Abstract
Recently, the quality of beef has received great attention, and health concerns have been focused on fatty acid composition in relation to dietary requirements. The present work aims to evaluate the effect of omega-3 fatty acids (FA) lipid supplement in beef diet on the nutritional characteristics of Longissimus lumborum (LL) muscle. One hundred and eighty Charolais beef were divided in two groups: the control group (CON) received a basal diet and the second one (TR) an isoenergetic diet containing the omega-3 supplement. Dietary treatment did not affect (p > 0.05) growth performances, carcass characteristics and LL colour indices. Cholesterol content resulted lower (p < 0.001) in LL muscle from TR group than CON. The omega-3 FA and conjugated linoleic acid content were higher (p < 0.001) in LL muscle from TR than CON. As expected, LL muscle from TR group showed an increased value of malondialdehyde than CON during refrigerated storage, anyway, remaining within the threshold value of 1 mg/kg meat. In conclusion, the lipid supplement, rich in omega-3 FA improves the fatty acid profile and decreases cholesterol content of LL muscle. This feeding practice is suggested to enhance the nutritional value of meat from beef reared in intensive condition, improving the consumer’s health.

Abstract
Two simulated rumens (Rusitecs) were used to assess the effects of flaxseed (FS) and (or) vitamin E (VE) on rumen fermentation, fatty acid (FA) biohydrogenation, and microbial protein synthesis. Ground FS replaced 0% or 15% of barley grain, along with VE at 0 or 1000 IU d−1 in a 2 × 2 factorial experiment. Flaxseed lowered neutral detergent fiber (P = 0.001) and acid detergent fiber (P = 0.01) and increased (P = 0.001) nitrogen (N) disappearance. Flaxseed also increased (P = 0.01) total volatile FA and decreased (P = 0.001) acetate production. When both FS and VE were included, the acetate:propionate ratio decreased (P = 0.04). Biohydrogenation of FA was not influenced by VE, but total FA and C18:0 in effluent were increased (P = 0.001) and C16:0 decreased (P = 0.001) by FS. With VE, total microbial N (MN) was increased (P = 0.001). In the concentrate, production of MN in feed-particle-bound bacteria was increased (P = 0.001) by VE. Vitamin E did not alter FA biohydrogenation but did promote MN production. The stable and relatively high pH in the Rusitec may have prevented the typical shift from C18:1 trans-11 to C18:1 trans-10 with concentrate diets. Future studies simulating subclinical acidosis in the Rusitec may illuminate ruminal mode(s) of action of VE on FA biohydrogenation.

Abstract
The utility and attractiveness of adipose tissue within meat products vary based on species, cut, and consumer preference. In beef, producers are rewarded for producing carcasses with greater visual marbling at the 12th and 13th rib juncture, while pork producers are either not rewarded or penalized for producing carcasses with too much adipose tissue. Some consumers prefer to purchase leaner meat cuts, while other consumers pay premiums to consume products with elevated fat content. While no clear consumer adipose tissue preference standard exists, advances in beef and swine nutrition have enabled producers to target markets that enable them to maximize profits. One niche market that has increased in popularity over the last decade is manipulating the fatty acid profile, specifically increasing omega-3 fatty acid content, of beef and pork products to increase their appeal in a healthy diet. While much research has documented the ability of preharvest diet to alter the fatty acid profile of beef and pork, the same studies have indicated both the color and palatability of these products were negatively affected if preharvest diets were not managed properly. The following review discusses the biology of adipose tissue and lipid accumulation, altering the omega-3 fatty acid profile of beef and pork, negative fresh meat color and palatability associated with these studies, and strategies to mitigate the negative effects of increased omega-3 fatty acid content.

