Abstract
Current electrochemical sensors in point-of-care (POC) testing devices rely mainly on enzyme-based sensors owing to superior sensitivity and selectivity. Nevertheless, the poor stability, high reagent cost, complex fabrication methods and requirement of specific operational conditions make their adaptability in real-world applications unfavorable. Non-enzymatic electrochemical sensors are thus developed as they are more robust and cost-effective strategies. The advancement in material science and nanotechnology enables the development of novel non-enzymatic electrodes with favorable analytical performance. However, the developments are yet far from being adopted as viable products. This review therefore aims to gain insight into the field and evaluate the current progress and challenges to eventually propose future research directions. Here, fabrication strategies based on traditional and emerging technology are discussed in the light of analytical performance and cost-effectiveness. Moreover, the discussion is given on the pros and cons of non-enzymatic sensors when they are employed with various kinds of sample matrices, i.e., clinical and non-clinical samples, which must be taken into consideration for sensor development. Furthermore, molecular imprinting technology in tackling the selectivity issue is introduced and current progress is provided. Finally, the promising strategies from literature for solving the remaining challenges are included which could facilitate further development of robust POC testing devices based non-enzymatic sensors. We believe that once researchers and technology developers have reached the point where most problems are solved, the non-enzymatic sensors are going to be the robust choice for POC testing in clinical diagnostic, ensuring food safety, monitoring contaminants in environment, and bioprocess control.

Abstract
Food fraud is widespread nowadays in the food products supply chain, from raw materials processing to the final product and during storage and transport. The most frequent fraud is practiced in staple food commodities like cereals. Their origin, variety, genotype, and bioactive compounds are altered to deceive consumers. Similarly, in various food sectors like beverage, baking, and confectionary, items like melamine, flour improver, and food colors are used in the market to temple consumers. To tackle food fraud and authentication, non-destructive techniques are being used. These techniques have limitations like lack of standardization, interference from multiple absorbing species, ambiguous results, and time-consuming to perform, depending on the type, size, and location of the system proved difficult to quantify the samples of adulteration. Chromatography has been introduced as an effective technique. It serves to safeguard public health due to its detection capabilities. Chromatography proved a crucial tool against fraudulent practices to preserve consumer trust.

Abstract
The present review addresses the significance of lowering pesticide residue levels in food items because of their harmful impacts on human health, wildlife populations, and the environment. It draws attention to the possible health risks-acute and chronic poisoning, cancer, unfavorable effects on reproduction, and harm to the brain or immunological systems-that come with pesticide exposure. Numerous traditional and cutting-edge methods, such as washing, blanching, peeling, thermal treatments, alkaline electrolyzed water washing, cold plasma, ultrasonic cleaning, ozone treatment, and enzymatic treatment, have been proposed to reduce pesticide residues in food products. It highlights the necessity of a paradigm change in crop protection and agri-food production on a global scale. It offers opportunities to guarantee food safety through the mitigation of pesticide residues in food. The review concludes that the first step in reducing worries about the negative effects of pesticides is to implement regulatory measures to regulate their use. In order to lower the exposure to dietary pesticides, the present review also emphasizes the significance of precision agricultural practices and integrated pest management techniques. The advanced approaches covered in this review present viable options along with traditional methods and possess the potential to lower pesticide residues in food items without sacrificing quality. It can be concluded from the present review that a paradigm shift towards sustainable agriculture and food production is essential to minimize pesticide residues in food, safeguarding human health, wildlife populations, and the environment. Furthermore, there is a need to refine the conventional methods of pesticide removal from food items along with the development of modern techniques.

Abstract
Ochratoxin A (OTA) is a toxic pollutant in foods, and its actual detection is crucial. A novel and sensitive dual signaling ratiometric electrochemical aptasensor based on nanoporous gold (NPG) was proposed to determine OTA. NPG, with high specific surface area and conductivity, improved the sensitivity by immobilizing more aptamers. Meanwhile, the dual signaling ratiometric strategy improved the detection reproducibility through self-referencing and built-in correction. NPG and ratiometric strategy multi-amplified the dual signal changes. The sensitivity of OTA was evaluated by the ratio of methylene to ferrocene current values. Under the optimal conditions, the NPG-based aptasensor demonstrated excellent sensitivity with a wide linear range of 1 pg/mL to 2 ng/mL and the limit of detection (LOD) of 0.4 pg/mL for OTA. This developed aptasensor also effectively detected OTA in spiked Cordyceps sinensis and grape juice samples, with recovery values falling in the 98.49-108.0% range.

