Abstract
Many bioactive components in plants are beneficial to health, and their contents in seeds and sprouts are much higher than those in mature parts. This study intended to uncover alterations in nutritional compositions of radish seeds following germination. It also aimed to evaluate the health-promoting potential of both radish (Raphanus sativus L.) seeds and sprouts by quantifying representative bioactive compounds and antioxidants across six varieties. The ultimate goal was to identify the optimal radish variety with these beneficial properties through the TOPSIS-entropy weight method. This study measured chlorophyll, carotenoids, anthocyanins, glucosinolates (GLSs), total phenol (TP), vitamin C content, and antioxidant capacities (POD: Peroxidase; PAL: Phenylalanine ammonia lyase; T-AOC: Total antioxidant capacity) in seeds and sprouts of radish grew for 7 days. The GLSs content in seeds was 3 to 6-fold higher than that in sprouts; while contents of anthocyanin, sugar, and TP were much higher in radish seeds than those in sprouts. Chlorophyll, carotenoid content, and POD activity were significantly higher in sprouts than in seeds. Combined with the ideal solution similarity ranking preference method (TOPSIS) entropy weight method, M (Man Tang Hong) was the optimal radish variety. Sprouts generally outperformed seeds in terms of overall phytochemical composition and antioxidant capacities, except for M. Therefore, more sprouts are recommended to be consumed in daily life without choosing specific radish variety. In conclusion, this study supports the health-promoting properties of radish based on a comprehensive deciphering of the nutritional profile of radish seeds and sprouts, both of which are good sources of bioactive compounds.

Abstract
This study investigates the effects of electron beam irradiation at varying doses on the bioactive compounds and sensory qualities and of broccoli sprout juice (BSJ). A comprehensive analysis of volatile flavor components using GC-IMS and GC-MS identified 49 compounds, including esters, aldehydes, and olefins. Notably, the sulforaphane content exhibited a strong negative correlation with irradiation intensity (R2 = 0.9596), which is critical for predicting the impact of irradiation dose on sulforaphane degradation. Statistical analysis confirmed that 34 volatile compounds, like methyl acetate, 2-methylbutanal, hexanoic acid ethyl ester, etc., exhibited significant difference in different irradiation doses groups (P < 0.05). Sensory evaluation revealed that 6 kGy was the optimal irradiation dose, enhancing the sweetness and mushroom aroma while reducing undesirable spicy flavors. These findings provide valuable insights for balancing preservation techniques, sensory qualities, and nutritional integrity in BSJ, offering potential applications in both food and medicinal industries.

Abstract
Broccoli by-products, traditionally considered inedible, possess a comprehensive nutritional and functional profile. These by-products are abundant in glucosinolates, particularly glucoraphanin, and sulforaphane, an isothiocyanate renowned for its potent antioxidant and anticarcinogenic properties. Broccoli leaves are a significant source of phenolic compounds, including kaempferol and quercetin, as well as pigments, vitamins, and essential minerals. Additionally, they contain proteins, essential amino acids, lipids, and carbohydrates, with the leaves exhibiting the highest protein content among the by-products. Processing techniques such as ultrasound-assisted extraction and freeze-drying are crucial for maximizing the concentration and efficacy of these bioactive compounds. Advanced analytical methods, such as high-performance liquid chromatography-mass spectrometry (HPLC-MS), have enabled precise characterization of these bioactives. Broccoli by-products have diverse applications in the food industry, enhancing the nutritional quality of food products and serving as natural substitutes for synthetic additives. Their antioxidant, antimicrobial, and anti-inflammatory properties not only contribute to health promotion but also support sustainability by reducing agricultural waste and promoting a circular economy, thereby underscoring the value of these often underutilized components.

Abstract
BACKGROUND/OBJECTIVES Particulate matter (PM) is an environmental pollutant that negatively affects human health, particularly skin health. In this study, we investigated the inhibitory effects of broccoli sprout extract (BSE) on PM-induced skin aging and inflammation in human keratinocytes. METHODS HaCaT keratinocytes were pretreated with BSE before exposure to PM. Cell viability was assessed using the MTT assay. The expression of skin aging and inflammation markers (MMP-1, COX-2, IL-6) was measured using Western blot, ELISA, and qRT-PCR. Reactive oxygen species levels were determined using the DCF-DA assay. Kinase assays and pull-down assays were conducted to investigate the interaction between BSE and p38α MAPK. RESULTS Our findings demonstrate that BSE effectively suppressed the expression of MMP-1, COX-2, and IL-6-critical skin aging and inflammation markers-by inhibiting p38 MAPK activity. BSE binds directly to p38α without competing with ATP, thereby selectively inhibiting its activity and downstream signaling pathways, including MSK1/2, AP-1, and NF-κB. CONCLUSIONS These results suggest that BSE is a potential functional ingredient in skincare products to mitigate PM-induced skin damage.

