Abstract
In this study, ultrasonic technology was combined with microwave vacuum drying technology to explore the impacts of different coupling methods (ultrasonic pretreatment and ultrasonic coupled drying) on the structural characterisation and physicochemical properties of shiitake mushroom (Lentinus edodes) polysaccharides at different ultrasonic powers (0, 120 and 280 W), and compared with hot air drying (HAD). The results demonstrated that the monosaccharide composition of Lentinus edodes polysaccharides (LEPs) remained largely unaltered after treatment with various drying methods, although significant disparities in molar content were observed. Air ultrasound combined with microwave vacuum drying (USMVD) at 280 W ultrasound power resulted in LEPs with higher contents of total sugars (8.12 ± 0.13 g/100 g), reducing sugars (10.32 ± 0.3 mg/g) and uric acid (2.23 %) compared to those obtained from the HAD treatment. Furthermore, the combination of US280MVD drying treatment of LEPs exhibited a reduction in molecular weight and an enhancement in shear-thinning ability. The results of the study indicate that USMVD is a promising drying treatment technology.

Abstract
Mulberry leaves (ML) are nutrient-rich and beneficial for food and feed. Our study evaluated five drying methods-sun drying (SD), air drying (AD), oven drying (OD), freeze drying (FD), and vacuum-microwave drying (MD) for preserving nutrients and bioactivity. In vitro models tested the bioactivities of ML extracts. Results showed that machine-based methods (OD, FD, and MD) were superior to natural processes (SD, AD) retaining nutrients and bioactivity. OD preserved amino acids effectively, FD and MD retained crude protein and fibers, and MD excelled in maintaining the total polyphenols, vitamin E, minerals, and bioactive compounds, enhancing the antioxidant capacity and beneficial effects on lipid metabolism, ROS scavenging, and anti-apoptotic in lipid-laden HepG2 cells. Overall, FD and MD are ideal for high-value products like food and pharmaceuticals, while OD is cost-effective for animal feed. SD and AD lead to significant nutrient loss and are not recommended unless cost is a major concern.

Abstract
Dietary fiber (DF) is an indigestible carbohydrate in plant foods that supports various physiological functions. This study aimed to extract the soluble and insoluble dietary fiber (DF) from the curry leaves and investigate their physicochemical properties as well as their functional role in the homeostasis of the gut microbiome. The study observed that insoluble-DF (IDF) yielded higher amounts than soluble-DF (SDF) across alkali, acid, and water extraction methods. Acid-extracted SDF showed the highest polysaccharide content (91.58 ± 1.53 %). Among IDFs, alkali-extracted IDF showed the highest polysaccharide content (81.93 ± 1.94 %). Glucose, arabinose, and xylose were identified as major monosaccharides. IDF had a larger particle size (463.5 ± 14.2 μm) compared to SDF (1.23 ± 15.55 μm), which influenced its physicochemical properties. IDF displayed better oil-holding capacity, while SDF showed superior water-holding capacity, potentially impacting glucose diffusion and cholesterol micelle formation. Furthermore, SDF and IDF promoted the growth of beneficial gut bacteria and increased production of short-chain fatty acids, which play critical roles in physiological regulation. Acid-extracted SDF restored gut homeostasis by increasing species richness and diversity, predominantly increasing beneficial bacteria and reducing pathogenic bacteria in LPS-induced dysbiotic mice. This study reveals the impact of extraction methods on the physicochemical and functional properties of curry leaves-DF, underscoring its promise as a functional food for gut health.

Abstract
In order to identify a suitable drying method for the extraction of antioxidant and antidiabetic polysaccharides, fresh Mesona chiensis Benth was subjected to various drying methods. These methods included conventional air drying (CD), hot-air drying (HD), freeze drying (FD), microwave drying (WD), and micro-fermentation drying (MD). Following the drying process, five polysaccharides derived from M. chiensis (MBPs) were extracted using hot water extraction. These polysaccharides exhibited variations in chemical composition, molecular weight, monosaccharide composition, and surface morphology. However, they displayed similar core glycosidic residues, crystallinity, and thermal stability. This indicates that the five drying methods exerted different effects on the degradation of polysaccharides, while simultaneously maintaining their fundamental structural characteristics. Additionally, a comprehensive evaluation system employing positive criteria and non-dimensionalization revealed that among five different MBPs, the MBP derived from the MD method exhibited the most potent antioxidant and antidiabetic activities in vitro. The micro-fermentation dried sample demonstrated a substantial DPPH radical scavenging capacity of 83.51% and an impressive inhibition of islet cell apoptosis activity, measured at 99.75%. The findings of this study provide that micro-fermentation drying has been identified as the most effective method for the extraction of significant antioxidant and antidiabetic polysaccharides from M. chiensis.

Abstract
Although the health benefits of chrysanthemums have been widely studied, there is a paucity of knowledge regarding Taihang chrysanthemum (Opisthopappus taihangensis). This study compared indoor shade drying, heat drying and freeze drying on the chemical profile and health-related activities of O. taihangensis. UPLC-Q-TOF-MS and other assays were used to evaluate changes in composition and antioxidant, antibacterial and enzyme inhibitory activities. Different drying methods significantly affected compositions and bioactivities of O. taihangensis. Lipids, phenylpropanoids and polyketides were the most abundant. Freeze-drying maintained bioactive compounbds like phenylpropanoids and superior antioxidant activities. Freeze-dried O. taihangensis also displayed robust antibacterial activity against Streptococcus hemolyticus-β and effective inhiition of pancreatic lipase. These results suggest O. taihangensis is a useful source of functional compounds.