Abstract
In this study, a proper and reliable fluorometric method is introduced for screening acetylcholinesterase (AChE) and its inhibitors, using carbon quantum dots (CQDs) as the signal reporter. Pure, S-doped, and P-doped CQDs, were synthesized and their recoverable fluorescence quenching properties were observed, when exposed to Hg2+, Cu2+, and Fe3+ quenching ions, respectively. The study on the recovery of their emission showed that after the introduction of another guest substance with a stronger affinity to the quenching ions, their fluorescence is restored. The Design Expert software was employed to compare the performance of the three CQDs, as fluorescent probes, based on their quenching efficiency and the percentage of their emission recovery in the presence of AChE and acetylthiocholine (ATCh). Based on the statistical analysis, among the studied CQDs, S-doped CQD was the most suitable candidate for sensor designing. The detection mechanism for the proposed S-doped CQD-based sensor is as follows: The strong binding of Cu2+ ions to carboxyl groups of S-doped CQD quenches the fluorescence signal. Then, hydrolysis of ATCh into thiocholine (TCh) in the presence of AChE causes fluorescence recovery, due to the stronger affinity of Cu2+ to the TCh, rather than the CQD. Finally, in the presence of malathion and chlorpyrifos inhibitors, AChE loses its ability to hydrolyze ATCh to TCh, so the fluorescence emission remains quenched. Based on the proposed detection technique, the designed sensor showed detection limits of 1.70 ppb and 1.50 ppb for malathion and chlorpyrifos, respectively.

Abstract
Aggregates often exhibit modified or completely new properties compared with their molecular elements, making them an extraordinarily advantageous form of materials. The fluorescence signal change characteristics resulting from molecular aggregation endow aggregates with high sensitivity and broad applicability. In molecular aggregates, the photoluminescence properties at the molecular level can be annihilated or elevated, leading to aggregation-causing quenching (ACQ) or aggregation-induced emission (AIE) effects. This change in photoluminescence properties can be intelligently introduced in food hazard detection. Recognition units can combine with the aggregate-based sensor by joining the aggregation process, endowing the sensor with the high specificity of analytes (such as mycotoxins, pathogens, and complex organic molecules). In this review, aggregation mechanisms, structural characteristics of fluorescent materials (including ACQ/AIE-activated), and their applications in food hazard detection (with/without recognition units) are summarized. Because the design of aggregate-based sensors may be influenced by the properties of their components, the sensing mechanisms of different fluorescent materials were described separately. Details of fluorescent materials, including conventional organic dyes, carbon nanomaterials, quantum dots, polymers and polymer-based nanostructures and metal nanoclusters, and recognition units, such as aptamer, antibody, molecular imprinting, and host-guest recognition, are discussed. In addition, future trends of developing aggregate-based fluorescence sensing technology in monitoring food hazards are also proposed.

Abstract
The present article critically and comprehensively reviews the most recent reports on smart sensors for determining glyphosate (GLP), an active agent of GLP-based herbicides (GBHs) traditionally used in agriculture over the past decades. Commercialized in 1974, GBHs have now reached 350 million hectares of crops in over 140 countries with an annual turnover of 11 billion USD worldwide. However, rolling exploitation of GLP and GBHs in the last decades has led to environmental pollution, animal intoxication, bacterial resistance, and sustained occupational exposure of the herbicide of farm and companies' workers. Intoxication with these herbicides dysregulates the microbiome-gut-brain axis, cholinergic neurotransmission, and endocrine system, causing paralytic ileus, hyperkalemia, oliguria, pulmonary edema, and cardiogenic shock. Precision agriculture, i.e., an (information technology)-enhanced approach to crop management, including a site-specific determination of agrochemicals, derives from the benefits of smart materials (SMs), data science, and nanosensors. Those typically feature fluorescent molecularly imprinted polymers or immunochemical aptamer artificial receptors integrated with electrochemical transducers. Fabricated as portable or wearable lab-on-chips, smartphones, and soft robotics and connected with SM-based devices that provide machine learning algorithms and online databases, they integrate, process, analyze, and interpret massive amounts of spatiotemporal data in a user-friendly and decision-making manner. Exploited for the ultrasensitive determination of toxins, including GLP, they will become practical tools in farmlands and point-of-care testing. Expectedly, smart sensors can be used for personalized diagnostics, real-time water, food, soil, and air quality monitoring, site-specific herbicide management, and crop control.

