Abstract
The sensitive detection of quinalphos in food is crucial due to its improper use and the potential for serious harm. Surface-enhanced Raman spectroscopy (SERS) technology, provides a new way for rapid and ultra-sensitive detection. To exploit the molecular sieving effect of metal-organic frameworks (MOFs) in mitigating interference from food matrix components during pesticide residue detection, a novel chiral spiny L-Au@Ag@ZIF-8 (L-AAZ) three-layer core-shell composite was developed as an effective SERS substrate, with chiral L-AABPs providing abundant "hot spots" and spiny ZIF-8 shell provides excellent absorption properties, causing a five-fold increase in SERS intensity compared to traditional Au@Ag NPs. The experimental results revealed that L-AAZ achieved a high enhancement factor (EF) of 3.15 × 105, a low limit of detection (LOD) of 6.56 × 10-10 M, and a relative standard deviation (RSD) of 14.6 % for malachite green (MG), indicating its superior SERS sensitivity and consistency. Moreover, it demonstrated stable performance, maintaining good storage stability for up to 55 days. The substrate's suitability for the actual fruit sample (tangerine) was confirmed, showing an LOD of 10 ng/mL, demonstrating its capability for rapid and sensitive detection of trace amounts of pesticide residues in food.

Abstract
Constructing a solid electrolyte interface (SEI) layer to suppress dendrite growth is an effective approach in Zn-based aqueous batteries. Traditional SEI layers are limited by their simple structure and composition, enabling only one functionality of either providing nucleation sites or facilitating desolvation. In this study, a pulse guidance ion-accelerator is constructed by kinetics-controlled co-assembly of zincophilic micelles and zincophobic metal-organic framework (MOF). The closely packed soft micelles, in conjunction with the hard MOF host particles, form a multi-tiered soft-in-hard hetero-structure that accelerates adsorption, pre-desolvation, and subsequent desolvation processes, facilitating the (002) crystal plane dendrite-free deposition. As a result, stable cycling over 1900 h (31 mV polarization) in symmetric cell and 5200 cycles in the Zn//Cu battery (99.8% coulombic efficiency) can be achieved. These findings will effectively promote the development of stable and long-cycling aqueous zinc-ion batteries.

Abstract
Deep dewatering is crucial for effectively reducing the volume of organic waste and facilitating its downstream transportation and disposal. An in-depth understanding of the occurrence states, composition, and morphological characteristics of moisture in organic waste is the basis for optimizing the dewatering process, improving dewatering efficiency, and reducing energy consumption. Given the common problems of time-consuming, low sensitivity, and poor parallelism of traditional methods, this work reviews the advanced in-situ analysis methods for moisture distribution of organic waste. The Raman microscopy imaging technique is highlighted to provide a new approach for visualizing the spatial distribution of moisture with different binding strengths in solid flocs. Various physical, chemical, and biological characteristics and characterization methods of organic waste related to deep dewatering are introduced, and they are correlated with conditioning methods. Almost all conditioning will cause changes in the physical characteristics of organic waste, while the improvement of dewatering performance is actually caused by changes in the chemical composition and biological characteristics of the matrix, and these characteristics are intrinsically related to the moisture distribution. The characterization and in-situ moisture detection methods presented in this work aim to support future studies in understanding changes in material composition related to improving dewatering performance and further clarifying the mechanisms of deep dewatering of organic wastes.

Abstract
A highly sensitive method based on MBs-cDNA@Apt-AuNCs519 was developed for deoxynivalenol (DON) detection in wheat. The MBs-cDNA@Apt-AuNCs519 was established using green emission gold nanoclusters (AuNCs519) with aggregation-induced emission properties as signal probes and combining amino-modified DON-aptamer (Apt), biotin-modified DNA strand (the partially complementary to Apt (cDNA)), and streptavidin-modified magnetic beads (MBs). The Apt-AuNCs519 were well connected with MBs-cDNA without DON but dissociated from MBs-cDNA@Apt-AuNCs519 with the addition of DON, leading to a noticeable reduction in the fluorescent intensity of the aptasensor. Moreover, this fluorescence aptasensor showed two linear relationships in the concentration range of 0.1-50 ng/mL and 50-5000 ng/mL with a limit of detection of 3.73 pg/mL with good stability, reproducibility and specificity. The results were consistent with high-performance liquid chromatography and enzyme-linked immunosorbent assay methods, further indicating the potential of this method for accurate trace detection of DON in wheat.

