Abstract
Milk protein production is the largest draw on AA supplies for lactating dairy cattle. Prior NRC predictions of milk protein production have been absorbed protein (MP)-based and utilized a first-limiting nutrient concept to integrate the effects of energy and protein, which yielded poor accuracy and precision (root mean squared error (RMSE) > 21%). Using a meta-data set gathered, various alternative equation forms considering MP, absorbed total essential AA (EAA), absorbed individual EAA, and digested energy (DE) supplies as additive drivers of production were evaluated, and all were found to be superior in statistical performance to the first limitation approach (RMSE = 14-15%). Inclusion of DE intake and a quadratic term for MP or absorbed EAA supplies were found to be necessary to achieve intercept estimates (non-productive protein use) that were similar to the factorial estimates of NASEM. The partial linear slope for MP was found to be 0.409, which is consistent with the observed slope bias of -0.34g/g when a slope of 0.67 was used for MP efficiency in a first-limiting nutrient system. Replacement of MP with the supplies of individual absorbed EAA expressed in g/d and a common quadratic across the EAA resulted in unbiased predictions with improved statistical performance as compared with MP-based models. Based on Akaike's Information Criterion (AIC) and biological consistency, the best equations included absorbed His, Ile, Lys, Met, Thr, the non-essential AA, and individual DE intakes from fatty acids, neutral detergent fiber, residual organic matter, and starch. Several also contained a term for absorbed Leu. These equations generally had RMSE of 14.3% and a concordance correlations (CCC) of 0.76. Based on the common quadratic and individual linear terms, milk protein response plateaus were predicted at approximately 320 g/d of absorbed His, Ile, and Lys; 395 g/d of absorbed Thr; 550 g/d of absorbed Met; and 70 g/d of absorbed Leu. Therefore, responses to each except Leu are almost linear throughout the normal in vivo range. De-aggregation of the quadratic term and parsing to individual absorbed EAA resulted in non-biological estimates for several EAA indicating over-parameterization. Expression of the EAA as g/100 g of total absorbed EAA or as ratios of DE intake and using linear and quadratic terms for each EAA resulted in similar statistical performance, but the solutions had identifiability problems and several non-biological parameter estimates. The use of ratios also introduced nonlinearity in the independent variables which violates linear regression assumptions. Further screening of the global model using absorbed EAA expressed as g/d with a common quadratic using an all-models approach, and exhaustive cross-evaluation indicated the parameter estimates for body weight, all 4 DE terms, His, Ile, Lys, Met, and the common quadratic term were stable, while estimates for Leu and Thr were known with less certainty. Use of independent and additive terms and a quadratic expression in the equation results in variable efficiencies of conversion. The additivity also provides partial substitution among the nutrients. Both of these prevent establishment of fixed nutrient requirements in support of milk protein production.

Abstract
Corn processing methods including finely ground (FGC), dry rolled (DRC), and crumbled corn (CRC) were evaluated to determine their effects on average daily gain (ADG), structural growth, starch digestibility, feeding behavior, and blood metabolites of young dairy heifers. In this study, 36 Holstein heifers [91 ± 4 d of age, 105 ± 6.5 kg of body weight (BW); mean ± standard deviation] housed in 9 pens (4 heifers per pen) were fed diets (dry matter basis) containing 20% forage (wheat straw) and 80% corn-based concentrate for 60 d. Pens were randomly assigned to 1 of 3 dietary treatments based on the type of corn grain used for the diets: (1) ground corn (FGC; fine: 1.11 ± 0.52 mm); (2) dry-rolled corn (DRC; 2.30 ± 0.68 mm); and (3) crumbled corn (CRC; 2.54 ± 0.70 mm). Heifers had ad libitum access to diets and water throughout the experiment and the feed intake was measured daily. Animals were weighed at the beginning (91 d of age) and end (151 d of age) of the study. The ADG (kg of BW/d) was calculated at the end of experiment at an individual level. Feeding behavior was recorded based on direct observation by monitoring each heifer every 5 min during a 22-h period at 150 d of age. The CRC and DRC tended to increase feed intake compared with FGC, whereas heifers fed CRC tended to have a greater withers height compared with other treatments. Feed efficiency was not affected; however, ADG and final BW increased in heifers fed the CRC diet compared with other diets. Feeding CRC increased total-tract starch digestibility compared with FGC and DRC diets (97.8 vs. 93.1 and 89.5%, respectively). Compared with FGC diet, feeding DRC and CRC tended to increase rumination time. The molar proportion of propionate was greater, and the molar proportion of acetate and acetate-to-propionate ratio were lower in heifers fed CRC than in those fed DRC. The blood glucose and insulin-like growth factor concentrations increased in heifers fed CRC compared with feeding DRC; however, blood urea concentrations decreased by CRC feeding. In conclusion, thermal processing (CRC diet) improved total-tract starch digestibility, ADG, feed intake, and skeletal growth, but had no effect on feed efficiency during the experimental period. Our results indicated that the thermal processing of corn grain improved growth performance of weaned heifers; however, the performance of heifers over a 60-d period did not differ between mechanical processing methods (grinding and dry rolling).

