Abstract
The effects of sodium phytate supplementation on fat digestion and cholesterol metabolism were investigated in female rats. On the basis of an in vitro experiment showing that phytate raised the solubility of bile acids, it was predicted that phytate feeding would depress faecal bile acid excretion, raise apparent fat digestibility and elevate serum cholesterol concentrations. The experimental diets with or without sodium phytate were either cholesterol-free or cholesterol-rich and had a normal calcium concentration. Rats fed on the cholesterol-rich diet with sodium phytate showed enhanced faecal bile acid excretion, but there was no effect on fat digestibility. In rats fed the cholesterol-free diets, phytate did neither affect fat digestion nor bile acid excretion. Sodium phytate inclusion in the cholesterol-rich diet raised serum cholesterol concentrations, but reduced liver cholesterol concentration. Thus, the in vivo data do not agree with the in vitro observations. Both phytate and cholesterol feeding influenced mineral and trace element metabolism. Liver zinc concentrations were raised by phytate feeding. Cholesterol consumption reduced hepatic concentrations of copper, iron and zinc. Both phytate and cholesterol feeding reduced the apparent absorption of calcium, magnesium and phosphorus.

Abstract
Supplementation of microbial phytase usually improves the digestibility and utilization of phosphorus in feedstuffs of plant origin. The effect of phytase supplementation on the digestibilities of AA also has been examined, but the results have been inconsistent. This study was carried out to determine the effect of phytase (Natuphos) supplementation, at a rate of 2,000 phytase units/kg, to two basal diets on the apparent ileal digestibilities (AID) of GE, CP, and AA, and on the apparent total-tract digestibilities (ATTD) of CP and GE. The basal diets contained 18% CP and were formulated (as-fed basis) to contain either a low (0.22%) or high content (0.48%) of phytate P. The high-phytate diet contained 20% rice bran, which is a rich source of phytate and has low intrinsic phytase activity. Eight barrows (average initial BW = 40.6 kg), fitted with a simple T-cannula at the distal ileum, were fed the four diets according to a replicated 4 x 4 Latin square design. The pigs were fed twice daily at 0800 and 2000, equal amounts each meal, at a rate of 2.4 times the daily maintenance requirement for ME. Each experimental period comprised 14 d. Ileal digesta were collected from 0800 to 2000 on d 12, 13, and 14. Feces were collected from 0800 on d 8 until 0800 on d 12. Chromic oxide was used as the digestibility marker. The AID of GE, CP, and AA and the ATTD of CP and GE were less in the high- than in the low-phytate diet (P < 0.01). With the exception of glutamic acid, phytase supplementation did not affect (P > 0.10) the AID of CP and AA. There was no effect (P > 0.05) of phytase on the ATTD of CP and GE. These results show that if a response occurs to phytase supplementation, it is independent of the dietary phytate content.

Abstract
The role of leukocytes in the pathogenesis of coronary arterial disease has become a focus for clinical research. The aim of this study was to determine whether neutrophil accumulation would participate in the development of intimal hyperplasia after endothelial injury in mice, and whether d-myo-inositol hexakisphosphate (phytic acid) which inhibits the binding of L- and P-selectin to sialyl Lewis(X) could inhibit the development of intimal hyperplasia. Endothelial injury was inflicted in one femoral artery via the photochemical reaction between systemically injected rose bengal and transillumination with green light (wavelength: 540 nm). Scanning electron microscopic observation at 3 days after the injury showed an increase in the number of leukocytes adhering to the injury site. Histological observation at 21 days showed that in the neutropenia group administered anti-neutrophil antibody and in the phytic acid-treated group the progression of intimal hyperplasia was significantly attenuated by comparison with the corresponding control groups. These results suggest that neutrophil accumulation contributes to the initiation and/or development of intimal hyperplasia and L- and/or P-selectin may participate in their mechanisms.

