Utilization of byproducts and waste materials from meat, poultry and fish processing industries: a review

Quantitative proteomic analysis to identify potential biomarkers linked to quality traits of beef tripe from different sources

In this work, the 4D data-independent acquisition (DIA) quantitative strategy was used for differential proteomic analysis of four beef tripe samples from different sources to explore the associations between differentially expressed proteins (DEPs) and meat quality traits. A total of 68 shared DEPs were identified in all comparison groups, which were mainly involved in phosphorylation signaling pathway, peroxisome proliferator-activated receptor (PPAR) signaling pathway, and glucuronic acid pathway. In the correlation analysis between DEPs and quality traits of beef tripe, it was found that 21 proteins were significantly associated with the quality traits in beef tripe, which could be considered as the potential biomarkers of beef tripe quality. This study has successfully uncovered the protein composition of beef tripe for the very first time, which helps to understand the key proteins and biological processes associated with the quality traits of beef tripe from different sources and improve the quality control of beef tripe.

Biowaste to bioenergy nexus: Fostering sustainability and circular economy

Existing fossil-based commercial products present a significant threat to the depletion of global natural resources and the conservation of the natural environment. Also, the ongoing generation of waste is giving rise to challenges in waste management. Conventional practices for the management of waste, for instance, incineration and landfilling, emit gases that contribute to global warming. Additionally, the need for energy is escalating rapidly due to the growing populace and industrialization. To address this escalating desire in a sustainable manner, access to clean and renewable sources of energy is imperative for long-term development of mankind. These interrelated challenges can be effectively tackled through the scientific application of biowaste-to-bioenergy technologies. The current article states an overview of the strategies and current status of these technologies, including anaerobic digestion, transesterification, photobiological hydrogen production, and alcoholic fermentation which are utilized to convert diverse biowastes such as agricultural and forest residues, animal waste, and municipal waste into bioenergy forms like bioelectricity, biodiesel, bio alcohol, and biogas. The successful implementation of these technologies requires the collaborative efforts of government, stakeholders, researchers, and scientists to enhance their practicability and widespread adoption.

Extraction, Physicochemical Properties, and In Vitro Antioxidant Activities of Chondroitin Sulfate from Bovine Nose Cartilage

Beef is an important high-nutrition livestock product, and several byproducts, such as bovine cartilage, are produced during slaughter. To effectively utilize these agricultural and pastoral byproducts, combined (trypsin-papain) enzymolysis and cetylpyridine chloride purification methods were used to obtain chondroitin sulfate (CS) from the nasal cartilage of Shaanxi Yellow cattle. The effects of pH, temperature, and time on the CS yield during enzymatic hydrolysis were investigated, and the CS extraction process was optimized using response surface methodology. The best yield of CS was 21.62% under the optimum conditions of pH 6.51, temperature of 64.53°C, and enzymolysis time of 19.86 h. The molecular weight of CS from Shaanxi cattle nasal cartilage was 89.21 kDa, glucuronic acid content was 31.76 ± 0.72%, protein content was 1.12 ± 0.03%, and sulfate group content was 23.34 ± 0.08%. The nasal cartilage CS of the Yellow cattle showed strong DPPH•, •OH, and ABTS+• radical scavenging abilities and ferrous reduction ability in the experimental concentration range. This study could contribute to "turn waste into treasure" and improve the comprehensive utilization of regional characteristic biological resources.

Development and characterization of camel gelatin films: Influence of camel bone age and glycerol or sorbitol on film properties

This study developed and evaluated camel bone gelatin films (CBGFs) with glycerol or sorbitol as plasticizers. Gelatin extracted from the bones of camels (Camelus dromedarius) at ages ranging from 2.5 to 7 years was used. A comprehensive analysis was conducted, evaluating a range of properties including thickness, moisture sorption capacity, water vapor permeability (WVP), infrared spectral characteristics, light absorption behavior, solubility, as well as mechanical and thermal attributes. This thorough examination allowed for a nuanced understanding of the diverse characteristics exhibited by the camel gelatin samples across different age groups. The results indicated that camel age, glycerol, and sorbitol had a significant impact on the properties of the film (P < 0.05). Tensile strength ranged from 0.32 MPa to 3.99 MPa, while the percentage of elongation at break varied from 89.42 % to 2.68 %. Film color (lightness, L) ranged from 21.39 to 41.33. Glycerol and sorbitol plasticized films were 100 % water soluble. Moisture sorption increased with temperature (25 °C, 35 °C, and 45 °C), with sorbitol films retaining less water. WVP was low in films from old camel bones and high in glycerol-plasticized CBGF-2.5Y and CBGF-4.5Y. Thermal analysis showed a melting temperature between 158.60 °C and 174.10 °C, depending on bone age and plasticizer. These films demonstrate promise for use in food packaging, coatings, and pharmaceutical applications.

Improving Human Diets and Welfare through Using Herbivore-Based Foods: 1. Human and Animal Perspectives

Human health and diet are closely linked. The diversity of diets consumed by humans is remarkable, and most often incorporates both animal and plant-based foods. However, there has been a recent call for a reduced intake of animal-based foods due to concerns associated with human health in developed countries and perceived impacts on the environment. Yet, evidence for the superior nutritional quality of animal-sourced food such as meat, milk, and eggs, compared with plant-based foods, indicates that consumption of animal-sourced food should and will continue. This being the case, the aim here is to examine issues associated with animal-sourced foods in terms of both the quantification and mitigation of unintended consequences associated with environment, animal health, and herd management. Therefore, we examined the role of animal proteins in human societies with reference to the UN-FAO issues associated with animal-sourced foods. The emphasis is on dominant grazed pastoral-based systems, as used in New Zealand and Ireland, both with temperate moist climates and a similar reliance on global markets for generating net wealth from pastoral agricultural products. In conclusion, animal-sourced foods are shown to be an important part of the human diet. Production systems can result in unintended consequences associated with environment, animal health, and herd management, and there are technologies and systems to provide solutions to these that are available or under refinement.

Antioxidant properties of bovine liver protein hydrolysates and their practical application in biphasic systems

BACKGROUND

The influence of protein hydrolysate produced from bovine liver protein hydrolysate (LPH) by enzymatic hydrolysis, using Alcalase/Protamex (1:1), on lipid dispersions was investigated. LPH production was optimized to maximize the antioxidant activity (at 45, 50, and 55 °C for 12, 18, and 24 h). Different concentrations of LPHs (1, 3, and 5 mg/g) were added to emulsions and to liposomes. Lipid oxidation level and particle size of the lipid dispersions were monitored for 14 days of storage at 25 °C.

RESULTS

Radical scavenging activity and reducing power were the highest at 45 °C after 24 h of hydrolysis. Electrophoresis pattern showed that the antioxidant activity was arising from the peptides with molecular weight around 10 kDa. Lipid oxidation occurred more rapidly in samples without LPH during storage. In emulsions, lower thiobarbituric acid-reactive substance and conjugated diene values were measured with increasing concentrations of LPH at day 14. Accordingly, particle size of the samples containing 5 mg/g of LPH was smaller than those of other groups. Phase separation was observed only in lecithin emulsion without LPH at day 14. The use of LPH in liposome limited the lipid oxidation and maintained the size of the particles independently from the concentration.

CONCLUSION

This study highlights the potential applications of animal by-products as natural antioxidants in complex food systems. The results demonstrate that LPH, particularly when hydrolyzed at optimized conditions, can effectively inhibit lipid oxidation. The findings suggest that biphasic systems incorporating LPH have promising prospects for enhancing the stability and quality of food products. © 2023 The Authors. Bioprocess to valorise fleshing produced in the tanning industry

This study focuses on circular bioeconomy and how to reduce the management of solid by-products in tannery facilities. To achieve this, double enzymatic hydrolysis has been developed, which allows the integrated management of both limed and fresh fleshing that are classified as category 3 animal by-products (ABPs). Fleshing has an average content of 15% fat, 20% protein and 65% water. To process these components independently, the fat fraction is separated from the protein and liquid protein fractions. This bioprocess has been developed from fleshing, yielding up to 78% mass recovery as biostimulants that are suitable for formulation and use in the fertiliser market. The efficacy of the protein fraction as a biostimulant was validated through laboratory tests, specifically by cabbage germination, which exhibited a notable improvement by 25%.

