Abstract
The amount of nitrogen (N) fertilization influences the content and composition of phytochemicals in plants. However, the influence of different chemical forms of N fertilizers on the phytochemical profiles of fruits remains less known. We investigated the effect of nitrate [NO3-; supplied as CaNO3], ammoniacal [NH4+; supplied as (NH4)2SO4], and organic-N (supplied as meat and bone meal [MBM]) fertilization on the profile of volatile compounds, primary, and secondary metabolites in the fruits of Alpine strawberries (Fragaria vesca "Reine des Vallées") using global metabolomic approaches. The form of plant-available soil N varied as a function of fertilization, with (NH4)2SO4 and MBM fertilization retaining a higher proportion of N as ammoniacal-N throughout the growing period. Leaf nitrate reductase activity was 5 times higher in CaNO3 treatments, suggesting NO3- as the major N form taken up by plants in this treatment. Although ammoniacal-N fertilization resulted in lower plant biomass, the fruit yield and tissue nutrient content were similar to those of nitrate-N treatments. The plant biomass of organic-N treatment was similar to that of nitrate-N fertilization, but the fruit yield was 30% lower. Compared to nitrate-N treatment, aroma-related volatile compounds increased under organic- and ammoniacal-N fertilization, including up to a 5-fold increase in esters, a 6-fold increase in alcohols, a 3-fold increase in volatile fatty acids, and a 60% increase in organic acids. The content of primary metabolites, especially sugar, sugar alcohol, and amino acids, exhibited an opposite trend and increased in nitrate-N than under ammoniacal- and organic-N fertilization. Compared to nitrate-N, the secondary metabolites generally were higher under ammoniacal- and organic-N fertilization, with an 80% increase in the activity of phenylalanine ammonia lyase, resulting in up to 38% increase in flavones, 28% increase in flavanols, and 33% increase in anthocyanins, except for dihydroflavonols and proanthocyanidins, which decreased by 6 and 13%, respectively. The hydrolyzable tannins, including galloyl glucosides, ellagitannins, and ellagic acids, were 25% abundant under organic-N fertilization. Our results indicate that while nitrate-N generally increased the primary metabolites, organic-N and ammoniacal-N fertilization enhanced the aroma-related volatiles and secondary metabolites in strawberry fruits. Thus, precise management of the chemical form of N fertilization can be a valuable tool to improve the phytonutrient content of strawberries.

Abstract
Osteoarthritis (OA) is a common joint disorder affecting about 7% of the global population, primarily characterized by the gradual loss of articular cartilage. This degeneration results from local inflammation, matrix depletion, and direct cartilage damage. A critical element in this process is the activation of the stimulator of the interferon genes (STING) pathway. Emerging evidence highlights its potential as a therapeutic target, with natural products showing promise as inhibitors. Our study centers on Acacetin, a basic unit of polyketides known for its anti-inflammatory properties. Prior research has highlighted its potential interaction with STING based on the structure. Thus, this study aimed to assess the effectiveness of Acacetin as a STING inhibitor and its protective role against OA. In vitro experiments showed that Acacetin pretreatment not only mitigated interleukin-1β (IL-1β)-induced cytotoxicity but also decreased the inflammatory response and degeneration in chondrocytes stimulated IL-1β. In vivo studies revealed that Acacetin administration significantly reduced articular cartilage destruction, abnormal bone remodeling, and osteophyte formation in a model of OA induced by destabilization of the medial meniscus (DMM). Mechanistically, Acacetin was found to interact directly with STING, and inhibit IL-1β-induced activation of STING, along with the subsequent phosphorylation of the TBK1/NF-κB pathway in chondrocytes. In conclusion, our findings establish Acacetin as an effective inhibitor of STING that protects chondrocytes from IL-1β-induced damage and slows the progression of OA in mice.

Abstract
The phenolic, antioxidant and metabolic profiling of a new white variety guava fruit Arka Mridula (AM) was performed during its storage at the room temperature (28 ± 2 °C). The comparative profiles were generated at three ripening stages (pre-ripe, ripe and over-ripe) of the fruit. Generally, a steady decrease of the phenolic and antioxidant content from the pre-ripe to the ripe stage and a subsequent increase from the ripe to over-ripe stage was observed. Further, a powerful correlation between the phenolic content and antioxidant principles was noted through the principal component analysis. We could identify 53 compounds for the hydro-methanolic fruit extract through LC and GC-MS aided metabolic analysis, and the identified compounds were dominated by phenolics (~ 44%). The statistical analysis revealed that phytochemicals catechin, myricitrin, myricetin, kaempferol glycosides and n-hexadecanoic acid contributed significantly towards the ripening process of AM, during the storage. The present study is expected to provide important insight into the ripening biochemistry of AM. Subsequently, it may help in the future development of metabolically stable guava cultivars with extended post-harvest shelf life.

Abstract
Black mulberry (Morus nigra L.) is a common edible fruit from the Moraceae family with a wide variety of nutritional and medicinal applications, mainly due to its antioxidant and anti-inflammatory properties. The purpose of this work was to investigate the cytoprotective and neuroprotective capacity of a hydrophilic black mulberry solvent-free extract rich in polyphenols, including the antioxidant, antiradical, and enzymatic mechanisms that would explain these effects. Its neuroprotective potential was evaluated in vitro using the Neuro-2a cell line and in vivo through the Caenorhabditis elegans organism model. Neuro-2a cells were treated at different concentrations of the extract (25-500 µg/mL) and hydrogen peroxide (300 µM) as an oxidant agent, simultaneously. From these treatments, redox status (intracellular ROS production) and cellular activity (MTT) were also quantified in Neuro-2a. Regarding the C. elegans assay, the protection of the extract against β-amyloid toxicity was measured against the CL4176 strain, which is a model of Alzheimer disease. As a complementary neuroprotective assay, its potential to inhibit the monoamine oxidase A (MAO-A) enzyme was measured. In addition, an Artemia salina bioassay was performed for preliminary toxicity screening. And its antioxidant properties were evaluated by means of the FRAP assay. The results confirm its neuroprotective potential and its ability to scavenge free radicals and decrease ROS production, also acting as a moderate MAO-A inhibitor. Moreover, the polyphenolic extract alleviates the toxicity induced by β-amyloid accumulation in C. elegans. Concluding, Morus nigra can be considered a functional food with bioactive compounds that may prevent the onset of neurodegenerative diseases.