Abstract
Multifunctional electrospun nanofibers (ENs) with improved properties have increased attention nowadays. Their insoluble forms in water with decreased hydrophobicity are desired for the immobilization of biological molecules. Also, the addition of functional groups on the backbone provides the conjugation of biomolecules onto the surface of ENs via covalent bonds to increase their stability. Here, poly(vinylidene fluoride) (PVDF) was chosen to prepare a platform, which is insoluble in water, and polyethylenimine (PEI) was used to add amine groups on the surface of ENs to bind biological molecules via covalent conjugation. So, PVDF-PEI nanofibers were prepared on a glassy carbon electrode to immobilize an antimethamphetamine antibody (Anti-METH) as a model biomolecule. The obtained PVDF-PEI/Anti-METH was used for the bioelectrochemical detection of methamphetamine (METH), a common illicit drug. Bioelectrochemical detection of METH on PVDF-PEI/Anti-METH-coated electrodes was carried out by voltammetry in the range of 2.0-50 ng/mL METH. Moreover, the effect of dansyl chloride (DNC) derivatization of METH on the sensitivity of PVDF-PEI/Anti-METH was tested. Finally, METH analysis was carried out in synthetic body fluids. The obtained results showed that PVDF-PEI ENs can be adopted as an immobilization matrix for the biorecognition elements of biobased detection systems, and the derivative of METH (METH-DNC) increased the sensitivity of PVDF-PEI/Anti-METH.

Abstract
A new method of producing butyrylcholinesterase (BChE) preparations, stable in storage and use, has been proposed. The BChE preparation is the enzyme co-immobilized with 0.2 M 5-5′-dithiobis (2-nitrobenzoic acid) in starch or gelatin gel. All experimental preparations retain enzyme activity for at least 300 d. The preparations based on gelatin gel show higher activity but lower sensitivity to the toxicants tested in this study compared to the starch gel-based preparations. A method has been proposed for integrated detection of anti-cholinesterase substances in aqueous solutions using the experimental preparation with immobilized BChE. After the additional incubation of the preparation with the immobilized enzyme in the solution of the analyte, the detection limits of malathion and pirimiphos-methyl determined using the IC20 values were below their maximum allowable concentrations—0.005 µM and 0.03 µM, respectively.

Abstract
The presence of pyrethroids in food and the environment due to their excessive use and extensive application in the agriculture industry represents a significant threat to public health. Therefore, the determination of the presence of pyrethroids in foods by simple, rapid, and sensitive methods is warranted. Herein, recognition methods for pyrethroids based on electrochemical and optical biosensors from the last five years are reviewed, including surface-enhanced Raman scattering (SERS), surface plasmon resonance (SPR), chemiluminescence, biochemical, fluorescence, and colorimetric methods. In addition, recognition elements used for pyrethroid detection, including enzymes, antigens/antibodies, aptamers, and molecular-imprinted polymers, are classified and discussed based on the bioreceptor types. The current research status, the advantages and disadvantages of existing methods, and future development trends are discussed. The research progress of rapid pyrethroid detection in our laboratory is also presented.