Abstract
Dietary fiber (DF) significantly affects the quality attributes of food matrices. Depending on its chemical composition, molecular structure, and degree of hydration, the behavior of DF may differ. Numerous reports confirm that incorporating DF derived from food waste into food products has significant effects on textural, sensory, rheological, and antimicrobial properties. Additionally, the characteristics of DF, modification techniques (chemical, enzymatic, mechanical, thermal), and processing conditions (temperature, pH, ionic strength), as well as the presence of other components, can profoundly affect the functionalities of DF. This review aims to describe the interactions between DF and water, focusing on the effects of free water, freezing-bound water, and unfreezing-bound water on the hydration capacity of both soluble and insoluble DF. The review also explores how the structural, functional, and environmental properties of DF contribute to its hydration capacity. It becomes evident that the interactions between DF and water, and their effects on the rheological properties of food matrices, are complex and multifaceted subjects, offering both opportunities and challenges for further exploration. Utilizing DF extracted from food waste exhibits promise as a sustainable and viable strategy for the food industry to create nutritious and high-value-added products, while concurrently reducing reliance on primary virgin resources.

Abstract
The freezing point (FP) is an important quality indicator of the superchilled meat. Currently, the potential of hyperspectral imaging (HSI) for predicting beef FP as affected by multiple freeze-thaw (F-T) cycles was explored. Correlation analysis revealed that the FP had a negative correlation with the proportion of bound water (P21) and a positive correlation with the proportion of immobilized water (P22). Moreover, the optimal wavelengths were selected by principal component analysis (PCA). Principal component regression (PCR) and partial least squares regression (PLSR) models were successfully developed based on the optimal wavelengths for predicting FP with determination coefficient in prediction (RP2) of 0.76, 0.76 and root mean square errors in prediction (RMSEP) of 0.12, 0.12, respectively. Additionally, PLSR based on full wavelengths was established for predicting P21 with RP2 of 0.80 and RMSEP of 0.67, and PLSR based on the optimal wavelengths was established for predicting P22 with RP2 of 0.87 and RMSEP of 0.66. The results show the potential of hyperspectral technology to predict the FP and moisture distribution of meat as a nondestructive method.

Abstract
The structure, physicochemical and anti-freeze properties of natural deep eutectic solvent (NADES) composed of inulin and L-proline (molar ratio of 1:11) were investigated. Proton nuclear magnetic resonance (1H NMR), Fourier infrared spectroscopy (FTIR), and Raman spectroscopy revealed extensive hydrogen bonding in the pure NADES system, and the addition of water weakens the hydrogen bonding interactions between the components. The smaller transverse relaxation time (T2) represents the stronger hydrogen bond strength, and NADES+40 % H2O exhibited a large T2 (71.68 ms). When 10 % water was added, the viscosity decreased from 3620 mPa·s to 1777 mPa·s, but the conductivity increased to approximately twice the original value. Furthermore, adding 10 % water lowered the glass transition temperature (Tg) of NADES by 5.6 °C. NADES+10 % H2O exhibited favorable thermal stability and freezing resistance, as evidenced by the fact that approximately 82.61 % of the ice crystals area <200 μm2 after 30 min of crystallization. The changes in the structure, physicochemical, and anti-freezing properties of water-tailored NADES are expected to enable the design of novel antifreeze agents.

Abstract
For addressing the challenges of strong affinity SERS substrate to organophosphorus pesticides (OPs), herein, a rapid water-assisted layer-by-layer heteronuclear growth method was investigated to grow uniform UiO-66 shell with controllable thickness outside the magnetic core and provide abundant defect sites for OPs adsorption. By further assembling the tailored Au@Ag, a highly sensitive SERS substrate Fe3O4-COOH@UiO-66/Au@Ag (FCUAA) was synthesized with a SERS enhancement factor of 2.11 × 107. The substrate's suitability for the actual vegetable samples (cowpeas and peppers) was confirmed under both destructive and non-destructive detection conditions, showing a strong SERS response to fenthion and triazophos, with limits of detection of 1.21 × 10-5 and 2.96 × 10-3 mg/kg in the vegetables under destructive conditions, and 0.13 and 1.39 ng/cm2 for non-destructive detection, respectively. The FCUAA substrate had high SERS performance, effective adsorption capability for OPs, and demonstrated good applicability, thus exhibiting great potential for rapid detection of trace OPs residues in the food industry.

Abstract
Supercooling is a main controllable factor for the fundamental understanding the high-pressure shift freezing (HPSF). In the study, a self-developed device based on the diamond anvil cell (DAC) and confocal Raman microscopy was utilized to realize an in-situ investigation of supercooling behaviour during HPSF of the pure water and sucrose solution. The spectra were used to determine the freezing point which is shown as a spectral phase marker (SD). The hydrogen bond strengths of water and sucrose solution under supercooling states were estimated by peak position and peak area ratio of sub-peaks. The results showed that the OH stretching bands had redshift under supercooling states. Moreover, the addition of sucrose molecules could strengthen the hydrogen bonding strength of water molecules under supercooling states. Thus, the DAC combined with Raman spectroscopy could be considered a novel strategy for a deep understanding of the supercooling behaviour during HPSF.