Abstract
In this research, we investigated the physiological modifications, flavonoid metabolism, and antioxidant systems of two buckwheat (Fagopyrum esculentum Moench.) cultivars, Pintian and Suqiao, during germination. The results demonstrated an initial increase followed by a subsequent decline in the flavonoid content of the buckwheat sprouts throughout germination. On the third day of germination, the highest flavonoid concentrations were observed, with the Pintian and Suqiao varieties reaching 996.75 and 833.98 μg/g fresh weight, respectively. Both the activity and relative gene expression level of the flavonoid metabolizing enzyme showed a significant rise in 3-day-old buckwheat sprouts, which was strongly correlated with the flavonoid content. The correlation analysis revealed that the buckwheat sprouts accumulated flavonoids by enhancing the activities and gene expression levels of flavonoid synthases. The antioxidant capacity and the activities and gene expression profiles of the antioxidant enzymes in both buckwheat cultivars notably increased after three days of germination. The correlation analysis indicated a significant positive link between antioxidant capacity and the activity and gene expression levels of the antioxidant enzymes, flavonoid content, and total phenol content. This research demonstrated that germination treatment can significantly boost the accumulation of flavonoids and total phenols, thereby enhancing the antioxidant properties of buckwheat sprouts, despite variations among different buckwheat varieties.

Abstract
Broccoli (Brassica oleracea var. italica) is one of the most consumed cruciferous crops in the world, with China and Spain acting as the main producers from outside and within the EU, respectively. Broccoli florets are edible, while the leaves and stalks, discarded in the field and during processing, are by-products. Therefore, the objective of this study was to conduct a comprehensive review of the nutrient and phytochemical composition of broccoli and its by-products, as well as its beneficial effects. In addition, the study highlights the revalorization of broccoli by-products through innovative green technologies and explores their potential use in bakery products for the development of functional foods. The studies suggested that broccoli is characterized by a high content of nutrients and bioactive compounds, including vitamins, fiber, glucosinolates, and phenolic compounds, and their content varied with various parts. This high content of value-added compounds gives broccoli and its various parts beneficial properties, including anti-cancer, anti-inflammatory, antioxidant, antimicrobial, metabolic disorder regulatory, and neuroprotective effects. Furthermore, broccoli and its by-products can play a key role in food applications by improving the nutritional profile of products due to their rich content of bioactive compounds. As a result, it is essential to harness the potential of the broccoli and its by-products that are generated during its processing through an appropriate agro-industrial revalorization, using environmentally friendly techniques.

Abstract
Sulforaphane (SFN) is an organosulfur compound categorized as an isothiocyanate (ITC), primarily extracted from cruciferous vegetables like broccoli and cabbage. The molecular formula of sulforaphane (SFN) is C6H11NOS2. SFN is generated by the hydrolysis of glucoraphanin (GRP) through the enzyme myrosinase, showing notable properties including anti-diabetic, anti-inflammatory, antimicrobial, anti-angiogenic, and anticancer attributes. Ongoing clinical trials are investigating its potential in diseases such as cancer, neurodegenerative diseases, diabetes-related complications, chronic kidney disease, cardiovascular disease, and liver diseases. Several animal carcinogenesis models and cell culture models have shown it to be a very effective chemopreventive agent, and the protective effects of SFN in ophthalmic diseases have been linked to multiple mechanisms. In murine models of diabetic retinopathy and age-related macular degeneration, SFN delays retinal photoreceptor cell degeneration through the Nrf2 antioxidative pathway, NF-κB pathway, AMPK pathway, and Txnip/mTOR pathway. In rabbit models of keratoconus and cataract, SFN has been shown to protect corneal and lens epithelial cells from oxidative stress injury by activating the Keap1-Nrf2-ARE pathway and the Nrf-2/HO-1 antioxidant pathway. Oral delivery or intraperitoneal injection at varying concentrations are the primary strategies for SFN intake in current preclinical studies. Challenges remain in the application of SFN in eye disorders due to its weak solubility in water and limited bioavailability because of the presence of blood-ocular barrier systems. This review comprehensively outlines recent research on SFN, elucidates its mechanisms of action, and discusses potential therapeutic benefits for eye disorders such as age-related macular degeneration (AMD), diabetic retinopathy (DR), cataracts, and other ophthalmic diseases, while also indicating directions for future clinical research to achieve efficient SFN treatment for ophthalmic diseases.