Abstract
BACKGROUND Forty-six Pirenaica young bulls, slaughtered at two levels of fatness (3 and 4 mm), were used to evaluate the effect of the inclusion of 50 g kg-1 linseed alone or with 200 IU vitamin E kg-1 in the concentrate and of the meat packaging system (vacuum or modified atmosphere packaging (MAP)) on the beef sensory quality. RESULTS The inclusion of linseed or supplementation with vitamin E in the concentrate induced no significant differences in the main meat sensory scores and overall appraisal except under MAP, where small differences due to concentrate ingredients were found in juiciness and metallic flavor intensity. Extending the display time up to 4 or 8 days in high-oxygen MAP had detrimental effects on sensory attributes. Meat from animals with 4 mm fat cover depth were rated more tender and juicy, less fibrous and with a higher intensity of beef flavor and rancid odor than meat from 3 mm fat cover bulls when both samples were vacuum packaged. CONCLUSION The inclusion of 50 g kg-1 linseed in the concentrate fed to bulls had no detrimental effect on the beef sensory quality. The vacuum-packaged meat of bulls slaughtered at 4 mm fat cover was rated higher on sensory analysis than that at 3 mm fat cover. © 2016 Society of Chemical Industry.

Abstract
This study was conducted to evaluate the effect of dietary supplementation with rice bran, flax seed, or sunflower seed to finishing native Korean cattle (Hanwoo) on growth performances, carcass characteristics, fatty acid composition, free amino acid and peptide contents, and sensory evaluations of Longissimus muscle (LM). A total of 39 Hanwoo steers (average age of 22.2 mo and average body weight (BW) of 552.2 kg) were randomly divided into Control, rice bran (RB), flax seed (FS), or Sunflower seed (SS) groups. The steers were group fed for 273 d until they reached an average age of 31.2 mo. Final BW was 768.2, 785.8, 786.2, and 789.0 kg, and average daily gain was 0.79, 0.85, 0.82, and 0.84 kg for the Control, RS, FS, and SS groups, respectively (p>0.05). Fat thickness of the FS group (19.8 mm) was greater (p<0.05) than that of the other groups. Final yield grade converted into numerical values was 2.0 for the RB group, 1.7 for the Control and SS groups, and 1.4 for the FS group. Marbling degrees for the Control, SS, RB, and FS groups were 5.3, 5.1, 4.7, and 4.6, respectively. Percentages of palmitic acid (C16:0), stearic acid (C18:0), and arachidic acid (C20:0) in the LM were not different among the groups. Palmitoleic (C16:1) acid was higher (p<0.05) in the SS group. The concentration of oleic acid was highest (p<0.05) in the Control group (47.73%). The level of linolenic acid (C18:3) was 2.3 times higher (p<0.05) in the FS group compared to the other groups. Methionine concentration was (p<0.05) higher in FS (1.7 mg/100 g) and SS (1.2 mg/100 g) steers than in the Control or RB groups. Glutamic acid and α-aminoadipic acid (α-AAA) contents were (p<0.05) higher in the FS group compared to the other groups. LM from the FS group had numerically higher (p>0.05) scores for flavor, umami, and overall palatability in sensory evaluations. In conclusion, supplementation of flax seed to diets of finishing Hanwoo steers improved sensory evaluations which might have been caused by increases in flavor related amino acids such as methionine, glutamic acid and α-AAA and peptides, anserine and carnosine, and their complex reactions.

Abstract
The effects of supplementing diets with n-3 alpha-linolenic acid (ALA) and docosahexaenoic acid (DHA) on plasma metabolites, carcass yield, muscle n-3 fatty acids and liver messenger RNA (mRNA) in lambs were investigated. Lambs (n = 120) were stratified to 12 groups based on body weight (35 ± 3.1 kg), and within groups randomly allocated to four dietary treatments: basal diet (BAS), BAS with 10.7 % flaxseed supplement (Flax), BAS with 1.8 % algae supplement (DHA), BAS with Flax and DHA (FlaxDHA). Lambs were fed for 56 days. Blood samples were collected on day 0 and day 56, and plasma analysed for insulin and lipids. Lambs were slaughtered, and carcass traits measured. At 30 min and 24 h, liver and muscle samples, respectively, were collected for determination of mRNA (FADS1, FADS2, CPT1A, ACOX1) and fatty acid composition. Lambs fed Flax had higher plasma triacylglycerol, body weight, body fat and carcass yield compared with the BAS group (P < 0.001). DHA supplementation increased carcass yield and muscle DHA while lowering plasma insulin compared with the BAS diet (P < 0.01). Flax treatment increased (P < 0.001) muscle ALA concentration, while DHA treatment increased (P < 0.001) muscle DHA concentration. Liver mRNA FADS2 was higher and CPT1A lower in the DHA group (P < 0.05). The FlaxDHA diet had additive effects, including higher FADS1 and ACOX1 mRNA than for the Flax or DHA diet. In summary, supplementation with ALA or DHA modulated plasma metabolites, muscle DHA, body fat and liver gene expression differently.

