Abstract
In this research, a method was developed for fabricating Au-Au nanorod array substrates through the deposition of large-area Au nanostructures on an Au nanorod array using a galvanic cell reaction. The incorporation of a granular structure enhanced both the number and intensity of surface-enhanced Raman scattering (SERS) hot spots on the substrate, thereby elevating the SERS performance beyond that of substrates composed solely of an Au nanorod. Calculations using the finite difference time domain method confirmed the generation of a strong electromagnetic field around the nanoparticles. Motivated by the electromotive force, Au ions in the chloroauric acid solution were reduced to form nanostructures on the nanorod array. The size and distribution density of these granular nanostructures could be modulated by varying the reaction time and the concentration of chloroauric acid. The resulting Au-Au nanorod array substrate exhibited an active, uniform, and reproducible SERS effect. With 1,2-bis(4-pyridyl)ethylene as the probe molecule, the detection sensitivity of the Au-Au nanorod array substrate was enhanced to 10-11 M, improving by five orders of magnitude over the substrate consisting only of an Au nanorod array. For a practical application, this substrate was utilized for the detection of pesticides, including thiram, thiabendazole, carbendazim, and phosmet, within the concentration range of 10-4 to 5 × 10-7 M. An analytical model combining a random forest and a one-dimensional convolutional neural network, referring to the important variable-one-dimensional convolutional neural network model, was developed for the precise identification of thiram. This approach demonstrated significant potential for biochemical sensing and rapid on-site identification.

Abstract
Pesticides that linger in the environment and ecosystems for an extended period can cause severe and dangerous health problems in humans. To detect pesticides in foods, the development of high-sensitivity and quick screening technologies was required. This research investigated the performance of Au@Ag NPs with varying thicknesses of the silver shell for detecting trace quantities of thiabendazole (TBZ) in apples using surface-enhanced Raman spectroscopy (SERS). The Au@Ag NPs were synthesized by coating 32 nm gold seeds with different thicknesses of silver shell ranging from 2.4 to 8.7 nm, achieved by adjusting the incorporation of AgNO3 and ascorbic acid. The optimized Au@Ag NPs with a 7.3 nm silver shell demonstrated outstanding SERS activity, high sensitivity, and a detection limit of 0.05 μg/mL for TBZ. The R2 values, representing the goodness of fit, were found to be 0.990 and 0.986 for standard and real TBZ samples, respectively, indicating a strong correlation between the measured signal and the TBZ concentration. The recovery analysis showed a reliable and accurate detection capability (96 to 105%), suggesting good reliability and accuracy of the SERS-based detection using the optimal Au@Ag NPs. Overall, this research highlights the potential of SERS with optimal Au@Ag NPs for rapid and effective monitoring of pesticides in the food industry.

Abstract
The conformational landscape of thioglycolic acid (TGA) was investigated by using the CCSD/cc-pVTZ level of theory. The GGC conformer was identified as the global minimum, followed by the GAC conformer. The calculated rotational constant for the GGC conformer exhibited good agreement with the previously reported experimental results. Subsequently, the study delved into the exploration of sulfur-centered hydrogen bonding in TGA's dimer and trimer clusters, employing the CCSD/cc-pVDZ level of theory. These clusters revealed the participation of both oxygen and sulfur atoms in noncovalent H-bonding, contributing to their stability. The presence of these noncovalent interactions in TGA clusters was elucidated through Atoms in Molecule (AIM), reduced density gradient (RDG), and natural bond order (NBO) analysis, while electrostatic potential (ESP) charge and vibrational mode analysis further supported these findings.