Abstract
BACKGROUND Sulforaphane (SFN) is a dietary isothiocyanate, derived from glucoraphanin, present in cruciferous vegetables belonging to the Brassica genus. It is a biologically active phytochemical that acts as a nuclear factor erythroid 2-related factor 2 (Nrf2) inducer. Thus, it has been reported to have multiple protective functions including anticancer responses and protection against a toxic agent's action. PURPOSE The present work systematically reviewed and synthesised the protective properties of sulforaphane against a toxic agent. This review reveals the mechanism of the action of SFN in each organ or system. METHODS The PRISMA guideline was followed in this sequence: researched literature, organised retrieved documents, abstracted relevant information, assessed study quality and bias, synthesised data, and prepared a comprehensive report. Searches were conducted on Science Direct and PubMed using the keywords "Sulforaphane" AND ("protective effects" OR "protection against"). RESULTS Reports showed that liver and the nervous system are the target organs on which attention was focused, and this might be due to the key role of oxidative stress in liver and neurodegenerative diseases. However, protective activities have also been demonstrated in the lungs, heart, immune system, kidneys, and endocrine system. SFN exerts its protective effects by activating the Nrf2 pathway, which enhances antioxidant defenses and reduces oxidative stress. It also suppresses inflammation by decreasing interleukin production. Moreover, SFN inhibits apoptosis by preventing caspase 3 cleavage and increasing Bcl2 levels. Overall, SFN demonstrates multifaceted mechanisms to counteract the adverse effects of toxic agents. CONCLUSION SFN has potential clinical applications as a chemoprotective agent. Nevertheless, more studies are necessary to set the safe doses of SFN in humans.

Abstract
Background Hepatocellular carcinoma (HCC) is an aggressive malignancy with limited effective treatment options. Phenethyl isothiocyanate (PEITC) is a bioactive substance present primarily in the cruciferous vegetables. PEITC has exhibited anti-cancer properties in various cancers, including lung, bile duct, and prostate cancers. It has been demonstrated that PEITC can inhibit the proliferation, invasion, and metastasis of SK-Hep1 cells, while effectively inducing apoptosis and cell cycle arrest in HepG2 cells. However, knowledge of its anti-carcinogenic effects on Huh7.5.1 cells and its underlying mechanism remains elusive. In the present study, we aim to evaluate the anti-carcinogenic effects of PEITC on human HCC Huh7.5.1 cells. Methods MTT assay and colony formation assay was performed to investigate the anti-proliferative effects of PEITC against Huh7.5.1 cells. The pro-apoptosis effects of PEITC were determined by Annexin V-FITC/PI double staining assay by flow cytometry (FCM), mitochondrial transmembrane potential (MMP) measurement, and Caspase-3 activity detection. A DAPI staining and terminal deoxynucleotidyl transferase-mediated dUTP nick-end labeling (TUNEL) assay was conducted to estimate the DNA damage in Huh7.5.1 cells induced by PEITC. Cell cycle progression was determined by FCM. Transwell invasion assay and wound healing migration assay were performed to investigate the impact of PEITC on the migration and invasion of Huh7.5.1 cells. In addition, transcriptome sequencing and gene set enrichment analysis (GSEA) were used to explore the potential molecular mechanisms of the inhibitory effects of PEITC on HCC. Quantitative real-time PCR (qRT-PCR) analysis was performed to verify the transcriptome data. Results MTT assay showed that treatment of Huh7.5.1 cells with PEITC resulted in a dose-dependent decrease in viability, and colony formation assay further confirmed its anti-proliferative effect. Furthermore, we found that PEITC could induce mitochondrial-related apoptotic responses, including a decrease of mitochondrial transmembrane potential, activation of Caspase-3 activity, and generation of intracellular reactive oxygen species. It was also observed that PEITC caused DNA damage and cell cycle arrest in the S-phase in Huh7.5.1 cells. In addition, the inhibitory effect of PEITC on the migration and invasion ability of Huh7.5.1 cells was assessed. Transcriptome sequencing analysis further suggested that PEITC could activate the typical MAPK, PI3K-Akt, and p53 signaling pathways, revealing the potential mechanism of PEITC in inhibiting the carcinogenic properties of Huh7.5.1 cells. Conclusion PEITC exhibits anti-carcinogenic activities against human HCC Huh7.5.1 cells by activating MAPK/PI3K-Akt/p53 signaling pathways. Our results suggest that PEITC may be useful for the anti-HCC treatment.

