Abstract
The occurrence of organically bound phosphorus (P) as phytate in plant-based feeding material is a challenge for livestock farming due to limited utilization during the digestion by the animal. Its excretion into the environment through the manure pathway, poses a challenge, due to increased eutrophication and restrictions for P. Hence, while the routine supplementation of phytase enzymes in monogastric diets is common practice, metabolically triggering endogenous plant enzymes by wet-treatment prior to feeding can also lead to a better utilization of phytate bound P and increased digestibility by the animal. Nonetheless, traditional quantification of residual phytate content in plant material is both labor- and chemical-intense. The aim of this study is, therefore, to predict the remaining phytate content during wet-treatment through a straightforward and flexible methodological approach based on real-time analysis. For this, rye bran is used as a model substrate. A partial least squares regression algorithm relates the infrared spectra to the concentrations and predict the amount of P species that are transferred from the bran matrix to the liquid phase. By applying a mass balance for P and considering the effect of water compression, the amount of residual phytate content in rye bran at different time points of wet-treatment is determined. Results are compared to wet chemical methods, resulting in a RMSEP of 0.28 gphytate∙100 gbran-1. In addition, the study demonstrates the feasibility of this approach and provides insights into phytate degradation in plant residuals. The method holds the potential for further applications for the screening and investigation of feed material conditioning and also offers the possibility to employ various real-time analytical techniques for assessing phytate remnants in biological samples during wet-treatment.

Abstract
Iron deficiency anemia is highly prevalent in developing countries due to the consumption of cereal-based foods rich in phytate that chelates minerals such as iron and zinc making them unavailable for absorption by humans. The aim of the present study was to degrade phytic acid in composite flour (wheat/cassava/sorghum) bread by the addition of phytase-producing yeasts in the baking process to achieve a phytate-to-iron molar ratio <1 and a phytate-to-zinc molar ratio <15, ratios needed to achieve an enhanced absorption by humans. The high-phytase (HP)-producing yeasts were two Saccharomyces cerevisiae (YD80 and BY80) that have been genetically modified by a directed mutagenesis strategy, and Pichia kudriavzevii TY13 isolated from a Tanzanian lactic fermented maize gruel (togwa) and selected as naturally HP yeast. To further improve the phytase production by the yeasts, four different brands of phytase-promoting yeast extracts were added in the baking process. In addition, two yeast varieties were preincubated for 1 h at 30°C to initiate phytase biosynthesis. The phytate content was measured by high-performance ion chromatography (HPIC) and the mineral content by ion chromatography (HPIC). The results showed that all three HP yeasts improved the phytate degradation compared with the composite bread with no added HP yeast. The composite bread with preincubated S. cerevisiae BY80 or P. kudriavzevii TY13 plus Bacto yeast extract resulted in the lowest phytate content (0.08 μmol/g), which means a 99% reduction compared with the phytate content in the composite flour. With added yeast extracts from three of the four yeast extract brands in the baking process, all composite breads had a phytate reduction after 2-h fermentation corresponding to a phytate: iron molar ratio between 1.0 and 0.3 and a phytate: zinc molar ratio <3 suggesting a much-enhanced bioavailability of these minerals.

Abstract
Phosphorous actively participates in numerous metabolic and regulatory activities of almost all living organisms including animals and humans. Therefore, it is considered as an essential macronutrient required supporting their proper growth. On contrary, phytic acid (PA), an antinutritional substance, is widely known for its strong affinity to chelate essential mineral ions including PO4 3- , Ca2+ , Fe2+ , Mg2+ , and Zn2+ . Being one the major reservoir of PO4 3- ions, PA has great potential to bind PO4 3- ions in diverse range of foods. Once combined with P, PA transforms into an undigested and insoluble complex namely phytate. Produced phytate leads to a notable reduction in the bioavailability of P due to negligible activity of phytases in monogastric animals and humans. This highlights the importance and consequent need of enhancement of phytase level in these life forms. Interestingly, phytases, catalyzing the breakdown of phytate complex and recycling the phosphate into ecosystem to its available form, have naturally been reported in a variety of plants and microorganisms over past few decades. In pursuit of a reliable solution, the focus of this review is to explore the keynote potential of bacterial phytases for sustainable management of phosphorous via efficient utilization of soil phytate. The core of the review covers detailed discussion on bacterial phytases along with their widely reported applications viz. biofertilizers, phosphorus acquisition, and plant growth promotion. Moreover, meticulous description on fermentation-based strategies and future trends on bacterial phytases have also been included.

Abstract
Legume seed protein is an important source of nutrition, but generally it is less digestible than animal protein. Poor protein digestibility in legume seeds and seedlings may partly reflect defenses against herbivores. Protein changes during germination typically increase proteolysis and digestibility, by lowering the levels of anti-nutrient protease inhibitors, activating proteases, and breaking down storage proteins (including allergens). Germinating legume sprouts also show striking increases in free amino acids (especially asparagine), but their roles in host defense or other processes are not known. While the net effect of germination is generally to increase the digestibility of legume seed proteins, the extent of improvement in digestibility is species- and strain-dependent. Further research is needed to highlight which changes contribute most to improved digestibility of sprouted seeds. Such knowledge could guide the selection of varieties that are more digestible and also guide the development of food preparations that are more digestible, potentially combining germination with other factors altering digestibility, such as heating and fermentation. Techniques to characterize the shifts in protein make-up, activity and degradation during germination need to draw on traditional analytical approaches, complemented by proteomic and peptidomic analysis of mass spectrometry-identified peptide breakdown products.

