Microbiological impact of three commercial laying hen housing systems

Providing elevated structures in the pullet rearing environment affects behavior during initial acclimation to a layer aviary

Spatial abilities of hens are particularly sensitive to development during early life. Experiences in pullet housing may have lasting consequences on adult hens' movements in cage-free environments. We tested whether opportunities to access elevated spaces during rearing improved hens' use of a multitiered aviary. Female Dekalb White pullets were reared in either floor pens (FL), single-tiered aviaries (ST), or 2-tiered aviaries (TT; n = 5 pens/environment) through 16 wk of age. Rearing structures were replaced with identical multitiered aviaries at 17 wk. The distribution of the flock within the aviary and the vertical transitions of 10 focal hens/pen across the aviary were determined from videos recorded during their first (D1) and seventh (D7) day of aviary access, as well as at 19, 23, and 27 wk of age. Prevalence of floor eggs was recorded weekly from 17 to 28 wk of age. On D1, more ST and TT hens utilized the aviary during the daytime (P = 0.0077), made more vertical transitions when searching for a roosting spot in the evening (P = 0.0021), and maintained a consistent distance traveled during transitions compared to FL hens (P = 0.02). These differences disappeared by D7, except that ST and TT hens continued to roost on the highest perches of the aviary more (P < 0.0001) than FL hens through 27 wk of age. FL hens laid more floor eggs than ST and TT hens for the first 2 wk of lay (P < 0.0001). The majority (97.9%) of vertical transitions was controlled. Uncontrolled transitions were highest at D1 and decreased by D7 (P = 0.0009) and were not affected by rearing (P = 0.33). The results suggest that hens reared with minimal height are hesitant to use the laying hen aviaries when they are first transferred. They acclimate within 1 to 2 wk, but continue to roost less in the highest accessible level.

Salmonella in eggs and egg-laying chickens: pathways to effective control

Eggs contaminated with Salmonella have been internationally significant sources of human illness for several decades. Most egg-associated illness has been attributed to Salmonella serovar Enteritidis, but a few other serovars (notably S. Heidelberg and S. Typhimurium) are also sometimes implicated. The edible interior contents of eggs typically become contaminated with S. Enteritidis because the pathogen's unique virulence attributes enable it to colonize reproductive tissues in systemically infected laying hens. Other serovars are more commonly associated with surface contamination of eggshells. Both research and field experience have demonstrated that the most effective overall Salmonella control strategy in commercial laying flocks is the application of multiple interventions throughout the egg production cycle. At the preharvest (egg production) level, intervention options of demonstrated efficacy include vaccination and gastrointestinal colonization control via treatments such as prebiotics, probiotics, and bacteriophages, Effective environmental management of housing systems used for commercial laying flocks is also essential for minimizing opportunities for the introduction, transmission, and persistence of Salmonella in laying flocks. At the postharvest (egg processing and handling) level, careful regulation of egg storage temperatures is critical for limiting Salmonella multiplication inside the interior contents.

Egg Quality, Yolk Fatty Acid Profiles from Laying Hens Housed in Conventional Cage and Cage-Free Production Systems in the Andean Tropics

Egg consumers worldwide have increased their concerns about laying hens' welfare and its impact on final egg product quality. This study compared the egg quality parameters under the conventional cage (CC) and cage-free (CF) egg production systems in the tropics. The study was conducted on a commercial farm in Colombia using Hy-Line Brown pullets, reared under the same conditions for the first 15 wks. At 16 wks, the hens were distributed into two housing systems, CC and CF, on the same farm. The hens were fed the same diet for each phase in both systems and feed intake varied slightly. Egg samples were collected every six wks, from 22 to 82 wks of age. A total of 3960 eggs were analyzed at 11 sampling times. Parameters such as albumen height, egg weight, yolk color, eggshell thickness, eggshell strength, and Haugh units were determined using a DET-6000 machine. At 22 and 82 wks, screening for Salmonella spp. status was conducted using environmental and egg samples. Additionally, at 34, 64, and 82 wks, yolk samples were obtained for fatty acid profiles and crude protein (CP) analysis. The data were analyzed in a completely randomized block design with repeated measures (11 times): mean separation by Student's t-test yolk pigmentation, Haugh Units, and albumen height (p < 0.001) were higher in the CF compared with the CC between 38 and 69 wks of age, and eggs at 63 and 82 wks (p < 0.05) were heavier in the CF compared to the CC. Likewise, eggs from the CC had better eggshell strength from 57 to 82 wks. In the egg yolk fatty acid profile at the 34th wk, the pentadecanoic, palmitic, and heptadecanoic acids had higher concentrations in the CF systems than the CC. At the 64th wk, the egg yolk fatty acids-lauric, myristic, and heptadecanoic-had higher concentrations in the CF; likewise, at the 82nd wk, egg yolks from the CC had higher concentrations of lauric, heptadecanoic, and nervonic fatty acids than the CF. The eggs and environmental samples were negative for Salmonella spp. throughout the whole production phase. These results indicated that the production system might impact internal and external egg quality measures, potentially due to various stressors, including environmental factors or behavior restrictions.

Tracking Floor Eggs with Machine Vision in Cage-free Hen Houses

Some of the major restaurants and grocery chains in the United States have pledged to buy cage-free (CF) eggs only by 2025 or 2030. While CF house allows hens to perform more natural behaviors (e.g., dust bathing, perching, and foraging on the litter floor), a particular challenge is floor eggs (i.e., mislaid eggs on litter floor). Floor eggs have high chances of contamination. The manual collection of eggs is laborious and time-consuming. Therefore, precision poultry farming technology is necessary to detect floor eggs. In this study, 3 new deep learning models, that is, YOLOv5s-egg, YOLOv5x-egg, and YOLOv7-egg networks, were developed, trained, and compared in tracking floor eggs in 4 research cage-free laying hen facilities. Models were verified to detect eggs by using images collected in 2 different commercial houses. Results indicate that the YOLOv5s-egg model detected floor eggs with a precision of 87.9%, recall of 86.8%, and mean average precision (mAP) of 90.9%; the YOLOv5x-egg model detected the floor eggs with a precision of 90%, recall of 87.9%, and mAP of 92.1%; and the YOLOv7-egg model detected the eggs with a precision of 89.5%, recall of 85.4%, and mAP of 88%. All models performed with over 85% detection precision; however, model performance is affected by the stocking density, varying light intensity, and images occluded by equipment like drinking lines, perches, and feeders. The YOLOv5x-egg model detected floor eggs with higher accuracy, precision, mAP, and recall than YOLOv5s-egg and YOLOv7-egg. This study provides a reference for cage-free producers that floor eggs can be monitored automatically. Future studies are guaranteed to test the system in commercial houses.

Environmental sampling methods' influence on detection of pathogens in cage-free aviary housing

The environmental sampling of layer housing systems is essential to identifying potential pathogens that are of concern to human health. To identify the natural occurrence of pathogens (Listeria, Campylobacter, and Salmonella) at various locations in a cage-free aviary housing system, swabs were collected when hens were 22 to 39 wks of age. Duplicate environmental swabs were taken and inoculated with a low dose (10¹ cfu) Salmonella Enteritidis (SE) and examined for the recovery of SE from environmental samples. Detection of Listeria (P < 0.0001) and Campylobacter (P < 0.0001) varied between the environmental sample types taken: concrete dust, drag swabs, egg belt dust, manure belt scraper swabs, and wall dust. Detection of Listeria (P < 0.0001) was the highest (70.0%) at the beginning of the study (22 wk) and decreased over time. Detection of Campylobacter (P < 0.001) was also the highest at 22 wk, however the decrease over time was more gradual. Interestingly, detection of Campylobacter (P < 0.0001) was the greatest in concrete dust samples (96.25%), which can be attributed to the presence of rodent excreta in the samples. Drag swabs and manure belt scraper swabs were the best sampling types for high detection of Listeria and Campylobacter. It should be noted that Listeria recovered was not of human health concern. No naturally occurring Salmonella was identified in this study. The recovery of the SE inoculum increased over time, reaching the greatest recovery in drag (81.25%; P < 0.0001), egg belt dust (100.00%; P < 0.0001) and wall dust swabs (100.00%; P < 0.0001) by 39 wk. This high rate of SE recovery occurred just before US mandatory SE environmental monitoring at 40 to 45 wks of age. Based on this study, the use of drag and manure belt scraper swabs are effective in detecting Listeria and Campylobacter in cage-free aviary housing. Along with good pest management, the occurrence of pathogens could be monitored and reduced in laying hen flocks.