Abstract
Our objective was to evaluate the effects of corn grain varying in endosperm type and conserved as high-moisture or dry ground corn on dry matter intake (DMI), feeding behavior, ruminal fermentation, and yields of milk and milk components of cows in early to mid-lactation. Seven ruminally and duodenally cannulated Holstein cows (73 ± 39 d in milk; mean ± SD) were used in a duplicated 4 × 4 Latin square design with 21-d periods. A 2 × 2 factorial arrangement of treatments was used with main effects of corn grain endosperm type (floury or vitreous) conserved as high-moisture corn (HMC) or dry ground corn (DGC). Rations were formulated to contain 27.0% starch, 26.6% neutral detergent fiber (NDF), 19.1% forage NDF, and 16.5% crude protein. Corn grain treatments supplied 86.6% of dietary starch and contained alfalfa silage as the sole forage. Dry matter intake was increased 1.3 kg/d by DGC compared with HMC. The increase in DMI by DGC was related to a shorter intermeal interval (104.4 vs. 118.2 min/d), and meal size was not affected by treatment. Dry ground corn decreased rumination bout length and number of chews per bout compared with HMC. No differences were detected between endosperm treatments for DMI, yields of milk, 3.5% fat-corrected milk (FCM), milk fat, protein, lactose, or solids-not-fat (SNF). Mean yield of 3.5% FCM across treatments was 47.5 kg/d. However, a tendency for an interaction was observed for feed efficiency; floury endosperm increased efficiency 0.05 kg 3.5% FCM per kg of DMI for DGC but decreased it by 0.14 kg 3.5% FCM per kg of DMI for HMC relative to vitreous endosperm. Vitreous compared with floury corn tended to increase true protein concentration in milk when conserved as DGC (2.68% vs. 2.62%) but not as HMC. Concentration of SNF was increased by DGC compared with HMC (8.45 vs. 8.37%) due, in part, to the effect of treatment on milk protein concentration. Body weight was not affected by treatment, but vitreous endosperm tended to increase loss of body condition compared with floury endosperm. Corn endosperm type and conservation method had little effect on productive performance of high-producing cows.

Abstract
Our objective was to evaluate effects of corn grain endosperm type and fineness of grind on feed intake, feeding behavior, ruminal fermentation, and productive performance of lactating cows. Eight ruminally and duodenally cannulated Holstein cows in mid lactation (130 ± 42 d in milk; mean ± standard deviation) were used in a duplicated 4 × 4 Latin square design with 21-d periods. A 2 × 2 factorial arrangement of treatments was used with main effects of corn grain endosperm type (floury or vitreous) and fineness of grind of corn grain (fine or medium). Rations were formulated to contain 29% starch, 27% neutral detergent fiber, 18.2% forage neutral detergent fiber, and 18% crude protein. Corn grain treatments supplied 86.2% of dietary starch. Endosperm was 25% vitreous for floury corn and 66% vitreous for vitreous corn. Fineness of grind did not affect dry matter intake (DMI), but floury corn tended to reduce DMI (23.8 vs. 25.1 kg/d) compared with vitreous corn. Floury corn increased meal frequency more for fine grind size (9.57 vs. 9.41 meals/d) than medium grind size (9.78 vs. 9.75 meals/d). However, there were no effects of treatment on any other measure of feeding behavior. Endosperm type did not affect yields of milk or milk components or milk composition except that vitreous corn tended to decrease milk lactose concentration compared with floury corn. Finely ground corn decreased yields of milk (31.1 vs. 33.1 kg/d), 3.5% fat-corrected milk (33.1 vs. 35.1 kg/d), milk fat (1.22 vs. 1.32 kg/d), milk lactose (1.48 vs. 1.59 kg/d), and solids not fat (2.46 vs. 2.63 kg/d) compared with medium grind size. However, fineness of grind did not affect milk composition. Treatments had no effect on change in body weight or body condition score or efficiency of milk production (kg of 3.5% fat-corrected milk/kg of DMI). Mean ruminal pH was not affected by treatment, but pH variance was decreased by vitreous compared with floury corn. Total volatile fatty acids and propionate concentrations in the rumen were increased by floury compared with vitreous corn but were not affected by fineness of grind. Effects of fineness of grind on yield of milk and milk components were greater than the effects of corn grain vitreousness.

Abstract
The study goal was to determine the effects of a fast (FAS) or slow (SLW) incremental rate of concentrate feeding and corn processing method during the early postpartum period on lactational performance, body reserves, blood metabolites, and milk fatty acid (FA) profile. Forty multiparous Holstein cows were used in a randomized block design with a 2 × 2 factorial arrangement of treatments. Treatment diets were either a FAS [1.0 kg of dry matter (DM)/d] or SLW (0.25 kg of DM/d) incremental rate of concentrate feeding (up to 12 kg of DM/d) with either dry ground corn (DGC) or steam-flaked corn (SFC) as the primary starch source in concentrate. Treatments were fed from 5 to 64 d postpartum. The basal diet consisted of forage, soybean meal, and 5 kg/d concentrate in the postpartum period. Throughout the experiment, dry matter intake (DMI) and milk yield were measured daily, and milk components, body condition score, and body weight were recorded at 16-d intervals, whereas blood metabolites and milk FA profile were measured at 16 and 32 d in milk. The incremental rate of concentrate feeding interacted with corn processing method to affect plasma concentration of glucose with greater glucose in SFC treatment compared with DGC in cows fed with the FAS strategy. Cows fed FAS and SFC had a greater total DMI than those fed SLW and DGC counterparts (22.8 versus 22.1 kg and 22.7 versus 22.1 kg, respectively), and also SFC increased yield of actual milk compared with the DGC counterpart (42.7 versus 41.6 kg). The milk fat and energy-corrected milk yields were not different among treatments whereas milk protein yield was greater when SFC was fed. Greater incremental rate of concentrate feeding tended to increase milk lactose yield during the first 64 d of lactation. The loss of body condition score increased when cows were fed SLW for the entire period and plasma nonesterified fatty acids and β-hydroxybutyrate concentrations increased with the SLW strategy. The proportions of total trans 18:1 and trans-11 18:1 FA in milk fat were higher in cows fed FAS. However, feeding SLW enhanced milk de novo and mixed FA proportions compared with FAS, whereas the proportions of milk FA were not affected by corn grain processing method. The incremental rate of concentrate feeding had significant effects on DMI, milk yield, and body reserve changes. Although feeding SFC instead of DGC had benefits on DMI and milk yield at 48 and 64 d postpartum, treatments did not interact to affect production responses when cows were fed with the SLW strategy.

