Abstract
BACKGROUND This research aims to reduce white striping muscle defects induced by vascular inflammation and hypoxia using the anti-inflammatory, antiplatelet and anti-atherothrombotic properties of acetylsalicylic acid (ASA). To this end, the effects of different doses (0.3, 0.6, 1, 3 and 6 g L-1) of ASA added to drinking water at 24-48 days on growth performance, carcass traits, footpad dermatitis, white striping and breast meat quality parameters were investigated. RESULTS The results indicate that 0.3, 1, 3 g L-1 and especially 0.6 g L-1 ASA treatment significantly improved growth performance and meat quality parameters. Also, doses of 0.3, 6 g L-1 and especially 0.6 g L-1 of ASA treatment reduced the incidence of white stripe muscle defects. CONCLUSIONS Consequently, 0.6 g L-1 ASA treatment reduced macrophage infiltrations and myodegeneration caused by growth rate. In addition, this dose increased vascular endothelial growth factor and decreased irisin level in breast muscle. The study also shows that high doses of ASA treatment (3 and 6 g L-1) may make footpad dermatitis more common. This may be due to the fact that ASA can cause side effects such as gizzard ulcers and kidney damage in broiler chickens. © 2025 The Author(s). Abstract
Wenchang chicken, renowned for its high-quality meat, is the economic meat breed in Hainan Province, China. This study compared cage-rearing (CR) and free-range (FR) groups in terms of growth performance, slaughter performance, meat quality, IMP (inosine monophosphate) content, AAs, FAs, serum lipid metabolites, and transcriptomic and metabolomic analyses. The CR group showed increased body weight, live weight, and abdominal fat but lower leg muscle percentage and breast muscle redness, suggesting flavor differences. CR chickens had higher IMP, threonine (Thr), and pentadecanoic, oleic, and linoleic acids, while glutamate (Glu) and alpha-linolenic acid were lower compared to FR. Glycine was elevated, but histidine, myristic, and tricosanoic acids were lower in CR leg muscle. Serum analysis revealed higher total cholesterol (TC), triglycerides (TG), high-density lipoprotein (HDL), lipoprotein lipase (LPL), hormone-sensitive lipase (HSL), fatty acid synthase (FAS), thyroid-stimulating hormone (TSH), leptin (LEP), and adiponectin (ADP) in the CR group. Transcriptomic and metabolomic studies identified 252 differentially expressed genes and 34 metabolites linked to metabolic pathways. In summary, CR system can improve production performance, FR system is considered more flavorful. The results can act as a theoretical basis for selecting a suitable rearing method for this unique breed.

Abstract
1. This study evaluated the effects of cyclic eggshell temperature between 10 and 14 d of embryogenesis on traits viz. the expression of MYOZ2, PPARγ and GPx7 in breast muscle, meat quality and incidence of white striping at slaughter age.2. Eggs were obtained from Cobb and Ross broiler breeders to investigate the response of breeds to eggshell temperature, which regulated air temperature. A total of 784 eggs were incubated at either the control eggshell temperature (37.8°C) from 0 to 18 d or exposed to cyclic high eggshell temperature (CHT) at 38.8°C for 6 h/d between 10 and 14 d of incubation. The temperature was 36.8°C between 18 and 21 d. Hatched chicks were reared under optimum rearing conditions. The birds were sampled at 19 d of incubation, at hatch and at 42 d post-hatch.3. There was no effect of eggshell temperature on yolk-free body weight and residual yolk sac weight. The CHT chicks had wider breasts on the day of hatching.4. At hatch and 42d post-hatch, PPARγ expression in Cobb-CHT was upregulated 4.78-fold and downregulated 3.28-fold, respectively, compared to the Cobb-control. At slaughter age, chickens from Ross-CHT had 1.98- and 2.33-fold upregulated PPARγ and GPX7 expressions, respectively, compared to Ross-control. The CHT increased GPx7 expression in the Cobb-CHT day-old chicks compared to the Cobb-control. On ED19, MYOZ2 expression was upregulated in Cobb and downregulated in Ross by CHT.5. The effects of breed and eggshell temperature on pH15, L*, a*, expressible juice and cooking loss were not significant. The CHT increased the incidence of severe white striping lesions in Ross chickens.6. It was concluded eggshell temperature modulated embryo development, incidence of white striping and expression of related genes differently in the two commercial breeds.

Abstract
Wooden breast (WB), spaghetti meat (SM) and white striping (WS) are significant research focuses due to their impact on meat quality. This study examines the relationship between different myopathies in chickens from a commercial slaughterhouse and compares physicochemical traits between breasts with single and multiple myopathies and control (CO-no apparent myopathy). A total of 240 breasts were evaluated for myopathy presence, severity and location, and physicochemical parameters (i.e. carcass weight and color; breast color, pH, electrical conductivity, drip, thaw and cooking loss, Warner-Brazler texture, moisture, protein, fat and collagen content). A 54.8 % of the affected breasts presented multiple myopathies, and within them, a correlation between WB and WS was found (Kendall's tau = 0.24; P < 0.01). Additionally, myopathies were more prevalent in the breast cranial region (P < 0.05). Most physicochemical parameters varied significantly across myopathy classes. Breasts presenting WB, alone or in combination, were the most altered, showing: heavier carcasses with higher breast yield and redder and yellower skin; breasts with higher L*, b* and Hue, higher moisture, fat and collagen and lower protein content, and with higher cooking loss and lower resistance to shear (P < 0.05). SM, WS and their combination often had intermediate values between CO and WB breasts, with a few exceptions in carcass color and breast fat content. The principal component discriminant analysis revealed a proximity of CO to WS, SM, and their combinations, and a clear separation to WB and WB-SM. Breast yield, pH, cooking and thaw loss, and protein and fat content were the most discriminative parameters between categories. The partial least squares discriminant analysis could not differentiate between single, multiple myopathies and CO (accuracy = 42.6 %), but showed 80.63 % balanced accuracy for WB-SM, 74.26 % for SM and 74.61 % for CO. These findings confirm most previously reported data on meat quality, and provide a thorough analysis that can help industries to improve breast myopathies postmortem classification and identification.

Abstract
This study evaluated the effects of nutrient density and the usage of a multicarbohydrase containing α-galactosidase enzyme (CAG) on broiler performance, carcass characteristics, and nutrient utilization from 1 to 42 d of age. A total of 1,800 d-old YPM x Ross 708 male broilers were distributed randomly into 72 floor pens (25 birds/pen) and assigned to 1 of 6 treatments (12 replicates/treatment). Three basal diets were formulated with 2 ME levels (adequate (AE) and 100 kcal/kg reduced (RE)) and 2 amino acid (AA) densities (96 and 90%) following Ross 708 nutrient specifications. The first diet, AE96AA, contained AE and 96% AA density. The second diet, RE96AA, contained RE with 96% AA density. The third diet, RE90AA, contained RE with 90% AA density. Additional treatments were prepared by supplementing 0.2 g CAG per kg feed to the basal diets. Broiler performance (d 14, 28, and 42), processing yields (d 43), breast myopathies (d 43), apparent ileal nutrient digestibility (d 42), and digestible nutrient intake (d 29 to 42) were determined. Data were analyzed as a 3 × 2 (nutrient density x CAG) factorial arrangement of treatments. Nutrient density x CAG interactions were observed for multiple measurements including feed conversion ratio (FCR; d 1 to 42), CP digestibility, and apparent ileal digestible energy (AIDE). Day 1 to 42 FCR was reduced when broilers were fed RE90AA with CAG compared to RE90AA without CAG (P ≤ 0.05). Crude protein digestibility increased when broilers consumed AE96AA without CAG compared to RE90AA, whereas CAG inclusion allowed for similar CP digestibility between all nutrient densities (P ≤ 0.05). Without CAG inclusion, AIDE had a stepwise decrease from AE96AA to RE90AA, while CAG supplemented AE96AA and RE90AA had similar AIDE (P ≤ 0.05). Inclusion of CAG decreased FCR, and increased nutrient digestibility of broilers fed nutrient-reduced diets.

Abstract
This study assessed the impact of growth-related myopathies-white striping (WS), wooden breast (WB), and spaghetti meat (SM)-on the technological properties, lipid and protein oxidation, chemical composition, and profiles of fatty acids (FAs), amino acids, minerals, and sensory attributes of pectoralis major muscles in broiler chickens. Breasts with myopathies had similar pH and lightness but exhibited lower redness and yellowness in the case of WB defect compared to normal meat (p < 0.05). The WB samples also showed higher cooking losses than normal meat and increased shear force compared to the SM samples (p < 0.01). Moreover, WB meat showed lower protein content (p < 0.001) than the normal and SM samples but the highest glycine content (p < 0.05). The WB meat also exhibited significant alterations in FA composition, with higher levels (p< 0.05) of C18:2n6, C22:6n3, n3 PUFA, n6 PUFA, and total PUFA compared to the normal and SM samples. The presence of myopathies did not influence the meat mineral composition, oxidative pattern, or sensory properties. In conclusion, growth-related myopathies in broiler chickens impact the technological quality and chemical composition of their breast meat, with WB showing the most significant alterations in protein content and FA composition. These changes indicate potential challenges to processing and nutritional quality, though sensory attributes remain largely unaffected.