Abstract
The contributions of cruciferous vegetables to human health are widely recognised, particularly at the molecular level, where their isothiocyanates play a significant role. However, compared to the well-studied isothiocyanate 4-(methylsulfinyl)butyl isothiocyanate (sulforaphane) produced from broccoli sprouts, less is known about the pharmacological effects of other isothiocyanates and the stage of vegetables preferable to obtain their benefits. We analysed the quantity and quality of isothiocyanates produced in both the sprouts and mature stages of eight cruciferous vegetables using gas chromatography-mass spectrometry (GC-MS). Additionally, we investigated the hepatoprotective effects of isothiocyanates in a mouse model of acute hepatitis induced by carbon tetrachloride (CCl4). Furthermore, we explored the detoxification enzyme-inducing activities of crude sprout extracts in normal rats. Among the eight cruciferous vegetables, daikon radish (Raphanus sativus L.) sprouts produced the highest amount of isothiocyanates, with 4-(methylsulfinyl)-3-butenyl isothiocyanate (sulforaphene) being the dominant compound. The amount of sulforaphene in daikon radish sprouts was approximately 30 times that of sulforaphane in broccoli sprouts. Sulforaphene demonstrated hepatoprotective effects similar to sulforaphane in ameliorating CCl4-induced hepatic injury in mice. A crude extract of 3-day-old daikon radish sprouts upregulated the detoxifying enzyme glutathione S-transferase (GST) in the liver, whereas the crude extract of broccoli sprouts showed limited upregulation. This study highlights that daikon radish sprouts and sulforaphene have the potential to serve as functional food materials with hepatoprotective effects. Furthermore, daikon radish sprouts may exhibit more potent hepatoprotective effects compared to broccoli sprouts.

Abstract
Sulforaphane (SFN) is an isothiocyanate commonly found in cruciferous vegetables. It is formed via the enzymatic hydrolysis of glucoraphanin by myrosinase. SFN exerts various biological effects, including anti-cancer, anti-oxidation, anti-obesity, and anti-inflammatory effects, and is widely used in functional foods and clinical medicine. However, the structure of SFN is unstable and easily degradable, and its production is easily affected by temperature, pH, and enzyme activity, which limit its application. Hence, several studies are investigating its physicochemical properties, stability, and biological activity to identify methods to increase its content. This article provides a comprehensive review of the plant sources, extraction and analysis techniques, in vitro and in vivo biological activities, and bioavailability of SFN. This article highlights the importance and provides a reference for the research and application of SFN in the future.

Abstract
INTRODUCTION Broccoli sprouts have great health and commercial value because they are rich in sulforaphane, a special bioactive compound that helps to prevent chronic diseases, such as cancer and cardiovascular disease. OBJECTIVE The aim of this study was to increase the levels of active substances in broccoli sprouts and understand their metabolic mechanisms. METHODOLOGY Metabolomics based on liquid chromatography-tandem mass spectrometry and transcriptome analysis were combined to analyse the enrichment of metabolites in broccoli sprouts treated with cold plasma. RESULTS After 2 min of cold plasma treatment, the contents of sulforaphane, glucosinolates, total phenols, and flavonoids, as well as myrosinase activity, were greatly improved. Transcriptomics revealed 7460 differentially expressed genes in the untreated and treated sprouts. Metabolomics detected 6739 differential metabolites, including most amino acids, their derivatives, and organic acids. Enrichment analyses of metabolomics and transcriptomics identified the 20 most significantly differentially expressed metabolic pathways. CONCLUSIONS Overall, cold plasma treatment can induce changes in the expression and regulation of certain metabolites and genes encoding active substances in broccoli sprouts.