Abstract
Secondary metabolites, namely, phenolic and volatile organic compounds, contribute to the nutritional and organoleptic quality of the strawberry fruit. This study focuses on the changes in the content of phenolic compounds and volatile organic compounds during the ripening, from green to overripe fruit, of five strawberry cultivars ('Asia', 'CIVN 766', 'Aprica', 'Clery', and 'Malwina'). Additionally, these changes are compared with the colour of the fruit and peroxidase and polyphenol oxidase activity. Our results show that the accumulation of secondary metabolites (phenolic and volatile organic compounds) significantly changed during the ripening process for all of the studied cultivars. As for phenolic compounds, flavanols and hydroxybenzoic acid derivatives comprised between 87 and 95% of the total phenolic compound content in unripe green fruit. In contrast, anthocyanins and hydroxycinnamic acid derivatives comprised between 64 and 77% of the total phenolic compound content in overripe fruit, except in the fruit of the cultivar 'CIVN766'. When it comes to the aroma profile, the content of aldehydes decreased by 24-49% as the fruit ripened, and the accumulation of esters increased. Our study also shows that the ripening process differs among cultivars, and it is therefore necessary to define ripening indicators separately for each cultivar.

Abstract
The ability of chitosan produced from pupal exuviae of Hermetia illucens to retard the decay of the local strawberry (Fragaria x ananassa) cultivar Melissa was investigated for the first time in this paper. The results demonstrated the effectiveness of insect chitosan compared to the commercial polymer in preserving and enhancing, at the same time, some physicochemical parameters (weight loss, pH and soluble solids content) and nutraceutical properties (total polyphenol content, total flavonoid content and total antioxidant activity) of strawberries stored at RT, 4°C and at mixed storage conditions (4°C + RT). Moreover, chitosan from H. illucens was also effective in reducing fungal decay and improving fruit shelf life. The obtained results confirm that insect chitosan, particularly deriving from H. illucens pupal exuviae, can be a viable alternative to crustacean one in safeguarding postharvest fruits.

Abstract
Processing the coffee cherry into roasted beans generates a large amount of by-products, which can negatively impact the environment. The aim of this study was to analyze the bioactive potential and chemical composition of different coffee by-products (pulp, husk, parchment, silverskin, defective beans, and green coffee sieving residue) having in mind their bioactive potential for health and well-being. The coffee by-products showed a distinct nutritional composition. The content of ash, protein, fat, and total dietary fiber was significantly higher (p < 0.05) in coffee pulp (10.72% dw), silverskin (16.31% dw), defective beans (8.47% dw), and parchment (94.19% dw), respectively. Defective beans and the sieve residue exhibited a higher content of total phenolics (6.54 and 5.11 g chlorogenic acid eq./100 g dw, respectively) as well as higher DPPH• scavenging activity (3.11 and 2.85 g Trolox eq./100 g, respectively) and ferric-reducing antioxidant power (17.68 and 17.56 g ferrous sulfate eq./100 g dw, respectively). All the coffee by-products considered in this study are sources of caffeine and chlorogenic acids, in particular 5-caffeoylquinic acid (5.36-3787.58 mg/100 g dw, for parchment and defective beans, respectively). Thus, they can be recycled as functional ingredients for food, cosmetic and/or pharmaceutical industries, contributing to the social, economic, and environmental sustainability of the coffee industry.

Abstract
Type II diabetes mellitus and its related complications are growing public health problems. Many natural products present in our diet, including polyphenols, can be used in treating and managing type II diabetes mellitus and different diseases, owing to their numerous biological properties. Anthocyanins, flavonols, stilbenes, curcuminoids, hesperidin, hesperetin, naringenin, and phenolic acids are common polyphenols found in blueberries, chokeberries, sea-buckthorn, mulberries, turmeric, citrus fruits, and cereals. These compounds exhibit antidiabetic effects through different pathways. Accordingly, this review presents an overview of the most recent developments in using food polyphenols for managing and treating type II diabetes mellitus, along with various mechanisms. In addition, the present work summarizes the literature about the anti-diabetic effect of food polyphenols and evaluates their potential as complementary or alternative medicines to treat type II diabetes mellitus. Results obtained from this survey show that anthocyanins, flavonols, stilbenes, curcuminoids, and phenolic acids can manage diabetes mellitus by protecting pancreatic β-cells against glucose toxicity, promoting β-cell proliferation, reducing β-cell apoptosis, and inhibiting α-glucosidases or α-amylase. In addition, these phenolic compounds exhibit antioxidant anti-inflammatory activities, modulate carbohydrate and lipid metabolism, optimize oxidative stress, reduce insulin resistance, and stimulate the pancreas to secrete insulin. They also activate insulin signaling and inhibit digestive enzymes, regulate intestinal microbiota, improve adipose tissue metabolism, inhibit glucose absorption, and inhibit the formation of advanced glycation end products. However, insufficient data are available on the effective mechanisms necessary to manage diabetes.

Abstract
The presence of p-coumarate (pCA) in plant cell walls is generally considered to be a trait present only in commelinid monocots. Here, we show that this long-held overgeneralizing assumption is incorrect and that mulberry trees (Morus) are eudicot plants that have lignins derived in part from monolignol pCA esters. As in commelinid monocots, the lignin-bound pCA acylates the sidechain γ-hydroxyl of both coniferyl and syringyl units. This discovery expands mulberry's potential applications to include being a source of p-coumaric acid, a supplier of nutritious berries, a forage crop, a decorative plant, and the main food source for silkworms.