Abstract
The objective of this study was to evaluate the impacts of different drying technologies including microwave drying (MD), vacuum microwave drying (VMD), sun drying (SD), vacuum drying (VD), hot air drying (HAD), and vacuum freeze drying (VFD) on the physical characteristics, nutritional properties and antioxidant capacities of kiwifruit pomace in order to realize by-product utilization and improve energy efficiency. Results showed that both MD and VMD significantly reduced drying time by >94.6%, compared to traditional thermal drying which took 14-48 h. MD exhibited the highest content of soluble dietary fiber (9.5%) and the lowest energy consumption. Furthermore, VMD resulted in the highest content of vitamin C (198.78 mg/100 g) and reducing sugar (73.78%), and the antioxidant capacities ranked only second to VFD. Given the financial advantages and product quality, VMD was suggested to be advantageous technology in actual industrial production.

Abstract
Drying conditions significantly impact the compositions and microstructures of polysaccharides, leading to various effects on their chemical characteristics and bioactivities. The objective of this study was to investigate how different industrial drying techniques, i.e., hot air drying, infrared drying, microwave vacuum drying, and freeze drying, affect the structural properties and biological activities of polysaccharides extracted from Rosa roxburghii Tratt fruit (RRTP). Results revealed that these drying methods significantly altered the extraction yield, molecular weights, monosaccharide ratios, contents of uronic acid and total sugars, gelling properties, particle sizes, thermal stability, and microstructures of RRTPs. However, the monosaccharide composition and functional groups of polysaccharides remained consistent across the different drying techniques. Biological activity assays demonstrated that RRTPs, particularly those processed through microwave vacuum drying (MVD-RRTP), exhibited excellent anti-linoleic acid oxidation, robust anti-glycosylation effects, and significant α-glucosidase inhibition in vitro. The outcomes of this research demonstrate that microwave vacuum drying serves as an effective pre-extraction drying method for RRTPs, enhancing their biological activities. This technique is particularly advantageous for preparing RRTPs intended for use in functional foods and pharmaceuticals, optimizing their health-promoting properties for industrial applications.

Abstract
BACKGROUND Obesity and hyperlipidemia can induce a variety of diseases, and have become major health problems worldwide. How to effectively prevent and control obesity has become one of the hot-spots of contemporary research. Mulberry leaf is the dried leaf of Morus alba L., which is approved by the Ministry of Health as a "homology of medicine and food", rich in diverse active constituents and with a variety of health effects including anti-obesity and anti-hyperlipidemia activities. PURPOSE The review attempts to summarize and provide the molecular basis, mechanism, safety and products for further exploration and application of mulberry leaf on the treatment on the control of weight gain and obesity. METHODS This review is conducted by using ScienceDirect, PubMed, CNKI and Web of Science databases following Preferred Reporting Items for Systematic Reviews and Meta-Analyses (PRISMA). RESULTS Based on the research progress of domestic and foreign scholars, the effective phytochemicals, molecular mechanisms and product applications of mulberry leaf in the prevention and treatment of obesity and related metabolic diseases were summarized. CONCLUSION Mulberry leaf has excellent medicinal and health care value in obesity treatment. However, its pharmacodynamic substance basis and molecular mechanisms need to be further studied.

Abstract
Mulberry (Latin name "Morus alba L.") is a perennial deciduous tree in the family of Moraceae, widely distributed around the world. In China, mulberry is mainly distributed in the south and the Yangtze River basin. Its leaves can be harvested 3-6 times a year, which has a great resource advantage. Mulberry leaves are regarded as the homology of medicine and food traditional Chinese medicine (TCM). Polysaccharides, as its main active ingredients, have various effects, such as antioxidant, hypoglycemic, hepatoprotective, and immunomodulatory. This review summarizes the research progress in the extraction, purification, structural characterization, and structure-function relationship of polysaccharides from mulberry leaves in the last decade, hoping to provide a reference for the subsequent development and market application of polysaccharides from mulberry leaves.

Abstract
The mulberry plant is a member of the Moraceae family and belongs to the Morus genus. Its entire body is a treasure, with mulberries, mulberry leaves, and mulberry branches all suitable for medicinal use. The main active ingredient in mulberries is mulberry polysaccharide. Studies have shown that polysaccharides from different parts of mulberry exhibit antioxidant, antidiabetic, antibacterial, anti-inflammatory, and blood pressure-lowering properties. There are more studies on the biological activities, extraction methods, and structural characterization of polysaccharides from different parts of mulberry. However, the structural characterization of mulberry polysaccharides is mostly confined to the types and proportions of monosaccharides and the molecular weights of polysaccharides, and there are fewer systematic studies on polysaccharides from different parts of mulberry. In order to better understand the bioactive structure of mulberry polysaccharides, this article discusses the recent research progress in the extraction, separation, purification, bioactivity, structural modification, and application of polysaccharides from different parts of mulberry (mulberry leaves, mulberry fruits, and mulberry branches). It also delves into the pharmacological mechanisms of action of mulberry polysaccharides to provide a theoretical basis for further research on mulberry polysaccharides with a view to their deeper application in the fields of feed and nutraceuticals.