Abstract
Rutabaga, also known as swede and scientifically classified as Brassica napus napobrassica, is a biennial edible root vegetable that belongs to the Brassica genus and is widely cultivated in North Europe and North America. The present study highlights both the phytochemical profile and the in vitro biological properties of rutabaga seed extracts obtained through maceration using solvents of increasing polarity, namely, cyclohexane (CYHA), dichloromethane (DCM), ethyl acetate (EtOAc), methanol (MeOH), and water (H2O). HPLC-DAD was used to identify and quantify phenolic compounds, while volatile compounds were detected using GC-MS. The in vitro antioxidant capacity of the rutabaga seed extracts was evaluated through DPPH free radical scavenging activity. The in vitro anti-inflammatory activity (15-lipoxygenase (15-LOX) enzyme) was determined spectrophotometrically at the same concentration. Additionally, the cytotoxicity of the seed extracts was evaluated against human colon adenocarcinoma cells (Caco-2) and human embryonic kidney cells (HEK-293) using the MTT assay. The rutabaga seed extracts obtained from EtOAc, MeOH, and H2O were particularly rich in reducing sugars, ranging from 189.87 to 473.75 mg/g DW. The MeOH extract displayed the highest concentration of both sugars and polyphenols. Phytochemically, the HPLC-DAD analysis revealed the presence of four phenolic compounds in the tested extracts, including (±) synephrine, gallic acid, p-coumaric acid, and trans-ferulic acid, newly discovered in rutabaga organs. Moreover, a total of ten volatile compounds were identified through GC-MS analysis, both before and after derivatization. At a concentration of 50 µg/mL, the methanol extract exhibited high antioxidant activity with 52.95% inhibition, while CYHA, DCM, and EtOAc exhibited moderate anti-15-LOX activity with less than 30% inhibition. Except for DCM and aqueous extracts, rutabaga seeds did not exhibit any anti-proliferative potential against Caco-2 cell lines. Interestingly, no cytotoxicity was registered for any of the seed extracts against the normal cell line HEK-293. Overall, the obtained data highlight the potential utilization of rutabaga seeds as a source of bioactive compounds in various fields, including pharmaceuticals, nutraceuticals, and functional foods.

Abstract
Broccoli sprouts have been considered as functional foods which have received increasing attention because they have been highly prized for glucosinolates, phenolics, and vitamins in particular glucosinolates. One of hydrolysates-sulforaphane from glucoraphanin is positively associated with the attenuation of inflammatory, which could reduce diabetes, cardiovascular and cancer risk. In recent decades, the great interest in natural bioactive components especially for sulforaphane promotes numerous researchers to investigate the methods to enhance glucoraphanin levels in broccoli sprouts and evaluate the immunomodulatory activities of sulforaphane. Therefore, glucosinolates profiles are different in broccoli sprouts varied with genotypes and inducers. Physicochemical, biological elicitors, and storage conditions were widely studied to promote the accumulation of glucosinolates and sulforaphane in broccoli sprouts. These inducers would stimulate the biosynthesis pathway gene expression and enzyme activities of glucosinolates and sulforaphane to increase the concentration in broccoli sprouts. The immunomodulatory activity of sulforaphane was summarized to be a new therapy for diseases with immune dysregulation. The perspective of this review served as a potential reference for customers and industries by application of broccoli sprouts as a functional food and clinical medicine.

Abstract
Oxidative stress in high-yielding dairy goats adversely affects lactation length, milk quality, and the economics of dairy products. During the lactation period, goat mammary epithelial cells (GMECs) are often in a state of disordered metabolic homeostasis primarily caused by the overproduction of reactive oxygen species (ROS). Sulforaphane (SFN), an electrophilic compound that is enriched in broccoli, is a promising antioxidant agent for future potential clinical applications. The objective of the present study was to investigate the function of SFN on hydrogen peroxide (H2O2)-induced oxidative damage in primary GMECs and the underlying molecular mechanisms. Isolated GMECs in triplicate were pretreated with SFN (1.25, 2.5, and 5 μM) for 24 h in the absence or presence of H2O2 (400 μM) for 24 h. The results showed that SFN effectively enhanced superoxide dismutase (SOD) activity, elevated the ratio of glutathione (GSH)/glutathione oxidized (GSSG), and reduced H2O2-induced ROS and malondialdehyde (MDA) production and cell apoptosis. Mechanically, SFN-induced nuclear factor erythroid 2-related factor 2 (NRF2/NFE2L2) translocation to the nucleus through the activation of the adenosine monophosphate-activated protein kinase (AMPK) signaling pathway coupled with inhibition of the caspase apoptotic pathway. In addition, GMECs were transfected with NFE2L2 small interfering RNA (NFE2L2 siRNA) for 48 h and/or treated with SFN (5 μM) for 24 h before being exposed to H2O2 (400 μM) for 24 h. We found that knockdown of NFE2L2 by siRNA abrogated the preventive effect of SFN on H2O2-induced ROS overproduction and apoptosis. Taken together, sulforaphane suppressed H2O2-induced oxidative stress and apoptosis via the activation of the AMPK/NFE2L2 signaling pathway in primary GMECs.