Abstract
Cyromazine, when used as an insect growth regulator and low-toxicity insecticide, may degrade into melamine and pose a potential threat to the environment and soil health, which has thus attracted extensive research on eliminating such a harmful effect. In this paper, density functional theory (DFT)/LC-BLYP/6-311G(d,p) is used to optimize the geometric structure and analyze the vibration of cyromazine. The DFT/LC-BLYP/def2-SVP is used for the cyromazine-Au complex optimization and vibration analysis. The molecular electrostatic potential (MEP), frontier molecular orbitals (FMOs), vibration frequency, electrophilicity-based charge transfer (ECT) descriptor, binding energy (BE), polarizability, normal Raman spectroscopy (NRS), and surface-enhanced Raman spectroscopy (SERS) of cyromazine adsorbing on Au6 and Au20 are calculated. The study of the chemical enhancement mechanism of SERS of cyromazine at different adsorption sites of Au6 or Au20 confirms the existence of a charge transfer between cyclopromazine and Au6 and Au20, which can adsorb and form stable cyromazine-Au complexes. The results show that N2, H13, and N4 are the adsorption sites of Au6 and Au20. The Raman spectra of the cyromazine-Au complex can be selectively enhanced with a factor up to 9.07. Compared with those of cyromazine-Au6, the Raman spectra of cyromazine-Au20 are enhanced more significantly.

Abstract
Thiabendazole (TBZ) is a fungicide and anthelmintic drug commonly found in food products. Due to its toxicity and potential carcinogenicity, its determination in various samples is important for public health. Different analytical methods can be used to determine the presence and concentration of TBZ in samples. Liquid chromatography (LC) and its subtypes, high-performance liquid chromatography (HPLC) and ultra-high-performance liquid chromatography (UHPLC), are the most commonly used methods for TBZ determination representing 19%, 18%, and 18% of the described methods, respectively. Surface-enhanced Raman spectroscopy (SERS) and fluorimetry are two more methods widely used for TBZ determination, representing 13% and 12% of the described methods, respectively. In this review, a number of methods for TBZ determination are described, but due to their limitations, there is a high potential for the further improvement and development of each method in order to obtain a simple, precise, and accurate method that can be used for routine analysis.

Abstract
Fabricating more sensitive, stable and low-cost nanomaterials for the detection of glucose is important for the disease diagnosis and monitoring. Herein, we established a nanocomposite (polypyrrole bridging GO@Au@MnO2) as a novel surface-enhanced Raman scattering (SERS) nanoprobe for the quantitative detection of glucose in trace serum. Each component in the nanocomposites played an irreplaceable role in SERS detection of glucose. Polypyrrole (PPy) could act as Raman signal and extra SERS signal molecules didn't need to be introduced; Graphene oxide (GO) and gold nanoparticles (Au NPs) could enhance Raman signal of PPy; Au NPs also acted as glucose oxidase, which can oxidize glucose to produce gluconic acid and hydrogen peroxide(H2O2); Manganese oxide (MnO2) further enhanced Raman signal of PPy and responded to hydrogen peroxide, which will induce the decrease of Raman intensity of PPy. Thus, glucose can be quantified according to Raman signal output of PPy, which displayed a liner range from 1 to 10 μM, with detectable limit of 0.114 μM. Because of the merits in sensitivity, convenience and versatility, the novel method shows large potential space for disease-related substance detection in the future.

Abstract
Pesticides play an important role in increasing the overall yield and productivity of agricultural foods by controlling pests, insects, and numerous plant-related diseases. However, the overuse of pesticides has resulted in pesticide contamination of food products and water bodies, as well as disruption of ecological and environmental systems. Global health authorities have set limits for pesticide residues in individual food products to ensure the availability of safe foods in the supply system and to assist farmers in developing the best agronomic practices for crop production. Therefore, the use of nondestructive testing (NDT) methods for pesticide residue detection is gaining interest in the food supply chain. The NDT techniques have several advantages, such as simultaneous measurement of chemical and physical characteristics of food without destroying the product. Although numerous studies have been conducted on NDT for pesticide residue in agro-food products, there are still challenges in real-time implementation. Further study on NDT methods is needed to establish their potential for supplementing existing methods, identifying mixed pesticides, and performing volumetric quantification (not surface accumulation alone).

Abstract
Pericarpium Citri Reticulatae (PCR) in longer storage years possess higher medicinal values, but their differentiation is difficult due to similar morphological characteristics. Therefore, this study investigated the feasibility of using terahertz time-domain spectroscopy (THz-TDS) combined with a convolutional neural network (CNN) to identify PCR samples stored from 1 to 20 years. The absorption coefficient and refractive index spectra in the range of 0.2-1.5 THz were acquired. Partial least squares discriminant analysis, random forest, least squares support vector machines, and CNN were used to establish discriminant models, showing better performance of the CNN model than the others. In addition, the output data points of the CNN intermediate layer were visualized, illustrating gradual changes in these points from overlapping to clear separation. Overall, THz-TDS combined with CNN models could realize rapid identification of different year PCRs, thus providing an efficient alternative method for PCR quality inspection.