Food waste to resource recovery: a way of green advocacy

Due to the massive growth in population and urbanization, there has been a huge increase in the volume of food waste globally. The Food and Agriculture Organization (FAO) has estimated that around one-third of all food produced each year is wasted. Food waste leads to the emission of greenhouse gas and depletion of the soil fertility. Nevertheless, it has immense potential for the recovery of high-value energy, fuel, and other resources. This review summarizes the latest advances in resource recovery from food waste by using technologies that include food waste-mediated microbial fuel cell (MFC) for bioenergy production. In addition to this, utilization of food waste for the production of bioplastic, biogas, bioethanol, and fertilizer has been also discussed in detail. Competitive benefits and accompanying difficulties of these technologies have also been highlighted. Furthermore, future approaches for more efficient use of food waste for the recovery of valuable resources have been also offered from an interdisciplinary perspective.

Quantification and environmental impact of slaughter waste during its life cycle

Considering the lack of an in-depth and comprehensive study on slaughter waste quantification and its management, despite the growing demand for meat this study aims to quantify the slaughter waste generated in Mumbra, Thane, India, from the meat retail stores. The study also endeavors to find the composition of slaughter waste in municipal solid waste by employing the questionnaire survey method. The literature reviewed the published studies on the life cycle analysis of food products for global warming potential values for meat and vegetable products along with the vegetarian and non-vegetarian dietary patterns. In this study, it was observed that 55.93% of the population were non-vegetarian consumers and the composition of slaughter waste was 7% of total municipal solid waste disposed of in disposal sites resulting in greenhouse gas emission of 0.11 Gg CO2 Eq./year. The study presents the implementation of a biomethanation plant as a mitigation measure, along with an evaluation of the theoretical biogas potential and electricity generation capacity derived from slaughter waste, considering it as a potential feedstock. The outcomes of this study also highlight the necessity for further focused research in this specific area, aiming to increase consumer knowledge regarding the environmental impacts of meat-based diets. The finding of this study will help researchers and assists policymakers in facilitating effective management and understanding the scale of the emissions resulting from meat products and slaughter waste and identifying suitable mitigation approaches, and actively contributing to reducing the environmental footprint.

Trends and challenges of fruit by-products utilization: insights into safety, sensory, and benefits of the use for the development of innovative healthy food: a review

A significant portion of the human diet is comprised of fruits, which are consumed globally either raw or after being processed. A huge amount of waste and by-products such as skins, seeds, cores, rags, rinds, pomace, etc. are being generated in our homes and agro-processing industries every day. According to previous statistics, nearly half of the fruits are lost or discarded during the entire processing chain. The concern arises when those wastes and by-products damage the environment and simultaneously cause economic losses. There is a lot of potential in these by-products for reuse in a variety of applications, including the isolation of valuable bioactive ingredients and their application in developing healthy and functional foods. The development of novel techniques for the transformation of these materials into marketable commodities may offer a workable solution to this waste issue while also promoting sustainable economic growth from the bio-economic viewpoint. This approach can manage waste as well as add value to enterprises. The goal of this study is twofold based on this scenario. The first is to present a brief overview of the most significant bioactive substances found in those by-products. The second is to review the current status of their valorization including the trends and techniques, safety assessments, sensory attributes, and challenges. Moreover, specific attention is drawn to the future perspective, and some solutions are discussed in this report.

Sustainable valorization approaches on crustacean wastes for the extraction of chitin, bioactive compounds and their applications - A review

The unscientific disposal of the most abundant crustacean wastes, especially those derived from marine sources, affects both the economy and the environment. Strategic waste collection and management is the need of the hour. Sustainable valorization approaches have played a crucial role in solving those issues as well as generating wealth from waste. The shellfishery wastes are rich in valuable bioactive compounds such as chitin, chitosan, minerals, carotenoids, lipids, and other amino acid derivatives. These value-added components possessed pleiotropic applications in different sectors viz., food, nutraceutical, cosmeceutical, agro-industrial, healthcare, and pharmaceutical sectors. The manuscript covers the recent status, scope of shellfishery management, and different bioactive compounds obtained from crustacean wastes. In addition, both sustainable and conventional routes of valorization approaches were discussed with their merits and demerits along with their combinations. The utilization of nano and microtechnology was also included in the discussion, as they have become prominent research areas in recent years. More importantly, the future perspectives of crustacean waste management and other potential valorization approaches that can be implemented on a large scale.

Nutrient recovery and recycling from fishery waste and by-products

The circular bio-based economy offers great untapped potential for the food industry as possible valuable products and energy can be recovered from food waste. This can promote more sustainable and resilient food systems in Europe in follow-up of the European Commission's Farm to Fork strategy and support the global transition to more sustainable agri-food systems with the common agricultural and fisheries policies. With its high nutrient content, waste and by-products originating from fish and seafood industry (including aquaculture) are one of the most promising candidates to produce alternative fertilising products which can play a crucial role to replace synthetic mineral fertilisers. Whereas several studies highlighted the opportunities to recover valuable compounds from fishery waste, study towards their potential for the production of fertilising products is still scarce. This study presents an extensive overview of the characteristics of fishery waste and by-products (i.e., fish processing waste, fish sludge, seafood waste/by-products), the state-of-the-art nutrient recovery technologies and recovered nutrients as fertilising products from these waste streams. The European Commission has already adopted a revised Fertilising Products Regulation (EU) 2019/1009 providing opportunities for fertilising products from various bio-based origins. In frame of this opportunity, we address the quality and safety aspects of the fishery waste-derived fertilising products under these criteria and highlight possible obstacles on their way to the market in the future. Considering its high nutrient content and vast abundance, fish sludge has a great potential but should be treated/refined before being applied to soil. In addition to the parameters currently regulated, it is crucial to consider the salinity levels of such fertilising products as well as the possible presence of other micropollutants especially microplastics to warrant their safe use in agriculture. The agronomic performance of fishery waste-derived fertilisers is also compiled and reported in the last section of this review paper, which in most cases perform equally to that of conventional synthetic fertilisers.

Designing Nutrition for Health-Incorporating Dietary By-Products into Poultry Feeds to Create Functional Foods with Insights into Health Benefits, Risks, Bioactive Compounds, Food Component Functionality and Safety Regulations

This review delves into the concept of nutrition by design, exploring the relationship between poultry production, the utilization of dietary by-products to create functional foods, and their impact on human health. Functional foods are defined as products that extend beyond their basic nutritional value, offering potential benefits in disease prevention and management. Various methods, including extraction, fermentation, enrichment, biotechnology, and nanotechnology, are employed to obtain bioactive compounds for these functional foods. This review also examines the innovative approach of enhancing livestock diets to create functional foods through animal-based methods. Bioactive compounds found in these functional foods, such as essential fatty acids, antioxidants, carotenoids, minerals, vitamins, and bioactive peptides, are highlighted for their potential in promoting well-being and mitigating chronic diseases. Additionally, the review explores the functionality of food components within these products, emphasizing the critical roles of bioaccessibility, bioactivity, and bioavailability in promoting health. The importance of considering key aspects in the design of enhanced poultry diets for functional food production is thoroughly reviewed. The safety of these foods through the establishment of regulations and guidelines was reviewed. It is concluded that the integration of nutrition by design principles empowers individuals to make informed choices that can prioritize their health and well-being. By incorporating functional foods rich in bioactive compounds, consumers can proactively take steps to prevent and manage health issues, ultimately contributing to a healthier society and lifestyle.