Abstract
Influences the Marek's disease vaccine (MDV) alone or combined with the in ovo and dietary administration of 25-hydroxycholecalciferol (25OHD3) on the expression of genes associated with the breast muscle deposition, adaptive and innate immunity, and antioxidant and vitamin D activities of 14 d-old broilers were investigated. Four in ovo treatments were: noninjected; commercial MDV-alone-injected (50 μl); or 50 μl of MDV containing 1.2 (MDV+25OHD3-1.2) or 2.4 (MDV+25OHD3-2.4) μg of 25OHD3. Two dietary treatments were a commercial diet containing 25OHD3 (250 IU)/kg of feed (control) or the same diet supplemented with additional 25OHD3 (2,760 IU)/kg of feed (Hy-D diet). One bird per pen (48 total) was sampled at 14 d for determination of the expression of genes involved with the muscle deposition (MyoD1, MyoG, Pax3, and Mrf4), immunity (INF-γ, IL-10, IL-8, IL-1β, and TGF-β4), antioxidant capacity (SOD1, SOD2, GSH-P1, GSH-P7, and CAT), and vitamin D activity (VDR, 1α-hydroxylase, and 24-hydroxylase) in the spleen and pectoralis major (P.major) muscle. The treatment differences were considered significant at P ≤ 0.05. In the P. major, Mrf4 and MyoG were up-regulated in Hy-D-fed birds. Also, the in ovo and dietary 25OHD3 sources individually increased SOD2 gene expression in the P. major. In the spleen, the expressions of IL-1β and IL-8 were down-regulated and IL-10 and TGF-β4 gene expressions were up-regulated in Hy-D-fed birds than those commercial-fed broiler. In ovo and dietary 25OHD3 sources enhanced vitamin D gene (1α-hydroxylase and 24-hydroxylase) activities in the breast and spleen. In ovo x dietary treatment interactions were significant for the MyoD1, IL-8, Pax3, TGF-β4 genes of the P. major, in which the combined MDV with 1.2 μg of 25OHD3 enhanced their expressions in birds fed the Hy-D diet. In conclusion, both 25OHD3 sources promoted the expression of genes associated with immunity and P. major growth. It is recommended that both 25OHD3 sources can be used to promote the gene expression of 14-day-old broilers in the spleen and breast muscle when MDV administered in ovo.

This study aimed to evaluate the effects of the dietary inclusion of microencapsulated sodium butyrate (Na-butyrate; 0, 150, and 300 mg Na-butyrate/kg diet) and dietary fat reduction (7.7% vs. 6.7% in the grower diet; 8.9% vs. 7.7% in the finisher diet) in 792 (half male and half female) broiler chickens on growth performance, carcass traits, and meat quality and the occurrence of wooden breast (WB), white striping (WS), and spaghetti meat (SM). Dietary supplementation with Na-butyrate did not affect the growth performance, carcass traits, meat quality traits, or myopathy rates. Dietary fat reduction did not influence feed intake (FI) but decreased average daily gain (ADG); increased feed conversion ratio (FCR) (P < 0.001); and decreased the occurrence of WS (-38%; P < 0.01), WB (-48%; P < 0.05), and SM (-90%; P < 0.01). Dietary fat reduction also increased cold carcass weight (P < 0.01), carcass yield (P < 0.05), and pectoralis major yield (P < 0.05), whereas meat quality was not affected. Compared to females, males had high body weight, ADG, and FI and low FCR (P < 0.001) at the end of the trial. Moreover, cold carcass weight and hind leg yield were higher in males than in females (P < 0.001), whereas females had higher carcass, breast, and p. major yields (P < 0.001). Males showed a higher rate of WB (P < 0.001) and a lower rate of SM (P < 0.01) than females, whereas WS occurrence did not differ between sexes. In conclusion, Na-butyrate supplementation did not affect growth performance, carcass traits, or meat quality. Conversely, the reduction in dietary fat greatly decreased myopathy occurrence, whereas moderately impaired growth performance.

Abstract
Wooden breast (WB) is a myopathy that occurs in pectoralis major (PM) muscles, predominately affecting large, fast-growing broilers. Severe myodegeneration, increased hypoxia, reduced blood flow, and increased collagen deposition are hallmark characteristics of WB that culminate in unsatisfactory fresh meat quality attributes, such as poor water-holding capacity, tenderness, and processing characteristics. Therefore, WB meat is often downgraded resulting in economic losses for the United States poultry industry. Although WB has been well characterized, its etiology remains undefined. As the scientific community continues to resolve mechanisms responsible for WB onset, understanding biochemical changes associated with WB may facilitate solutions to negate its poor meat quality attributes. Given changes in metabolism of living muscle can alter biochemical processes during the conversion of muscle to meat, this review aims to summarize and discuss the current knowledge of WB muscle and meat biochemistry. For example, it appears metabolic pathways that support combating stress are upregulated in WB muscle at the expense of glycolytic flux, which presumably contributes to the high ultimate pH of WB meat. Further, perturbed function of WB mitochondria, such as altered calcium handling, impacts aspects of postmortem metabolism and proteolysis. Collectively, metabolic dysfunction of WB muscle alters the biochemical processes that occur during the conversion of muscle to meat, and thus contributes to the poor WB meat quality.

Abstract
Woody breast (WB) is one of muscle myopathy found in chicken breast, characterized with enlarged size and extremely stiff texture. The WB condition is one of the most prevalent quality issues in the modern poultry industry. WB has been shown to be heritable, but no effective detection method of WB severity in live birds exists for the selection purpose. The objective of this study was to determine potential of a non-invasive, portable digital palpation device as WB detection method that can be used for the selection to estimate the heritability of WB. The physical and functional properties of WB was also investigated in comparison with normal breast (NB). Two hundred ten breast muscles were obtained from a local processing plant one day after harvest and sorted based on WB scoring (1 for NB and 2 and 3 for WB). The samples were subjected to physical and physicochemical analyses, determining biomechanical properties (muscle tone, stiffness, elasticity, relaxation, and creep), pH, color, cooking yield, and texture (firmness and compression energy were used for raw meat and shear force and energy for cooked meat). The least squares means of the following variables were significantly different between WB and NB (p < 0.01): stiffness (603.4 vs 565.8; N/m), and elasticity (1.40 vs 1.55). However, relaxation and creep were not significantly different (p > 0.05). These results collectively showed that biomechanical properties of WB differ from NB. The degree of muscle stiffness in WB can be considered as a trait to be selected. The WB score showed strong negative correlations with cooking yield (-0.77) and cooked L*(-0.74), which means that as the breast becomes harder, the cooking yield decreases, and the color becomes darker after cooking. The WB score showed high correlations with physical and functional characteristics and exhibited strong correlations with the biomechanical properties measured by the device. Therefore, the results indicated that the digital palpation device has potential to detect the WB severity (degree of stiffness) of breast muscle.

Abstract
Males and females have long shown disparities in body weight and height; yet, the underlying mechanisms influencing growth and development remain unclear. Male and female Zhedong White Geese (ZDW) geese have long been selected for large body size and egg production, respectively. This led to a large difference in body weight between males and females, making them a unique model for studying the effects of sex on growth and development. This study aimed to elucidate these mechanisms by comparing the transcriptomes of muscle and pituitary tissues in male and female ZDW geese to identify the critical genes responsible for the effects of sex on growth performance. Our analysis revealed 1101 differentially expressed genes (DEGs) in leg musculature (507 upregulated, 594 downregulated), 773 DEGs in breast musculature (311 upregulated, 462 downregulated), and 517 DEGs in the pituitary gland (281 upregulated, 236 downregulated) between male and female geese. These DEGs were significantly enriched in gene ontology and Kyoto Encyclopedia of Genes and Genomes (KEGG) pathways associated with endocrine metabolism (e.g., hormonal activities), muscle formation (e.g., sarcomere and myofibril), and bone formation (e.g., bone morphogenesis and cartilage formation). The upregulated genes in males were enriched in KEGG pathways involving nutrient digestion and absorption (vitamin and protein), as well as the secretion of digestive juices (gastric acid and bile). Through protein-protein interaction analyses, we also observed high-density gene networks related to muscle fiber development, calcium ion metabolism, mitochondrial respiratory chain, and bone development. Therefore, our multi-tissue transcriptome analysis provides a deeper understanding of the complex and systematic gender-driven effects on growth and development in geese. IGF1, GHRHR, and NCAPG-LCORL and pathways related to myogenesis might play vital roles in gender differences before hormones exert their effect.