Abstract
The physical form of starter feed may affect the gastrointestinal development and the performance of ruminant. However, little information is available on how changes in the physical forms of starter feed influence the performance of lambs, especially during the pre- and post-weaning periods. The aim of this study was to investigate the effects of different physical forms of starter feeds on growth performance, nutrient digestibility, gastrointestinal enzyme activity, and morphology of pre- and post-weaning lambs. Twenty-four 8-day-old male Hu lamb (5.04 ± 0.75 kg BW) were randomly assigned to one of two dietary treatments: 1) a pelleted starter (PS) feed and 2) a textured starter (TS) feed, which included coarse mashed steam-flaked corn. From eight to thirty-five days of age (pre-weaning), the lambs were bottle-fed milk replacer (MR) at 2% of BW measured on day 8. All lambs were weaned at day 35 when feeding of MR was stopped. Six lambs for each treatment were euthanized at 21 or 42 days of age for sampling. The following results are obtained by variance analysis: TS lambs had a greater (P < 0.05) final BW, higher apparent digestibility of starch and ether extract, activities of α-amylase pre- or post-weaning, and higher (P < 0.05) average dry matter intake and lipase post-weaning in small intestine contents and had a trend of significantly higher average daily gain post-weaning (P = 0.07). Rumen development analysis of TS lambs showed a significantly higher (P < 0.05) relative weight of rumen post-weaning, greater papillae length, increased circular and layered muscle, increased sectional area pre- and post-weaning, and increased rumen papillae width post-weaning. Textured starter treatment increased the villus height and villus width (except jejunum pre-weaning) of the whole small intestine and villus height to crypt depth ratio of jejunum and ileum during the whole period and tended to increase the relative weight of the rumen pre-weaning (P = 0.07). The results indicated that TS feeding is more beneficial to lambs over the weaning transition than PS in promoting gastrointestinal development, intestinal enzyme activities, nutrient digestibility, and growth performance. The findings provide new insights into the selection of physical forms of starter feeds in lamb production. Further research with more animals and female lambs is needed to obtain a more complete conclusion.

Abstract
This study evaluated the effects of conditioner retention time during the pelleting process of starter feed on intake, nutrient digestibility, ruminal fermentation, blood metabolites, and growth performance of dairy calves. A total of 30 Holstein female dairy calves [40 ± 1.93 kg of body weight (BW)] were randomly assigned to 1 of 3 treatments: (1) pelleted starter conditioned for 0 min (CON), (2) pelleted starter conditioned for 2 min, and (3) pelleted starter conditioned for 4 min. Three pelleted starter feeds had similar nutritional composition, and the starters were blended with 3% chopped wheat straw and fed to individually housed calves from d 3 to 70 of age. All calves were fed 4 L/d of pasteurized whole milk twice daily at 0800 and 1600 h from d 3 to 50 of calf age, followed by 2 L/d of morning feeding from 51 to 56 d of age. All calves were weaned on d 56 of age and remained in the study until d 70 of age. With the increase of conditioner retention time during pellet processing for 0, 2, and 4 min, the gelatinized starch content of pelleted starter feed linearly increased from 14, 30, and 45%, respectively. Additionally, the pellet durability and hardness also linearly increased with increasing conditioner retention time during pelleting. Feeding pelleted feed prepared using different conditioner retention time did not affect feed dry matter intake, metabolizable energy intake, weaning BW, final BW, or feed efficiency during the study. We observed no differences in the total-tract apparent digestibility of organic matter, neutral detergent fiber, and crude protein around weaning (d 49 to 56 of age) and after weaning (d 63 to 70 of calf cage); however, the digestibility of dry matter and starch after weaning was increased with increasing conditioner retention time during pelleting of starter feed. No difference was found in overall average daily gain (ADG) or growth rates of hip height, withers height, and heart girth. Ruminal volatile fatty acid profile was not affected by pelleting under different conditioner retention times. The ruminal ammonia concentration tended to be lower for calves fed the 4-min diet compared with those fed the CON diet during the postweaning period. The postweaning (d 57-70 of age) ADG was greater for calves fed the 4-min diet compared with those fed the CON diet. In conclusion, the conditioning time during the pelleting process of starter feed increased the gelatinization of starch, durability, and hardness of the pellets but did not influence feed intake, feed efficiency, and skeletal growth during the first 70 d of age. Increasing conditioning time during the pelleting process improved postweaning ADG; however, the final BW of calves was similar among treatments.