Abstract
Food aflatoxin B1 (AFB1) contamination greatly threatens human health and its sensitive determination is imperative. In this study, a surface-enhanced Raman scattering (SERS) and fluorescence dual-signal aptasensor was constructed for sensitive AFB1 detection in peanuts, walnuts, and almonds samples. Fluorescent dye cy5 was used as fluorophore and Raman reporter, while polyethyleneimine modified Ag coating magnetic nanoparticles (MNP@Ag-PEI) were utilized to absorb the cy5 modified aptamer (apt-cy5). Results indicated that linear ranges of 0.001-1000 ng/mL and 0.2-20,000 ng/mL with detection limits of 0.45 pg/mL and 0.135 ng/mL for the SERS and fluorescence methods were obtained, respectively, and AFB1 detection in the nut samples using the aptasensor achieved satisfactory recoveries of 95.2%-108.6% for SERS and 94.7%-109.7% for fluorescence. Compared with other mono signal detection, the established aptasensor facilely fused the merits of the two signals and improved the detection accuracy and flexibility.

Abstract
Surface-enhanced Raman spectroscopy (SERS) substrates based on metal/semiconductors have attracted much attention due to their excellent photocatalytic activity and SERS performance. However, they generally exhibit low light utilization and photocatalytic efficiencies. Herein, molybdenum disulfide coated titanium dioxide modified with gold nanoparticles (MoS2@TiO2@Au) as a heterojunction-based recyclable SERS platform was fabricated for the efficient determination of fungicides. Results showed that the MoS2@TiO2@Au platform could rapidly degrade 90.7% crystal violet in 120 min under solar light irradiation and enable reproducible and sensitive SERS analysis of three fungicides (methylene blue, malachite green, and crystal violet) and in-situ monitor of the photodegradation process. The platform could also be reused five times due to the unique integrated merits of the MoS2@TiO2@Au heterojunction. Meanwhile, experiments in determining methylene blue in prawn protein solution achieved a limit of detection of 1.509 μg/L. Therefore, it is hoped that this work could expand detection applications of photocatalytic materials.

Abstract
With the growing popularity of the non-destructive technique, surface-enhanced Raman spectroscopy (SERS) demands a highly sensitive and reproducible plasmonic nanoparticles substrate. In this study, a novel bimetallic core-shell nanoparticles (Au@Ag@mSiO2NP) substrate consisting of a gold core, silver shell, and a mesoporous silica coating was synthesized. The mesoporous coating structure was created by employing template molecules such as surfactant and their subsequent removal allowing selective screening based on the size of analyte molecules. Results showed that the plasmonic substrate could selectively enhance small molecules by preventing large macromolecules to reach the exciting zone of the substrate core, achieving the detection of chloramphenicol in milk samples with a detection limit of 6.68 × 10-8 M. Moreover, the mesoporous coating provided additional stability to the Au@Ag nanoparticles, leading to the reusability of the substrate. Thus, this work offered a simple and smart Au@Ag@mSiO2NP substrate for effective SERS detection of analytes.