Abstract
In this work, a redox-graphene (Rx-Gr) film with electron-mediating ability has been integrated into a modular flexible pocket device, giving rise to a reusable biosensing platform. The Rx-Gr has been obtained in water from graphite taking advantage of catechin, a redox-antioxidant, able to assist the sonochemical layered-material exfoliation, conferring electron mediating feature. A film composed exclusively of Rx-Gr has been transferred via thermal rolling onto a flexible PET-support that was used as the biosensor base. The biosensing platform, composed of office-grade materials, was then fabricated using a cutter-plotter and assembled by thermal lamination; an interchangeable paper-based strip was used to host the enzymatic reaction and drive the capillary flow. An acetylcholinesterase-based inhibition assay has been optimized onboard the pocket device to determine chlorpyriphos, a widespread environmental pesticide. The proposed set-up allows the determination of chlorpyriphos at low overpotential (0.2 V) with satisfactory sensitivity (LOD = 0.2 ppb), thanks to the straightforward electroactivity of the Rx-Gr film towards thiocholine (enzymatic product). The modular design allows 5 consecutive complete inhibition assays (control + inhibition measure) retaining the performance (RSD = 5.4%; n = 5). The coupling of bench-top technologies and a new functional graphene film resulted in the development of a cost-effective, reusable, transportable, and within everyone's reach biosensing platform.

Abstract
Organophosphorus pesticides (OPPs) cause great risk to human health as they are used globally. Therefore, the purpose of this research was to determine the total phenolics, flavonoids, and antioxidant activity of agricultural waste, as well as to control the pesticide residues (diazinon, and parathion) at a laboratory scale level using dried-milled fruit wastes. The pesticide residues parathion and diazinon were used at concentrations of 0.094, and 1.90 mg/mL respectively. The fruit wastes used in this study were orange and banana peels, as well as date stones, and they were used in two concentrations (3 and 9 g/30 mL deionized water). The total phenolic and flavonoid contents and the antioxidant activity were measured in fruit wastes. Also, the Fourier transmitted infrared (FTIR) spectra of fruit wastes were established to figure out the nature of the functional groups found before and after pesticide residues removal. The ability of fruit wastes to remove pesticides residues was determined using Gas Chromatography/Mass spectrometry (GC/MS). Data showed that date stones contained a higher amount of total phenolic content than orange and banana peels. However, orange peels contained a higher amount of total flavonoid contents than those of date stones and banana peels. As for antioxidant activity, banana peels recorded the higher antioxidant activity, followed by orange peels and date stones respectively. Results revealed that there was no relation between total phenolic content, total flavonoid content, and antioxidant activity. Results also indicated that date stones at a concentration of 9 g successfully reduced diazinon (81.18%), followed by banana (63.86%) and orange peels (43.42%) respectively, whereas parathion was reduced by banana peels at a concentration of 9 g (50.34%), followed by orange peels (45.28%), and date stones (39.52%) respectively. This study demonstrated that agricultural wastes were effective in the adsorption of diazinon from water, and their use is considered safe for the environment. Date stones successfully reduced diazinon by 81.18%, whereas banana peels effectively reduced parathion by 50.34%. FTIR spectra of fruit wastes displaced severeal peaks. Date stones contained a higher amount of total phenolic content. Orange peels contained a higher amount of total flavonoid contents. Banana peels recorded the higher antioxidant activity.

Abstract
Food safety is the prime area of concern that builds trust. With the prevailing advancements, it has become facile to ensure safety in almost all aspects. Technology has grown from tedious lab techniques to modern chromatographic techniques and immunoassays, progressed with more precise and rapid sensing through the advent of Biosensors. Biosensors provide an automated technology by presenting superfast, nondestructive and cost-effective detection in food analysis. SPR biosensor is an optical biosensor known for its versatility and has wider applications in food testing and analysis. It has an optical system for excitation and interrogation of surface plasmons, and a biomolecular recognition element to detect and seize the target analyte present in a sample. The optical signal detects the binding analyte, on the recognition element, which results in a change in refractive index at the surface and modifies the surface plasmons' propagation constant. SPR aids in label-free detection of various components such as adulterants, antibiotics, biomolecules, genetically modified foods, pesticides, insecticides, herbicides, microorganisms and microbial toxins in food and assures safety. The distinct advancements of SPR in food analysis have been found and discussed. The review also provides knowledge on the advantages and the key challenges encountered by SPR.