Influence of Increased Freedom of Movement on Welfare and Egg Laying Pattern of Hens Kept in Aviaries

This work investigates the effects of structural modifications on the welfare level and laying patterns of hens in a three-tier commercial aviary system. Four experimental groups were used: C (control, housed in a traditional aviary); LM (longitudinal movement, in which internal partitions were removed); VM (vertical movement, in which ramps were installed); and FM (freedom of movement, both LM and VM modifications). Hens showed worse body condition scores (p < 0.05) in all the modified aviaries, while plumage condition was improved in FM but worsened in VM (p < 0.05). No significant effect was observed on egg deposition patterns, egg quality or keel bone damage. When ramps were available (VM and FM groups), hens reduced the number of flights and increased the number of walks from 0.52 to 7.7% of the displacements on average (p < 0.05). Apart from some feather pecking concerns in VM (likely due to overcrowding in some favourite aviary areas), LM and FM seemed to facilitate animal movement and promote species−specific behaviour. It is concluded that hen welfare in aviary systems can be improved by means of tailored structural modifications. Producers may therefore adopt some of these modifications (providing ramps and/or removing vertical barriers) to enhance the welfare of hens.

Comparison and Correlation Analysis of Immune Function and Gut Microbiota of Broiler Chickens Raised in Double-Layer Cages and Litter Floor Pens

This study aimed to compare the immune function and gut microbiota between double-layer caged and litter floor pen-raised broiler chickens. Eighty meaty male chicks were selected and divided into cage group and litter floor group, with 20 replicates in each group. The broilers were raised in the same chicken house. The rearing density of the two rearing systems was same. The broilers were sampled on days 13 and 34. The results showed that compared with the cage group, the litter floor broilers had worse growth performance (23.24% increase in feed conversion ratio) in the early stage; better slaughter performance at day 42; stronger peripheral immune function (including higher lysozyme activity, T-cell ratio, Th-cell ratio, Tc-cell ratio, CD4/CD8, IL-10, B-cell ratio, IgG and IgA levels; and spleen immune-related gene expression); and stronger intestinal immune function (including higher ileum CD80, AvBD2, Mucin2, NF-κB, IL-8, IFN-γ/IL-4, and IgA mRNA expression levels and ileal mucosa sIgA levels). Compared with the cage group, the alpha diversity of ileum microbiota of the litter floor broilers was higher, and the relative abundance levels of litter breeding bacteria (Facklamia, Globicatella, and Jeotgalicoccus) and potential pathogenic bacteria (Streptococcus and Staphylococcus) were higher (P < 0.05). Through Spearman correlation analysis, it was found that enriched microbes in the ileum of litter floor broilers were positively correlated with immune function. In summary, compared with cage broilers, litter floor broilers had more potential pathogenic bacteria and litter breeding bacteria in the ileum, which may be one of the important reasons for the stronger immune function status. IMPORTANCE In China, the three-dimensional rearing system (cage) for broilers has gradually become a trend. In production, it was found that the incidence of disease in broiler chickens raised in cage systems was significantly higher than that of ground litter. Given that broilers raised on ground litter systems may be exposed to more environmental microbes, it is important to understand whether the rearing environment affects the function and status of the host immune system by altering the gut microbiota. In this study, rearing environment-derived gut microbes associated with stronger immune function in ground litter broilers were provided, which will provide new insights into strategies to target gut microbes to promote immune function and status in broilers raised in cages.

Research Note: Internal Organ Colonization by Salmonella Enteritidis in Experimentally Infected Layer Pullets Reared at Different Stocking Densities in Indoor Cage-Free Housing

Contamination of eggs by Salmonella has often been identified as a source of food-borne human illness. S. Enteritidis is deposited inside developing eggs when invasive infections of laying hens reach the reproductive organs. The susceptibility of hens in cage-based housing systems to S. Enteritidis has been associated with their stocking density, but the applicability of this information to extensive (cage-free) systems is uncertain. The present study assessed internal organ colonization by S. Enteritidis in egg-type pullets reared at 2 different stocking densities in cage-free housing. Pullets were reared at either 374 cm² or 929 cm² of floor space per bird. At 16 wk of age, 4 groups of 72 pullets were moved into isolation rooms simulating commercial cage-free barns; 1/3 of the pullets in 2 rooms were orally inoculated with S. Enteritidis immediately after transfer and pullets in 2 rooms were similarly infected at 19 wk. At 6 and 12 d postinoculation, the pullets were euthanized and samples of liver, spleen, and intestinal tract were removed for bacteriologic culturing. No significant differences (P > 0.05) in S. Enteritidis isolation frequencies from any tissue were observed between high and low density rearing groups following infection at either age. However, S. Enteritidis was found significantly (P < 0.05) more frequently among pullets infected orally at 19 wk than at 16 wk in spleens and intestines. Likewise, the frequency of S. Enteritidis isolation from all birds (inoculated plus contact-exposed) at 19 wk was significantly higher than at 16 wk in livers and spleens. This increased susceptibility to invasive S. Enteritidis infection at reproductive maturity emphasizes the importance of risk reduction at a critical stage in the egg production cycle.

Effects of Housing System on Anxiety, Chronic Stress, Fear, and Immune Function in Bovan Brown Laying Hens

The scientific community needs objective measures to appropriately assess animal welfare. The study objective was to assess the impact of housing system on novel physiological and behavioral measurements of animal welfare for laying hens, including secretory and plasma Immunoglobulin (IgA; immune function), feather corticosterone (chronic stress), and attention bias testing (ABT; anxiety), in addition to the well-validated tonic immobility test (TI; fearfulness). To test this, 184 Bovan brown hens were housed in 28 conventional cages (3 birds/cage) and 4 enriched pens (25 birds/pen). Feces, blood, and feathers were collected 4 times between week 22 and 43 to quantify secretory and plasma IgA and feather corticosterone concentrations. TI tests and ABT were performed once. Hens that were from cages tended to show longer TI, had increased feather corticosterone, and decreased secretory IgA at 22 weeks of age. The caged hens fed quicker, and more hens fed during the ABT compared to the penned hens. Hens that were in conventional cages showed somewhat poorer welfare outcomes than the hens in enriched pens, as indicated by increased chronic stress, decreased immune function at 22 weeks of age but no other ages, somewhat increased fear, but reduced anxiety. Overall, these novel markers show some appropriate contrast between housing treatments and may be useful in an animal welfare assessment context for laying hens. More research is needed to confirm these findings.

Comprehensive Assessment of Environmental Pollution in a Poultry Farm Depending on the Season and the Laying Hen Breeding System

Abstract

The odors and dust emitted from hen houses affect human health and the condition of crops. The source of fumes is an element of the poultry house environment that affects the level of dust (litter and feed), the concentration of volatile compounds and the composition of the microflora (litter, dust and fodder). The research carried out as part of this study is a comprehensive assessment of the microbiological contamination (Pseudomonas, Enterobacteriaceae, and microscopic fungi) of all the elements that make up the environment of the poultry house (feed, litter, dust pollution and the atmosphere of the poultry house) in an annual cycle. The air from both types of farms is tested in terms of the quantity and quality of volatile compounds. Two types of laying hens reared on litter were compared: commercial and backyard farms. It was found that the seasons of the year and the system of keeping hens have a significant impact on the microbiological contamination with volatile compounds of the environment and the atmosphere of the hen houses. Effect of housing environment and hen strain on egg production and egg quality as well as cloacal and eggshell microbiology in laying hens

