Abstract
In this study, polymerized silicone surfactants were modified with polyether and tertiary amine groups with the aim of improving the surface performance. Various PSiEO/(PO)-OH(CH3) surfactants were synthesized and their structures and performance were characterized through 1H NMR, FTIR spectroscopy, static surface tension, dynamic surface tension, zeta potential, and dynamic light scattering measurements. Subsequently, the modified silicones were incorporated as surfactants in aqueous solutions with different pH values. The surfactants with different hydrophobic/hydrophilic groups and end-capping groups exhibited different surface performances over a wide pH range. Thermodynamic parameters indicated that the micellization and adsorption of these surfactants were endothermic and spontaneous processes driven by entropy. The processes were hindered by increasing the solution pH and modification with hydrophobic groups. The aggregation behavior was significantly different under acidic, neutral, and basic aqueous conditions.

Abstract
This study explores the interactions between pepsin and sodium dodecyl sulfate (SDS) using conductometric analysis and molecular docking to deepen our understanding of the role of pepsin. Conductometric studies were conducted to examine the micellization behavior of SDS with pepsin in aqueous solutions of various sodium electrolytes (NaBr, Na₂SO₄, Na₃PO₄, and CH₃COONa) at temperatures ranging from 300.55 K to 320.55 K in 5 K increments. The critical micelle concentration (CMC) of the SDS-pepsin system was influenced by pepsin concentration, electrolyte type, and temperature. Pepsin was found to inhibit SDS micellization, increasing the CMC, while electrolytes promoted micellization, decreasing the CMC. Thermodynamic parameters-Gibbs free energy (∆Gm0), enthalpy (∆Hm0), and entropy (∆Sm0)-were analyzed to identify the driving forces behind micellization. The negative ∆Gm0 indicated spontaneous aggregation, with ∆Hm0 and ∆Sm0 suggesting hydrophobic and electrostatic interactions. Molecular docking further confirmed these interactions, revealing binding between the hydrophobic tail of SDS and nonpolar binding pocket of pepsin at the interdomain cleft. These findings provide insights into surfactant-enzyme interactions, with potential applications in biochemistry, pharmacology, and food science.

Abstract
We noticed that in literature, the term Pickering emulsion (PE) is used as soon as ingredients contain particles, and in this review, we ask ourselves if that is done rightfully so. The basic behavior taking place in particle-stabilized emulsions leads to the conclusion that the desorption energy of particles is generally high making particles highly suited to physically stabilize emulsions. Exceptions are particles with extreme contact angles or systems with very low interfacial tension. Particles used in food and biobased applications are soft, can deform when adsorbed, and most probably have molecules extending into both phases thus increasing desorption energy. Besides, surface-active components will be present either in the ingredients or generated by the emulsification process used, which will reduce the energy of desorption, either by reduced interfacial tension, or changes in the contact angle. In this paper, we describe the relative relevance of these aspects, and how to distinguish them in practice. Practical food emulsions may derive part of their stability from the presence of particles, but most likely have mixed interfaces, and are thus not PEs. Especially when small particles are used to stabilize (sub)micrometer droplets, emulsions may become unstable upon receiving a heat treatment. Stability can be enhanced by connecting the particles or creating network that spans the product, albeit this goes beyond classical Pickering stabilization. Through the architecture of PEs, special functionalities can be created, such as reduction of lipid oxidation, and controlled release features.

Abstract
The interactions of anionic sodium dodecyl sulphate (SDS), cationic cetyltrimethylammonium bromide (CTAB) and nonionic triton X-100 (TX-100) surfactants with lysozyme at pH = 2.4 have been studied individually as well as in combination with 2,2,2-trifluoroetanol (TFE). Urea has also been used in combination with surfactants. By using these combinations, efforts have been made to obtain partially folded conformations of the protein in the presence of surfactants and effect of α-helix inducer 2,2,2-trifluoroethanol on these intermediate states. Thermodynamic analysis of all these interactions has been done employing a combination of UV-visible, fluorescence and circular dichroism spectroscopies. The results have been correlated with each other and characterized qualitatively as well as quantitatively. At lower concentration of surfactant, the thermodynamic parameters indicated the destabilizing effect of SDS, stabilizing effect of CTAB and unappreciable destabilizing impact of TX-100 on lysozyme. The enhancement in destabilization effect or reduction in stabilization effect of surfactants on lysozyme in the presence of TFE and urea has also been indicated.Communicated by Ramaswamy H. Sarma.

