Abstract
Thirty-two male Hu lambs (32.31 ± 3.31 kg; 4-months-old) were randomly assigned to four treatments: (1) control (CON), (2) selenium-enriched yeast (SeY, 0.8 mg/kg), (3) selenized glucose (SeGlu, 0.8 mg/kg), and (4) sodium selenite (SS, 0.8 mg/kg) to evaluate their effects on Hu lamb production and slaughter performance, antioxidant capacity, hematological parameters, meat quality and shelf-life. The production and slaughter performances were not different (P > 0.05) among treatments. SeGlu and SeY increased (P < 0.05) the total antioxidant capacity in serum and muscle selenium content while decreasing (P < 0.05) the malondialdehyde (MDA) contents both in serum and muscle. SeGlu extended muscle shelf-life by 7.7 h compared with CON and decreased (P < 0.05) yellowness (b*) and lightness (L*) in meat stored for 24 h. In summary, the effects of SeGlu were similar to those of SeY and better than those of SS in improving serum and muscle antioxidant status, prolonging muscle shelf-life, and increasing selenium deposition in muscle.

Abstract
This study was aimed to assess the impact-enriched Saccharomyces cerevisiae with organic selenium addition in finishing lambs on fatty acid composition and physicochemical meat characteristics. Eighteen five-month-old Pelibuey female lambs were fed the same diet for 60 days. Animals were assigned a completely random design of three treatments, control (Se0) without the addition of selenium-yeast or supplemented with 0.35 ppm of selenium-yeast (Se35) and with 0.60 ppm of selenium-yeast (Se60). Lambs were slaughtered at an average weight of 39.5 ± 4.41 kg. Feed intake and meat water holding capacity were decreased (P = 0.001) in Se35 lambs, whereas meat moisture and fat were decreased (P = 0.002) in Se60 lambs. However, meat carbohydrates were increased (P = 0.001) in Se60 lambs. It is concluded that consumption of selenium-yeast in lambs did not alter the productive variables nor the fatty acid composition, though, the fat content is lower, and the carbohydrates are higher in physicochemical meat characteristics.

Abstract
Selenium (Se) is an important micronutrient for living organisms, since it is involved in several physiological and metabolic processes. Se intake in humans is often low and very seldom excessive, and its bioavailability depends also on its chemical form, with organic Se as the most available after ingestion. The main dietary source of Se for humans is represented by plants, since many species are able to metabolize and accumulate organic Se in edible parts to be consumed directly (leaves, flowers, fruits, seeds, and sprouts) or after processing (oil, wine, etc.). Countless studies have recently investigated the Se biofortification of plants to produce Se-enriched foods and elicit the production of secondary metabolites, which may benefit human health when incorporated into the diet. Moreover, feeding animals Se-rich diets may provide Se-enriched meat. This work reviews the most recent literature on the nutraceutical profile of Se-enriched foods from plant and animal sources.

Abstract
This study investigated the effects of replacement of inorganic trace minerals (ITMs) by organic trace minerals (OTMs) on tissue mineral retention and fecal excretion in "Zhen Ning" yellow feather broiler breeders. Six hundred hens (initial BW: 1.70 ± 0.07 kg) aged 40 weeks were randomly divided into five treatments, with four replicates of 30 broiler breeders each. Experimental treatments were as follows: (1) ITM (Cu, Zn, Fe, Mn, Se providing commercially recommended concentrations), (2) L-ITM (50% of the ITM, except for Se), (3) VL-OTM (37.5% of the ITM, except for Se), (4) L-OTM (equivalent to L-ITM), and (5) OTM (62.5% of the ITM, except for Se). The duration of the study was 10 weeks including 2 weeks for adaptation. Compared with the L-ITM treatment, high-level supplementation of minerals in ITM and OTM increased the concentration of serum Mn and Se, pectoral Fe and pancreas Cu, and Fe (P < 0.05). Birds fed with OTM dietary exhibited comparable mineral retention in muscle compared with ITM. Differences were observed between L-ITM and L-OTM in serum Mn and Se, pectoral Fe, Zn, and Se, and heart Se with L-OTM retaining higher mineral concentrations than L-ITM (P < 0.05). L-OTM retained identical concentration with ITM treatment, except for the pancreatic Fe. All three organic diets reduced the Zn in excreta compared with the two inorganic diets (P < 0.05). This study indicates that replacement of dietary ITMs by OTMs improved mineral deposition in tissues and reduced fecal mineral excretion in broiler breeders under the conditions of this study.