Abstract
Sprouts are recognized as nutritional and functional vegetables. In this study, 17 selected seeds were germinated simultaneously. The antioxidant capacity and total phenolic content (TPC) were determined for seeds and sprouts of all species. Both seed and sprout of white radish, with the highest antioxidant capacity, and TPC among all the 17 species, were further determined for phenolic metabolomics. Four phenolic classes with 316 phenolic metabolites were identified. 198 significantly different metabolites with 146 up-regulated and 52 down-regulated were confirmed, and high amounts of phenolic acids and flavonoids were found to be accumulated in the sprout. Several metabolism and biosynthesis, including phenylpropanoid, favone and flavonol, phenylalanine, and various secondary metabolites, were significantly activated. Significant correlations were found among FRAP, DPPH, ABTS, TPC, and phenolic profiles. Therefore, white radish sprout could be served as antioxidant and could be a good source of dietary polyphenols.

Abstract
Germination is an effective method for improving the nutritional value of Tartary buckwheat (TB). The effects of exogenous additive treatments (caffeic acid (CA), L-phenylalanine (L-Phe), NaCl) on germination, main active component contents and antioxidant activities before and after in vitro digestion of germinated TB were investigated. Compared with the natural growth group, the T4 group (CA 17 mg/L, L-Phe 2.7 mmol/L, NaCl 2.7 mmol/L) treatment increased the germination rate (67.50%), sprout length, reducing sugar (53.05%), total flavonoid (18.36%) and total phenolic (20.96%) content, and antioxidant capacity of TB. In addition, exogenous additives treatment induced the consumption of a lot of nutrients during seed germination, resulting in a decrease in the content of soluble protein and soluble sugar. The stress degree of natural germination on seeds was higher than that of low concentrations of exogenous additives, resulting in an increase in malondialdehyde content. In vitro digestion leads to a decrease in phenolics content and antioxidant capacity, which can be alleviated by exogenous treatment. The results showed that treatment with exogenous additives was a good method to increase the nutritional value of germinated TB, which provided a theoretical basis for screening suitable growth conditions for flavonoid enrichment.

Abstract
Hepatocellular carcinoma (HCC) is the most common type of primary liver cancer, accounting for about 90% of cases. Sorafenib, lenvatinib, and the combination of atezolizumab and bevacizumab are considered first-line treatments for advanced HCC. However, clinical application of these drugs has also caused some adverse reactions such as hypertension, elevated aspartate aminotransferases, and proteinuria. At present, natural products and their derivatives have drawn more and more attention due to less side effects as cancer treatments. Isothiocyanates (ITCs) are one type of hydrolysis products from glucosinolates (GLSs), secondary plant metabolites found exclusively in cruciferous vegetables. Accumulating evidence from encouraging in vitro and in vivo animal models has demonstrated that ITCs have multiple biological activities, especially their potentially health-promoting activities (antibacterial, antioxidant, and anticarcinogenic effects). In this review, we aim to comprehensively summarize the chemopreventive, anticancer, and chemosensitizative effects of ITCs on HCC, and explain the underlying molecular mechanisms.