Abstract
HYPOTHESIS Our hypothesis is that dynamic interfacial tension values as measured by the partitioned-Edge-based Droplet GEneration (EDGE) tensiometry can be connected to those obtained with classical techniques, such as the automated drop tensiometer (ADT), expanding the range of timescales towards very short ones. EXPERIMENTS Oil-water and air-water interfaces are studied, with whey protein isolate solutions (WPI, 2.5 - 10 wt%) as the continuous phase. The dispersed phase consists of pure hexadecane or air. The EDGE tensiometer and ADT are used to measure the interfacial (surface) tension at various timescales. A comparative assessment is carried out to identify differences between protein concentrations as well as between oil-water and air-water interfaces. FINDINGS The EDGE tensiometer can measure at timescales down to a few milliseconds and up to around 10 s, while the ADT provides dynamic interfacial tension values after at least one second from droplet injection and typically is used to also cover hours. The interfacial tension values measured with both techniques exhibit overlap, implying that the techniques provide consistent and complementary information. Unlike the ADT, the EDGE tensiometer distinguishes differences in protein adsorption dynamics at protein concentrations as high as 10 wt% (which is the highest concentration tested) at both oil-water and air-water interfaces.

Abstract
An oleyl alcohol-based extended surfactant, sodium oleyl polyethylene oxide-polypropylene oxide sulfate (OE3P3S), was synthesized and identified using FT-IR and 1H NMR. The adsorption and aggregation behaviors of OE3P3S and its mixture with cationic surfactant alkyltrimethylammoniumbromide (ATAB) were investigated under different molar ratios. The static surface tension analysis indicated that the critical micellization concentration (cmc) and the critical surface tension (γcmc) of OE3P3S were 0.72 mmol/L, and 36.16 mN/m, respectively. The cmc and γcmc values of the binary system were much lower than that of the individual component. And the cmc values of OE3P3S/ATAB = 6:4 mixtures decreased with an increase in the chain length of the cationic surfactant in the binary system. It was found from the dynamic surface tension that there was a slower diffusion rate in the binary system compared to the pure surfactant, and the adsorption processes for OE3P3S/ATAB = 6:4 were mixed diffusion-kinetic adsorption mechanisms. With a combination of DLS data and TEM measurements, formations of vesicles in OE3P3S/ATAB = 6:4 solutions appeared to occur at a concentration of 0.05 mmol/L. By studying the formation of liquid crystal structures in an emulsion prepared with OE3P3S as the surfactant, it was found that the oil-in-water emulsion is birefringent with a Maltese cross texture, and the rheological properties revealed its predominant viscoelastic behavior and shear thinning properties.

Abstract
Despite the broad research available in the literature dealing with garlic health benefits, little information is found regarding the functional properties of garlic components. The aim of this study was to evaluate the emulsification properties of garlic water-soluble compounds (GWSC), encompassing proteins, saponins, and carbohydrates, after heat treatment (10 min at 95 °C) or pH adjustments (2.5, 3.5, and 7.8). After the various treatments, the extracts were used as such or filtrated (0.45 µm), and 10% soybean oil-in-water emulsions were prepared using low (0.48%) or high (6.55% wt/wt) extract concentrations. Results showed that whereas at low GWSC concentrations, both heating and acidifying resulted in the formation of bigger oil droplet sizes (i.e., from d32 = 0.36 µm using unmodified extract to d32 = 7-22 µm at pH 2.5 with or without extract filtration), the effects were opposite at the highest GWSC concentration. In the latter, heat treatment clearly reduced the droplet size as observed from the micrographs as well as the degree of creaming, though the occurrence of depletion and/or bridging flocculation was still strong. The acidification of the extract at this high GWSC concentration significantly reduced the droplet size, as observed from the micrographs; however, a strong flocculation was observed. Removal of protein aggregates, and possibly also saponin micelles, from the extract resulted in an obvious increase in emulsion droplet size. This research brings valuable insights on this study and utilisation of novel natural food emulsifiers from plant sources.

Abstract
The development of vaccines has always been an essential task worldwide since vaccines are regarded as powerful weapons in protecting the global population. Although the vast majority of currently authorized human vaccinations are administered intramuscularly or subcutaneously, exploring novel routes of immunization has been a prominent area of study in recent years. This is particularly relevant in the face of pandemic diseases, such as COVID-19, where respiratory immunization offers distinct advantages, such as inducing systemic and mucosal responses to prevent viral infections in both the upper and lower respiratory tracts and also leading to higher patient compliance. However, the development of respiratory vaccines confronts challenges due to the physiological barriers of the respiratory tract, with most of these vaccines still in the research and development stage. In this review, we detail the structure of the respiratory tract and the mechanisms of mucosal immunity, as well as the obstacles to respiratory vaccination. We also examine the considerations necessary in constructing a COVID-19 respiratory vaccine, including the dosage form of the vaccines, potential excipients and mucosal adjuvants, and delivery systems and devices for respiratory vaccines. Finally, we present a comprehensive overview of the COVID-19 respiratory vaccines currently under clinical investigation. We hope this review can provide valuable insights and inspiration for the future development of respiratory vaccinations.