Abstract
BACKGROUND With the requirements of environmental, cost and economic sustainability, new sources of alternative proteins in the livestock industry are receiving increasing attention. Mulberry (Morus alba L.) leaves are a unique feed resource because of their high protein content and large availability. Therefore, mining sustainable protein suitable for the animal husbandry industry in sericulture resources could achieve a win-win situation. RESULTS The protein content in mulberry leaves is 232.10-386.16 g kg-1 , and the mean value of crude fat content is 43.76 ± 8.48 g kg-1 , which has the advantages of protein content and energy. In addition, the average content of phytic acid in mulberry leaves is only 1.88 ± 0.56 g kg-1 , which means that it is not inhibited in terms of nutrient absorption. Meanwhile, the digestibility of protein was Bean pulp > Sample 8 ≈ Alfalfa ≈ Sample 13 ≈ Cottonseed meal > Fish meal, and the β-turn and particle size of mulberry leaf protein are more conducive to digestion in vitro. Furthermore, the protein of Sample 13 had the richest essential amino acids (252.00 g kg-1 ) and the highest essential amino acid index (EAAI), which was superior to conventional feed protein. In addition, the partial substitution of mulberry leaf protein (15%) significantly increased the EAAI value of conventional feed protein. However, to balance nutrition, it is necessary to combine mulberry leaf protein with other proteins to further broaden its application field. CONCLUSION Mulberry leaves are a new source of feed protein, which helps to alleviate the two major problems of mulberry resource surplus and feed protein resource shortage. © 2023 Society of Chemical Industry.

Abstract
Diabetic kidney disease (DKD) is one of the prime causes of end-stage renal disease. At present, the treatment of DKD is mainly confined to inhibiting the renin-angiotensin-aldosterone system, but the therapeutic effects is not satisfactory. As a kind of very rare and precious medicinal fungi, Inonotus obliquus has a very high medicinal value. Due to its special hypoglycemic and pharmacological effect, researchers currently have attached great importance to it. In this paper, the biological activities, pharmacological effects and application status in the treatment of DKD-related diseases of Inonotus obliquus and the latest progress of metabolites isolated from it in DKD were summarized, thus providing detailed insights and basic understanding of the potential application prospects in DKD.

Abstract
Plant polysaccharides, as significant functional macromolecules with diverse biological properties, are currently receiving increasing attention. Drying technologies play a pivotal role in the research, development, and application of various foods and plant polysaccharides. The chemical composition, structure, and function of extracted polysaccharides are significantly influenced by different drying technologies (e.g., microwave, infrared, and radio frequency) and conditions (e.g., temperature). This study discusses and compares the principles, advantages, disadvantages, and effects of different drying processes on the chemical composition as well as structural and biological properties of plant polysaccharides. In most plant-based raw materials, molecular degradation, molecular aggregation phenomena along with intermolecular interactions occurring within cell wall components and cell contents during drying represent primary mechanisms leading to variations in chemical composition and structures of polysaccharides. These differences further impact their biological properties. The biological properties of polysaccharides are determined by a combination of multiple relevant factors rather than a single factor alone. This review not only provides insights into selecting appropriate drying processes to obtaining highly bioactive plant polysaccharides but also offers a fundamental theoretical basis for the structure-function relationship of these compounds.

Abstract
Biomass contains different macroconstituents (polysaccharides, lipids, and proteins) with nutritional and functional properties. However, after harvest or processing, stabilization of biomass is necessary to preserve the macroconstituents from degradation by microbial growth and enzymatic reactions. Because these stabilization methods affect the structure of the biomass, extraction of valuable macroconstituents can be impacted. Literature, in general, focuses on either stabilization or extraction, but systematic information on the interlinkage between these processes has rarely been reported. This review summarizes recent research on physical, biological, and chemical stabilization methods on macroconstituent extraction yields and functionalities. Often, freeze drying as a stabilization method resulted in a good extraction yield and functionality, independent of the macroconstituent. Less documented treatments, such as microwave drying, infrared drying, and ultrasound stabilization, result in better yields compared to conventional physical treatments. Biological and chemical treatments were rarely performed but could be promising as stabilization methods before performing an extraction step.

Abstract
In Asia, mulberry has long been used to treat various infectious and internal ailments as a traditional medication. The compounds found in it have the potential to improve human health. Because there is no approved and defined evaluation procedure, it has not been formally or scientifically recognized. As a result of these investigations, a new frontier in traditional Chinese medicine has opened up, with the possibility of modernization, for the interaction between active components of mulberry and their biological activities. These studies have used current biotechnological technologies. For ages, mulberry has been used as an herbal remedy in Asia to cure various diseases and internal disorders. It has a high concentration of bioactive chemicals that benefit human health. The most abundant phenolic components extracted from white mulberry leaves are flavonoids (Kuwanons, Moracinflavans, Moragrols, and Morkotins), phenolic acids, alkaloids, and so forth. Flavonoids, benzofurans, chalcones, and alkaloids have been discovered to have cytotoxic effects on human cancer cell lines. There is growing evidence that mulberry fruits can potentially prevent cancer and other aging-related disorders due to their high concentration of bioactive polyphenolic-rich compounds and macro and micronutrients. Anthocyanins are rapidly absorbed after eating, arriving in the plasmalemma within 15-50 min and entirely removed after 6-8 hr. Due to a lack of an approved and consistent technique for its examination, it has yet to be formally or scientifically recognized. The mulberry plant is commercially grown for silkworm rearing, and less attention is paid to its bioactive molecules, which have a lot of applications in human health. This review paper discusses the phenolic compounds of white mulberry and black mulberry in detail concerning their role in cancer prevention.