Abstract
The objectives were to determine the effects of forage level and grain processing on whole-body urea kinetics, N balance, serosal-to-mucosal urea flux (Jsm-urea), and messenger ribonucleic acid (mRNA) abundance of urea transporter-B (UT-B; SLC14a1) and aquaporins (AQP) in ovine ruminal, duodenal, and cecal epithelia. Thirty-two wether lambs were blocked by body weight into groups of four and assigned to one of four diets (n = 8) in a 2 × 2 factorial design. Dietary factors were forage level (30% [LF] vs. 70% [HF]) and corn grain processing (whole-shelled [WS] vs. steam-flaked [SF]). Four blocks of lambs (n = 4) were used to determine urea kinetics and N balance using 4-d [15N15N]-urea infusions with concurrent fecal and urine collections. Lambs were killed after 23 d of dietary adaptation. Ruminal, duodenal, and cecal epithelia were collected to determine Jsm-urea and mRNA abundance of UT-B and AQP. Lambs fed LF had greater intakes of dry matter (DMI; 1.20 vs. 0.86 kg/d) and N (NI; 20.1 vs. 15.0 g/d) than those fed HF (P < 0.01). Lambs fed SF had greater DMI (1.20 vs. 0.86 kg/d) and NI (20.6 vs. 14.5 g/d) than those fed WS (P < 0.01). As a percentage of NI, total N excretion was greater in lambs fed HF compared with those fed LF (103% vs. 63.0%; P < 0.01) and was also greater in lambs fed WS compared with those fed SF (93.6% vs. 72.1%; P = 0.02). Retained N (% of NI) was greater in lambs fed LF compared with those fed HF (37.0% vs. -2.55%; P < 0.01). Lambs fed SF had a greater (P = 0.02) retained N (% of NI; 28.0% vs. 6.50%) compared with those fed WS. Endogenous urea production (UER) tended (P = 0.09) to be greater in lambs fed HF compared with those fed LF. As a proportion of UER, lambs fed HF had a greater urinary urea-N loss (0.38 vs. 0.22) and lower urea-N transferred to the gastrointestinal tract (GIT; 0.62 vs. 0.78) or urea-N used for anabolism (as a proportion of urea-N transferred to the GIT; 0.12 vs. 0.26) compared with lambs fed LF (P < 0.01). Ruminal Jsm-urea was unaffected by diet. Duodenal Jsm-urea was greater (P < 0.01) in lambs fed HF compared with LF (77.5 vs. 57.2 nmol/[cm2 × h]). Lambs fed LF had greater (P = 0.03) mRNA expression of AQP3 in ruminal epithelia and tended (P = 0.06) to have greater mRNA expression of AQP3 in duodenal epithelia compared with lambs fed HF. Expression of UT-B mRNA was unaffected by diet. Our results showed that feeding more ruminally available energy improved N utilization, partly through a greater proportion of UER being transferred to the GIT and being used for anabolic purposes.

Abstract
Five Holstein cows were distributed in a 5x5 latin square design to assess the effect of replacement levels of dry ground corn grain (DGCG) by high moisture corn silage (HMCS) on intake, total nutrient digestibility and plasma glucose, according to the following treatments: 1) 100% DGCG; 2) 75% DGCG and 25% HMCS; 3) 50% DGCG and 50% HMCS; 4) 25% DGCG and 75% HMCS; 5) 100% HMCS. The experiment lasted 70 days, divided into five phases of 14 days each. The digestibility was obtained using chromic oxide (Cr2O3) as the indicator. Fecal samples were collected twice daily and blood samples were collected on the last day of each period before the first meal (0h) and 2h, 4h, 6h and 12h after the meal. There was no effect (P>0.05) on the intake of dry matter (DM), neutral detergent fiber (NDF), acid detergent fiber (ADF) and starch. The total apparent digestibility of DM, crude protein (CP), NDF and ADF were not affected (P>0.05) by the treatments, as well as the plasma glucose concentration. However, there was a decreased linear effect (P<0.05) for the protein intake and increased linear effect (P<0.05) for starch digestibility, as the level of HMCS was increased in the diets.

Abstract
In order to investigate the effect of physical forms of starter diets on performance, weaning age, nutrient digestibility and rumen biochemical factors, 24 female of neonatal Brown Swiss calves (average body weight of 39.5±1.2 kg) were randomly assigned to three treatments. Dietary treatments were mashed (MS), pelleted (PS), and texturized (TS) starter using 8 calves from birth till 90 days of age in each treatment. Diets were formulated to be iso-nitrogenous with 21% crude protein. Based on the experimental results, calves that received PS and TS diets, had significant higher average daily gain (ADG) than those receiving MS (p<0.01). Dry matter intake in calves fed PS and TS was greater than calves fed MS (p<0.05), but there was no significant difference in feed efficiency. Treatments had no effect on initiation of rumination. Weaning age of calves in MS was longer than the other two treatments (p<0.05). Crude protein and organic matter digestibility in MS treated calves were lower than other treatments (p<0.05). No differences were observed in neutral detergent fiber (NDF) and ash digestibility among treatments (p>0.05). Ruminal pH was higher (p<0.01) in MS than the other groups, but ruminal ammonia (g/dl) concentration was not different among the treatments. Body measurements such as body length, pin width, hip width, pin to hip length, size of metacarpus and metatarsus bones, hip height, wither height, stomach size and heart girth were not significantly different among the treatments. Overall, it is concluded that starter diets in the form of pellet and texture can improve performance in neonatal Brown Swiss calves compared to the mashed form.