Abstract
Heat stress can greatly challenge growth and meat quality of broiler chickens where research is looking for sustainable ingredients, such as microalgae, that could also alleviate its negative impacts. Thus, in the present study, 576 1-D-old chicks (Ross 308) were housed until commercial slaughtering (42 D) in 36 pens in 2 rooms of a poultry house, according to a full factorial design encompassing 2 room temperatures (standard vs. high), 2 sexes (females vs. males), and 3 dietary treatments, that is, diet C0 (control diet), diet C3, and diet C6 containing 0, 3, and 6%, respectively, of C. vulgaris meal replacing the same quantities of soybean meal. The highest inclusion level of C. vulgaris decreased feed intake (P < 0.001) and body weight (P < 0.0001) compared to the control diet; it increased yellow and red indexes (P < 0.0001) of the breast muscle, besides the proportion of n3 polyunsaturated fatty acids (PUFA) (P = 0.028). Heat stress decreased feed intake (P = 0.001), breast (P = 0.001) and p. major yields (P = 0.036), and increased meat pH (P= 0.008) and cooking losses (P < 0.001), umami (P = 0.021) and brothy flavor (P < 0.001), and the proportion of n3 PUFA rates (P = 0.027), while reducing the contents of several amino acids in the breast meat (P ≤ 0.05). Compared to females, males displayed higher feed intake and growth, and more favorable feed conversion (P < 0.001). Carcass and p. major yields were greater in females (P < 0.001) which also showed a higher occurrence of spaghetti meat compared to males (P < 0.001). In conclusion, C. vulgaris can be used to replace until 3% of soybean meal in diets for broiler chickens without negative implications, while positively affecting breast meat color according to consumers' preferences. However, the microalgae inclusion did not mitigate the negative effects of a chronic heat stress on growth performance nor reduced the occurrence of any myopathies.

Abstract
This study compares the effects of modern colony cage systems and traditional floor systems on the production and welfare of broiler chickens. Through two trials spanning 35 days each, we evaluated various physiological parameters, including growth performance, bone health, stress responses, and meat quality. Colony cages demonstrated superior thermal regulation and growth performance compared to traditional floor systems, but also exhibited higher frequencies of leg deformity and reduced standing ability. Conversely, the broilers in traditional floor systems experienced heat stress-related challenges, impacting the meat quality. Our findings underscore the need to balance productivity with animal welfare in broiler farming practices. By understanding the distinct impacts of different housing systems, we can work towards improving broiler rearing methods to ensure optimal welfare and production outcomes.

Abstract
Sex identification of ducklings is a critical step in the poultry farming industry, and accurate sex identification is beneficial for precise breeding and cost savings. In this study, a method for identifying the sex of ducklings based on acoustic signals was proposed. In the first step, duckling vocalizations were collected and an improved spectral subtraction method and high-pass filtering were applied to reduce the influence of noise. Then, duckling vocalizations were automatically detected by using a double-threshold endpoint detection method with 3 parameters: short-time energy (STE), short-time zero-crossing rate (ZCR), and duration (D). Following the extraction of Mel-Spectrogram features from duckling vocalizations, an improved Res2Net deep learning algorithm was used for sex classification. This algorithm was introduced with the Squeeze-and-Excitation (SE) attention mechanism and Ghost module to improve the bottleneck of Res2Net, thereby improving the model accuracy and reducing the number of parameters. The ablative experimental results showed that the introduction of the SE attention mechanism improved the model accuracy by 2.01%, while the Ghost module reduced the number of model parameters by 7.26M and the FLOPs by 0.85G. Moreover, this algorithm was compared with 5 state-of-the-art (SOTA) algorithms, and the results showed that the proposed algorithm has the best cost-effectiveness, with accuracy, recall, specificity, number of parameters, and FLOPs of 94.80, 94.92, 94.69, 18.91M, and 3.46G, respectively. After that, the vocalization detection score and the average confidence strategy were used to predict the sex of individual ducklings, and the accuracy of the proposed model reached 96.67%. In conclusion, the method proposed in this study can effectively detect the sex of ducklings and serve as a reference for automated sex identification of ducklings.

Abstract
This study evaluated the welfare and behaviors of Cobb 700 broilers as affected by growth rate (GR) and stocking density (SD). Slower-growth (weight gain < 50 g/d) and medium-growth (weight gain = 50-60 g/d) broilers were produced by providing 57.1% and 78.6% of the feed intake listed in the Cobb 700 production manual for standard (fed ad libitum) broilers (weight gain > 60 g/d). Broilers at all 3 GRs were reared at 2 SDs of 30 and 40 kg/m2. Broiler welfare indicators, including gait score, tibia strength, feather coverage, and footpad condition were evaluated when birds reached 1, 2, and 3 kg of body weight. The activity index was determined by overhead cameras and image processing, and the time spent at feeders was recorded using the radio-frequency identification (RFID) systems. The results show that it took 45 d for standard, 52 d for medium-growth, and 62 d for slower-growth broilers to reach a 3 kg market body weight. Feed conversion ratios (FCR, kg/kg) were 1.57 for standard, 1.67 for medium-growth, and 1.80 for slower-growth broilers. Growth rate and SD had an interaction effect on feather cleanliness (P = 0.03), and belly feather coverage (P = 0.02). Slower-growth broilers were more active and had better feather coverage and gait scores than medium-growth and standard broilers (all P < 0.01) but may feel hungry and depressed, medium-growth broilers spent the most time at the feeder among the 3 growth groups (P = 0.02), and standard broilers showed the best production performance. Broilers at 30 kg/m2 showed better bone strength (P = 0.04), and footpad condition (P < 0.01) compared to those at 40 kg/m2. In conclusion, reducing GR and SD may slightly improve broiler leg health at the high expense of compromised production performance and prolonged production cycles.

The objective of the present study was to determine the effect of a novel (4th generation) phytase supplementation as well as its mode of action on growth, meat quality, and incidence of muscle myopathies. One-day old male broilers (n = 720) were weighed and randomly allocated to 30 floor pens (24 birds/pen) with 10 replicate pens per treatment. Three diets were fed from hatch to 56- days-old: a 3-phase corn-soy based diet as a positive control (PC); a negative control (NC) formulated to be isocaloric and isonitrogenous to the PC and with a reduction in Ca and available P, respectively; and the NC supplemented with 2,000 phytase units per kg of diet (NC + P). At the conclusion of the experiment, birds fed with NC + P diet were significantly heavier and had 2.1- and 4.2-points better feed conversion ratio (FCR) compared to birds offered NC and PC diets, respectively. Processing data showed that phytase supplementation increased live weight, hot carcass without giblets, wings, tender, and skin-on drum and thigh compared to both NC and PC diets. Macroscopic scoring showed that birds fed the NC + P diet had lower woody breast (WB) severity compared to those fed the PC and NC diets, however there was no effect on white striping (WS) incidence and meat quality parameters (pH, drip loss, meat color). To delineate its mode of action, iSTAT showed that blood glucose concentrations were significantly lower in birds fed NC + P diet compared to those offered PC and NC diets, suggesting a better glucose uptake. In support, molecular analyses demonstrated that the breast muscle expression (mRNA and protein) of glucose transporter 1 (GLUT1) and glucokinase (GK) was significantly upregulated in birds fed NC + P diet compared to those fed the NC and PC diets. The expression of mitochondrial ATP synthase F0 subunit 8 (MT-ATP8) was significantly upregulated in NC + P compared to other groups, indicating intracellular ATP abundance for anabolic pathways. This was confirmed by the reduced level of phosphorylated-AMP-activated protein kinase (AMPKα1/2) at Thr172 site, upregulation of glycogen synthase (GYS1) gene and activation of mechanistic target of rapamycin and ribosomal protein S6 kinase (mTOR-P70S6K) pathway. In conclusion, this is the first report showing that in-feed supplementation of the novel phytase improves growth performance and reduces WB severity in broilers potentially through enhancement of glucose uptake, glycolysis, and intracellular ATP production, which used for muscle glycogenesis and protein synthesis.