Abstract
Traditionally, Brassica species are widely used in traditional medicine, human food, and animal feed. Recently, special attention has been dedicated to Brassica seeds as source of health-promoting phytochemicals. This review provides a summary of recent research on the Brassica seed phytochemistry, bioactivity, dietary importance, and toxicity by screening the major online scientific database sources and papers published in recent decades by Elsevier, Springer, and John Wiley. The search was conducted covering the period from January 1964 to July 2022. Phytochemically, polyphenols, glucosinolates, and their degradation products were the predominant secondary metabolites in seeds. Different extracts and their purified constituents from seeds of Brassica species have been found to possess a wide range of biological properties including antioxidant, anticancer, antimicrobial, anti-inflammatory, antidiabetic, and neuroprotective activities. These valuable functional properties of Brassica seeds are related to their richness in active compounds responsible for the prevention and treatment of various chronic diseases such as obesity, diabetes, cancer, and COVID-19. Currently, the potential properties of Brassica seeds and their components are the main focus of research, but their toxicity and health risks must also be accounted for.

Abstract
Glucosinolates (GLs) are plant secondary metabolites that may act against different types of cancers. Broccoli (Brassica oleracea var. italica) is rich in GLs which makes it an excellent source of these nutraceuticals. The composition and concentration of GLs vary among broccoli cultivars and throughout the developmental stages of the plant. To obtain the GL profiles of broccoli, GL compositions and contents in four early developmental stages (seeds, 3-day sprouts, 11-day and 17-day seedlings) were determined for nine cultivars of broccoli in this study. A total of 12 GLs including 9 aliphatic GLs and 3 indole GLs were identified from the nine broccoli cultivars using LC-QTOF-MS. UPLC results showed that aliphatic GLs concentrations decreased with broccoli sprouts and seedling growth for most cultivars. Interestingly, indole GLs amounts increased after germination and reached the highest level in 3-day sprouts or 11-day seedlings, and they fell back to a low level in 17-day seedlings. The GL profiles of nine cultivars documented in this study will provide useful information for high quality germplasm selection for cultivation or genetic engineering, and further understanding of the GL metabolic pathways.

Abstract
The aim of the study was to evaluate the influence of the red cabbage extracts on the bioaccessibility of their isothiocyanates, and their effect on the intestinal microbiota using a dynamic model of human digestion treated with the gut microbiome of obese adults. The elicitation of red cabbage plants with methyl jasmonate (MeJA) duplicated the content of glucosinolates (GSLs) in the plant organs used for elaborating the encapsulated formula. The use of plasma membrane vesicles, according to a proper methodology and technology, showed a high retention of sulforaphane (SFN) and indol-3-carbinol (I3C) over the course of the 14-day digestion study. The microbiome was scarcely affected by the treatments in terms of microbiota composition or the Bacteroidetes/Firmicutes ratio, but a 3 to 4-fold increase was observed in the production of butyric acid with the encapsulated extract treatment. Based on our pilot red cabbage extract study, the consumption of this extract, mainly encapsulated, may play a potential role in the management of obesity in adults.

Abstract
Quinoa has a long history of cultivation and unique nutritional value. Quinoa sprouts can be eaten as leafy vegetables, but their nutritional quality is unknown. Ten quinoa sprout varieties (lines) were evaluated and compared for nutrient and functional composition. All quinoa sprout varieties had high contents of moisture content, reducing sugar, potassium, magnesium, and vitamin C. All varieties contained all essential amino acids, with leucine present in abundance. They had high contents of phenolics, flavonoids, carotenoids (β-carotene and lycopene) as well as chlorophylls a and b. Overall, var. LL-01 had better nutrient and phytochemical composition than other varieties. The potential nutritionalhealth benefits of quinoa sprouts as a vegetable are important for both traditional and contemporary diets.