Abstract
Makapuno is a natural mutant coconut cultivar with jelly-like endosperm. Here, we investigated the nutritional compositions, active ingredients, and antioxidant activities of Makapuno meat and water. The contents of macronutrients, sugars, vitamins, amino acids, and fatty acids were reported. We found that Makapuno meat has higher dietary fiber with lower protein and fat content compared to normal coconut meat. Medium-chain fatty acids were the major fat component of Makapuno meat and water. Phytochemical analysis revealed that while flavonoid content was lower, the total phenolic, alkaloid, and tannin contents of Makapuno meat were comparable with those of mature coconut. However, Makapuno water contained higher alkaloid content when compared to mature and young coconuts. The antioxidant activities, as examined by DPPH, FRAP, and ABTS assays, showed that Makapuno meat and water had antioxidant activities, and Makapuno water exhibited protective activity against DNA damage. Hence, this research provides the nutraceutical importance of Makapuno, which could be used in the food industry.

Abstract
The study was undertaken to characterize the total phenolics, flavonoids, essential oils, quinones, tannins and antioxidant activity of 15 samples of wild Murraya koenigii (L.) Spreng. (MK) leaves obtained from different locations of Himachal Pradesh at various growth stages. The results indicated a significant variation in total phenolic content which ranged from [(170.09 ± 4.59 to 303.57 ± 7.94) in pre-flowering, (266.48 ± 7.49 to 450.01 ± 11.78) in the flowering stage, and (212.72 ± 5.37 to 363.85 ± 9.79) in fruiting stage], expressed as mg tannic acid equivalents (TAE)/g. The total flavonoid content ranged from [(15.17 ± 0.36 to 33.40 ± 0.81) in pre-flowering, (25.16 ± 0.67 to 58.17 ± 1.52) in flowering stage, and (17.54 ± 0.42 to 37.34 ± 0.97) in fruiting stage], expressed as mg catechin equivalent (CE)/g. Total tannin content ranged from [(75.75 ± 1.69 to 143 ± 3.74) in pre-flowering, (116 ± 3.26 to 207 ± 5.42) in the flowering stage, and (47 ± 1.18 to 156 ± 4.05) in fruiting stage], expressed as mg TAE/g. The essential oil content ranged from (0.64 ± 0.01 to 0.89 ± 0.02%) in pre-flowering, (0.85 ± 0.02 to 1 ± 0.02%) in flowering stage, and (0.54 ± 0.01 to 0.7 ± 0.01%) in fruiting stage. Quinones ranged from [(2.05 ± 0.05 to 2.97 ± 0.07) in pre-flowering, (3.07 ± 0.07 to 4.95 ± 0.13) in flowering stage, and (1.02 ± 0.02 to 1.96 ± 0.04) in fruiting stage], expressed as mM/min/g tissue. Antioxidant activity ranged from [(4.01 ± 0.09 to 7.42 ± 0.17) in pre-flowering, (8.08 ± 0.19 to 13.60 ± 0.35) in flowering stage, and (3.11 ± 0.06 to 6.37 ± 0.15) in fruiting stage], expressed as μg/ml. Data was subjected to multivariate analysis using principal component analysis (PCA), hierarchical clustering analysis (HCA). This was used for elucidating the intricate relationships between the phytochemical properties. All evaluated phytochemical parameters significantly increased during the growth transition from pre-flowering to the flowering stage, followed by their gradual decrease during the fruiting stage. The present study can serve as rationale for commercializing MK for aromatic and phytopharmaceutical industries.

Abstract
Abscisic acid (ABA) is involved in many physiological regulatory processes in plants, such as leaf shedding, stomatal closure, inhibition of cell elongation, as well as responses to multi-abiotic stress, and 9-cis epoxy carotenoid dioxygenase (NCED) is related to the indirect synthesis of ABA. However, NCED genes involved in multi-abiotic stress and ABA synthesis pathway in mulberry (Morus alba L.) are still unknown. Here, two NCED genes cloned from mulberry (MaNCED) and their function were preliminarily identified. Interestingly, MaNCED2 responded strongly to drought stress while MaNCED1 responded strongly to pathogen stress. Then, two MaNCED proteins were successfully obtained by prokaryotic expression, and the degradation products of MaNCED1 and MaNCED2 were analyzed using UPLC-MS. The results show that recombinant MaNCED1 and MaNCED2 both cleave 9-cis-violaxanthin to form C15 xanthoxin, involved in the formation of the precursor of ABA.

Abstract
Determination of internal qualities such as total soluble solids (TSS) and pH is a paramount concern in strawberry cultivation. Therefore, the main objective of the current study was to develop a non-destructive approach with machine learning algorithms for predicting TSS and pH of strawberries. Six hundred samples (100 samples in each ripening stage) in six ripening stages were collected randomly for measuring the biometrical characteristics, i.e., length, diameters, weight and TSS and pH values. An image of each strawberry fruit was captured for colour feature extraction using an image processing technique. Channels of each colour space (RGB, HSV and HSL) were used as input variables for developing multiple linear regression (MLR) and support vector machine regression (SVM-R) models. The result of the study indicated that SVM-R model with HSV colour space performed slightly better than MLR model for TSS and pH prediction. The HSV based SVM-R model could explain a maximum of 84.1% and 79.2% for TSS and 78.8% and 72.6% for pH of the variations in measured and predicted data in training and testing stages, respectively. Further experiments need to be conducted with different strawberry cultivars for the prediction of more internal qualities along with the improvement of model performance.