Abstract
Conventional strategies for highly efficient and selective CO2 photoreduction focus on the design of catalysts and cocatalysts. In this study, we discover that hydrogen bond network breakdown in reaction system can suppress H2 evolution, thereby improving CO2 photoreduction performance. Photosensitive poly(ionic liquid)s are designed as photocatalysts owing to their strong hydrogen bonding with solvents. The hydrogen bond strength is tuned by solvent composition, thereby effectively regulating H2 evolution (from 0 to 12.6 mmol g-1 h-1). No H2 is detected after hydrogen bond network breakdown with trichloromethane or tetrachloromethane as additives. CO production rate and selectivity increase to 35.4 mmol g-1 h-1 and 98.9 % with trichloromethane, compared with 0.6 mmol g-1 h-1 and 26.2 %, respectively, without trichloromethane. Raman spectroscopy and theoretical calculations confirm that trichloromethane broke the systemic hydrogen bond network and subsequently suppressed H2 evolution. This hydrogen bond network breakdown strategy may be extended to other catalytic reactions involving H2 evolution.

Abstract
Anion exchange membrane fuel cells (AEMFCs) provide one of the most feasible remedies to fuel cells' dependency on the dwindling Pt group catalysts. Nevertheless, AEMFCs still suffer reduced durability, which requires an in-depth understanding of their membranes. The low thermal endurance of the anion exchange membranes (AEMs) usually limits the direct application of powerful techniques, such as Raman spectroscopy. We sought to establish a system for coherent anti-Stokes Raman scattering (CARS) spectroscopy capable of taking measurements inside an AEM rapidly and accurately without photodamage. A 785 nm CARS system was newly developed to study the water species in an AEM (QPAF-4) located vertically in a fuel cell. From the results of water measurement in a QPAF-4 membrane, the OH-related region was deconvoluted into nine Gaussian peaks: Five H-bonded OH peaks, non-H-bonded OH, OH-, and two CH peaks. The H-bonded species increased with increasing relative humidity, but the other species remained constant. These results open unlimited possibilities for studying and comparing different AEMFCs, enabling more rapid technology optimization.

Abstract
A new type of durian-shaped Fe3O4@Au@Ag@Au (DFAAA) multilayer core-shell composite was prepared as an efficient surface-enhanced Raman scattering (SERS) substrate. The optimization process and SERS enhancement mechanism of the substrate were further explained with finite-difference time-domain simulation. The dense and uniform spiny array on the DFAAA surface had abundant "hot spots", greatly improving sensitivity, uniformity and reproducibility, with a Raman enhancement factor of 3.01 × 107 and storage-life of 30 d. A "flow magnetic detection method" was proposed to realize rapid and flexible detection of pesticide residues on the surface of different foods including fish and apple. The limit of detection of malachite green and thiram on the fish and apple surfaces were 0.13 and 0.18 ng/cm2, respectively. With its high SERS performance and good magnetic, the DFAAA possessed great application prospects as a facile SERS substrate for rapid and non-destructive detection of trace pesticide residues on foods.

Abstract
Anion exchange membrane fuel cells (AEMFCs) hold the key to future mass commercialisation of fuel cell technology, even though currently, AEMFCs perform less optimally than proton exchange membrane fuel cells (PEMFCs). Unlike PEMFCs, AEMFCs have demonstrated the capability to operate independently of Pt group metal-based catalysts. Water characterization inside the membrane is one factor that significantly influences the performance of AEMFCs. In this paper, different water species inside an anion exchange membrane (AEM), QPAF-4, developed at the University of Yamanashi, were studied for the first time using micro-Raman spectroscopy. Spectra of pure water, alkaline solutions, and calculations based on density functional theory were used to identify the water species in the AEM. The OH stretching band was deconvoluted into nine unique Gaussian bands. All the hydrogen-bonded OH species increased steadily with increasing humidity, while the CH and non-H-bonded OH remained relatively constant. These results confirm the viability of micro-Raman spectroscopy in studying the various water-related species in AEMs. The availability of this technique is an essential prerequisite in improving the ionic conductivity and effectively solving the persisting durability challenge facing AEMFCs, thus hastening the possibility of mass commercialisation of fuel cells.

Abstract
In this study, silver nanoparticles (AgNPs) are self-assembled onto the polyamide (PA) pore array through hydrogen bonding, resulting in and optimizing the PA/Ag 3D pore array substrates. The best surface-enhanced Raman scattering (SERS) substrate is obtained with a pore depth of 500 nm in the PA array, 30 nm AgNPs, at a pH of 5.0, and a 24 h assembly time. The SERS performance of the substrates is assessed using rhodamine 6G (R6G) as a probe molecule. The detection limit of the R6G molecule reaches 10-13 M, and the relative standard deviation is under 20%, indicating good enhancement ability and reproducibility. Furthermore, label-free detection of pesticide contaminant diquat with a detection limit of 2.69 × 10-9 M is achieved using the optimized 3D substrate, which meets environmental monitoring requirements for drinking water. The findings demonstrate that this 3D SERS substrate has promising potential for use and development in the fields of contaminant detection and chemical sensing.