Abstract
Medicinal plants from the family Moraceae have diverse applications in agriculture, cosmetics, food, and the pharmaceutical industry. Their extensive spectrum of pharmacological activity for treating numerous inflammatory illnesses, cancer, cardiovascular diseases, and gastrointestinal problems reflects their biological and therapeutic value. This article summarizes the molecular mechanisms related to the biological implications of mulberry extracts, fractions, and isolated bioactive compounds from different parts in various health-related ailments. Additionally, the food industry and animal nutrition applications are summarized. Phytochemicals such as steroids, saponins, alkaloids, glycosides, polysaccharides, and phenolic compounds including terpenoids, flavonoids, anthocyanins, and tannins are found in this medicinal plant. The aqueous, ethanolic, and methanolic extracts, as well as bioactive compounds, have anti-oxidative, hypoglycemic, nephroprotective, antimicrobial, neuroprotective, anti-mutagenic, hepatoprotective, anthelmintic, immune-modulatory, cardioprotective, and skin protecting activities. Mulberry supplementation in food products improves the stability of phenolics, sensory properties, antioxidant activity, and antimicrobial properties. Mulberry leaves in animal feed increase the nutrient digestibility, growth parameters, antimicrobial, and antioxidant properties. PRACTICAL APPLICATIONS: This review summarized the in vivo and in vitro biological activities of the mulberry and isolated constituents in various health conditions. In addition, the food uses such as antioxidant potential, antimicrobial, and physicochemical properties were discussed. Furthermore, in vivo studies revealed mulberry as a significant protein source and its flavonoids as potential animal foliage.

Abstract
Suitable drying method is critical for the preservation of physicochemical and pharmacological quality of lychee pulp polysaccharides (LPPs). In current work, the effects of five drying methods, i.e. air drying (A), infrared drying (I), heat pump drying (H), vacuum freeze drying (F) and freeze vacuum drying combined with heat pump drying (FH) on the physicochemical characterizations, antioxidant activities and hypoglycemic activities of LPPs were explored. Results showed all five drying methods led to thermal aggregation of LPPs and the stronger the thermal effect induced by drying, the more serious the aggregations were. Additionally, the thermal aggregation significantly affected the composition, structure and biological activity of LPPs. Less thermal aggregation was observed in LPPF and LPPFH, which exhibited stronger oxygen, DPPH and ABTS radical scavenging activities, higher ferric-reducing power and better α-glycosidase and α-amylase inhibition activities, resulting from their higher contents of neutral sugar, protein and uronic acid and lower molecular weight than LPPA and LPPI. Besides, FH consumed about half drying time and one fifth energy of F. Therefore, from industrial perspective, FH is a promising alternative to F for producing LPPs by comprehensively considering physicochemical characterizations, bioactivity as well as energy consumption.

Abstract
Diversiform okra dry powders were prepared and controlled-temperature ultrasonic-assisted extraction (CTUAE) was then utilized to obtain okra pectin (OP) from the preparative powders. During processing of hybrid techniques, 6 types of dry powders were prepared through different drying technologies (hot air drying, HD; freeze-drying, FD) and meshes (60, 80, 120 meshes) at first. Next, the extraction yield, physicochemical and function characteristics, and molecular structure of OP were analyzed with or without CTUAE technique. Meanwhile, the time-frequency domains of acoustic fields during extraction process of OP were monitored to analyze the effects of ultrasonic fields. Results showed that OP main chains with less cracking by FD than that by HD; the yield, GalA, esterification degree (DE), Mw and viscosity of OP increased, but its particle size decreased. Water holding capacity (WHC) and oil holding capacity (OHC) of OP by HD were more prominent. Secondly, HD OP had dendritic rigid chains, while FD OP had flexible chains with multiple branches. For HD OP, as meshes of okra dry powders decreased, GalA, viscosity and emulsification ability decreased; while gel strength and thermal stability increased. For FD OP, the reduction of meshes improved thermal stability. Above all, CTUAE technique increased the yield and GalA, and decreased DE, Mw and particle size of OP. In terms of functional characteristics, the technique also improved gel strength, resilience and viscoelasticity, enhanced emulsifying stability, WHC and thermal stability, and reduced viscosity. Finally, the correlation between functional and structural characteristics of OP was quantified, and some suggestions were made for its application in food areas.