The relative benefits for environmental sustainability of vegan diets for dogs, cats and people

Environmental impacts of the livestock sector are proportional to consumption levels. To assess the relative consumption of livestock animals within the diets of dogs, cats and people, this study examined their dietary energy needs within the US in 2020, and globally in 2018. Also studied were US pet food ingredients, and environmental sustainability indicators for plant- and animal-based foods consumed globally. Relative consumptions of average livestock animals were: US: dogs- 17.7%, cats- 2.3%, humans- 80.0%; and globally: dogs- 7.7%, cats- 1.2%, humans- 91.1%. Full transition to nutritionally-sound vegan diets would spare from slaughter the following numbers of terrestrial livestock animals annually (billions): US: dogs- 1.7, cats- 0.2, humans- 7.8, and globally: dogs- 6.0, cats- 0.9, humans- 71.3, as well as billions of aquatic animals in all dietary groups. Very large impact reductions were also associated with land and water use, emissions of greenhouse gases (GHGs), acidifying and eutrophifying gases, and biocide use, in all dietary groups. If implemented globally, nutritionally-sound vegan diets would free up land larger than the following nations: dogs-Saudi Arabia or Mexico, cats-Japan or Germany, humans-Russia-the world's largest country-combined with India. Such diets would save freshwater volumes greater than all renewable freshwater in the following nations: dogs-Denmark, cats-Jordan, humans-Cuba. Such diets would reduce GHGs by amounts greater than all GHG emissions from following nations: dogs-South Africa or the UK, cats-Israel or New Zealand, humans-India or the entire EU. The numbers of additional people who could be fed using food energy savings associated with vegan diets exceeded the 2018 human populations of the following nations: dogs-the entire European Union, cats-France or the UK, humans-every single nation or collective region on Earth, as defined by the World Bank. All of these estimates are conservative.

A review on bioactive peptides derived from meat and by-products: Extraction methods, biological activities, applications and limitations

Meat and its by-products offer a rich source of bioactive compounds which have potential applications in both the food and pharmaceutical industries. In this review, we present several extraction methods and report the identification and properties of bioactive peptides. We also examine the challenges and limitations associated with their use in food applications. Enzymatic hydrolysis and fermentation using starts cultures are common methods for generating bioactive peptides from meat proteins. Additionally, natural gastrointestinal digestion can also produce bioactive peptides. However, emerging technologies like high hydrostatic pressure, subcritical extraction and pulsed electric fields can improve hydrolysis and increase the yield of bioactive peptides. Online bioinformatics applications have emerged as an established method for identifying potentially bioactive peptides. These tools reduce the cost and time required for traditional methods of research. Finally, incorporating bioactive peptides into diets for specific purposes such as supporting vulnerable populations like children and the elderly ensures safety and efficacy.

Characterization of By-products with High Fat Content Derived from the Production of Bovine Gelatin

Background: Gelatin is a protein obtained by partial hydrolysis of collagen contained in skins, connective tissue and/or animal bones, which are by-products of the meat industry. The main raw material to produce bovine gelatin is the dermis of the skin, but there is a variation in fat and moisture content depending on the bovine skin origin. As a contribution to the circular economy and sustainability, these by-products with high fat content and the fat released from them during the gelatin production process can be managed for food industries, mainly in the development or formulation of animal feed. Methods: For the initial physicochemical characterization, moisture, fat, protein and ashes content were determined. Once the by-products with high fat content were identified, alteration parameters such as acidity, peroxide and saponification indexes were evaluated. Additionally, thermal, rheological and fatty acid composition characterization was carried out in order to study the possible applications of the by-products. Results and Discussion: The results showed that certain by-products have a fat content of less than 15%, so the viability of their use is limited. On the other hand, some by-products have a fat content exceeding 30%; however, their extraction can only be done manually, resulting in a low efficiency process. By-products removed from the supernatant in the extractors presented fat percentages of 99.9 and 98.9%, and there exists the possibility of implementing a mechanical method for their extraction. The analysis of alteration and oxidation parameters, thermal and rheological characterization, fatty acid profile and solid fat content were exclusively conducted on these high-fat content by-products. Based on the characterization, these by-products could be valued and incorporated into animal feed formulations. Nevertheless, certain limitations exist for their use in applications such as biodiesel production or the food industry.

Hyaluronic Acid-Extraction Methods, Sources and Applications

In this review, a compilation of articles in databases on the extraction methods and applications of hyaluronic acid (HA) was carried out. HA is a highly hydrated component of different tissues, including connective, epithelial, and neural. It is an anionic, linear glycosaminoglycan (GAG) primarily found in the native extracellular matrix (ECM) of soft connective tissues. Included in the review were studies on the extraction methods (chemical, enzymatical, combined) of HA, describing advantages and disadvantages as well as news methods of extraction. The applications of HA in food are addressed, including oral supplementation, biomaterials, medical research, and pharmaceutical and cosmetic industry applications. Subsequently, we included a section related to the structure and penetration routes of the skin, with emphasis on the benefits of systems for transdermal drug delivery nanocarriers as promoters of percutaneous absorption. Finally, the future trends on the applications of HA were included. This final section contains the effects before, during, and after the application of HA-based products.

N-dihydrogalactochitosan reduces mortality in a lethal mouse model of SARS-CoV-2

The rapid emergence and global dissemination of SARS-CoV-2 that causes COVID-19 continues to cause an unprecedented global health burden resulting in nearly 7 million deaths. While multiple vaccine countermeasures have been approved for emergency use, additional treatments are still needed due to sluggish vaccine rollout, vaccine hesitancy, and inefficient vaccine-mediated protection. Immunoadjuvant compounds delivered intranasally can guide non-specific innate immune responses during the critical early stages of viral replication, reducing morbidity and mortality. N-dihydrogalactochitosan (GC) is a novel mucoadhesive immunostimulatory polymer of β-0-4-linked N-acetylglucosamine that is solubilized by the conjugation of galactose glycans with current applications as a cancer immunotherapeutic. We tested GC as a potential countermeasure for COVID-19. GC was well-tolerated and did not produce histopathologic lesions in the mouse lung. GC administered intranasally before and after SARS-CoV-2 exposure diminished morbidity and mortality in humanized ACE2 receptor expressing mice by up to 75% and reduced infectious virus levels in the upper airway. Fluorescent labeling of GC shows that it is confined to the lumen or superficial mucosa of the nasal cavity, without involvement of adjacent or deeper tissues. Our findings demonstrate a new application for soluble immunoadjuvants such as GC for preventing disease associated with SARS-CoV-2 and may be particularly attractive to persons who are needle-averse.

Plants, animals, and fisheries waste-mediated bioremediation of contaminants of environmental and emerging concern (CEECs)-a circular bioresource utilization approach

The release of contaminants of environmental concern including heavy metals and metalloids, and contaminants of emerging concern including organic micropollutants from processing industries, pharmaceuticals, personal care, and anthropogenic sources, is a growing threat worldwide. Mitigating inorganic and organic contaminants, which can be coined as contaminants of environmental and emerging concern (CEECs), is a big challenge as traditional physicochemical processes are not economically viable for managing mixed contaminants of low concentrations. As a result, low-cost materials must be designed to provide high CEEC removal efficiency. One of the environmentally viable and energy-efficient approaches is biosorption, which involves using biomass or biopolymers isolated from plants or animals to decontaminate heavy metals in contaminated environments using inherent biological mechanisms. Among chemical constituents in plant biomass, cellulose, lignin, hemicellulose, proteins, polysaccharides, phenolic compounds, and animal biomass include polysaccharides and other compounds to bind heavy metals covalently and non-covalently. These functional groups include carboxyl, hydroxyl, carbonyl, amide, amine, and sulfhydryl. Cation-exchange capacities of these bioadsorbents can be improved by applying chemical modifications. The relevance of chemical constituents and bioactives in biosorbents derived from agricultural production such as food and fodder crops, bioenergy and cash crops, fruit and vegetable crops, medicinal and aromatic plants, plantation trees, aquatic and terrestrial weeds, and animal production such as dairy, goatery, poultry, duckery, and fisheries is highlighted in this comprehensive review for sequestering and bioremediation of CEECs, including as many as ten different heavy metals and metalloids co-contaminated with other organic micropollutants in circular bioresource utilization and one-health concepts.