Abstract
INTRODUCTION White Striping (WS) and Wooden Breast (WB) pectoral myopathies are relevant disorders for contemporary broiler production worldwide. Several studies aimed to elucidate the genetic components associated with the occurrence of these myopathies. However, epigenetic factors that trigger or differentiate these two conditions are still unclear. The aim of this study was to identify miRNAs differentially expressed (DE) between normal and WS and WB-affected broilers, and to verify the possible role of these miRNAs in metabolic pathways related to the manifestation of these pectoral myopathies in 28-day-old broilers. RESULTS Five miRNAs were DE in the WS vs control (gga-miR-375, gga-miR-200b-3p, gga-miR-429-3p, gga-miR-1769-5p, gga-miR-200a-3p), 82 between WB vs control and 62 between WB vs WS. Several known miRNAs were associated with WB, such as gga-miR-155, gga-miR-146b, gga-miR-222, gga-miR-146-5p, gga-miR- 29, gga-miR-21-5p, gga-miR-133a-3p and gga-miR-133b. Most of them had not previously been associated with the development of this myopathy in broilers. We also have predicted 17 new miRNAs expressed in the broilers pectoral muscle. DE miRNA target gene ontology analysis enriched 6 common pathways for WS and WB compared to control: autophagy, insulin signaling, FoxO signaling, endocytosis, and metabolic pathways. The WS vs control contrast had two unique pathways, ERBB signaling and the mTOR signaling, while WB vs control had 14 unique pathways, with ubiquitin-mediated proteolysis and endoplasmic reticulum protein processing being the most significant. CONCLUSIONS We found miRNAs DE between normal broilers and those affected with breast myopathies at 28 days of age. Our results also provide novel evidence of the miRNAs role on the regulation of WS and in the differentiation of both WS and WB myopathies. Overall, our study provides insights into miRNA-mediated and pathways involved in the occurrence of WS and WB helping to better understand these chicken growth disorders in an early age. These findings can help developing new approaches to reduce these complex issues in poultry production possibly by adjustments in nutrition and management conditions. Moreover, the miRNAs and target genes associated with the initial stages of WS and WB development could be potential biomarkers to be used in selection to reduce the occurrence of these myopathies in broiler production.

Abstract
The study aimed to evaluate the effect of light restriction (18L:6D vs. 14L:10D), genotype (A vs. B), and sex on performance, behavior, and meat quality, and the occurrence of wooden breast (WB) and white striping (WS) in broiler chickens. To this purpose 704 one-day-old chickens of 2 genotypes, half males and half females, were reared from hatching until slaughtering at 45 d of age in 32 collective pens (22 chickens per pen). Light restriction reduced growth rate and final live weight (LW), but improved feed conversion ratio (FCR) (P < 0.01) and reduced inactive behaviors of chickens (P < 0.001). Light restriction also reduced WS occurrence in breasts (89.5 to 64.6%; P < 0.001) and reduced meat shear force (2.64 to 2.20 kg/g; P < 0.05) and ether extract content (2.29 to 1.87%; P < 0.05). Regarding genotype, compared to genotype B, chickens of genotype A were heavier (3,242 g vs. 3,124 g; P < 0.01) with higher cold carcass weight and Pectoralis major muscle yield (12.9 vs. 12.0%; P < 0.001) and a higher FCR (1.63 vs. 1.61; P < 0.01). Finally, females had lower final LW (2,852 g vs. 3,513 g) and higher FCR (1.64 vs. 1.59) than males (P < 0.001), but a higher proportion of breast and P. major (P < 0.001), lower cooking losses (P < 0.001) and shear force (P < 0.01), and higher protein content (21.6 vs. 20.7%; P < 0.001). In conclusion, light restriction depressed growth, but was effective in decreasing WS occurrence and improved feed conversion. The decrease in inactive behaviors (sitting/laying) of light-restricted chickens can be positively considered in view of animal welfare.

Abstract
Tightening global regulations on the use of subclinical dietary antibiotics to enhance broiler growth are in response to increasing concern about the risk of resistance and their residues in animal products. The study evaluated the potential of apple cider vinegar (ACV) and garlic extract (GAE) as safer, phytogenic alternatives. A batch of 390 mixed-sex Ross 308-d-old broiler chicks was received into an open, deep litter house, and feather sexed in the second week into 30 experimental units of 13 birds per 2.03 m2 pen. From days 1 to 22, all chicks were on a 200 g/kg crude protein, coccidiostat-treated commercial starter diet. During the grower (16 to 28 days) and finisher (29 to 42 days) phases, chick pens were assigned treatments in a 2 (sex) × 5 (additives) factorial experiment replicated three times. The GAE was a pure extract, while ACV was produced by fermenting 1,000 g fresh apple and 80 g supplementary brown cane sugar in 1.3 liters of water for 4 wk. The five treatments comprised antibiotic (15% granular zinc bacitracin and 12% valinomycin sodium, each at 500 g/tonne) grower (190 g/kg crude protein, 13.0 MJ ME/kg) and finisher (165 g/kg crude protein, 13.2 MJ ME/kg) commercial diets with untreated drinking water as positive controls (PC), antibiotic-free duplicates of the PC diets with untreated drinking water as the negative controls (NC), with 3 mL/L filtered ACV in drinking water (T1), 2 mL/L filtered GAE-treated drinking water (T2), or mixed (3 mL/L ACV + 2mL/L GAE) additive drinking water (T3). Males had higher (P < 0.05) feed intake than females in both growth phases. Birds on the PC gained more (P < 0.05) weight than others. Birds on the PC consumed more feed (P < 0.05) during the finisher phase than T1, T2, and the NC. Birds on the PC had a lower (P < 0.05) grower-phase feed convesion (feed:gain) ratio (FCR) than others, and lower (P < 0.05) FCR during the finisher phase than birds on T1 and T3. Birds on the PC had higher (P < 0.05) percent spleen weight than birds on T1, with smaller proventriculi (P < 0.05) than on NC, T1, T2, and T3, and smaller gizzard weight than birds on the T2 and T3. Birds on the NC exhibited less dressing percentage (P < 0.05) than all other treatments. Meat pH was higher (P < 0.05) in males. In conclusion, in contrast to dietary antibiotics, except for improved dressing percentage, the ACV and GAE did not express phytogenic benefit at the experimental dosage.

Abstract
This study aimed to investigate the level of lipid and protein oxidation in poultry breasts with severe white striping (WS; striation thickness > 1 mm) and nonaffected meats (N; normal breast) during storage under refrigeration (1°C for 14 d) and freezing (-18°C for 90 d). WS presented higher lipid content, although no difference in protein content was detected, compared to normal broiler breast (N). Regarding oxidative damages, a reduction in malondialdehyde and carbonyl protein, hexanal, octanal and nonanal levels, alongside the interaction of these compounds with other compounds in raw, roasted, and reheated breasts was observed under refrigerated storage (14 d). Freezing storage promotes an increase in carbonyls proteins, hexanal, octanal and nonanal levels at 45 d of storage in poultry meats and subsequent decrease, indicating the evolution of oxidative reactions. Regardless of the type of storage, in general, breasts with WS myopathy have higher levels of lipid and protein oxidation.

Abstract
Heat stress (HS) is one of the most challenging stressors to poultry production sustainability. The adverse effects of HS range from feed intake and growth depression to alteration of meat quality and safety. As phytase supplementation is known to improve nutrient utilization and consequently growth, we undertook the present study to evaluate the effects of dietary phytase on growth and meat quality in heat-stressed broilers. A total of 720 day-old hatch Cobb 500 chicks were assigned to 24 pens within controlled environmental chambers and fed three diets: Negative Control (NC), Positive Control (PC), and NC diet supplemented with 2000 phytase units (FTU)/kg) of quantum blue (QB). On day 29, birds were exposed to two environmental conditions: thermoneutral (TN, 25 °C) or cyclic heat stress (HS, 35 °C, 8 h/d from 9 a.m. to 5 p.m.) in a 3 × 2 factorial design. Feed intake (FI), water consumption (WI), body weight (BW), and mortality were recorded. On day 42, birds were processed, carcass parts were weighed, and meat quality was assessed. Breast tissues were collected for determining the expression of target genes by real-time quantitative PCR using the 2-ΔΔCt method. HS significantly increased core body temperature, reduced feed intake and BW, increased water intake (WI), elevated blood parameters (pH, SO2, and iCa), and decreased blood pCO2. HS reduced the incidence of woody breast (WB) and white striping (WS), significantly decreased drip loss, and increased both 4- and 24-h postmortem pH. Instrumental L* and b* values were reduced (p < 0.05) by the environmental temperature at both 4- and 24-h postmortem. QB supplementation reduced birds' core body temperature induced by HS and improved the FCR and water conversion ratio (WCR) by 1- and 0.5-point, respectively, compared to PC under HS. QB increased blood SO2 and reduced the severity of WB and WS under TN conditions, but it increased it under an HS environment. The abovementioned effects were probably mediated through the modulation of monocarboxylate transporter 1, heat shock protein 70, mitogen-activated protein kinase, and/or glutathione peroxidase 1 gene expression, however, further mechanistic studies are warranted. In summary, QB supplementation improved growth performance and reduced muscle myopathy incidence under TN conditions. Under HS conditions, however, QB improved growth performance but increased the incidence of muscle myopathies. Therefore, further QB titration studies are needed.

