Abstract
By 2050, the world's population will rise to 9 billion, which implies that it is necessary to double protein production. We should consider more sustainable, alternative forms of protein. A solution to this is the use of insects, which offer high levels of protein and require less water than poultry, pork, and beef production. The objective of this study was to evaluate 13 countries' consumer perceptions regarding the willingness to eat specific types of insects as powdered ingredients in five food types. An online survey was conducted using Check All That Apply (CATA) to assess consumer perceptions across 13 countries. Approximately 630 consumers in each country were surveyed (total n > 8100). The CATA data were analyzed using Cochran's Q test, which showed highly significant differences among countries. The willingness to eat insects varied by country, food type, and insect species. The results of this study can be used to understand consumers' perceptions of insects and offer an indicator that can be used when developing insect-containing foods in the future.

Abstract
The growing global interest in edible insects as a sustainable protein source has positioned them as a promising solution to food security challenges. In Mexico, entomophagy is deeply embedded in cultural traditions, particularly in Oaxaca, where grasshoppers, leafcutter ants, and red agave worms form an integral part of the region's intangible heritage. This study conducted a bibliometric analysis of global research on edible insects (2009-2023) using Scopus and tools such as VOSviewer and Bibliometrix to analyze 218 publications. The analysis highlighted research trends, influential authors, and key themes, including nutrition, biosafety, and sustainability. To complement the bibliometric study, an exploratory analysis of edible insect commercialization in Oaxaca was conducted, focusing on virtual platforms and local markets. The findings reveal consistent global growth in edible insect research, with Mexico contributing six publications between 2020 and 2023. Despite advancements in safety standards and regulatory frameworks globally, Mexico still lacks formal sanitary controls and regulations for insect-based products. Nevertheless, its diverse commercialization efforts and rich cultural heritage, particularly in Oaxaca, showcase its potential to bridge tradition and innovation. This study highlights the urgent need for regulatory frameworks and research capacity to ensure safety, preserve cultural identity, and sustainably expand Mexico's edible insect market.

Abstract
In vitro meat production presents a potential viable alternative for meat consumption, which could provide the consumer with a product indistinguishable from the original, with very similar nutritional and culinary values. Indeed, the alternative products currently accessible often lack comparable nutritional value or culinary attributes to their animal-derived counterparts. This creates challenges for their global acceptance, particularly in countries where meat consumption holds cultural significance. However, while cultured meat research has been progressing rapidly in recent years, some significant obstacles still need to be overcome before its possible commercialization. Hence, this review summarizes the most current knowledge regarding the history of cultured meat, the currently used cell sources and methods used for the purpose of in vitro meat production, with particular focus on the role of bioreactors, scaffolds and microcarriers in overcoming the current obstacles. The authors put the potential microcarrier and scaffold-based solutions in a context, discussing the ways in which they can impact the way forward for the technology, including the use of considering the potential practical and societal barriers to implementing it as a viable food source worldwide.

Abstract
The consumption of insects as food and feed has been recently suggested as a possible alternative to the rising global food need, thus it is crucial to monitor any potential food safety hazards in the insect supply chain. The aims of this systematic review were to collect, select, and evaluate studies investigating the persistence of Salmonella in insects. We searched PUBMED, EMBASE, WEB of Science Core Collection, and Food Science and Technology Abstracts. In total, 36 papers investigating the persistence of Salmonella in insects (both holometabolous and heterometabolous) were included after screening. Regarding complete metamorphosis insects, the longest Salmonella persistence was reported in Phormia regina, in which the pathogen persisted for 29 days at 5 °C. Similarly, Salmonella persisted in the feces of Alphitobius diaperinus for 28 days. The incomplete metamorphosis insect showing the longest Salmonella persistence (>10 months) was Blatella germanica. Periplaneta americana excreted Salmonella via feces for 44 days until all the insects were dead. The retrieved data on the persistence of Salmonella can be useful for further analysis by risk assessors and decision-makers involved in the safety of insect-based food, contributing to defining the sanitary requirements and risk mitigation measures along the supply chain. The review protocol is registered in PROSPERO database (CRD42022329213).