Abstract
Biomedical applications of nanoparticles require a fundamental understanding of their interactions and behavior with biological interfaces. Protein corona formation can alter the morphology and properties of nanomaterials, and knowledge of the interfacial behavior of the complexes, using in situ analytical techniques, will impact the development of nanocarriers to maximize uptake and permeability at cellular interfaces. In this study we evaluate the interactions of acrylamide-based nanogels, with neutral, positive, and negative charges, with serum-abundant proteins albumin, fibrinogen, and immunoglobulin G. The formation of a protein corona complex between positively charged nanoparticles and albumin is characterized by dynamic light scattering, circular dichroism, and surface tensiometry; we use neutron reflectometry to resolve the complex structure at the air/water interface and demonstrate the effect of increased protein concentration on the interface. Surface tensiometry data suggest that the structure of the proteins can impact the interfacial properties of the complex formed. These results contribute to the understanding of the factors that influence the bio-nano interface, which will help to design nanomaterials with improved properties for applications in drug delivery.

Abstract
The input of chemical and physical sciences to life sciences is increasingly important. Surface science as a complex multidisciplinary research area provides many relevant practical tools to support research in medicine. The tensiometry and surface rheology of human biological liquids as diagnostic tools have been very successfully applied. Additionally, for the characterization of pulmonary surfactants, this methodology is essential to deepen the insights into the functionality of the lungs and for the most efficient administration of certain drugs. Problems in ophthalmology can be addressed using surface science methods, such as the stability of the wetting films and the development of artificial tears. The serious problem of obesity is fast-developing in many industrial countries and must be better understood, while therapies for its treatment must also be developed. Finally, the application of fullerenes as a suitable system for detecting cancer in humans is discussed.

Abstract
Maintaining the structure of protein and peptide drugs has become one of the most important goals of scientists in recent decades. Cold and thermal denaturation conditions, lyophilization and freeze drying, different pH conditions, concentrations, ionic strength, environmental agitation, the interaction between the surface of liquid and air as well as liquid and solid, and even the architectural structure of storage containers are among the factors that affect the stability of these therapeutic biomacromolecules. The use of genetic engineering, side-directed mutagenesis, fusion strategies, solvent engineering, the addition of various preservatives, surfactants, and additives are some of the solutions to overcome these problems. This article will discuss the types of stress that lead to instabilities of different proteins used in pharmaceutics including regulatory proteins, antibodies, and antibody-drug conjugates, and then all the methods for fighting these stresses will be reviewed. New and existing analytical methods that are used to detect the instabilities, mainly changes in their primary and higher order structures, are briefly summarized.

Abstract
Protein blends are used to stabilise many traditional and emerging emulsion products, resulting in complex, non-equilibrated interfacial structures. The interface composition just after emulsification is dependent on the competitive adsorption between proteins. Over time, non-adsorbed proteins are capable of displacing the initially adsorbed ones. Such rearrangements are important to consider, since the integrity of the interfacial film could be compromised after partial displacement, which may result in the physical destabilisation of emulsions. In the present review, we critically describe various experimental techniques to assess the interfacial composition, properties and mechanisms of protein displacement. The type of information that can be obtained from the different techniques is described, from which we comment on their suitability for displacement studies. Comparative studies between model interfaces and emulsions allow for evaluating the impact of minor components and the different fluid dynamics during interface formation. We extensively discuss available mechanistic physical models that describe interfacial properties and the dynamics of complex mixed systems, with a focus on protein in-plane and bulk-interface interactions. The potential of Brownian dynamic simulations to describe the parameters that govern interfacial displacement is also addressed. This review thus provides ample information for characterising the interfacial properties over time in protein blend-stabilised emulsions, based on both experimental and modelling approaches.

Abstract
Particles adsorbed to fluid interfaces are ubiquitous in industry, nature or life. The wide range of properties arising from the assembly of particles at fluid interface has stimulated an intense research activity on shed light to the most fundamental physico-chemical aspects of these systems. These include the mechanisms driving the equilibration of the interfacial layers, trapping energy, specific inter-particle interactions and the response of the particle-laden interface to mechanical perturbations and flows. The understanding of the physico-chemistry of particle-laden interfaces becomes essential for taking advantage of the particle capacity to stabilize interfaces for the preparation of different dispersed systems (emulsions, foams or colloidosomes) and the fabrication of new reconfigurable interface-dominated devices. This review presents a detailed overview of the physico-chemical aspects that determine the behavior of particles trapped at fluid interfaces. This has been combined with some examples of real and potential applications of these systems in technological and industrial fields. It is expected that this information can provide a general perspective of the topic that can be exploited for researchers and technologist non-specialized in the study of particle-laden interfaces, or for experienced researcher seeking new questions to solve.