Abstract
BACKGROUND Calcium fortification of maize has been achieved for millennia in Central America by the process of nixtamalization. Bioavailability of calcium is, however, compromised by phytate, which is present in large quantities in maize kernels and is only modestly reduced by nixtamalization. OBJECTIVE The objective was to compare the absorption of calcium from tortilla meals prepared from low-phytate maize with that from meals prepared from maize with typical phytate content. DESIGN At 1-mo intervals, 5 healthy adult women were fed 2 test meals of approximately 140 g tortillas in lieu of breakfast. On one occasion, the tortillas were prepared from maize with approximately 60% phytate reduction, and, on the other occasion, they were prepared from the matching isohybrid wild-type maize. Beginning midway through the test meal, (44)Ca (0.3 mg/kg body wt) was administered in water as an extrinsic label; (42)Ca (0.06 mg/kg body wt) was administered intravenously immediately after the test meal. Isotope ratios of (42)Ca to (43)Ca and of (44)Ca to (43)Ca were measured by inductively coupled plasma mass spectrometry in urine collected as an 8-h pool from the period 16-24 h after intravenous tracer administration and prepared by the oxalate precipitation method. Fractional absorption of calcium was determined by using a dual-isotope ratio technique. RESULTS Mean fractional absorption of calcium from tortillas prepared from the low-phytate maize (0.50 +/- 0.03) was significantly (P = 0.003) greater than that from tortillas prepared from the control maize (0.35 +/- 0.07). CONCLUSION The increase in the quantity of calcium absorbed could be of practical importance for calcium nutriture when the intake of dairy products is limited.

Abstract
The presence of myo-inositol hexakisphosphate (InsP6) in biological fluids (blood, urine, saliva, interstitial fluid) of mammalians has been clearly demonstrated. The existence of intracellular InsP6 in mammalian cells has also been established. Further, significant extracellular and intracellular functions of this molecule have been found. The relationship between InsP6 ingestion and the InsP6 distribution in various tissues of mammalians is discussed. It was found that the majority of the extracellular InsP6 found in organs, tissues and biological fluids of mammalians has a dietary origin and is not a consequence of endogenous synthesis, whereas the intracellular InsP6 probably originates in the cell. Little absorption of dietary InsP6 takes place during intestinal transit and depletion of extracellular InsP6 occurs at high rates when InsP6-poor diets are consumed. From these results, it can be deduced that health benefits linked to extracellular InsP6 must be related to dietary InsP6.

Abstract
Iron deficiency remains a major global health problem affecting an estimated 2 billion people. The World Health Organization ranked it as the seventh most important preventable risk for disease, disability, and death in 2002. Since an important factor in its causation is the poor bioavailability of iron in the cereal-based diets of many developing countries, SUSTAIN set up a Task Force, consisting of nutritional, medical, industry, and government experts to consider strategies for enhancing the absorption of fortification iron. This paper summarizes the findings of this Task Force. Detailed reviews of each strategy follow this overview. Highly soluble compounds of iron like ferrous sulfate are desirable food fortificants but cannot be used in many food vehicles because of sensory issues. Thus, potentially less well-absorbed forms of iron commonly are used in food fortification. The bioavailability of iron fortificants can, however, be enhanced with innovative ingredient technologies. Ascorbic acid, NaFeEDTA, ferrous bisglycinate, and dephytinization all enhance the absorption of fortification iron, but add to the overall costs of fortification. While all strategies cannot be recommended for all food fortification vehicles, individual strategies can be recommended for specific foods. For example, the addition of ascorbic acid is appropriate for dry blended foods such as infant foods and other dry products made for reconstitution that are packaged, stored, and prepared in a way that maximizes retention of this vitamin. NaFeEDTA can be recommended for fortification of fish sauce and soy sauce, whereas amino acid chelates may be more useful in milk products and beverages. With further development, dephytinization may be possible for low-cost, cereal-based complementary foods in developing countries. Encapsulation of iron salts in lipid coatings, while not an iron absorption-enhancing strategy per se, can prevent soluble forms of iron from interacting undesirably with some food vehicles and hence broaden the application of some fortificants. Research relevant to each of these strategies for enhancing the bioavailability or utility of iron food fortificants is reviewed. Individual strategies are evaluated in terms of enhancing effect and stability, organoleptic qualities, cost, and regulatory issues of interest to the nutrition community, industry, and consumers. Recommendations are made on potential usages and further research needs. Effective fortification depends on the selection of technically feasible and efficacious strategies. Once suitable strategies have been identified, cost becomes very important in selecting the best approach to implement. However it is essential to calculate cost in relation to the amount of bioavailable iron delivered. An approach to the calculation of cost using a conservative estimate of the enhancing effects of the innovative technologies discussed in the supplement is given in the final section.

