Abstract
A modified quick, easy, cheap, effective, rugged, and safe extraction procedure combined with ultra-performance liquid chromatographic separation and ion mobility quadrupole time-of-flight mass spectrometry was developed to determine the presence of 20 mycotoxins (i.e., Alternaria toxins, ochratoxin, patulin, aflatoxin and trichothecenes) in fruit samples from Xinjiang. A complete platform, including screening via an in-house library, confirmation and quantification using reference standards, was established, which provided accurate MS data and complete spectra containing the fragment ions for each analyte. To evaluate the performance of the developed method, satisfactory validation parameters, such as linearity (R2 ≥ 0.9992), precision (RSDs ≤ 9.8%), recovery (81.2-99.2%), LOD (0.06-2.22 µg kg-1), and LOQ (0.2-7.39 µg kg-1), were obtained. The analysis of 130 fruit samples revealed nonnegligible contamination with mycotoxins; specifically, the highest levels of three Alternaria toxins were detected in jujube, wolfberries and raisins.

Abstract
Drying optimization, to mitigate fungal growth and Ochratoxin A (OTA) contamination is a key topic for raisin and currant production. Specific indicators of environmental conditions and drying properties were analyzed using two seedless grape varieties (Crimson—red and Thompson—white), artificially inoculated with Aspergillus carbonarius under open air and tunnel drying. The air temperature (T), relative humidity, grape surface temperature (Ts) and water activity throughout the drying experiment, the grapes’ moisture content and the fungal colonization and OTA contamination during the drying process and their interactions were recorded and critically analyzed. Drying properties such as the water diffusivity (Deff) and peel resistance to water transfer were estimated. The grapes Ts was 5–7 °C higher in tunnel vs. open air–drying; the infected grapes had higher maximum Ts vs. the control (around 4–6 °C). OTA contamination was higher in tunnel vs. open air–dried grapes, but fungal colonies showed the opposite trend. The Deff was higher in tunnel than in the open air–drying by 54%; the infected grapes had more than 70% higher Deff than the control, differences explained by factors affecting the water transport. This study highlighted CFU and OTA indicators that affect the water availability between red and white grapes during open air and tunnel drying, estimated by the Deff and peel resistance. This raises new issues for future research.

Abstract
Currants are prone to contamination by ochratoxin during cultivation, processing and storage conditions. Saccharomyces cerevisiae is considered to be among the main species of grape yeast flora able to control antagonistic fungi. In this study, the potential of S. cerevisiae Y33 was investigated to inhibit the growth of several fungal species indigenous to the microbiota of grapes. Moreover, the efficacy of this yeast species was investigated to inhibit OTA by toxin producing fungi both in vitro and in situ. For this purpose thirty-five different fungal species, belonging to the genera Aspergillus, Penicillium, Cladosporium, Fusarium and Alternaria interacted in vitro with S. cerevisiae on Malt Extract agar plates, stored at 25 °C for 14 days. Results showed that the highest OTA producer A. carbonarius F71 was inhibited more than 99% from day 7, in contrast to A. niger strains that presented enhanced OTA production at day 14 due to interaction with S. cerevisiae Y33. Additionally, the antifungal potential of the selected yeast was also studied in situ on currants subjected to different treatments and stored at 25 °C for 28 days. Microbiological analysis was undertaken for the enumeration of the bacterial and fungal flora, together with OTA determination at 7 and 21 days. To quantify A. carbonarius on all treated currant samples, molecular analysis with Real Time PCR was employed. A standard curve was prepared with A. carbonarius DNA. The efficiency of the curve was estimated to 10.416, the slope to -3.312 and the range of haploid genome that could be estimated was from 1.05 to 105∙105. The amount of A. carbonarius DNA in all treated currants samples, where the fungus was positively detected, ranged from as low as 0.08 to 562 ng DNA/g currants. The antifungal activity of S. cerevisiae Y33 was observed in all studied cases, causing inhibition of fungal growth and OTA production.