Abstract
To investigate the effects of maternal dietary selenium (Se-enriched yeast) on testis development, testosterone level and steroidogenesis-related gene expression in testis of their male kids, selected pregnant Taihang Black Goats were randomly allotted to four treatment groups. They were fed the basal gestation and lactation diets supplemented with 0 (control), 0.5, 2.0 and 4.0 mg of Se/kg DM. Thirty days after weaning, testes were collected from the kids. After the morphological development status of testis was examined, tissue samples were collected for analyzing testosterone concentration and histological parameters. Testosterone synthesis-related genes were detected using real-time PCR. Localization and quantification of androgen receptor (AR) in testis of goats were determined by immunohistochemical and western blot analysis. The results show that Se supplementation in the diet of dams led to higher (p < 0.05) testicular weight, volume, length, width, transverse and vertical grith of their male kids. Excessive Se (4.0 mg/kg) can inhibit the development of testis by decreasing testicular weight and volume. The density of spermatogenic cells and Leydig cells in the Se treatment groups was significantly (p < 0.05) higher than that in the control. Maternal dietary Se did not affect the thickness of testes, thickness of germinal epithelium and diameter of seminiferous tubule. Se supplemented in the diet of dams improved the testosterone level in testis tissue and serum, and promote the expression of testosterone-related genes. The mRNA expression of StAR, 3β-HSD and CYP11A1 was decreased with the increasing dietary Se levels of dams. Maternal dietary Se can improve the AR protein abundance in testis of their offspring. AR immunopositive product was detected in Leydig cells, peritubular myoid cells, perivascular smooth muscle cells, primary spermatocytes and spermatids. The expression of AR in spermatogenetic cells is stage specific. This study suggests that maternal dietary Se can influence the testis development and spermatogenesis of their male kids by modulating testosterone synthesis in goats. More attention should be given to the potential role of maternal nutrition in improving reproductive performance of their offspring.

Abstract
BACKGROUND Selenium is one of the trace minerals whose deficiency is known to lead to complications of female reproduction. The identified gaps in researches regarding selenium and pregnancy include optimizing the dosage of selenium supplementation, timing of supplementation, finding the best form and type of selenium, and selenium administration combined with other antioxidants. Hence, this study was conceptualized to address one of the identified gaps, that is, to find out the best timing of selenium administration around the time of pregnancy. Specifically, this study aimed to assess the effects of maternal Selenium-supplementation, administered at various stages of periconception period, on murine blastocyst morphology, percent occurrence of good quality blastocysts, and implantation status. METHODS ICR female mice were randomly assigned into the unsupplemented group (Group I) receiving basal diet without selenium, and treatment groups given with 3.0 μg selenium-supplement per day during pregestation only (Group II), pregestation-throughout-gestation (Group III) and gestation only (Group IV). Both blastocyst morphology and implantation status were assessed. RESULTS The morphometric measurements of blastocysts appeared to be unaffected by selenium-supplementation at different stages of periconception. Selenium-supplementation at pregestation only (Group II) and gestation only (Group IV) produced higher percent occurrence of good quality blastocysts and lower percent pre-implantation loss than Group III. Among all the treatment groups, Group III (Selenium-supplementation during pregestation-to-gestation) yielded the lowest quality blastocysts and highest percent pre-implantation loss. CONCLUSION Maternal selenium-supplementation during pregestation and gestation stages of the periconception period yielded a high percent occurrence of good quality blastocysts and pre-implantation success.