Abstract
Barley flaxseed based functional dry soup mix (BFSM) was developed from whole barely flour (46.296%), roasted flaxseed powder (23.148%) and the seasoning (30.555%) comprising several flavoring compounds and anticaking agent, using simple processing technique. Developed BFSM was nutritious. On dry matter basis it contained: protein (14.31%), carbohydrate excluding crude fiber (54.70%), fat (8.70%), ash (17.45%) and crude fiber (4.84%). It was low glycemic soup, free of antinutritional risk and had calorific value of 319.77 kcal/100 g (wet or sample basis, sb) estimated from its composition. 100 g (sb) of BFSM contained 4.36 g β-glucans and 8.08 g total lipid of which 25.6% was ω-3 fatty acids. Different extracts of BFSM revealed the presence of total phenols (0.57-1.86 mg gallic acid equivalent/g, sb) with antioxidants equivalence of DPPH (20.69-39.07%) and FRAP (120-331 μm Fe (II)/g, sb).

Abstract
The effects of feeding different levels of whole linseed on fatty acid (FA) composition of muscles and adipose tissues of goat were investigated. Twenty-four Crossed Boer bucks were assigned randomly into three treatment diets: L0, L10, or L20, containing 0%, 10%, or 20% whole linseed, respectively. The goats were slaughtered after 110 days of feeding. Samples from the longissimus dorsi, supraspinatus, semitendinosus, and subcutaneous fat (SF) and perirenal fat (PF) were taken for FA analyses. In muscles, the average increments in α-linolenic (ALA) and total n-3 PUFA were 6.48 and 3.4, and 11.48 and 4.78 for L10 and L20, respectively. In the adipose tissues, the increments in ALA and total n-3 PUFA were 3.07- and 6.92-fold and 3.00- and 7.54-fold in SF and PF for L10 and L20, respectively. The n-6 : n-3 ratio of the muscles was decreased from up to 8.86 in L0 to 2 or less in L10 and L20. The PUFA : SFA ratio was increased in all the tissues of L20 compared to L0. It is concluded that both inclusion levels (10% and 20%) of whole linseed in goat diets resulted in producing meat highly enriched with n-3 PUFA with desirable n-6 : n-3 ratio.

Abstract
Four multicannulated (rumen, duodenum, and ileum) Holstein steers (459.7±46.4kg of initial body weight) were used in a 4×4 Latin square design to determine the effect of flaxseed processing method on ruminal fermentation and digestibility. Treatments were based on inclusion of (1) 7.5% linseed meal (control), (2) 10% whole flaxseed, (3) 10% rolled flaxseed, or (4) 10% ground flaxseed on a dry matter (DM) basis, and were formulated to mimic typical high-producing dairy cow lactation diets. The control diet contained linseed meal in a proportion to provide crude protein (CP) equal to the amount of CP contributed by the flaxseed in the other treatments. Diets were fed for ad libitum intake and contained 30% corn silage, 17% chopped alfalfa hay, 6% sugar beet pulp, and 47% concentrate (comprising ground corn, supplemental protein, trace minerals and vitamins, and either flaxseed or linseed meal (DM basis). Diets were formulated to contain 17% CP, 34% neutral detergent fiber, 21% acid detergent fiber, and 4% fatty acid (DM basis). Periods were 14 d long and consisted of 7 d of adaptation and 7 d of sample collection. Dry matter intake (as a % of body weight) was similar (2.41±0.17) for all treatments. The inclusion of flaxseed, regardless of processing method, tended to decrease total-tract organic matter digestibility relative to the linseed control, but no differences in CP intake, duodenal CP flow (bacterial, apparent feed, or total), ileal CP flow, fecal CP output, microbial efficiency, or CP digestibility (apparent ruminal, true ruminal, small intestine, large intestine, or total tract) were observed between treatments. Method of processing did not alter ruminal pH, ammonia, or volatile fatty acids production. The ground flaxseed treatment had the fastest rate of in situ DM degradation (11.25%/h), followed by the control (7.46%/h), rolled flaxseed (4.53%/h), and whole flaxseed (0.57%/h) treatments. Degradability of CP and fat followed the same pattern as DM degradability for processed flaxseed. In situ degradation rates of alfalfa hay neutral detergent fiber and acid detergent fiber tended to be fastest for the ground flaxseed treatment. Taken together, the digestibility, fermentation, and in situ data indicate that rolling and grinding are both acceptable methods of processing flaxseed. The in situ data strongly support the need for processing flaxseed before inclusion in lactation diets.