Abstract
Increased fermentable carbohydrates (e.g., β-glucan, amylose) may increase endogenous losses including for P, and thereby reduce apparent total tract digestibility (ATTD) of P. The present study assessed effects of barley cultivars varying in fermentable starch and fiber on apparent ileal digestibility (AID) and ATTD of P, myo-inositol 1,2,3,4,5,6-hexakis (dihydrogen phosphate; InsP6) and Ca, and standardized total tract digestibility (STTD) of P and the presence of lower inositol phosphates (InsP) compared to wheat. In a 6 (period) × 5 (diet) Youden square, 7 ileal-cannulated barrows (initial BW, 27.7 kg) were fed diets containing 80% of 1 of 5 cereal grains differing in amylose, β-glucan, and fiber content: 1) high-fermentable, high-β-glucan, hull-less barley (HFB); 2) high-fermentable, high-amylose, hull-less barley (HFA); 3) moderate-fermentable, hull-less barley (MFB); 4) low-fermentable, hulled barley (LFB); and 5) low-fermentable, hard red spring wheat (LFW). On dry matter (DM) basis, cereal grains contained between 0.32 to 0.53% total P and 0.24 to 0.50% InsP6-P. The InsP6-2-P was calculated as the sum of all detected InsP-P (InsP6-P to InsP2-P) in the sample. The P release of degraded InsP-P was calculated by using the following equation: sum InsP6-2-Pdiet (g/kg DM) × (AID or ATTD sum InsP6-2-P (%) / 100). Data were analyzed using a mixed model with diet as fixed effect, and pig and period as random effects. On DM basis, diets contained 41.4 to 50.6% starch, 0.88 to 8.54% β-glucan, 0.81 to 0.89% total P, and 0.19 to 0.35% InsP6-P. The MFB, LFB, and LFW had greater (P < 0.05) diet AID of P than HFB and HFA, and MFB had greater (P < 0.05) diet ATTD and STTD of P than HFB. The ATTD of InsP6-P was greater (P < 0.05) for HFB than LFB and the ATTD of the sum InsP6-2-P was greater (P < 0.05) for HFB and HFA than LFB. Total tract P release was greater (P < 0.001) for HFB, HFA, and LFW than MFB and LFB. The LFW had greater (P < 0.05) ATTD of Ca than LFB. Diet β-glucan content was not correlated with STTD of P (R 2 = 0.03) or ATTD of InsP6 (R 2 = 0.05). In conclusion, cereal grains high in fermentable fiber, e.g., amylose and β-glucans included in specific hull-less barley cultivars, had lower diet AID, ATTD, and STTD of P, but greater ATTD of InsP6-P and sum InsP6-2-P. Carbohydrate fermentation thus results in greater total tract P release from InsP-P hydrolysis.

Abstract
A circular phosphorus (P) bioeconomy is not only worthwhile for conserving limited mineral P reservoirs, but also for minimizing negative environmental impacts caused by human-made alterations. Although P is an essential nutrient, most of the P in concentrates based on cereals, legumes and oilseed byproducts is organically bound to phytate. The latter cannot be efficiently utilized by monogastric animals and is therefore diluted into the environment through the manure pathway. This review examines various strategies for improved P utilization in animals and reflects the respective limitations. The strategies considered include feeding of debranned feedstuffs, pre-germinated feed, co-feeding of phytase and feeding material with high native phytase activity. All these approaches contribute to an improved P bioavailability. However, about half of the organic P content continues to be excreted and therefore remains unused by the animals. Nevertheless, technologies for an efficient utilization of P from cereal-based feed already exist; however, these are not industrially established. Conditioning feed material prior to feeding fosters P-reduced feed; meanwhile, P bound to phytate can be recovered. Based on known techniques for P separation and solubilisation from cereal products and phytate conversion, potential designs for feed material conditioning processes are proposed and evaluated.

Abstract
Grain phytate, a mixed metal ion salt of inositol hexakisphosphate, accounts for 60%-80% of stored phosphorus in plants and is a potent antinutrient of non-ruminant animals including humans. Through neofunctionalization of purple acid phytases (PAPhy), some cereals such as wheat and rye have acquired particularly high mature grain phytase activity. As PAPhy activity supplies phosphate, liberates metal ions necessary for seedling emergence, and obviates antinutrient effects of phytate, its manipulation and control are targeted crop traits. Here we show the X-ray crystal structure of the b2 isoform of wheat PAPhy induced during germination. This high-resolution crystal structure suggests a model for phytate recognition that, validated by molecular dynamics simulations, implicates elements of two sequence inserts (termed PAPhy motifs) relative to a canonical metallophosphoesterase (MPE) domain in forming phytate-specific substrate specificity pockets. These motifs are well conserved in PAPhys from monocot cereals, enzymes which are characterized by high specificity for phytate. Tested by mutagenesis, residues His229 in PAPhy motif 4 and Lys410 in the MPE domain, both conserved in PAPhys, are found to strongly influence phytase activity. These results explain the observed phytase activity of cereal PAPhys and open the way to the rational engineering of phytase activity in planta.

Abstract
Grains of three specialty maize varieties and one conventional maize variety cultivated in China were collected and dissected to obtain the germ, endosperm, and pericarp fraction, and the distribution pattern of phosphorus, carotenoids, and tocochromanols was determined. The results showed that phytochemical contents varied significantly among different maize fractions. The germ fraction accounted for 78.3 to 86.5% of the total phosphorus present in the maize kernels. Over 86.9% of carotenoids were located in the endosperm. Except for waxy maize, 64.5 to 74.8% of the tocochromanols were contributed by the germ. Considerable differences in phytochemical contents were observed between the genotypes. Waxy maize contained the highest content of tocopherols, tocotrienols and tocochromanols meanwhile waxy maize had the lowest carotenoid and phytate phosphorus content. High lysine maize contained the highest levels in carotenoids and lowest tocochromanols. Over all, total carotenoids were significantly inversely associated with total tocochromanols.