Abstract
Sonication and dielectric barrier discharge (DBD) plasma are sustainable emerging food processing technologies. The study investigates the impact of sonication, DBD-plasma, and thermal treatment (TT) on wheat sprout juice. The obtained results indicated a significant (p < 0.05) increase in chlorophyll, total phenolics, flavonoids, DPPH assay, and ORAC assay after DBD-plasma (40 V) and sonication (30 mins) treatment as compared to TT and untreated samples. Both emerging technologies significantly (p < 0.05) reduce the polyphenol oxidase and peroxidase activities, but the TT sample had the highest reduction. Moreover, the synergistic application of both technologies significantly reduced the E. coli/Coliform, aerobics, yeast and mold up to the 2 log reduction, but the TT sample had a complete reduction. DBD-plasma and sonication processing significantly decreased (p < 0.05) the particle size, reducing apparent viscosity (η) and consistency index (K); while increasing the flow behavior (n), leading to higher stability of wheat sprout juice. To assess the impact of emerging techniques on nutrient concentration, we used surface-enhance Raman spectroscopy (SERS) as an emerging method. Silver-coated gold nano-substrates were used to compare the nutritional concentration of wheat sprout juice treated with sonication, DBD-plasma, and TT-treated samples. Results showed sharp peaks for samples treated with DBD-plasma followed by sonication, untreated, and TT. The obtained results, improved quality of wheat sprout juice, and lower microbial and enzymatic loads were confirmed, showing the suitability of these sustainable processing techniques for food processing and further research.

Abstract
Rapid evaluation of the metabolic activity of microorganisms is crucial in the assessment of the disinfection ability of various antimicrobial agents in the food industry. In this study, surface-enhanced Raman spectroscopy combined with isotope probing was employed for the analysis of the disinfection of single bacterial cells in the chicken carcass wash water. The Raman signals from single Escherichia coli O157:H7 cells were enhanced by in situ synthesis of silver nanoparticles. The ΔCD of the cells grown in presence of 0.5% hydrogen peroxide and 50 ppm chlorine was 5.86 ± 1.86% and 5.1 ± 2.3%, respectively, which showed significant reduction compared with cells grown in the absence of disinfecting agents (19.86 ± 2.51%) after 2 h of incubation. The study proved that the proposed method had the potential to assess the metabolic activity of microorganisms in other food products and optimize the disinfection process.

Abstract
At present, the use of efficient and cost-effective methods to construct plasmonic surface-enhanced Raman scattering (SERS) substrates of high sensitivity, uniformity and reproducibility is still crucial to satisfy the practical application of SERS technology. In this paper, a localized surface plasmonic resonance (LSPR) tunable flexible Ag@PDMS substrate was successfully constructed by the low-cost bio-template-stripping method and magnetron sputtering technology. The theory proves that the local electromagnetic field enhancement and "hot spot" distribution is adjustable by modifying the size of the optical cavity unit in the periodicity nanocavity array structure. Experimentally, using rhodamine 6G (R6G) as the target analyte, the SERS performance of optimal Ag@PDMS substrate (Ag film thickness for 315 nm) was researched in detail, which the minimum detection limit was 10-11 M and the enhancement factor was calculated as 8.03 × 108, indicating its high sensitivity. The relative standard deviation (RSD) was calculated as 10.38%, showing that the prepared substrate had excellent electromagnetic field enhancement uniformity. At last, the trace detection of Crystal violet (CV, LOD = 10-9 M) and the simultaneous detection of three common dyes (R6G, CV and Methylene blue (MB) mixture) were also realized. This result suggests that the SERS substrate has a good application prospect in the quantitative and qualitative detection of dye molecules.

Abstract
Metabolic dynamics of bacterial cells is needed for understanding the correlation between changes in environmental conditions and cell metabolic activity. In this study, Raman spectroscopy combined with deuterium labelling was used to analyze the metabolic activity of a single Escherichia coli O157:H7 cell. The incorporation of deuterium from heavy water into cellular biomolecules resulted in the formation of carbon-deuterium (CD) peaks in the Raman spectra, indicating the cell metabolic activity. The broad vibrational peaks corresponding to CD and CH peaks encompassed different specific shifts of macromolecules such as protein, lipids, and nucleic acid. The utilization of tryptophan and oleic acid by the cell as the sole carbon source led to changes in cell lipid composition, as indicated by new peaks in the second derivative spectra. Thus, the proposed method could semi-quantitatively determine total metabolic activity, macromolecule specific identification, and lipid and protein metabolism in a single cell.