This study was conducted to determine the effect of housing environment and laying hen strain on performance, egg quality, and microbiology of the cloaca and eggshell. A total of 1,152 Hy-Line Brown (HB) and Hy-Line W-36 White Leghorn (W-36) hens were used. All hens were kept in conventional cages (CC) from 18 to 32 wk of age and then moved to either enriched colony cages (EC) or free-range (FR) pens or continued in CC. Hens were randomly allocated into a 2 × 3 factorial arrangement of 2 laying hen strains (brown and white) and 3 housing environments (CC, EC, and FR) in a split plot in time (hen age) design. The experiment was conducted from 32 to 85 wk of age. The experiment was divided into 2 phases: early phase (32-51 wk of age) and late phase (52-85 wk of age). A 3-way interaction was observed for hen day egg production (HDEP) among housing environments, hen strain, and bird age in the early phase (P = 0.004) as well as in the late phase (P < 0.0001). In both of the phases, HDEP was higher in CC and FR than in EC. Hy-Line W-36 hens raised in EC had the lowest HDEP compared to other treatments. A 3-way interaction was observed for feed intake (FI; P = 0.017) and feed conversion ratio (FCR) in the late phase (P < 0.0001). The lowest FI and highest FCR were observed in EC for W-36 hens. Free-range hens performed in-between for eggshell quality when compared to CC and EC while HB had better egg quality than W-36. Free-range hens had higher cloacal bacterial counts for aerobes, anaerobes, and coliforms than CC and EC. Higher eggshell bacterial contamination was observed in eggs from FR versus eggs from CC and EC. These results indicate that both housing environment and laying hen strain affect performance and egg quality as well as cloacal and eggshell microbiology. Further studies should be conducted to determine food safety and economic impacts when using different hen strains and housing environments.

Do the differences in egg contamination, penetration, and resistance against microorganisms among the hen genotypes exist?

The aim of this study was to evaluate and compare the impact of genotype and storage conditions (temperature and time) on microbiological contamination and eggshell quality. There were four genotypes of laying hens used, Czech golden spotted (CGS), Greenleg Partridge (GP), White Leghorn (WL) and commercial hybrid (CH) hens were included. After collection, the eggs were divided equally into five groups regarding the storage time (0, 14, 28 days) and temperature (5 and 20 °C). The microbiological analysis included counting of colonies forming units (CFU) of Escherichia coli (EC), Enterococcus (ENT) and total number of microorganisms (TNM) on eggshell surface, eggshell membranes and in thin albumen. The analysis of eggshell quality included the determination of eggshell proportion (SP), thickness (ST), strength (SST), index (SI) and surface (SS). Moreover, egg weight (EW) and egg weight loss (EWL) were determined. The significant effect of genotype was found in contamination of eggshell by EC, ENT and TNM, eggshell membranes by TNM and albumen by EC (all P ≤ 0.05). The significantly lowest contamination of eggshell from EC was in eggs from the WL hens (4.42 log CFU/eggshell), while from ENT was in eggs from the CGS hens (1.22 log CFU/eggshell) and from the WL hens (1.40 log CFU/eggshell). The lowest incidence of TNM was also detected in eggs from the WL hens (5.03 log CFU/eggshell). Statistically the lowest contamination of eggshell membranes by TNM was found in eggs from the WL (0.12 log CFU/eggshell membranes) and CH hens (0.15 log CFU/eggshell membranes). Regarding the effect of genotype, the GP (not detected) and WL (not detected) hens was in eggs with statistically the lowest occurrence of EC bacteria in albumen. Regarding the EW and eggshell quality, all the parameters were significantly affected by the genotype (P ≤ 0.0001). Also EWL was significantly (P ≤ 0.05) affected by genotype (after 14, 21 and 28 days of storage). There were found to be significant differences of microbial contamination of egg surface among observed hen genotypes. The penetration of selected microorganisms was also significant in contamination of eggshell membranes by TNM and in contamination of albumen by EC.

Research Note: Contamination of eggs by Salmonella Enteritidis and Salmonella Typhimurium in experimentally infected laying hens in indoor cage-free housing

Contaminated eggs are a leading source of human Salmonella infections and this problem continues to challenge public health authorities and egg industries around the world. Salmonella invasion of the ovaries and oviducts of infected laying hens can result in bacterial deposition inside the edible portions of developing eggs. The introduction, persistence, and transmission of salmonellae in commercial egg-laying flocks are influenced by flock management practices, but the food safety ramifications of different types of laying hen housing remain unresolved. The present study assessed the frequency of internal contamination of eggs after experimental Salmonella Enteritidis and S. Typhimurium infection of laying hens in indoor cage-free housing. Groups of 72 hens were housed on wood shavings in isolation rooms simulating commercial cage-free barns with community kick-out nest boxes and perches and 1/3 of the hens in each room were orally inoculated with 8.0 × 10⁷ cfu of 2-strain mixtures of either S. Enteritidis (2 rooms) or S. Typhimurium (2 rooms), and the entire internal contents of all eggs laid 5 to 30 d postinoculation in nest boxes or on the flooring substrate were cultured to detect Salmonella. Contaminated eggs were laid between 8 and 28 d postinoculation. The overall incidence of S. Enteritidis isolation from eggs (3.41%) was significantly (P = 0.0005) greater than S. Typhimurium (1.19%). The contamination frequencies associated with the 2 egg collection locations were not significantly different (P > 0.05). These results demonstrate that oral infection of a relatively small proportion of laying hens in indoor cage-free housing with invasive Salmonella serovars can result in the production of internally contaminated eggs at low frequencies over a period of nearly a month postinoculation.

Comparison of intestinal permeability, morphology, and ileal microbial communities of commercial hens housed in conventional cages and cage-free housing systems

The gastrointestinal health of poultry can be impacted by a variety of factors including their environment. As egg production moves from conventional cage housing (CC) toward cage-free housing (CF), it is important to understand this impact on intestinal health. This study was conducted to determine if housing type impacted intestinal permeability, morphology, and microbial communities in commercial hens across housing systems. Hens were randomly selected from 2 rooms of CC (n = 25) and CF (n = 25) at a commercial facility. Birds were given fluorescein isothiocyanate dextran (FITC-D) by oral gavage to measure intestinal permeability. Jejunal and ileal samples were collected to evaluate villus height, crypt depth, and their ratio. Ileal contents were collected for bacterial DNA isolation and 16S rRNA gene sequencing. Serum FITC-D was similar between housing type (P = 0.709). Hens housed in the CF had increased jejunal villus height and crypt depth compared with hens from the CC (P < 0.002). Hens from the CC tended to have a greater villus height to crypt depth ratio in both the jejunum and ileum compared with the CF (P = 0.064; P = 0.091, respectively). Microbial community diversity measurements favored hens housed in the CC as ileal contents tended to have increased species richness (P = 0.059), had greater alpha diversity (P = 0.044), and had an increased number of over represented operational taxonomic units (46/64), including Romboutsia sp. (30.80%), Lactobacillus kitasatonis (17.16%), and Lactobacillus aviarius (11.15%). Correlations between microbial communities with intestinal traits identified significant association with the greatest number of correlations with FITC-D and ileal morphology. Many of these correlations identified microbial communities associated with expected traits; thus, providing limited functional data to microbial communities with limited information. The greater number of correlations of ileal morphology with ileal microbial communities suggesting local microbial communities contribute to the intestinal environment distant. In this limited study, several parameters favored hens from CC suggesting an advantage of this system for intestinal health. However, the lower intestinal health parameters observed in CF were not at levels to indicate detrimental effects.

Antimicrobial resistance and recovery of Salmonella, Campylobacter, and Escherichia coli from chicken egg layer flocks in Canadian sentinel surveillance sites using 2 types of sample matrices

Eggs are important to the diet of Canadians. This product is one of the supply-managed commodities in Canada, but unlike other commodities, where food safety risks are extensively explored and reported, information on the prevalence of enteric organisms (e.g., Salmonella, Campylobacter) and antimicrobial resistance (AMR) in layers in Canada are limited. This study was conducted to determine the prevalence of select bacteria and the associated AMR patterns in layer flocks using 2 sample matrices. Farms were located within FoodNet Canada and the Canadian Integrated Program for Antimicrobial Resistance Surveillance sentinel sites (SS). Fecal samples (Ontario: ONSS1a, ONSS1b) and environmental sponge swabs (British Columbia: BCSS2a) were collected. Salmonella prevalence was 29% and 8% in ONSS1a and ONSS1b, respectively, and 7% in BCSS2a. S. Kentucky and S. Livingstone were the most frequently isolated serovars and no S. Enteritidis was detected. Campylobacter was not detected in the BC sponge swabs but was isolated from 89% and 53% of Ontario fecal samples (ONSS1a and ONSS1b, respectively). Seven C. jejuni from Ontario were ciprofloxacin-resistant. Escherichia coli prevalence was high in both sample types (98%). Overall, tetracycline resistance among E. coli ranged from 26% to 69%. Resistance to ceftiofur (n = 2 isolates) and gentamicin (n = 2) was relatively low. There were diverse resistance patterns (excludes susceptible isolates) observed among E. coli in Ontario (10 patterns) and British Columbia (14 patterns). This study revealed that fecal samples are more informative for farm-level monitoring of pathogen and AMR prevalence. Without further validation, sponge swabs are limited in their utility for Campylobacter detection and thus, for public health surveillance.