Abstract
The enriched phenolic content attributes to the promising health benefit of strawberry fruits. On behalf of screening and seeking the breeding material with high phytochemical composition, a mutant (MT) of strawberry 'Benihoppe' (WT) with high total flavonoid content (TFC), especially anthocyanins and proanthocyanidins (PAs), was identified in this study. To investigate the possible reason for these disparities during strawberry fruit development, an integrated transcriptomic and metabolomic analysis was conducted using these two specific materials. As a result, a total of 113 flavonoid compounds were detected, a specific anthocyanin, namely, petunidin 3-O-rutinoside was detected for the first time in strawberry. By comparing with the WT fruits, a significant reduction of petunidin 3-O-rutinoside while around 24 times higher of cyanidin 3-O-rutinoside in MT fruits were observed. However, the cyanidin 3-glucoside content did not show obvious changes between MT and WT fruits, the pelargonidin and its derivatives were up-regulated only in partial red (PR) stage, but not in large green (LG) and fully red (FR) stages. Notably, the PAs such as procyanidin B2, procyanidin A1, catechin, gallocatechin gallate, epigallacatechin, and theaflavin were markedly up-regulated in MT. These results revealed a differential flavonoid biosynthesis between the two detected strawberry genotypes. A joint analysis with transcriptome data explained the up-regulation of cyanidin-based anthocyanins and PAs were caused by the down-regulation of F3'5'H, and up-regulation of F3'H and LAR expression, which might be regulated by the upregulation of potential TFs such as C3H, MADS, and AP2/ERF TFs. Metabolite correlation analysis suggested that it was PAs but not anthocyanins strongly correlated with the total phenolic content (TPC), indicated that PAs might contribute more to TPC than anthocyanins in our detected strawberry samples. This study not only potentially provided a new mutant for further breeding program to obtain high flavonoid content strawberry but also gave insights into strawberry flavonoid metabolic regulatory network, laid the foundation for identifying new flavonoid regulators in strawberry.

Abstract
Diabetes mellitus is a metabolic disease and one of the leading causes of deaths worldwide. Numerous studies support that the Mediterranean diet has preventive and treatment effects on diabetes. These effects have been attributed to the special bioactive composition of Mediterranean foods. The objective of this work was to decipher the antidiabetic activity of Mediterranean edible plant materials using the DIA-DB inverse virtual screening web server. A literature review on the antidiabetic potential of Mediterranean plants was performed and twenty plants were selected for further examination. Subsequently, the most abundant flavonoids, phenolic acids, and terpenes in plant materials were studied to predict their antidiabetic activity. Results showed that flavonoids are the most active phytochemicals as they modulate the function of 17 protein-targets and present high structural similarity with antidiabetic drugs. Their antidiabetic effects are linked with three mechanisms of action, namely (i) regulation of insulin secretion/sensitivity, (ii) regulation of glucose metabolism, and (iii) regulation of lipid metabolism. Overall, the findings can be utilized to understand the antidiabetic activity of edible Mediterranean plants pinpointing the most active phytoconstituents.

Abstract
Strawberry has gained increasing popularity all over the world due to its fruit properties. This popularity is due to the phytochemicals that strawberries have. The aim of this study is to reveal the effect of cultivation in open field and high tunnel on agromorphological and biochemical properties of strawberries. In this study, fruit yield and fruit quality characteristics of some strawberry varieties grown in open field and high tunnel were investigated. The highest fruit yield, fruit weight and titratable acidity were obtained in high tunnel grown Albion cultivar (542.743 g/plant, 14.927 g/fruit and 1.047%, respectively). While there was no statistical difference between cultivars and treatments in terms of soluble solids content and pH, fruit count was higher in Albion and Kabarla cultivars in both treatments compared to other cultivars (p < 0.05). Among the phenolic compounds, gallic acid was determined to be higher (between 9.246−31.680 mg/100 g) than other phenolics. Considering the organic acid content, malic acid was determined as the dominant organic acid in Kabarla cultivar (870.729 mg/100 g). In addition, in terms of vitamin C content, Rubygem cultivar stood out in both applications. Phenolic compound and organic acid contents varied in terms of varieties and applications. As a result, strawberry fruit, which is an important fruit in terms of fruit quality and consumption diversity, has been found to have high phenolic compounds and organic acid content, although it varies in all varieties and applications.

Phenolic Profiling of Berries Waste and Determination of Their Antioxidant Potential. J FOOD QUALITY 2022. Abstract
Berries waste is a major issue in Australia’s annual food wastage, which can reach 7.3 million tonnes. This study assessed the phenolic content and antioxidant potential of four fruit berry wastes, including blueberries (Vaccinium corymbosum), blackberries (Rubus spp.), raspberries (Rubus idaeus), and strawberries (Fragaria spp.), followed by their characterization and quantification. Blueberry wastes were high in phenolic content (total phenolic content: 1.97 ± 0.16 mg GAE/gF.W; total flavonoid content: 220.43 ± 13.15 μg QE/gF.W; total tannins content: 16.47 ± 0.98 μg CE/gF.W), and antioxidant potentials are 2,2′-diphenyl-1-picrylhydrazyl: 2.23 ± 0.17 mg AAE/gF.W; 2,2′-azino-bis-(3-ethylbenzothiazoline-6-sulphonic acid): 1.79 ± 0.09 mg AAE/gF.W; ferric reducing antioxidant power: 68.71 ± 11.11 μg AAE/gF.W (total antioxidant capacity: 1.22 ± 0.03 mg AAE/gF.W). The LC-ESI-QTOF-MS/MS analysis identified 87 compounds from blueberry (57), strawberry (40), raspberry (47), and blackberry wastes (27). Indicated by HPLC quantification, blueberry wastes had higher levels of phenolic acid (syringic acid and coumaric acid) and flavonoid (kaempferol and kaempfero l-3-glucoside). Our study reported that phenolics from berry wastes could be utilized in different food, feed, pharmaceutical, and nutraceutical industries.

Abstract
Among different fruits, mulberry is the most highlighted natural gift in its superior nutritional and bioactive composition, indispensable for continuing a healthy life. It also acts as a hepatoprotective immunostimulator and improves vision, anti-microbial, anti-cancer agent, anti-stress activity, atherosclerosis, neuroprotective functions, and anti-obesity action. The mulberry fruits also help reduce neurological disorders and mental illness. The main reason for that is the therapeutic potentials present in the nutritional components of the mulberry fruit. The available methods for assessing mulberry fruits are mainly chromatographic based, which are destructive and possess many limitations. However, recently some non-invasive techniques, including chlorophyll fluorescence, image processing, and hyperspectral imaging, were employed to detect various mulberry fruit attributes. The present review attempts to collect and explore available information regarding the nutritional and medicinal importance of mulberry fruit. Besides, non-destructive methods established for the fruit are also elaborated. This work helps encourage many more research works to dug out more hidden information about the essential nutrition of mulberry that can be helpful to resolve many mental-illness-related issues.