Abstract
This study investigated the effects of a mixture of steam-flaked corn and extruded soybeans on performance, ruminal development, ruminal fermentation variables, and intestinal absorptive capability in Holstein male calves (n = 39). Calves were assigned to 1 of 3 treatments (13 calves per treatment): 1) milk replacer (MR), 2) one-half of the amount of MR in treatment 1, plus a mixture of 62.1% steam-flaked corn and 30.5% extruded soybeans provided ad libitum (HMCS), or 3) a mixture of 62.1% steam-flaked corn and 30.5% extruded soybeans provided ad libitum (CS). All the calves were started at 2 ± 1 d of age and studied for 150 d. Each 30 d was defined as 1 period. Dry matter intake and growth were measured daily and monthly, respectively. All calves were harvested at 150 d of age, after which rumen fluid was collected. Rumen and intestine samples were gathered. Calves fed MR exhibited greater BW (P = 0.001) and ADG (P < 0.001), compared with calves fed HMCS and CS from period 2 to 3; however, from period 4 to 5, CS calves had greater (P < 0.04) ADG than MR calves. The treatments did not differ in final BW (P = 0.72) and ADG (P = 0.20) from period 2 to 5. Compared with HMCS and MR calves, CS calves had the greatest DMI (P < 0.001) and the least feed efficiency (P < 0.001) from period 2 to 5. For ruminal fermentation parameters, CS calves had decreased (P = 0.04) rumen pH than MR calves. The NH3 concentrations were greater (P = 0.03) in calves fed HMCS than calves fed MR and CS. Total VFA concentrations were greatest in CS calves (P = 0.02). Calves fed CS had the greatest molar concentrations of propionate, butyrate, and valerate (P < 0.002), and calves fed HMCS had the greatest molar concentrations of isobutyrate (P = 0.001) and isovalerate (P = 0.001). The CS calves exhibited greater empty rumen weight (P = 0.001), papillae length (P < 0.001), papillae width (P < 0.001), rumen wall thickness (P = 0.012), and papillae density (P = 0.003). The greatest villus heights in the jejunum (P = 0.04) and ileum (P = 0.005) were observed in CS calves. Compared with HMCS calves, calves fed CS had greater villus:crypt ratios in the duodenum (P = 0.001) and jejunum (P = 0.001). Results indicate that CS improves ADG in period 4 to 5 and positively contributes to ruminal development, ruminal fermentation, and intestinal absorptive capability in veal calves.

Abstract
The goals of this study were to have an improved understanding of milk composition and to help create a suitable milk formula for cubs raised in captivity. Milk samples were evaluated for fat, fatty acids, carbohydrate, vitamin D(3), 25(OH)D(3), vitamin A (retinol), vitamin E (α-tocopherol), protein, and amino acids. Total lipids in milk did not differ for cubs (mean ± SEM = 26.60 ± 1.88 g/100 ml vs. yearlings 27.80 ± 2.20 g/100 ml). Milk lipids were of 23.6% saturated fatty acid for cubs and 22.4% for yearlings. Milk consumed by cubs and yearlings contained 43.8 and 42.0% mono-unsaturated fatty acids and 23.4 and 21.9% polyunsaturated fatty acids, respectively. Carbohydrate content was higher in milk for cubs (4.60 ± 0.64 g/100 ml) than for yearlings (2.60 ± 0.40 g/100 ml). Vitamin D(3) concentration of milk was 18.40 ± 5.00 ng/ml in early lactation compared with 7.60 ± 2.00 ng/ml for mid-lactation. 25(OH)D(3) was lower in milk consumed by cubs (162.00 ± 6.70 pg/ml) than in milk consumed by yearlings (205.00 ± 45.70 pg/ml). Vitamin A concentrations were 0.06 ± 0.01 and 0.03 ± 0.01 µg/ml for cubs and yearlings, respectively. Vitamin E was higher in milk consumed by cubs (20.16 ± 4.46 µg/ml) than by yearlings (7.30 ± 1.50 µg/ml). Protein content did not differ in milk available to cubs (11.40 ± 0.80 g/100 ml compared with milk for yearlings 11.80 ± 0.40 g/100 ml). Taurine was the most abundant free amino acid at 3,165.90 ± 192.90 nmol/ml (0.04% as fed basis).