Abstract
Spices are imported worldwide mainly from developing countries with tropical and/or subtropical climate. Local conditions, such as high temperature, heavy rainfall, and humidity, promote fungal growth leading to increased occurrence of mycotoxins in spices. Moreover, the lack of good agricultural practice (GAP), good manufacturing practice (GMP), and good hygienic practice (GHP) in developing countries are of great concern. This review summarizes recent data from a total of 56 original papers dealing with mycotoxins and microfungi in various spices in the last five years. A total of 38 kinds of spices, 17 mycotoxins, and 14 microfungi are discussed in the review. Worldwide, spices are rather overlooked in terms of mycotoxin regulations, which usually only cover aflatoxins (AFs) and ochratoxin A (OTA). In this paper, an extensive attention is devoted to the limits on mycotoxins in spices in the context of the European Union (EU) as well as other countries. As proven in this review, the incidence of AFs and OTA, as well as other mycotoxins, is relatively high in many spices; thus, the preparation of new regulation limits is advisable.

Abstract
The consumption of herbal-based supplements, which are believed to have beneficial effects on human health with no side effects, has become popular around the world and this trend is still increasing. Silybum marianum (L.) Gaertn, commonly known as milk thistle (MT), is the most commonly studied herb associated with the treatment of liver diseases. The hepatoprotective effects of active substances in silymarin, with silybin being the main compound, have been demonstrated in many studies. However, MT can be affected by toxigenic micro-fungi and contaminated by mycotoxins with adverse effects. The beneficial effect of silymarin can thus be reduced or totally antagonized by mycotoxins. MT has proven to be affected by micro-fungi of the Fusarium and Alternaria genera, in particular, and their mycotoxins. Alternariol-methyl-ether (AME), alternariol (AOH), beauvericin (BEA), deoxynivalenol (DON), enniatin A (ENNA), enniatin A1 (ENNA1), enniatin B (ENNB), enniatin B1 (ENNB1), HT-2 toxin (HT-2), T-2 toxin (T-2), tentoxin (TEN), and zearalenone (ZEA) seem to be most significant in MT-based dietary supplements. This review focuses on summarizing cases of mycotoxins in MT to emphasize the need for strict monitoring and regulation, as mycotoxins in relation with MT-based dietary supplements are not covered by European Union legislation.

Abstract
In this study, Carum carvi L. essential oil (CEO) and Origanum majorana L. essential oil (MEO) was steam-distillated under reduced pressure. We henceforth obtained three fractions for each essential oil: CF1, CF2, CF3, MF1, MF2, and MF3. Then, these fractions were characterized using the gas chromatography–mass spectrometry (GC-MS) technique. The results indicated that some fractions were rich in oxygenated compounds (i.e., CF2, CF3, MF2, and MF3) with concentrations ranging from 79.21% to 98.56%. Therefore, the influence of the chemical composition of the essential oils on their antifungal activity was studied. For this purpose, three food spoilage fungi were isolated, identified, and inoculated in vitro, in order to measure the antifungal activity of CEO, MEO, and their fractions. The results showed that stronger fungi growth inhibitions (FGI) (above 95%) were found in fractions with higher percentages of oxygenated compounds, especially with (−)-carvone and terpin-4-ol as the major components. Firstly, this work reveals that the free-terpenes hydrocarbons fractions obtained from MEO present higher antifungal activity than the raw essential oil against two families of fungi. Then, it suggests that the isolation of (−)-carvone (97.15 ± 5.97%) from CEO via vacuum distillation can be employed successfully to improve antifungal activity by killing fungi (FGI = 100%). This study highlights that separation under reduced pressure is a simple green method to obtain fractions or to isolate compounds with higher biological activity useful for pharmaceutical products or natural additives in formulations.

Abstract
Thirty strains of Aspergillus niger, including 27 intended used in the food industry of China, were studied for their ochratoxin A (OTA) production on the three natural substrates—corn, rice, and wheat bran—at different time intervals by high-performance liquid chromatography. It was found that the frequencies of OTA for the studied 27 industrial strains ranged from 14.8% (4/27) at day 28 to 25.9% (7/27) at day 7 on corn, 14.8% (4/27) at day 7 to 33.3% (9/27) at day 21 on rice, and 22.2% (6/27) at day 7, 14, and 28 to 44.4% (12/27) at day 21 on wheat bran, respectively. The average concentrations of OTA produced by the studied 27 industrial strains ranged from 5.1 μg/kg at day 28 to 8.7 μg/kg at day 21 on corn, 4.2 μg/kg at day 7 to 17.9 μg/kg at day 14 on rice, and 4.5 μg/kg at day 7 to 7.2 μg/kg at day 21 on wheat bran, respectively. Furthermore, the OTA production in the studied 27 industrial strains of A.niger was strongly associated with their function (or application), culture substrate, and time. The saccharifying enzyme producers produced higher levels of OTA, compared with the organic acid producers, the tannase producers, and the β-galactosidase producer, while concentration differences were also observed in OTA production among strains of A.niger with the same application. In a word, some strains of A.niger intended used in the Chinese food industry indeed have the capability of producing OTA, elevating the risks to food safety associated with their use.

