Abstract
Food safety is recognized as a major hurdle in the transition toward circular food production systems due to the potential reintroduction and accumulation of chemical contaminants in these food systems. Effectively managing these hazardous contaminants in a risk-based manner requires quantitative insights into the factors influencing the presence and fate of contaminants in the entire circular food chain. A systematic literature review was performed to gain an up-to-date overview of the known factors and their influence on the transfer and accumulation of contaminants. This review focused on the terrestrial circular primary food production system, including the pathways between waste- or byproduct-based fertilizers, soil, crops, animal feed, and farmed animals. This review revealed an imbalance in research regarding the different pathways: studies on the soil-to-crop pathway were most abundant. The factors identified can be categorized as compound-related (intrinsic) factors, such as hydrophobicity, molecular weight, and chain length, and extrinsic factors, such as soil organic matter and carbon, pH, milk yield of cows, crop age, and biomass. Quantitative data on the influence of the identified factors were limited. Most studies quantified the influence of individual factors, whereas only a few studies quantified the combined effect of multiple factors. By providing a holistic insight into the influential factors and the quantification of their influence on the fate of contaminants, this review contributes to the improvement of food safety management for chemical hazards when transitioning to a circular food system.

Abstract
The increasing demand for reliable traceability tools in the meat supply chain has prompted the exploration of innovative approaches that meet stringent quality standards. In this work, 57 elements were quantified by inductively coupled plasma mass spectrometry and direct mercury analysis in 80 muscle and 80 liver samples of Italian heavy pigs to investigate the potential of new tools based on multi-elemental profiles in supporting value-added meat supply chains. Samples from three groups of animals belonging to the protected designation of origin (PDO) Parma Ham circuit (conventionally raised; raised with genetically modified organism (GMO)-free feeds; raised with GMO-free feeds plus the supplementation of omega-3 polyunsaturated fatty acids (n-3 PUFA)) and a fourth group of samples from animals not compliant with the PDO Parma Ham production process were analyzed. Hierarchical cluster analysis allowed for the identification of three macro-clusters of liver or muscle samples, highlighting some inhomogeneities among the target groups. Following SIMCA analysis, better classification models were obtained by using liver elemental profiles (95% correct classification rate), with the highest classification accuracy observed for GMO-free livers (100%). The elements contributing the most to the separation of livers by class membership were La, Ce, and Pb for conventional, Li, Cr, Fe, As, and Sr for GMO-free + n-3 PUFA, and Lu for non-PDO samples. Given these findings, the analysis of the elemental profiles of pig tissues can be regarded as a promising method to confirm the declared pig meat label attributes, deter potential complex fraud, and support meat traceability systems.

Abstract
The effects of selenium and vitamin E (Vit. E) were evaluated on the macro-elements and their relationships were also surveyed. Lambs were divided into 4 groups of control, Vit. E, sodium selenite and sodium selenite/Vit. E (Se/E). Sodium selenite (0.1 mg.kg−1) and Vit. E (8 mg.kg−1) were administered. The mean blood selenium was high in sodium selenite. Selenium only in the Se groups was continuously increased. The lowest and highest blood selenium were in Vit. E and sodium selenite, respectively. The mean serum macro-minerals were within the normal range. The trend of calcium and magnesium in the selenium groups was to increase until day 60, but phosphorus was to decline. The lowest and highest calcium were observed in the control and sodium selenite groups, for magnesium in Vit. E and control groups, and for inorganic phosphorus were in the control group, respectively. The comparison of minerals showed that selenium had a significant increase from day 14 to 90 in sodium selenite. Selenium showed the most positive relationships with calcium and inorganic phosphorus in Vit. E and sodium selenite. Overall, selenium was correlated with macro-minerals on day 90 and overall sampling times were with calcium. In conclusion, administration of selenium with Vit. E increased selenium, which was more observed in the sodium selenite group. Sodium selenite alone or with Vit. E had no effect on the macro-minerals. The least correlation was observed between selenium and macro-minerals in the Se/E administration. The correlation between macro-minerals was positive. It was concluded that the effect of sodium selenite on treatment and prevention of selenium deficiency was more effective than other groups. Vit. E per selenium did not change the selenium concentration. Selenium administration was associated with an increase in calcium level and their co-administration is recommended.