Abstract
Protein surfactant (PS) interactions is an essential topic for many fundamental and technological applications such as life science, nanobiotechnology processes, food industry, biodiesel production and drug delivery systems. Several experimental techniques and data analysis approaches have been developed to characterize PS interactions in bulk and at interfaces. However, to evaluate the mechanisms and the level of interactions quantitatively, e.g., PS ratio in complexes, their stability in bulk, and reversibility of their interfacial adsorption, new experimental techniques and protocols are still needed, especially with relevance for in-situ biological conditions. The available standard techniques can provide us with the basic understanding of interactions mainly under static conditions and far from physiological criteria. However, detailed measurements at complex interfaces can be formidable due to the sophisticated tools required to carefully probe nanometric phenomena at interfaces without disturbing the adsorbed layer. Tensiometry-based techniques such as drop profile analysis tensiometry (PAT) have been among the most powerful methods for characterizing protein's and surfactant's adsorption layers at interfaces via measuring equilibrium and dynamic interfacial tension and dilational rheology analysis. PAT provides us with insightful data such as kinetics and isotherms of adsorption and related surface activity parameters. However, the data analysis and interpretation can be challenging for mixed protein-surfactant solutions via standard PAT experimental protocols. The combination of a coaxial double capillary (micro flow exchange system) with drop profile analysis tensiometry (CDC-PAT) is a promising tool to provide valuable results under different competitive adsorption/desorption conditions via novel experimental protocols. CDC-PAT provides unique experimental protocols to exchange the droplet subphase in a continuous dynamic mode during the in-situ analysis of the corresponding interfacial adsorbed layer. The contribution of diffusion/convection mechanisms on the kinetics of the adsorption/desorption processes can also be investigated using CDC-PAT. Here, firstly, we review the commonly available techniques for characterizing protein-surfactant interactions in the bulk phase and at interfaces. Secondly, we give an overview for applications of the coaxial double capillary PAT setup for investigations of mixed protein-surfactant adsorbed layers and address recently developed protocols and analysis procedures. Exploring the competitive sequential adsorption of proteins and surfactants and the reversibility of pre-adsorbed layers via the subphase exchange are the particular experiments we can perform using CDC-PAT. Also the sequential and simultaneous competitive adsorption/desorption processes of some ionic and nonionic surfactants (SDS, CTAB, DTAB, and Triton) and proteins (bovine serum albumin (BSA), lysozyme, and lipase) using CDC-PAT are discussed. Last but not least, the fabrication of micro-nanocomposite layers and membranes are additional applications of CDC-PAT discussed in this work.

Abstract
The interfacial properties of dairy proteins are of great interest to the food industry. Food manufacturing involves various environmental conditions and multiple processes that significantly alter the structure and colloidal stability of food materials. The effects of concentration, pH, heat treatment, addition of salts etc., have considerable influence on the surface activity of proteins and the mechanical properties of the interfacial protein films. Studies to date have established some understanding of the links between environmental and processing related parameters and their impacts on interfacial behavior. Improvement in knowledge may allow better design of interfacial protein structures for different food applications. This review examines the effects of environmental and processing conditions on the interfacial properties of dairy proteins with emphasis on interfacial tension dynamics, dilatational and surface shear rheological properties. The most commonly used surface analytical techniques along with relevant methods are also addressed.

Abstract
Particle-laden fluid/fluid interfaces are ubiquitous in academia and industry, which has fostered extensive research efforts trying to disentangle the physico-chemical bases underlying the trapping of particles to fluid/fluid interfaces as well as the properties of the obtained layers. The understanding of such aspects is essential for exploiting the ability of particles on the stabilization of fluid/fluid interface for the fabrication of novel interface-dominated devices, ranging from traditional Pickering emulsions to more advanced reconfigurable devices. This review tries to provide a general perspective of the physico-chemical aspects associated with the stabilization of interfaces by colloidal particles, mainly chemical isotropic spherical colloids. Furthermore, some aspects related to the exploitation of particle-laden fluid/fluid interfaces on the stabilization of emulsions and foams will be also highlighted. It is expected that this review can be used for researchers and technologist as an initial approach to the study of particle-laden fluid layers.

Abstract
HYPOTHESIS The shear stress of the axisymmetric flow field triggers a nonuniform distribution of the surfactants at the surface of a rising bubble, known as stagnant cap. The formation of the stagnant cap gives rise to Marangoni stresses that reduce the mobility of the interface, which in return reduces the rising velocity. However, the conditions in technological processes usually deviate from the linear rise of a single bubble in a quiescent unbounded liquid. Asymmetric shear can act on the bubble surface e.g. due to the vorticity in the surrounding flow, bubble-bubble interactions, or influence of the reactor wall. A different surfactant distribution at the interface is expected under asymmetric shear, which can change the hydrodynamic behavior of the interface drastically. EXPERIMENTS Here we conduct model experiments with a bubble or a drop at the tip of a capillary placed in a defined flow field. Thereby we investigate the influence of asymmetric shear forces on the interface in the presence of surfactants. Microscopic particle tracking velocimetry is employed to measure the velocity of the surfactant-laden interface for different degrees of asymmetry in the surrounding liquid flow. FINDINGS We show a direct experimental observation of the circulating flow at the interface under asymmetric shear, which prevents the formation of the typical stagnant cap. Additionally, we reveal that the interface remains mobile regardless of the surfactant concentration. Our results confirm that increasing the degree of asymmetry increases the shear forces and thus the interfacial velocity.