Abstract
SummarySelenium is an important mineral required in the antioxidant system in animals, which is involved with oxidative stability in tissues, particularly membranes, and is involved in various aspects of meat quality and stability on the shelf, due to its protective properties on lipids, preventing rancidity. Se can be supplied in an inorganic or chemically organic form, and it is well known that the latter has beneficial properties and improved functionality in physiological systems compared to the former. Research has shown that organic Se is associated with increased tenderness and the prevention of certain problems in pale exudative meat, discolouration and off-flavours and odours in meat, although this depends on other components of the antioxidant system, such as vitamin E, being present as well. The change in prominence of glutathione peroxidase forms in their interaction with vitamin E in cell membranes is also noted. The following review (the third in a series) details the research that has been conducted into the role of Se in meat stability and related factors, with specific focus on organic forms of Se, namely the commercial product Sel-Plex™ (Alltech Inc, Nicholasville, KY, USA), which is derived from yeast and in which selenium replaces sulphur in methionine forming selenomethionine in yeast protein.

SummaryThe importance of selenium as a key component of antioxidant systems in animals is well recognised due to much research about this mineral in many species. Selenium is required as part of the antioxidant enzyme structure and plays a major role in various protective systems in animal physiology, including immunity, cellular stability and DNA protection. The following review is the first in a series of three which details the importance of selenium in animal nutrition, and how the chemically organic form, which is akin to the form of the mineral in natural feed materials, can provide increased benefits in utilisation, storage and metabolism compared to inorganic sources.

Abstract
AIM Present experiment was conducted to investigate the effect of selenium (Se) supplementation on performance, carcass characteristics, meat composition, shelflife of meat and biochemical profile in Nellore ram lambs. MATERIALS AND METHODS 24 male Nellore ram lambs (15.75±0.47 kg) were randomly divided into four dietary groups with six lambs in each and reared under uniform management conditions for 120 days. Basal diet was not supplemented with Se and consisted of green fodder (Se 0.09 mg/kg dry matter [DM]), dry roughage (Se 0.11 mg/kg DM) and concentrate mixture (Se 0.019 mg/kg DM) and fed individually. Dietary treatments were prepared by adding graded levels Se (0, 0.45, 0.9, and 1.8 ppm) to concentrate mixture (1% body weight [BW]) from sodium selenite. Feed offered and refusal measured daily; and BWs were measured at fortnight interval to find out average daily gain (g), feed conversion ratio (FCR), cost economics and plane of nutrition. Serum biochemical profile (concentration of glucose, total protein, albumin, globulin, cholesterol, and hemoglobin) was assessed on 0, 60(th), and 120(th) day. At the end of experiment, the carcass characteristics (dressing percentage, cut-up parts, meat to bone ratio) and meat chemical composition were evaluated. Meat keeping (thiobarbituric acid reactive substances) quality from different groups was evaluated on day 0, 3, and 6 post-slaughter. RESULTS Dietary Se supplementation did not show any effect on weight gain, FCR, cost economics, plane of nutrition, and serum biochemical profile in Nellore ram lambs. However, Se supplemented lambs had numerically higher weight gain than the unsupplemented lambs. Similarly, carcass characteristics and keeping quality were comparable among the four treatments. However, numerical increase in post-slaughter keeping quality with increasing Se supplementation was observed. CONCLUSION It can be concluded that supplementation of Se in the form of sodium selenite (inorganic source) at different levels did not influence animal performance in growing Nellore ram lambs had no effect on lamb performance, cost economics, carcass characteristics, and serum biochemical profile.

The objective of this study was to evaluate the effects of selenium (Se) enrichment of cereals on the performance of Belgian Blue bulls, meat quality and chemical composition. Twenty-three bulls were used in the present study. Twelve bulls were offered a control diet containing Se at a basal concentration of 58 µg kg−1 of dry matter (DM) and the other 11 bulls were given a diet containing 173 µg kg−1 DM of Se by means of Se-enriched spelt and barley. The Se enrichment of the diet did not affect the growth performance, the slaughter data or meat quality (P > 0.05). There were no effects of Se on tenderness, oxidative rancidity and water losses. However, there were some effects of Se enrichment on the meat chemical composition. The ether extract was decreased from 2.1 to 1.7% DM (P<0.05). There was also significant Se enrichment (P<0.001) in the longissimus thoracis muscle (177 vs. 477 ng g−1 DM) and organs: liver (474 vs. 1126 ng g−1 DM) and kidney (4956 vs. 5655 ng g−1 DM), Under such conditions, the human consumption of a piece of such meat or liver can provide a large part of the recommended daily Se intake, estimated between 30 and 57%.