Cage production and laying hen welfare

Although many factors affect the welfare of hens housed in cage and non-cage systems, welfare issues in cage systems often involve behavioural restrictions, whereas many welfare issues in non-cage systems involve health and hygiene. This review considers and compares the welfare of laying hens in cages, both conventional and furnished cages, with that of hens in non-cage systems, so as to highlight the welfare implications, both positive and negative, of cage housing. Comparisons of housing systems, particularly in commercial settings, are complex because of potentially confounding differences in physical, climatic and social environments, genetics, nutrition and management. Furthermore, some of the confounding factors are inherent to some specific housing systems. Nevertheless, research in commercial and experimental settings has indicated that hens in conventional and furnished cages have lower (or similar), but not higher, levels of stress on the basis of glucocorticoid concentrations than do hens in non-cage systems. Furthermore, caged hens, generally, have lower mortality rates than do hens in non-cage systems. However, the behavioural repertoire of laying hens housed in conventional cages is clearly more compromised than that of hens in non-cage systems. In contrast to conventional cages, furnished cages may provide opportunities for positive emotional experiences arising from perching, dust-bathing, foraging and nesting in a nest box. Some have suggested that the problems with modern animal production is not that the animals are unable to perform certain behavioural opportunities, but that they are unable to fill the extra time available with limited behaviours when they have no need to find food, water or shelter. Environmental enrichment in which objects or situations are presented that act successfully, and with a foreseeable rewarding outcome for hens by also providing regular positive emotional experience, is likely to enhance hen welfare. Research on cage systems highlights the importance of the design of the housing system rather than just the housing system per se.

Combined Effect of Genotype, Housing System, and Calcium on Performance and Eggshell Quality of Laying Hens

Hen performance and eggshell quality are affected by a wide range of factors from which genotype. The housing conditions and feed calcium (Ca) level might be considered the most important. Here, we compared the performance and eggshell quality of commercial hybrids (ISA Brown, Bovans Brown) and traditional Czech hybrid (Moravia BSL). Laying hens were housed in enriched cages and on littered pens and fed two different Ca levels (3.00% vs. 3.50%). Contrary to the commercial hybrids, Moravia BSL performed better under the lower feed Ca level in enriched cages. Additionally, the data pointed out the importance of studying the interaction between factors, which might help to decide the best housing system and feed Ca level for a certain hen genotype.

Abstract

The objective of this study was to evaluate hen performance and eggshell quality response to genotype, housing system, and feed calcium (Ca) level. For this purpose, an experiment was conducted on 360 laying hens of ISA Brown, Bovans Brown (commercial hybrids), and Moravia BSL (traditional Czech hybrid). Laying hens were kept in enriched cages and on littered floor and fed similar feed mixtures with different Ca content (3.00% vs. 3.50%). In terms of hen performance, ISA Brown had the highest egg production (84.2%) compared to Moravia BSL (74.3%) and Bovans Brown (71.4%). Regarding eggshell quality, Bovans Brown showed the highest values of all eggshell quality parameters. Increasing feed Ca level augmented egg production (p ≤ 0.001) but had no effect on other performance parameters. Except eggshell thickness, all eggshell quality parameters were affected by the three-way interaction of genotype, housing, and Ca. Bovans Brown, which had the strongest eggshells (5089 g/cm²) when housed on a littered floor system and fed 3.00% Ca, while Moravia BSL housed on a littered floor had the weakest eggshells (4236 g/cm²) at 3.50% Ca. The study pointed out the importance of the interactions between studied factors on performance and eggshell quality compared to an individual factor effect.

Sustainability and Quality Aspects of Different Table Egg Production Systems: A Literature Review

Eggs are of considerable importance in feeding the population, as they are a relatively inexpensive and complex food source of very high biological value. The daily animal protein requirement for the human body can be covered with eggs in the cheapest way and with the lowest environmental impact. As animal welfare, as well as environmental and health awareness issues, become increasingly prominent in developed countries, consumer demand for eggs has also changed significantly in recent years, with an increasing number of consumers buying eggs produced in non-cage housing systems. In recent years, cage housing has been more frequently debated in EU member states. An initiative was launched in 2018 to end cage housing technologies and the sale of eggs produced in this way. However, in addition to animal welfare, a number of other factors need to be considered in relation to sustainable production. For this reason, the aim of this research is to provide a comprehensive overview of the sustainability issues of various housing technologies, as well as quality factors affecting consumer health and egg consumption based on the relevant international references and databases. Although there is a growing demand for products produced in non-cage housing systems due to the increasing relevance of environmental protection, health awareness and animal welfare issues in Western societies, research has shown that non-caged production is not the best solution for environmentally, socially and economically sustainable egg production.

Research Note: Horizontal transmission and internal organ colonization by Salmonella Enteritidis and Salmonella Kentucky in experimentally infected laying hens in indoor cage-free housing

The transmission of Salmonella to humans via contaminated eggs is an international public health concern. S. Enteritidis is deposited inside eggs after colonizing reproductive tissues of infected hens. Diverse housing facility characteristics and flock management practices influence Salmonella persistence and transmission in poultry, but the food safety consequences of different housing systems for laying hens remain unresolved. The present study compared the horizontal transmission of infection and invasion of internal organs during the first 2 wk after experimental S. Enteritidis and S. Kentucky infection of laying hens in indoor cage-free housing. Groups of 72 hens were housed in isolation rooms simulating commercial cage-free barns, and 1/3 of the hens in each room were orally inoculated with either S. Enteritidis (2 rooms) or S. Kentucky (2 rooms). At 6 d and 12 d postinoculation, 12 inoculated and 24 contact-exposed hens in each room were euthanized, and samples of liver, spleen, ovary, oviduct, and intestinal tract were removed for bacteriologic culturing. All orally inoculated hens were positive for intestinal colonization by S. Enteritidis at 6 d postinfection, and 70.8% of contact-exposed hens had become colonized by 12 d. S. Enteritidis was isolated from 100% of livers and 50.0% of ovaries from inoculated birds at 6 d and from 41.7% of livers and 10.4% of ovaries from contact-exposed birds at 12 d. The majority of both orally inoculated and contact-exposed hens were positive for intestinal colonization by S. Kentucky at 6 d, but S. Kentucky was found in other internal organs of both inoculated and contact-exposed hens significantly (P < 0.05) less often than S. Enteritidis at both sampling intervals. These results indicate that Salmonella infection can spread rapidly and extensively among hens in cage-free indoor housing, including a high frequency of internal organ involvement for invasive S. Enteritidis.

Managing Free-Range Laying Hens-Part A: Frequent and Non-Frequent Range Users Differ in Laying Performance but Not Egg Quality

Free-range laying hens are allowed to roam around and exhibit their desired behaviours including usage of the outdoor range. Consequently, flock sub-populations of high-range users (“rangers”) and low-range users (“stayers”) appear. The subpopulation effect on egg production and egg quality has not been studied to date. Rangers were more consistent in their range use, while stayers increased their range use over time. Rangers came into lay earlier compared to the stayers but their egg production dropped during mid-lay until the end of lay when they were outperformed by the stayers. The flock sub-populations did not differ in their egg quality during the production period. These findings are of relevance to egg producers, as it allows them to manage their flock knowing that they can encourage them to range/stay in the shed without compromising egg quality, including off-grade eggs. In the future, it would be interesting to investigate if increased egg performance was triggered by the more frequent range usage.