Abstract
Tropomyosin (TM) is the main allergen in shellfish. Developing a novel, simple and accurate method to track and detect TM in food products is necessary. In this work, a label-free fluorescent aptasensor based on polythymidine (poly(T))-templated copper nanoclusters (CuNCs) was designed for sensitive detection of TM in processed shrimp products. Magnetic beads (MBs), aptamer and cDNA were used to construct an MBs-aptamer@cDNA complex as a detection probe, and with the presence of TM, the poly(T)-templated CuNCs attached at the end of the cDNA as the fluorescent signal was released from the complex to turn on the fluorescence. Under optimal conditions, the poly(T)-templated CuNCs aptasensor achieved a linear range from 0.1 to 50 μg/mL (R2 = 0.9980), a low limit of detection of 0.0489 μg/mL and an excellent recovery percentage of 105.29%-108.91% in the complex food matrix, providing a new approach for food safety assurance.

Abstract
High-performance plasmonic substrates have recently attracted much research attention. Herein, a three-dimensional gold nanoparticles (AuNPs) spherical liquid array (SLA) with high "hot spots" and tunable nanometer gap by optimizing the proportion of AuNPs colloids over chloroform was synthesized based on a water-oil interfacial self-assembly strategy. The substrate demonstrated excellent surface-enhanced Raman scattering (SERS) performance using tetrathiafulvalene and rhodamine 6G (R6G) as probe molecules. With a simple extraction and soaking pretreatment process, the SLA exhibited high sensitivity for analysing triazophos on apple peels, with a limit of detection (LOD) of 0.005 µg/mL and recovery ranging from 96 to 110 %. Particularly, the chloroform produced an inherent characteristic peak at 665 cm-1, which was used as the internal standard to correct SERS signal fluctuation, leading to an improvement of the corresponding coefficient R2 from 0.97 to 0.99, thus improving the reproducibility. Therefore the SLA substrate possesses the potential for quantitative analysis of food contaminants.

Abstract
In this review, the rehydration kinetics model, the quality factors affecting of vegetables during rehydration process, the future challenges and development direction of rehydration process were comprehensively analyzed. Based on the fitting equation for the change in moisture content during rehydration, a suitable rehydration model can be selected to describe the rehydration process of vegetables. Optimal pre-treatment, drying and rehydration methods were selected by considering quality, energy consumption and environmental aspects, and new technologies were developed to improve the quality characteristics of rehydrated vegetables. It is necessary to classify vegetables according to their shape and type to establish the criteria of rehydration processing through mathematical modeling. Industrial production from pre-treatment to product packaging will be precisely adjusted through process parameters. Furthermore, improvements the quality of rehydrated vegetables can be considered in terms of the structural and compositional aspects of the cell wall and cell membrane.

Abstract
Aflatoxin B1 (AFB1) contamination severely threatens human and animal health, it is thus critical to construct a strategy for its rapid, accurate, and visual detection. Herein, a multimodal biosensor was proposed based on CRISPR/Cas12a cleaved G-quadruplex (G4) for AFB1 detection. Briefly, specific binding of AFB1 to the aptamer occupied the binding site of the complementary DNA (cDNA), and cDNA then activated Cas12a to cleave G4 into fragments. Meanwhile, the intact G4-DNAzyme could catalyze 3, 3', 5, 5'-tetramethylbenzidine (TMB) to form colourimetric/SERS/fluorescent signal-enhanced TMBox, and the yellow solution produced by TMBox under acidic conditions could be integrated with a smartphone application for visual detection. The colourimetric/SERS/fluorescent biosensor yielded detection limits of 0.85, 0.79, and 1.65 pg·mL-1, respectively, and was applied for detecting AFB1 in peanut, maize, and badam samples. The method is suitable for visual detection in naturally contaminated peanut samples and has prospective applications in the food industry.