Abstract
The increasing size of the human population and the shortage of highly valuable proteinaceous ingredients has prompted the international community to scout for new, sustainable, and natural protein resources from invertebrates (e.g., insects) and underutilized legume crops, unexploited terrestrial and aquatic weeds, and fungi. Insect proteins are known for their nutritional value, being rich in proteins with a good balance of essential amino acids and being a valuable source of essential fatty acids and trace elements. Unconventional legume crops were found rich in nutritional, phytochemical, and therapeutic properties, showing excellent abilities to survive extreme environmental conditions. This review evaluates the recent state of underutilized legume crops, aquatic weeds, fungi, and insects intended as alternative protein sources, from ingredient production to their incorporation in food products, including their food formulations and the functional characteristics of alternative plant-based proteins and edible insect proteins as novel foods. Emphasis is also placed on safety issues due to the presence of anti-nutritional factors and allergenic proteins in insects and/or underutilized legumes. The functional and biological activities of protein hydrolysates from different protein sources are reviewed, along with bioactive peptides displaying antihypertensive, antioxidant, antidiabetic, and/or antimicrobial activity. Due to the healthy properties of these foods for the high abundance of bioactive peptides and phytochemicals, more consumers are expected to turn to vegetarianism or veganism in the future, and the increasing demand for such products will be a challenge for the future.

Abstract
Due to the recent increase in the human population and the associated shortage of protein resources, it is necessary to find new, sustainable, and natural protein resources from invertebrates (such as insects) and underutilized plants. In most cases, compared to plants (e.g., grains and legumes) and animals (e.g., fish, beef, chicken, lamb, and pork), insect proteins are high in quality in terms of their nutritional value, total protein content, and essential amino acid composition. This review evaluates the recent state of insects as an alternative protein source from production to application; more specifically, it introduces in detail the latest advances in the protein extraction process. As an alternative source of protein in food formulations, the functional characteristics of edible insect protein are comprehensively presented, and the risk of allergy associated with insect protein is also discussed. The biological activity of protein hydrolyzates from different species of insects (Bombyx mori, Hermetia illucens, Acheta domesticus, Tenebrio molitor) are also reviewed, and the hydrolysates (bioactive peptides) are found to have either antihypertensive, antioxidant, antidiabetic, and antimicrobial activity. Finally, the use of edible insect protein in various food applications is presented.

Abstract
The objective of this review was to carry out a comprehensive investigation of the benefits of incorporating insects as a pet food ingredient and the implications this can have in determining a market demand for insect-based pet foods. Black soldier fly larvae (Hermetia illucens), mealworm larvae (Tenebrio molitor) and adult house crickets (Acheta domesticus) are currently used in pet food. These insects are widely fed to exotic pets, mainly in whole, live or dehydrated formats. They are also incorporated as meal or fat and are offered to cats and dogs as dry or wet food and treats. Scientific studies about the use of insects for dog and cat feed are scarce. Most studies are in dogs. Research shows that insect nutrients, mainly amino acids, have high digestibility, are beneficial to health, do not have any detrimental effect on the gut microbiota and are accepted by dogs. In several countries, insects are approved for use in pet food and commercialization has spread throughout the world. Pet owners are willing to try foods made with insect meal for their pets. In conclusion, the use of insects in pet food is a reality that is taking on more and more prominence.

An Insight into the Level of Information about Sustainability of Edible Insects in a Traditionally Non-Insect-Eating Country: Exploratory Study. SUSTAINABILITY 2021. Abstract
Insects have been reported as a possible alternative solution to help feed the growing world population with less stress on the planet, thus contributing to the preservation of the environment and natural ecosystems. However, the consumption of edible insects (EIs), although culturally accepted for some communities, is not readily accepted for others. Hence this work explores the level of information that people in a traditionally non-insect-eating country have about the sustainability issues related with EIs, and also some possible reasons that could motivate their consumption. The study was based on a questionnaire survey and the results were explored by descriptive statistic tools, tree classification analysis, factor analysis and cluster analysis. The results showed that the level of information is still low in general, with most people not manifesting an opinion. However, some aspects are relatively familiar to the participants (88.9% know that the ecological footprint of insects is smaller than other meats and 86.9% know that they efficiently convert organic matter into protein). Factor and cluster analysis showed three classes: cluster 1—people not informed about the facts disclosed through the true statements and also not able to distinguish the false information; cluster 2—people not informed about the facts disclosed through the true statements but who were able to distinguish the false information; and cluster 3—people well informed about the facts disclosed through the true statements but who were marginally unable to distinguish the false information. It was also found that education, sex and professional area are the most relevant sociodemographic factors associated with the level of information, and the highest motivations to consume EIs are their contribution to preserve the environment and natural resources followed by being a more sustainable option (for 64.7% and 53.4% of participants, respectively). Hence it was concluded that, although some work still needs to be done to better inform people about EIs, there is already some conscientiousness that they constitute a good and more sustainable alternative to other types of meat.