Diverse uses of valuable seafood processing industry waste for sustainability: a review

Seafoods are rich in untapped bioactive compounds that have the potential to provide novel ingredients for the development of commercial functional foods and pharmaceuticals. Unfortunately, a large portion of waste or discards is generated in commercial processing setups (50-80%), which is wasted or underutilized. These by-products are a rich source of novel and valuable biomolecules, including bioactive peptides, collagen and gelatin, oligosaccharides, fatty acids, enzymes, calcium, water-soluble minerals, vitamins, carotenoids, chitin, chitosan and biopolymers. These fish components may be used in the food, cosmetic, pharmaceutical, environmental, biomedical and other industries. Furthermore, they provide a viable source for the production of biofuels. As a result, the current review emphasizes the importance of effective by-product and discard reduction techniques that can provide practical and profitable solutions. Recognizing this, many initiatives have been initiated to effectively use them and generate income for the long-term sustainability of the environment and economic framework of the processing industry. This comprehensive review summarizes the current state of the art in the sustainable valorisation of seafood by-products for human consumption. The review can generate a better understanding of the techniques for seafood waste valorisation to accelerate the sector while providing significant benefits.

Extraction of dermatan sulfate using ionic liquid-assisted enzymatic digestion: An efficient approach

Dermatan sulfate is one of the major glycosaminoglycan (GAG) present in the animal hides, which is a waste/byproduct from meat industry. Efficient utilization of these meat industry wastes is garnering attention because these wastes render a possibility for their conversion into useful products. With the increased concerns over health, various initiatives have been developed to permit more efficient utilization of these by-products and thereby directly impacting environmental sustainability. Herein, we demonstrate for the first time an efficient and environmentally safe ionic liquid-assisted enzymatic process for the extraction of dermatan sulfate from buffalo hides. Dermatan sulfate has been extracted, separated, and purified from the GAG mixture using IL-assisted enzymatic digestions and chromatographic separations. NMR, FT-IR, and ESI-MS measurements showed typical characteristic peaks for dermatan sulfate. The advantages of this eco-friendly process adopted include i) use of fewer chemicals, ii) elimination of harsh chemicals, iii) elimination of various steps and sub-steps, iv) reduction in process time (12 h), and v) increase in extraction yield by 75% when compared to conventional enzymatic process (57%). Thus, the use of ionic liquids alongside enzymes will serve as an efficient methodology for the futuristic development of these derived GAGs for their potential applications.

Enhancing sustainability through resource efficiency in beef production systems using a sliding time window-based approach and frame scores

The food needs of the increasing global population, inefficiencies in supply chains, customer expectations and environmental concerns are the challenges to meeting resource-intensive protein needs sustainably. Collectively, this increases the need to enhance sustainability in the beef sector. This study proposes a sliding time-window-based multi-period livestock production model using mixed-integer linear programming (MILP) to simultaneously balance economic and environmental losses. It identifies the optimal finishing time using frame score (FS) and feed conversion ratio (FCR), targeting flexibility by allowing variable growth periods to reduce food/nutritional losses while meeting the variability in demands with minimum inventory levels. Furthermore, sequencing and assigning animals to facilities with optimum separation time is applied to avoid bad handling of animals and ensure quality meat with hygienic standards for longer shelf life. The system boundary of the proposed model includes beef farms and processing facilities. Compared to the recently proposed batch processing models over seven months with a herd size of 1980 animals, the findings reduce the average forage needed by ∼126.90 kips and methane emissions by ∼2560 kg, with a significant benefit in terms of the live animals' weight gain by ∼10,276 lbs.

Toward the high-efficient utilization of poultry blood: Insights into functionality, bioactivity and functional components

A large amount of poultry blood is annually generated, and currently underutilized or largely disposed of as waste, resulting in environmental pollution and waste of protein resources. As one of the main by-products during the poultry slaughter process, the produced poultry blood can serve as a promising food ingredient due to its excellent functional properties and abundant source of essential amino acids, bioactive peptides and functional components. This work provides a comprehensive summary of recent research progress in the composition, functional and bioactive properties, as well as the functional components of poultry blood. Furthermore, the main preparation methods of poultry blood-derived peptides and their bioactivities were reviewed. In addition, their potential applications in the food industry were discussed. Overall, poultry blood is characterized by excellent functionalities, including solubility, gelation, foaming, and emulsifying properties. The major preparation methods for poultry blood-derived peptides include enzymatic hydrolysis, ultrasound-assisted enzymatic methods, macroporous adsorbent resins, and subcritical water hydrolysis. Poultry blood-derived peptides exhibit diverse bioactivities. Their metallic off-flavors and bitterness can be improved by exopeptidase treatment, Maillard reaction, and plastein reaction. In addition, poultry blood is also abundant in functional components such as hemoglobin, superoxide dismutase, immunoglobulin, and thrombin.

The combined effects of binder addition and different sintering methods on the mechanical properties of bovine hydroxyapatite

Hydroxyapatite (HA) from bovine bones has been used as a biomaterial in dentistry due to its biocompatibility and bioactivity. However, dense HA bioceramics still present inadequate properties for applications that require high mechanical performance, such as infrastructure. Microstructural reinforcements and control of ceramic processing steps are methods to improve these shortcomings. The present study assessed the effects of polyvinyl butyral (PVB) addition in combination with two sintering methodologies (2-step and conventional), on the mechanical properties of polycrystalline bovine HA bioceramics. The samples were divided into four groups (with 15 samples per group): conventional sintering with binder (HBC) and without binder (HWC) and 2-step sintering with (HB2) and without binder (HW2). HA was extracted from bovine bones, turned into nanoparticles in a ball mill, and subjected to uniaxial and isostatic pressing into discs, according to ISO 6872 standards. All groups were characterized by x-ray diffractometry (XRD), differential thermal analysis (DTA) and Fourier transform infrared spectroscopy (FTIR), scanning electron microscopy (SEM), and relative density. Besides, mechanical analyses (biaxial flexural strength (BFS) and modulus of elasticity) were also performed. The characterization results demonstrated that adding agglutinants or the sintering method did not affect HA's chemical and structural characteristics. Even so, the HWC group showed the highest mechanical values for BFS and modulus of elasticity being 109.0 (98.0; 117.0) MPa and 105.17 ± 14.65 GPa, respectively. The HA ceramics submitted to conventional sintering and without the addition of binders achieved better mechanical properties than the other groups. The impacts of each variable were discussed and correlated to the final microstructures and mechanical properties.

Chicken skin based Milli Watt range biocompatible triboelectric nanogenerator for biomechanical energy harvesting

This work reports a high-performance, low-cost, biocompatible triboelectric nanogenerator (TENG) using chicken skin (CS). The device is suitable to power wearable devices, which is critical to adapt electronics in monitoring, predicting, and treating people. It also supports sustainability by providing a cost-effective way to reduce the poultry industry's waste. It has been shown here that CS-derived biowaste is an effective means of generating tribopositive material for TENGs. The CS contains amino acid functional groups based on (Glycine, Proline, and Hydroxyproline), which are essential to demonstrate the electron-donating ability of collagen. The skin was cut into 3 × 3 cm2 and used as the raw material for fabricating the TENG device with a stacking sequence of Al/Kapton/spacing/CS/Al. The chicken skin-based TENG (CS-TENG) is characterized at different frequencies (4-14 HZ) using a damping system. The CS-TENG produces an open-circuit voltage of 123 V, short-circuit current of 20 µA and 0.2 mW/cm2 of a power density at 20 MΩ. The biocompatible CS-TENG presents ultra-robust and stable endurance performance with more than 52,000 cycles. The CS-TENG is impressively capable of scavenging energy to light up to 55 commercial light-emitting diodes (LEDs), a calculator, and to measure the physiological motions of the human body. CS-TENG is a step toward sustainable, battery-less devices or augmented energy sources, especially when using traditional power sources, such as in wearable devices, remote locations, or mobile applications is not practical or cost-effective.