Abstract
This study compared carcass, meat quality and fatty acid profiles of longissimus thoracis (LT) from feedlot cattle fed barley grain with or without oilseed (OS). Six diets containing no oilseed (No-OS), 10% ground flaxseed (FS), 10% high oleate sunflower seeds (SS) with or without 30% triticale dried distiller's grain (DDGS) were prepared. Feeding DDGS increased chroma at 24 and 144 h post mortem. Feeding FS increased weight% of LT PUFA (P<0.05) compared to No-OS or SS. An OS by DDGS interaction occurred for 18:3n-3 (P<0.05) where FS increased weight% of 18:3n-3 (P<0.05), a response accentuated (P<0.05) by DDGS. Feeding DDGS increased weight% of LT 18:2n-6 (P<0.05), but neither OS nor DDGS affected conjugated linoleic acid (CLA, t7,c9 &c9,t11-18:2). Feeding FS increased weight% of n-3 FA, and both FS and SS increased t10-18:1 with no effect on CLA or t11-18:1. Combination feeding of DDGS and FS further increased weight% of n-3 FA and tempered increases in t10-18:1 with no effect on CLA or t11-18:1. The findings suggest a new strategy to increase beef omega-3 fatty acids efficiently through inclusion of a combination of DDGS and FS in feedlot diet.

Abstract
The fatty acid (FA) composition of longisimus dorsi (LD) and subcutaneous fat (SCF) from Rubia Gallega (RG) calves was compared for three dietary oil sources (linseed, LO; sunflower, SFO or soybean, SYO). Oils were added (4.5%) to a commercial concentrate and no differences on animal performance, carcass characteristics or meat quality among diets were noted. Total n-3 polyunsaturated FA (PUFA) increased in LD and SCF when feeding LO diet (P<0.001). The trans(t) FA profiles were dominated by t11-18:1, except when feeding SFO diet, where ∑t6- to t10-18:1 exceeded t11-18:1 leading the highest (∑t6-to t10-18:1)/t11-18:11 ratio in LD (P<0.05). The overall changes in n-3 PUFA and t18:1 when feeding LO and SYO could be viewed as positive for human health, but quantitatively it was apparent that most dietary PUFA were completely biohydrogenated. Inhibiting PUFA biohydrogenation will be an important next step to improve the FA composition of RG cattle.