Abstract
The objective of the experiment was to evaluate the effects of steam-flaked corn grains and soybeans on calf health, growth, and selected blood parameters. Holstein bull calves (n=30, approximately 7+/-3 d of age) were purchased from local dairy farms and offered milk, starter diets, and hay, and were then assigned to the experiment at 21+/-3 d of age. Calves were blocked into 3 treatments by birth date and body weight and randomly assigned to receive fresh milk and a commercial pelleted starter containing extruded corn and soybeans (ECS), steam-flaked corn and soybeans (SFCS), or ground corn and soybeans (GCS). The experiment was conducted with calves from 3 to 13 wk of age. Body weight, calf starter intake, milk intake, total dry matter intake, and body structural growth were not significantly influenced by corn and soybean processing during the study; however, feed efficiency was significantly improved by the SFCS treatment. Average daily gain generally decreased during the weaning week for all treatments, but did not differ significantly among treatments. Health incidences for calves fed the SFCS starter were lower than those fed the other 2 treatments. The blood hematocrit was higher for calves fed the SFCS starter than for those fed the GCS and ECS starters during wk 6 to 11. The concentration of plasma beta-hydroxybutyrate was higher for the calves fed the GCS and SFCS treatments than for those fed the ECS treatment during wk 6 to 13, but lower during wk 4 and 5. Plasma glucose concentrations decreased remarkably with increasing calf age but were not affected by corn and soybean processing. Plasma nonesterified fatty acids were influenced by calf age, and higher NEFA concentration was observed in the SFCS treatment than in the other 2 treatments during wk 5 to 9. Calves consuming the SFCS starter had similar average daily gain, milk intake, starter intake, total dry matter intake, and body structure, but had improved feed efficiency when compared with animals consuming the GCS and ECS starters. The SFCS starter decreased incidence of diarrhea during the postweaning period and required less veterinary treatment. These data suggest that the steam-flaking of corn and soybeans can influence the growth performance and the selected blood parameters of calves and that, in this study, the extrusion of corn and soybeans had no beneficial effect on the growth performance of calves.

Abstract
Two studies were conducted to determine the effects of replacing lupins with fresh citrus pulp in Merino wethers diets: (i) an in vitro study, which measured ruminal fermentation; and (ii) an in vivo study in which 18 mature Merino wethers were fed dietary treatments (n = 3) over 56 days to evaluate effects on performance [i.e. DM intake, average daily gain and wool growth]. In both the in vitro and in vivo studies, the control treatment consisted (in diet DM) of lucerne chaff (69.9%), lupins (30.1%) and phosphate (0.3%), whereas the citrus pulp treatments (n = 2; replacing lupins on 20 and 30% DM basis, respectively) consisted of lucerne chaff (61.7 and 63.3%), lupins (18.5 and 6.3%), phosphate (0.34 and 0.33%) and fresh citrus pulp (19.5 and 30.1%). Data were analysed using the MIXED model of SAS and orthogonal polynomial contrasts were used to determine linear (L) and quadratic responses to the level of citrus pulp. In the in vitro study, gas production, net total volatile fatty acid production as well as in vitro DM digestibility were similar (P > 0.05) among the dietary treatments. Ammonia production in citrus pulp treatments were twofold lower compared with the control (L, P < 0.01). The addition of citrus pulp to the diet increased the molar proportions of acetic acid and decreased that of butyric, branched-chain volatile fatty acids, and valeric acids (all L, P < 0.01) compared with the control diet. In the in vivo study, DM intake, average daily gain and feed conversion were similar among treatments (P > 0.52). Wool production parameters including clean fleece weight, yield and staple length were not different between diets (P > 0.30). Hence, fresh citrus pulp can be included up to 30% on a DM basis replacing lupins without detrimental effects on wool production and animal performance.

Abstract
Selection for higher production rate in cattle inhabiting challenging habitats may be considered disadvantageous because of possible deleterious effects on immunity and reproduction and, consequently, on calf crop percentage. In Israel, free-grazing high productive beef cows experience reduction in nutritional quality of forage during up to 8 months of the year. As milk production by dams dictates calf performance, dam's nutritional needs and rebreeding rates, the aim of the present study was to test how lactating beef cows deal with combined caloric and protein stress both at the productive and self protective levels. For this purpose, we studied the effect of long-term caloric stress on milk characteristics and gene expression of stress and milk components producing proteins. Lactating dams responded to caloric stress by decreased body weight, milk, and milk protein production. To compensate for total energy loses in milk, they produced milk of higher fat concentration and shifted the proportions of its fatty acids towards long and unsaturated ones. This was reflected by increased mRNA transcription of the fatty acid binding protein. Prolonged low-energy diet promoted cell-specific heat shock protein (Hsp) response; whereas significant increase of Hsp90 but unchanged levels of Hsp70 proteins were observed in white blood cells, the expression of Hsp70 in milk somatic cells was markedly attenuated, in parallel with a marked increase of alpha(s1)-casein expression. At the mammary gland level, these results may indicate a decrease in turnover of proteins and a shift to an exclusive expression of milk components producing factors. Similar responses to caloric stress were revealed also in ketotic dairy cows. Ketosis promoted a shift towards long and unsaturated fatty acids and an increased expression of alpha(s1)-casein in milk somatic cells. These findings may reflect an evolutionary-preserved mechanism in lactating cows for coping with caloric restriction. Overall, our results provide an index to test suitability of beef cattle breeds to inadequate caloric demands.

Abstract
The objective of this study was to investigate the feeding value of extruded corn in a corn silage-based ration for high-producing Holstein cows during mid lactation. Sixteen multiparous and 8 primiparous Holstein cows (106 +/- 49.7 d in milk; 43.7 +/- 5.27 kg of milk/d) were paired based on parity, days in milk, milk production, and body condition score and assigned to 1 of 2 dietary treatments in a randomized block design for 10 wk including a 2-wk adaptation period. Cows were fed a total mixed ration and milked 3 times per day. Diets contained 44% forage (3:1; corn silage:grass silage), 44.7% grain, and either extruded corn (EXC) or finely ground corn (FGC) at 11.3% of ration dry matter. No significant differences were detected in dry matter intake, milk protein yields, fat-corrected milk yields, or body condition score between cows fed FGC and cows fed EXC. Multiparous cows fed EXC produced more milk during wk 3 through 8 with a reduced milk fat content compared with multiparous cows fed FGC. Milk protein content was greater for primiparous cows fed EXC during wk 5 through 8 compared with primiparous cows fed the FGC ration. The major effect of feeding 2.7 kg/d of EXC compared with FGC was an increase in milk production and a reduction in milk fat content for multiparous cows, and an increase in milk protein content for primiparous cows.