Abstract

Little is known about the impact of ranging on laying performance and egg quality of free-range hens. The aim of this study was to characterise egg production of commercial free-range laying hen sub-populations of low-, moderate- and high-range use at an early age. A total of five flocks with 40,000 hens/flock were investigated where 1875 hens/flock were randomly selected at 16 weeks of age, monitored for their range use and subsequently grouped into “stayers” (the 20% of hens that spent the least time on the range), “roamers” (the 20% of the hens that used the range more than stayers but less than rangers) and “rangers” (the 60% of the hens that spent the most time on the range). Eggs from the individual groups were collected in 10-weekly intervals until hens were 72 weeks of age, commercially graded and tested for several quality parameters. Significant differences were noted for hen-day production. For example, at 22 weeks of age, rangers enjoyed a laying rate of 88.0% ± 1.1%, while stayers performed at 78.2% ± 1.9% but at 72 weeks of age egg production of rangers was 85.1% ± 0.9% and of stayers was 95.5% ± 0.9% (p < 0.05). Range use was of minor importance to the egg quality.

Characterising Free-Range Layer Flocks Using Unsupervised Cluster Analysis

This study aimed to identify sub-populations of free-range laying hens and describe the pattern of their resource usage, which can affect hen performance and welfare. In three commercial flocks, 3125 Lohmann Brown hens were equipped with radio-frequency identification (RFID) transponder leg bands and placed with their flock companions, resulting in a total of 40,000 hens/flock. Hens were monitored for their use of the aviary system, including feeder lines, nest boxes, and the outdoor range. K-means and agglomerative cluster analysis, optimized with the Calinski-Harabasz Criterion, was performed and identified three clusters. Individual variation in time duration was observed in all the clusters with the highest individual differences observed on the upper feeder (140 ± 1.02%) and the range (176 ± 1.03%). Hens of cluster 1 spent the least amount time on the range and the most time on the feed chain located at the upper aviary tier (p < 0.05). We conclude that an uneven load on the resources, as well as consistent and inconsistent movement patterns, occur in the hen house. Further analysis of the data sets using classification models based on support vector machines, artificial neural networks, and decision trees are warranted to investigate the contribution of these and other parameters on hen performance.

Health of Commercial Egg Laying Chickens in Different Housing Systems

To determine which type of egg-laying hen housing was best for the chickens, the workers in those housing systems, the environment, and society based on food safety and affordability, a combined research project involving egg suppliers, food manufacturers, food service representatives, and food retailers, as well as research institutions and nongovernmental organizations, was performed. This study reports the hen health and welfare portion based upon veterinary health inspections and compared mortality rates, skeletal abnormalities, causes of death determined by necropsy, and titers to infectious bronchitis and Newcastle disease viruses. Birds were housed on a preexisting Midwest layer complex, which consisted of conventional cages (CC). New houses were built adjacent to the CC house where enriched colony cages (EC) and an aviary system (AV) were installed. Two flock cycles from housing to 78 wk of age were followed. Total mortality was greatest for AV, while CC and EC birds were similar. Keel bone fractures were greatest for AV, next greatest for EC, and least for CC birds. Other skeletal abnormalities were greatest for AV birds. Birds dying from being caught in the structure, pick out, and persecution was most frequent for AV and next most frequent for EC, but nonexistent with CC birds. Infectious pododermatitis (bumblefoot) was most frequent for AV, next most frequent for EC, and essentially nonexistent for CC birds. There was little to no effect on antibody titers based upon housing type. Based upon these findings, it appears that EC housing is better for the health and welfare of egg-laying chickens than CC or AV housing.

Contamination of eggs by Salmonella Enteritidis in experimentally infected laying hens of four commercial genetic lines in conventional cages and enriched colony housing

Human illness caused by the consumption of eggs contaminated with Salmonella Enteritidis is a continuing international public health concern. This pathogen is deposited inside the edible contents of eggs as a consequence of its ability to colonize reproductive tissues in infected hens. Conditions in the housing environment can influence the persistence and transmission of avian Salmonella infections, but the food safety ramifications of different poultry management systems are not entirely clear. The present study assessed the deposition of S. Enteritidis inside eggs laid by groups of experimentally infected laying hens of 4 commercial genetic lines (designated as white egg lines W1 and W2 and brown egg lines B1 and B2). Groups of hens from each line were housed at 555 cm2 of floor space per bird in both conventional cages and colony units enriched with access to perches and nesting areas. All hens were orally inoculated with 5.75 × 107 cfu of a 2-strain S. Enteritidis mixture, and the internal contents of eggs laid 5 to 24 D post-inoculation were cultured to detect the pathogen. No significant differences in egg contamination frequencies were found between the 2 housing systems for any of the hen lines. Contaminated eggs were laid between 7 and 21 D post-inoculation at an overall frequency of 2.47%, ranging from 0.25 to 4.38% for the 4 hen lines. The frequency of S. Enteritidis recovery from egg samples was significantly (P < 0.05) lower for line B2 than for any of the other lines, and the egg contamination frequency for line W1 was significantly greater than for line W2. The overall incidence of contamination among white eggs (3.38%) was significantly higher than among brown eggs (1.56%). These results demonstrate that S. Enteritidis deposition inside eggs can vary between genetic lines of infected laying hens, but housing these hens in 2 different systems did not affect the production of contaminated eggs.

Prevalence and Genetic Analysis of Salmonella enterica from a Cross-Sectional Survey of the New Zealand Egg Production Environment

Epidemiological evidence suggests that Salmonella on New Zealand eggs is not an important pathway for human salmonellosis. However, robust nationally representative data for Salmonella contamination of eggs is not available to support this. To better understand the exposure of New Zealand commercial eggs to Salmonella, a cross-sectional survey collected data on prevalence and serotypes of Salmonella in the feed, laying sheds (feces, dust, and boot or manure belt swabs), and packhouses (egg contact surfaces) of New Zealand commercial egg layer farms. Salmonella was not detected on 16 of 28 surveyed farms, and 4 farms had only one positive sample. Of the 43 (13.3%) of 323 Salmonella-positive samples, dust samples had the highest prevalence (19 of 67, 28.4%), followed by boot or manure belt swabs (11 of 67, 16.4%), feces (7 of 67, 10.4%), packhouse egg contact surfaces (5 of 87, 5.7%), and feed (1 of 33, 3.0%). A significantly higher prevalence was from caged (33 of 75, 44.0%; P < 0.001) compared with cage-free (4 of 126, 3.2%) systems, yet multiple practices differ between laying systems, which could influence prevalence. Salmonella-positive packhouse samples were only identified on the three farms with the highest laying shed prevalence, and isolates were genetically related (as determined by single nucleotide polymorphism analyses) suggesting cross-contamination between the laying shed and packhouse surfaces. Serotypes isolated included Salmonella Infantis, Salmonella Thompson, Salmonella Typhimurium, Salmonella Anatum, and Salmonella Mbandaka. Importantly, Salmonella Enteritidis, which causes egg-associated outbreaks internationally, was not isolated. Genomic comparisons of isolates supported the presence of a common contamination source in the shed and farm environments rather than multiple sporadic contamination events. This survey establishes a benchmark of Salmonella prevalence and types in the New Zealand egg production environment and provides a reference point for assessing the impact of changes to practices on Salmonella prevalence.