Abstract
This study investigated effects of roasted or extruded oilseed supplementation ranging in n-6/n-3 ratios from 0.3 to 5.0 on the fatty acid composition and expression of delta-5 desaturase (Δ5d) and Δ6-desaturase (Δ6d) protein in commercial steer cheek (m. masseter) and diaphragm (pars costalis diaphragmatis) muscles. In general, the n-6/n-3 ratio of the diet had a subsequent effect on the muscle n-6/n-3 ratio (P < 0.05), with muscle 18:2n-6 and 18:3n-3 content relating to proportion of dietary soya bean and linseed (P < 0.01). Compared with canola, pure linseed and soya bean diets reduced 14:1c-9 and 16:1c-9 (P < 0.05) but increased 18:1t-11 and c-9,t-11 conjugated linoleic acid (CLA) content (P < 0.01). Oilseed processing had a minor influence but extruded oilseeds increase 18:1t-11 and c-9,t-11 CLA compared with roasted (P < 0.05). Polar lipid 18:3n-3 and n-3 long-chain polyunsaturated fatty acid (LC, ⩾20 carbons PUFA) derivative content increased in relation to dietary linseed supplementation in the diaphragm (P < 0.01), whereas only 18:3n-3 was increased in the cheek (P < 0.01). Protein expression did not differ between diets; however, in each muscle the Δ5d protein expression had a stronger association with the desaturase products rather than the precursors. The relationship between Δ5d protein expression and the muscle LC n-6/n-3 ratio was negative in both muscles (P < 0.05). The relationship between Δ6d protein expression and the LC n-6/n-3 ratio was positive in the cheek (P < 0.001) and negative in the diaphragm (P < 0.05). In conclusion, diet n-6/n-3 ratio affected muscle 18:2n-6 and 18:3n-3 deposition, whereas the Δ5d and Δ6d protein expression had some influence on the polar lipid LC-PUFA profile. Results reaffirm that processed oilseeds can be used to increase the proportion of fatty acids potentially beneficial for human health, by influencing the formation of LC-PUFA and reducing the n-6/n-3 ratio.

Sixty-two cull cows were fed one of four diets in a 2×2 factorial arrangement, consisting of barley silage or grass hay with or without flaxseed to influence fatty acid composition. After slaughter, carcass grade, meat quality and sensory data were collected. Silage increased live (P=0.002) and carcass (P=0.001) weights of the cows as compared with hay. Muscle width (P=0.013) and score (P=0.010) and rib-eye area (P=0.002) were enhanced when silage was included in the diet, whereas supplementation with flaxseed increased (P=0.003) grade fat depth by 29%. Most subjective and objective retail evaluation traits in steaks from the left longissimus thoracis and ground meat were negatively affected (P<0.05) by the length of the retail display time. Moreover, dietary hay increased (P=0.015) the lean colour values in steaks and ground beef, which was corroborated by lower L* (P=0.009) and higher hue (P=0.010) in steaks and lower L* (P=0.049), chroma (P=0.005) in ground beef as compared with cows fed silage. A significant interaction between forage type and flax inclusion for thiobarbituric acid reactive substances (TBARS) (P=0.050) was observed. After sensory evaluation, steaks from cows fed silage had an increase (P=0.030) in beef flavour intensity when compared with cows fed hay, whereas inclusion of flaxseed in the diet decreased (P<0.001) beef flavour intensity in steaks from cows fed both forage sources. Sensory evaluation of ground beef found that hay-fed cows with flaxseed supplementation had decreased (P=0.03) beef flavour intensity, while the same effect was not observed in ground beef from cows fed silage with flaxseed. Results from this study show that inclusion of flaxseed in the diet reduced off-flavours in steak, but for ground beef this response depended on the source of forage in the diet.

Abstract
The effect of long term dietary linseed addition on performance, carcass characteristics and meat quality of Italian Simmental (IS) and Italian Holstein (HI) young bulls was investigated. Thirty-two animals were assigned to 4 groups following a factorial design: 2 breeds - IS and IH - ×2 diets - containing whole ground linseed (5-8% of DM) and control. IS had greater in vivo performance and carcass characteristics than IH. IS muscle had lower C14:0, C16:0, SFA, higher C18:2n-6 cis, PUFAn-6, PUFA and PUFA/SFA proportion than IH in phospholipids (PL) fraction. Linseed inclusion did not affect animal's performance and carcass characteristics. In muscle PL, linseed increased C20:0, C22:0, C23:0, C20:5n-3 and decreased C20:4n-6, PUFAn-6/n-3, PUFAn-6 concentration. Linseed decreased C14:0, C16:0 proportion in neutral lipids (NL) and increased total PUFAn-3, C18:3n-3 proportions both in NL and PL fraction. However, these differences were relatively low from a quantitative point of view.