Abstract
Rates of fatty acid biohydrogenation and passage were determined for fat supplements varying in saturation using lactating dairy cows. First-order fractional passage rates were determined by dividing the duodenal flux of fatty acids by their respective ruminal pool sizes. The determination of rates of biohydrogenation required the development of a model to account for the transfer of fatty acids among pools. Ruminally and duodenally cannulated multiparous Holstein cows (n = 8) were used in a replicated 4 x 4 Latin square design with 21-d periods. Treatments were control and a linear substitution of 25 g/kg supplemented fatty acids varying in saturation as follows: saturated (prilled hydrogenated free fatty acids), intermediate mix of saturated and unsaturated (calcium soaps of long-chain fatty acids), and partially unsaturated fatty acids. Passage rates of 16:0, 18:0, and total 18-carbon fatty acids were linearly decreased with increasing unsaturated fatty acids and the trans-18:1 fractional passage rate was quadratically affected with a maximum for the intermediate treatment. Increasing unsaturated fatty acids increased the extent of 18:2 and 18:3 biohydrogenation and decreased the extent of 18:1 and trans-18:1 biohydrogenation. Calcium salts did not protect PUFA from ruminal biohydrogenation despite a mean ruminal pH of 6.0, and unsaturated fatty acids decreased ruminal biohydrogenation of trans-18:1, resulting in increased duodenal flow of these fatty acids. The model allows a mechanistic description of ruminal biohydrogenation and determination of the extent of 18:1 biohydrogenation.

Abstract
Saturated and unsaturated fatty acid supplements (FS) were evaluated for effects on ruminal digestion kinetics, and ruminal and postruminal nutrient digestion. Eight early lactation ruminally and duodenally cannulated cows (77 +/- 12 days in milk, mean +/- SD) were used in a replicated 4 x 4 Latin square design experiment with 21-d periods. Treatments were control and a linear substitution of 2.5% fatty acids from supplemented saturated FS (SAT; prilled, hydrogenated free fatty acids) for partially unsaturated FS (UNS; calcium soaps of long-chain fatty acids). All rations contained identical forage and concentrate components including 37.2% forage and 13.5% cottonseed. Saturated FS linearly decreased ruminal digestibility of dry matter and organic matter and linearly decreased ruminal neutral detergent fiber (NDF) digestibility. The reduction in ruminal NDF digestibility was because of a linear decrease in digestion rate and a linear increase in passage rate of potentially digestible NDF with increasing saturated FS. Total tract digestibility of NDF was not different between treatments because of compensatory postruminal digestion. Ruminal fatty acid and C18 fatty acid digestibility tended to increase linearly with increasing unsaturated FS, and postruminal C18 fatty acid digestibility decreased with increasing saturated FS. Saturated FS linearly decreased ruminal organic matter digestibility and decreased intestinal long-chain fatty acid digestibility, although differences in fatty acid digestibility may be partially explained by fatty acid intake.

Abstract
Two experiments were conducted to test the hypothesis that increasing carbohydrate fermentation in the large intestine would increase intestinal conversion of blood urea N to microbial protein, thereby reducing urinary N output. In experiment 1, 3 multiparous Holstein cows were used in an incomplete 4 x 4 Latin square with 14-d periods. Cows were fed the same basal diet and treatments were the abomasal infusion of 0, 0.5, or 1 kg/d of citrus pectin, or the addition of 1 kg/d of molasses to the basal diet. Experiment 2 used 6 cows in a double reversal design with four 21-d periods. Cows were fed one basal diet and treatments were the abomasal infusion of either 0 or 1 kg/d of pectin. In experiment 1, pectin infusion linearly decreased basal ration intake from 25.0 to 23.2 kg/d. This was prevented in experiment 2 by restricted feeding, and basal ration intake was 22.2 kg/d. Abomasal pectin caused numeric decreases in total tract apparent digestibility of neutral detergent fiber and neutral detergent solubles in experiment 1 and significantly decreased starch digestibility in experiment 2, suggesting that pectin may have reduced postruminal nutrient digestibility. Pectin infusion did not affect milk yield but decreased milk fat percentage from 3.69 to 3.53% in experiment 2. Increasing abomasal pectin tended to decrease urinary N and increase fecal N in experiment 1 and these effects were significant in experiment 2. For both experiments, urinary N decreased 26 g/d, approximately 10% of daily urine N output. Abomasal pectin did not affect fecal pH or DM content; however, in experiment 2, pectin decreased fecal ammonia from 19.8 to 13.4 mmol/kg of DM and increased fecal purines from 13.8 to 15.8 mmol/kg of DM. In both experiments, excretion of fecal purines was increased from 15 g/d for 0 kg/d pectin to 18 g/d for 1 kg/d pectin, although this increase was only significant in experiment 2. These results suggest that manipulating dairy diets to increase postruminal fermentation may reduce urinary N and consequently manure ammonia losses. However, abomasal pectin tended to decrease both ruminal ammonia concentration and urinary purine derivative output in experiment 2, suggesting that postruminal pectin fermentation may have compromised rumen microbial protein production.