Non-typhoidal Salmonella contamination in egg shells and contents from retail in Western Australia: Serovar diversity, multilocus sequence types, and phenotypic and genomic characterizations of antimicrobial resistance

In recent years, the number of human salmonellosis cases in Western Australia (WA) has increased more dramatically than in any other Australian state. In 2017, the number of cases in WA was more than double the five-year average, and eggs had emerged as the key culprit for several Salmonella foodborne disease outbreaks. To better understand such an epidemiologically intriguing situation, our research goal was to investigate the prevalence, serovar diversity, multilocus sequence types, and antimicrobial resistance of non-typhoidal Salmonella contamination in retail eggs produced and sold in WA. A total of 200 visually clean and intact retail egg samples (each containing a dozen eggs) were purchased for one year (2017-2018) from supermarkets in metropolitan Perth, the capital of WA. For each sample, the contents and shells of the 12 eggs were separately pooled and cultured according to standard methods. Overall, Salmonella was detected in 11.5% (23/200) of the tested egg samples. Salmonella was isolated from 4.5% (9/200) and 3% (6/200) of eggshells and egg contents, respectively. In 4% (8/200) of the samples, Salmonella was recovered from both eggshell and egg contents. Isolates from positive retail egg samples were serotyped as either S. Typhimurium (52.2% [12/23]) or S. Infantis (39.1% [9/23]). Both serotypes were concurrently recovered from two different retail egg samples. We retained a set of both S. Typhimurium (n = 29) and S. Infantis (n = 12) isolates from all Salmonella-positive retail packs (n = 23) for further characterization. Only two (S. Typhimurium) isolates showed resistance to ampicillin, of which one carried β-lactamase resistance gene bla_TEM-1b. The remaining isolates (39/41) were susceptible to all 14 antimicrobials included in the minimum inhibitory concentrations (MICs) testing panel. Multilocus sequence typing and serotyping were perfectly mirrored, as all S. Typhimurium isolates were characterized as sequence type (ST)-19, and all S. Infantis isolates were ST-32. This study points to the noteworthy Salmonella prevalence rate in retail egg samples in WA. Our results illustrate minimal public health risks arising from antimicrobial resistance Salmonella from Australian eggs.

The influence of the conditions of acquisition and storage of table eggs on changes in their quality and the presence of mycobiota and Fusarium mycotoxins

The study showed that the hen housing system and egg storage conditions had significant influence on differences in the qualitative traits of eggs. The most rapid qualitative traits changes were observed in the eggs laid by the hens kept in the free-range and litter systems. After the first week of storage fungi were found on the eggshell surface but significant growth of fungi on the eggshell surface was noted after 3 wk, regardless of the storage conditions. Higher humidity during egg storage causes the dynamic development of fungi in the albumen. The principal component analysis proved the dependency between ergosterol and the trichothecene concentration in the albumen. Mycotoxins in the albumen indicate the presence of pathogenic species of microscopic fungi. The albumen of the eggs laid by the hens kept in cages had the lowest concentration of mycotoxins. The results of the study showed that the conditions of the henhouse environment significantly influenced the initial contamination of eggshells. Egg storage conditions, i.e., high air humidity, favor the development of fungi on the eggshell surface, affect the dynamics of fungal growth into the albumen and the production of mycotoxins.

Prevalence, Persistence, and Antimicrobial Resistance of Campylobacter spp. from Eggs and Laying Hens Housed in Five Commercial Housing Systems

Husbandry practices for laying hens in commercial egg production is a topic of interest from a social, economic, and regulatory standpoint. Animal welfare concerns regarding the use of conventional cages have arisen and consumer perceptions of hen welfare have led to a higher demand for cage-free eggs. The aim of this study was to assess the impact of housing systems on prevalence, persistence, and antimicrobial resistance (AMR) of Campylobacter from laying hens and shell eggs. A total of 425 samples were collected over a 10-month period from the North Carolina Layer Performance and Management Test and Campylobacter isolates were identified by serological, biochemical, and molecular tests. Genetic variability was evaluated using pulsed-field gel electrophoresis (PFGE) and AMR testing was performed. Prevalence of Campylobacter spp. ranged from 11.1% in the enrichable cages to 19.7% in the conventional systems. A greater prevalence of Campylobacter was found in the fecal swab samples from free-range birds compared with those of birds housed in the more intensive housing systems (p > 0.05). Overall, 72 isolates were confirmed as Campylobacter spp. by PCR. More than 90% of the isolates (n = 66) were identified as Campylobacter jejuni, followed by Campylobacter coli (n = 6). C. jejuni isolates displayed high levels of resistance to tetracycline (67%). Genetic variability of Campylobacter was high, with more than 20 PFGE patterns identified. Pattern "a" comprised 42% of isolates from all housing systems and was also the most persistent. This study suggests that housing systems of laying hens used for commercial shell egg production may impact the rate of Campylobacter shedding by layers. Isolation rates and tetracycline resistance levels of this pathogen are still of concern, emphasizing the need for well-implemented biosecurity measures on the farm.

Effects of litter floor access and inclusion of experienced hens in aviary housing on floor eggs, litter condition, air quality, and hen welfare

With different cage-free (CF) housing styles and management schemes, retailers have developed their own CF criteria. One highly debated aspect is if hens may be kept inside the system for part of the day—during the first few hours after lights-on. Research is lacking regarding the impacts of such a practice on hen welfare, incidence of eggs laid on the litter floor, litter condition, and air quality. This 14-mo field study was conducted to help assess such impacts. Hens (Dekalb White) in an aviary house (50,000-hen nominal capacity) were allowed to have full litter access (FLA) vs. part-time litter access (PLA) from 10:50 am to 9:00 pm, coupled with the absence or presence of experienced hens (1.5% of the population), hence a 2 × 2 factorial arrangement. The measured variables included a) incidence of floor eggs, b) percentage of birds remaining on litter floor at night, c) mortality, d) body weight (BW) and BW uniformity, e) litter condition (depth, moisture content, texture, amount removed, and bacteria concentration), f) environmental conditions, and g) welfare conditions (10 variables). Compared to FLA, PLA had a significantly lower incidence of floor eggs (1.4 ± 0.1 vs. 12.6 ± 1.1 eggs per hen housed as of 76 weeks of age (WOA), i.e., approximately 89% reduction), less manure deposition on the floor (0.53 ± 0.02 vs. 1.05 ± 0.04 kg/100 hens/d, dry basis, i.e., approximately 50% reduction), and lower ammonia concentrations due to drier litter (averaging 22% lower). Inclusion of 1.5% experienced hens in the young flock did not show benefit of reducing the incidence of floor eggs (P = 0.48). The percentage of hens remaining on the floor at night was low (< 0.01%) in all cases from 24 WOA onward. No differences were detected between FLA and PLA in hen welfare conditions, mortality, BW, BW uniformity, bacteria concentration in the litter, air temperature, or relative humidity.

Salmonella control in poultry flocks and its public health impact

An increase in confirmed human salmonellosis cases in the EU after 2014 triggered investigation of contributory factors and control options in poultry production. Reconsideration of the five current target serovars for breeding hens showed that there is justification for retaining Salmonella Enteritidis, Salmonella Typhimurium (including monophasic variants) and Salmonella Infantis, while Salmonella Virchow and Salmonella Hadar could be replaced by Salmonella Kentucky and either Salmonella Heidelberg, Salmonella Thompson or a variable serovar in national prevalence targets. However, a target that incorporates all serovars is expected to be more effective as the most relevant serovars in breeding flocks vary between Member State (MS) and over time. Achievement of a 1% target for the current target serovars in laying hen flocks is estimated to be reduced by 254,400 CrI95[98,540; 602,700] compared to the situation in 2016. This translates to a reduction of 53.4% CrI95[39.1; 65.7] considering the layer-associated human salmonellosis true cases and 6.2% considering the overall human salmonellosis true cases in the 23 MSs included in attribution modelling. A review of risk factors for Salmonella in laying hens revealed that overall evidence points to a lower occurrence in non-cage compared to cage systems. A conclusion on the effect of outdoor access or impact of the shift from conventional to enriched cages could not be reached. A similar review for broiler chickens concluded that the evidence that outdoor access affects the occurrence of Salmonella is inconclusive. There is conclusive evidence that an increased stocking density, larger farms and stress result in increased occurrence, persistence and spread of Salmonella in laying hen flocks. Based on scientific evidence, an impact of Salmonella control programmes, apart from general hygiene procedures, on the prevalence of Campylobacter in broiler flocks at the holding and on broiler meat at the end of the slaughter process is not expected.