Abstract
In Western countries, one of the main barriers to entomophagy is repulsion toward insects. Few studies have investigated the factors that influence attitudes toward entomophagy. Therefore, we conducted a cross-sectional study involving a sample of 248 university students, focusing on disgust and other potential attributes that can influence insect consumption, including health literacy. We used a 17-item self-administered questionnaire. Consistent with the literature, two items were chosen as outcome variables to evaluate the predictors of the propensity to consume insects: "Have you ever eaten insects or insect-based products?" and "How disgusting do you find eating insects?" The data analysis shows that having already eaten insects is inversely associated with the level of disgust (OR: 0.1, p < 0.01); and it is positively associated with higher levels of health literacy (OR: 3.66, p > 0.01). Additionally, having some knowledge and information about entomophagy is inversely associated with a higher level of disgust (OR: 0.44, p = 0.03 and OR: 0.25, p = 0.03, respectively), while being female is positively associated with disgust (OR: 3.26, p < 0.01). Our results suggest the potential role of health literacy, in addition to other factors, in influencing the willingness to taste insects. However, further studies involving larger and non-convenience samples are needed to confirm our hypothesis.

Abstract
Pasta, bread, and bakery products are considered worldwide as essential foods for human nutrition. In particular, ancient wheats and whole wheat flours, despite being able to provide health benefits via bioactive compounds, present significant technological problems related to poorer dough rheological properties and final product characteristics. Moreover, both the food industry and consumers are increasingly sensitive to environmental impacts, highlighting the urgent need for sustainable innovations and improvement strategies, from cradle to grave, for the entire production chains, thus motivating this review. The aim of this review is to provide technological innovations and improvement strategies to increase the sustainability, productivity, and quality of flours, pasta, bread, and bakery products. This review is focused on the main operations of the production chains (i.e., wheat cultivation, wheat milling, dough processing, and, finally, the manufacturing of pasta, bread, and bakery products). To achieve this goal, the use of life-cycle assessment (LCA) analysis proved to be an effective tool that can be used, from early stages, for the development of eco-friendly improvement strategies. The correct management of the wheat cultivation stage was found to be essential since it represents the most impacting phase for the environment. Successively, particular attention needs to be paid to the milling process, the kneading phase, to breadmaking, and, finally, to the manufacturing of pasta. In this review, several specifically developed solutions for these essential phases were suggested. In conclusion, despite further investigations being necessary, this review provided several innovations and improvement strategies, using an approach “from cradle to grave”, able to increase the sustainability, productivity, and final quality of flour, semolina, pasta, bread, and bakery products.

Abstract
The paper presents the effect of replacing starch (at 2%, 6% and 10%) with cricket powder (CP) on the water behavior studied by the 1H NMR method, as well as the texture of gluten-free bread during 6-day storage. It was noticed that the bread crumb containing CP has lower water transport rate than the control bread crumb, while concluding that 2% CP stabilizes water transport throughout the entire staling time range. The NMR analyzes showed that the initial T21 values are the higher, the more starch has been replaced with the CP, however, after 6 days of storage, all tested samples are characterized by similar values of the T21 parameter. A decrease in long component of spin-spin relaxation time T22 during storage was also observed. It has been noted that the replacement of starch to 2% and 6% CP causes an increase in the molecular dynamics of water. The less starch present, the greater the potential for bulk molecules to move. The observed changes at the molecular level resulted in macroscopic changes in the texture of the bread. After analyzing the hardness parameter of the tested breads, it was found that on the day of baking, bread without the addition of CP had significantly higher values of this parameter than breads with CP. For the sample without CP, the highest increase in total hardness change (123.93%) was noted during storage, which indicates the fastest texture change process. Based on the results obtained, it can be concluded that the use of cricket powder to enrich gluten-free bread can not only improve the nutritional value, but also effectively delay the process of bread staling.