Microflora, Contents of Polyamines, Biogenic Amines, and TVB-N in Bovine Offal and Game Meat for the Raw-Feeding of Adult Dogs

Microflora and contents of biogenic amines/polyamines and total volatile basic nitrogen (TVB-N) in 99 samples of bovine offal (red offal, n = 41 and other offal and mixes, n = 45) and wild game meat (n = 13) for raw meat-based diets (RMBD) for dogs were analyzed. Samples were bought in 11 local pet food shops and in one game-handling establishment in Austria (Lower Austria, Styria, and Vienna) in September and October 2022. Median contents (first and third quartiles in brackets) of cadaverine, histamine, tyramine, spermidine, and spermine were 20.7 [16.7; 28.6]; 25.4 [17.1; 47.2]; 18.9 [13.6; 38.9]; 15.2 [11.2; 21.2]; and 41.9 [<limit of detection; 64.5] mg/kg wet weight, respectively. The sum of putrescine + cadaverine + histamine + tyramine was >50 mg/kg in 85.9% of samples, indicating the use of low-quality ingredients or inappropriate storage conditions. However, only 10.1% of samples were determined to be not compliant with a maximum amine content proposed for pet food. Median contents of the total aerobic bacteria counts (TACs), Pseudomonas, and Enterobacteriaceae were 7.4 [6.4; 8.0]; 6.5 [5.5; 7.7]; and 4.8 [3.9; 5.6] log CFU/g, respectively, with significantly lower counts in red offal RMBD (p < 0.05). TVB-N exceeded 150 mg/kg in 87.9% of samples. The TACs and Enterobacteriaceae numbers in red offal RMBD were comparable to those in food-grade red offal after 6 days of aerobic storage at 7 °C, i.e., temperatures higher than required for food-grade offal, but acceptable for animal by-products intended for RMBD production. In 80.8% of samples, numbers of Enterobacteriaceae exceeded the EU legal limit. From 12 of these samples, Salmonellae was able to be isolated, with counts from 0.03 MPN/g to 110 MPN/g. Salmonella enterica ser. Montevideo (n = 3), and S. enterica ser. Give and S. enterica ssp. Diarizonae (n = 2 each) were the most frequently isolated, while Listeria monocytogenes was rarely recovered (2%). Whilst exposure of humans handling such pet food can be reduced by hygiene precautions, the risk remains that dogs can acquire a feed-borne salmonellosis and shed the pathogen.

Effects of undesired substances and their bioaccumulation on the black soldier fly larvae, Hermetia illucens (Diptera: Stratiomyidae)-a literature review

Black soldier fly (BSF), Hermetia illucens (L.) (Diptera: Stratiomyidae), is predominantly reared on organic wastes and other unused complementary substrates. However, BSF may have a buildup of undesired substances in their body. The contamination of undesired substance, e.g., heavy metals, mycotoxins, and pesticides, in BSF mainly occurred during the feeding process in the larval stage. Yet, the pattern of accumulated contaminants in the bodies of BSF larvae (BSFL) is varied distinctively depending on the diets as well as the contaminant types and concentrations. Heavy metals, including cadmium, copper, arsenic, and lead, were reported to have accumulated in BSFL. In most cases, the cadmium, arsenic, and lead concentration in BSFL exceeded the recommended standard for heavy metals occurring in feed and food. Following the results concerning the accumulation of the undesired substance in BSFL's body, they did not affect the biological parameters of BSFL, unless the amounts of heavy metals in their diets are highly exceeding their thresholds. Meanwhile, a study on the fate of pesticides and mycotoxins in BSFL indicates that no bioaccumulation was detected for any of the target substances. In addition, dioxins, PCBs, PAHs, and pharmaceuticals did not accumulate in BSFL in the few existing studies. However, future studies are needed to assess the long-term effects of the aforementioned undesired substances on the demographic traits of BSF and to develop appropriate waste management technology. Since the end products of BSFL that are contaminated pose a threat to both human and animal health, their nutrition and production process must be well managed to create end products with a low contamination level to achieve a closed food cycle of BSF as animal feed.

Determination of Coenzyme Q10 Content in Food By-Products and Waste by High-Performance Liquid Chromatography Coupled with Diode Array Detection

Coenzyme Q10 (CoQ10) is a vitamin-like compound found naturally in plant- and animal-derived materials. This study aimed to determine the level of CoQ10 in some food by-products (oil press cakes) and waste (fish meat and chicken hearts) to recover this compound for further use as a dietary supplement. The analytical method involved ultrasonic extraction using 2-propanol, followed by high-performance liquid chromatography with diode array detection (HPLC-DAD). The HPLC-DAD method was validated in terms of linearity and measuring range, limits of detection (LOD) and quantification (LOQ), trueness, and precision. As a result, the calibration curve of CoQ10 was linear over the concentration range of 1-200 µg/mL, with an LOD of 22 µg/mL and an LOQ of 0.65 µg/mL. The CoQ10 content varied from not detected in the hempseed press cake and the fish meat to 84.80 µg/g in the pumpkin press cake and 383.25 µg/g in the lyophilized chicken hearts; very good recovery rates and relative standard deviations (RSDs) were obtained for the pumpkin press cake (100.9-116.0% with RSDs between 0.05-0.2%) and the chicken hearts (99.3-106.9% CH with RSDs between 0.5-0.7%), showing the analytical method's trueness and precision and thus its accuracy. In conclusion, a simple and reliable method for determining CoQ10 levels has been developed here.

Effects of ultrasound on the structural and functional properties of sheep bone collagen

The study evaluated the effect of an ultrasound-assisted treatment on the structural and functional properties of sheep bone collagen (SBC). The type and distribution of SBC were analyzed by proteome (shotgun) technology combined with liquid chromatography-tandem mass spectrometry. Compared with pepsin extraction, the ultrasound-assisted treatment significantly increased the collagen extraction rate by 17.4 pp (P < 0.05). The characteristic functional groups and structural integrity of collagen extracted by both methods were determined via Fourier transform infrared spectroscopy, ultraviolet absorption spectroscopy, and fluorescence spectroscopy. Circular dichroism spectra revealed that the ultrasound-assisted pretreatment reduced α-helix content by 1.6 pp, β-sheet content by 21.9 pp, and random coils content by 28.4 pp, whereas it increased β-turn content by 51.9 pp (P < 0.05), compared with pepsin extraction. Moreover, ultrasound-assisted treatment collagen had superior functional properties (e.g., solubility, water absorption, and oil absorption capacity) and foaming and emulsion properties, compared with pepsin extraction. Furthermore, the relative content of type I collagen in ultrasound-assisted extracted SBC was highest at 79.66%; only small proportions of type II, VI, X, and XI collagen were present. Peptide activity analysis showed that SBC had potential antioxidant activity, dipeptidyl peptidase 4 inhibitory activity, and angiotensin-converting enzyme inhibitory activity; it also had anticancer, antihypertensive, anti-inflammatory, and immunomodulatory effects.