Abstract
This review is mainly centered on beverages obtained from tropical crops, including tea, nut milk, coffee, cocoa, and those prepared from fruits. After considering the epidemiological data found on the matrices above, the focus was given to recent methodological approaches to assess the most relevant mycotoxins. Aspects such as singularities among the mycotoxin and the beverage in which their were found, and the economic effects and repercussions that the mycotoxin-tainted ingredients have on the beverage industry were pointed out. Finally, the burden of their consumption through beverages, including risk and health effects on humans, was addressed as well.

Abstract
The objective of this study was to investigate the effect of environmental factors, namely temperature and water activity, on genes involved in the regulation of ochratoxin A (OTA) production over time. For this purpose, the previously characterized toxigenic Aspergilluscarbonarius Ac29 isolate from Greek vineyards and the A. carbonarius ITEM 5010 reference strain were subjected to combined temperature and water activity (aw) treatments to study OTA production and relative gene expression. The fungal isolates were grown on a synthetic grape juice liquid medium (SGM) under different temperature (20 °C, 25 °C and 30 °C) and aw (0.94 and 0.98) regimes. The expression of the AcOTApks, AcOTAnrps, and laeA OTA related genes was investigated using real time PCR. Gene expression was monitored at the same time points, along with fungal biomass and OTA accumulation at three, six and nine days of incubation. In gene expression analysis, stimulation of the biosynthetic genes was observed a few days before any toxin could be detected. This fact may underline a possible early indicator of potential toxin contamination of grapes. However, the transcript levels varied with respect to the different combinations of ecophysiological conditions and time, highlighting a complex regulation of OTA related gene expression of A. carbonarius in the specific medium.

Abstract
The healthy consumers make a strong pressure to natural products that can prevent the chronic diseases and improve the general health status, and therefore an important aspect that have to be considered is the safe level of the nutraceuticals. This study reports the occurrence of Ochratoxin A (OTA) and associated fungal contamination in 35 samples of dried vine fruits imported in the European community potentially used for the development of new nutraceutical supplements. High pressure liquid chromatography analysis identified 18 samples as contaminated by OTA with an average level of 2.6 μg/kg. OTA was measured in 4 samples of currants (mean value of 6.6 μg/kg) and 13 samples of raisins (mean value of 1.4 μg/kg). In one sample of currants and one of raisins from Turkey OTA exceeded the limits set by European Commission of 10 μg/kg, being contaminated with 12.61 and 15.99 μg/kg, respectively. All the positive samples were confirmed by Orbitrap Q Exactive through their molecular weight and the corresponding fragmentation. The worldwide consumption of dried vine fruits contributed to OTA exposure in several group of consumers. In particular, considering the potential nutraceutical approach, this consumption may be represent a severe risk for healthy consumers that consider these products like healthy and salutistic for their contents in antioxidants, flavonoids, and polyphenols. Data reported in this study confirmed the need to regularly monitor mycotoxin levels in these food products and optimize the process of fruits drying in order to reduce the development of toxigenic molds.

Abstract
Occurrence of toxigenic molds and mycotoxins on dried fruits is a worldwide problem, but limited information is available in China. A total of 220 dried fruits (raisins, dried apricots, dates and wolfberries) purchased from China were analyzed for 17 mycotoxins (i.e., Alternaria toxins, ochratoxin A (OTA), patulin (PAT) and trichothecenes) by UPLC-MS/MS, combined with a single-step cleanup. The result showed that at least one mycotoxin was detected in 142 samples (64.6%). The lowest incidence of contaminated samples was observed in dried apricots (48.2%), and the highest incidence in dried wolfberries (83.3%). The Alternaria toxins seemed to be the major problem in dried fruits, rather than OTA or PAT. Tenuazonic acid (TeA) was the predominant mycotoxin, in both frequency and concentration, ranging from 6.9 to 5665.3 μg kg−1, followed by tentoxin (TEN; 20.5%), and mycophenolic acid (MPA; 19.5%). Moreover, raisins are more likely to be contaminated with OTA than the other dried fruits. Penicillic acid (PA) was detected only in dried dates, and PAT was detected only in one apricot sample. In addition, our results also showed that the simultaneous presence of 2–4 mycotoxins was observed in 31.4% of dried fruits. TeA and TEN were the most frequent combination, detected in 29 (13.2%) samples, followed by TeA and MPA with a prevalence of 11.4%. Therefore, the results of this survey suggest the need for wider monitoring on the contamination of these mycotoxins, especially Alternaria toxins in agro-products, and indicate the importance of setting a maximum limit for Alternaria toxins in China.