Abstract
Detection of relevant contaminants using screening approaches is a key issue to ensure food safety and respect for the regulatory limits established. Electrochemical sensors present several advantages such as rapidity; ease of use; possibility of on-site analysis and low cost. The lack of selectivity for electrochemical sensors working in complex samples as food may be overcome by coupling them with molecularly imprinted polymers (MIPs). MIPs are synthetic materials that mimic biological receptors and are produced by the polymerization of functional monomers in presence of a target analyte. This paper critically reviews and discusses the recent progress in MIP-based electrochemical sensors for food safety. A brief introduction on MIPs and electrochemical sensors is given; followed by a discussion of the recent achievements for various MIPs-based electrochemical sensors for food contaminants analysis. Both electropolymerization and chemical synthesis of MIP-based electrochemical sensing are discussed as well as the relevant applications of MIPs used in sample preparation and then coupled to electrochemical analysis. Future perspectives and challenges have been eventually given.

Abstract
Pesticides are commonly used in agriculture to enhance crop production and control pests. Therefore, pesticide residues can persist in the environment and agricultural crops. Although modern formulations are relatively safe to non-target species, numerous theoretical and experimental data demonstrate that pesticide residues can produce long-term negative effects on the health of humans and animals and stability of ecosystems. Of particular interest are molecular mechanisms that mediate the start of a cascade of adverse effects. This is a review of the latest literature data on the effects and consequences of contamination of agricultural crops by pesticide residues. In addition, we address the issue of implicit risks associated with pesticide formulations. The effects of pesticides are considered in the context of the Adverse Outcome Pathway concept.

Abstract
Malathion is one of the most commonly used organophosphorus pesticides that can cause serious harm to the ecological environment and human health. Herein, we demonstrated a label-free chemiluminescent aptasensor for the sensitive detection of malathion based on exonuclease-assisted dual signal amplification and G-quadruplex/hemin DNAzyme. Upon the addition of malathion, the aptamer probe specifically bound to the target to form a complex malathion-S3, leaving a duplex S1-S2. The complex malathion-S3 was digested by exonuclease I and the target was released. The released target was recycled to perform exonuclease I-assisted signal amplification. Furthermore, after treatment with exonuclease III, the duplex S1-S2 was converted into the secondary target ST. The secondary target ST interacted with the hairpin H1 to form a complex H1-ST, which was further digested by exonuclease III and released the secondary target. The released secondary target was recycled to perform exonuclease III-assisted signal amplification. After complete amplification, large numbers of G-quadruplex/hemin DNAzymes were generated. Under the optimal experimental conditions, the prepared aptasensor showed an excellent linear response to malathion with a detection limit of 0.47 pM. The relative standard deviations were in the range of 4.2-6.9%. Moreover, the aptasensor was successfully applied to detect malathion in spiked food and traditional Chinese medicine samples.

Abstract
Pesticides have been extensively used in agriculture to protect crops and enhance their yields, indicating the need to monitor for their toxic residues in foodstuff. To achieve that, chromatographic methods coupled to mass spectrometry is the common analytical approach, combining low limits of detection, wide linear ranges, and high accuracy. However, these methods are also quite expensive, time-consuming, and require highly skilled personnel, indicating the need to seek for alternatives providing simple, low-cost, rapid, and on-site results. In this study, we critically review the available screening methods for pesticide residues on the basis of optical detection during the period 2016-2020. Optical biosensors are commonly miniaturized analytical platforms introducing the point-of-care (POC) era in the field. Various optical detection principles have been utilized, namely, colorimetry, fluorescence (FL), surface plasmon resonance (SPR), and surface enhanced Raman spectroscopy (SERS). Nanomaterials can significantly enhance optical detection performance and handheld platforms, for example, handheld SERS devices can revolutionize testing. The hyphenation of optical assays to smartphones is also underlined as it enables unprecedented features such as one-click results using smartphone apps or online result communication. All in all, despite being in an early stage facing several challenges, i.e., long sample preparation protocols or interphone variation results, such POC diagnostics pave a new road into the food safety field in which analysis cost will be reduced and a more intensive testing will be achieved.