Abstract
Fermentation of cereal grains may degrade myo-inositol 1,2,3,4,5,6-hexakis (dihydrogen phosphate) (InsP6) thereby increasing nutrient digestibility. Effects of chemical acidification or fermentation with Limosilactobacillus (L.) reuteri with or without phytase of high β-glucan hull-less barley grain on apparent ileal digestibility (AID) and apparent total tract digestibility (ATTD) of nutrients and gross energy (GE), standardized ileal digestibility (SID) of crude protein (CP) and amino acids (AAs), and standardized total tract digestibility (STTD) of P were assessed in growing pigs. Pigs were fed four mash barley-based diets balanced for water content: 1) unfermented barley (Control); 2) chemically acidified barley (ACD) with lactic acid and acidic acid (0.019 L/kg barley grain at a ratio of 4:1 [vol/vol]); 3) barley fermented with L. reuteri TMW 1.656 (Fermented without phytase); and 4) barley fermented with L. reuteri TMW 1.656 and phytase (Fermented with phytase; 500 FYT/kg barley grain). The acidification and fermentation treatments occurred for 24 h at 37 °C in a water bath. The four diets were fed to eight ileal-cannulated barrows (initial body weight [BW], 17.4 kg) for four 11-d periods in a double 4 × 4 Latin square. Barley grain InsP6 content of Control, ACD, Fermented without phytase, or Fermented with phytase was 1.12%, 0.59%, 0.52% dry matter (DM), or not detectable, respectively. Diet ATTD of DM, CP, Ca, and GE, digestible energy (DE), predicted net energy (NE) value, and urinary excretion of P were greater (P < 0.05) for ACD than Control. Diet ATTD of DM, CP, Ca, GE, DE and predicted NE value, urinary excretion of P was greater (P < 0.05), and diet AID of Ca and ATTD and STTD of P tended to be greater (P < 0.10) for Fermented without phytase than Control. Diet ATTD of GE was lower (P < 0.05) and diet ATTD and STTD of P, AID and ATTD of Ca was greater (P < 0.05) for Fermented with phytase than Fermented without phytase. Acidification or fermentation with/without phytase did not affect diet SID of CP and AA. In conclusion, ACD or Fermented without phytase partially degraded InsP6 in barley grain and increased diet ATTD of DM, CP, and GE, but not SID of CP and most AA in growing pigs. Fermentation with phytase entirely degraded InsP6 in barley grain and maximized P and Ca digestibility, thereby reducing the need to provide inorganic dietary P to meet P requirements of growing pigs.

Abstract
Simple Summary Phytate is the primary storage form of phosphorus in grain-based feedstuffs, which can reduce the utilization of the phosphorus, calcium, and other minerals. Additionally, non-starch polysaccha-rides can increase digesta viscosity and thus decrease the nutrient digestion and utilization. The current study has evaluated the effects of a next-generation multicarbohydrase and phytase com-plex on the growth performance, apparent total tract digestibility of nutrients, carcass traits, and meat quality in growing-finishing pigs fed a corn-wheat-soybean meal-based diet. The results showed that dietary supplementation of the multicarbohydrase and phytase complex improved the growth performance and nutrient digestibility but had little effect on carcass traits and meat quality in growing-finishing pigs fed a corn-soybean meal-wheat-based diet. These findings indi-cate that the multicarbohydrase and phytase complex could be used as a promising enzymes product to mitigate the negative effects of phytate and non-starch polysaccharides. Abstract The objective of this study was to evaluate the efficacy of supplementing a corn-wheat-soybean meal-based diet with a multicarbohydrase and phytase complex (MCPC) on growth performance, apparent total tract digestibility (ATTD) of nutrients, carcass traits, and meat quality in growing-finishing pigs. A total of 300 pigs (Duroc × Large White × Landrace; body weight = 25.3 ± 0.7 kg) were randomly allotted to three groups with 10 replicates of 10 pigs each. Pigs from three groups were fed positive control (PC) or negative control (NC), without or with MCPC diets, respectively. The MCPC supplied at least 1800, 1244, 6600, and 1000 units of xylanase, β-glucanase, α-arabinofuranosidase, and phytase per kilogram of diet, respectively. The NC diet was the PC diet but reduced in net energy (NE), digestible amino acids (dig. AA), digestible P (dig. P), and Ca by 74 kcal/kg, 7.0%, 0.134, and 0.119 percentage points, respectively. The diets were fed in 4 growth phases based on body weight (BW): phase 1: 25–50 kg, phase 2: 50–75 kg, phase 3: 75–100 kg, and phase 4: 100–135 kg. Compared to the PC, the NC diet decreased (p < 0.05) body weight gain, feed intake, and(or) feed to gain ratio during the growing/finishing phases 1, 2, 3, and 4. It also reduced (p < 0.05) the ATTD of crude protein, crude fat, P, and Ca of pigs. MCPC supplementation improved (p < 0.05) the body weight gain, feed intake, and(or) feed to gain ratio in phases 2, 3, and 4 and the ATTD of crude protein, crude fat, ash, P, and Ca for the NC diet. Additionally, dietary treatment had no effects on carcass traits and meat quality with the exception that the loin eye area in the NC plus MCPC diet was higher (p < 0.05) than the NC diet. In conclusion, the addition of MCPC to a corn-soybean meal-wheat-based diet reduced in energy and nutrients improved the growth performance and nutrient digestibility but had little effect on carcass traits and meat quality in growing-finishing pigs.

Abstract
Legumes are an excellent source of nutrients and phytochemicals. They have been recognized for their contributions to health, sustainability, and the economy. Although legumes comprise several species and varieties, little is known about the differences in their phytochemical composition and the magnitude of these. Therefore, the aim of this review is to describe and compare the qualitative profile of phytochemicals contained in legumes and identified through LC-MS and GC-MS methods. Among the 478 phytochemicals reported in 52 varieties of legumes, phenolic compounds were by far the most frequently described (n = 405, 85%). Metabolomics data analysis tools were used to visualize the qualitative differences, showing beans to be the most widely analyzed legumes and those with the highest number of discriminant phytochemicals (n = 180, 38%). A Venn diagram showed that lentils, beans, soybeans, and chickpeas shared only 7% of their compounds. This work highlighted the huge chemical diversity among legumes and identified the need for further research in this field and the use of metabolomics as a promising tool to achieve it.