Abstract
BACKGROUND Postmenopausal women are at risk of cardiovascular disease (CVD) as a result of unfavorable blood lipid profiles and increased oxidative stress. Soy protein consumption may help protect against these risk factors. OBJECTIVE Our objective was to ascertain the effect of the soy protein components isoflavones and phytate on CVD risk in postmenopausal women. DESIGN In a double-blind 6-wk study, 55 postmenopausal women were randomly assigned to 1 of 4 treatments with soy protein (40 g/d) isolate (SPI): low phytate/low isoflavone (LP/LI); normal phytate/low isoflavone (NP/LI); low phytate/normal isoflavone (LP/NI); or normal phytate/normal isoflavone (NP/NI). Blood lipids (total, LDL, and HDL cholesterol and triacylglycerol) and oxidative stress indexes (protein carbonyls, oxidized LDLs, and 8-iso-prostaglandin-F(2alpha)) were measured at baseline and 6 wk. RESULTS The oxidative stress indexes were not significantly affected by either phytate or isoflavones. Phytate treatment had a minimal but nonsignificant effect in reducing protein carbonyls and 8-iso-prostaglandin-F(2alpha); the reductions were 6-8% and 4-6% in the NP/LI and NP/NI groups and 1-4% and 3-4% in the LP/LI and LP/NI groups, respectively. Similarly, circulating lipids were not significantly affected by either phytate or isoflavones. The decline in total (6%-7% compared with 2%-4%) and LDL (10%-11% compared with 3%-7%) cholesterol did not differ significantly between the normal- and low-isoflavone groups, respectively. CONCLUSION In postmenopausal women, neither phytate nor isoflavones in SPI have a significant effect of reducing oxidative damage or favorably altering blood lipids.

Abstract
Eight mature dogs (19.3 +/- 0.1 kg) were used in an experiment to compare the effects of feeding soybeans containing low concentrations of oligosaccharides and phytate on nutrient availability in complete foods fed to dogs. All foods were formulated to be isonitrogenous and contained low-oligosaccharide, low-phytate soybean meal (LLM); conventional soybean meal (SBM); low-oligosaccharide, low-phytate whole soybeans (LLB); or conventional whole soybeans (WSB) as the protein source. Daily DMI averaged 287 +/- 4 g/d. Fecal outputs were greatest for LLB and WSB, averaging 48.2 g DM/d. Small intestinal DM digestibility ranged from 80.9% (LLM) to 74.0% (LLB) but was unaffected by treatment. Large intestinal DM digestibility did not differ among treatments (P = 0.652). Total-tract DM digestibility was higher (P = 0.020) for LLM (87.0%) than for SBM (84.8%). No difference in total-tract DM digestibility was observed for the two WSB foods (average = 83.3%; P = 0.286). Nitrogen retention did not differ among foods containing LLM and SBM (1.2 g of N/d; P = 0.486) or LLB and WSB (0.9 g of N/d; P = 0.225). Small intestinal N digestibility did not differ among LLM- and SBM-containing foods (80.6%; P = 0.190) or LLB and WSB (69.3%; P = 0.640). Total-tract N digestibility did not differ among foods containing LLM and SBM (83.5%; P = 0.627) or LLB and WSB (76.8%; P = 0.968). Tryptophan digestibility was higher for SBM than for LLM (P = 0.039). Histidine and tryptophan digestibilities were higher in WSB compared with LLB (P = 0.049 and P < 0.001, respectively). No differences in nonessential AA digestibility were observed when comparing soy-based foods. The results of this study demonstrate that LLM, SBM, LLB, and WSB can be effective sources of protein for canine foods and have a high digestibility. Differences in small intestinal digestibility of tryptophan and histidine may require consideration when formulating diets using low-oligosaccharide, low-phytate soybeans or meal.

Abstract
Recently, some properties of myo-inositol hexakisphosphate (InsP(6)) are related to its dermatological use as discolouring agent, on preventing calcinosis cutis or due to its important role on premature aging. Some studies also seem to demonstrate a capacity of InsP(6) to inhibit skin cancer. In this paper, a first study of the absorption of InsP(6) through the skin is developed. Due to the correlation between InsP(6) absorption and its urinary excretion, these last values were used to evaluate this process. It was found that using a moisturizing cream as vehicle, the InsP(6) sodium salt was absorbed at significantly higher amounts than the InsP(6) calcium-magnesium salt. Maximum InsP(6) urinary concentrations were observed approximately at 14 d of 2% InsP(6) topical cream application, and gave 66.35+/-5.49 mg/l urinary InsP(6) when the sodium salt was used and 16.02+/-2.61 mg/l urinary InsP(6) when the calcium-magnesium salt was applied. When the InsP(6) topical cream administration ceased, the InsP(6) urinary excretion fell dramatically approximately during a period of 10 d. From these results, it can be deduced that by topical administration InsP(6) can achieve important concentrations in tissues and biological fluids, this demonstrating that it is possible to propose the topic use as a new InsP(6) administration route.