Abstract
Black mulberry, Morus nigra L. (family: Moraceae), is a healthy food and medicinal plant. Microwave hydrodiffusion and gravity (MHG) is one of the most innovative applications of solvent-free microwave extraction. The aim of this study was to optimize for the first time the MHG solvent-free extraction of polyphenols and sugars from M. nigra fruits. Optimization was carried out using a central composite design (CCD) with selected responses such as extraction yield, total polyphenol (TPC), flavonoid (TFC), anthocyanin (TAC), and sugar (TSC) contents, in addition to DPPH radical scavenging, and α-glucosidase (AGHi), lipase (Li), and xanthine oxidase (XOi) inhibition as tools to evaluate the best parameters for efficient and rapid extraction of black mulberry. The optimized extract was characterized in terms of the aforementioned parameters to validate the models, and was further analyzed for 36 individual polyphenols using HPLC-MS/MS. The optimized MHG extract was finally compared with traditional extracts, and demonstrated much better performance in terms of TPC, TAC, and Li, while the traditional extracts showed better XOi and AGHi. In conclusion, MHG is a valuable green technique for the production of non-degraded black mulberry polyphenol-rich extract and we suggest its larger use in the pharmaceutical and food industries.

Yogurts with fruit preparations contain polyphenols, secondary plant metabolites with proven antioxidant properties. As there is no data regarding neither lactate nor polyphenol content in commercial yogurts in Serbia, this study aimed to determine lactate and polyphenol levels, as well as antioxidant activity in selected yogurts. A total of 15 plain and 5 fruit yogurts with strawberry preparations were analyzed. Lactate contents were from 0.83 to 1.33%. Three plain yogurts in plastic containers differed in lactate content. There was no difference in lactate content among the same plain yogurts packed in plastic and Tetra Pack containers. Fruit yogurts with strawberry preparations differed in total polyphenol content in the range from 6.84 to 29.11mg GAE/100 g and antioxidant properties were determined by reducing power test (from 0.22 to 0.79) and DPPH assay (from 28.13 to 87.23%), while there was no difference regarding lactate. Our results provided new information about the levels of lactate, total polyphenols and antioxidant activity of selected commercial yogurts available on the Serbian market.

Abstract
The fruit of mulberry trees (Morus sp.), mulberries, are traditionally utilised as a nutritional food and provide health benefits as well as skin nourishment in Thailand. White mulberries (Morus alba L.) from Chiang Mai and Mae Hong Son provinces were evaluated for their antioxidant and antibacterial activities. The antioxidant activities as well as the total phenolic, flavonoid and anthocyanin content of the aqueous and ethanolic extracts were determined using 2,2-diphenyl-1-picrylhydrazyl (DPPH), 2,2'-azinobis-(3-ethylbenzothiazolin-6-sulfonic acid) (ABTS) and ferric reducing antioxidant power (FRAP) assays. The aqueous extracts of mulberries exhibited the highest antioxidant activity, which was associated with a higher phenolic and anthocyanin content. In testing the potent antibacterial activity against Escherichia coli, Salmonella Typhi, Shigella dysenteriae, Staphylococcus aureus and Vibrio cholerae, the mulberry extracts proved to be quite efficient, especially following water extraction. Time-kill and antibacterial adhesion assays further indicated that aqueous mulberry extracts could inhibit bacterial growth and prevent adhesions of pathogenic enteric bacteria on intestinal epithelial cells. It thus appears that mulberries can potentially be consumed as a good source of antioxidants, containing antimicrobial properties against some pathogenic bacteria which cause gastrointestinal tract infections.

Abstract
Strawberry (Fragaria × ananassa Duch.) is widely grown and highly appreciated by consumers around the world for its delicious, soft, and highly nutritious fruits. Turkey is one of the most important strawberry producers in the world. Strawberry cultivation in Turkey typically involves the use of chemical fertilizers and more recently organic and organic + chemical fertilizers have been started to use in commercial production to produce healthier fruits. Therefore, in this study, we investigated the effect of organic, chemical, and organic + chemical fertilizer treatments in strawberry (cvs. ‘Albion’, ‘San Andreas’ and ‘Monterey’) fruit quality parameters including fruit color (L*, a*, b*, C and h°) parameters, soluble solids content, total acidity, fruit firmness, vitamin C, specific sugars and organic acids. Results showed that in particular fruit color parameters, soluble solid content (SSC), total acidity, fruit firmness, and vitamin C (L-Ascorbic acid) in fruits of three strawberry cultivars were significantly affected by different fertilizer applications (p < 0.05). Compared with conventional chemical fertilizer treatment, the organic fertilizer treatment produced fruit with significantly higher contents of SSC and glucose but decreased fruit firmness and vitamin C. Organic fertilizer also gave more intense colored strawberry fruits with high Chroma values (47,948 in organic fertilizer application and 39,644 and 39,931 in organic + chemical fertilizer and chemical fertilizer, respectively). Citric acid was identified to be the predominant organic acid in strawberry fruits but treatments were found insignificant on citric acid content.