Abstract
Grass pea (Lathyrus sativus L.) is commonly consumed in cooked, fermented, and roasted forms in Ethiopia. However, the impacts of household processing practices on its nutrients, antinutrients, and toxic compounds have not been adequately studied. Therefore, the effects of household processing and fermentation in the presence and absence of a phytase on the contents of β-N-oxalyl-L-α,β-diaminopropionic acid (β-ODAP), myo-inositol phosphates, crude protein, minerals and the in vitro bioaccessibility were investigated. Fermentation exhibited a significant decline in β-ODAP (13.0-62.0%) and phytate (7.3-90.5%) irrespective of the presence of phytase. Pressure and pan cooking after discarding the soaking water resulted in a 27.0 and 16.2% reduction in β-ODAP. A 30% reduction in phytate was observed during germination followed by roasting. In addition, germination resulted in a significant (p < 0.05) increase in crude protein. Germination and germination followed by roasting resulted in the highest Fe bioaccessibilities (more than 25 fold higher compared to untreated samples) followed by pressure cooking and soaking. Processing also improved Zn bioaccessibilities by 50.0% (soaked seed without soaking water), 22.5% (soaked seed with soaking water), and 4.3% (germination). Thus, the processing technologies applied were capable of reducing the content of phytate (InsP6) and β-ODAP with a concomitant increase in mineral bioaccessibilities. Processing of grass peas could therefore contribute to their more widespread utilization.

Abstract
Phytate and phytases in seeds are the subjects of numerous studies, dating back as far as the early 20th century. Most of these studies concern the anti-nutritional properties of phytate, and the prospect of alleviating the effects of phytate with phytase. As reasonable as this may be, it has led to a fragmentation of knowledge, which hampers the appreciation of the physiological system at hand. In this review, we integrate the existing knowledge on the chemistry and biosynthesis of phytate, the globoid cellular structure, and recent advances on plant phytases. We highlight that these components make up a system that serves to store and-in due time-release the seed's reserves of the mineral nutrients phosphorous, potassium, magnesium, and others, as well as inositol and protein. The central component of the system, the phytate anion, is inherently rich in phosphorous and inositol. The chemical properties of phytate enable it to sequester additional cationic nutrients. Compartmentalization and membrane transport processes regulate the buildup of phytate and its associated nutrients, resulting in globoid storage structures. We suggest, based on the current evidence, that the degradation of the globoid and the mobilization of the nutrients also depend on membrane transport processes, as well as the enzymatic action of phytase.

Abstract
Plant-based diets are associated with reduced risk of lifestyle-induced chronic diseases. The thousands of phytochemicals they contain are implicated in cellular-based mechanisms to promote antioxidant defense and reduce inflammation. While recommendations encourage the intake of fruits and vegetables, most people fall short of their target daily intake. Despite the need to increase plant-food consumption, there have been some concerns raised about whether they are beneficial because of the various ‘anti-nutrient’ compounds they contain. Some of these anti-nutrients that have been called into question included lectins, oxalates, goitrogens, phytoestrogens, phytates, and tannins. As a result, there may be select individuals with specific health conditions who elect to decrease their plant food intake despite potential benefits. The purpose of this narrative review is to examine the science of these ‘anti-nutrients’ and weigh the evidence of whether these compounds pose an actual health threat.

Abstract
This study was conducted to determine apparent total tract digestibility (ATTD) of phosphorus (P) and metabolisable energy (ME) concentrations for pigs of 32 different genotypes (n = 8 per grain species) of barley, rye, triticale and wheat. All genotypes were grown at the same location under the same field conditions and were fed to growing castrated crossbred pigs (initial body weight: 31.1 ± 6.95 kg) using a series of duplicate 3 × 3 Latin square designs. A basal ration, which was deficient in P, and 32 experimental rations containing 400 g/kg DM of the basal ration and 600 g/kg DM of the corresponding cereal grain were mixed. Pigs were kept in metabolism crates and the total collection method was used for separate faeces and urine collections with 7-d adaptation and 7-d collection periods. The mean ATTD of P was greater (p < 0.05) for wheat than for triticale, rye or barley (59.4%, 50.4%, 44.9% and 44.4%, respectively, for the mean of each grain species). Within-grain species differences (p < 0.05) among genotypes were obtained for ATTD of P of barley and triticale. The concentrations of ME of triticale and wheat were higher (p < 0.05) than that of barley and rye (16.1 and 16.2 vs. 14.9 and 14.8 MJ ME/kg DM, respectively). Differences in ME concentration among genotypes within a grain species (p < 0.05) were found for barley, triticale and wheat. No differences were found for rye. Compared to literature data the present study showed, in part, considerable differences in ATTD of P and ME concentration. These results should be taken into account for accurate pig ration formulation with regard to minimised P output and efficient use of ME. No significant relationships were detected between ATTD of P and phytic acid concentration or phytase activity in the grain genotypes in this study.

Abstract
The inclusion of pulses in traditional wheat-based food products is increasing as the food industry and consumers are recognizing the nutritional benefits due to the high protein, antioxidant activity, and good source of dietary fiber of pulses. Iron deficiency is a significant global health challenge, affecting approximately 30% of the world's population. Dietary iron deficiency is the foremost cause of anemia, a condition that harms cognitive development and increases maternal and infant mortality. This study intended to demonstrate the potential efficacy of low-phytate biofortified pea varieties on dietary iron (Fe) bioavailability, as well as on intestinal microbiome, energetic status, and brush border membrane (BBM) functionality in vivo (Gallus gallus). We hypothesized that the low-phytate biofortified peas would significantly improve Fe bioavailability, BBM functionality, and the prevalence of beneficial bacterial populations. A six-week efficacy feeding (n = 12) was conducted to compare four low-phytate biofortified pea diets with control pea diet (CDC Bronco), as well as a no-pea diet. During the feeding trial, hemoglobin (Hb), body-Hb Fe, feed intake, and body weight were monitored. Upon the completion of the study, hepatic Fe and ferritin, pectoral glycogen, duodenal gene expression, and cecum bacterial population analyses were conducted. The results indicated that certain low-phytate pea varieties provided greater Fe bioavailability and moderately improved Fe status, while they also had significant effects on gut microbiota and duodenal brush border membrane functionality. Our findings provide further evidence that the low-phytate pea varieties appear to improve Fe physiological status and gut microbiota in vivo, and they highlight the likelihood that this strategy can further improve the efficacy and safety of the crop biofortification and mineral bioavailability approach.