Abstract
In recent times, meat quality has become a key aspect of poultry production. In the current study, 2,400 sex separate broilers from 4 commercial strains were placed in 6 replications to evaluate various meat quality characteristics when grown to 2 market weights. Broilers were fed 1 of 2 diets with varying degrees of amino acid inclusion to evaluate meat quality of broiler raised on varying planes of nutrition. Birds were processed to meet 2 specified target weights (2.5 and 3.8 kg) representing small bird and big bird debone markets in the United States, respectively. Birds were processed using commercial methods, deboned at 3-h postmortem, and meat quality was assessed. Myopathies (woody breast, white striping, spaghetti meat, along with tenderloin quality), fillet dimensions, color, water-holding capacity (e.g., drip loss, cook loss), and Meullenet Owens Razor Shear was determined. Data were analyzed using the Mixed Model platform of JMP Pro 15.2 (SAS Institute, Cary, NC). Diet had no effect (P > 0.05) on the key quality responses; data were then pooled resulting in main effects of sex, strain, and target weight (noted as carcass size). On the day of processing, high yielding (HY) strains produced higher breast and tender yields (P < 0.05) when compared to standard yielding (SY) strains. In addition, and as expected, females exhibited higher breast and tender yields (P < 0.05) than males. However, males had significantly thicker (P < 0.05) and longer (P < 0.05) fillets, higher incidences (P < 0.05) of white striping, and higher (P < 0.05) cook loss when compared to females. Differences were also observed in tenderness as SY strain A produced the lowest shear values, whereas SY strain B produced the highest shear values across parameters (P < 0.05). SY strains in the small bird (SB) market performed better than SY strains in the big bird (BB) market as indicated by lower incidences of breast and tender myopathies white striping, woody breast, spaghetti meat, woody-like tender, and tender feathering and improved quality attributes (P < 0.05). Similar trends were observed (P < 0.05) in HY strains as SB carcasses produced a better overall product than BB. Differences in carcass size directly impacted quality (P < 0.05) as SB markets showed improvements in most parameters assessed, but broilers representing BB markets had greater breast yield. Although strain had minimal impacts on quality measures, carcass size, and sex had a greater impact on muscle myopathies, water-holding capacity, and shear properties.

Abstract
Starting in approximately 2010, broiler breast meat myopathies, specifically woody breast meat, white striping, spaghetti meat, and gaping have increased in prevalence in the broiler meat industry. Omic methods have been used to elucidate compositional, genetic, and biochemical differences between myopathic and normal breast meat and have provided information on the factors that contribute to these myopathies. This review paper focuses on the genomic, transcriptomic, proteomic, metabolomic, and other omics research that has been conducted to unravel the molecular mechanisms involved in the development of these myopathies and their associated factors and potential causes. SIGNIFICANCE: This review manuscript summarizes poultry meat quality defects, also referred to as myopathies, that have been evaluated using omics methods. Genomics, transcriptomics, proteomics, metabolomics and other methodologies have been used to understand the genetic predisposition, the protein expression, and the biochemical pathways that are associated with the expression of woody breast meat, white striping, and other myopathies. This has allowed researchers and the industry to differentiate between chicken breast meat with and without myopathic muscle as well as the environmental and genetic conditions that contribute to differences in biochemical pathways and lead to the phenotypes associate with these different myopathies.

Abstract
The woody breast (WB) myopathy is an unintended outcome of fast broiler chicken growth and high breast muscle yields. Myodegeneration and fibrosis in the living tissue are results of hypoxia and oxidative stress driven by lack of blood supply to muscle fibers. The study aim was to titrate a vasodilator ingredient, inositol-stabilized arginine silicate (ASI), as a feed additive to improve blood flow and ultimately, breast meat quality. A total of 1,260 male Ross 708 broilers were assigned to: 1) a control basal diet, or the control diet plus increasing ASI: 2) 0.025% ASI, 3) 0.05% ASI, 4) 0.10% ASI, or 5) 0.15% ASI. At d 14, 28, 42, and 49, growth performance was measured on all broilers and serum from 12 broilers/diet was analyzed for creatine kinase and myoglobin presence. On d 42 and 49, 12 broilers/diet were measured for breast width, then left breast fillets were excised, weighed, palpated for WB severity, and visually scored for degree of white striping (WS). At 1 d postmortem, 12 raw fillets/treatment underwent compression force analysis, and at 2d postmortem, the same fillets were analyzed for water-holding capacity. mRNA was isolated from 6 right breasts/diet at both d 42 and 49 for qPCR quantification of myogenic gene expression. Birds fed the lowest dose of 0.025% ASI had a 5-point/3.25% feed conversion ratio reduction compared to birds fed 0.10% ASI over wk 4 to 6 and reduced serum myoglobin at 6-wk of age compared to the control. Breasts from birds fed 0.025% ASI received 42% greater normal WB scores at d 42 compared to control fillets. At d 49, breasts from broilers fed 0.10 and 0.15% ASI received 33% normal WB scores. At d 49, 0.025% AS-fed broiler breasts showed no severe WS. Increased myogenin expression was observed in 0.05 and 0.10% ASI breast samples on d 42 and myoblast determination protein-1 expression was upregulated in breasts from birds fed 0.10% ASI on d 49 compared to the control. Therefore, a dietary inclusion of 0.025, 0.10, or 0.15% ASI was beneficial in reducing WB and WS severity and promoting muscle growth factor gene expression at age of harvest without diminishing bird growth or breast muscle yields.

Abstract
Genetic selection for breast yields and fewer days to market has inadvertent effects on broiler meat quality. Woody breast (WB) and white striping (WS) are pectoralis major myopathies prevalent in commercial broilers. Effects of voluntary exercise on these disorders, specifically, are unknown. A second-generation laser enrichment device shown to induce activity in Ross 308 and 708 birds was implemented using 1,360 Ross 708 broilers randomly assigned to laser enrichment or control for 49 d. Laser-enriched birds were exposed to 6-min laser periods 4 times daily. Seventy focal birds were gait and contact dermatitis scored weekly. Blood was collected wk 5 to 7 from 56 broilers for serum corticosterone, myoglobin, and troponin. Seventy broilers were sampled for breast muscle width, fillet dimensions, and WB and WS at wk 6 and 7. One and 2-day postmortem, fillet compression force and water-holding capacity were measured. Serum corticosterone was reduced by up to 21% in laser-enriched birds wk 5 to 7 (P < 0.01). Serum myoglobin was increased in laser-enriched broilers by 5% on wk 5 (P < 0.01) but increased in control birds wk 6 to 7 by up to 13% (P < 0.01). Serum troponin was reduced in laser-enriched broilers by 9% at wk 5 (P < 0.01). Laser exposure increased breast width and fillet weight at d 42 by 1.08 cm (P < 0.05) and 30 g (P < 0.05). At d 49, fillet height was increased 0.42 cm in laser-enriched birds (P < 0.05). Laser enrichment reduced severe WS incidence at d 42 by 24% (P < 0.05) and on d 49 by 15% (P < 0.10). Severe WB score was numerically reduced by 11% in laser enrichment on d 42 and 18% on d 49 (P > 0.05). Water-holding capacity was improved in laser-enriched breasts (P < 0.01) and expression of myostatin and insulin-like growth factor 2 were increased on d 49 (P ≤ 0.01. Laser enrichment reduced markers of stress and muscle damage while improving breast muscle quality and is therefore a potential effective enrichment for commercial broilers.

Abstract
White striping (WS) is the most common myopathy in the broiler chicken industry. To reveal flavor changes of WS meat objectively, flavor precursors of WS breast muscle were evaluated systematically with integrated metabolomics and lipidomics. The results showed that WS could be distinguished from normal controls by E-nose, and four volatile compounds (o-xylene, benzene, 1,3-dimethyl, 2-heptanone and 6-methyl and Acetic acid and ethyl ester) were detected as decreased compounds by gas chromatography-mass spectrometry. Lipidomic analysis showed that WS breast fillets featured increased neutral lipid (83.8%) and decreased phospholipid molecules (33.2%). Targeted metabolomic analysis indicated that 16 hydrophilic metabolites were altered. Thereinto, some water-soluble flavor precursors, such as adenosine monophosphate, GDP-fucose and L-arginine increased significantly, but fructose 1,6-bisphosphate and L-histidine significantly decreased in the WS group. These results provided a systematic evaluation of the flavor precursors profile in the WS meat of broiler chickens.