Abstract
The cellulose industry depends heavily on water owing to the hydrophilic nature of cellulose fibrils and its potential for sustainable and innovative production methods. The emergence of nanocellulose, with its excellent properties, and the incorporation of nanomaterials have garnered significant attention. At the nanoscale level, nanocellulose offers a higher exposure of hydroxyl groups, making it more intimate with water than micro- and macroscale cellulose fibers. Gaining a deeper understanding of the interaction between nanocellulose and water holds the potential to reduce production costs and provide valuable insights into designing functional nanocellulose-based materials. In this review, water molecules interacting with nanocellulose are classified into free water (FW) and bound water (BW), based on their interaction forces with surface hydroxyls and their mobility in different states. In addition, the water-holding capacity of cellulosic materials and various water detection methods are also discussed. The review also examines water-utilization and water-removal methods in the fabrication, dispersion, and transport of nanocellulose, aiming to elucidate the challenges and tradeoffs in these processes while minimizing energy and time costs. Furthermore, the influence of water on nanocellulose properties, including mechanical properties, ion conductivity, and biodegradability, are discussed. Finally, we provide our perspective on the challenges and opportunities in developing nanocellulose and its interplay with water.

Abstract
Surface-enhanced Raman spectroscopy (SERS) technology has been revived and developed with the introduction of metal-organic frameworks (MOFs), while more valuable properties of MOFs for SERS substrates remain largely unexplored. This work constructed a new SERS substrate Fe3O4@UiO-66(Zr)@Ag nanoparticles (FUAs) with excellent SERS detection sensitivity, uniformity, reproducibility and stability, exhibiting a high Raman enhancement factor (5.62 × 106), low limit of detection (LOD, 2.11 × 10-11 M) and RSD (12.41 %) for 4-NBT, and maintaining 81 % SERS activity within 60 days. The FUAs took full advantage of the strong affinity of UiO-66(Zr) for organophosphorus pesticides (OPs) to realize trace OPs detection. The LODs of phoxim, triazophos and methyl parathion in apple juice were 0.041, 0.021 and 0.0031 mg/L, respectively, with good linearities ranging from 0.02 or 0.1-50 mg/L, meeting the requirements of the food control standards, indicating that the potentials and prospects of the FUAs SERS substrate for trace detecting OPs in foods.

Abstract
Highly concentrated aqueous binary solutions of acetate salts are promising systems for different electrochemical applications, for example, energy storage devices. The very high solubility of CH3COOK allows us to obtain water-in-salt electrolyte concentrations, thus reducing ion activity and extending the cathodic stability of an aqueous electrolyte. At the same time, the presence of Li+ or Na+ makes these solutions compatible with intercalation materials for the development of rechargeable alkaline-ion batteries. Although there is a growing interest in these systems, a fundamental understanding of their physicochemical properties is still lacking. Here, we report and discuss the physicochemical and electrochemical properties of a series of solutions based on 20 mol kg-1 CH3COOK with different concentrations of CH3COONa. The most concentrated solution, 20 mol kg-1 CH3COOK + 7 mol kg-1 CH3COONa, gives the best compromise between transport properties and electrochemical stability, displaying a conductivity of 21.2 mS cm-1 at 25 °C and a stability window of up to 3 V in "ideal" conditions, i.e., using a small surface area and highly electrocatalytic electrode in a flooded cell. Careful Raman spectroscopy analyses help to address the interaction network, the phase evolution with temperature, and the crystallization kinetics.

Abstract
The geographical indication of pericarpium citri reticulatae (PCR) is very important in grading the quality and price of PCRs. Therefore, terahertz time-domain spectroscopy (THz-TDS) technology combined with convolutional neural networks (CNN) was proposed to distinguish PCRs of different origins without damage in this study. The one-dimensional CNN (1D-CNN) model with an accuracy of 82.99% based on spectral data processed with SNV was established. The two-dimensional image features were transformed from unprocessed spectral data using the gramian angular field (GAF), the Markov transition field (MTF) and the recurrence plot (RP), which were used to build a two-dimensional CNN (2D-CNN) model with an accuracy of 78.33%. Further, the CNN models with different fusion methods were developed for fusing spectra data and image data. In addition, the adding spectra and images based on the CNN (Add-CNN) model with an accuracy of 86.17% performed better. Eventually, the Add-CNN model based on ten frequencies extracted using permutation importance (PI) achieved the identification of PCRs from different origins. Overall, the current study would provide a new method for identifying PCRs of different origins, which was expected to be used for the traceability of PCRs products.

Abstract
Pericarpium Citri Reticulatae (PCR) in longer storage years possess higher medicinal values, but their differentiation is difficult due to similar morphological characteristics. Therefore, this study investigated the feasibility of using terahertz time-domain spectroscopy (THz-TDS) combined with a convolutional neural network (CNN) to identify PCR samples stored from 1 to 20 years. The absorption coefficient and refractive index spectra in the range of 0.2-1.5 THz were acquired. Partial least squares discriminant analysis, random forest, least squares support vector machines, and CNN were used to establish discriminant models, showing better performance of the CNN model than the others. In addition, the output data points of the CNN intermediate layer were visualized, illustrating gradual changes in these points from overlapping to clear separation. Overall, THz-TDS combined with CNN models could realize rapid identification of different year PCRs, thus providing an efficient alternative method for PCR quality inspection.