Abstract
Inositol 6-phosphate (IP-6) has demonstrated novel anti-cancer activity using several different tumor models. IP-6, a phytoestrogen, has estrogen receptor (ER) binding capabilities that are not known to cause cellular proliferation in hormone sensitive cells. It is hypothesized that IP6 can induce competitive inhibition with estrogen for estrogenic binding sites on cancer cells resulting in decreased proliferation. In this experiment, Hep-2 cells were treated with Estradiol and IP-6 in a dose dependant manner for 24, 48, and 72 hours. They were analyzed for changes in number, protein concentrations, damage, and morphology. There was an increase in cell proliferation in Estradiol treated Hep-2 cells. Cells treated with IP-6 showed no change in cell proliferation in the 24 or 48-hour groups, but there was a decrease in number with the 72-hour group, particularly with the 1mM dose. Both the Estradiol and IP-6 treatments caused no membrane oxidation and the level of protein synthesis stayed consistent. The morphology showed small round to cuboidal, single cells with scant, dense, basophilic cytoplasm and hyperchromatic nuclei with smooth borders. Some cells showed anucleation and cellular degeneration. Although IP-6 is a phytoestrogen, the results show that affinity for estrogen binding sites on Hep-2 cells is greatly decreased. However, with time given increased concentrations, IP-6 can cause a decrease in the cellular proliferation of Hep-2 cells without initiating cellular apoptosis.

Abstract
Vegetarians may have subtle nutritional deficiencies which have been related to the occurrence of an unrecognized malabsorption syndrome. The excess phytate content in cereals, nuts, legumes and oilseeds which represent the mainstay of their food intake, seems to play a central role in the pathogenesis of this malabsorption syndrome as an inverse relationship has been shown to link the phytate content of the diet with the intestinal absorption of trace minerals and proteins. We postulate that manipulating the endogenous digestive microflora of subjects on a vegetarian diet through administering probiotic lactic bacteria would represent an innovative tool to counteract the occurrence of the malabsorption syndrome dependent on the high phytate content of their diet. Even though there are no data about the composition of endogenous digestive microflora in subjects on a vegetarian diet, we expect that probiotic lactobacilli can interact with or affect distinct yet interrelated components within the intestinal milieu, such as epithelial cells, enteric flora, and/or mucosal immune cells. This would ultimately translate into the correction of the unregulated mechanisms implicated in the altered intestinal absorption of trace metals and proteins commonly seen in vegetarians. Clinical experience with probiotic therapy of patients with inflammatory bowel disease fully agrees with this view. One additional point of interest is that probiotic lactobacilli, and other species of the endogenous digestive microflora as well, are an important source of the enzyme phytase which catalyses the release of phosphate from phytate and hydrolyses the complexes formed by phytate and metal ions or other cations, rendering them more soluble ultimately improving and facilitating their intestinal absorption. The regular intake of probiotic preparation, may represent a cheap and safe tool in order to convert a diet with a low potential for bioavailability of trace minerals and proteins, such as the vegetarian diet, into a diet with a high bioavailability potential. The benefit of such an approach would not be restricted to vegetarians.

Abstract
The influence of the addition of metal chelators on oxidative stability was studied in a milk drink and in a mayonnaise system containing highly polyunsaturated lipids. Milk drinks containing 5% (w/w) of specific structured lipid were supplemented with lactoferrin (6-24 muM) and stored at 2 degrees C for up to 9 weeks. Mayonnaise samples with 16% fish oil and 64% rapeseed oil (w/w) were supplemented with either lactoferrin (8-32 muM), phytic acid (16-124 muM), or EDTA (16-64 muM) and were stored at 20 degrees C for up to 4 weeks. The effect of the metal chelators was evaluated by determination of peroxide values, secondary volatile oxidation products, and sensory analysis. Lactoferrin reduced the oxidation when added in concentrations of 12 muM in the milk drink and 8 muM in the mayonnaise, whereas it was a prooxidant at higher concentrations in both systems. In mayonnaise, EDTA was an effective metal chelator even at 16 muM, whereas phytic acid did not exert a distinct protective effect against oxidation. The differences in the equimolar effects of the metal chelators are proposed to be due to differences in their binding constants to iron and their different stabilities toward heat and low pH.