Abstract
Despite the boom in biologics over the past decade, the intrinsic instability of these large molecules poses significant challenges to formulation development. Almost half of all pharmaceutical protein products are formulated in the solid form to preserve protein native structure and extend product shelf-life. In this review, both traditional and emerging drying techniques for producing protein solids will be discussed. During the drying process, various stresses can impact the stability of protein solids. However, understanding the impact of stress on protein product quality can be challenging due to the lack of reliable characterization techniques for biological solids. Both conventional and advanced characterization techniques are discussed including differential scanning calorimetry (DSC), solid-state Fourier transform infrared spectrometry (ssFTIR), solid-state fluorescence spectrometry, solid-state hydrogen deuterium exchange (ssHDX), solid-state nuclear magnetic resonance (ssNMR) and solid-state photolytic labeling (ssPL). Advanced characterization tools may offer mechanistic investigations into local structural changes and interactions at higher resolutions. The continuous exploration of new drying techniques, as well as a better understanding of the effects caused by different drying techniques in solid state, would advance the formulation development of biological products with superior quality.

Abstract
To study the interaction of the series of pyridinium based gemini surfactants (GS) (referred to as m-Py-m, m = 14, 16); 4,4'-(propane-1,3-diyl)bis(1-(2-(tetradecyloxy)-2-oxoethyl) dipyridinium chloride (14-Py-14), and 4,4'-(propane-1,3-diyl) bis(1-(2-(hexadecyloxy)-2-oxoethyl)dipyridinium chloride (16-Py-16) with bovine serum albumin (BSA), various physicochemical and spectroscopic tools such as tensiometry, steady-state fluorescence, synchronous fluorescence, pyrene fluorescence, UV-visible, far-UV circular dichroism (CD) were utilized at physiological pH (7.4) and 298 K in combination with computational molecular modeling analysis. The tensiometric results show significant modifications in interfacial and thermodynamic parameters for m-Py-m GS upon BSA combination, deciphering the gemini surfactant-BSA interaction. Steady-state fluorescence analysis evaluates the structural alterations of BSA with the addition of m-Py-m GS. The plots of Stern-Volmer, modified Stern-Volmer, and thermodynamic parameters were used to determine the binding type of m-Py-m GS to BSA. The synchronous fluorescence spectra state a mild effect of gemini surfactants on the emission intensity of tyrosine (Tyr) residues, on the other hand, tryptophan (Trp) residues showed a significant effect. Post addition of GS, the plot of pyrene fluorescence reveals the mild micropolarity fluctuations via the probe (pyrene) molecules encapsulated in BSA. UV-visible experiments support the complex formation between the BSA and m-Py-m GS. Far-UV CD measurements revealed the modifications in the secondary structure of protein produced by m-Py-m GS. Furthermore, we also used the computational molecular modeling for attaining deep insight into BSA and m-Py-m GS binding and the results are supported with our experimental results.

Abstract
Phospholipids are the main constituents of cell membranes and act as natural stabilizers of milk fat globules. Phospholipids are used in a wide range of applications, e.g. as emulsifiers in cosmetic, pharmaceutical and food products. While processed emulsion droplets are usually stabilized by a monolayer of phospholipids, cell membranes have a phospholipid bilayer structure and milk fat globules are stabilized by a complex phospholipid trilayer membrane. Despite the broad relevance of phospholipids, there are still many scientific challenges in understanding how their behavior at the fluid-fluid interface affects microstructure, stability, and physico-chemical properties of natural and industrial products. Most of these challenges arise from the experimental difficulties related to the investigation of the molecular arrangement of phospholipids in situ at the fluid-fluid interface and the quantification of their partitioning between the bulk phase and the interface, both under static and flow conditions. This task is further complicated by the presence of other surface-active components, such as proteins, that can interact with phospholipids and compete for space at the interface. Here, we review the methodologies available from the literature to detect and quantify phospholipids, focusing on oil-water interfaces, and highlight current limitations and future perspectives.

Abstract
The present study reports the multi-technique results of the interaction of a series of bile salts, sodium cholate (NaC), sodium taurocholate (NaTC), sodium deoxycholate (NaDC), and sodium taurodeoxycholate (NaTDC) with trypsin under the experimental conditions of 25 °C and pH 7.0. The interactions between trypsin and the bile salts were characterized by the surface tension measurements and various spectroscopic techniques like UV-Visible absorption, steady-state fluorescence, and circular dichroism. The results of surface tension measurements reveal a strong interaction of trypsin (50 μM) with the increasing concentration of bile salts, being higher with the bile salt of greater hydrophobicity. The critical aggregation concentration of bile salts in the presence of trypsin (C1) showed that the bile salts interact strongly with the trypsin in the order of NaTDC > NaDC > NaTC > NaC. UV-visible, steady-state fluorescence, and circular dichroism spectroscopic results confirmed significant unfolding of trypsin due to its interaction with the bile salts, the extent of which followed the same sequence as observed in the surface tension results. It could be concluded that the hydrophobic bile salts that show lower C1 values and have less delocalized charge, are more effective in unfolding the trypsin. The study would help understand the hydrophobicity-driven unfolding of proteins aided by biological surfactants like bile salts and help devise efficient proteolytic enzyme-based detergent formulations and understand the role of such amphiphiles as antimicrobial agents.

