.

Abstract
Ammonia, greenhouse gases, and particulate emissions from livestock operations can potentially affect air quality at local, regional, and even global scales. These pollutants, many of which are generated through various anthropogenic activities, are being increasingly scrutinized by regulatory authorities. Regulation of emissions from livestock production systems will ultimately increase on farm costs, which will then be passed onto consumers. Therefore, it is essential that scientifically based emission factors are developed for on-farm emissions of air quality constituents to improve inventories and assign appropriate reduction targets. To generate a larger database of on-farm emissions, the USDA-ARS created the workgroup Livestock GRACEnet (Greenhouse gas Reduction through Agricultural Carbon Enhancement Network). This introduction for the special section of papers highlights some of the research presently being conducted by members of Livestock GRACEnet with the intent of drawing attention to critical information gaps, such as (i) improving emissions measurements; (ii) developing emissions factors; (iii) developing and validating tools for estimating emissions; and (iv) mitigating emissions. We also provide a synthesis of the literature with respect to key research areas related to livestock emissions, including feeding strategies, animal housing, manure management, and manure land application, and discuss future research priorities and directions.

Abstract
Two experiments were conducted to determine the DE and ME content of corn distillers dried grains with solubles (corn-DDGS) containing variable ether extract (EE) concentrations and to develop DE and ME prediction equations based on chemical composition. Ether extract content of corn-DDGS ranged from 4.88 to 10.88% (DM basis) among 4 corn-DDGS samples in Exp. 1 and from 8.56 to 13.23% (DM basis) among 11 corn-DDGS samples in Exp. 2. The difference in concentration of total dietary fiber (TDF) and NDF among the 4 corn-DDGS sources was 2.25 and 3.40 percentage units, respectively, in Exp. 1 but was greater among the 11 corn-DDGS sources evaluated in Exp. 2, where they differed by 6.46 and 15.18 percentage units, respectively. The range in CP and ash were from 28.97 to 31.19% and 5.37 to 6.14%, respectively, in Exp. 1 and from 27.69 to 32.93% and 4.32 to 5.31%, respectively, in Exp. 2. Gross energy content among corn-DDGS samples varied from 4,780 to 5,113 kcal/kg DM in Exp. 1 and from 4,897 to 5,167 kcal/kg DM in Exp. 2. In Exp. 1, the range in DE content was from 3,500 to 3,870 kcal/kg DM and ME content varied from 3,266 to 3,696 kcal/kg DM. There were no differences in ME:DE content among the 4 corn-DDGS sources in Exp. 1, but ME:GE content differed (P = 0.04) among sources (66.82 to 74.56%). In Exp. 2, the range in DE content among the 11 corn-DDGS sources was from 3,474 to 3,807 kcal/kg DM and ME content varied from 3,277 to 3,603 kcal/kg DM. However, there were no differences in DE:GE, ME:DE, or ME:GE among sources in Exp. 2. In Exp. 1, no ingredient physical or chemical measurement [bulk density (BD), particle size, GE, CP, starch, TDF, NDF, ADF, hemicellulose, EE, or ash)] was statistically significant at P ≤ 0.15 to predict DE or ME content in corn-DDGS. In Exp. 2, the best fit DE equation was DE (kcal/kg DM) = 1,601 - (54.48 × % TDF) + (0.69 × % GE) + (731.5 × BD) [R(2) = 0.91, SE = 41.25]. The best fit ME equation was ME (kcal/kg DM) = 4,558 + (52.26 × % EE) - (50.08 × % TDF) [R(2) = 0.85, SE = 48.74]. Apparent total tract digestibility of several nutritional components such as ADF, EE, and N were quite variable among corn-DDGS sources in both experiments. These results indicate that although EE may be a good predictor of GE content in corn-DDGS, it is not a primary factor for predicting DE or ME content. Measures of dietary fiber, such as ADF or TDF, are more important than EE in determining the DE or ME content of corn-DDGS for growing pigs.