Abstract
OBJECTIVE We sought to improve the nutritive utilization of Lens culinaris M. variety vulgaris cultivar Magda-20 in growing rats by autoclaving the lentil seeds at 120 degrees C for 30 min at an internal pressure of 1 atm and by supplementing the rats with a vitamin-mineral premix. METHODS Nutritional assessment was based on chemical analysis of total phosphorus, free phosphorus, phytate, magnesium, neutral detergent fiber, and acid detergent fiber contents of the lentils and the digestive and metabolic use of phosphorus and magnesium by the growing rats. RESULTS The net absorption of phosphorus was greater than the amount of non-phytate phosphorus ingested by the animals fed diets of raw and autoclaved lentil flours. Vitamin-mineral supplementation of raw and autoclaved lentil flour resulted in a significant increase in dietary intake and net absorption of phosphorus and magnesium. For all of the experimental diets tested, there was a direct correlation between phosphorus or magnesium balance and weight gain (r = 0.91 and 0.80, respectively) and between phosphorus or magnesium balance and nitrogen balance (r = 0.91 and 0.87, respectively). CONCLUSIONS Part of the phytate-phosphorus from raw and autoclaved lentil flour was available during digestion, and hardly any phytate was detected in the feces. Supplementation of raw lentil flour with a vitamin-mineral premix was the most effective treatment for increasing daily food intake, body weight gain, and nutritive use of phosphorus and magnesium.

Abstract
The effect of starch source and supplemental phytic acid (PA) on N partitioning and excretion and ammonia volatilization from dairy manure was evaluated with 8 midlactation cows. Cows were randomly assigned to treatments in replicated 4 x 4 Latin squares with four 18-d periods. Diets were 61% forage, 25% starch, 17.2% crude protein, and 31% neutral detergent fiber and included dry ground corn (DG) or steam flaked corn (SF) with no supplemental P (L; 0.34% P) or supplemental purified PA (0.45% P) to provide additional P from a non-mineral source. Total collection of milk, urine, and feces was conducted on d 16 to 18 of each period. Cows fed SF had lower dry matter (DM) intakes than those fed DG, which, in addition to increased starch digestibility and ruminal fermentation, contributed to higher DM digestibility. Cows fed SF had reduced feces and urine excretion compared with cows fed DG. Also, N intake for cows fed SF was lower, and N digestibility was higher, compared with cows fed DG; therefore, N excretion in both feces and urine was reduced in these cows. Despite the differences in DM intake, lactation performance was not affected by starch sources. Therefore, the efficiency of N utilization increased with SF. Addition of PA did not affect N intake or utilization. Feces and urine were subsampled from each cow, and wet feces and urine were mixed in sealed chambers in the proportions excreted. Ammonia volatilization was measured for 36 h using acid traps sampled on a planned time course. Nitrogen at time zero (A0), rate of ammonia emission (k), and residual N (R) were calculated using the exponential decay model At = A0 e(-kt) + R. Rate of ammonia loss from mixed feces and urine was lower from cows fed SF than from those fed DG. Altering dietary starch source to improve nutrient digestibility and to reduce N excretion by lactating cows may provide opportunity to reduce ammonia losses from manure.

Abstract
The current study was undertaken to establish a population from an unselected random-mating chicken population for the development of a model to predict factors that affect phytate P utilization in growing birds. A population was established from a mating of 40 male and 200 female chickens from the Athens Canadian randombred population. At 4 wk of age, birds were housed in individual metabolic cages and fed a diet containing 1.06% Ca, 0.35% total P, and 0.03% available P. After 3 d of acclimatization, feed consumption (FC) was measured and excreta produced in 3 consecutive d were collected. Individual 4-wk BW, BW gain (BWG), phytate P intake (PPI), inorganic P intake (IPI), Ca intake (CaI), N intake (NI), and energy intake (EI) during the 3 d excreta collection period were also measured. Feed conversion ratios (FCR) and relative growth rate were calculated. Phytate P bioavailability (PPB), Ca bioavailability (CaB), and N bioavailability (NB) were estimated from the disappearance of the nutrients during the passage of feed through the gastrointestinal tract. Energy bioavailability (EB) was measured by bomb calorimetry as the difference in the gross energy of the feed and the energy of the excreta. The major factors affecting PPB were CaB and EB for both sexes. In the males, BW contributed significantly to PPB. However, in the females, NB also contributed significantly to PPB. Faster growing birds tended to have a reduced retention time of feed compared with slow growing birds, and as a result utilized phytate P less. Birds that are able to utilize phytate P better are putatively able to release P for energy utilization. Therefore, the birds that were able to utilize phytate P better were also better energy utilizers.