Abstract
In this study, a high-efficiency and non-pollution extraction procedure, ultrasound-assisted technique with deep eutectic solvents (DESs), was applied for extraction of polysaccharides from Morchella importuna (MIP-D). The results exhibited that the system of DES was: mole ratio between choline chloride and oxalic acid of 2:1, water content of 90% (v/v), and the optimal extraction parameters were as follows: extraction time of 31.2 min, extraction temperature of 62.1°C, and the liquid–solid ratio of 32.5:1 (v/w). Under these extraction parameters, the extraction yield of MIP-D was 4.5 times higher than hot water extraction (HWE) method and had higher carbohydrate (85.27%) and sulfate contents (34.16%). Moreover, high-performance liquid chromatography (HPLC) and Fourier-transform IR (FTIR) spectrum analysis indicated that MIP-D was comprised of glucosamine, galactose, glucose, and mannose, with molar ratios of 0.39:1.88:3.82:3.91, which contained the pyranose ring skeleton. High-performance gel permeation chromatography (HPGPC) analysis revealed that MIP-D showed three fractions with molecular weights of 2.6 × 106, 7.3 × 104, and 3.7 × 103 Da, which were lower than those of polysaccharides extracted by HWE. In-vitro tests proved that MIP-D possessed excellent antioxidant and inhibited α-amylase and α-glucosidase inhibitory activities. Therefore, DESs (choline chloride-oxalic acid) as a high-efficiency and non-pollution solvent alternative can be applied to the separation of bioactive polysaccharides from Morchella importuna (M. importuna).

Abstract
To improve the functional properties of mulberry leaves, γ-aminobutyric acid (GABA) enrichment treatments were applied. The results showed that the combined treatment of sodium glutamate immersion, cold shock, and anoxic significantly increased the GABA content. HPLC analysis displayed that the quantity of some active phenolics was significantly increased after the treatment. The GABA-enriched mulberry leaf powders were subsequently prepared, and it was found that as the particle size decreased, their water and oil holding capacity and their swelling power decreased, while the angle of repose increased. The dissolution rate of GABA and total phenolics increased as the particle size decreased. Optical observations and SEM results revealed that the fiber structures of the particles were gradually destroyed as the particle size decreased. Further, FTIR analysis showed that the active compounds in the powders were not destroyed. M400 and M140 powder showed the maximum DPPH radical scavenging ability and AGEs inhibition capacity, respectively. Additionally, adding the powders effectively alleviated the staling of bread without any significant effect on taste.

Abstract
The present study shows the purification of a main oligosaccharide fraction (MLO 1-2) from the enzymatic hydrolysate of mulberry leaf polysaccharides by DEAE-52 cellulose and gel column chromatography. The physicochemical properties of MLO 1-2 were characterized. The structure of MLO 1-2 was obtained as follows: α-(2-OAc)-Manp-1 → 2-β-Glcp-1 → 4-β-Glcp-1 → 4-α-Glcp-1 → 2-α-Glcp-1 → 2-α-Galp-1 → 2-β-Galp-1 → 2-β-Galp-1, which was elucidated by methylation and NMR analysis. The molecular weight of MLO 1-2 showed no significant change after simulated saliva, gastric and intestinal digestion. This indicated that MLO 1-2 could pass through the digestive system without being degraded to safely reach the colon to regulate the gut microbiota. Additionally, MLO 1-2, more than glucose or galactooligosaccharides, promoted the proliferation of Bifidobacterium bifidum, B. adolescentis, Lacticaseibacillus rhamnosus and Lactobacillus acidophilus. Furthermore, the acetic and lactic acid concentrations of bacterial cultures inoculated with MLO 1-2 were higher than those inoculated with glucose and galactooligosaccharide (GOS). These results suggest that MLO 1-2 could be an excellent prebiotic for intestinal flora regulation and the promotion of gut health.

Abstract
Hydroponic culture has become a commercial planting model for leafy vegetables, herbs, and other plants with medicinal value. Methyl jasmonate (MeJA) is involved in primary and secondary plant metabolism; moreover, it regulates plant bioactive compounds and enhances the nutritional and medicinal value of plants. We performed targeted metabolomic analysis of the primary and secondary metabolites in substrate-grown and hydroponic Chinese chive leaves sprayed with MeJA (0, 300, 500, and 800 μM). Using ultra-performance liquid chromatography (UPLC), UPLC tandem mass spectrometry, and chemometric tools, and analyzed the antioxidant activity of these plants. We identified the biomarkers of amino acids (serine, proline, lysine, and arginine) and phenolic compounds (4-coumaric acid and protocatechuic acid) using chemometric tools to distinguish between substrate-grown and hydroponic Chinese chives treated with MeJA. MeJA (500 μM) treatment significantly increased the total sugar and amino acid (essential and non-essential amino acids and sulfur-containing amino acids) contents of hydroponically grown Chinese chives. However, the changes in total sugar and amino acid contents in Chinese chive grown in substrates showed the opposite trend. The organic acid content of hydroponically grown Chinese chives treated with MeJA decreased significantly, whereas that of substrate-grown plants treated with 300 μM MeJA increased significantly. Further, MeJA treatment significantly increased the phenolic content of substrate-grown Chinese chives. Treatment with 800 μM MeJA significantly increased the carotenoid content of substrate-grown Chinese chives and the phenolic content of hydroponic Chinese chives. In addition, the 500 μM MeJA treatment significantly increased the antioxidant activity of Chinese chives in both substrate-grown and hydroponic cultures, and promoted the accumulation of nutrients and bioactive substances. This treatment also improved the flavor quality of these plants and their nutritional and medicinal value. Thus, the results suggested that MeJA-treated plants could be used as value-added horticultural products.