Abstract
A reliable analytical method based on liquid chromatography-tandem mass spectrometry was developed for simultaneous determination of aflatoxin B1 (AFB1), aflatoxin B2 (AFB2), aflatoxin G1, aflatoxin G2, ochratoxin A (OTA), deoxynivalenol, T-2 and HT-2 toxin, and zearalenone (ZEA) in various dried fruits. A simple one-step sample extraction without using clean-up cartridges made the established method less labour consuming and less expensive, while optimisation of the several important MS/MS parameters, i.e. the scan time and run segments, ensured its sensitivity and selectivity. After careful validation of the method by determining the linearity (R2>0.99), recovery (77.8-115.9%), precision (relative standard deviation ≤19.5%) and sensitivity (limits of quantification in the range of 0.1-10 μg/kg), a survey of 125 dried fruit samples including 25 pistachios, 28 dried longans, 32 raisins and 40 dried dates randomly collected from different markets in Shanghai, China, was performed. Results revealed that 32.0% of samples were contaminated with different mycotoxins, among which, OTA was the most frequent contaminant with the incidence of 29.6% attaining the concentration levels in the range of 0.4-212.6 μg/kg. ZEA was positively found in 2 pistachio samples with the concentrations of 84.9 μg/kg and 426.9 μg/kg. Trace amounts of AFB1 (0.8 μg/kg) and AFB2 (0.2 μg/kg) were also observed in one pistachio sample and one dried longan sample, respectively. To the best of our knowledge, this is the first report to reveal the real situations of mycotoxin contaminations in various dried fruits in China.

Abstract
The occurrence of ochratoxin A (OTA) in dried grapes was surveyed in this study. Sixty-six samples of dried grapes (40 currants, 16 sultanas and 10 raisins) were collected from dried grapes factories in Hamadan province, Iran, from October 2012 to March 2013. High-performance liquid chromatography (HPLC) was used to determine OTA in these samples. OTA was detected in 23 (57.5%) currants, 10 (62.5%) sultanas and 6 (60%) raisins samples. Levels in five samples exceeded the Institute of Standards and Industrial Research of Iran (ISIRI) maximum level of 5 µg/kg. However, OTA content in none of the samples exceeded the maximum limit prescribed in the European Union (EU) regulations, which is 10 µg/kg. The obtained data contribute to information on OTA levels in Iranian dried grapes.

Abstract
Aspergillus section Nigri is a heterogeneous fungal group including some ochratoxin A producer species that usually contaminate raisins. The section contains the Series Carbonaria which includes the toxigenic species Aspergillus carbonarius and nontoxigenic Aspergillus ibericus that are phenotypically undistinguishable. The aim of this study was to examine the diversity of black aspergilli isolated from raisins and to develop a specific genetic marker to distinguish A. ibericus from A. carbonarius. The species most frequently found in raisins in this study were Aspergillus tubingensis (35.4%) and A. carbonarius (32.3%), followed by Aspergillus luchuensis (10.7%), Aspergillus japonicus (7.7%), Aspergillus niger (6.2%), Aspergillus welwitschiae (4.6%) and A. ibericus (3.1%). Based on inter-simple sequence repeat (ISSR) fingerprinting profiles of major Aspergillus section Nigri members, a sequence-characterized amplified region (SCAR) marker was identified. Primers were designed based on the conserved regions of the SCAR marker and were utilized in a PCR for simultaneous identification of A. carbonarius and A. ibericus. The detection level of the SCAR-PCR was found to be 0.01 ng of purified DNA. The present SCAR-PCR is rapid and less cumbersome than conventional identification techniques and could be a supplementary strategy and a reliable tool for high-throughput sample analysis.