Abstract
BACKGROUND Identification of allelic variants in a single gene that determine the phytate content of maize kernels and the subsequent breeding of low-phytate maize have facilitated studies designed to determine quantitatively the effects of maize phytate on the bioavailability of minerals in maize. OBJECTIVE The objective was to determine the relation between the fractional absorption of zinc (FAZ) and the phytate content and phytate:zinc molar ratios of maize tortillas prepared from hybrids with different phytate contents. DESIGN Six healthy adults were fed, as the only food for 2 d, maize tortillas prepared from 1 of 2 low-phytate mutants: lpa1-1 (lpa1-1-LP) or Nutridense Low Phytate (ND-LP), which have phytate reductions of approximately 60% and approximately 80%, respectively, compared with their respective wild-type isohybrids. Four additional subjects were fed tortillas prepared from the corresponding wild-type isohybrids (lpa1-1-WT and ND-WT) according to the same study design. Meals were extrinsically labeled with zinc stable isotopes, and FAZ was determined with a dual-isotope-tracer ratio technique. Overall FAZ values were examined in relation to dietary phytate and phytate:zinc molar ratios by using a mixed nonlinear regression model. RESULTS The mean (+/-SD) FAZ values from tortillas prepared from ND-LP, lpa1-1-LP, lpa1-1-WT, and ND-WT were 0.38 +/- 0.07, 0.28 +/- 0.04, 0.15 +/- 0.07, and 0.13 +/- 0.05, respectively. A negative relation (P < 0.001) was found between FAZ and both dietary phytate and the phytate:zinc molar ratio. The effect of dietary zinc (8-14 mg Zn/d) under these experimental conditions was not significant. CONCLUSIONS FAZ from maize tortillas is positively related to the extent of phytate reduction achieved with low-phytate hybrids.

Abstract
Myo-inositol hexaphosphate (InsP6) is an abundant component of plant seeds. It is also found in significant levels in blood and mammalian tissues, but they are totally dependent on their dietary intake. In the present paper, we describe studies on the effect of InsP6 on a model of dystrophic calcification, which was chemically induced by subcutaneous injection of a 0.1% KMnO4 solution. Male Wistar rats were randomly divided into four groups for treatment over 31 days. A: animals consuming a purified diet in which InsP6 was absent but to which 1% of InsP6 (as sodium salt) was added. In this group, the InsP6 plasma levels (0.393 +/- 0.013 microM) were similar to those observed in rats consuming a standard diet. B: animals consuming only the purified diet in which InsP6 was absent. In this case the InsP6 plasma levels decreased (0.026 +/- 0.006 microM); C: animals consuming the same purified diet as group B but received daily subcutaneous injections of 50 microg kg(-1) etidronate during the last 14 days. In this case the InsP6 plasma levels were also very low (0.025 +/- 0.007 microM); D: animals consuming the same diet as group B but a 6% of carob germ (InsP6 rich product) was added. The InsP6 plasma levels (0.363 +/- 0.035 microM) were also similar to those observed in rats consuming a standard diet. After 21 days plaque formation was induced. Calcification plaques were allowed to proceed for 10 days, after which the plaque material present was excised, dried and weighed. It was found that the presence of myo-inositol hexaphosphate (phytate) in plasma at normal concentrations (0.3-0.4 microM) clearly inhibited the development of dystrophic calcifications in soft tissues. These results demonstrates that myo-inositol hexaphosphate acts as an inhibitor of calcium salt crystallization.