Simple Summary In some European countries, including Poland, beef production is based mostly on dairy cattle herds. Beef quality can be improved by the commercial crossbreeding of dairy cows with beef bulls. The offspring are characterized by higher fattening performance and more desirable carcass characteristics. The experiment was performed on 72 bulls produced by crossing Polish Holstein-Friesian (PHF) cows with bulls of three most popular beef breeds: Hereford (HH), Limousin (LM), and Charolais (CH), to determine the effects of genotype and age at slaughter on the content of selected minerals (K, Na, Mg, Zn, and Fe) and fatty acid profile in beef. The meat of PHF × LM crosses had a lower content of K and Mg, compared with the remaining crossbred bulls. The Fe content per kg of meat was higher in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The best sire breed for crossing with dairy cows cannot be clearly indicated based on the present findings. However, the results of this study suggest that bulls should be slaughtered at 21 months of age to achieve the optimal values of most analyzed traits and parameters, in particular the fatty acid profile. The experiment was performed on 72 crossbred bulls produced by crossing Polish Holstein-Friesian (PHF) cows with bulls of three beef breeds: Hereford (HH), Limousin (LM), and Charolais (CH), slaughtered at 15, 18, and 21 months of age. Samples of the longissimus thoracis muscle were collected to determine their mineral (potassium—K, sodium—Na, magnesium—Mg, zinc—Zn, and iron—Fe) and fatty acid composition. The meat of PHF × LM crosses had a lower (p ≤ 0.01) content of K and Mg, compared with the remaining crossbred bulls. The Fe content per kg of meat was 4 mg higher (p ≤ 0.01) in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The content of monounsaturated fatty acids (MUFAs) in intramuscular fat was 2.77% higher in bulls slaughtered at 21 months of age than in those slaughtered at 15 months of age. The n-6/n-3 polyunsaturated fatty acids (PUFA) ratio did not exceed 4.0, and it was most desirable in PHF × LM crosses (2.84) and in the oldest bulls (2.92).

Abstract
There are no studies in the literature that comprehensively present the impact of factors related only to kosher slaughter on the content of minerals in beef. Therefore, learning the impact of such kosher determinants of beef as follows: no stunning during slaughter, cattle category, muscle, or the so-called kosher treatment for mineral content in beef has an original character. In this connection, the aim of the research was a comprehensive analysis of the impact of kosher determinants (slaughter type, muscle, cattle category, and technological treatment) on the content of selected macro- and microelements in beef. On the content of minerals in muscles obtained from beef carcasses, the statistically significant (p < .05) impact was found in the case of slaughter type for such elements as: K, P, and Na. Higher content of phosphorus, potassium, and sodium was found in muscles of heifers and bulls from standard slaughter, compared with the amount of these elements determined in muscles of cattle from kosher slaughter. In turn, statistically significant (p < .05) impact of cattle sex was confirmed only in the case of iron and molybdenum content in beef. Higher amounts of these elements were determined in muscle from heifer carcasses (excluding the molybdenum content in MLT muscle of heifer carcasses from kosher slaughter). The process of koshering (soaking in brine) causes approximately 10-fold increase in the amount of sodium in beef, regardless of the muscle or gender of cattle. The statistically significant impact of muscle was confirmed only in the case of zinc content. In the authors' own research, there was found no statistically significant impact of the interaction effects between the analyzed factors (S × G, S × M, G × M, and S × G × M) on the content of particular mineral components.

Abstract
The levels of toxic metals (Al, Cd, Pb) and trace metals (B, Ba, Cu, Fe, Mn, Sr, Zn) were analyzed by inductively coupled plasma optical emission spectrometry (ICP-OES) in the muscle (sirloin and chuck) and liver from a total of 180 samples of steers (less than 2 years old) (Bos taurus) of foreign and local origin slaughtered on the island of La Palma (Canary Islands, Spain). As regards toxic metals, Al was the metal with the highest contents in both tissues of the foreign steers (3.75 mg/kg in the muscle and 55.3 mg/kg in the liver) and the local steers (5.60 mg/kg in the muscle and 8.65 mg/kg in the liver). In conclusion, the present study confirmed that beef is a source of trace elements, mainly Fe and Zn. In addition, the consumption of this type of beef did not show significant intakes of toxic metals (Al, Cd, and Pb) and, therefore, the consumption of the steer muscle and liver does not pose a toxicological risk for Spanish consumers.

Abstract
The relationship between mineral concentrations, and the relationship of mineral concentrations with physicochemical characteristics in muscles were investigated using the Longissimus thoracis (LT) muscle of 44 Japanese Black steers. We determined moisture content, fat content, meat color, fatty acid composition and mineral concentrations in the LT muscle. Magnesium (Mg), potassium (K) and zinc (Zn) concentrations had negative correlations with fat content, but sodium (Na), manganese (Mn), copper (Cu) and molybdenum (Mo) concentrations were not correlated with fat content. The concentrations of Mg, Mn, Fe, Cu and Zn largely and positively contributed to the first principal component of mineral concentrations. Because the red muscle was rich in these minerals compared to the white muscle, the variation of these minerals probably results from the abundance of red fibers in the LT muscle. The concentration of K was positively correlated with moisture content but Na concentration was not related to moisture content, suggesting that the intracellular fluid volume can largely affect moisture content. The results of the present experiment suggest that mineral concentrations reflect some traits such as not only fat content but also the composition of myofiber type and the intracellular fluid volume in the LT muscle of Japanese Black cattle.