Abstract
Woody breast has become a considerable economic concern to the poultry industry. This myopathy presents rigid, pale breasts characterized by replacement of lean muscle protein with connective tissue, a result of hypoxia and oxidative stress in a metabolically starved muscle with inadequate circulation. Hence, the objectives were to supplement broiler diets with ingredients specifically aimed to improve circulation and oxidative status. About 1,344 male Ross 708 broilers were assigned to 1 of 4 diets: 1) a basal diet (control), 2) basal diet plus a blend of 0.2% supplemental L-arginine, 0.17% choline bitartrate, and 0.03% vitamin C (blend), 3) 0.1% vasodilator ingredient (vasodilator), or 4) 0.02% Astaxanthin ingredient (AsX). At d 14, 28, 42, and 49, performance outcomes were collected on all birds and serum from 16 broilers/diet (n = 64) was analyzed for creatine kinase and myoglobin. Once weekly beginning on d 28, a subset of 192 broilers were measured for breast width. On d 42 and 49, breast fillets from 16 broilers/diet (n = 64) were palpated for woody breast severity, weighed, and analyzed for compression force at 1-day postmortem and water-holding capacity at 2-day postmortem. mRNA was isolated from 15 breast fillets/timepoint for qPCR quantification of myogenic gene expression. Data were analyzed using Proc Mixed (SAS Version 9.4) with the fixed effect of diet. Feed conversion ratio was improved in the blend and vasodilator-fed birds d 42 to 49, each by over 2 points (P < 0.05). Breast width was increased in the control on d 42 compared to the vasodilator and AsX-fed broilers (P < 0.05). At d 42, there were 12% greater normal fillets in blend diet-fed birds and 13% more normal scores in vasodilator-fed birds at d 49 compared to the control. At d 49, myogenin expression was upregulated in the AsX diet compared to blend and control diets (P < 0.05), and muscle regulatory factor-4 expression was increased by 6.5% in the vasodilator diet compared to the blend and AsX diets (P < 0.05). Blend and vasodilator diets simultaneously improved feed efficiency in birds approaching market weight while reducing woody breast severity.

Abstract
Broiler farming is the fastest-growing animal production sector and broiler meat is the second most-consumed meat in the world. The intensification of broiler production often has a negative impact on the meat quality and carcass characteristics. Consumers, however, expect a quality product from animals reared extensively on farms providing good animal welfare, often intuitively associated with extensive farming practices. Therefore, this literature review investigates how the critical factors contributing to the degree of extensiveness of broiler production affect the quality of meat. We used the data from scientific articles published in the years 2012-2021 to analyze the effect of diet (n = 409), genetics (n = 86), enrichment (n = 25), and stocking density (n = 20) on meat quality and carcass characteristics. Minerals and microelements supplementation in the diet improved all the meat quality aspects: sensory, physical, and chemical in most studies. Minerals and enzymes in the diet had beneficial effects on carcass characteristics, unlike feed restriction and ingredient substitutions. The impact of outdoor access on meat quality and carcass characteristics was most frequently examined, in contrast to the use of perches or effects of litter quality. Overall, enrichment did not affect the meat's sensory or physical parameters, but outdoor access improved its lipid composition. Lower stocking density deteriorated intramuscular fat content, decreased tenderness and juiciness, yet lowered cooking and drip loss, and increased carcass and breast muscle yields. When it comes to genetics, in general, slow growing broiler strains have better meat quality parameters, especially regarding yellowness (b*), redness (a*), cooking and drip loss. Our review shows that the factors which contribute to extensiveness of broiler production systems and birds' welfare also affect meat quality and the carcass characteristics.

Abstract
The objective of this study was to investigate the effects of thyme and oregano essential oils (as growth promotors), individually and in combination, on the health, growth performance, and prevalence of muscle abnormalities in broiler chickens. Six hundred day-old Cobb 500 hybrid chickens were randomized into four dietary treatment groups with three replicates each. Chicks in the control group (C) received a basal diet, while the experimental treatment groups received basal diets containing 350 mg/kg of thyme oil (T1), 350 mg/kg of oregano oil (T2), and 350 mg/kg of thyme and oregano oil (T3). Growth performance parameters were evaluated at 14, 28, and 42 days. The broilers in treatments T1 and T2 had significantly higher body weights than the control group. The feed conversion ratio was the lowest in chicks who received oregano oil, followed by those fed thyme oil. The overall prevalence of growth-related breast muscle abnormalities (including white striping and white striping combined with wooden breast) in groups receiving essential oils (T1, T2, and T3) was significantly higher than in the control group (C). The thyme and oregano oil diets showed no significant differences in antibody titers against Newcastle disease or interferon-γ (INF-γ) serum levels. In conclusion, thyme and oregano oils had a positive impact on the growth performance of broiler chickens but increased the incidence of growth-related breast muscle abnormalities.

Abstract
BACKGROUND Recently, interest in the use of herbs and phytogenic compounds has grown because of their potential role in the production and health of livestock animals. Among these compounds, several tannins have been tested in poultry, but those from chestnut wood and grape-industry byproducts have attracted remarkable interest. Thus, the present study aimed to gain further insights into the mechanisms involved in the response to the dietary supplementation with extracts of chestnut wood or grape pomace. To this purpose, 864 broiler chickens were fed a control diet (C) or the same diet supplemented 0.2% chestnut wood (CN) extract or 0.2% grape pomace (GP) extract from hatching until commercial slaughtering (at 45 days of age) to assess their effects on performance, meat quality, jejunum immune response and whole-transcriptome profiling in both sexes at different ages (15 and 35 d). RESULTS Final live weight and daily weight gain significantly increased (P < 0.01) in chickens fed GP diets compared to CN and C diets. The villi height was lower in chickens fed the CN diet than in those fed the C diet (P < 0.001); moreover, a lower density of CD45+ cells was observed in chickens fed the CN diet (P < 0.05) compared to those fed the C and GP diets. Genes involved in either pro- or anti-inflammatory response pathways, and antimicrobial and antioxidant responses were affected by GP and CN diets. There was no effect of the dietary treatment on meat quality. Regarding sex, in addition to a lower growth performance, females showed a lower occurrence of wooden breast (16.7% vs. 55.6%; P < 0.001) and a higher occurrence of spaghetti meat (48.6% vs. 4.17%; P < 0.001) in pectoralis major muscles after slaughtering than those in males. Based on the results of whole-transcriptome profiling, a significant activation of some molecular pathways related to immunity was observed in males compared with those of females. CONCLUSIONS The GP supplementation improved chicken performance and promoted immune responses in the intestinal mucosa; moreover, age and sex were associated with the most relevant transcriptional changes.

Abstract
1. Effects of the incidence of white striping (WS) in relation to carcass weights and yields, breast meat quality and composition, serum biochemistry and oxidant/antioxidant status of breast meat in broiler chickens were investigated. 2. The study consisted of 180, one-d-old male broiler chickens fed corn-soybean meal-based starter, grower, finisher and withdrawal diets identical to commercial chicken diets. On d 49, all the birds were slaughtered and breast fillets were visually scored for the incidence of WS. Breast meat and blood samples were collected and categorised based on the presence or absence of WS. 3. The study revealed greater slaughter weight, carcass and breast fillet weights and yields, lower pHu and higher cooking loss of breast meat with WS lesions (P<0.05). WS-affected breast fillets had greater fat and lower crude protein contents in comparison with normal meat (P<0.001). Serum creatine kinase levels were greater in broilers with WS (P=0.011), whereas oxidant/antioxidant status of breast meat remained unaffected. 4. Taken together, the presence of WS on breast muscle altered the quality and nutrient composition of breast fillets and serum creatine kinase levels in broiler chickens fed diets based on corn-soybean meal. Nevertheless, WS was more common in heavier broilers having higher breast weight and yield.

Abstract
Fast-growing broiler chickens are subjected to breast myopathies such as white striping (WS), wooden breast (WB), and spaghetti meat (SM). Available studies about risk factors for myopathy occurrence often used flock data whereas a few reports evaluated chicken individual data. Thus, the present study aimed to elucidate the effect of growth and slaughter traits, besides sex and genotype on myopathy occurrence. Data were obtained from eight experimental trials, which used a total of 6,036 broiler chickens. Sex, genotype, daily weight gain, slaughter weight, and breast yield were evaluated as potential risk factors by logistic regression analyses. Then, the effects of myopathy and sex were evaluated on meat rheological traits (pH, colour, cooking losses and shear force). Based on a logistic regression, WS occurrence was associated with genotype, breast weight, and breast yield. Compared with chickens with intermediate breast weight and breast yield, higher odds of having WS were found in chickens with high breast weight (OR: 1.49) and yield (OR: 1.27), whereas lower odds were found in those with low breast weight (OR: 0.57) and yield (OR: 0.82). As for WB and SM, females had lower odds of having WB (OR: 0.55) and higher odds of showing SM (OR: 15.4) compared to males. In males, higher odds of having WB were found in chickens with a high daily weight gain (OR: 1.75) compared to those with an intermediate daily weight gain. In females, higher odds of having SM were associated to a high slaughter weight (OR: 2.10) while lower odds to a low slaughter weight (OR: 0.87). As for meat quality, only WB meat was clearly different for some technological and sensorial properties, which can play a major role also in meat processing. In conclusion, our analysis identified breast development as a potential risk factor for WS, while a high growth was the risk factor for WB and SM. A different probability of having WB or SM in females and male was found.