Abstract
Mulberry (Morus australis Poir.) leaves have long been consumed in the form of tea or tincture especially in Asia, owing to their high antioxidant and blood pressure-regulating properties. Although it is thought that vascular abnormal contraction may be involved in the blood pressure-suppressing effect, the effect of mulberry on vascular abnormal contraction is still unknown. Therefore, we investigated mulberry leaves as a potential source of bioactive compounds that prevent vascular abnormal contraction. Mulberry leaves were divided into fresh leaves and tea leaves and further classified according to the age of the tree: more or less than 20 years old, into roasted and unroasted. Mulberry fruits were also evaluated. We assessed the preventive effect of mulberry extracts on vascular abnormal contraction. Extracts from mulberry leaves of trees more than 20 years old showed a strong preventive effect on vascular abnormal contraction of human coronary artery smooth muscle cells. Therefore, to identify the active components in mulberry leaves, we fractionated the active fractions by gel filtration chromatography and reversed-phase high-performance liquid chromatography. The active fraction was further analyzed by mass spectrometry and nuclear magnetic resonance; an active component of the mulberry leaf extract was fisetin. In addition, our results indicated that the hydroxyl group at the C-3 position of fisetin is crucial for its activity. These results prove that fisetin is effective in preventing vascular abnormal contraction. Overall, mulberry leaves and fisetin are expected to be used in a wide range of fields such as functional foods, nutraceuticals, and drug targets.

Abstract
With the accelerated pace of modern life, people are facing more and more health pressure. The study of polysaccharides seemed a good choice as a potential treasure trove. Polysaccharides, one of the four basic substances (proteins, nucleic acids, lipids and carbohydrates) that constitute life activities, are obviously an underrated macromolecular substance with great potential. Compared with protein and nucleic acid, the research of polysaccharides is still in the primary stage. The relationship between structure and function of polysaccharides is not clear. In this review, we highlighted the main methods of extraction, purification and structure identification of polysaccharides; summarized their biological activities including immunoregulation, hypoglycemic, anti-tumor, anti-virus, anti-coagulation, and so on. Particularly, the relationship between their structures and activities was described. In addition, the applications of polysaccharides in health food, medicine and cosmetics were also reviewed. This review can help polysaccharide researchers quickly understand the whole process of polysaccharides research, and also provide a reference for the comprehensive utilization of polysaccharides. We need to standardize the research of polysaccharides to make the experimental data more universal, and take it as important references in the review process. Glycomic may appear as the next "omic" after genomic and proteomic in the future. This review provides support for the advancement of glycomics.

Abstract
Obesity has become one of the most serious chronic diseases threatening human health. Its occurrence and development are closely associated with gut microbiota since the disorders of gut microbiota can promote endotoxin production and induce inflammatory response. Recently, numerous plant extracts have been proven to mitigate lipid dysmetabolism and obesity syndrome by regulating the abundance and composition of gut microbiota. In this review, we summarize the potential roles of different plant extracts including mulberry leaf extract, policosanol, cortex moutan, green tea, honokiol, and capsaicin in regulating obesity via gut microbiota. Based on the current findings, plant extracts may be promising agents for the prevention and treatment of obesity and its related metabolic diseases, and the mechanisms might be associated with gut microbiota.

Abstract
In recent years, various mulberry leaf dishes have gradually gained in popularity. The harvesting period of mulberry leaves and the preparation of dried samples are critical for the retention of flavonoid content and activity. In this study, changes in flavonoid levels in mulberry leaves during their growth period (3-6 months), and the effects of four different drying methods [sun drying (SD), air drying (AD), oven drying (OD), and freeze drying (FD)] on flavonoid accumulation and antioxidant capacity were determined. The results showed that mulberry leaves grown for 6 months had higher levels of flavonoids, and different drying methods could significantly affect the flavonoid levels and antioxidant capacity of the leaves. Air drying and FD were the best methods in terms of retaining the antioxidant activity of flavonoids, although AD had lower operating costs than FD in the production process. Therefore, to obtain a high flavonoid content and maximum antioxidant activity, AD is recommended for mulberry leaves.

Abstract
This study evaluates how white mulberry (Morus alba L.) leaf extracts affect the growth, antioxidant activity, and immune response in Nile tilapia Oreochromis niloticus. Mulberry leaf extracts were obtained through aqueous extraction (AE) and ethanol extraction (EE). Powder of mulberry leaf (PML) was added directly to feed and compared with the effects of feeds supplemented with the different extracts. Fish were divided into eight groups for an 8-week feeding trial where they were fed the basal diet or supplementation with 10% PML, 10% AE, 20% AE, 40% AE, 10% EE, 20% EE, or 40% EE. The inclusion of mulberry leaf extract obtained with either method showed better effects on fish growth performance, antioxidant activities and acid phosphatase activity (ACP) in serum, immune cytokine expression, and intestinal morphology as compared with controls or fish fed the 10% PML diet. The specific growth rate was significantly higher in the 10% AE, 10% EE, and 20% EE groups compared with all other groups (P<0.05). Catalase activity was significantly greater in most groups fed an extract, and in the 10% PML group, when compared with controls. Similarly, ACP, interleukin (IL)-1, and IL-2 expression was significantly increased in groups fed an extract, and in the 10% PML group, when compared with controls (P<0.05). IL-1, IL-2, IL-10, and Toll-like receptor 2 expression was significantly greater in the 10% EE group than in the 10% PML and 10% AE groups (P<0.05). Villus length in the middle intestine was significantly increased in the 10% AE and 10% EE groups compared with controls and the 10% PML group (P<0.05). Thus, 10% mulberry leaf ethanol extract added to feed is recommended for enhancing the growth rate and health of cultured Nile tilapia.