Nest use and patterns of egg laying and damage by 4 strains of laying hens in an aviary system

Laying hens are strongly motivated to use nests for egg laying, and alternative production systems (e.g., aviaries) provide artificial sites to meet this need and ensure efficient collection of clean, undamaged eggs. However, nests are typically not provided to allow simultaneous use by all hens; therefore, competition or mislaid eggs can result. To understand the influence of strain on laying eggs outside nests and damage to eggs, we compared daily patterns of nests use and egg laying among 4 laying hen strains (Hy-Line Brown (HB), Bovans Brown (BB), DeKalb White (DW), and Hy-Line W36 (W36)). Hens were observed over 3 consecutive days in aviaries with colony nests in the enclosure's top tier (2 nests/unit, 4 aviary units/strain, 144 hens/unit). The number and location of hens in nests and the number, location and condition of eggs throughout aviaries were recorded. Most eggs (90 to 95%) were laid in nests; however, brown hens consistently laid more non-nest eggs and damaged more eggs than white hens (P ≤ 0.05). Higher nest occupancy by brown hens was correlated with more non-nest and damaged eggs (P ≤ 0.05). In the morning, brown hens occupied more nest space and laid more nest eggs than white hens (e.g., HB vs. DW: 82.97 and 34.66% of space; 91.35 and 68.73% of nest eggs; P ≤ 0.05). At midday, white hens occupied more nest space and laid more nest eggs than brown hens (e.g., HB vs. DW: 28.47 and 15.81% of space; 27.39 and 8.29% of nest eggs; P ≤ 0.05). Brown hens preferred right nest compartments and laid more eggs there, whereas white hens preferred left compartments and W36 laid more eggs there (P ≤ 0.05). These findings indicate that different strains of hens have different patterns of nest use and laying behavior. In brown hens, heavy morning nest use was related to laying eggs outside nests and more damaged eggs, suggesting insufficient space for oviposition in nests. Specific facility design should be matched to hens’ preferences to accommodate behavioral needs of different strains.

Laying hens in aviaries with different litter substrates: Behavior across the flock cycle and feather lipid content

The tiered aviary for laying hens includes a floor litter area to promote foraging and dust bathing. Data are needed on hens' use of different litter substrates and effectiveness of substrates in removing excess feather lipids to ensure a suitable litter area. Bovans White hens were housed in commercial-style aviaries with access to one of 3 litter substrates (wood shavings, straw, or plastic turf mats-AstroTurf®, n = 4 aviary pens per substrate, 144 cage-reared hens populated per pen). Litter areas were videoed across 2 d each at 4 ages: immediately following first aviary opening (25 wk), then at 28, 50, and 68 weeks. Observations of hens throughout the d included percentages of all hens in each pen on the litter area, foraging and transitioning between the tiered enclosure and litter area. Percentages of hens dust bathing were observed from 11:00 to 15:00. Breast and back feather samples from 7 birds per pen at 28, 50, and 68 wk were analyzed for lipid content. Overall, fewer hens simultaneously accessed the AstroTurf® (P < 0.0001), but flocks showed relatively balanced transitions between the tiered enclosure and the litter area throughout the d, regardless of substrate. On average, less than 5% of all hens were observed dust bathing (peaks up to 15% of hens) with no differences among litter substrates or ages (P ≥ 0.18). On average, less than 2% of hens were observed foraging (peaks up to 4% of hens) with fewer hens foraging on AstroTurf® (P < 0.0001). Feather lipid differences among litter substrates (P < 0.0001) were inconsistent across sampling periods, possibly due to different birds sampled across time. At all ages, lipid levels were higher on the back over breast feathers (P < 0.0001) for hens housed with AstroTurf®. AstroTurf® may be suitable for nest boxes, but straw and shavings are more ideal litter substrates. Further study should investigate alternative substrates or regular substrate addition to encourage more foraging and dust bathing.

Frequency and Duration of Fecal Shedding of Salmonella Serovars Heidelberg and Typhimurium by Experimentally Infected Laying Hens Housed in Enriched Colony Cages at Different Stocking Densities

Eggs contaminated with Salmonella Enteritidis are leading sources of human salmonellosis, but Salmonella Heidelberg and Salmonella Typhimurium are also egg-associated pathogens. The management practices and housing facilities characterizing different systems for housing commercial egg flocks can influence Salmonella persistence and transmission. Animal welfare aspects of poultry housing have been widely debated, but their food safety ramifications are not thoroughly understood. The present study assessed the effects of two different bird stocking densities on the frequency and duration of fecal shedding of strains of Salmonella Heidelberg and Salmonella Typhimurium in groups of experimentally infected laying hens housed in colony cages enriched with perching and nesting areas. In separate trials, laying hens were distributed into two groups housed in enriched colony cages at stocking densities of 648 and 973 cm²/bird, and a third group was housed in conventional cages at 648 cm²/bird. All hens were orally inoculated with doses of 10⁸ colony-forming units (CFU) of either Salmonella Heidelberg or Salmonella Typhimurium. At eight weekly postinoculation intervals, samples of voided feces were collected from beneath each cage and cultured to detect Salmonella. Fecal shedding of Salmonella Heidelberg continued for 8 wk in all housing groups, but Salmonella Typhimurium shedding ceased after as little as 5 wk in enriched colony cages at low stocking density. After Salmonella Heidelberg infection, the overall frequency of positive fecal cultures for all sampling dates combined was significantly (P < 0.05) greater from either conventional cages (51.0%) or enriched colony cages (46.5%) at high stocking density than from enriched colony cages at low stocking density (33.3%). No significant differences in Salmonella Typhimurium fecal isolation were identified between housing groups. These results demonstrate that stocking density can affect intestinal colonization and fecal shedding in laying hens for some (but not necessarily all) Salmonella serovars or strains.

Evaluation of the performance of Hy-Line Brown laying hens fed soybean or soybean-free diets using cage or free-range rearing systems

This study evaluated egg production and quality variables of caged and free-range Hy-Line Brown laying hens fed soybean meal (SBM) and soybean-meal-free (SBMF) diets. Hens were randomly assigned to the same 2 dietary treatments within 3 location blocks. SBM and SBMF diets with equivalent calculated nutrient content were prepared based on Hy-Line Brown rearing guidelines. The SBMF diets utilized cottonseed meal, corn distillers dried grains with solubles, corn gluten meal, and wheat middlings in place of dehulled soybean meal. The experiment was conducted between August 2015 and January of 2016 within the TAMU Poultry Research Center and data analyzed over 6 consecutive 28-day periods. Data were analyzed as a split-plot with rearing systems designated whole plots and diets designated as subplots. Hens reared in the free-range rearing system peaked a couple of wk later than those hens within the more conventional indoor caged system, and cumulative production data were considerably more variable for hens raised in the free-range environment. Cumulative egg production, feed per dozen eggs and feed conversion ratio (g feed/g egg) were 92 ± 1.23 and 86 ± 1.84%, 1.45 ± 0.02 and 1.89 ± 0.05 kg, and 2.14 ± 0.04 and 2.77 ± 0.08 (P < 0.05), respectively, for the caged vs. free-range rearing systems. Cumulative egg weight, feed per dozen eggs, and feed conversion ratio were 59.9 ± 0.59 and 56.5 ± 0.60 g, 1.57 ± 0.04 and 1.77 ± 0.05 kg, and 2.24 ± 0.06 and 2.67 ± 0.08 kg (P < 0.05) for SBM and SBMF diets, respectively. Diet did not affect cumulative egg production (P > 0.05). With respect to egg quality, there were no differences in cumulative albumen height, Haugh unit, or breaking strength, but there was a significant rearing system by diet interaction for shell thickness, with the free-range hens averaging 40.77 ± 0.19 and 39.86 ± 0.31 μm (P < 0.05), respectively, for the hens fed SBM vs. SBMF diets. In conclusion, the results suggested free-range production is more variable than traditional closed-house cage systems based on standard errors, and SBMF diets containing cottonseed meal can be used in both caged and free-range production systems without affecting egg production, although one might see lower egg weights.