Abstract
Context
The increasing demand for maize for human food and industrial uses has stimulated research interest into alternative low value crops as energy sources for poultry. Several high yielding species of aroids, commonly known as taro or cocoyam, are currently in less demand for food or industrial uses and readily available for poultry feeding.
Aims
To review the production, nutritional profile and antinutritional factor and current uses of cocoyam corm and the effect of processing on its utilisation in poultry feeding.
Key findings
The nutritional profile of cocoyam with protein content comparable or higher than maize, high starch content and starch digestibility make it a suitable energy ingredient for poultry. The major issues affecting the utilisation of cocoyam include the high moisture and low dry matter contents and the presence of antinutritional factors, mainly calcium oxalate. These constraints may preclude the utilisation of cocoyam corm in commercial diets but it could be used to reduce the cost of production on small-holder farms.
Conclusion
With adequate processing and proper diet formulation, cocoyam corm meal may be fed up to 280 g/kg diet but unprocessed meal may exert adverse effects on poultry performance even as low as 44 g/kg. Several animal factors including age, species and type of bird (meat or egg) affect the utilisation of cocoyam corm meal by poultry.
Implications
Reduction of cost of animal protein production and value addition to underutilised aroids. More research is needed into animal factors and feed processing that would allow optimum utilisation of the corm by poultry.

Abstract
The purpose of this study was to investigate the effects of dietary supplementation of non-starch polysaccharide multi-enzyme (NME) in early laying phase of hens on production performance, egg quality, nutrient digestibility, and excreta noxious gas emission. In total, 432 Hy-line brown laying hens at 18 wk of age were used in a 10-wk feeding trail. Hens were randomly assigned to 1 of 3 treatments with 24 replication and 6 hens per replication (1 hen per cage). Dietary treatments were corn-soybean meal-DDGS-based diets supplemented with 0 (based diet, CON), 0.05% (NME1), and 0.1% (NME2) of NME. No significant (P > 0.05) response to increasing NME supplementation was observed for damaged egg rate shown throughout the experiment. Significant (P < 0.05) linear increase was observed for egg production at week 4, 6, and 8; moreover, egg production at week 8 also showed quadratic (P = 0.0344) increase. No significant effects were found on yolk color, eggshell strength, and eggshell thickness during the experiment (P > 0.05) with the increase in NME supplemental levels. Albumin height, haugh unit, and egg color values were linearly (P < 0.05) increased at week 2 and 6 following the increasing NME supplementation, respectively. Additionally, quadratic (P = 0.0013) effect was observed on egg weight at week 6 with the increasing level of NME. Moreover, apparent total tract digestibility of nitrogen and excreta ammonia emission was linearly (P < 0.05) affected increasing NME supplementation. In summary, inclusion of NME containing xylanase, β-glucanase, galactosidase, and galactomannanase activities in corn-soybean meal-DDGS-based diets increased nitrogen digestibility, decreased excreta ammonia emission, and had no negative effects on production performance and egg quality parameters.

Abstract
Wholemeal bread is strongly recommended due to its nutritional value. However, whole-grain foods contain a high level of phytic acid, an antinutritional factor that decreases the mineral bioavailability. The objective of this study was isolation and identification of lactic acid bacteria with phytase activity to find a suitable starter for bread-making. Wheat-legume sourdoughs were prepared by the back-slopping procedure. Lactic acid bacteria were isolated from the sourdough of wheat flour-mung bean, and their phytase activity was tested in the solid and liquid media. Out of the nine phytase-active isolates in the solid medium, only three isolates produced extracellular phytase in the liquid medium with activity ranging from 16.3 to 53.2 (U/ml). These isolates belonged to species Weissella confusa mk.zh95 and Pediococcus pentosaceus. The highest phytase activity was found for Weissella confusa mk.zh95. Weissella confusa mk.zh95 is considered an interesting source of phytase during cereals and legumes fermentation which improves the bioavailability of minerals.

Abstract
Phytases are pro-nutritional enzymes that hydrolyze phytate and make associated nutrients, such as phosphorous, iron, and zinc, bioavailable. Single-stomached animals and humans depend on phytase supplied through the diet or the action of phytase on the food before ingestion. As a result, phytases-or lack thereof-have a profound impact on agricultural ecosystems, resource management, animal health, and public health. Wheat, barley and their Triticeae relatives make exceptionally good natural sources of phytase. This review highlights advances in the understanding of the molecular basis of the phytase activity in wheat and barley, which has taken place over the past decade. It is shown how the phytase activity in the mature grains of wheat and barley can be ascribed to the PAPhy_a gene, which exists as a single gene in barley and in two or three homeologous copies in tetra- and hexaploid wheat, respectively. It is discussed how understanding the function and regulation of PAPhy_a may support the development of improved wheat and barley with even higher phytase activity.

Abstract
Phosphorus is an essential macro-mineral nutrient for poultry, needed for the body growth, development of bones, genomic function, good quality flesh, and eggs production. The imbalance of organic phosphorus sources in the diet mostly affect the phosphorus digestibility, reduces the poultry performance and health, and increases the environmental pollution burden. A study was reviewed to estimate the low phytate phosphorus digestibility of ingredients in poultry diet and their impacts on environmental ecosystem and opportunity of phytase supplementation. Plant ingredients mostly used in poultry diets are rich in phytate phosphorus. The phytate phosphorus digestibility and utilization is low in the gut of birds which leads to decrease other nutrients digestibility and increase excessive excretion of phosphorus with additional nutrients in the manure. When that manure applied to the lands containing excessive residual phosphorus and additional nutrients which pollute soil, groundwater disturbed the entire ecosystem. This issue is developed by poultry due to lack of digestive enzyme phytase which promotes the phytate phosphorus during digestion and reduces the excessive losses of phosphorus in excreta. To overcome this matter, the addition of mostly exogenous phospho-hydrolytic phytase enzymes in the diet, i.e. Escherichia coli, Peniophora lycii, Aspergillus niger, and Ficum, are the possible ways to increase the digestibility and utilization of phytate phosphorus and promote the stepwise release of phosphorus from phytate and significantly decrease phosphorus excretion. The aim of this review is to highlight the role of phytase supplementation in the poultry feeding, improvement of phytate phosphorus digestibility with performance, and reduction of phosphorus pollution from the environment.