Abstract
Flours and starches extracted from the tropical tubers underwent freeze-drying and cooking in comparison with fresh cooking. Freeze-dried and cooked starch (FDS) granules were found to have different shapes and collapsed arrangement whereas freshly cooked starch (FCS) granules had the least varied structures. The freeze-dried flours had larger structures compared to freshly cooked flours. The physicochemical parameters were high in Dioscorea esculenta (DE)-FDS, followed by Amorphophallus paeoniifolius (AP)-FDS and other samples whereas D. alata (DA)-FCS had the lowest, whereas flours followed similar trend. FDS (42.1%) had the highest solubility index and swelling power whereas FCS (11.1%) showed the lowest. The syneresis and light transmittance levels were higher in FDS and FDF. The freeze dried flour and starch showed higher onset (T0), peak (TP), and conclusion (TC) temperature than fresh cooked samples. The variations in IR spectra, thermal properties, and crystalline index were termed as differential function of physicochemical characteristics, structural changes that resulted from freeze drying, and cooking treatment employed.

Abstract
Mulberry (Moraceae family), commonly considered as a folk remedy, has a long history of usage in many regions of the world. Polysaccharides regarded as one of the major components in mulberry plants, and they possess antioxidant, antidiabetic, hepatoprotective, prebiotic, immunomodulatory and antitumor properties, among others. In recent decades, mulberry polysaccharides have been widely studied for their multiple health benefits and potential economic value. However, there are few reviews providing updated information on polysaccharides from mulberry. In this review, recent advances in the study of isolation, purification, structural characterization, biological activity and the structure-activity relationship of mulberry polysaccharides are summarized and discussed. Furthermore, a thorough analysis of the current trends and perspectives on mulberry polysaccharides is also proposed. Hopefully, these findings can provide a useful reference value for the development and application of natural polysaccharides in the field of functional food and medicine in the future.

Abstract
SummaryThe investigation aimed at determining the impact of sequential simulated digestion on the physicochemical properties and digestive enzymes inhibitory effects of the polysaccharides fraction (MLP‐2) of Morus alba L. leaves as well as its in vitro fermentation behaviours. After artificial salivary, gastric and intestinal digestions, the chemical components and microstructure of MLP‐2 were altered with significantly (P < 0.05) decreased molecular weight. The α‐amylase and α‐glucosidase inhibitory activities of MLP‐2 were significantly (P < 0.05) improved throughout simulated digestion. MLP‐2I, the intestinal digested fraction of MLP‐2, could significantly (P < 0.05) decrease the pH value of fermented culture and increase the short‐chain fatty acids (SCFA) concentrations, especially acetic, propionic and butyric acids. In conclusion, MLP‐2 could be gradually degraded under simulated digestion with altered physicochemical properties and enhanced α‐amylase and α‐glucosidase inhibitory effects, and further utilised by human gut microbiota to decrease pH value and promote SCFA production.

Abstract
Effects of enzymatic hydrolysis on the structural, rheological, and functional properties of mulberry leaf polysaccharide (MLP) were characterized in this study. The enzymatic hydrolysis of MLP raised the carbonyl, carboxyl, and hydroxyl groups from 7.21 ± 0.86 to 10.08 ± 0.28 CO/100 Glu, 9.40 ± 0.13 to 17.55 ± 0.34 COOH/100 Glu, and 5.71 ± 0.33 to 8.14 ± 0.24 OH/100 Glu, respectively. Meanwhile, an increase in thixotropic performance and structure-recovery capacities were observed in hydrolyzed MLP, while the molecular weight, surface tension, apparent viscosity, and thermal stability were decreased. An improved antioxidant activity of MLP was also achieved after the enzymatic degradation. Moreover, the hydrolyzed MLP showed greater ability to promote the growths of Bifidobacterium bifidum, Bifidobacterium adolescentis, Lactobacillus rhamnosus, and Lactobacillus acidophilus and the production of acetic acid, butyric acid, and lactic acid. The results demonstrate that enzymatic modification is a useful approach for polysaccharide processing.

Abstract
The effects of drying methods on the contents of four nonvolatile and five volatile components and the immunoregulatory activities of four components in Osmamthus fragrans flowers were investigated. In general, microwaving preserved more nonvolatile components than the other methods, while the sun or shade method preserved more volatile components. Nonvolatile components such as salidroside and acteoside and volatile ingredients such as linalool and linalool oxide exhibited better immunoregulatory activity than the other ingredients. Taken together, O. fragrans flowers dried by microwaving resulted in the best immunoregulatory activity. This study provides evidence for the optimal drying method for O. fragrans flowers as food and medicine.