Abstract
Sixty-four tree nut samples (almonds, pecans, pine nuts, and walnuts) and 50 dried fruit samples (apricots, cranberries, papaya, pineapple, and raisins) were purchased from local supermarkets and analyzed for fungal contamination using conventional culture as well as molecular methods. The results of our study showed that the highest yeast and mold (YM) counts (5.34 log10 CFU g−1) were found in walnuts and the lowest in pecans. The most common mold in nuts was Aspergillus niger, relatively low numbers of A. flavus were found across the board, while Penicillium spp. were very common in pine nuts and walnuts. Low levels (2.00–2.84 log10 CFU g−1) of yeasts were recovered from only two pine nut samples. Fungal contamination in dried fruits was minimal (ranging from <2.00 to 3.86 log10 CFU g−1). The highest fungal levels were present in raisins. All papaya samples and the majority of cranberry, pineapple, and apricot samples were free of live fungi. The most common mold in dried fruits was A. niger followed by Penicillium spp. One apricot sample also contained low levels (2.00 log10 CFU g−1) of yeasts.

Abstract
Alternaria is a fungal agent of grape bunch rot which occurs during withering, a process which produces passito style wines. Seven isolates of Alternaria spp. were characterized using morphological examination, genotypic analysis and pathogenicity. Six of these isolates produced conidiophores and conidia displaying sporulation patterns typical of the Alternaria alternata species-group. Variability in colony morphology and growth on different media was observed. Phylogenetic analysis of internal transcribed spacer (ITS) sequences clustered all isolates within a monophyletic clade, while intergenic spacer region (IGS)-RFLP profiles were congruent with those of A. alternata and Alternaria arborescens. RAPD-PCR proved helpful in discriminating between strains. To assay strain pathogenicity, grape berries were infected while undergoing withering conditions at different temperatures. Disease capacity was found to be strain dependent and varied consistently between the most and least aggressive strains. This study has provided interesting information on polymorphism within Alternaria spp. populations in withered grapes and on understanding the saprophytic role of this fungus during the post-harvest dehydrating process.

Abstract
The genera Aspergillus comprises species that produce mycotoxins such as aflatoxins, ochratoxins and patulin. These are cosmopolitan species, natural contaminants of agricultural products. In coffee grains, the most important Aspergillus species in terms of the risk of presenting mycotoxins belong to the genera Aspergillus Section Circumdati and Section Nigri. The purpose of this study was to assess the occurrence of isolated ochratoxigenic fungi of coffee grains from organic and conventional cultivation from the South of Minas Gerais, Brazil, as well as to evaluate which farming system presents higher contamination risk by ochratoxin A (OTA) produced by fungi. Thirty samples of coffee grains (Coffea arabica L.) were analysed, being 20 of them of conventional coffee grains and 10 of them organic. The microbiological analysis was done with the Direct Plating Technique in a Dichloran Rose Bengal Chloramphenicol Agar (DRBC) media. The identification was done based on the macro and micro morphological characteristics and on the toxigenic potential with the Plug Agar technique. From the 30 samples analysed, 480 filamentous fungi of the genera Aspergillus of the Circumdati and Nigri Sections were isolated. The ochratoxigenic species identified were: Aspergillus auricoumus, A. ochraceus, A. ostianus, A. niger and A. niger Aggregate. The most frequent species which produces ochratoxin A among the isolated ones was A. ochraceus, corresponding to 89.55%. There was no significant difference regarding the presence of ochratoxigenic A. ochreceus between the conventional and organic cultivation systems, which suggests that the contamination risk is similar for both cultivation systems.

Abstract
Twenty-four samples including 14 functional foods and 10 spices obtained from Chinese markets were examined for their mould profile. The mycotoxin contamination levels were also determined by an optimized HPLC-FLD method. 124 fungal isolates belonging to four different genera were recovered with Aspergillus and Penicillium as predominant fungi, with an incidence of 66.1% and 15.3%, respectively. In functional foods Aspergillus niger section (57.1%) was isolated more frequently, followed by Aspergillus flavi section (50.0%) and Aspergillus ochraceus section (21.4%), with the most contaminated samples being Coix seeds. Similar fungal presence and frequency were encountered in spice with A. niger section group (60.0%) and A. flavi section (40.0%) as main fungi. Cumin and Pricklyash peel samples showed the highest fungal contamination. Four functional foods and three spices were found to be positive at low levels for mycotoxins including aflatoxin B1 (up to 0.26μg/kg) and ochratoxin A (OTA) (5.0μg/kg). The more frequently detected mycotoxin was AFB1 (16.7%).