Abstract
Patients with Crohn's disease (CD) often experience Fe deficiency (ID) and frequently alter their diet to relieve abdominal symptoms. The present study set out to assess whether patients with CD have dietary habits that lead to low Fe intakes and/or reduced bioavailable Fe compared with control subjects. Patients with asymptomatic CD were matched to controls (n 91/group). Dietary intakes of Fe and contributions from different food groups were compared using a 7 d food diary. Promoters and inhibitors of non-haem Fe absorption were investigated and a recently published algorithm was applied to assess bioavailable Fe. Fewer patients than controls met the reference nutrient intake for Fe (32% CD patients v. 42% controls). Overall, patients had significantly lower mean Fe intakes (by 2.3 mg/d) and Fe density (by 0.26 mg/MJ (1.1 mg/1000 kcal)) compared with controls (both P<0.001). Differences were mainly due to a preference among CD patients for low-fibre non-Fe fortified cereals, particularly breakfast cereals. In particular, control subjects had higher Fe intakes than matched CD subjects for men (P<0.001) and women less than 50 years (P=0.03). Intakes of both ascorbic acid (P<0.001) and phytic acid (P<0.01), but not animal tissue (P=1.0), were lower in patients with CD, but these had no overall effect on the predicted percentage of bioavailable Fe. Thus total bioavailable Fe was reduced in patients with CD due to lower intakes (P<0.01). Dietary Fe intakes are low in CD patients, which may contribute to an increased risk of ID and anaemia. Changing dietary advice may compromise perceived symptoms of the disease so the need for Fe supplementation should be carefully considered.

Abstract
Consensus phytase is a new biosynthetic, heat-stable enzyme derived from the sequences of multiple homologous phytases. Two experiments were conducted to determine its effectiveness, relative to inorganic P and a mutant enzyme of Escherichia coli phytase (Mutant-EP), in improving dietary phytate-P availability to pigs. In Exp. 1, 36 pigs (3 wk old, 7.00 +/- 0.24 kg of BW) were fed a low-P corn-soybean meal basal diet plus consensus phytase at 0, 250, 500, 750, 1,000, or 1,250 U/kg of feed for 5 wk. Plasma inorganic P concentration, plasma alkaline phosphatase activity, bone strength, and overall ADG and gain:feed ratio of pigs were improved (P < 0.05) by consensus phytase in both linear (R2 = 0.20 to 0.70) and quadratic (R2 = 0.30 to 0.70) dose-dependent fashions. In Exp. 2, 36 pigs (4 wk old, 9.61 +/- 0.52 kg BW) were fed the basal diet + inorganic P at 0.1 or 0.2%, consensus phytase at 750 or 450 U/kg of feed, Mutant-EP at 450 U/kg of feed, or 225 U consensus + 225 U Mutant-EP/kg of feed. Pigs fed 750 U of consensus phytase or 450 U of Mutant-EP/kg feed had plasma inorganic concentrations and bone strength that fell between those of pigs fed 0.1 or 0.2% inorganic P. These two measures were 16 to 29% lower (P < 0.05) in pigs fed 450 U of consensus phytase/kg of feed than those of pigs fed 0.2% inorganic P. Plasma inorganic P concentrations were 14 to 29% higher (P < 0.05) in pigs fed Mutant-EP vs. consensus phytase at 450 U/kg at wk 2 and 3. In conclusion, the experimental consensus phytase effectively releases phytate P from the corn-soy diet for weanling pigs. The inorganic P equivalent of 750 U of consensus phytase/kg of feed may fall between 0.1 and 0.2%, but this requires further determination.

Abstract
The suitability of five species of Ficus, F. mucoso, F. thonningii, F. polita, F. religiosa and F. benjamina, for feeding ruminant livestock was studied. The nutritive and antinutritive components were determined and the acceptability of the forages to livestock was assessed using a cafeteria method in 8 adult small ruminants. Also, the degradation potential of the dry matter of the five Ficus species was investigated using 3 fistulated sheep. The crude protein (CP) content of the Ficus species varied significantly (p < 0.05), ranging from 130 to 180 g/kg DM. The content of neutral detergent fibre (NDF) also varied significantly (p < 0.05), ranging from 650 to 710 g/kg DM. The organic matter (OM) contents did not differ significantly (p > 0.05), having a mean value of 916 g/kg DM. The concentrations of tannin, saponin, phytic acid and oxalic acid were low. The acceptability of the forage was similar for four of the species but poor for F. polita. The extent of DM degradation varied significant among the Ficus species, the ranking order being F. benjamina > F. thonningii > F. mucoso > F. religiosa > F. polita.