Abstract
Despite the fact that a considerable amount of effort has been invested in the development of biosensors for the detection of pesticides, there is still a lack of a simple and low-cost platform that can reliably and sensitively detect their presence in real samples. Herein, an enzyme-based biosensor for the determination of both carbamate and organophosphorus pesticides is presented that is based on acetylcholinesterase (AChE) immobilized on commercially available screen-printed carbon electrodes (SPEs) modified with carbon black (CB), as a means to enhance their conductivity. Most interestingly, two different methodologies to deposit the enzyme onto the sensor surfaces were followed; strikingly different results were obtained depending on the family of pesticides under investigation. Furthermore, and towards the uniform application of the functionalization layer onto the SPEs’ surfaces, the laser induced forward transfer (LIFT) technique was employed in conjunction with CB functionalization, which allowed a considerable improvement of the sensor’s performance. Under the optimized conditions, the fabricated sensors can effectively detect carbofuran in a linear range from 1.1 × 10−9 to 2.3 × 10−8 mol/L, with a limit of detection equal to 0.6 × 10−9 mol/L and chlorpyrifos in a linear range from 0.7 × 10−9 up to 1.4 × 10−8 mol/L and a limit of detection 0.4 × 10−9 mol/L in buffer. The developed biosensor was also interrogated with olive oil samples, and was able to detect both pesticides at concentrations below 10 ppb, which is the maximum residue limit permitted by the European Food Safety Authority.

Abstract
Few studies have analyzed the mechanisms of how environmental labels influence consumers’ perception and consequent behavior. The present study puts forth specific questions of how pesticide-free products should be promoted through product labels. Data were collected via controlled experimentation. The results demonstrate that pesticide-free labels with specific information on the harmful effects of pesticides have a more positive impact on perceived value and purchase intention relative to pesticide-free labels with a general description of the harmful effects of pesticides. The results also show that the positive effects of promoting the absence of pesticides through product labels on perceived quality, perceived value, and purchase intention are stronger among individuals who are high in environmental attitude and familiarity with pesticides. Policymakers, producers, and retailers could use these findings for better decision-making.

Abstract
Detection and monitoring of volatiles is a challenging and fascinating issue in environmental analysis, agriculture and food quality, process control in industry, as well as in 'point of care' diagnostics. Gas chromatographic approaches remain the reference method for the analysis of volatile organic compounds (VOCs); however, gas sensors (GSs), with their advantages of low cost and no or very little sample preparation, have become a reality. Gas sensors can be used singularly or in array format (e.g., e-noses); coupling data output with multivariate statical treatment allows un-target analysis of samples headspace. Within this frame, the use of new binding elements as recognition/interaction elements in gas sensing is a challenging hot-topic that allowed unexpected advancement. In this review, the latest development of gas sensors and gas sensor arrays, realized using peptides, molecularly imprinted polymers and DNA is reported. This work is focused on the description of the strategies used for the GSs development, the sensing elements function, the sensors array set-up, and the application in real cases.

Abstract
The excessive use or abuse of pesticides and veterinary drugs leads to residues in food, which can threaten human health. Therefore, there is an extremely urgent need for multi-analyte analysis techniques for the detection of pesticide and veterinary drug residues, which can be applied as screening techniques for food safety monitoring and detection. Recent developments related to rapid multi-residue detection methods for pesticide and veterinary drug residues are reviewed herein. Methods based on different recognition elements or the inherent characteristics of pesticides and veterinary drugs are described in detail. The preparation and application of three broadly specific recognition elements-antibodies, aptamers, and molecular imprinted polymers-are summarized. Furthermore, enzymatic inhibition-based sensors, near-infrared spectroscopy, and SERS spectroscopy based on the inherent characteristics are also discussed. The aim of this review is to provide a useful reference for the further development of rapid multi-analyte analysis of pesticide and veterinary drug residues.

Abstract
In this paper, we report the development of a rapid and simple, liquid crystal (LC)-based aptasensor that enables the detection of malathion (MA) using the orientation properties of liquid crystals. This sensor is composed of aptamers immobilized on a surface decorated with a self-assembled monolayer of (3-glycidyloxypropyl)trimethoxysilane (GOPS) and dimethyloctadecyl[3-(trimethoxysilyl)propyl]ammonium chloride (DMOAP). When MA interacts with the immobilized aptamers, an orientational change in the LCs, from homeotropic to random, is induced. This orientational change generates visible optical responses observed as shifts from dark to bright images under a polarized optical microscope (POM). This sensing system has a linear detection range from 0.8 to 50 pM, with a correlation coefficient of 0.9922, and a limit of detection (LOD) of 2.5 pM (≈0.826 pg/mL). Our proposed aptasensor has good specificity and sensitivity to MA in tap water and soil. Moreover, this sensor suggests a promising strategy for simple, rapid testing for various insecticide residues.