Abstract
A simple and rapid screening method was developed for the detection of citrinin in fungal cultures using Coconut Cream Agar (CCA) described previously for detecting aflatoxin and ochratoxin A. Fifteen isolates of Penicillium citrinum were inoculated onto CCA and incubated at 25 and 30°C for 10 days. All isolates produced a distinct yellow green fluorescence on CCA when the reverse side of the agar plates were viewed under long wavelength UV light. Detection was optimal at 25°C after four to 5 days of incubation. Isolates positive by the CCA method also tested positive for citrinin production by the TLC agar plug method after growth on CCA, Czapek yeast extract agar and yeast extract sucrose agar. Control cultures were negative by both methods, indicating that the CCA Petri dish method was suitable for screening cultures for citrinin production.

Abstract
Mycotoxin biosynthesis is affected by peculiar agro-ecosystem dependent conditions. Accordingly, the correlation between mycotoxin contamination and environmental condition change scenarios should be carefully considered. This is because fungal colonization and mycotoxin contamination could critically impair the availability of food products, especially in poor countries. At any time, the agricultural products might become susceptible to fungal contamination and mycotoxin production in uncontrolled storage. From 2000 to 2010, many studies were carried out in the case of the effects of different parameters on ochratoxin A (OTA) production by fungi in order to avoid providing the appropriate conditions for producing OTA. Water activity (a(w)), temperature, type of species and the substrates were introduced as the most important in these articles. This paper reviews the major published articles regarding the different ecophysiological factors influencing on OTA production.

Abstract
Aspergillus niger is perhaps the most important fungus used in biotechnology, and is also one of the most commonly encountered fungi contaminating foods and feedstuffs, and occurring in soil and indoor environments. Many of its industrial applications have been given GRAS status (generally regarded as safe). However, A. niger has the potential to produce two groups of potentially carcinogenic mycotoxins: fumonisins and ochratoxins. In this study all available industrial and many non-industrial strains of A. niger (180 strains) as well as 228 strains from 17 related black Aspergillus species were examined for mycotoxin production. None of the related 17 species of black Aspergilli produced fumonisins. Fumonisins (B2, B4, and B6) were detected in 81% of A. niger, and ochratoxin A in 17%, while 10% of the strains produced both mycotoxins. Among the industrial strains the same ratios were 83%, 33% and 26% respectively. Some of the most frequently used strains in industry NRRL 337, 3112 and 3122 produced both toxins and several strains used for citric acid production were among the best producers of fumonisins in pure agar culture. Most strains used for other biotechnological processes also produced fumonisins. Strains optimized through random mutagenesis usually maintained their mycotoxin production capability. Toxigenic strains were also able to produce the toxins on media suggested for citric acid production with most of the toxins found in the biomass, thereby questioning the use of the remaining biomass as animal feed. In conclusion it is recommended to use strains of A. niger with inactive or inactivated gene clusters for fumonisins and ochratoxins, or to choose isolates for biotechnological uses in related non-toxigenic species such as A. tubingensis, A. brasiliensis, A vadensis or A. acidus, which neither produce fumonisins nor ochratoxins.

Abstract
The forty-one samples of Armenian made and eleven samples of imported raisins collected in several markets in Yerevan were studied. The sample collections were carried out during of years 2004 to 2008. Thirty two species of filamentous fungi from Aspergillus, Penicillium, Alternaria Trichoderma and Syncephalastrum genera were isolated and identified. Among species isolated from studied samples species belonging to Aspergillus genera have a very high frequency of occurrence, 65.2% of all investigated filamentous fungi. Species from Nigri section show the highest occurrence: 66.7% of all isolated fungi belonging to Aspergillus genera. Species A. carbonarius and A. niger were dominated among isolated fungi from section Nigri. Both Armenian and imported samples of raisin had a high contamination level by these fungi which are potential producers of ochratoxin A. In Armenian samples were detected two more ochratoxigenic species belonging to Aspergillus section Nigri: A. sclerotioniger and A. lacticoffeatus. But their frequency of occurred was low. Thirty seven strains of A. flavus were isolated, 92% of them were isolated from Armenian samples. Influence of рН and aw on contamination level of raisin by fungi was studied. It was revealed that highest contamination level by filamentous fungi occurred in raisins with relatively high aw value. Contamination level of raisin doesn't depend on pH.

