Abstract
The enticing aroma of truffles is a key factor for their culinary value. Although all truffle species tend to be pricy, the most intensely aromatic species are the most sought after. Research into the aroma of truffles encompasses various disciplines including chemistry, biology, and sensory science. This study focusses on the chemical composition of the aroma of black truffles (Tuber melanosporum) and the changes occurring under different storage conditions. For this, truffle samples were stored under different treatments, at different temperatures, and measured over a total storage time of 12 days. Measurements of the truffle aroma profiles were taken with SPME/GC-MS at regular intervals. To handle the ample data collected, a systematic approach utilizing multivariate data analysis techniques was taken. This approach led to a vast amount of data which we made publicly available for future exploration. Results reveal the complexity of aroma changes, with 695 compounds identified, highlighting the need for a comprehensive understanding. Principal component analyses offer initial insights into truffle composition, while individual compounds may serve as markers for age (formic acid, 1-methylpropyl ester), freshness (2-Methyl-1-propanal; 1-(methylthio)-propane), freezing (tetrahydrofuran), salt treatment (1-chloropentane), or heat exposure (4-hydroxy-3-methyl-2-butanone). This research suggests that heat treatment or salt contact significantly affects truffle aroma, while freezing and cutting have less pronounced effects in comparison. The enrichment of compounds showing significant changes during storage was investigated with a metabolomic pathway analysis. The involvement of some of the enriched compounds on the pyruvate/glycolysis and sulfur pathways was shown.

Abstract
The ectomycorrhizal fungi Tuber melanosporum Vittad. and Tuber aestivum Vittad. produce highly valuable truffles, but little is known about the soil fungal communities associated with these truffle species in places where they co-occur. Here, we compared soil fungal communities present in wild and planted truffle sites, in which T. melanosporum and T. aestivum coexist, in Mediterranean and temperate regions over three sampling seasons spanning from 2018 to 2019. We showed that soil fungal community composition and ectomycorrhizal species composition are driven by habitat type rather than climate regions. Also, we observed the influence of soil pH, organic matter content and C:N ratio structuring total and ectomycorrhizal fungal assemblages. Soil fungal communities in wild sites revealed more compositional variability than those of plantations. Greater soil fungal diversity was found in temperate compared to Mediterranean sites when considering all fungal guilds. Ectomycorrhizal diversity was significantly higher in wild sites compared to plantations. Greater mould abundance at wild sites than those on plantation was observed while tree species and seasonal effects were not significant predictors in fungal community structure. Our results suggested a strong influence of both ecosystem age and management on the fungal taxa composition in truffle habitats.

Abstract
The white truffle (Tuber magnatum Picco.; WT) is the most expensive and arguably also the most delicious species within the genus Tuber. Due to its hidden belowground life cycle, complex host symbiosis, and yet unknown distribution, cultivation of the enigmatic species has only recently been achieved at some plantations in France. A sustainable production of WTs under future climate change, however, requires a better ecological understanding of the species' natural occurrence. Here, we combine information from truffle hunters with a literature review to assess the climatic, edaphic, geographic, and symbiotic characteristics of 231 reported WT sites in southeast Europe. Our meta-study shows that 75% of the WT sites are located outside the species' most famous harvest region, the Piedmont in northern Italy. Spanning a wide geographic range from ~ 37° N in Sicily to ~ 47° N in Hungary, and elevations between sea level in the north and 1000 m asl in the south, all WT sites are characterised by mean winter temperatures > 0.4 °C and summer precipitation totals of ~ 50 mm. Often formed during past flood or landslide events, current soil conditions of the WT sites exhibit pH levels between 6.4 and 8.7, high macroporosity, and a cation exchange capacity of ~ 17 meq/100 g. At least 26 potential host species from 12 genera were reported at the WT sites, with Populus alba and Quercus cerris accounting for 23.5% of all plant species. We expect our findings to contribute to a sustainable WT industry under changing environmental and economic conditions.

Abstract
Black truffle (Tuber melanosporum) is one of the most appreciated fungi in the world mainly due to its aromatic properties. In the emerging markets such as Argentina, the aroma of locally produced truffles has not been described yet. The volatile organic compounds (VOCs) from 102 black truffles from Argentina were analyzed using solid phase microextraction gas chromatography coupled with mass spectrometer detector (SPME-GC-MS). Several factors such as commercial category, maturity stage, host tree, geographical origin, and aromatic defects detected during classification were also registered and considered. As a result, 79 VOCs were detected, among which 2-methyl-propanal, 2-butanone, 2-methyl-1-propanol, butanal-3-methyl, 3-methyl-1-butanol, 2-methyl-1-butanol were present in high percentage in fresh mature truffles, whereas immature truffles were associated with 3,5-dimethoxytoluene, 2-phenyl-2-butenal, 2,3-dimethoxytoluene. The Argentine black truffles showed significant similarities in their aromatic profile when compared with their Australian and European counterparts, but with some distinctive notes.