Abstract
Distribution of phytic acid and phytase activity in pea seeds was analyzed and compared with those in wheat grains under identical assay conditions (55 °C, pH 5.5). Most total phytic acid content and phytase activity were found in pea cotyledons. In wheat grains, debranning resulted in a 70% reduction in phytic acid content, whereas more than 40% of the total phytase activity remained. The possibility to hydrolyze phytic acid by use of ground debranned wheat as a source of phytase in blends with pea cotyledon flour was investigated. The Michaelis-Menten parameters for each endogenous enzyme were identified and used to predict the rate of phytic acid hydrolysis. Results demonstrate a synergistic effect between the two phytase activities, enabling a 70-95% reduction of phytic acid depending on pea/wheat flour ratios in a relatively short time (4 h). This reduction appears to be able to increase zinc bioavailability but remains insufficient for iron.

Abstract
The interest towards legumes in food applications has risen over the past decades. However, the presence of antinutritional factors (ANF) and the poor technological performances still restricts their application in food fortification. In this study, four lactic acid bacteria (LAB) isolated from faba bean were applied as starter cultures for faba bean bioprocessing. None of the strains employed produced exopolysaccharides from raffinose, on the contrary, they did with sucrose as substrate. The fermented doughs were characterized and the strains were compared for their adaptation capacity and metabolic performance including the formation of dextrans, the degradation of ANF and the ability to improve antioxidant activity and in vitro protein digestibility (IVPD). A contribution to the proteolysis was given by the presence of endogenous enzymes, responsible for the increase of peptides and amino acids in dough from irradiated flour. However, the LAB strains further enhanced proteolysis. Weissella cibaria VTT E-153485 led to the highest peptide release and consequentially to the highest IVPD. In doughs fermented with Pediococcus pentosaceus VTT E-153483 and Leuconostoc kimchi VTT E-153484, phytic acid was reduced to more than half the initial concentration. Inoculated doughs had significantly lower content of oligosaccharides after 24 h of incubation compared to the controls. The most efficient raffinose consumption was found for Leuc. kimchi and W. cibaria. Doughs inoculated with weissellas contained >1% of dextrans. Weissella confusa VTT E-143403 induced a significant increment in viscosity (ca. 7 times higher than the controls). This study revealed that well-characterized, indigenous LAB provided beneficial biotechnological features in faba bean dough processing and contributed to its implementation in the food production.

Abstract
This study investigated the metabolic traits of 27 lactic acid bacteria (LAB) strains belonging to different species, previously isolated from faba bean. The activities assayed, related to technological and nutritional improvement of fermented faba bean, included peptidases, β-glucosidase, phytase, as well as exopolysaccharides synthesis and antimicrobial properties. In addition, the bacteria performance as starter cultures during faba bean fermentation on proteolysis, antioxidant potential, and degradation of condensed tannins were assessed. Fermentative profiling showed that only 7 out of 27 strains were able to metabolize D-raffinose, particularly Leuc. mesenteroides I01 and I57. All strains of Pediococcus pentosaceus exerted high PepN activity and exhibited β-glucosidase activity higher than the median value of 0.015 U, while phytase activity was largely distributed among the different strains. All the weissellas, and in lower amount leuconostocs, showed ability to produce EPS from sucrose. None of the strains did not survive the simulated gastrointestinal tract with the exception of P. pentosaceus I56, I76, 147, I214, having a viability of 8–9 log CFU/ml at the end of the treatment. None of the strains showed antimicrobial activity toward Staphylococcus aureus, while eight strains of P. pentosaceus exhibited a strong inhibitory activity toward Escherichia coli and Listeria monocytogenes. Generally, the doughs fermented with pediococci exhibited high amount of total free amino acids, antioxidant activity, and condensed tannins degradation. These results allowed the identification of LAB biotypes as potential starter cultures for faba bean bioprocessing, aiming at the enhancement of faba bean use in novel food applications.

Abstract
Mineral deficiencies, especially of iron, zinc, and calcium, respectively, negatively affect human health and may lead to conditions such as iron deficiency anemia, rickets, osteoporosis, and diseases of the immune system. Cereal grains and legumes are of global importance in nutrition of monogastrics (humans and the respective domestic animals) and provide high amounts of several minerals, e.g., iron, zinc, and calcium. Nevertheless, their bioavailability is low. Plants contain phytates, the salts of phytic acid, chemically known as inositol-hexakisphosphate, which interact with several minerals and proteins. However, phytate may be hydrolysed by phytase. This enzyme is naturally present in plants and also widely distributed in microorganisms. Several food processing methods have been reported to enhance phytate hydrolysis, due to the activation of endogenous phytase activity or via the enzyme produced by microbes. In recent years, fermentation for food and feed improvement and preservation, respectively, has gained increasing interest as a promising method to degrade phytate and enhance mineral utilization in monogastrics. Indeed, several in vitro as well as in vivo studies confirm a positive effect on the utilization of minerals, such as P, Ca, Fe and Zn, using sourdough fermentation for baking or fermentation of legumes, mainly soybeans. This review summarizes the current knowledge regarding the potential of fermentation to enhance macro and trace element bioavailability in monogastric species.