Nesting behavior of Hy-Line hens in modified enriched colony cages

Hens are motivated to seek out an enclosed nest site, but it is unclear whether the single communal nest in enriched colony cages (EC) adequately supports nesting. One method to investigate this is to provide an "alternative nest site" and determine the effects on laying location, timing of oviposition, and pre-laying behavior. The objective of this experiment was to determine whether increasing the degree of enclosure in the scratch area would influence egg laying location, time of oviposition, and pre-laying behavior. Hy-Line W-36 hens (n = 1,560) were reared in standard cages and housed in four rooms, each with six Chore-Time EC, at wk 17 (65 birds/cage at 729 cm2 floor space and 62 cm2 nest space per bird). At 21 wk, the scratch area of the enclosed (E; n = 12) treatment cages was fitted with a wire partition and red vinyl curtain; open (O; n = 12) cages were unmodified. The number of eggs laid in each location (nest, middle, scratch) was counted over 4 d. Nest and scratch areas were instantaneously scan sampled every 20min from 0630 h to 1330 h to count the number of sitting hens and the number of eggs. Aggressive pecks, threats, and displacements were counted in each area during a 30 s interval scan (3 scans/time period, 5 periods). Mixed model analyses tested the effect of treatment, time, room, position, and tier. There was no significant main effect of treatment on the percentage of eggs laid in the nest or scratch areas, but E treatment hens were more aggressive (P = 0.027). The numbers of hens sitting and eggs laid in the nest peaked between 0830 h to 0930 h (P < 0.0001), with a peak in displacements between 0800 h to 1000 h (P < 0.0001). Peak laying time occurred later in the scratch area (0930 h to 1030 h). Treatment affected few nesting behavior patterns, and the behavior differences between the nest and scratch areas replicated earlier findings. Hy-Line W-36 hens seemed to perceive the existing nest as satisfactory, with little evidence for competition.

Frequency and Duration of Fecal Shedding of Salmonella Enteritidis by Experimentally Infected Laying Hens Housed in Enriched Colony Cages at Different Stocking Densities

Human infections with Salmonella Enteritidis are often attributed to the consumption of contaminated eggs, so the prevalence of this pathogen in egg-laying poultry is an important public health risk factor. Numerous and complex environmental influences on Salmonella persistence and transmission are exerted by management practices and housing facilities used in commercial egg production. In recent years, the animal welfare implications of poultry housing systems have guided the development of alternatives to traditional cage-based housing, but their food safety consequences are not yet fully understood. The present study assessed the effects of different bird stocking densities on the frequency and duration of fecal shedding of S. Enteritidis in groups of experimentally infected laying hens housed in colony cages enriched with perching and nesting areas. In two trials, groups of laying hens were distributed at two stocking densities (648 and 973 cm²/bird) into enriched colony cages and (along with a group housed in conventional cages at 648 cm²/bird) orally inoculated with doses of 1.0 × 10⁸ cfu of S. Enteritidis. At 10 weekly postinoculation intervals, samples of voided feces were collected from beneath each cage and cultured to detect S. Enteritidis. Fecal shedding of S. Enteritidis was detected for up to 10 weeks postinoculation by hens in all three housing treatment groups. The overall frequency of positive fecal cultures was significantly (P < 0.05) greater from conventional cages than from enriched colony cages (at the lower stocking density) for the total of all sampling dates (45.0 vs. 33.3%) and also for samples collected at 4–9 weeks postinfection. Likewise, the frequency of S. Enteritidis isolation from feces from conventional cages was significantly greater than from enriched colony cages (at the higher hen stocking density) for the sum of all samples (45.0 vs. 36.7%) and at 6 weeks postinoculation. Moreover, the frequency of S. Enteritidis fecal recovery from enriched colony cages at the higher hen stocking was significantly greater than from similar cages at the lower stocking density for all 10 sampling dates combined (39.4 vs. 33.3%). These results suggest that stocking density can affect S. Enteritidis intestinal colonization and fecal shedding in laying hens, but some other difference between conventional and enriched colony cage systems appears to exert an additional influence.

The Coalition for Sustainable Egg Supply: A unique public-private partnership for conducting research on the sustainability of animal housing systems using a multistakeholder approach

The growing emphasis on ensuring the sustainability of animal agriculture is providing an impetus for the adoption of new approaches to structuring and conducting research. Sustainability is a complex topic involving many considerations related to the economic, social, and environmental impacts of production systems. Successfully addressing this topic requires multidisciplinary research as well as a high degree of communication with food system stakeholders to ensure that the research results contribute to informed decision making. In this paper, we provide an overview of a public-private partnership, the Coalition for Sustainable Egg Supply (CSES), which was formed to support research evaluating the sustainability of laying hen housing systems. Because of increasing public concerns about the behavioral restriction imposed on laying hens housed in conventional cages, the U.S. egg industry is faced with a need to transition to alternative systems. However, before the CSES project, there was limited information available about how this transition might affect trade-offs related to the sustainability of egg production. The goal of the CSES project was to provide this information by conducting holistic research on a commercial farm that had 3 different hen housing systems. The CSES members represented a variety of stakeholders, including food retailers and distributors, egg producers, universities, and governmental (USDA ARS) and nongovernmental organizations. The CSES was facilitated by a not-for-profit intermediary, the Center for Food Integrity, which was also responsible for communicating the research results to food system stakeholders, including via quantitative and qualitative consumer research. In this paper, we describe the structural aspects of the CSES that were responsible for the successful completion and dissemination of the research as well as the insights that were gained regarding multidisciplinary and multi-institutional collaboration, conducting commercial-scale research, fostering and maintaining stakeholder interaction, and communicating research results. Although not without limitations, this project demonstrates that public-private partnerships can be effective strategies for addressing sustainability questions related to animal agriculture and, thus, serves as a useful model for the other animal industries.

Influence of commercial laying hen housing systems on the incidence and identification of Salmonella and Campylobacter

The housing of laying hens is important for social, industrial, and regulatory aspects. Many studies have compared hen housing systems on the research farm, but few have fully examined commercial housing systems and management strategies. The current study compared hens housed in commercial cage-free aviary, conventional cage, and enriched colony cage systems. Environmental and eggshell pool samples were collected from selected cages/segments of the housing systems throughout the production cycle and monitored for Salmonella and Campylobacter prevalence. At 77 wk of age, 120 hens per housing system were examined for Salmonella and Campylobacter colonization in the: adrenal glands, spleen, ceca, follicles, and upper reproductive tract. All isolates detected from environmental swabs, eggshell pools, and tissues were identified for serotype. Two predominant Salmonella were detected in all samples: S. Braenderup and S. Kentucky. Campylobacter coli and C. jejuni were the only Campylobacter detected in the flocks. Across all housing systems, approximately 7% of hens were colonized with Salmonella, whereas > 90% were colonized with Campylobacter. Salmonella Braenderup was the isolate most frequently detected in environmental swabs (P < 0.0001) and housing system impacted Salmonella spp. shedding (P < 0.0001). Campylobacter jejuni was the isolate most frequently found in environmental swabs (P < 0.01), while housing system impacted the prevalence of C. coli and jejuni in ceca (P < 0.0001). The results of this study provide a greater understanding of the impact of hen housing systems on hen health and product safety. Additionally, producers and academia can utilize the findings to make informed decisions on hen housing and management strategies to enhance hen health and food safety.

Comparative evaluation of three egg production systems: Housing characteristics and management practices

This paper is an integral part of the special publication series that arose from the multidisciplinary and multi-institutional project of the Coalition for Sustainable Egg Supply (CSES). The CSES project involves 3 housing systems for egg production at the same research farm site in the Midwest, USA, namely, a conventional cage (CC) house, an aviary (AV) house, and an enriched colony (EC) house. The CC house (141.4 m L × 26.6 m W × 6.1 m H) had a nominal capacity of 200,000 hens (6 hens in a cage at a stocking density of 516 cm²/hen), and the cages were arranged in 10 rows, 8 tiers per cage row, with a perforated aisle walkway at 4-tier height. The AV house (154.2 m L × 21.3 m W × 3.0 m H) and the EC house (154.2 m L × 13.7 m W × 4.0 m H) each had a nominal capacity of 50,000 hens. The AV house had 6 rows of aviary colonies, and the EC house had 5 rows of 4-tier enriched colonies containing perches, nestbox, and scratch pads (60 hens per colony at a stocking density of 752 cm²/hen). The overarching goal of the CSES project, as stated in the opening article of this series, was to comprehensively evaluate the 3 egg production systems from the standpoints of animal behavior and well-being, environmental impact, egg safety and quality, food affordability, and worker health. So that all the area-specific papers would not have to repeat a detailed description of the production systems and the management practices, this paper is written to provide such a description and to be used as a common reference for the companion papers.