Abstract
The theoretical description of the adsorption of proteins at liquid/fluid interfaces suffers from the inapplicability of classical formalisms, which soundly calls for the development of more complicated adsorption models. A Frumkin-type thermodynamic 2-d solution model that accounts for nonidealities of interface enthalpy and entropy was proposed about two decades ago and has been continuously developed in the course of comparisons with experimental data. In a previous paper we investigated the adsorption of the globular protein β-lactoglobulin at the water/air interface and used such a model to analyze the experimental isotherms of the surface pressure, Π(c), and the frequency-, f-, dependent surface dilational viscoelasticity modulus, E(c)f, in a wide range of protein concentrations, c, and at pH 7. However, the best fit between theory and experiment proposed in that paper appeared incompatible with new data on the surface excess, Γ, obtained from direct measurements with neutron reflectometry. Therefore, in this work, the same model is simultaneously applied to a larger set of experimental dependences, e.g., Π(c), Γ(c), E(Π)f, etc., with E-values measured strictly in the linear viscoelasticity regime. Despite this ambitious complication, a best global fit was elaborated using a single set of parameter values, which well describes all experimental dependencies, thus corroborating the validity of the chosen thermodynamic model. Furthermore, we applied the model in the same manner to experimental results obtained at pH 3 and pH 5 in order to explain the well-pronounced effect of pH on the interfacial behavior of β-lactoglobulin. The results revealed that the propensity of β-lactoglobulin globules to unfold upon adsorption and stretch at the interface decreases in the order pH 3 > pH 7 > pH 5, i.e., with decreasing protein net charge. Finally, we discuss advantages and limitations in the current state of the model.

Abstract
The utilization of astaxanthin in food processing is considered to be narrow because of its substandard solubility in aqueous matrices and the instability of chemical compounds during the processing of food and the instability of chemical compounds during the processing of food. The investigation sought to evaluate multilayer emulsions stabilized by ionic interfacial layers of lupin protein isolate (LPI), ι-carrageenan (CA), and chitosan (CHI) on the physical stability of the emulsion as well as the retention of astaxanthin during the spray drying process. Primary emulsion (Pr-E) was prepared by adding LPI on oil droplet surfaces containing astaxanthin. The homogenization pressure and cycles to obtain the Pr-E were investigated. The secondary emulsion (Se-E) and tertiary emulsion (Te-E) were elaborated by mixing CA/Pr-E and CHI/Se-E, respectively. Emulsion stability was assessed under different environmental stresses (pH and NaCl). Astaxanthin retention of emulsions was determined immediately after finishing the spray-drying process. The results showed that Pr-E was stabilized with 1.0% (w/v) of LPI at 50 MPa and three cycles. Se-E and Te-E were obtained with CA/Pr-E and Se-E/CHI of 70/30 and 50/50% (w/w), respectively. The Se-E was the most stable compared to the Pr-E and Te-E when subjected to different pHs; nevertheless, once the NaCl concentration rose, no variations in the ζ-potential of all emulsions studied or destabilization were observed. The Se-E and Te-E derived provided higher astaxanthin retention (>95%) during the spray-drying process compared to Pr-E (around 88%). The results indicated that these astaxanthin multilayer emulsions show considerable potential as a functional ingredient in food products.

Abstract
This paper starts with short descriptions of emulsion preparation methods used at large and smaller scales. We give scaling relations as they are generally used, and focus on the central role that interfacial tension plays in these relations. The actual values of the interfacial tension are far from certain given the dynamic behavior of surface-active components, and the lack of measurement methods that can be applied to conditions as they occur during large-scale preparation. Microfluidic techniques are expected to be very instrumental in closing this gap. Reduction of interfacial tension resulting from emulsifier adsorption at the oil-water interface is a complex process that consists of various steps. We discuss them here, and present methods used to probe them. Specifically, methods based on microfluidic tools are of great interest to study short droplet formation times, and also coalescence behavior of droplets. We present the newest insights in this field, which are expected to bring interfacial tension observations to a level that is of direct relevance for the large-scale preparation of emulsions, and that of other multi-phase products.