Abstract
Inclusion of edible insects in human diets is increasingly promoted as a sustainable source of proteins with high nutritional value. While consumer acceptability remains the main challenge to their integration into Western food culture, the use of edible insects as meal and protein concentrate could decrease neophobia. The defatting of edible insects, mostly done with hexane, is the first step in producing protein ingredients. However, its impact on protein profiles and techno-functionality is still unclear. Consequently, this study compares the protein profiles of hexane-defatted and non-hexane-defatted yellow mealworm (Tenebrio molitor) meals and protein extracts, and evaluates the impact of hexane on protein solubility and foaming properties. Results showed that profiles for major proteins were similar between hexane-defatted and non-defatted samples, however some specific content differences (e.g., hexamerin 2) were observed and characterized using proteomic tools. Protein solubility was markedly lower for T. molitor meals compared to protein extracts. A large increase in the foaming capacity was observed for defatted fractions, whereas foam stability decreased similarly in all fractions. Consequently, although the hexane-defatting step was largely studied to produce edible insect protein ingredients, it is necessary to precisely understand its impact on their techno-functional properties for the development of food formulations.

Abstract
It is becoming more feasible to use nano-enabled agricultural products such as nanofertilizers and nanopesticides to improve the efficiency of agrochemical delivery to crop plants. Experimental results have shown that nano-agrochemicals have great potential for reducing the environmental impact of traditional agrochemicals while simultaneously significantly increasing crop production. However, emerging data suggest that nano-enabled products are not only capable of increasing yield, but also result in alterations in crop quality. Variation in proteins, sugars, starch content, as well as in metallic essential elements have been reported. Verbi gratia, albumin, globulin, and prolamin have been significantly increased in rice exposed to CeO2 engineered nanoparticles (ENPs), while CeO2, CuO, and ZnO ENPs have increased Ca, Mg, and P in several crops. Conversely, reductions in Mo and Ni have been reported in cucumber and kidney beans exposed to CeO2 and ZnO engineered nanomaterials, respectively. However, reports on specific effects in human health due to the consumption of agricultural products obtained from plants exposed to nano-agrochemicals are still missing.

Abstract
Introduction Despite the implementation of many preventive and control systems developed by governments, the spread of COVID-19 and its resulting infection rate are alarmingly increasing from time to time all over the world. In Ethiopia, public places visited by large numbers of people where preventive and control measures are poorly practiced are considered to be potentially contributing to the spread of the disease. Food and drink establishments are among the highly susceptible public establishments visited by large numbers of people who interact among themselves and with employees. Hence, this study aimed to measure the compliance with COVID-19 preventive and control measures among food and drink establishments in the selected towns of Bench-Sheko and West-Omo Zones in Ethiopia. Methods A cross-sectional study was conducted among food and drink establishments in selected towns of Bench-Sheko and West-Omo zones from May 15, 2020 to June 15, 2020. A census of all 324 food and drink establishments found in the study area was conducted, and data were obtained from managers of the establishments through face-to-face interviews. Data were entered in to Epidata manager and exported to SPSS version 24.0 for analysis. Percentage compliance score was computed to describe the level of compliance. Ethical approval was obtained from Mizan-Tepi University Institutional Review Board, and written informed consent was obtained from every participant. Results The overall compliance level with COVID-19 preventive and control measures was 55.5%. The majority (89%) of the food and drink establishments had functional hand washing facilities at the main entrance gate. Less than half of the food and drink establishments had posted written materials promoting hand washing, arranged tables and chairs in a manner that they accommodate not more than four people at once and at least 2 meters apart, carry out daily cleaning and disinfection of frequented touched surfaces, and provided education or training for their workers about COVID-19. Conclusion The overall compliance level with COVID-19 preventive and control measures among food and drink establishments was very poor. Thus, it is highly recommended that the federal government of Ethiopia, the federal ministry of health, and local health authorities consider a move towards more solid, strict, and comprehensive compulsory measures, including fines that can lead up to the closure of non-compliant establishments.

Abstract
High-quality, gluten-free doughs and bakery products are clearly more difficult to produce than wheat flour-based products. The poor quality of the breads that are currently available demonstrates that manufacturing remains a significant technological problem. This is mainly due to the absence of gluten, which has a huge negative impact on dough rheology and bread characteristics. Gluten replacement is still the major challenge in the development of doughs and baked goods. The literature documents various improvement strategies. The most active approach seeks to identify alternative ingredients that can mimic the viscoelastic properties of the gluten network, notably hydrocolloids, enzymes, emulsifiers, and alternative sources of protein. However, other innovative strategies, such as high pressure, using heat to dry flour, and sourdough fermentation, have been investigated. In this context, the first aim of this review is to summarize current knowledge regarding gluten-free doughs, breads, and bakery products. Secondly, as it is clear that the manufacture of gluten-free products remains a key challenge, it suggests some improvement strategies that can boost their nutritional, technological, and sensorial characteristics.