Abstract
Anthocyanins (ACNs) are plant polyphenols that have received increased attention recently mainly due to their potential health benefits and applications as functional food ingredients. This has also created an interest in the development and validation of several non-destructive techniques of ACN assessments in several food samples. Non-destructive and conventional techniques play an important role in the assessment of ACNs in agricultural and food products. Although conventional methods appear to be more accurate and specific in their analysis, they are also associated with higher costs, the destruction of samples, time-consuming, and require specialized laboratory equipment. In this review article, we present the latest findings relating to the use of several spectroscopic techniques (fluorescence, Raman, Nuclear magnetic resonance spectroscopy, Fourier-transform infrared spectroscopy, and near-infrared spectroscopy), hyperspectral imaging, chemometric-based machine learning, and artificial intelligence applications for assessing the ACN content in agricultural and food products. Furthermore, we also propose technical and future advancements of the established techniques with the need for further developments and technique amalgamations.

Abstract
Detection of bioactive metabolites produced by bacteria is important for identifying biomarkers for infectious diseases. In this study, a surface-enhanced Raman spectroscopy (SERS)-based technique was developed for the detection of bioactive metabolite indole produced by Escherichia coli (E. coli) in biological media. The use of highly sensitive Au@Ag core-shell nanoparticles resulted in the detection of indole concentration as low as 0.0886 mM in standard solution. The supplementation of growth media with 5 mM of exogenous tryptophan resulted in the production of a maximum yield of indole of 3.139 mM by E. coli O157:H7 at 37 °C. The growth of bacterial cells was reduced from 47.73 × 108 to 1.033 × 106 CFU/mL when the cells were grown in 0 and 10 mM exogenous tryptophan, respectively. The amount of indole in the Luria-Bertani (LB) media had an inverse correlation with the growth of cells, which resulted in a three-log reduction in the colony-forming unit when the indole concentration in the media was 20 times higher than normal. This work demonstrates that SERS is an effective and highly sensitive method for rapid detection of bioactive metabolites in biological matrix.

Abstract
In this study, we developed an innovative approach that combines solid phase microextraction (SPME) with surface-enhanced Raman spectroscopy (SERS) to detect pesticide ferbam rapidly. An Au nano-glass capillary was fabricated by coating template-freely synthesized three-dimensional network Au nanostructures (3D-NW AuNSs) on the roughened surface of glass capillary and used for SPME and SERS respectively. Significant Raman signals were obtained by the SPME-SERS method, followed by detection of ferbam in water and orange juice samples with only 1 min SPME process. Results showed that Au nano-glass capillaries could achieve the detection of ferbam with limit of detection of 0.05 μg/L, and coefficient of determination (R2) of 0.9913. The recovery of predicted results was in the range of 88.46-103.29% and the relative standard deviation (RSD) was 3.5-8.2%. This study demonstrated potential capability of the SPME-SERS method for rapid (within 1 min) and sensitive detection of organic compounds in complex matrices. The SERS-active Au nano-glass capillary is easy to carry and operate, and is expected to play a role in the detection of trace pollutants.

Abstract
The membrane can not only be used as food packaging, but also for the separation, fractionation and recovery of food ingredients. Graphene oxide (GO) sheets are a two-dimensional (2 D) material with a unique structure that exhibit excellent mechanical properties, biocompatibility, and flexibility. The corporation of polymer matrix membrane with GO can significantly improve the permeability, selectivity, and antibacterial activity. In this review, the chemical structures of GO, GO membranes and GO/polymer composite membranes are introduced, the permeation mechanisms of molecules through the membranes are discussed and key factors affecting the permeability are presented in detail. In addition, recent applications in the food industry for filtration, bioreactions and active food packaging are analyzed, and limitations and future trends of GO membranes development are also highlighted. GO/polymer composite membranes exhibit excellent permeability, selectivity and strong barrier properties against bacterial and gas permeation. However, current food material filtration and packaging applications of GO/polymer composite membranes are still in the laboratory stage. Future work can focus on the development of large scale uniformly sized GO production, the homogeneous distribution and tight combination of GO in polymer matrixes, the sensing function of GO in packaging, and the verification method of GO toxicology.