Abstract
Mulberry fruit is well recognized as one of the richest sources of bioactive compounds. We investigated the physicochemical composition and characterized the bioactive compounds during different ripening stages of mulberry (Morus indica) fruit and evaluated their anti-quorum sensing activity on Chromobacterium violaceum. The proximate components such as carbohydrates, proteins and lipids were found to be high in the ripe fruit compared to unripe and mid-ripe fruit. The ripe fruit contained higher content of total phenolics and flavonoids (336.05 and 282.55 mg/100 g fresh weight (FW), respectively). Epicatechin and resveratrol were the major polyphenols detected in the fruit with the range 5.13-19.46 and 4.07-14.45 mg/100 g FW, respectively. Chlorogenic acid and myricetin were predominant in the unripe and mid-ripe fruit (7.14 and 1.84 mg/100 g FW, respectively). The fruit was found to be an excellent source of anti-diabetic compound 1-deoxynojirimycin. The highest content of 1-deoxynojirimycin was present in the mid-ripe fruit, with a content of 2.91 mg/100 g FW. Furthermore, fruit extracts exhibited anti-quorum sensing activity against Chromobacterium violaceum by effectively inhibiting violacein production. Ripe fruit extracts showed the highest activity of 76.30% at 1 mg/mL and thus, could be used as a potent anti-quorum sensing agent. The results could be promising in the selection of appropriate developmental stages for M. indica fruit commercial exploitation in the food formulations rich in potential health components.

Abstract
Depending on the extraction method, numerous compounds that have specific pharmacological effects can be obtained from M. alba L. There is a growing scientific interest in health problems related to aging. Efforts to develop safe immune-enhancing pharmaceuticals are increasing. This review aims to summarize and critically discuss the immunity enhancement effects and pharmaceutical efficacy of M. alba L. extracts. The scientific database search was conducted using Google Scholar, Web of Science, and PubMed until May 2021. Additional articles were identified and obtained from references in the retrieved articles. Ethanol or methanol extraction of various parts of M. alba L. identified a large amount of phenols and flavonoids, which are effective for immunosuppression, antioxidants, and cardiovascular diseases, and are antibacterial, and anticancer. Water extraction of M. alba L. enhanced the innate immune response based on immune cell activation. A polysaccharide and an alkaloid related to increased macrophage activity were isolated from M. alba L. fruit extracts. M. alba L. fruit water extracts primarily induced the production of pro-inflammatory substances, in model organisms, via TLR4 in immune cells. Water extracts have been shown to be effective in pathogen defense and tumor suppression by enhancing macrophage activity. Based on our literature review on the bioactivity of M. alba L. fruit extracts, particularly in relation to their immunity enhancement activity, we anticipate that M. alba-derived pharmaceuticals will have excellent potential in future medical research.

Abstract
The aim of this study was to compare certain important fruit quality parameters such as sugars, organic acids, total phenolic content, antioxidant capacity, and volatile compounds of 10 commercial strawberry cultivars grown in the research and experimental area in Yaltir Agricultural Company located in Adana provinces of Turkey. As for the sugar content of strawberry fruits, fructose was identified as the dominant sugar and the highest value (4.43%) was found in the cultivar “Rubygem”. In terms of organic acid, among the examined strawberry cultivars, “Calinda” had the greatest level of citric acid (711.45 mg g−1). Regarding vitamin C content, the highest amount was found in the cultivar “Sabrina” (25.08 mg 100 g−1). Ellagic acid was the main phenolic acid in all examined cultivars (except the “Plared” cultivar), and the highest amount was detected in the “Fortuna” cultivar (3.18 mg 100 g−1). We found that the cultivar FL-127 had the highest total phenolic content (158.37 mg gallic acid equivalent 100 g−1 fresh weight base). Regarding antioxidant capacities, the highest value (88.92%) was found in the cultivar Victory among all the cultivars studied. The detailed analysis of volatile compounds was performed by gas chromatography/mass spectrometry (GC/MS) and 34 compounds were detected. Among them, esters, acids, and alcohols were found to be the major volatile compounds in strawberry fruits. In conclusion, strawberry fruits belong to ten cultivars showed abundant phenolic compounds and at the same time have high antioxidant activity.

Abstract
Berry fruits consumption has increased in recent years because they are rich sources of polyphenols with reported health benefits. The aim of the present work was to develop a new comprehensive and fast HPLC-MS/MS method for simultaneous determination of 36 phenolic compounds (7 anthocyanins, 9 flavonols, 4 flavan-3-ols, 2 dihydrochalcones, 2 flavanones and 12 phenolic acids) present in blueberry, strawberry, and their fruit jam. Blueberry fruits showed higher contents of anthocyanins, flavonols and phenolic acids, while strawberry fruits exhibited higher contents of flavan-3-ols, dihydrochalcones and flavanones. Anthocyanins were the main phenolic constituents in both berries. Furthermore, the higher total phenolic content in the blueberry fruit and jam justified their greater antioxidant capacity measured by DPPH free radical assay, compared to strawberry. In conclusion, this new HPLC-MS/MS method is useful and reliable for quality control and authentication analyses of blueberry and strawberry fruits and their commercial food products, such as jams.

Abstract
This study aimed to evaluate the release of active components with antioxidant and antihypertensive capacity from encapsulated extracts of the peel and seeds of Gulupa (Passiflora edulis f. edulis) and Cholupa (Passiflora maliformis) in an in vitro gastrointestinal digestion model. Microencapsulated extracts were prepared with enzymatically modified rice starch as the encapsulating material and ethanol extracts of seeds and peel of P. edulis f. edulis and P. maliformis as encapsulated material. Microcapsule characterization was performed by scanning electron microscopy with values of 4.54-5.13 μm and ξ potential values of -6.34 mV and -6.66 mV. Dynamic light scattering (DLS) analysis was conducted with polydispersion values from 1.33 to 1.51, and dispersion stability analysis was also conducted. The total phenol content and antioxidant activities (ABTS, DPPH, and FRAP) and ACE inhibitory activity (in vitro antihypertensive activity) were evaluated after each stage of digestion, with values greater than 80% of activity before gastrointestinal transit and with values greater than 55% activity after the end of gastrointestinal transit. Gastrointestinal evaluation of the encapsulated extracts was performed with an ex vivo model using pig intestines and simulating the conditions of digestion in three phases: the gastric (pH 2.0 with 1.0 M HCl +0.5 g/L pepsin), enteric (pH 8.0 with Krebs solution +1.0 mL/L bile) and final enteric (pH 7.5 Krebs solution only) phases. The microencapsulation of passionflower extracts showed good behavior against changes in pH and enzymatic activities throughout digestion, thus promoting a controlled release and targeted delivery of bioactive compounds, undergoing a paracellular mechanism through the intestinal barrier to preserve the antioxidant activity and ACE inhibitory that was shown by the extracts before encapsulation of the material.