Abstract
The aim of the study was to determine the content of macrominerals and microminerals in the longissimus lumborum (LL) and semitendinosus (ST) muscles of young bulls of five breeds-Polish Red (PR), White-Backed (WB), Polish Black-and-White (PBW), Simmental (SIM) and Polish Holstein-Friesian (PHF). The meat of the Polish Holstein-Friesian bulls was found to contain significantly less K, Mg and Ca and more Mn than other breeds. The meat of the White-Backed bulls contained significantly (P < 0.01) more Ca and less Na than the meat of the Polish Red, Simmental and Polish Holstein-Friesian breeds. Moreover, the meat of White-Backed bulls showed a significantly (P < 0.01) higher level of Mn and Cu in comparison with other native breeds (Polish Red and Polish Black-and-White) and the Simmental breed. Similar content of macronutrients was found in the LL and ST muscles. However, in the case of micronutrients, the LL muscle contained significantly more Zn, Fe and Cu as well as Mn (P > 0.05).

Abstract
The aim of this study was to evaluate essential and toxic element concentration of ten commercially available veal cuts, together with diaphragm, cardiac muscle and liver tissue from 10 animals of "Galician Supreme Veal". Essential trace elements (Co, Cr, Cu, Fe, Mn, Mo, Ni, Se and Zn) and toxic elements (As, Cd, Hg and Pb) were determined by ICP-MS. Essential trace element concentrations ranged from 0.002-55.64mg/kg between muscles. Toxic element concentrations were very low, and high numbers of samples showed unquantifiable residues of Cd and Pb. Veal cuts including muscles with a high proportion of oxidative slow-twitch fibers (diaphragm and cardiac muscle) showed significantly higher essential trace element concentrations, the lower concentrations being found in veal cuts including glycolytic fast-twitch fibers (eye round). Our results suggest that essential and toxic trace element concentration could be used as a new meat quality parameter, or to add further value to certain products (i.e. livestock reared on extensive systems with high physical activity).

Abstract
This review article examines the role of selenium (Se) and the effects of Se supplementation especially in the bovine species. Selenium is an important trace element in cattle. Some of its roles include the participation in the antioxidant defense the cattle farms. The nutritional requirements of Se in cattle are estimated at 100 μg/kg DM (dry matter) for beef cattle and at 300 μg/kg DM for dairy cows. The rations high in fermentable carbohydrates, nitrates, sulfates, calcium or hydrogen cyanide negatively influence the organism's use of the selenium contained in the diet. The Se supplementation may reduce the incidence of metritis and ovarian cysts during the postpartum period. The increase in fertility when adding Se is attributed to the reduction of the embryonic death during the first month of gestation. A use of organic Se in feed would provide a better transfer of Se in calves relative to mineral Se supplementation. The addition of Se yeasts in the foodstuffs of cows significantly increases the Se content and the percentage of polyunsaturated fatty acids (PUFA) in milk compared to the addition of sodium selenite. The enzyme 5-iodothyronine deiodinase is a seleno-dependent selenoprotein. It is one of the last proteins to be affected in the event of Se deficiency. This delay in response could explain the fact that several studies did not show the effect of Se supplementation on growth and weight gain of calves. Enrichment of Se in the diet did not significantly affect the slaughter weight and carcass yield of bulls. The impact and results of Se supplementation in cattle depend on physiological stage, Se status of animals, type and content of Se and types of Se administration. Further studies in Se supplementation should investigate the speciation of Se in food and yeasts, as well as understanding their metabolism and absorption. This constitute a path to exploit in order to explain certain different effects of Se.

Abstract
Concentrations of major nutritional and trace elements (Ca, P, Mg, Na, K, Fe, Zn, Cu, Mn, Se, Co, Cr, Ni, Sr, and Ba), as well as toxic heavy metals (Cd and Pb), were analyzed in the longissimus muscle of Charolais, Hereford, and Simmental bulls. The elements were determined using inductively coupled plasma optical emission spectrometry. The study showed that the breeds differed in the concentrations of K, Mg, Zn, Cu, Fe, and Mn in meat. Meat from Charolais bulls had a significantly higher K (P < 0.01) content and significantly lower Cu, Zn (P < 0.001), and Mn (P < 0.05) contents compared to Hereford and Simmental meats. Meat from Charolais bulls also had a significantly lower Fe (P < 0.05) content in comparison with Hereford meat and a significantly lower Mg (P < 0.05) content compared to Simmental meat. Moreover, meat from Hereford bulls was characterized by a significantly higher Fe (P < 0.05) content and a lower Mg (P < 0.01) content than that from Simmental bulls. The Se and Fe contents in meat from bulls of breeds used in this study were lower than those previously reported. No breed differences were found in Pb and Cd contents. However, the Pb concentration in meat was higher than the recommended standards. In meat from bulls of all breeds, significantly strong positive correlations were observed between the contents of Pb and Ni, Cd and Ni, K and P, as well as Mg and P. Correlations between other elements within each of the breeds separately were also found.