Abstract
This work explores the association of a pegylated lipid (DSPE-PEG) with different anionic and zwitterionic surfactants (pseudo-binary and pseudo-ternary polymer+ surfactant mixtures), and the adsorption of the polymer + surfactant aggregates onto negatively charged surfaces, with a surface charge density similar to that existing on the damaged hair epicuticle. Dynamic light scattering and zeta potential measurements shows that, in solution, the polymer + surfactant association results from an intricate balance between electrostatic and hydrophobic interactions, which leads to the formation of at least two different types of micellar-like polymer + surfactant aggregates. The structure and physicochemical properties of such aggregates were found strongly dependent on the specific nature and concentration of the surfactant. The adsorption of the polymer + surfactant aggregates onto negatively charged surface was studied using a set of surface-sensitive techniques (quartz crystal microbalance with dissipation monitoring, ellipsometry and Atomic Force Microscopy), which allows obtaining information about the adsorbed amount, the water content of the layers and the topography of the obtained films. Ion-dipole interactions between the negative charges of the surface and the oxyethylene groups of the polymer + surfactant aggregates appear as the main driving force of the deposition process. This is strongly dependent on the surfactant nature and its concentration, with the impact of the latter on the adsorption being especially critical when anionic surfactant are incorporated within the aggregates. This study opens important perspectives for modulating the deposition of a poorly interacting polymer onto negatively charged surfaces, which can impact in the fabrication on different aspects with technological and industrial interest.

Abstract
Bottles and carboys are used for frozen storage and transport of biopharmaceutical formulations under a wide range of conditions. The quality of freezing and thawing in these systems has been questioned due to the formation of heterogeneous ice structures and deformation of containers. This work shows that during freezing of bulk protein solutions, the liquid at the air-liquid interface freezes first, forming an ice crust and enclosing the liquid phase. As the enclosed liquid freezes, internal pressure rises, pushing the liquid phase through the porous ice crust towards the air interface, leading to interfacial stress and protein aggregation. The aggregation of bovine serum albumin was more intense in the foam-like ice mound that was formed at the top, where bubbles were entrapped. This was characterized experimentally with the assistance of magnetic resonance imaging (MRI). An isothermal cover is proposed to prevent the early freezing of the liquid at the air interface, attenuating substantially interfacial stress to proteins and releasing hydrostatic pressure, preserving the shape and integrity of the containers.

Abstract
To check the role of micelle in the interaction studies of human serum albumin (HSA) and cetyltrimethylammonium bromide (CTAB), many spectroscopic techniques, like UV-visible, fluorescence, circular dichroism, fluorescence lifetime measurement, and atomic force microscopy (AFM), are employed. The binding affinity of all compound groups depended on the hydrocarbon chain, indicating the predominant role of hydrophobic forces, electrostatic forces and supported by polar interactions on protein surfaces. The protein has a different effect on the polarity of a microenvironment in fluorescence spectra above and below the critical micelle concentration (CMC) of the suractant. The far-UV-CD spectra show unfolding below the CMC and refolding above the CMC. The binding of the surfactant induces changes in the microenvironment at different pHs around the residues of the aromatic amino acid and the disulfide bond of protein. The AFM images show significant changes in the protein's structure. AFM images show dense aggregation below the CMC and above the CMC, some net-like structure formed in the HSA-CTAB complex. To test the experimental results, we used Auto dock Vina to conduct molecular docking. Above and below the CMC, structural changes can be seen.

Abstract
Silk fibroin (SF) adsorbs at the air/water interface, reduces the surface tension, and forms interfacial layers suppressing bubble coalescence and stabilizing foam. Variation of pH alters the inter-molecular interactions of SF in the interfacial layers and thus interfacial network formation, dilatational visco-elasticity and foaming properties. At pH 4, around the isoelectric point, the reduced electrostatic repulsion between the SF molecules results in thicker adsorbed layers, but adsorption rate, foaming rate and foam stability are lower than at pH 3 and pH 7. At the highest pH investigated (pH 7), the small aggregate size and high protein flexibility lead to the formation of more ordered and stable viscoelastic interfacial networks, which are resistant to deformation breakage and generate homogeneous, denser and more stable foams.

Abstract
The analysis of trace hydrophilic targets in complex aqueous-rich matrices is considerably challenging, generally requiring matrix-matched calibration, internal standard, or time-and-labor-intensive sample preparation. To address this analytical bottleneck, a non-matrix-matched calibration strategy without using internal standard was reported for the first time to analyze complicated biosamples such as whole blood, plasma, serum, and cell samples. This strategy, termed micelle-dominated distribution, also aimed at realizing the simple "extract-and-shoot" analytical process for such complex matrices. The micelle-matrix interaction was found to efficiently eliminate the matrix effect by dominating phase separation and analyte distribution between the extraction and matrix phases. Thus, calibration linear curves prepared in water were applicable to the analysis of all the above-mentioned sample types. Rapid distribution equilibrium within 4 min was achieved. This strategy could tolerate direct large volume injection, thereby providing two-order-of-magnitude enhancement in the sensitivity of ion-pair chromatography. The analytical method integrated cell rupture, matrix cleanup, analyte extraction, and on-column preconcentration into a fast and high-throughput operation. The successful application to the determination of exogenous pesticides and endogenous glutathione exhibited low limits of detection (0.0085-0.015 μg mL-1 for pesticides; 0.52 μg mL-1 for glutathione), wide linear ranges (0.028-50 μg mL-1 and 0.049-50 μg mL-1 for pesticides; 1.7-1000 μg mL-1 for glutathione), good linearies (R2 = 0.9994-0.9999), excellent accuracy (recoveries of 91.3-105.2%), and good precision (0.7-6.2% at the levels of 0.028 (or 0.049), 0.1, 0.5, and 50 μg mL-1 for pesticides; 0.5-8.7% at 1.7, 500, and 1000 μg mL-1 for glutathione).