Abstract
The available drug therapy for post-ischemic neurodegeneration of the brain is symptomatic. This review provides an evaluation of possible dietary therapy for post-ischemic neurodegeneration with myricetin. The purpose of this review was to provide a comprehensive overview of what scientists have done regarding the benefits of myricetin in post-ischemic neurodegeneration. The data in this article contribute to a better understanding of the potential benefits of myricetin in the treatment of post-ischemic brain neurodegeneration, and inform physicians, scientists and patients, as well as their caregivers, about treatment options. Due to the pleiotropic properties of myricetin, including anti-amyloid, anti-phosphorylation of tau protein, anti-inflammatory, anti-oxidant and autophagous, as well as increasing acetylcholine, myricetin is a promising candidate for treatment after ischemia brain neurodegeneration with full-blown dementia. In this way, it may gain interest as a potential substance for the prophylaxis of the development of post-ischemic brain neurodegeneration. It is a safe substance, commercially available, inexpensive and registered as a pro-health product in the US and Europe. Taken together, the evidence available in the review on the therapeutic potential of myricetin provides helpful insight into the potential clinical utility of myricetin in treating neurodegenerative disorders with full-blown dementia. Therefore, myricetin may be a promising complementary agent in the future against the development of post-ischemic brain neurodegeneration. Indeed, there is a scientific rationale for the use of myricetin in the prevention and treatment of brain neurodegeneration caused by ischemia.

Abstract
Berries are grown worldwide with the most consumed berries being blackberries (Rubus spp.), blueberries (Vaccinium corymbosum), red raspberries (Rubus idaeus) and strawberries (Fragaria spp.). Berries are either consumed fresh, frozen, or processed into wines, juices, and jams. In recent times, researchers have focused their attention on berries due to their abundance in phenolic compounds. The current study aimed to evaluate the phenolic content and their antioxidant potential followed by characterization and quantification using LC-ESI-QTOF-MS/MS and HPLC-PDA. Blueberries were highest in TPC (2.93 ± 0.07 mg GAE/gf.w.) and TFC (70.31 ± 1.21 µg QE/gf.w.), whereas the blackberries had the highest content in TTC (11.32 ± 0.13 mg CE/gf.w.). Blueberries had the highest radical scavenging capacities for the DPPH (1.69 ± 0.09 mg AAE/gf.w.), FRAP (367.43 ± 3.09 µg AAE/gf.w.), TAC (1.47 ± 0.20 mg AAE/gf.w.) and ABTS was highest in strawberries (3.67 ± 0.14 mg AAE/gf.w.). LC-ESI-QTOF-MS/MS study identified a total of 65 compounds including 42 compounds in strawberries, 30 compounds in raspberries, 28 compounds in blueberries and 21 compounds in blackberries. The HPLC-PDA quantification observed phenolic acid (p-hydroxybenzoic) and flavonoid (quercetin-3-rhamnoside) higher in blueberries compared to other berries. Our study showed the presence of phenolic acids and provides information to be utilized as an ingredient in food, pharmaceutical and nutraceutical industries.

Abstract
Alzheimer's disease (AD) is a neurodegenerative disease with a high incidence rate and complicated pathogenesis. Currently, all anti-AD drugs treat the symptoms of the disease, and with currently no cure for AD. Flavonoid containing natural products, Myricetin (MYR) and Dihydromyricetin (DMY), are abundant in fruits and vegetables, and have been approved as food supplements in some countries. Interestingly, MYR and DMY have been reported to have anti-AD effects. However, the underlying anti-AD mechanism of action of MYR and DMY is complex with many facets being identified. In this review, we explore the benefit of MYR and DMY in AD patients from a molecular level. Their mechanism of action are discussed from various aspects including amyloid β-protein (Aβ) imbalance, neuroinflammation, dyshomeostasis of metal ions, autophagy disorder, and oxidative stress.

Abstract
We here study the effect of the pre-harvest application of salicylic acid at two different concentrations on the olive phenolic composition. Influence of the cultivar and harvesting day were considered. As a result, the total phenol content increased significantly, particularly when using 200 mg mL−1 of salicylic acid. However, the free radical scavenging activity was cultivar dependent. For instance, when the olives were harvested on day 3 and treated with 200 mg mL−1 of salicylic acid, the antioxidant activity decreased from 161 to 278 µg mL−1 for Arbequina, whereas it increased from 397 to 258 µg mL−1 for Picual. Generally speaking, oleuropein and hydroxytyrosol contents enhanced with the application of 200 mg mL−1 of salicylic acid. The results found suggest that exogenous salicylic acid is an interesting agronomic practice to enrich olive fruits in antioxidants.

Abstract
This study investigated the phytochemical constituents and antioxidant properties of crude extracts of C. argentea at different maturity stages and seasons. Total phenols, flavonoids, and proanthocyanidin content from water, acetone and methanol extracts were evaluated spectrophotometrically. The antioxidant activities were measured using 2,2- diphenyl-1-picrylhydrazyl (DPPH), 2,2′-azino-bis (3-ethylbenzthiazoline-6-sulfonic acid) (ABTS), Ferric reducing antioxidant power (FRAP) and Total antioxidant capacity (TAC) models. Results showed that the flowering stages in all the solvent extracts gave the highest polyphenolic content with the acetone extract significantly higher than the methanol and aqueous extracts (P < 0.05). The highest value for total polyhenolic content 80.75 ± 4.21 for the first trial and 89.69 ± 2.13 μg/mL in the second trial; while the flavonoids was 874.76 ± 7.87 and 946.19 ± 7.87 μg/mL in the first and second trials respectively; and proanthocyanidin content was 170.00 ± 0 and 100.90 ± 1.29 μg/mL. Overall, the aqueous extracts had the lowest content of all the phytochemicals. The antioxidant activities ranged from low to high at different growth stages of the plant. While low to no activity was observed in the aqueous extracts in all the assays, the methanol extracts of the flowering stages showeds the best activity in the first and second trials with IC50 values of 104.10 ± 8.59 and 120.02 ± 13.37 μg/mL respectively in ABTS. Similar trend was obtained in the DPPH assay with the highest activity in the methanol flowering extract with IC50 of 52.36 ± 0.76 μg/mL (first trial) and 49.36 ± 0.29 μg/mL (second trial). The FRAP and TAC also had the highest activity in the flowering stages in all solvents, but with the acetone extracts having the overall inhibition on both radicals. This study revealed that Celosia argentea phytoconsituents and antioxidant potential can be influenced by physiological and developmental stages of the plant.