Abstract
Breast anomalies in broilers, especially wooden breast (WB) and spaghetti meat (SM), cause high economic losses to the poultry meat sector. In order to identify the parameters that have a causal effect and to reduce the incidence of these myopathies, 141,792 broilers were analyzed in a total of 1477 batches using a visual grading system. The relationship among productive parameters such as the feed conversion ratio, live weight, growth rate, and mortality, was evaluated. Effects due to skin color (white vs. yellow), broiler sex (male, female, and mixed groups), feed presentation (grain vs. mash), and veterinary treatments (treated vs. untreated) were also included in the statistical study. Live weight was observed to have a significant effect (p < 0.001) on WB incidence, which increased by 1.11 for each 100 g of weight. Weight did not significantly affect the incidence of SM. Males had a higher incidence of WB and a lower incidence of SM than females. The incidence of both myopathies varied between samples that turned out to be significantly affected by some of the variables considered in the model, such as grain feeding and the feed conversion ratio. Controlling these factors in the broiler production could help to reduce the incidence of WB and SM.

Abstract
The aim of this study was to assess the occurrence of white striping (WS), wooden
breast (WB), and WS combined with WS/WB muscle abnormalities in broilers (Ross
500) at different slaughter ages (34, 41, and 48 d). In addition, the influence
of these muscle abnormalities at different slaughter ages on quality
characteristics (physical dimensions, pH, color index, and chemical composition)
was studied. Overall occurrence of muscle abnormalities was 45%,
92%, and 100% at slaughter ages of 34, 41, and 48 d, respectively.
It was found that about 39% from the occurrence of muscle abnormalities
was not similar in the same bird (left and right fillets). Breast fillets
affected by muscle abnormalities had significantly (p<0.05) higher weight
than normal fillets. At slaughter age of 34 d, normal fillets had significantly
higher L* (67.37 vs. 61.73 and 63.05, p<0.05), lower a* (3.25 vs. 4.87
and 5.18, p<0.05) and b* (4.02 vs. 5.20 and 5.99, p<0.05) than WS
and WS combined with WB fillets; respectively. The changes in chemical
composition due to muscle abnormalities were more significant at high slaughter
age than at low slaughter age. In conclusion, the occurrence of muscle
abnormalities was strongly influenced by slaughter age. Moreover, breast fillets
affected by muscle abnormalities had different quality characteristics
(proximate composition, color traits, and dimensions) in comparison to normal
fillets.

Abstract
Due to the increasing prevalence of growth-related myopathies and abnormalities in turkey meat, the ability to include meat quality traits in poultry breeding strategies is an issue of key importance. In the present study, genetic parameters for meat quality traits and their correlations with body weight and meat yield were estimated using a population of purebred male turkeys. Information on live body, breast, thigh, and drum weights, breast meat yield, feed conversion ratio, breast lightness (L*), redness (a*), and yellowness (b*), ultimate pH, and white striping (WS) severity score were collected on 11,986 toms from three purebred genetic lines. Heritability and genetic and partial phenotypic correlations were estimated for each trait using an animal model with genetic line, hatch week-year, and age at slaughter included as fixed effects. Heritability of ultimate pH was estimated to be 0.34 ± 0.05 and a range of 0.20 ± 0.02 to 0.23 ± 0.02 for breast meat colour (L*, a*, and b*). White striping was also estimated to be moderately heritable at 0.15 ± 0.02. Unfavorable genetic correlations were observed between body weight and meat quality traits as well as white striping, indicating that selection for increased body weight and meat yield may decrease pH and increase the incidence of pale meat with more severe white striping. The results of this analysis provide insight into the effect of current selection strategies on meat quality and emphasize the need to include meat quality traits into future selection indexes for turkeys.

Abstract
The aim of this study was to evaluate possible changes in the quality of chicken breast meat containing white stripes during freezing for 12 mo. Samples of Pectoralis major muscle from male Cobb 500 broilers containing white stripes in moderate and severe degrees were used, as well as samples from a control group (normal - absence of myopathies). Part of the samples (n = 60; n = 20 for each severity degree) were analyzed on the day of collection (beginning) and the rest (n = 240) was frozen (-20°C) for up to 12 mo. At the end of each proposed freezing period (3, 6, 9, and 12 mo), color, pH, water holding capacity, cooking loss, tenderness, lipid oxidation, chemical composition, cholesterol and collagen concentrations, myofibrillary fragmentation, and sarcomere length were analyzed. Microbiological analysis of samples was performed at the beginning and after 12 mo of freezing. Myopathy linked to freezing showed results of increased meat tenderness, with reduction of crude protein and mineral matter and increase of moisture, fat, and cholesterol, without affecting the meat's collagen percentages. However, these variations with the onset of myopathy do not compromise the consumption of broiled chicken breast meat, kept frozen for up to 12 mo.

Almost a decade ago, the sudden rise of breast muscle defects in fast-growing commercial broiler breeds challenged the broiler production industry and meat scientists to address the issue of these novel muscle abnormalities. After that, a widespread hypothesis showing a correlation between high muscle yield and incidence of these muscle myopathies got much acceptance from the research community. Increased muscle hypertrophy and unbalanced growth of connective tissues lead to an inadequate blood supply that ultimately causes hypoxia in muscle fibers. Reduced blood vascular density in muscle fibers induces oxidative stress and mitochondrial dysfunction, leading to muscle fibrosis, lipidosis and myodegeneration. Along with physical changes, the myopathic muscles exhibit poor sensory properties, abnormal texture properties and a low nutritional profile. As these myopathies alter meat’s physical appearance, they have a negative impact on customer’s behavior and preference. A better production environment with proper dietary supplementation with balanced breeding strategies can minimize the incidence of muscle myopathies in broiler chicken. This review aims to address the underlying mechanism behind these myopathies and their impact on poultry meat quality, including nutritional value and consumer behavior. It describes the link between genetic and non-genetic elements influencing myopathies, along with the strategies to minimize the occurrence of breast muscle myopathies.

Abstract
Environmental stressors can promote the vulnerability of animals to infections; it is therefore, essential to understand how stressors affect the immune system, the adaptive capacity of animals to respond, and effective techniques in managing stress. This review highlights scientific evidence regarding environmental stress challenge models and the potential effectiveness of vitamin supplementation. The major environmental stressors discussed are heat and cold stress, feed restriction, stocking density, and pollutants. Much work has been done to identify the effects of environmental stress in broilers and layers, while few involved other types of poultry. Studies indicated that chickens' performance, health, and welfare are compromised when challenged with environmental stress. These stressors result in physiological alterations, behavioral changes, decreased egg and meat quality, tissue and intestinal damage, and high mortalities. The application of vitamins with other nutritional approaches can help in combating these environmental stressors in chickens. Poultry birds do not synthesize sufficient vitamins during stressful periods. It is therefore suggested that chicken diets are supplemented with vitamins when subjected to environmental stress. Combination of vitamins are considered more efficient than the use of individual vitamins in alleviating environmental stress in chickens.

Abstract
Woody breast (WB) is a myopathy that is related to the increasing growth rate. Understanding the influence of management factors on WB formation and development is important to minimize WB. This study was conducted to define how management factors affect broiler growth performance, processing yield, and WB incidence. Ross × Ross 708 chicks were randomly assigned to a 3 (diet) × 2 (cocci challenge) × 2 (sex) factorial arrangement of treatments. The 3 dietary treatments were: control diet (corn-soybean meal basal diet), antibiotic diet (basal diet + 6.075 mg bacitracin /kg feed), and probiotic diet (basal diet + 2.2 × 108 CFU Bacillus subtilis PB6/kg feed). Birds in cocci challenge treatments received 20 × live cocci vaccine on d 14. The hardness of breast muscle in live birds was determined by palpation and grouped into Normal, Slight, Moderate, and Severe categories. Across diet and sex treatments, the cocci challenge resulted in decreases in body weight (BW) on d 29 and 35 (P < 0.0001 and = 0.032) in body weight gain (BWG) from d 14 to 29 (P < 0.0001). However, an increase of BW occurred on d 35 (P = 0.032) and an increase of BWG occurred from d 29 to 35 and d 35 to 43 (P = 0.0001 and 0.002), and the cocci challenge increased WB incidence on d 29 (P = 0.043) and d 43 (P = 0.013). Across challenge and sex treatments, birds fed the antibiotic diet exhibited a higher growth rate (GR) than those fed the control or probiotic diet from d 0 to 14 (P = 0.016), but not after d 14 (P > 0.05). Across sex, the antibiotic and probiotic diets increased WB incidence for those birds that did not receive a cocci challenge on d 43 (P = 0.040). Across challenge and diet treatments, males exhibited a higher BW, BWG, and GR throughout all growth phases, and males showed a higher WB incidence on d 29, 35, and 43 (P = 0.002, P < 0.0001, and P = 0.0002, respectively). In conclusion, bacitracin and Eimeria spp. increased WB incidence, BW, and GR. However, Bacillus subtilis increased WB incidence in male broilers without affecting BW and GR.