Value Addition Employing Waste Bio-Materials in Environmental Remedies and Food Sector

Overall, combating food waste necessitates a multifaceted approach that includes education, infrastructure, and policy change. By working together to implement these strategies, we can help reduce the negative impacts of food waste and create a more sustainable and equitable food system. The sustained supply of nutrient-rich agrifood commodities is seriously threatened by inefficiencies caused by agricultural losses, which must be addressed. As per the statistical data given by the Food and Agriculture Organisation (FAO) of the United Nations, nearly 33.33% of the food that is produced for utilization is wasted and frittered away on a global level, which can be estimated as a loss of 1.3 billion metric tons per annum, which includes 30% cereals, 20% dairy products 35% seafood and fish, 45% fruits and vegetables, and 20% of meat. This review summarizes the various types of waste originating from various segments of the food industry, such as fruits and vegetables, dairy, marine, and brewery, also focusing on their potential for developing commercially available value-added products such as bioplastics, bio-fertilizers, food additives, antioxidants, antibiotics, biochar, organic acids, and enzymes. The paramount highlights include food waste valorization, which is a sustainable yet profitable alternative to waste management, and harnessing Machine Learning and Artificial Intelligence technology to minimize food waste. Detail of sustainability and feasibility of food waste-derived metabolic chemical compounds, along with the market outlook and recycling of food wastes, have been elucidated in this review.

Targeted Modulation of Chicken Genes In Vitro Using CRISPRa and CRISPRi Toolkit

Engineering of clustered regularly interspaced short palindromic repeats (CRISPR) and the CRISPR-associated protein 9 (Cas9) system has enabled versatile applications of CRISPR beyond targeted DNA cleavage. Combination of nuclease-deactivated Cas9 (dCas9) and transcriptional effector domains allows activation (CRISPRa) or repression (CRISPRi) of target loci. To demonstrate the effectiveness of the CRISPR-mediated transcriptional regulation in chickens, three CRISPRa (VP64, VPR, and p300) and three CRISPRi (dCas9, dCas9-KRAB, and dCas9-KRAB-MeCP2) systems were tested in chicken DF-1 cells. By introducing guide RNAs (gRNAs) targeting near the transcription start site (TSS) of each gene in CRISPRa and CRISPRi effector domain-expressing chicken DF-1 cell lines, significant gene upregulation was induced in dCas9-VPR and dCas9-VP64 cells, while significant downregulation was observed with dCas9 and dCas9-KRAB. We further investigated the effect of gRNA positions across TSS and discovered that the location of gRNA is an important factor for targeted gene regulation. RNA sequencing analysis of IRF7 CRISPRa and CRISPRi- DF-1 cells revealed the specificity of CRISPRa and CRISPRi-based targeted transcriptional regulation with minimal off-target effects. These findings suggest that the CRISPRa and CRISPRi toolkits are an effective and adaptable platform for studying the chicken genome by targeted transcriptional modulation.

Factors Influencing Consumers' Willingness-to-Try Seafood Byproducts

With increasing global demand for seafood, seafood byproducts (SB) utilization can contribute to a more sustainable food supply chain through waste-to-value food product development. However, consumer perceptions of SB (e.g., fish skin and bones) are underexplored. Therefore, this study aims to evaluate some factors influencing consumers' willingness-to-try seafood byproducts. An online survey was conducted in the USA regarding intervention of SB informational cues with N = 904 adult seafood consumers internationally. The proportion of consumers willing to try SB increased significantly (McNemar's test, α = 0.05) from 47% to 68% after SB safety and health claims had been presented in the questionnaire. Gender, race, SB knowledge, and previous SB consumption were significant predictors of trial intent (based on logistic regression), as were emotional baseline scores during the COVID-19 pandemic. Males were more open to SB consumption than females, and racial identity was associated with differential responsiveness to SB information. Higher levels of "bored" and "unsafe" feelings, and lower levels of "free" were associated with increased SB trial intent. Potential SB consumers identified fish products (82% willingness-to-try); seasoning mix, sauces, and dressing (71% willingness-to-try); and soup and gravy products (62% willingness-to-try) as most appropriate for SB incorporation. Predominant reasons for SB avoidance were concerns about sensory quality, safety, and nutrition. These consumer-driven data could guide SB product development concepts to encourage trial and overcome aversions through new consumption experience.

Valorization of Food Waste to Produce Value-Added Products Based on Its Bioactive Compounds

The rapid growth of the global population and changes in lifestyle have led to a significant increase in food waste from various industrial, agricultural, and household sources. Nearly one-third of the food produced annually is wasted, resulting in severe resource depletion. Food waste contains rich organic matter, which, if not managed properly, can pose a serious threat to the environment and human health, making the proper disposal of food waste an urgent global issue. However, various types of food waste, such as waste from fruit, vegetables, grains, and other food production and processing, contain important bioactive compounds, such as polyphenols, dietary fiber, proteins, lipids, vitamins, organic acids, and minerals, some of which are found in greater quantities in the discarded parts than in the parts accepted by the market. These bioactive compounds offer the potential to convert food waste into value-added products, and fields including nutritional foods, bioplastics, bioenergy, biosurfactants, biofertilizers, and single cell proteins have welcomed food waste as a novel source. This review reveals the latest insights into the various sources of food waste and the potential of utilizing bioactive compounds to convert it into value-added products, thus enhancing people’s confidence in better utilizing and managing food waste.

Turning Food Protein Waste into Sustainable Technologies

For each kilogram of food protein wasted, between 15 and 750 kg of CO₂ end up in the atmosphere. With this alarming carbon footprint, food protein waste not only contributes to climate change but also significantly impacts other environmental boundaries, such as nitrogen and phosphorus cycles, global freshwater use, change in land composition, chemical pollution, and biodiversity loss. This contrasts sharply with both the high nutritional value of proteins, as well as their unique chemical and physical versatility, which enable their use in new materials and innovative technologies. In this review, we discuss how food protein waste can be efficiently valorized not only by reintroduction into the food chain supply but also as a template for the development of sustainable technologies by allowing it to exit the food-value chain, thus alleviating some of the most urgent global challenges. We showcase three technologies of immediate significance and environmental impact: biodegradable plastics, water purification, and renewable energy. We discuss, by carefully reviewing the current state of the art, how proteins extracted from food waste can be valorized into key players to facilitate these technologies. We furthermore support analysis of the extant literature by original life cycle assessment (LCA) examples run ad hoc on both plant and animal waste proteins in the context of the technologies considered, and against realistic benchmarks, to quantitatively demonstrate their efficacy and potential. We finally conclude the review with an outlook on how such a comprehensive management of food protein waste is anticipated to transform its carbon footprint from positive to negative and, more generally, have a favorable impact on several other important planetary boundaries.

Understanding fish waste management using bibliometric analysis: A supply chain perspective

Food loss and waste have become an issue of global significance, considering their concurrent effects on the socioeconomic and environmental facet of society. Despite this domain gaining prolific attention recently, issues hampering the effective utilization of residues from fish processing usually go unidentified in developing economies such as India. This occurs mainly owing to fragmented supply chains, inappropriate handling, discontinuous cold chains, inadequate temperature monitoring and so on, affecting quality and causing underuse. Any researcher trying to understand the prospects of utilizing these fish processing co-streams in a developing economy with the vision of improving consumption, economic sustainability, reducing discards and promoting circularity faces a lacuna. The authors address this demand in research by identifying the validity of this domain both in the global and native research community by conducting a detailed review using bibliometric analysis and content analysis. Data from Scopus with 717 documents, comprising 612 research articles from 78 countries, 1597 organizations and 2587 authors, are analysed. Results signify (i) developing a focus on hydroxyapatite production, bio-methane generation, transesterification processes, biomass and the rest raw material generated from fish processing, and (ii) reduced research on supply chain-related aspects despite their considerable importance. To comprehend this deficiency, especially in the Indian stance, barriers hindering the utilization of generated by-products are identified, and recommendations for improvements are proposed. The results will provide the struts for a circular and sustainable supply chain for processed seafood in developing economies.