Abstract
Biotechnological production of phenolic acids is attracting increased interest due to their superior antioxidant activity, as well as other antimicrobial, dietary, and health benefits. As secondary metabolites, primarily found in plants and fungi, they are effective free radical scavengers due to the phenolic group available in their structure. Therefore, phenolic acids are widely utilised by pharmaceutical, food, cosmetic, and chemical industries. A demand for phenolic acids is mostly satisfied by utilising chemically synthesised compounds, with only a low quantity obtained from natural sources. As an alternative to chemical synthesis, environmentally friendly bio-based technologies are necessary for development in large-scale production. One of the most promising sustainable technologies is the utilisation of microbial cell factories for biosynthesis of phenolic acids. In this paper, we perform a systematic comparison of the best known natural sources of phenolic acids. The advances and prospects in the development of microbial cell factories for biosynthesis of these bioactive compounds are discussed in more detail. A special consideration is given to the modern production methods and analytics of phenolic acids.

Abstract
Chlorogenic acid (CGA) is known to protect oocytes from oxidative stress. Here we investigated the effects of CGA on porcine oocyte maturation under heat stress and subsequent embryonic development after parthenogenetic activation. For in vitro maturation (IVM) at 41.0°C (hyperthermic condition), supplementation of the maturation medium with 50 μM CGA significantly improved the percentage of matured oocytes and reduced the rate of apoptosis relative to oocytes matured without CGA (p < .05). CGA treatment of oocytes during IVM under hyperthermia tended to increase (p < .1) percentage of blastocyst formation after parthenogenesis and significantly increased (p < .05) the total cell number per blastocyst relative to oocytes matured without CGA. For IVM at 38.5°C (isothermic condition), CGA significantly improved the rate of blastocyst development compared with oocytes matured without CGA (p < .05), but did not affect oocyte maturation, apoptosis rate or the number of cells per embryo. Omission of all antioxidants from the IVM medium significantly reduced the rate of oocyte maturation, but the rate was restored upon addition of CGA. These results demonstrate that CGA is a potent antioxidant that protects porcine oocytes from the negative effects of heat stress, thus reducing the frequency of apoptosis and improving the quality of embryos.

Abstract
Strawberry (Fragaria x ananassa Duch., Rosaceae) is the subject of many research studies due to its numerous features such as unique taste, aroma and health qualities. The distribution of low molecular weight metabolites belonging to aldehydes, ketones, alcohols, esters, organic acids, phenolics, amino acids and sugars classes within strawberry fruit cross-section was studied using mass spectrometry imaging (MSI) method with 109Ag nanoparticle enhanced target (109AgNPET). Correlation of distribution of over thirty compounds found in cross-section of strawberry with their biological function is also included.

Abstract
Mulberry (Morus alba L.) has been used in East Asia (Korea, China, and Japan) as a medicine because of its various pharmacological effects including the excellent antioxidant properties of its fruit. This study analyzed extracts from 12 varieties of Korean mulberry fruit for flavonoids using ultrahigh-performance liquid chromatography coupled with diode array detection and quadrupole time-of-flight mass spectrometry (UPLC-DAD-QTOF/MS). Six quercetin derivatives were identified by mass spectrometry (MS) based on the [quercetin + H]+ ion (m/z 303), while four kaempferol derivatives were identified based on the [kaempferol + H]+ ion (m/z 287). Two new compounds (morkotin A and morkotin C, quercetin derivatives) were identified for the first time in mulberry fruit. The total flavonoid contents of the mulberry fruits ranged from 35.0 ± 2.3 mg/100 g DW in the Baek Ok Wang variety (white mulberry) to 119.9 ± 7.0 mg/100 g DW in the Dae Shim variety. This study has, for the first time, evaluated the flavonoid chromatographic profiles of 12 varieties of Korean mulberry fruits in a following quali-quantitative approach, which will contribute to improved utilization of these fruits as health foods.

Abstract
Secondary metabolites play an important role in the avocado fruit defense system. Phenolic compounds are the main biosynthesized metabolites of this system response. Our objective in this investigation was to evaluate the induction of specific metabolic pathways using chitosan as an elicitor. Extracts obtained from avocado in intermediate and consumption maturity stages treated with chitosan exhibited an increase in antifungal activity, which caused inhibition of mycelial growth and a decrease in sporulation as well as spore germination of Colletotrichum gloeosporioides. Additionally, RNA from epicarp of the fruits treated and untreated with chitosan was obtained in order to evaluate the expression of genes related to phenylpropanoids and the antifungal compound 1-acetoxy-2-hydroxy-4-oxo-heneicosa-12,15-diene biosynthesis. An increased in gene expression of genes that participates in the phenylpropanoids route was observed during the stage of physiological fruit maturity, others genes such as Flavonol synthase (Fls), increased only in samples obtained from fruit treated with chitosan at consumption maturity. Our results reveal a new molecular mechanism where chitosan induces a specific accumulation of phenylpropanoids and antifungal diene; this partially explains avocado's resistance against fungal pathogens. Finally, we discuss the molecular connections between chitosan induction and gene expression to explain the biological events that orchestrate the resistance pathways in fruits.