Abstract
As one of the main functional substances, carbohydrates account for a large proportion of the human diet. Conventional analysis and detection methods of dietary carbohydrates and related products are destructive, time-consuming, and labor-intensive. In order to improve the efficiency of measurement and ensure food nutrition and consumer health, rapid and nondestructive quality evaluation techniques are needed. In recent years, terahertz (THz) spectroscopy, as a novel detection technology with dual characteristics of microwave and infrared, has shown great potential in dietary carbohydrate analysis. The current review aims to provide an up-to-date overview of research advances in using the THz spectroscopy technique in analysis and detection applications related to dietary carbohydrates. In the review, the principles of the THz spectroscopy technique are introduced. Advances in THz spectroscopy for quantitative and qualitative analysis and detection in dietary carbohydrate-related research studies from 2013 to 2022 are discussed, which include analysis of carbohydrate concentrations in liquid and powdery foods, detection of foreign body and chemical residues in carbohydrate food products, authentication of natural carbohydrate produce, monitoring of the fermentation process in carbohydrate food production and examination of crystallinity in carbohydrate polymers. In addition, applications in dietary carbohydrate-related detection research using other spectroscopic techniques are also briefed for comparison, and future development trends of THz spectroscopy in this field are finally highlighted.

Abstract
Surface-enhanced Raman spectroscopy (SERS) substrates based on metal/semiconductors have attracted much attention due to their excellent photocatalytic activity and SERS performance. However, they generally exhibit low light utilization and photocatalytic efficiencies. Herein, molybdenum disulfide coated titanium dioxide modified with gold nanoparticles (MoS2@TiO2@Au) as a heterojunction-based recyclable SERS platform was fabricated for the efficient determination of fungicides. Results showed that the MoS2@TiO2@Au platform could rapidly degrade 90.7% crystal violet in 120 min under solar light irradiation and enable reproducible and sensitive SERS analysis of three fungicides (methylene blue, malachite green, and crystal violet) and in-situ monitor of the photodegradation process. The platform could also be reused five times due to the unique integrated merits of the MoS2@TiO2@Au heterojunction. Meanwhile, experiments in determining methylene blue in prawn protein solution achieved a limit of detection of 1.509 μg/L. Therefore, it is hoped that this work could expand detection applications of photocatalytic materials.

Abstract
With the growing popularity of the non-destructive technique, surface-enhanced Raman spectroscopy (SERS) demands a highly sensitive and reproducible plasmonic nanoparticles substrate. In this study, a novel bimetallic core-shell nanoparticles (Au@Ag@mSiO2NP) substrate consisting of a gold core, silver shell, and a mesoporous silica coating was synthesized. The mesoporous coating structure was created by employing template molecules such as surfactant and their subsequent removal allowing selective screening based on the size of analyte molecules. Results showed that the plasmonic substrate could selectively enhance small molecules by preventing large macromolecules to reach the exciting zone of the substrate core, achieving the detection of chloramphenicol in milk samples with a detection limit of 6.68 × 10-8 M. Moreover, the mesoporous coating provided additional stability to the Au@Ag nanoparticles, leading to the reusability of the substrate. Thus, this work offered a simple and smart Au@Ag@mSiO2NP substrate for effective SERS detection of analytes.

Abstract
Rapid evaluation of the metabolic activity of microorganisms is crucial in the assessment of the disinfection ability of various antimicrobial agents in the food industry. In this study, surface-enhanced Raman spectroscopy combined with isotope probing was employed for the analysis of the disinfection of single bacterial cells in the chicken carcass wash water. The Raman signals from single Escherichia coli O157:H7 cells were enhanced by in situ synthesis of silver nanoparticles. The ΔCD of the cells grown in presence of 0.5% hydrogen peroxide and 50 ppm chlorine was 5.86 ± 1.86% and 5.1 ± 2.3%, respectively, which showed significant reduction compared with cells grown in the absence of disinfecting agents (19.86 ± 2.51%) after 2 h of incubation. The study proved that the proposed method had the potential to assess the metabolic activity of microorganisms in other food products and optimize the disinfection process.

Abstract
In nature, water is vital for maintaining homeostasis. Particularly, organisms (e.g., plant leaf, bird feather) exploit water fluidics for motions. Hydration-adaptive crystallization is the representative water-responsive actuation of biopolymers. This crystallization has inspired the development of intelligent human-robot interfaces. At the same time, it hinders the consistent adhesion of tissue adhesive. As hydration-adaptive crystallization is inevitable, the on-demand control of crystallization is desirable in the innovative biopolymeric biomedical systems. To this end, this study developed an amino acid-based technology to artificially up- or down-regulate the inevitable crystallization of silk fibroin. A case II diffusion model was constructed, and it revealed that the activity of polar amino acid is related to crystallization kinetics. Furthermore, the water dynamics study suggested that active amino acid stabilizes crystallization-triggering water molecules. As a proof-of-concept, we verified that a 30% increase in the activity of serine resulted in a 50% decrease in the crystallization rate. Furthermore, the active amino acid-based suppression of hydration-adaptive crystallization enabled the silk fibroin to keep its robust adhesion (approximately 160 kJ m-3) by reducing the water-induced loss of adhesive force. The proposed silk fibroin was demonstrated as a stable tissue adhesive applied on ex vivo porcine mandible tissue. This amino acid-based regulation of hydration-adaptive crystallization will pioneer next-generation biopolymer-based healthcare.