Abstract
The bacterial community profile of cricket powder highlighted the presence of four main genera: Bacteroides spp., Parabacteroides spp., Lactococcus spp., and Enterococcus spp. The spontaneous fermentation of cricket powder allowed for the isolation and characterization of seven lactic acid bacteria strains belonging to six species: Latilactobacillus curvatus, Lactiplantibacillus plantarum, Latilactobacillus sakei, Lactococcus garvieae, Weissella confusa, and Enterococcus durans. The strains were characterized and selected according to different technological properties. L. plantarum CR L1 and L. curvatus CR L13 showed the best performance in terms of general aminopeptidase activity, acidification, and growth rate in MRS broth and in dough with cricket powder and wheat flour, as well as robustness during consecutive backslopping. Thus, they were used as starter-mixed to produce sourdough to manufacture bread fortified with 20% cricket powder. The addition of cricket powder led to a significant increase of protein (up to 94%) and lipid content, from 0.7 up to 6 g/100 g of bread. Spontaneous fermentation represents a source of microbial diversity that can be exploited in order to obtain potential starters for food with innovative ingredients. Edible insects powder can be successfully added in leavened baked goods to enhance their nutritional value.

Abstract
Findings of viable Salmonella spp., which are important foodborne pathogens, are seemingly not reported in mealworms (Tenebrio molitor) for feed and food. Still, the bacterial load of mealworms is naturally high and includes members of the Enterobacteriaceae family to which Salmonella belong. This indicates that Salmonella may be able to thrive in mealworms if introduced into the production. Therefore, this study aimed to assess the quantitative level of Salmonella enterica serovar Typhimurium (ST) in mealworms over a 14-day course after exposure to substrate contaminated with ST levels from 1.7 to 7.4 log CFU/g at start (i.e., day 0). The level of ST found in larvae was below the quantitative detection level (1 or 2 log CFU/g) on day 1 in larvae exposed to contamination levels of 1.7, 3.4, and 3.6 log CFU/g opposed to contamination levels of 5.4, 5.6, and 7.4 log CFU/g, respectively. The maximum level of ST detected in individual 1-g larvae samples was 5.8 log CFU/g, but the level varied among the triplicate samples from each sampling, and the highest average value was 5.3 ± 0.3. Beyond day 7, only larvae exposed to the contamination level of 7.4 log CFU/g were >1.0 log CFU/g in the triplicate samples. However, qualitative testing (10 g) showed the presence of ST in larvae until the end of the experiment on day 14 except for the lowest contamination level of 1.7 log CFU/g. Parallel testing of surface disinfected larvae indicated that some larvae may be ST-positive due to Salmonella residing on the surface only. Still, any detection of Salmonella is of concern from a food safety perspective. In substrate with contamination levels below 3.6 log CFU/g, the level of ST was below the quantitative detection limit within a few days. Still, ST was detected until the end of experiment on day 14 except for the lowest contamination level of 1.7 log CFU/g. This study indicates the importance of avoiding introduction of Salmonella into the production, e.g., via contaminated substrate in order to avoid Salmonella-positive larvae as they remained positive for at least 14 days (except at the lowest contamination level).

Abstract
An important requirement in the grain industry is to obtain fast information on the quality of purchased and stored grain. Therefore, it is of great importance to search for innovative solutions aimed at the monitoring and fast assessment of quality parameters of stored wheat The results of the evaluation of total protein, water and gluten content by means of near infrared spectrometry are presented in the paper. Multiple linear regression analysis (MLR) and neural modeling were used to analyze the obtained results. The results obtained show no significant changes in total protein (13.13 ± 0.15), water (10.63 ± 0.16) or gluten (30.56 ± 0.54) content during storage. On the basis of the collected data, a model artificial neural network (ANN) MLP 52-6-3 was created, which, with the use of four independent features, allows us to determine changes in the content of water, protein and gluten in stored wheat. The chosen network returned good error values: learning, below 0.001; testing, 0.015; and validation, 0.008. The obtained results and their interpretation are an important element in the warehouse industry. The information obtained in this way about the state of the quality of stored grain will allow for a fast reaction in case of the threat of lowering the quality parameters of the stored grain.