Abstract
After aflatoxins, ochratoxin A (OTA) is the most studied mycotoxin due to the toxicological significance in human and animal diets. OTA presence has been extensively reported worldwide in the last decade in several agricultural products. The main OTA producer in tropical and temperate climates is Aspergillus carbonarius followed by species belonging to A. niger aggregate. Currently, many scientists worldwide have studied the influence of water activity and temperature for growth and biosynthesis of OTA by these species on synthetic media. This article reviews ecophysiological studies of Aspergillus section Nigri strains on synthetic media and natural substrates. The results of these investigations suggest that significant amounts of OTA can be produced in only five days and that the use of different storage practices, such as a(W) and temperature levels below 0.930 and 15 °C, respectively, allow controlling fungal contamination and minimizing the OTA production in several products as peanuts, corn, dried grapes and derived products for human consumption.

Abstract
Xerophilic moulds cause contamination and spoilage of low moisture foods. This study examined the effect of ozone fumigation on growth of a Eurotium species isolated from naan bread. Two ozone treatments were used - a low-level long-term exposure (0.4 μmol/mol for 21 days) and high-level short-term exposure (300 μmol/mol for 5 to 120 min). For the low level exposure the combination of different media sucrose concentrations (0, 5, 10 and 20% w/v) with ozone treatment was also assessed. The growth of the isolate was found to be sensitive to low-level ozone fumigation depending on the media sucrose concentration and duration of the exposure. Low-level ozone exposure significantly (p<0.05) reduced the number of asexual spores formed in media with no added sucrose, an effect not observed in media with higher sucrose levels. Electron microscope observations of colonies indicated that ozone exposed cultures produced lower numbers of cleistothecia. High-level ozone exposure for short durations reduced spore viability although 100% reduction in viability was achieved only after 120 min exposure. This work demonstrates that ozone may be used to reduce spore production in Eurotium but that the ozone effect can be mediated by sucrose levels in the growth medium.

Abstract
The present study aimed: (i) to develop models for the combined effect of water activity (0.99, 0.94 and 0.90), microstructure expressed as 0, 5, 10 and 20% w/v gelatin, and temperature (15, 20 and 25 °C), on growth and OTA production rates by Aspergillus carbonarius; and (ii) to evaluate the performance of the developed models on food matrices (jelly, custard and marmalade) of different viscosity at pH 5.5. The square root of biomass increase rate (fungal growth rate) and OTA production rate were determined by the Baranyi model and were further modeled as a function of temperature, gelatin concentration and a(w) by applying polynomial models. Time for visible growth and the upper asymptote of the OTA production curve were also determined by the Baranyi model. Increase in gelatin concentration resulted in a significant delay in all parameters describing fungal growth and OTA production rates, at all temperatures and a(w). The effect of microstructure on fungal growth and OTA production rates was less evident at stress conditions of a(w) and temperature. Detection time for visible fungal growth was markedly influenced by a(w) and temperature. Coefficients of determination were 0.899 and 0.887 for the models predicting the square root (√μ(max)) of growth and OTA production rate, respectively. Predictions of growth rate agreed well with the recorded data of custard and marmalade, while observations of OTA production rate indicated low agreement with model predictions, in all food matrices except for marmalade. The present findings may provide a basis for reliable assessment of the risk of fungal growth and OTA production in foods of different structural and rheological properties.

Abstract
Ochratoxin A (OTA) is secondary metabolite naturally produced in food and feed by toxigenic fungi, especially some Aspergillus species and Penicillium verucosum. OTA is one of the most studied mycotoxins and is of great interest due to its toxic effects on human and animals. OTA is produced in different food and feed matrices and contaminates a large range of base foods including cereals and derivatives, spices, dried fruits, wine and coffee, etc. Morocco, a North African country, has a climate characterized by high humidity and temperature, which probably favors the growth of molds. This contribution gives an overview of principal investigations about the presence of OTA in foods available in Morocco. Due to its toxicity, OTA presence is increasingly regulated worldwide, especially in countries of the European Union. However, up until now, no regulation limits were in force in Morocco, probably due to the ignorance of the health and economic problems resulting from OTA contamination. Finally, recommendations and future research directions are given required to assess the situation completely.