Abstract
Water is the most abundant component in fresh fruit and vegetables and its distribution and hydrogen bonding state in cells has a significant influence on food processing. In the current study, an improved method based on our earlier studies was developed to directly visualize the spatial distribution of content and hydrogen bonding state of water in apple and potato cells for the first time and the difference in water distribution in these cells was compared. Additionally, based on the distribution images of content and hydrogen bonding state of water in different regions in apple and potato tissues, the total water and free water contents, and the hydrogen bonding state of free water were quantified and compared with those obtained by nuclear magnetic resonance and Marinchik methods, demonstrating that the method could be successfully used for quantifying the content and hydrogen bonding state of water in fruit and vegetable cells.

Abstract
Metabolic dynamics of bacterial cells is needed for understanding the correlation between changes in environmental conditions and cell metabolic activity. In this study, Raman spectroscopy combined with deuterium labelling was used to analyze the metabolic activity of a single Escherichia coli O157:H7 cell. The incorporation of deuterium from heavy water into cellular biomolecules resulted in the formation of carbon-deuterium (CD) peaks in the Raman spectra, indicating the cell metabolic activity. The broad vibrational peaks corresponding to CD and CH peaks encompassed different specific shifts of macromolecules such as protein, lipids, and nucleic acid. The utilization of tryptophan and oleic acid by the cell as the sole carbon source led to changes in cell lipid composition, as indicated by new peaks in the second derivative spectra. Thus, the proposed method could semi-quantitatively determine total metabolic activity, macromolecule specific identification, and lipid and protein metabolism in a single cell.

Abstract
Detection of bioactive metabolites produced by bacteria is important for identifying biomarkers for infectious diseases. In this study, a surface-enhanced Raman spectroscopy (SERS)-based technique was developed for the detection of bioactive metabolite indole produced by Escherichia coli (E. coli) in biological media. The use of highly sensitive Au@Ag core-shell nanoparticles resulted in the detection of indole concentration as low as 0.0886 mM in standard solution. The supplementation of growth media with 5 mM of exogenous tryptophan resulted in the production of a maximum yield of indole of 3.139 mM by E. coli O157:H7 at 37 °C. The growth of bacterial cells was reduced from 47.73 × 108 to 1.033 × 106 CFU/mL when the cells were grown in 0 and 10 mM exogenous tryptophan, respectively. The amount of indole in the Luria-Bertani (LB) media had an inverse correlation with the growth of cells, which resulted in a three-log reduction in the colony-forming unit when the indole concentration in the media was 20 times higher than normal. This work demonstrates that SERS is an effective and highly sensitive method for rapid detection of bioactive metabolites in biological matrix.

Abstract
Metal-organic frameworks (MOFs) are a versatile toolbox for the bioinspired design of nanozymes for antibacterial applications and beyond, however, designing a nanozyme by the hierarchical quasi-MOF scheme remains largely unpracticed. This work exemplifies the preferential structure-activity correlation of a bimetallic quasi-MOF (Q-MOFCe0.5 ) among three series of MOF-derived peroxidase (POD) mimics. The biomimetic quasi-MOFCe0.5 nanosheets accommodate both oxygen vacancy-coupled multivalent redox cycles and photosensitive energy band layout, benefiting from the hierarchical heterojunction-like 0D/2D interface featuring isolated nodes-derived CeOCu sites upon the 2D decarboxylated MOF scaffold. These integrated unique merits enable the POD-like Q-MOFCe0.5 to generate sustained reactive oxygen species to effectively eradicate the surface-adhered bacteria under visible light, resulting in significant inactivation of Escherichia coli (99.74 %) and Staphylococcus aureus (99.35%) in vitro, and potent disinfection of skin wounds in vivo in safe and on-demand manners. It is hoped that this work can intensify the interventions of MOF nanozymes against the microbial world.