Abstract
The impacts of climate change on people and ecosystems have been studied at both local and global levels. The environment is expected to change significantly, and the role of local communities in shaping more resilient landscapes is considered crucial. This research focuses on rural regions highly susceptible to climate change impacts. The objective was to enhance conditions for climate resilient development on a microlocal level by encouraging diverse stakeholders to participate in developing sustainable landscape management. This paper introduces a novel interdisciplinary mixed-method approach to landscape scenario development, combining research-driven and participatory approaches and integrating quantitative methods with qualitative ethnographic inquiry. Two scenarios for 2050 were built: a research-driven, business-as-usual scenario accounting for mandatory adaptation policies and an optimistic scenario combining research-driven and participatory approaches, including additional feasible community-based measures. While the differences between the projected land use seem to be relatively subtle, the optimistic scenario would in fact lead to a considerably more resilient landscape. The results highlight the role of interdisciplinarity and ethnography in gaining good local knowledge and building an atmosphere of trust. These factors supported the research credibility, strengthened the legitimacy of the intervention in local affairs, and contributed to the active participation of the stakeholders. We argue that despite its time, intense effort and limited direct policy impact, the mixed-method approach is highly suitable for the microlocal level. It encourages citizens to think about how their environment is threatened by climate change impacts and increases their willingness to contribute to climate resilience.

Abstract
Truffle cultivation has quickly grown in Europe and elsewhere as a consequence of the increase in the demand of the market. Thus the optimization of the protocols for the production of elite mycorrhized plants are also needed, keeping in consideration the economic and environmental sustainability. The suitability of two compost-based potting mixes to produce Quercus pubescens Willd. plants mycorrhized with the black Périgord truffle T. melanosporum Vittad. was tested as an alternative to the traditional potting mix used. The effects on mycorrhizal development and the morphometric assessment of the root and shoot system of the Q. pubescens seedlings were investigated eight months after the spore slurry inoculation in a glasshouse experiment. From the results obtained, the compost mix containing green organic residues from pruning and mowing (Mix 2) achieved better performance than the control and the potting mix based on composted municipal organic wastes, showing significantly higher mycorrhization percentage, root length, number of root tips, and root forks. In conclusion, a potting mix containing recycled green organic matter, which is readily available, cheap, and environmentally sustainable, can offer excellent mycorrhization performances and may be included in the mycorrhization process of downy oak seedlings with T. melanosporum under controlled conditions.

Abstract
Global warming is pushing populations outside their range of physiological tolerance. According to the environmental envelope framework, the most vulnerable populations occur near the climatic edge of their species' distributions. In contrast, populations from the climatic center of the species range should be relatively buffered against climate warming. We tested this latter prediction using a combination of linear mixed effects and machine learning algorithms on an extensive, citizen-scientist generated dataset on the fruitbody productivity of the Burgundy (aka summer) truffle (Tuber aestivum Vittad.), a keystone, ectomycorrhizal tree-symbiont occurring on a wide range of temperate climates. T. aestivum's fruitbody productivity was monitored at 3-week resolution over up to 8 continuous years at 20 sites distributed in the climatic center of its European distribution in southwest Germany and Switzerland. We found that T. aestivum fruitbody production is more sensitive to summer drought than would be expected from the breadth of its species' climatic niche. The monitored populations occurring nearly 5°C colder than the edge of their species' climatic distribution. However, interannual fruitbody productivity (truffle mass year-1 ) fell by a median loss of 22% for every 1°C increase in summer temperature over a site's 30-year mean. Among the most productive monitored populations, the temperature sensitivity was even higher, with single summer temperature anomalies of 3°C sufficient to stop fruitbody production altogether. Interannual truffle productivity was also related to the phenology of host trees, with ~22 g less truffle mass for each 1-day reduction in the length of the tree growing season. Increasing summer drought extremes are therefore likely to reduce fruiting among summer truffle populations throughout Central Europe. Our results suggest that European T. aestivum may be a mosaic of vulnerable populations, sensitive to climate-driven declines at lower thresholds than implied by its species distribution model.