Abstract
Interactions of endosperm type of corn grain and the brown midrib 3 (bm3) mutation in corn silage on ruminal kinetics and site of nutrient digestion of lactating dairy cows were evaluated. Eight ruminally and duodenally cannulated cows (72 +/- 8 d in milk; mean +/- SD) were used in a duplicated 4 x 4 Latin square design experiment with a 2 x 2 factorial arrangement of treatments. Treatments were corn grain endosperm type (floury or vitreous) and corn silage type (bm3 or isogenic normal). Diets contained 26% neutral detergent fiber (NDF) and 30% starch. Interactions of treatments were not observed for any measure of digestibility, but digestion kinetics of starch and fiber did interact to affect digestible organic matter intake by affecting dry matter intake. Rate of ruminal starch digestion was faster and rate of ruminal starch passage tended to be slower in diets containing corn grain with floury vs. vitreous endosperm, resulting in a mean increase of 22 units for ruminal starch digestibility. Although compensatory postruminal starch digestion decreased differences among treatments for total tract starch digestibility, starch entering the duodenum was more digestible for grain with floury endosperm compared with vitreous grain, resulting in greater total tract starch digestibility for floury compared with vitreous corn grain. Fermentation rate of potentially digestible NDF was not affected by either bm3 corn silage or greater ruminal starch digestion of floury grain. Brown midrib corn silage increased total tract NDF digestibility vs. control silage by numerically increasing ruminal and postruminal digestibility of NDF. Endosperm type of corn grain greatly influences site of starch digestion and should be considered when formulating diets.

Increasing ruminal starch digestibility by replacing vitreous corn grain with floury grain reduced mean and minimum ruminal pH. Brown midrib 3 corn silage reduced mean and minimum ruminal pH and increased total volatile fatty acid concentration. Ruminal pH was positively associated with rate of valerate absorption. Although floury endosperm reduced acetate:propionate ratio in both control and bm3 corn silage diets, it had a greater effect on reducing acetate:propionate ratio for control silage compared with bm3 corn silage. Nonammonia N flow to the duodenum did not differ among treatments and no effects of treatment were detected for microbial N and nonammonia, nonmicrobial N flow. Although treatment effects on ruminal fermentation and ruminal pH were observed, few interactions of treatment were detected and treatments did not affect flow of N fractions to the intestines.

Abstract
A data set constructed from research trials published between 1979 and 1998 was used to derive equations to adjust published tabular values for the rumen-undegradable protein (RUP) content of feeds to better predict the passage of nonammonia nonmicrobial N (NANMN) to the small intestine of lactating dairy cows. Both linear and nonlinear forms of equations were considered for making adjustments. Iterative processes were used to estimate equation parameters. A logistic equation was developed and considered to be the most optimal for adjustment of published tabular RUP contents of feeds. The equation is a function of dietary dry matter intake (DMI) and includes terms for tabular RUP and nonprotein N contents of individual feeds. The equation has a standard error of prediction of 69.29 g of NANMN/ d per cow and a root mean square prediction error of 104.63 g of NANMN/d per cow. Independent evaluation of the equation indicated that the concept of variable RUP content for feeds based on DMI is correct. Further refinements may be needed as other data become available to quantify the effects of additional factors on the RUP value of feeds.

Abstract
Neonatal Holstein calves were fed texturized calf starters containing 33% whole (WC), dry-rolled (DRC), roasted-rolled (RC), or steam-flaked (SFC) corn to investigate how corn processing method affects intake, growth, rumen and blood metabolites, and rumen development. In the first experiment, 92 Holstein calves (52 male and 40 female) were started at 2 +/- 1 d of age and studied for 42 d. Starter dry matter (DM) intake was measured and fecal scoring conducted daily. Growth and blood parameter measurements were conducted weekly. A subset of 12 male calves (3/treatment) was euthanized at 4 wk of age and rumen tissue sampled for rumen epithelial development measurements. Experiment 2 consisted of 12 male Holstein calves ruminally cannulated at 7 +/- 1 d of age. Rumen fluid and blood samples were collected during wk 2 to 6. In the first experiment, postweaning and overall starter and total DM intake were significantly higher in calves fed starter with DRC than RC or SFC. Postweaning and overall starter and total DM intake were significantly higher in calves fed starter with WC than SFC. Postweaning average daily gain was significantly greater in calves fed starter with DRC than SFC. Blood volatile fatty acid concentrations were significantly higher in calves fed starter with SFC than in calves fed all other treatments. Papillae length and rumen wall thickness at 4 wk were significantly greater in calves fed starter with SFC than DRC and WC, respectively. In experiment 2, calves fed starter with WC had higher rumen pH and lower rumen volatile fatty acid concentrations than calves fed all other starters. Rumen propionate production was increased in calves receiving starter with SFC; however, rumen butyrate production was higher in calves fed starter with RC. Results indicate that the type of processed corn incorporated into calf starter can influence intake, growth, and rumen parameters in neonatal calves. Calves consuming starter containing RC had similar body weight, feed efficiency, and rumen development but increased structural growth and ruminal butyrate production when compared with the other corn processing treatments.