Abstract
Sulforaphane (SFN) is a phytochemical compound extracted from cruciferous plants, like broccoli or cauliflower. Its isothiocyanate group renders SFN reactive, thus allowing post-translational modification of cellular proteins to regulate their function with the potential for biological and therapeutic actions. SFN and stabilized variants recently received regulatory approval for clinical studies in humans for the treatment of neurological disorders and cancer. Potential unwanted side effects of SFN on heart function have not been investigated yet. The present study characterizes the impact of SFN on cardiomyocyte contractile function in cardiac preparations from neonatal rat, adult mouse and human induced-pluripotent stem cell-derived cardiomyocytes. This revealed a SFN-mediated negative inotropic effect, when administered either acutely or chronically, with an impairment of the Frank-Starling response to stretch activation. A direct effect of SFN on myofilament function was excluded in chemically permeabilized mouse trabeculae. However, SFN pretreatment increased lactate formation and enhanced the mitochondrial production of reactive oxygen species accompanied by a significant reduction in the mitochondrial membrane potential. Transmission electron microscopy revealed disturbed sarcomeric organization and inflated mitochondria with whorled membrane shape in response to SFN exposure. Interestingly, administration of the alternative energy source l-glutamine to the medium that bypasses the uptake route of pyruvate into the mitochondrial tricarboxylic acid cycle improved force development in SFN-treated EHTs, suggesting indeed mitochondrial dysfunction as a contributor of SFN-mediated contractile dysfunction. Taken together, the data from the present study suggest that SFN might impact negatively on cardiac contractility in patients with cardiovascular co-morbidities undergoing SFN supplementation therapy. Therefore, cardiac function should be monitored regularly to avoid the onset of cardiotoxic side effects. Sulforaphane has negative inotropic effects and increases diastolic tension. Sulforaphane exposure increases lactate levels and mitochondrial ROS production and reduces mitochondrial membrane potential. l-glutamine supplementation rescues the sulforaphane-mediated reduction in force development. Sulforaphane plasma levels and cardiac function should be monitored to avoid unwanted cardiac side effects in patients.

Isothiocyanates (ITCs) are well-known chemopreventive agents that have received significant interest across the nutrition and pharmaceutical industries owing to their anticancer properties, thus it is essential to increase the conversion of glucosinolate to ITCs by myrosinase to maximize their health benefits. In this paper, using broccoli seed meals as a raw material, we comparatively analyzed the outcomes of two extraction methods: (i) hydrolysis followed by extraction (HFE) and (ii) simultaneous hydrolysis and extraction (SHE) in terms of the ITC yield. The results revealed that the SHE method showed a relatively greater erucin production from broccoli seeds and greater antitumor and antioxidant activities. A similar phenomenon was found for the hydrolysates of crude myrosinase and crude glucosinolate separated from broccoli seeds. However, when the crude glucosinolates were hydrolyzed by purified broccoli myrosinase, or when pure glucoraphanin was hydrolyzed by crude myrosinase, no significant effects were noted on the types and yields of ITCs between the SHE and HFE methods.

Abstract
Despite progress in understanding the developmental lineage and transcriptional factors regulating brown and beige adipocytes, the role of environmental modifiers, such as food components and natural extracts, remains to be elucidated. Furthermore, the undesirable pleiotropic effects produced by synthetic drugs targeting adipose tissue browning and thermogenesis necessitate research into alternative natural sources to combat obesity and related metabolic disorders. The current review, therefore, focused on the effects of various extracts from foods, plants, and marine products on adipose tissue browning and obesity. In particular, the recent findings of food components and marine products on adipose tissue browning will be discussed here.

Abstract
Broccoli sprouts represent a health-promoting food, rich in antioxidant and anti-inflammatory phytochemicals, among which sulfur compounds are most extensively investigated. In this study, the phenolics of broccoli sprouts (Brassica oleracea var. italica'Cezar') were examined for variability during germination and influence on the bioactivity of sprouts. In the sprouts germinated in darkness, 31 compounds were identified by UHPLC-PDA-ESI-MS3 (18 sinapic acid derivatives, 8 glucosinolates, and 5 flavonoids) with sinapoyl components (SADs) prevailing among polyphenols. The total SADs decreased during germination (down to 4.85 mg per g dw in 6-day-sprouts), but the concurrent changes in molecular structures of the leading compounds (sinapine was replaced by sinapate sugar esters and sinapic acid) increased the antioxidant capacity of the sprouts. The glucosinolate-depleted 6-day-sprout extract (34.2 mg SADs per g dw) effectively protected human plasma components against peroxynitrite-induced oxidative damage in vitro (reduced the levels of 3-nitrotyrosine, lipid hydroperoxides and thiobarbituric acid-reactive substances) and enhanced the non-enzymatic antioxidant status of plasma. It also downregulated the release of pro-inflammatory cytokines (TNF-α, IL-6) from LPS-stimulated human peripheral blood mononuclear cells and increased the production of IL-10, an anti-inflammatory mediator. The relevant activity parameters of sinapic acid indicated that SADs might be linked to the observed effects. The results support the application of broccoli sprouts in oxidative stress- and inflammation-related diseases and the role of SADs as their bioactive components next to glucosinolates.