Abstract
Both fermentation degree and preparation method of polysaccharides could influence the bioactivity of tea polysaccharides. The aim of this study was to compare the physicochemical characterization and biological activities of the polysaccharides isolated by ultrafiltration method from three kinds of tea (green tea, oolong tea, and black tea). The bioactivities of tea polysaccharide fractions were compared from four aspects, including antioxidant activities, antiglycation activities, α-glucosidase inhibitory capability, and hypoglycemic effects on L6 myotubes. Results showed that six polysaccharides (GTPS1, GTPS2, OTPS1, OTPS2, BTPS1, and BTPS2) had different contents of neutral sugar and uronic acid, and they showed different morphologies. Six polysaccharides were composed of the seven monosaccharides with different molar ratios. BTPS1 exhibited the highest DPPH scavenging activity and hydroxyl radical scavenging activity (P < 0.05), and BTPS1 also showed the strongest antiglycation inhibitory effects (P < 0.05). BTPS1 and BTPS2 showed strong inhibitory capacity on α-glucosidase and hypoglycemic effects in L6 skeletal muscle cells. The result suggested that the degree of fermentation of tea could improve their bioactivities (BTPS > OTPS >GTPS), and TPS1 with smaller molecular weight distribution showed higher bioactivities than TPS2. This study can provide a scientific foundation for the application of tea polysaccharides and related functional products.

Abstract
The aim of the study was to determine the effect of the method and temperature of the sublimation, vacuum and convective drying process on the kinetics of dehydration of the Moldovan dragonhead leaves, as well as on the physical and chemical properties, such as color coordinates, total content of phenolic compounds, antioxidant capacity, total monomeric anthocyanins content, total flavonoids content and content of essential oils. It was shown that the kinetics of the sublimation and vacuum drying process are best described by the logarithmic and Page models. Sublimation and vacuum drying were characterized by comparable process times. An increase in drying temperature caused a decrease in the content of phenolic compounds and antioxidant activity of the dried material and a significant change in the composition of essential oils. The lowest brightness of the dried material and the lowest color saturation was found after sublimation drying at 20 °C. The highest dried material quality was found in case of convective and sublimation drying at 20 °C.

Abstract
In this study, in order to evaluate influences of different drying methods on the structural characteristics, physicochemical properties and antioxidant activities of exopolysaccharides (EPS) from Lactobacillus helveticus MB2-1, three drying methods, including spray-drying (SD), freeze-drying (FD) and spray freeze-drying (SFD), were applied to dry EPS. Results showed that different drying procedures had no significant influence on the primary structure and constituent monosaccharides of EPSs. However, the surface morphology of the three dried EPSs varied greatly in size and shape due to different drying processes. Among three dried EPSs, the particle size distribution of spray freeze-dried EPS (SF-EPS) was relatively narrower and uniform. Additionally, SF-EPS behaved better apparent viscosity and emulsifying property than spray-dried EPS (S-EPS) and freeze-dried EPS (F-EPS). SF-EPS exhibited stronger antioxidant activities when compared with S-EPS and F-EPS, according to the results of scavenging activities on different radicals and chelating activity on ferrous ion. Overall, SFD was the appropriate method for industrial production of EPS from Lactobacillus helveticus MB2-1 with better physicochemical properties and antioxidant activities.

Abstract
Four drying methods, including freeze drying, hot air drying, vacuum drying, microwave drying at 400, 600, and 800 W, were applied to dry the peduncles of Hovenia dulcis. Then the effects of different drying methods on physicochemical characteristics and bioactivities of polyphenolic-protein-polysaccharides conjugates extracted from H. dulcis (PPPs) were investigated and compared. Results showed that different drying methods affected the physicochemical characteristics and bioactivities of PPPs. Noticeable variations in extraction yields, contents of total proteins, contents of total polyphenolics, contents of total flavonoids, contents of uronic acids, molecular weights, apparent viscosities, molar ratios of constituent monosaccharides, ratios of constituent amino acids, and degrees of esterification were observed in PPPs obtained by different drying methods. Besides, a total of 13 phenolic compounds in PPPs were identified by UPLC-ESI-QTOF-MS. In addition, PPPs, especially PPP-M6 and PPP-V dried by microwave drying at 600 W and vacuum drying, respectively, exhibited remarkable antioxidant activities, antiglycation activities, and inhibitory activities on α-amylase and α-glucosidase. Results suggested that the microwave drying and vacuum drying techniques could be appropriate drying methods before extraction of PPPs with high bioactivities for applications in the functional food and medicine industries.

Abstract
In the present study, freeze drying, hot-air drying, vacuum drying, and microwave drying at the microwave powers of 400, 600, and 800 W, respectively, were utilized to dry loquat leaves for evaluating the effects of different drying techniques on the physicochemical structures and bioactivities of polysaccharides extracted from loquat leaves (LLPs). Results demonstrated that the physicochemical structures and bioactivities of LLPs significantly affected by different drying techniques. The degrees of esterification, molar ratios of constituent monosaccharides, contents of uronic acids, apparent viscosities, and molecular weights of LLPs were varied by different drying techniques. Additionally, LLPs, particularly LLP-M4 which extracted from loquat leaves prepared by microwave drying at the power of 400 W, exerted remarkable in vitro binding capacities, strong inhibitory effects on α-amylase and α-glucosidase, and obvious antioxidant activities. Results indicated that the microwave drying could be an efficient drying technique before extraction of bioactive LLPs, and LLPs had great potential applications in the functional food and pharmaceutical industries.