Abstract
Gold nanorods (GNRs) outstand in photothermal disinfection but are faced with severe surface chemistry and dose relevant biotoxicity. Herein, a naturally green building block, metal-phenolic networks (MPNs), was employed to functionalize GNRs via coordination reaction, yielding a tunable and biocompatible core-shell photothermal nano-bactericide (GNRs@MPNs). The bioactive GNRs@MPNs built with iron and polyphenols (tannic acid, epigallocatechin gallate, and procyanidins) exhibited superior light-to-heat conversion efficiencies with η = 29.29-44.00%, remarkably preceding that of GNRs (η = 12.24%), which could rapidly ablate 99.8% of Escherichia coli O157: H7 and 98.6% of Staphylococcus aureus bacteria in relatively low efficacy doses (10 ppm of Au). Moreover, local heat triggered by GNRs@MPNs accelerated the healing of the cutaneous wound of a mice model infected by methicillin-resistant S. aureus. The facile synthesis, photothermal synergy, polyphenolic bioactivity, and significantly low efficacy dose of GNRs@MPNs empower them satisfactory efficiency and biosafety in the future broad-spectrum photothermal sterilization applications.

Abstract
Dithiocarbamate ligands have the ability to form stable complexes with transition metals, and this chelating ability has been utilized in numerous applications. The complexes have also been used to synthesize other useful compounds. Here, the up-to-date applications of dithiocarbamate ligands and complexes are extensively discussed. Some of these are their use as enzyme inhibitor and treatment of HIV and other diseases. The application as anticancer, antimicrobial, medical imaging and anti-inflammatory agents is examined. Moreover, the application in the industry as vulcanization accelerator, froth flotation collector, antifouling, coatings, lubricant additives and sensors is discussed. The various ways in which they have been employed in synthesis of other compounds are highlighted. Finally, the agricultural uses and remediation of heavy metals via dithiocarbamate compounds are comprehensively discussed.

Abstract
Controlled release (CR) systems have become a powerful platform for accurate and effective delivery of bioactive compounds (BCs). Metal-organic frameworks (MOFs) are one of the best BCs-loaded carriers for CR systems. In the review, the principles and methods of the design and synthesis of MOFs-CR systems are summarized in detail, the encapsulation of BCs by MOFs and CR mechanisms are explored, and their biological toxicity and biocompatibility are highlighted and applications in the food industry are discussed. In addition, current challenges in this field and possible future development directions are also presented. MOFs have been proven to encapsulate BCs effectively, including gaseous and solid molecules, and control the release of BCs through spontaneous diffusion or stimulus-response. The solubility, stability and biocompatibility of BCs encapsulated by MOFs are greatly improved, which expands their applications in foods. The effective CR of BCs by MOFs-CR systems is beneficial to assist in maintaining or even improving the quality and safety of food, reduce the BCs usage while increasing the bioavailability. Low- or non-biotoxic MOFs, especially bio-MOFs, show greater application prospects in the food industry.

Abstract
The abuse of pesticides in agricultural land during pre- and post-harvest causes an increase of residue in agricultural products and pollution in the environment, which ultimately affects human health. Hence, it is crucially important to develop an effective detection method to quantify the trace amount of residue in food and water. However, with the rapid development of nanotechnology and considering the exclusive properties of nanomaterials, optical, and their integrated system have gained exclusive interest for accurately sensing of pesticides in food and agricultural samples to ensure food safety thanks to their unique benefit of high sensitivity, low detection limit, good selectivity and so on and making them a trending hotspot. This review focuses on recent progress in the past five years on nanomaterial-based optical, such as colorimetric, fluorescence, surface-enhanced Raman scattering (SERS), and their integrated system for the monitoring of benzimidazole fungicide (including, carbendazim, thiabendazole, and thiophanate-methyl) residue in food and water samples. This review firstly provides a brief introduction to mentioned techniques, detection mechanism, applied nanomaterials, label-free detection, target-specific detection, etc. then their specific application. Finally, challenges and perspectives in the respective field are discussed.