Abstract
This study was performed to characterise key data of long-term ovine Se metabolism and to work out the best biomarker of Se status. An upgrade from marginal (<0.05 mg Se/kg diet, 'Se-') to sufficient (0.2mg Se/kg diet, 'Se+') nutritional Se supply using sodium selenite was monitered biweekly by analysing Se concentration, glutathione peroxidase (Gpx) activity and routine biochemistry in blood/serum over 2 years. Se, Cu, Zn, cytosolic Gpx and thioredoxin reductase (TrxR) activity were measured in the liver (biopsies/post-mortem). Se, Gpx, TrxR, glutathione-S-transferase-alpha (aGST) and iodothyronine deiodinase (Dio1) were analysed in the kidney, heart muscle and thyroid. Relative mRNA expression of hepatic aGST1 and Gpx1 was determined. Improvement of Se supply strongly increased serum and liver Se concentration within 10 and 20 days, respectively followed by a plateau. Whereas the achievement of a maximum whole blood Gpx activity was reached after 3 months, serum Gpx3 activity increased with high variations. Hepatic Gpx activity reached a maximum during days 100-200, decreasing thereafter. Distinct group differences in Se and cytosolic Gpx activity were evident in all organs (except Se in kidney). TrxR and Dio1 activity was affected only in the liver. The Se- sheep showed an ongoing decrease in serum Se concentration within 2 years, whereas liver Se remained almost unaffected. High relative Gpx1 mRNA expression in the Se+ group was consensual to high hepatic Gpx activity. Relative mRNA expression of hepatic aGST1 was higher in the Se- sheep. Clinical signs and abnormalities in routine biochemistry were absent. In summary, the best biomarker of Se deprivation and nutritional Se upgrade, respectively was Se in serum. Moreover, hepatic Se concentrations reliably reflected the upgrade of Se supply within days. Whole blood Gpx reacts slowly depending on newly formed erythrocytes restricting its diagnostic use. Vital organs are affected by Se deficiency due to a decrease of cytosolic Gpx activity attenuating the antioxidative system. Cellular up-regulation of aGST1 mRNA expression in the Se- group is assumed to partially compensate for the decreased antioxidant defence due to a loss in Gpx activity. This sheep model appears advantageous for long-term studies on sub-clinical metabolic effects in experimental modifiable nutritional Se supply.

Abstract
The objective of this study was to determine the concentration of total selenium (Se) and the proportions of total Se comprised as selenomethionine (SeMet) and selenocysteine (SeCys) in the postmortem tissues of female pheasants (Phasianus Colchicus Torquator) offered diets that contained graded additions of selenised-enriched yeast (SY) or a single comparative dose of sodium selenite (SS). Thiobarbituric acid reactive substances (TBARS) and tissue glutathione peroxidase (GSH-Px) activity of breast (Pectoralis Major) were assessed at 0 and 5 days postmortem. A total of 216 female pheasant chicks were enrolled into the study. Twenty-four birds were euthanased at the start of the study, and samples of blood, breast muscle, leg muscle (M. Peroneus Longus and M. Gastrocnemius), heart, liver, kidney and gizzard were collected for determination of total Se. Remaining birds were blocked by live weight and randomly allocated to one of four dietary treatments (n = 48 birds/treatment) that either differed in Se source (SY v. SS) or dose (control (0.17 mg total Se/kg), SY-L and SS-L (0.3 mg/kg total Se as SY and SS, respectively) and SY-H (0.45 mg total Se/kg)). Following 42 and 91 days of treatment, 24 birds per treatment were euthanased, and samples of blood, breast muscle, leg muscle, heart, liver, kidney and gizzard were retained for determination of total Se and the proportion of total Se comprised as SeMet or SeCys. Whole blood GSH-Px activity was determined at each time point. Tissue GSH-Px activity and TBARS were determined in breast tissue at the end of the study. There were increases in both blood and tissues to the graded addition of SY to the diet (P < 0.001), but the same responses were not apparent with the blood and tissues of selenite-supplemented birds receiving a comparable dose (SY-L v. SS-L). Although there were differences between tissue types in the distribution of SeMet and SeCys, there were few differences between treatments. There were effects of treatment on erythrocyte GSH-Px activity (P = 0.012) with values being higher in treatments SY-H and SS-L when compared with the negative control and treatment SY-L. There were no effects of treatment on tissue GSH-Px activity, which is reflected in the overall lack of any treatment effects on TBARS.