Abstract
Grapes have different destinations. The most important in the national and international market is wine production, but another is dehydration to produce raisins. Dried vine fruits are at greater risk of ochratoxin A (OTA) contamination than wine grapes because the ratio of Aspergillus carbonarius to Aspergillus niger aggregate increases during drying. The growth of these species, and consequently OTA production, can be influenced by different environmental factors, the two most important being water activity (aW) and temperature. The objective of the present work was to evaluate the lag phase, growth rate and OTA production by two A. carbonarius isolates on irradiated dried grapes at different aW (0.910, 0.928, 0.955, 0.973 and 0.995), temperatures (15, 25 and 30 °C) and incubation times (7, 14 and 21 days). Growth was observed at all aW and temperature ranges assayed. No significant differences between the growth rates reached at 25 °C and 30 °C by both isolates were observed. At the assayed conditions, OTA production occurred over the whole range of temperatures (15-30 °C), with the maximum at 25 and 30 °C depending on the aW. In general, OTA concentration increased as aW increased with no statistically significant differences at the tested incubation times. This work provides information that can be used by companies for the purpose of preventing A. carbonarius and OTA contamination during storage on this and other substrates (e.g. dried prunes, figs and apricots) destined for human consumption.

Abstract
Growth rate, lag phase and OTA production of a mixed inoculum of four Aspergillus carbonarius strains were compared to the behaviour of the single strains at 30 degrees C on Czapek Yeast Extract Agar. Significant differences between radial growth rates and lag phases of the different isolates were observed; however, no significant differences between growth rates of each strain and the mixed inoculum were detected. When the four strains were inoculated simultaneously, the lag phase was the same than the higher value obtained for individual strains, suggesting mycelial interactions between the A. carbonarius isolates. The four strains differed in maximum OTA yield, and the toxin accumulation by the mixed inoculum showed intermediate levels at each time point. The effects of water activity (0.83, 0.85, 0.87, 0.89, 0.90, 0.93 and 0.95) and temperature (15, 20, 25, 30, and 35 degrees C) on OTA production by the mixed inoculum were studied at 7, 14, 21 and 28days of incubation. The limiting water activity for OTA production by the mixed inoculum was 0.87, showing xerotolerant behaviour of the strains isolated from dried vine fruits. Results obtained were similar to those reported for single A. carbonarius strains from European countries, Israel, Australia and South America. The similar trend in the response of the different isolates to the variation of environmental parameters may be of interest for the building of predictive models.

Abstract
The aim of the present study was to investigate the gallic acid influence on Aspergillus carbonarius growth and ochratoxin A (OTA) biosynthesis. A mixed inoculum was used in Czapek Yeast Extract Agar and growth and OTA production was observed at 100 to 500 mg/l of the phenolic compound. Slower colony growth rates and longer lag phases were observed with increasing concentration and 500 mg/l was totally inhibitory for A. carbonarius growth. OTA production decrease was observed even at the lower concentration assayed. Gallic acid could be used as a natural antimicrobial for the control of ochratoxigenic A. carbonarius.

Abstract
Cyclopiazonic acid (CPA) is an indole-tetramic acid neurotoxin produced by some of the same strains of A. flavus that produce aflatoxins and by some Aspergillus oryzae strains. Despite its discovery 40 years ago, few reviews of its toxicity and biosynthesis have been reported. This review examines what is currently known about the toxicity of CPA to animals and humans, both by itself or in combination with other mycotoxins. The review also discusses CPA biosynthesis and the genetic diversity of CPA production in A. flavus/oryzae populations.

Abstract
The effect of naturally occurring phenolic compounds on Aspergillus carbonarius growth and ochratoxin A (OTA) production was studied. Caffeic acid and the flavonoids, rutin and quercetin, were added to Czapek Yeast Extract agar at concentrations ranging between 50 and 500 mg/l. All phenolic compounds had a significant influence on growth rate and lag phase of A. carbonarius at 250 mg/l. The growth was completely inhibited with 500 mg/l. In comparison with the control, a significant decrease in OTA production was observed with all phenolic compounds. In general, effect on growth was less evident than effect on toxin production. An inhibitory effect on growth and OTA production, as concentration was increased was observed in all cases. The response of A. carbonarius to the flavonoids, rutin and quercetin, was similar. The inhibitory effect of these natural phenolic compounds on fungal growth and OTA production could be an alternative to the use of chemical fungicides.