Abstract
The purpose of the study that is presented herein was to develop near-infrared reflectance spectroscopy (NIRS) calibrations to predict total phosphorus (P), phytate-P, and protein concentrations of feed ingredients commonly used in monogastric feed formulation. Samples representing 14 vegetable ingredients (cereals, cereal by-products, and oilseed meals) were collected worldwide throughout 2013. The samples were assayed by standard wet chemical techniques for total P, phytate-P, and protein content. There was substantial variability in protein, phytate-P, and total P within and between ingredients used in the calibration set. Protein content varied from 76 to 487 g/kg. Total P ranged from 2.09 and 22.5 g/kg and phytate-P ranged from 0.99 and 13.8 g/kg. Within these broad ranges, NIRS values were highly correlated for determination of protein, total P, and phytate-P with a standard error of prediction equal to 9.06 g/kg, 0.80 g/kg, and 0.66 g/kg, respectively. The wide diversity and heterogeneity of the mix of feed ingredients allowed the development of NIRS calibrations of sufficient accuracy to help nutritionists control the nutritional composition of their feed.

Abstract
Genotypes of cereal grains, including winter barley (n = 21), maize (n = 27), oats (n = 14), winter rye (n = 22), winter triticale (n = 21) and winter wheat (n = 29), were assayed for their chemical composition and physical characteristics as part of the collaborative research project referred to as GrainUp. Genotypes of one grain species were grown on the same site, except maize. In general, concentrations of proximate nutrients were not largely different from feed tables. The coefficient of variation (CV) for the ether extract concentration of maize was high because the data pool comprised speciality maize bred for its high oil content. A subset of 8 barley, 20 rye, 20 triticale and 20 wheat samples was analysed to differ significantly in several carbohydrate fractions. Gross energy concentration of cereal grains could be predicted from proximate nutrient concentration with good accuracy. The mean lysine concentration of protein was the highest in oats (4.2 g/16 g N) and the lowest in wheat (2.7 g/16 g N). Significant differences were also detected in the concentrations of macro elements as well as iron, manganese, zinc and copper. Concentrations of arsenic, cadmium and lead were below the limit of detection. The concentration of lower inositol phosphates was low, but some inositol pentaphosphates were detected in all grains. In barley, relatively high inositol tetraphosphate concentration also was found. Intrinsic phytase activity was the highest in rye, followed by triticale, wheat, barley and maize, and it was not detectable in oats. Substantial differences were seen in the thousand seed weight, test weight, falling number and extract viscoelasticity characteristics. The study is a comprehensive overview of the composition of different cereal grain genotypes when grown on the same location. The relevance of the variation in composition for digestibility in different animal species will be subject of other communications.

Abstract
Simulation models of nutrient utilisation ignore that variation in pig system components can influence the predicted mean and variance of the performance of a group of pigs. The objective of this study was to develop a methodology to investigate how variation in feed composition would (a) affect the outputs of a nutrient utilisation model and (b) interact with variation that arises from the traits of individual pigs. We used a P intake and utilisation model to address these characteristics. Introduction of stochasticity gave rise to a number of methodological challenges--for example, how to generate variation in both feed composition and pigs and account for correlations between ingredients when modelling variation associated with feed mixing efficiency. Introducing variation in feed composition and pig phenotype resulted in moderate decreases in mean digested, retained and excreted P predicted for a population of pigs and an increase in their associated CV. A lower percentage of pigs in the population were predicted to meet their requirements during the feeding period considered, by comparison with the no-variation scenario. Variation in feed ingredient composition contributed more to performance variation than variation due to mixing efficiency. When variations in both feed composition and pig traits were considered, it was the former rather than the latter that had the dominant influence on variability in pig performance. The developed framework emphasises the consequences of random variability on the predictions of nutrient utilisation models. Such consequences will have a significant impact on decisions about management strategies such as feeding that are subject to variation.

Abstract
The objective of this study was to determinate phytase activity of bacteriocins producing lactic acid bacteria previously isolated from spontaneous rye sourdough. The results show that the highest extracellular phytase activity produces Pediococcus pentosaceus KTU05-8 and KTU05-9 strains with a volumetric phytase activity of 32 and 54 U/ml, respectively, under conditions similar to leavening of bread dough (pH 5.5 and 30 °C). In vitro studies in simulated gastrointestinal tract media pH provide that bioproducts prepared with P. pentosaceus strains used in wholemeal wheat bread preparation increase solubility of iron, zinc, manganese, calcium and phosphorus average 30%. Therefore, P. pentosaceus KTU05-9 and KTU05-8 strains could be recommended to use as a starter for sourdough preparation for increasing of mineral bioavailability from wholemeal wheat bread.

Abstract
This research was conducted to study the performance and carcass parameters of broiler chickens fed diets supplemented with heat-treated non-starch polysaccharide degrading enzyme. A total of 432 one-day old Ross 308 broiler chickens were allocated to five treatments: (i) CON (basal diet), (ii) E1: CON + 0.05% multi-enzyme, (iii) E2: CON + 0.1% multi-enzyme, (iv) E3: CON + 0.05% thermo-resistant multi-enzyme and (v) E4: CON + 0.1% thermo-resistant multi-enzyme, each treatment consisted of six replications and 12 chickens in each replication. The chickens were housed in three floor battery cages during 28-day experimental period. On days 1-7, gain in body weight (BWG) improved by feeding the diets supplemented with thermo-resistant multi-enzyme. On days 7-21 and 1-28, chickens fed the diets containing thermo-resistant multi-enzyme showed improved (p < 0.05) BWG and feed conversion ratio (FCR) compared to CON group. Supplementing the diets with multi-enzyme or thermo-resistant multi-enzyme affected the percentage of drip loss on d 1 (p < 0.05). Drip loss percentage on days 3 and 5 and also meat colour were not affected significantly. Supplementing the diets with multi-enzyme or thermo-resistant multi-enzyme did not affect the relative weights of organs but compared to CON group, relative weight of breast muscle increased and abdominal fat decreased (p < 0.05). Among measured blood constituents, chickens fed supplemented diets with thermo-resistant multi-enzyme showed higher (p < 0.05) IgG. Counts of red and white blood cells and lymphocyte percentage were not affected. In conclusion, the results demonstrated that supplementing pelleted diets with thermo-resistant multi-enzyme improved performance of broiler chickens.