Abstract
The performances of a quartz crystal microbalances (QCMs) based on an electronic nose (E-nose), modified with hairpin-DNA (hpDNA) for carrot aroma profiling has been evaluated. Solid phase micro-extraction (SPME) headspace sampling, combined with gas chromatography (GC), was used as a reference method. The changes in carrot aroma profiles stored at different temperatures (−18 °C, 4 °C, 25 °C, and 40 °C) were monitored during time up to 26 days. The principal component analysis of the data evidenced the different aroma patterns related to the presence of different key compounds. The output data achieved with the hpDNA-based E-nose were able to detect aroma patterns similar to gas chromatography with mass spectrometry (GC-MS). This work demonstrates that hpDNA has different sizes of loops that can be used for the development of sensor arrays able to detect aroma patterns in food and their changes with advantages in terms of easiness of usage, rapidity, and cost of analysis versus classical methods.

Abstract
The possibility of using an electrochemical biosensor, using screen-printed electrodes modified with a carbonaceous material and a commercial kit for the determination of glucose, to monitor an ethanolic fermentation was analyzed. The determination is based on the electrochemical oxidation reaction of NADH that occurs at a potential where the components of the kit do not generate a current signal, even in the presence of the fermentation medium. The electrochemical system was used to analyze the variation of glucose concentration during a laboratory-scale fermentation. The results were contrasted with the variation of standard characterization parameters such as pH, total soluble solids (TSS), the viability of the yeast, and concentration of ethanol produced. Of these values, the total soluble solids should be related to the concentration of glucose obtained by the electrochemical sensor, however, this last measure is more specific for sugar since the TSS refers to all soluble solids. The obtained results allow us to verify the usefulness of the electrochemical method for real-time monitoring of a fermentation.

Abstract
Pesticides, due to their intensive use and their peculiar chemical features, can persist in the environment and enter the trophic chain, thus representing an environmental risk for the ecosystems and human health. Although there are several robust and reliable standard analytical techniques for their monitoring, the high frequency of contamination caused by pesticides requires methods for massive monitoring campaigns that are capable of rapidly detecting these compounds in many samples of different origin. Immunosensors represent a potential tool for simple, rapid, and sensitive monitoring of pesticides. Antibodies coupled to electrochemical or optical transducers have resulted in effective detection devices. In this review, the new trends in immunosensor development and the application of immunosensors for the detection of pesticides of environmental concern-such as glyphosate, organophosphates, and neonicotinoids-are described.

Abstract
A simple colorimetric assay for sugars (monosaccharides, polyols and disaccharides) quantification based on silver nanoparticles (AgNPs) formation is proposed. Sugars are able to form AgNPs reducing Ag+ and stabilizing the suspension. Since the driving force is not only chemical reduction, the optimized assay allows the determination of both "reducing" and "non-reducing" sugars with similar reactivity. The localized surface plasmon resonance (LSPR) absorption band with maximum wavelength centered at ≈ 430 nm (A430) is used for the detection. Monosaccharides, disaccharides and polyols with different functional groups and structure have been investigated: D-(+)-glucose, D-(+)-galactose, D-(-)-fructose, sucrose, D-(+)-raffinose D-(+)-maltose, D-(+)-trehalose, D-mannitol, D-sorbitol, i-inositol, xylitol and D-(+)-xylose. The resulting AgNPs have been characterized by UV-Vis spectroscopy, dynamic light scattering (DLS) and transmission electron microscopy (TEM). The reactivity of monomers and polyols was found higher than the disaccharides. The AgNPs-based method was applied to the determination of the sugars content in soft drinks (n = 6) and apple extracts (n = 5). Sugars content (expressed as glucose equivalents) determined by the proposed assay resulted comparable to results obtained by ion chromatography (R = 0.994). Reproducibility (RSD ≤ 9.4%) and recovery values (from 86.1% to 117.7%) in food matrices were satisfactory. Moreover, the assay is selective vs. potentially interfering compounds found in food. Considering the assay time (10 min), the low cost of reagents, limited volumes of sample (5-100 μL), no use of organic solvents and low waste generation, this assay appears very promising for sugars content determination.