Abstract
Analyses of climate change based on point observations indicate an extension of the plant growing season, which may have an impact on plant production and functioning of natural ecosystems. Analyses involving remote sensing methods, which have added more detail to results obtained in the traditional way, have been carried out only since the 1980s. The paper presents the results of a bibliometric analysis of papers related to the growing season published from 2000–2021 included in the Web of Science database. Through filtering, 285 publications were selected and subjected to statistical processing and analysis of their content. This resulted in the identification of author teams that mostly focused their research on vegetation growth and in the selection of the most common keywords describing the beginning, end, and duration of the growing season. It was found that most studies on the growing season were reported from Asia, Europe, and North America (i.e., 32%, 28%, and 28%, respectively). The analyzed articles show the advantage of satellite data over low-altitude and ground-based data in providing information on plant vegetation. Over three quarters of the analyzed publications focused on natural plant communities. In the case of crops, wheat and rice were the most frequently studied plants (i.e., they were analyzed in over 30% and over 20% of publications, respectively).

Abstract
Despite its status as a highly-prized and coveted fungi in gastronomy, many aspects of the subterranean life cycle of the Burgundy truffle (Tuber aestivum) are still unknown, because in situ observations of the formation and maturation of truffle fruitbodies remain difficult. Here, we adopted a suite of archaeological fine-scale excavating techniques to provide unique spatiotemporal snapshots of Burgundy truffle growth at three sites in southern Germany. We also recorded the relative position, fresh weight, maturity level and genotype composition of all excavated fruitbodies. Varying by a factor of thousand, the fresh weight of 73 truffle ranged from 0.1 to 103.2 g, with individual maturity levels likely representing different life cycle stages from completely unripe to fully ripe and even decaying. While only a slightly positive relationship between fruitbody weight and maturity level was found, our results suggest that genetically distinct specimens can exhibit different life cycle stages at the same period of time and under the same environmental conditions. We therefore argue that truffles are likely able to grow, mature and ripe simultaneously between early summer and late winter of the following year. Our case study should encourage further eco-archaeological truffle excavations under different biogeographic settings and at different seasons of the year to gain deeper insights into the fungi's subterranean ecology. The expected cross-disciplinary findings will help truffle hunters and farmers to improve their harvest practices and management strategies.

Abstract
Background: The objective of this study was to analyze the current situation of the truffle sector in the main producing countries of the Mediterranean area. Additionally, we identified the challenges for the future and the priority actions to develop the truffle sector in the region. Methods: We used a Delphi process approach, and we selected a total of 17 expert panelists in different positions within the supply chain of the target countries (Spain, France, Italy, Croatia, and Greece). Results: The results obtained allowed us to have a complete description of the current truffle supply chain. We confirmed an evolution of the sector due to the cultivation success of several Tuber species. The maturity of the sector has produced shifts in the roles that form the traditional truffle supply chain operators. We confirmed the trend of a decrease of collectors that hunt truffles in the wild and sell to small travelling buyers, whilst truffle hunters that collect for farmers and specialty wholesalers are emerging. However, a trend of truffle price decrease in the last few years has alerted the sector. Conclusions: As production increases due to truffle cultivation, it will be necessary to promote truffle consumption. We identified actions to develop the truffle sector: (a) strengthen the link between truffles, tourism, and gastronomy; (b) increase the effort at European level for the recognition of truffle production, helping to develop truffle culture and marketing; (c) increase the awareness and consumption of truffles among consumers; and (d) develop tourism workshops for truffle farmers.

Metagenomic Analysis of Bacterial and Fungal Communities Inhabiting Shiro Dominant Soils of Two Production Regions of Tricholoma Matsutake S. Ito & S. Imai in Korea. FORESTS 2021. Abstract
Tricholoma matsutake is an ectomycorrhizal fungus that has obligate symbiotic relationships with Pinus densiflora. Its fruiting body has a distinctive flavor and is traded at a high price. Thus, it has been a significant source of income for rural communities in Korea. We hypothesized that biotic factors considerably influence the formation of the T. matsutake mushroom, and the soils producing T. matsutake share similar microbial characteristics. Therefore, the present study aimed to detect the specific fungal and bacterial groups in T. matsutake production soils (shiro+) and nonproduction soils (shiro−) of the Bonghwa and Yanyang regions via next-generation sequencing. In a total of 15 phyla, 36 classes, 234 genera of bacteria, six phyla, 29 classes, and 164 genera of fungi were detected from four samples at both sites. The species diversity of shiro+ soils was lower than the shiro− samples in both the fungal and bacterial groups. In addition, we did not find high similarities in the microbial communities between the shiro+ soils of the two regions. However, in the resulting differences between the fungal communities categorized by their trophic assembly, we found a distinguishable compositional pattern in the fungal communities from the shiro+ soils and the shiro− soils of the two sites. Thus, the similarity among the microbial communities in the forest soils may be due to the fact that the microbial communities in the T. matsutake dominant soils are closely associated with biotic factors and abiotic factors such as soil properties.