Abstract
Calcium and vitamin D under nutrition can adversely affect the bone mineral metabolism. There is no population-based study from India documenting dietary habits, serum calcium and vitamin D levels. Our study investigated the dietary habits of rural and urban societies in and around Tirupati and their relationship with serum calcium, phosphorous and vitamin D [25(OH)D] levels. Four hundred and seven subjects from 5 villages around Tirupati, (rural population) and 125 asymptomatic staff of our hospital (urban population) were studied. Dietary intakes of calcium, phosphorous and phytates were documented by diet history. Serum calcium, phosphorus and 25 (OH) D levels were estimated in 191 rural subjects and 125 urban subjects. Compared to urban subjects, rural subjects had a significantly lower intake of dietary calcium (P <0.0001) and a significantly higher dietary phytate/calcium ratio and serum calcium and 25 (OH) D levels (P <0.0001). Dietary calcium intake was inadequate in both rural and urban subjects compared to the recommended daily allowances (RDA) for our country. About 31% of the population had normal vitamin D levels, 54% had vitamin D insufficiency and 15% vitamin D deficiency. About two-thirds of the population had low levels of vitamin D. Inadequate dietary calcium intake associated with high phytate/calcium ratio reduces the bioavailable calcium in the gut. Hence, there is a need to fortify food with calcium and to propose new guidelines for 25 (OH) D in Indian subjects. Multicentric studies with large sample populations are required to generate normal standards and nationally relevant guidelines.

The effect of starch source and phytic acid (PA) supplementation on phosphorus (P) partitioning and ruminal phytase activity was evaluated in eight midlactation cows (four ruminally cannulated). Cows were randomly assigned to treatments in replicated 4 x 4 Latin squares with four 18-d periods. Diets included dry ground corn (DG) or steam-flaked corn (SF), with no supplemental P (L; 0.33% P) or supplemental purified PA (0.44% P) to provide additional P from a nonmineral source. Total collection of milk, urine, and feces was conducted on d 16 to 18 of each period. Ruminal fluid was sampled and ruminal pH measured every 8 h on d 17 and 18. Milk yield was unaffected by starch source, despite lower DMI by cows fed SF. Cows fed SF had increased DM digestibility compared with those fed DG, and tended to have higher efficiency of milk yield (1.40 vs. 1.35 kg of milk/kg of DMI). Intake and fecal excretion of P was lower in cows fed SF than in cows fed DG. In cows fed SF, milk P as a percentage of P intake increased compared with cows fed DG. Ruminal pH was unaffected by diet, but milk fat content was lower for cows fed SF. Milk yield, DMI, and feed to milk ratio were not affected by supplementation with PA. Although cows fed PA had increased P intake compared with cows fed low P diet, increased P excretion resulted in no differences in apparent P digestibility. Phosphorus balance tended to be higher in cows fed PA, but milk P as a percentage of intake was reduced. The interaction of starch source and PA affected ruminal phytase activity. Altering starch source to improve efficiency of milk yield in lactating dairy cows may help reduce P losses from dairy farms.

Abstract
BACKGROUND The recent dietary reference intakes publication provides updated information on the physiologic and dietary requirements for zinc and proposes new tolerable upper intake levels. OBJECTIVE We analyzed dietary intake data of US preschool children to determine the prevalence of inadequate and excessive intakes of zinc. DESIGN Diets of 7474 nonbreastfeeding preschool children in the Continuing Survey of Food Intakes by Individuals (1994-1996 and 1998) were analyzed for the intakes of zinc and other dietary components, and factors associated with zinc intake were examined. RESULTS The mean intakes of zinc by children aged < 1 y, 1-3 y, and 4-5 y were 6.6, 7.6, and 9.1 mg/d, respectively. Less than 1% of children had usual zinc intakes below the adequate intake or estimated average requirement. The percentages of children with intakes exceeding the tolerable upper intake level were 92% (0-6 mo), 86% (7-12 mo), 51% (1-3 y), and 3% (4-5 y). Controlling for age and energy intake, zinc intake was greater in 1998 than in 1994 (P < 0.0001) and was positively associated with participation in the Women, Infants, and Children Program (P < 0.001) and with the lowest income category (P < 0.001). CONCLUSIONS Preschool children in the United States have dietary zinc intakes that exceed the new dietary reference intakes. Zinc intakes increased during the 4 y of the study. The present level of intake does not seem to pose a health problem, but if zinc intake continues to increase because of the greater availability of zinc-fortified foods in the US food supply, the amount of zinc consumed by children may become excessive.