Abstract
The objectives of this experiment were to determine the apparent total tract digestibility (ATTD) and the standardized total tract digestibility (STTD) of P and the effect of microbial phytase on ATTD and STTD of P in full-fat rice bran (FFRB), defatted rice bran (DFRB), brown rice, broken rice, and rice mill feed when fed to pigs. Ninety-six barrows (initial BW of 19.4 ± 1.4 kg) were allotted to 12 diets with 8 replicate pigs per diet in a randomized complete block design. A basal diet based on corn and soybean meal was formulated. Five additional diets containing corn, soybean meal, and each rice coproduct were also formulated, and the ratio between corn and soybean meal in these diets was similar to that in the basal diet. Six additional diets that were similar to the initial 6 diets with the exception that 1,000 units of microbial phytase were added to the diets were also formulated. The ATTD and STTD of P were calculated for each diet using the direct procedure, and the ATTD and STTD of P in each rice coproduct were calculated using the difference procedure. Results of the experiment indicated that the concentration of P in feces was reduced (P < 0.05) from pigs fed diets with microbial phytase compared with pigs fed diets without phytase. No differences were observed between the basal diet and the broken rice diet, but the ATTD and the STTD of P in those diets was greater (P < 0.05) than in all other diets both without and with phytase. Among the rice coproducts, the greatest (P < 0.05) ATTD and STTD of P were observed for broken rice regardless of inclusion of phytase. If no microbial phytase was used, the values for STTD of P in brown rice, FFRB, DFRB, and rice mill feed were not different, but if microbial phytase was included in the diet, ATTD and STTD of P in brown rice was greater (P < 0.05) than in FFRB, DFRB, and rice mill feed. The STTD of P in brown rice, FFRB, and rice mill feed was greater (P < 0.05) if microbial phytase was used than if no microbial phytase was used. Addition of microbial phytase to the diets also increased (P < 0.05) the ATTD of Ca regardless of the rice coproducts used. In conclusion, the STTD of P is greater in broken rice than in all other rice coproducts. The STTD of P in brown rice, FFRB, DFRB, and rice mill feed is relatively low due to the high concentration of phytate in these ingredients, but addition of microbial phytase will increase the STTD of P in most rice coproducts.

Abstract
There is increasing interest in dietary ingredients that are appropriate to support digestive and immune functions, but also maintain a stable microbial ecosystem in the gastrointestinal tract (GIT), particularly in weaned pigs. P is an essential nutrient for both microbes and their host, as it is involved, for example, in bone formation, energy metabolism, cellular signalling and stabilisation of cell membranes. Non-ruminant animals have limited access to phytate, the main storage form of P in plant seeds. The release of P bound to phytate requires phytase activity of plant or microbial origin, resulting in the formation of variable phosphorylated inositol phosphates (InsPs). The present review focuses on interactions between variations in dietary P supply, the immune system of the host, and the intestinal microbial ecosystem. Although results on the interaction between P and the immune system are inconsistent, several studies in different species have shown a positive impact of dietary P and phytase addition on the adaptive immune response. Recent studies with pigs suggest that P supply may influence intestinal microbial composition and activity. Individual InsPs or phosphate may also affect properties of pathogenic micro-organisms, such as metabolism or virulence. In conclusion, P may be considered as part of an integrated approach to support immune functions and maintain a stable microbial ecosystem in the GIT, thereby providing a barrier against potential pathogens. Within this regard, differences in phytate-P content and intrinsic phytase activity of plant feedstuffs, as well as the formation of individual InsPs, have to be taken into account.

Abstract
More than half of the world populations are affected by micronutrient malnutrition and one third of world's population suffers from anemia and zinc deficiency, particularly in developing countries. Iron and zinc deficiencies are the major health problems worldwide. Phytic acid is the major storage form of phosphorous in cereals, legumes, oil seeds and nuts. Phytic acid is known as a food inhibitor which chelates micronutrient and prevents it to be bioavailabe for monogastric animals, including humans, because they lack enzyme phytase in their digestive tract. Several methods have been developed to reduce the phytic acid content in food and improve the nutritional value of cereal which becomes poor due to such antinutrient. These include genetic improvement as well as several pre-treatment methods such as fermentation, soaking, germination and enzymatic treatment of grains with phytase enzyme. Biofortification of staple crops using modern biotechnological techniques can potentially help in alleviating malnutrition in developing countries.

Abstract
This study aimed at evaluating the composition of nineteen traditional Italian legumes and at investigating the potential of the sourdough fermentation with selected lactic acid bacteria to improve the nutritional and functional features. Traditional Italian legumes, all with product certifications and belonging to Phaseolus vulgaris, Cicer arietinum, Lathyrus sativus, Lens culinaris and Pisum sativum species, were used in this study. Seeds were milled, and flours were analyzed for proximate composition and subjected to sourdough fermentation at 30°C for 24h. Lactobacillus plantarum C48 and Lactobacillus brevis AM7 were used as selected starters. Compared to control doughs, without bacterial inoculum, the concentrations of free amino acids (FAA), soluble fibres, and total phenols increased for all legume sourdoughs. Raffinose decreased of up to ca. 64%. During sourdough fermentation, the level of GABA markedly increased and reached values up to 624mg/kg. Condensed tannins decreased. At the same time, almost all legume sourdoughs showed increases of the antioxidant and phytase activities. As shown by PCA analysis based on data of total FAA, GABA, raffinose, soluble/insoluble dietary fibre, condensed tannins and antioxidant and phytase activities, all legume sourdoughs were clearly differentiated from control doughs. The traditional Italian legumes are bio-diverse, and all showed high levels of nutritional elements and suitability for optimal sourdough fermentation. Legume flours subjected to sourdough fermentation would be suitable to be used alone or better in mixture with cereals, and as gluten-free ingredients for making novel and healthy foods.