Abstract
Pulsed electric field (PEF) and Ultrasound (US) are commonly used in food processing. We investigated the combined impact of pulsed electric field (PEF) and ultrasound (US) on the wheat plantlet juice. When compared with the individual treatments, the highest values of total phenolics, total flavonoids, chlorophyll, ORAC assay, and DPPH activities were obtained using the combined (US + PEF) methods. The US + PEF significantly decreased the peroxidase and polyphenol oxidase activities from 0.87 to 0.27 Abs min-1 and 0.031-0.016 Abs min-1. Also, the synergistic application significantly lowered the yeast and mold (3.92 to 2.11 log CFU/mL), E. coli/Coliform (1.95 to 0.96 log CFU/mL), and aerobics (4.41 to 2.01 log CFU/mL). Furthermore, Fourier Transform Infrared (FT-IR) and surface-enhanced Raman spectroscopy (SERS) was used to analyzing juice quality. Gold nanoparticles (AuNPs) were used as the SERS substrates, which provided stronger Raman peaks for the samples treated with US + PEF methods. The FT-IR analysis showed significant enhancement of the nutritional molecules. The enhanced quality of wheat plantlet juice combined with lower yeast and mold suggests the suitability of integrated methods for further research and applications.

Abstract
The conventional microbial cell analyses are mostly population-averaged methods that conceal the characteristics of single-cell in the community. Single-cell analysis can provide information on the functional and structural variation of each cell, resulting in the elimination of long and tedious microbial cultivation techniques. Raman spectroscopy is a label-free, noninvasive, and in-vivo method ideal for single-cell measurement to obtain spatially resolved chemical information. In the current review, recent developments in Raman spectroscopic techniques for microbial characterization at the single-cell level are presented, focusing on Raman imaging of single cells to study the intracellular distribution of different components. The review also discusses the limitation and challenges of each technique and put forward some future outlook for improving Raman spectroscopy-based techniques for single-cell analysis. Raman spectroscopic methods at the single-cell level have potential in precision measurements, metabolic analysis, antibiotic susceptibility testing, resuscitation capability, and correlating phenotypic information to genomics for cells, the integration of Raman spectroscopy with other techniques such as microfluidics, stable isotope probing (SIP), and atomic force microscope can further improve the resolution and provide extensive information. Future focuses should be given to advance algorithms for data analysis, standardized reference libraries, and automated cell isolation techniques in future.

Abstract
Modification of surface-enhanced Raman spectroscopy (SERS) substrates with thiol ligands is an emerging approach in enhancing the stability and sensitivity of metal substrates due to their good affinity with metals such as Au, Ag, and Cu. Thus, in the current study, 2-mercaptoethanol was used to modify the surface of silver-coated gold nanoparticles to develop a novel SERS substrate for the rapid assessment of fungicide residues in fruit samples. Results showed that the substrate could achieve the detection of ferbam and thiabendazole residues in apple puree with limits of detection of approximately 0.0042 and 0.0064 ppm, high coefficients of determination of 0.9946 and 0.9968, good recoveries ranging from 80 to 105 and 81 to 107% and relative standard deviations of 3.5-7.5 and 3.8-7.9 %, respectively. Therefore, the substrate developed could potentially be utilised to assess other toxic agrochemicals in future.

Abstract
Pesticides and veterinary drugs are generally employed to control pests and insects in crop and livestock farming. However, remaining residues are considered potentially hazardous to human health and the environment. Therefore, regular monitoring is required for assessing and legislation of pesticides and veterinary drugs. Various approaches to determining residues in various agricultural and animal food products have been reported. Most analytical methods involve sample extraction, purification (cleanup), and detection. Traditional sample preparation is time-consuming labor-intensive, expensive, and requires a large amount of toxic organic solvent, along with high probability for the decomposition of a compound before the analysis. Thus, modern sample preparation techniques, such as the quick, easy, cheap, effective, rugged, and safe method, have been widely accepted in the scientific community for its versatile application; however, it still requires a laboratory setup for the extraction and purification processes, which also involves the utilization of a toxic solvent. Therefore, it is crucial to elucidate recent technologies that are simple, portable, green, quick, and cost-effective for onsite and infield residue detections. Several technologies, such as surface-enhanced Raman spectroscopy, quantum dots, biosensing, and miniaturized gas chromatography, are now available. Further, several onsite techniques, such as ion mobility-mass spectrometry, are now being upgraded; some of them, although unable to analyze field sample directly, can analyze a large number of compounds within very short time (such as time-of-flight and Orbitrap mass spectrometry). Thus, to stay updated with scientific advances and analyze organic contaminants effectively and safely, it is necessary to study all of the state-of-art technology.