Abstract
The amount of trace elements present in edible bovine tissues is of importance for both animal health and human nutrition. This study presents data on trace element concentrations in semitendinosus and cardiac muscles, livers and kidneys of 60 zebu (Bos indicus) bulls, sampled at Jimma, Ethiopia. From 28 of these bulls, blood samples were also obtained. Deficient levels of copper were found in plasma, livers, kidneys and semitendinosus muscles. Suboptimal selenium concentrations were found in plasma and semitendinosus muscles. Semitendinosus muscles contained high iron concentrations. Trace elements were mainly stored in the liver, except for iron and selenium. Cardiac muscles generally contained higher concentrations of trace elements than semitendinous muscles except for zinc. A strong association was found between liver and kidney concentrations of copper, iron, cobalt and molybdenum. Liver storage was well correlated with storage in semitendinosus muscle for selenium and with cardiac muscle for cobalt and selenium. Plasma concentrations of copper, selenium, cobalt were well related with their respective liver concentrations and for cobalt and selenium, also with cardiac muscle concentrations. The data suggest multiple trace element deficiencies in zebu cattle in South-West Ethiopia, with lowered tissue concentrations as a consequence. Based on the comparison of our data with other literature, trace element concentrations in selected edible tissues of Bos indicus seem quite similar to those in Bos taurus. However, tissue threshold values for deficiency in Bos taurus cattle need to be refined and their applicability for Bos indicus cattle needs to be evaluated.

Abstract
Selenium (Se³⁴₇₉) is a metalloid which is close to sulfur (S) in terms of properties. The Se concentration in soil varies with type, texture and organic matter content of the soil and with rainfall. Its assimilation by plants is influenced by the physico-chemical properties of the soil (redox status, pH and microbial activity). The presence of Se in the atmosphere is linked to natural and anthropogenic activities. Selenoproteins, in which selenium is present as selenocysteine, present an important role in many body functions, such as antioxidant defense and the formation of thyroid hormones. Some selenoprotein metabolites play a role in cancer prevention. In the immune system, selenium stimulates antibody formation and activity of helper T cells, cytotoxic T cells and Natural Killer (NK) cells. The mechanisms of intestinal absorption of selenium differ depending on the chemical form of the element. Selenium is mainly absorbed in the duodenum and caecum by active transport through a sodium pump. The recommended daily intake of selenium varies from 60 μg/day for women, to 70 μg/day for men. In growing ruminants the requirements are estimated at 100 μg/kg dry matter and 200 μg/Kg for pregnant or lactating females. A deficiency can cause reproductive disorders in humans and animals.

Abstract
Homeostasis of selenium (Se), a critical antioxidant incorporated into amino acids and enzymes, is disrupted by exposure to aryl hydrocarbon receptor (AhR) agonists. Here we examined the importance of dietary Se in preventing the toxicity of the most toxic polychlorinated biphenyl congener, 3,3',4,4',5-pentachlorobiphenyl (PCB 126), a potent AhR agonist. Male Sprague-Dawley rats were fed a modified AIN-93 diet with differing dietary Se levels (0.02, 0.2, and 2 ppm). Following 3 weeks of acclimatization, rats from each dietary group were given a single ip injection of corn oil (vehicle), 0.2, 1, or 5 μmol/kg body weight PCB 126, followed 2 weeks later by euthanasia. PCB exposure caused dose-dependent increases in liver weight and at the highest PCB 126 dose decreases in whole body weight gains. Hepatic cytochrome P-450 (CYP1A1) activity was significantly increased even at the lowest dose of PCB 126, indicating potent AhR activation. PCB exposure diminished hepatic Se levels in a dose-dependent manner, and this was accompanied by diminished Se-dependent glutathione peroxidase activity. Both these effects were partially mitigated by Se supplementation. Conversely, thioredoxin (Trx) reductase activity and Trx oxidation state, although significantly diminished in the lowest dietary Se groups, were not affected by PCB exposure. In addition, PCB 126-induced changes in hepatic copper, iron, manganese, and zinc were observed. These results demonstrate that supplemental dietary Se was not able to completely prevent the toxicity caused by PCB 126 but was able to increase moderately the levels of several key antioxidants, thereby maintaining them roughly at normal levels.