Abstract
A study was conducted to evaluate the effect of cyclic or chronic heat stress (HS) on the incidence and severity of white striping (WS) and histopathological changes in breast muscle of broiler chickens. One hundred eighty 1-day-old male chickens were randomly assigned to three research groups: control (standard temperature throughout the experiment), cyclic HS (32 ºC between 0800 and 2000 h from day 21 until the end of the experiment), and chronic HS (32 ºC from day 21 onwards). Cyclic and chronic HS groups showed a significant (P < 0.05) decrease in body weight gain and feed intake and poor feed conversion ratio in grower, finisher, and overall period. Serum biochemical profile was not different among the groups except globulin and P which were significantly higher (P < 0.05 and P < 0.001, respectively), in cyclic and chronic HS groups. Overall, WS incidence was numerically higher in control birds followed by chronic HS and cyclic HS birds, respectively. The chronic HS group had a lower incidence of mild (score 1) and a higher incidence of severe (score 2) WS lesions compared to control and cyclic HS groups. Histopathological analysis revealed that broilers subjected to chronic HS showed increased severity of myodegenerative changes, perivenular CD3 + cell infiltration, and lipidosis compared to control group. However, control and cyclic HS groups were not different in terms of histopathological lesions. In conclusion, this study confirms that cyclic or chronic HS may adversely affect the growth performance and that chronic HS may increase the severity of WS in broiler chickens.

Abstract
Muscle development during embryonic and early post-hatch growth is primarily through hyperplastic growth and accumulation of nuclei through satellite cell contribution. Post-hatch, muscle development transitions from hyperplasia to hypertrophic growth of muscle fibers. Commercial selection for breast yield traditionally occurs at ages targeting hypertrophic rather than hyperplastic growth. This has resulted in the production of giant fibers and concomitant challenges with regard to muscle myopathies. The current study investigates the impact of selection during the period of hyperplastic growth. It is hypothesized that selection for percentage breast yield during hyperplasia will result in an increased number of muscle cells at hatch and potentially impact muscle fiber characteristics at processing. This study characterizes the breast muscle histology of three broiler lines at various ages in the growth period. The lines include a random bred control (RAN) as well as lines which have been selected from RAN for high (HBY4) and low (LBY4) percentage 4-day breast yield. Post-rigor pectoralis major samples from six males of each line and age were collected and stored in formalin. The sample ages included embryonic day 18 (E18), post-hatch day 4 (d4), and day 56 (d56). The samples were processed using a Leica tissue processor, embedded in paraffin wax, sectioned, and placed on slides. Slides were stained using hematoxylin and eosin. E18 and d4 post-hatch analysis showed advanced muscle fiber formation for HBY4 and immature muscle development for LBY4 as compared to RAN. Post-hatch d56 samples were analyzed for fiber number, fiber diameter, endomysium, and perimysium spacing. Line HBY4 had the largest muscle fiber diameter (54.2 ± 0.96 μm) when compared to LBY4 (45.4 ± 0.96 μm). There was no line difference in endomysium spacing while perimysium spacing was higher for HBY4 males. Selection for percentage 4-day breast yield has impacted the rate and extent of muscle fiber formation in both the LBY4 and HBY4 lines with no negative impact on fiber spacing. The shift in processing age to later ages has exposed issues associated with muscle fiber viability. Selection during the period of muscle hyperplasia may impact growth rate; however, the potential benefits of additional satellite cells are still unclear.

Abstract
Selection for accelerated growth rate and high breast yield in broiler chickens have been associated with an increase in myopathies, including wooden breast (WB) and white striping (WS). To investigate effects of growth rate on carcass traits and incidence of myopathies, 14 strains were evaluated, encompassing 2 conventional (CONV; strains B and C: ADG0-48 > 60 g/d) and 12 slower-growing (SL) strains. The latter were categorized based on growth rate: FAST (strains F, G, I and M; ADG0-62=53-55 g/d), MOD (strains E, H, O and S; ADG0-62=50-51 g/d), and SLOW (strains D, J, K and N; ADG0-62<50 g/d). In a randomized incomplete block design, 7,216 mixed-sex birds were equally allocated into 164 pens (44 birds/pen; 30 kg/m2), with each strain represented in 8 to 12 pens over 2 to 3 production cycles. From each pen, 4 males and 4 females were processed at 2 Target Weights (TWs) based on their expected time to reach 2.1 kg BW (TW 1: 34 d for CONV; 48 d for SL strains) and 3.2 kg BW (TW 2: 48 d for CONV; 62 d for SL strains). Weights and yields for the carcass, breast, drumsticks, thighs, and wings were obtained; breast fillets were assessed to determine the presence and severity of WB and WS. At both TWs, breast yield was higher as growth rate increased (P < 0.001), with CONV having greater breast yield than other categories. Strain F had the greatest breast yield at both TWs (P < 0.001) within the FAST category. At TW 2, CONV had the greatest incidence of WB and WS (P < 0.001). However, within FAST, strain F had the greatest incidence of myopathies (P < 0.001) at both TWs, exhibiting values as high or as greater than CONV birds. The incidence of WB and WS in strains with differing growth rates but high breast meat yield suggests that the latter may play a major role in the occurrence of these myopathies.

Abstract
This study aimed to evaluate the relationship between early nutrition and the incidence of wooden breasts (WB) in broilers. Sixteen male and twenty female neonatal ROSS 308 broiler chicks were divided equally into four flocks. From 0–12 days of age, starter diet H, composed of 22.4% crude protein (CP), 6.6% crude fat (CF), 1.25% lysine, 0.48% methionine, and ≥3,070 kcal/kg metabolizable energy (ME), was fed to two flocks, and starter diet L, composed of 19.9% CP, 2.5% CF, 1.04% lysine, 0.38% methionine, and ≥2,930 kcal/kg ME, was fed to the remaining two flocks. All the flocks were fed the same commercial finisher diet, composed of 20.3% CP, 7.5% CF, 1.18% lysine, 0.44% methionine, and ≥3,300 kcal/kg ME, from 12–47 days of age. The birds were weighed every 2–5 days, subjected to a wing-lift test, and histology was conducted on the pectoralis major muscle tissue samples from all the birds necropsied at 47 days of age. Significant differences in the mean body weight between groups H and L were observed during 6–16 days and 24–26 days of age in males and during 6–26 days of age in females. Regarding the score evaluation of the individual lesions reflecting wooden breast, the birds in which back-to-back wing contact was not possible had higher lesion scores than those in which back-to-back wing contact was possible. The absence of back-to-back wing contact appeared more frequently in flocks fed the starter diet L, particularly in males. These results indicate that inappropriate nutrition levels in the starter diet increase the incidence of WB. Therefore, avoiding early nutrition deficits is a cost-effective feeding strategy.

Abstract
The present study aimed to find a blood marker for the prediction of wooden breast (WB) in live broiler to assist the genetic selection of fast-growing chickens. The experiments were carried out with two chicken flocks: 250 male broilers in flock 1 and 100 male and female broilers in flock 2. Both flocks were slaughtered and measured. The breast filets were assessed by combining subjective scoring and compression force at 28 (flock 1 only) and 42 days of age. The enzyme activity in serum and breast tissue (flock 1 only) of normal and affected groups was tested. The results showed that the compression force was significantly different between the normal and affected groups at 28 and 42 days of age (P < 0.001), and it increased significantly with rising WB and WS scores. The serum creatine kinase (CK) value increased significantly with rising compression force at 42 days of age (P < 0.001). The serum CK positively correlated with compression force (r = 0.608; P < 0.001) and the linear regression equation (serum CK = 0.9960∗compression force + 1.884) was established for the line studied. The association between serum CK and compression force is consistent between flocks 1 and 2. In conclusion, our study confirmed that compression force could be the quantitative indicator to differentiate breast filets and found that serum CK could be a candidate biomarker to predict WB in live broilers and assist genetic selection in broiler breeding.