Abstract
The membrane can not only be used as food packaging, but also for the separation, fractionation and recovery of food ingredients. Graphene oxide (GO) sheets are a two-dimensional (2 D) material with a unique structure that exhibit excellent mechanical properties, biocompatibility, and flexibility. The corporation of polymer matrix membrane with GO can significantly improve the permeability, selectivity, and antibacterial activity. In this review, the chemical structures of GO, GO membranes and GO/polymer composite membranes are introduced, the permeation mechanisms of molecules through the membranes are discussed and key factors affecting the permeability are presented in detail. In addition, recent applications in the food industry for filtration, bioreactions and active food packaging are analyzed, and limitations and future trends of GO membranes development are also highlighted. GO/polymer composite membranes exhibit excellent permeability, selectivity and strong barrier properties against bacterial and gas permeation. However, current food material filtration and packaging applications of GO/polymer composite membranes are still in the laboratory stage. Future work can focus on the development of large scale uniformly sized GO production, the homogeneous distribution and tight combination of GO in polymer matrixes, the sensing function of GO in packaging, and the verification method of GO toxicology.

Abstract
Gold nanorods (GNRs) outstand in photothermal disinfection but are faced with severe surface chemistry and dose relevant biotoxicity. Herein, a naturally green building block, metal-phenolic networks (MPNs), was employed to functionalize GNRs via coordination reaction, yielding a tunable and biocompatible core-shell photothermal nano-bactericide (GNRs@MPNs). The bioactive GNRs@MPNs built with iron and polyphenols (tannic acid, epigallocatechin gallate, and procyanidins) exhibited superior light-to-heat conversion efficiencies with η = 29.29-44.00%, remarkably preceding that of GNRs (η = 12.24%), which could rapidly ablate 99.8% of Escherichia coli O157: H7 and 98.6% of Staphylococcus aureus bacteria in relatively low efficacy doses (10 ppm of Au). Moreover, local heat triggered by GNRs@MPNs accelerated the healing of the cutaneous wound of a mice model infected by methicillin-resistant S. aureus. The facile synthesis, photothermal synergy, polyphenolic bioactivity, and significantly low efficacy dose of GNRs@MPNs empower them satisfactory efficiency and biosafety in the future broad-spectrum photothermal sterilization applications.

Abstract
Confocal Raman microspectroscopy is widely used in dermatology and cosmetology for analysis of the concentration of skin components (lipids, natural moisturizing factor molecules, water) and the penetration depth of cosmetic/medical formulations in the human stratum corneum (SC) in vivo. In recent years, it was shown that confocal Raman microspectroscopy can also be used for non-invasive in vivo depth-dependent determination of the physiological parameters of the SC, such as lamellar and lateral organization of intercellular lipids, folding properties of keratin, water mobility and hydrogen bonding states. The results showed that the strongest skin barrier function, which is primarily manifested by the orthorhombic organization of intercellular lipids, is provided at ≈20-40% SC depth, which is related to the maximal bonding state of water with surrounding components in the SC. The secondary and tertiary structures of keratin determine water binding in the SC, which is depth-dependent. This paper shows the technical possibility and advantage of confocal Raman microspectroscopy in non-invasive investigation of the skin and summarizes recent results on in vivo investigation of the human SC.

Abstract
Energy and moisture contents are important food chemical attributes. In the current study, a nondestructive Terahertz (THz) time-domain imaging system was first time used for evaluating the energy and moisture distributions of sunflower seed kernels inside shells. For this task, a dual autoencoders (AE)-generative adversarial nets (GAN) spectral dehulling semi-supervised model was developed. The model could automatically learn the kernel information from the latent representations of the spectra of the intact seeds through adversarial learning to achieve feature disentanglement. Results indicated that the generated kernel images had similar features to the original kernel images and high-quality chemical distribution maps for energy and moisture contents of sunflower seed kernels inside shells were successfully obtained. As the current method took the advantage of the characteristics of THz imaging and selected a suitable deep learning algorithm, it has the potential to generalize for imaging other chemical substances of other dry shelled seeds or biological samples (moisture content and thickness below 15% and 5 mm, respectively).

Abstract
Controlled release (CR) systems have become a powerful platform for accurate and effective delivery of bioactive compounds (BCs). Metal-organic frameworks (MOFs) are one of the best BCs-loaded carriers for CR systems. In the review, the principles and methods of the design and synthesis of MOFs-CR systems are summarized in detail, the encapsulation of BCs by MOFs and CR mechanisms are explored, and their biological toxicity and biocompatibility are highlighted and applications in the food industry are discussed. In addition, current challenges in this field and possible future development directions are also presented. MOFs have been proven to encapsulate BCs effectively, including gaseous and solid molecules, and control the release of BCs through spontaneous diffusion or stimulus-response. The solubility, stability and biocompatibility of BCs encapsulated by MOFs are greatly improved, which expands their applications in foods. The effective CR of BCs by MOFs-CR systems is beneficial to assist in maintaining or even improving the quality and safety of food, reduce the BCs usage while increasing the bioavailability. Low- or non-biotoxic MOFs, especially bio-MOFs, show greater application prospects in the food industry.