Optimization of ectoine production from Nesterenkonia xinjiangensis and one-step ectoine purification

In the current study, the optimization of ectoine production byNesterenkonia xinjiangensisand purification of ectoine from the bacterial cell extract were performed for the first time. Various carbon sources (glucose, sucrose, maltose, lactose, mannitol, and xylose) and nitrogen sources (ammonium nitrate, ammonium phosphate, ammonium chloride, ammonium oxalate, ammonium sulphate, and ammonium acetate), were used to optimize ectoine production. Subsequently, the effects of salt, pH and, concentrations of carbon and nitrogen source on ectoine production were optimized by response surface methodology (RSM). Ultimately, high pure (over 99%) and yield (98%) of ectoine from bacterial cells extracted was obtained by a single-step process using cation exchange chromatography. This study provides information that higher ectoine production can be achieved from this bacterial isolate by optimizing the factors influencing ectoine production and thus can be used as a new and alternative ectoine producer.

Global contributions of milk to nutrient supplies and greenhouse gas emissions

Globally, ruminant production systems used to synthesize meat and milk differ tremendously in terms of their efficiency, productivity, and environmental impacts. Regardless of this variability, milk has been repeatedly identified as an essential source of nutrients for humans. The objective of this work was to characterize global contributions of fluid milk to human food and nutrient supplies, greenhouse gas emissions, and water withdrawal. Data were leveraged from the United Nations Food and Agriculture Organization to estimate global supplies of agricultural products. Trade of agricultural products and waste of those products, along with use of human food for livestock feed were accounted for before estimating human nutrient supplies. The contributions of milk to human-edible nutrient supplies were then enumerated in terms of their proportion of total nutrients supplied by the agricultural system and in terms of the human population's requirement for that nutrient. We identified that fluid milk provides over 10% of consumable supplies of vitamin B₁₂, vitamin A, riboflavin, and calcium available for humans globally. In terms of human nutrient requirements, milk provides sufficient vitamin B₁₂ to meet the needs of over 60% of the global population, riboflavin to satisfy 50% of the population, and calcium and phosphorus for over 35% of the population. Compared with other foods, milk ranked among the highest in terms of nutrient-to-calorie ratio for numerous amino acids, phosphorus, calcium, and riboflavin. Conditional dependencies were identified between greenhouse gas emissions and ruminant milk and meat, but not between water withdrawal and milk production. When evaluating the trade-offs in nutrient use versus nutrient provision for producing milk or producing all ruminant products, the production of ruminants worldwide was associated with both net increases and net decreases of several key nutrients. Continued work focusing on strategies to reduce the environmental impact of milk production will improve the utility of milk for feeding the growing global population.

A novel kinetic model for a cocoa waste fermentation to ethanol reaction and its experimental validation

A non-segregated kinetic model is proposed to describe a fermentation process of agro-industrial residues derived via cocoa (mucilage juice) by Pichia kudriavzevii. The novel proposed hybrid model is based on a multiple coupling reaction mechanisms (structured) to describe the kinetics of substrate consumption, biomass, carbon dioxide, and ethanol, coupled to an unstructured model for the activity enzyme. The parameters of the kinetic model are estimated by non-linear least-squares curve fitting using the Marquardt-Levenberg algorithm. In addition, numerical simulations were compared with the experimental data via residual graphs. The effectiveness of the model was statistically evaluated using dimensionless efficiency coefficients under different initial conditions. A global sensitivity analysis was applied (Fisher's information matrix). The experimental results of the batch reactor showed a maximum ethanol concentration of 29 g/L, with a yield of 0.48 g-ethanol/g-glucose and a productivity of 0.30 g/L h. The method determined that the cell formation coefficient and the specific substrate consumption rate (θ1 and θ2) directly influence most of the states of our system. The proposed scheme is particularly suitable to assist in the rational design of cell factory properties or fermentation processes because it can represent the complex biochemistry in more detail and under different initial experimental conditions; the above reveals that the generated model is robust and can be considered for control and optimization purposes.

A critical review on slaughterhouse waste management and framing sustainable practices in managing slaughterhouse waste in India

Global meat consumption is on a rise with around 253 million metric tons of meat produced globally in the year 2020. Because of the rise in population and change in food preferences, meat consumption trend is likely to continue. Meat production by animal slaughtering increases the slaughterhouse wastes in the form of both solid and liquid wastes. Although various technologies for slaughterhouse waste management are available in developed countries, the effective utilization of slaughterhouse waste management is still missing in developing countries like India. India plays an active role in the meat export business globally and stood 2nd in the world with a total export valuation of 2.89 billion US $ in the year 2020. In this context, this study presents a critical overview of the current technological advancements in the global slaughterhouse waste management including utilization of by-products and further, the prevailing slaughterhouse waste management of India is discussed. Finally, a sustainable slaughterhouse waste management strategy emphasizing circular economy and regulations improvements have been suggested for India to compete in this sector at global scale.

Renovation of Agro-Waste for Sustainable Food Packaging: A Review

Waste management in the agricultural sector has become a major concern. Increased food production to satisfy the surge in population has resulted in the generation of large volumes of solid waste. Agro-waste is a rich source of biocompounds with high potential as a raw material for food packaging. Utilization of agro-waste supports the goal of sustainable development in a circular economy. This paper reviews recent trends and the development of agro-wastes from plant and animal sources into eco-friendly food packaging systems. Different plant and animal sources and their potential development into packaging are discussed, including crop residues, process residues, vegetable and fruit wastes, and animal-derived wastes. A comprehensive analysis of the properties and production methods of these packages is presented. Future aspects of agro-waste packaging systems and the inherent production problems are addressed.

Dynamic alterations in protein, sensory, chemical, and oxidative properties occurring in meat during thermal and non-thermal processing techniques: A comprehensive review

Meat processing represents an inevitable part of meat and meat products preparation for human consumption. Both thermal and non-thermal processing techniques, both commercial and domestic, are able to induce chemical and muscle's proteins modification which can have implication on oxidative and sensory meat characteristics. Consumers' necessity for minimally processed foods has paved a successful way to unprecedented exploration into various novel non-thermal food processing techniques. Processing of meat can have serious implications on its nutritional profile and digestibility of meat proteins in the digestive system. A plethora of food processing techniques can potentially induce alterations in the protein structure, palatability, bioavailability and digestibility via various phenomena predominantly denaturation and Maillard reaction. Apart from these, sensory attributes such as color, crispness, hardness, and total acceptance get adversely affected during various thermal treatments in meat. A major incentive in the adoption of non-thermal food processing is its energy efficiency. Considering this, several non-thermal processing techniques have been developed for evading the effects of conventional thermal treatments on food materials with respect to Maillard reactions, color changes, and off-flavor development. Few significant non-thermal processing techniques, such as microwave heating, comminution, and enzyme addition can positively affect protein digestibility as well as enhance the value of the final product. Furthermore, ultrasound, irradiation, high-pressure processing, and pulsed electric fields are other pivotal non-thermal food processing technologies in meat and meat-related products. The present review examines how different thermal and non-thermal processing techniques, such as sous-vide, microwave, stewing, roasting, boiling, frying, grilling, and steam cooking, affect meat proteins, chemical composition, oxidation, and sensory profile.