Abstract
The pharmaceutical industry uses surface-active agents (excipients) in protein drug formulations to prevent the aggregation, denaturation, and unwanted immunological response of therapeutic drugs in solution as well as at the air/water interface. However, the mechanism of adsorption, desorption, and aggregation of proteins at the interface in the presence of excipients remains poorly understood. The objective of this work is to explore the molecular-scale competitive adsorption process between surfactant-based excipients and two monoclonal antibody (mAb) proteins, mAb-1 and mAb-2. We use pendant bubble tensiometry to measure the ensemble average adsorption dynamics of mAbs with and without the excipient. The surface tension measurements allow us to quantify the rate at which the molecules "race" to the interface in single-component and mixed systems. These results define the phase space, where coadsorption of both mAbs and excipients occurs onto the air/water interface. In parallel, we use X-ray reflectivity (XR) measurements to understand the molecular-scale dynamics of competitive adsorption, revealing the surface-adsorbed amounts of the antibody and excipient. XR has revealed that at a sufficiently high surface concentration of the excipient, mAb adsorption to the surface and subsurface domains was inhibited. In addition, despite the fact that both mAbs adsorb via a similar mechanistic pathway and with similar dynamics, a key finding is that the competition for the interface directly correlates with the surface activity of the two mAbs, resulting in a fivefold difference in the concentration of the excipient needed to displace the antibody.

Abstract
Binding effect and interaction of N,N'-dialkyl cystine based gemini surfactant (GS); 2(C12Cys) with human serum albumin (HSA) were systematically investigated by the techniques such as surface tension measurement, UV-visible spectroscopy, fluorescence spectroscopy, circular dichroism (CD) spectroscopy, and molecular docking studies. The surface tension measurement exhibited that HSA shifted the critical micelle concentration of the 2(C12Cys) GS to the higher side that confirms the complex formation among 2(C12Cys) GS and HSA which was also verified by UV-visible, fluorescence, and CD spectroscopy. Increase in the concentration of 2(C12Cys) GS increases the absorption of the HSA protein but has a reverse effect on the fluorescence intensity. The analysis of UV-visible study with the help of a static quenching method showed that the value acquired for the bimolecular quenching constant (k q) quenches the intrinsic fluorescence of the HSA protein. Synchronous fluorescence spectrometry declared that the induced-binding conformational changes in HSA and CD results explained the variations in the secondary arrangement of the protein in presence of 2(C12Cys) GS. The present study revealed that the interaction between 2(C12Cys) GS and HSA is important for the preparation and properties of medicines. Molecular docking study provides insight into the specific binding site of 2(C12Cys) GS into the sites of HSA.

Abstract
An interesting phenomenon is reported when uranyl peroxide nanoclusters U60 (Li48+m K12 (OH)m [UO2 (O2 )(OH)]60 (H2 O)n , m≈20 and n≈310) interact with a small number of cationic surfactant molecules. Cationic surfactant molecules do not distribute evenly around the U60 clusters during the interaction as expected. Instead, a small fraction of U60 clusters attract almost all the surfactant molecules, leading to the self-assembly into supramolecular structures by using surfactant-U60 complexes as building locks, and later further aggregate and precipitate based on hydrophobic interaction, whereas the rest of the clusters remained unbounded soluble macroions in bulk dispersion. This phenomenon nicely demonstrates a unique feature of macroion solutions. Considering that Debye-Hückel approximation is no longer valid in such solutions, the competition between the local electrostatic interaction and hydrophobic interaction becomes important to regulate the solution behaviors of macroions.

Abstract
Over the last two decades, understanding of the attachment of colloids to fluid interfaces has attracted the interest of researchers from different fields. This is explained by considering the ubiquity of colloidal and interfacial systems in nature and technology. However, to date, the control and tuning of the assembly of colloids at fluid interfaces remain a challenge. This review discusses some of the most fundamental aspects governing the organization of colloidal objects at fluid interfaces, paying special attention to spherical particles. This requires a description of different physicochemical aspects, from the driving force involved in the assembly to its thermodynamic description, and from the interactions involved in the assembly to the dynamics and rheological behavior of particle-laden interfaces.