Abstract
A 2×2 factorial arrangement of treatments in randomized design was conducted to investigate the effect of different selenomethionine (SM) sources and levels on the productive performance of breeder hens and the Se distribution in the inclusion of eggs and serum and tissues of breeder hens and its offspring. A total of 480 Ling-Nan-Huang breeder hens, 48 weeks of age, were allocated to four treatments, each of which included three replicates of 40 hens. Pretreatment period was 2 weeks, and the experiment lasted 8 weeks. Two SM forms of DL-SM and L-SM were supplemented at 0.15 or 0.30 mg Se/kg into the basal diet. Results showed that the Se level of 0.15 mg/kg supplemented in the diet, compared to 0.30 mg/kg, significantly elevated the percentage of egg production (p<0.05), hatchability (p<0.01), and birthrate (p<0.01), whereas the Se level of 0.30 mg/kg led to a higher Se content in egg contents, serum, and all tissues (p<0.01). In addition, the form of DL-SM showed a significant increase in Se content of egg inclusion (p<0.01), serum (p<0.01), and all tissues (p<0.01, except breeder hens' pancreas and its offspring's liver and breast muscle). The birthrate and yolk Se content were markedly influenced by the interaction between Se source and Se level (p<0.01). The above results suggested that DL-SM, compared to L-SM, had a similar equal effect on the performance of breeder hens, but DL-SM was superior to L-SM with respect to selenium distribution in egg inclusion, serum, and tissues.

Abstract
The aim of this trial was to compare the effect of long-term supplementation of goats with different forms of selenium on body reserves of selenium in their kids at the time of weaning. Thirty-three pregnant goats were divided into five groups. Group C was control while the other four groups were supplemented with selenium (Se) for 6 weeks before parturition (0.3 mg/goat/day) and after parturition (0.9 mg/goat/day). Group "Se-I" received sodium selenite and three other groups received organic forms: "Se-L," lactate-protein complex; "Se-P," Se-proteinate; and "Se-Y," Se-yeast. The kids were weaned at 3 months of age and samples of tissues (liver, pancreas, myocardium, lungs, kidneys, spleen, thigh, tongue, and diaphragm) were taken after slaughtering. The long-term supplementation of goats with Se influenced Se concentration in all examined tissues of kids. Significant differences (p≤0.01) were found between the control and all experimental groups, except for the renal cortex and pancreas (Se-I). The average increase of Se concentration in overall examined tissues in comparison with the control (100%) was as follows: Se-Y, 192%; Se-P, 167%; Se-L, 161%; Se-I, 144%. The highest efficiency was found in the group supplemented with Se-yeast with a high content of selenomethionine, also the other two organic forms of Se were more efficient than the inorganic form.

Abstract
To study the effect of selenium-enriched yeast (SeY) level on selenoprotein genes expression and the relation between gene expression and antioxidant status and meat quality, 30 selenium (Se)-depleted pigs (7-week old, 10.30±0.68 kg) were randomly divided into 3 groups and fed a basal diet plus 0, 0.3 and 3.0 mg Se/kg as SeY for 8 weeks. Results showed that dietary SeY supplementation improved the antioxidant status in muscle. The increased levels of SeY decreased (P<0.05) the drip loss and the concentration of thiobarbituric acid reactive substances in the muscle and meat. However, increased dietary SeY intake quadratically increased (P<0.01) the mRNA level of Sepw1 gene among the 12 selenoprotein genes examined in muscle. Statistical analysis showed drip loss was negatively correlated with the mRNA level of Sepw1 gene. These suggested that the enhanced water-holding capacity of meat was associated with the increased expression of Sepw1 gene.