Effects of Extraction Methods on the Characteristics, Physicochemical Properties and Sensory Quality of Collagen from Spent-Hens Bones

The present study used acetic acid, sodium hydroxide, and pepsin extract acid-soluble collagen (ASC), alkali-soluble collagen (ALSC), and pepsin-soluble collagen (PSC) from the bones of spent-hens, and the effects of three extraction methods on the characteristics, processing properties, antioxidant properties and acceptability of chicken bone collagen were compared. The results showed that the extraction rates of ASC, ALSC and PSC extracted from bones of spent-hens were 3.39%, 2.42% and 9.63%, respectively. The analysis of the amino acid composition, sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS-PAGE), Fourier transform infrared spectroscopy (FTIR), and ultraviolet full spectrum showed that the collagen extracted by the three methods had typical collagen characteristics and stable triple-helix structure, but the triple helical structure of PSC is more stable, and acid and alkaline extraction seems to have adverse effects on the secondary structure of chicken bone collagen. Differential scanning calorimetry (DSC) and scanning electron microscopy (SEM) scanning showed that PSC had higher thermal stability and more regular, loose, and porous microstructure. In addition, PSC has good processing properties, in vitro antioxidant activity, and organoleptic acceptability. Therefore, enzymatic hydrolysis was still one of the best methods to prepare collagen from bones of spent-hens, and enzyme-soluble collagen has wider application prospects in functional food and medicine and also provides an effective way for the high-value comprehensive utilization of waste chicken bone by-products.

Bio-organic fertilizer production from industrial waste and insightful analysis on release kinetics

The present study has been designed to utilize industrial and agricultural solid waste for NPK (Nitrogen-Phosphorus-Potassium) bio-organic fertilizer production and its optimized use. The collagenic material of wet blue leather (WBL) from leather industry was used as nitrogen source, after H₃PO₄ acid-mediated chromium removal. Chicken meat-bone meal (CMBM) and rice husk ash (RHA) are abundantly available locally, had used as P, K, and Ca sources. The presence of N, P, K, Ca in the produced bio-organic NPK fertilizer were 10.76, 11.03, 3.41, 13.64, respectively as per mixing ratio of ingredients. In this study it was effect on the chili plant (Capsicum annuum L.) growth and revealed 1.15 and 1.03 fold higher plant growth, 1.40 and 1.18 fold higher total chlorophyll content than untreated soil (control), and chemical fertilizer. The liberation of fertilizers components from their source, transport of fertilizer components in the soil, and absorption in plant roots have been studied using mathematical models indicating the optimum fertilizer use for better productivity and to reduce loss of extra fertilizer and eutrophication. The formulation showed excellent water retention capability (3.2 L/kg), which might increase soil water availability to the plants and eventually reduce water demand and labour cost. DNA intercalation study proved there is no harm to use this fertilizer.

Preparation of Gelatin from Broiler Chicken Stomach Collagen

With the increasing consumption of poultry meat around the world, the use of chicken stomachs as a source of collagen is being offered. The objective of this study was to extract gelatin from the stomachs of broiler chickens and to estimate their gel strength, ash content, viscosity, gelling point, melting point, clarity and digestibility. An innovative biotechnological method based on the conditioning of collagen with a microbial endoproteinase (Protamex^®) and hot-water extraction was used to control the chemical and thermal denaturation process of collagen to prepare gelatin. The experiments were planned using a Taguchi design, 2 factors at 3 levels; factor A for the amount of proteolytic enzyme (0.10, 0.15 and 0.20%) and factor B for the extraction temperature (55.0, 62.5 and 70.0 °C). Data were statistically processed and analyzed at a significance level of 95%. The gelatin yield averaged 65 ± 8%; the gel strength ranged from 25 ± 1 to 439 ± 6 Bloom, the viscosity from 1.0 ± 0.4 to 3.40 ± 0.03 mPa·s, gelling point from 14.0 ± 2.0 to 22.0 ± 2.0 °C, melting point from 28.0 ± 1.0 to 37.0 ± 1.0 °C. The digestibility of gelatin was 100.0% in all samples; the ash content was very low (0.44 ± 0.02-0.81 ± 0.02%). The optimal conditions for the enzymatic treatment of collagen from chicken stomachs were achieved at a higher temperature (70.0 °C) and a lower amount of enzyme (0.10-0.15%). Conditioning chicken collagen with a microbial endoproteinase is an economically and environmentally friendly processing method, an alternative to the usual acid- or alkaline-based treatment that is used industrially. The extracted products can be used for food and pharmaceutical applications.

Valuation of Goat and Sheep By-Products: Challenges and Opportunities for Their Use

Goat and sheep meat production is a challenge for the meat industry as well as for environmental management. Yet within cultures, certain by-products, such as liver, the lungs, heart, brain, spleen, blood, tail and ears, are traditionally used in the production of typical dishes for regional or local cuisine. These by-products are a rich source of lipids, proteins, essential amino acids, B-complex vitamins, and minerals. They can be effectively exploited for higher (value-added) applications, including functional foods or feed ingredients, food supplements, enzymes and other chemical products such as hydrolyzed proteins and flavorings. This review article gathers data on: (i) the production of by-products obtained from slaughter and available for processing, and (ii) potential strategies for using and applying these by-products in obtaining new value-added ingredients. Other than proteins, the review discusses other macromolecules and possible uses of these by-products in culinary dishes, as hydrolyzed enzymes, and as food additives. Even though these by-products undoubtedly present themselves as rich in nutrients, there remains an unfortunate lack of documented information on the potential use of these by-products for their bioactive components, peptides that have various biological and technological properties, and the use of hydrolyzed versions of these by-products as precursors for the production of flavorings.

Fatty Acid and Antioxidant Profile of Eggs from Pasture-Raised Hens Fed a Corn- and Soy-Free Diet and Supplemented with Grass-Fed Beef Suet and Liver

There is increasing interest in using grass-fed beef (GFB) by-products to augment the nutrient profile of eggs among local pasture-raising systems in the US. The objective of this study was to characterize egg yolk fatty acid and antioxidant profiles using eggs from pasture-raised hens fed a corn- and soy-free diet and supplemented with GFB suet and liver compared to eggs from pasture-raised hens fed a corn and soy layer hen feed and commercially obtained cage-free eggs. The egg yolk vitamin and mineral profile was also assessed by a commercial laboratory. Both pasture-raised groups had twice as much carotenoid content, three times as much omega-3 fatty acid content, and a 5−10 times lower omega-6:omega-3 fatty acid ratio compared to the cage-free eggs (p < 0.001). Eggs from hens fed a corn- and soy-free feed and GFB by-products had half as much omega-6 fatty acid content and five times more conjugated linoleic acid, three times more odd-chain fatty acid, and 6−70 times more branched-chain fatty acid content (p < 0.001). Feeding pasture-raised hens GFB suet and liver reduces agricultural waste while producing improved egg products for consumers, but further research is needed to quantify optimal supplementation levels and the efficacy of corn- and soy-free diets.

Evaluation and Characterization of Hard-Shell Capsules Formulated by Using Goatskin Gelatin

Gelatin is used as an additive in medicine, food, and cosmetics. Gelatin from goatskin is a new excipient that has not been explored by researchers, including for hard-shell capsules. The aim of this study was to evaluate and characterize the hard-shell capsules produced from goatskin gelatin. The goatskin gelatin was extracted by an acid hydrolysis method, and the functional properties were investigated. Hard-shell capsules were then produced from goatskin gelatin, evaluated, and characterized. The gelatin extracted from goatskin had 56.9% ± 0.95 clarity and a pH of 5.11 ± 0.09, 97.51% ± 1.1 protein content, 9.23% ± 0.08 water content, 0.18% ± 0.07 ash content, 2.08% ± 0.35 fat content, gel strength of 298 ± 2.64 gbloom, and viscosity of 27.33 ± 2.07 mPs. The gelatin has met the requirements to be made into hard-shell capsules. The average weight of the hard-shell capsules produced was 96.9 mg with 8.69 standard deviation. The average size of the body and cap length was 18.84 ± 0.64 mm and 10.98 ± 0.30 mm, respectively. The results of capsule evaluation and characterization were as follows: the pH was 4.82 ± 1,27, water content was 10.03 ± 0.21, disintegration time was 4.02 ± 2.09 min, and there was no microbial growth. Thus, the capsules made have met the requirements and can be produced in a large quantity.