Abstract
Spectroscopic analysis, density functional theory (DFT) studies and surface enhanced Raman scattering of 4-((3-bromo-5-chloro-2-hydroxybenzylidene)amino)benzoic acid (BCHB) have been studied on different silver colloids concentrations in order to know the particular chemical species responsible for the spectra. For Raman and surface enhanced Raman scattering (SERS) wavenumbers, changes are observed. Observed variations in the modes of ring may be due to interaction of the π-electrons and presence of this indicated that RingII is more inclined than RingI and the BCHB assumes inclined orientation for concentration 10-3 M. Changes in orientation are seen in SERS spectra depending on concentration. In order to determine the electron-rich and poor sites of BCHB, the molecular electrostatic potential was also constructed. The molecular docking studies show that the bindings and interactions with the receptors may be supporting evidence for further studies in design further BCHB pharmaceutical applications.

Abstract
Silver-coated gold nanoparticles (Au@AgNPs) were optimized with different gold (Au) core sizes and modified surface with mercaptooctane (MCO) to determine fungicide residues in pear fruit extracts. The developed MCO/Au@AgNPs with a gold core size of 28 nm and silver shell thickness of 6 nm exhibited high sensitivity and significant enhancement of Raman scattering in detecting tricyclazole (TCZ) and thiram fungicides in standard and pear fruit samples. The detection limits for TCZ and thiram in the pear fruit extracts were 0.005 and 0.003 ppm with coefficients of determination of (R2) of 0.9984 and 0.9971, percent recovery ranging from 82.7 to 107.4% and 80.7 to 109.8%, and relative standard deviation (RSD) of 1.5 to 7.9% and 3.7 to 9.5%, respectively. Results showed that this easily prepared method could be employed as SERS active platforms for the rapid assessment of trace contaminants of agrochemicals in agriculture production.

Abstract
The development of substrate with high sensitivity and good reproducibility for surface-enhanced Raman scattering (SERS) detection of contaminants in foods has attracted more and more attention. Herein, a stable two-dimensional (2D) Au-Ag core-shell nanorods (Au@Ag NRs) nanoarray substrate with high-performance SERS activity was developed based on interface self-assembly strategy and successfully applied to the detection of thiram in apple sample. A broad linearity range of 0.01-10 mg/L and a low limit of detection of 0.018 mg/L were achieved for thiram solution. The substrate was stable and exhibited satisfactory sensitivity after preserving at ambient temperature for 4 weeks. Furthermore, this method presented the comparable result to that acquired from high-performance liquid chromatography (HPLC) with satisfactory recoveries of 93-116%. The study indicated that the prepared Au@Ag NRs nanoarray substrate was promising for SERS detection of contaminants such as pesticides in foods.

Abstract
The development of flexible and robust plasmonic substrates has become a hot research topic in simplifying and extending the application of surface-enhanced Raman scattering (SERS) technique for real-world analysis. In this work, a facile method to fabricate an Au@Ag nanoparticle array sandwiched between the adhesive acrylic polymer tape and polyethene terephthalate (PET) film (T/Au@Ag/PET) as a high-performance SERS chip was reported for nondestructive detection of thiram on fruit peels. For this SERS chip, the ordered Au@Ag nanoparticle array formed by the self-assembly method was closely-packed, which generated high-density sub-3-nm gaps and could produce high reproducible and sensitive SERS enhancement effects. The measurement of crystal violet with the limit of detection of 7.24 × 10-10 M was realized by targeting Raman shift at 1177 cm-1. Moreover, the excellent flexible feature of acrylic polymer tape enabled the substrate to withstand a tensile strain value of 20% for three cycles without significantly losing its SERS activity. By covering with a PET film, the SERS chip could maintain 87% SERS activity after storage for 60 days in the air environment, and could well withstand the influence of harsh conditions such as high temperature and ultrasound treatments. As a proof of the concept, the SERS tape was directly used to detect thiram on apple, tomato, and cucumber peels via a simple sampling-and-detection procedure, and the detection limit of 5 ng/cm2 was achieved. The T/Au@Ag/PET SERS chip should hold a promising candidate for food safety analysis in the future.