Abstract
In ruminants, extensive ruminal biohydrogenation of unsaturated fatty acids (FA) results in numerous cis and trans isomers of 18:1 and of conjugated and non-conjugated 18:2, the incorporation of which into ruminant products depends on the composition of the diet (forage vs concentrate) and of dietary lipid supplements. The low amount of 18:3n-3 (α-linolenic acid) absorbed explains its limited incorporation in meat and milk lipids. Its protection against hydrogenation has been an objective for several decades, but only encapsulation in a protein matrix is efficient. In non-ruminants, the FA composition of products is determined by dietary FA, despite minor differences in digestibility and in metabolic activity. Physicochemical differences in intestinal absorption processes between ruminants and non-ruminants can explain the lower FA digestibility in non-ruminants, especially for saturated FA. Unlike in non-ruminants, FA digestibility in ruminants does not depend on FA intake, except for 18:0. The decrease in cow butterfat, especially with concentrate diets, is generally attributed to t10–18:1 or t10,c12–18:2, but the regulation is probably more complex. Differences in terms of butterfat content and FA composition of milk between cow, ewe and goat responses to the amount and composition of ingested lipids are due to between-species variations in mammary metabolism. In animals bred for meat production, dietary 18:3n-3 results in increases in this FA and in n-3 long-chain polyunsaturated FA (20:5n-3, 22:5n-3) in muscles. The extent of this increase depends both on animal and nutritional factors. Grass is a source of 18:3n-3, which contributes to increased 18:3n-3 in muscle of ruminants as well as of pigs. Conjugated linoleic acids are mainly present in fat tissues and milk due to t11–18:1 desaturation. Their concentration depends on tissue type and on animal species. Non-ruminants fed synthetic conjugated linoleic acids incorporate them in significant amounts in muscle, depending on the isomer. All dietary manipulations favouring polyunsaturated FA incorporation in milk and meat lipids increase the risk of lipoperoxidation, which can be efficiently prevented by use of dietary combined hydro- and lipophilic antioxidants in the diet. Putative effects on organoleptic and technological quality of products deserve further studies.

Abstract
In this paper, we report the full-length coding sequence of bovine ATGL cDNA and analyze its expression in bovine tissues. Similar to human, mouse, and pig ATGL sequences, bovine ATGL has a highly conserved patatin domain that is necessary for lipolytic function in mice and humans. This suggests that ATGL is functionally intact as a triglyceride lipase in cattle. Tissue distribution of ATGL gene expression was highest in fat and muscle (skeletal and cardiac) tissue, while protein expression was solely detectible in the adipose tissue. The effect of 109 days of flaxseed supplementation on ATGL and adipocyte fatty acid-binding protein (FABP4 or A-FABP, E-FABP or FABP5) expression was examined in Angus steers. Supplemented steers had greater triacylglycerol (TAG) content in the muscle compared with unsupplemented ones. Additionally, supplementation increased A-FABP expression and decreased stearoyl-CoA desaturase 1 (SCD-1) expression in muscle, while total ATGL expression was unaffected. In summary, supplementation of cattle rations with flaxseed increased muscle TAG concentrations attributed in part to increased expression of key enzymes involved in lipid trafficking (A-FABP) and metabolism (SCD-1).

Abstract
Twenty-five mature Small Tail Han ewes were used to investigate the effects of supplemental oilseeds in the diet (sunflower seed, safflower seed, rapeseed, and linseed) on fatty acid composition in different tissues (longissimus lumborum muscle, tail fat, subcutaneous back fat and kidney fat). Averaged over tissue, safflower and sunflower seed was most effective (P<0.05) in enhancing the concentration of conjugated linoleic acid compared to rapeseed, linseed, and control (1.35% and 1.15% vs. 0.80%, 0.80%, and 0.75%, respectively). Linseed supplemented ewes had lesser n-6/n-3 value (2.48, P<0.05) compared to sunflower and safflower supplemented ewes (6.12 and 3.90, respectively). Fatty acid composition for most major fatty acids differed among tissues (P<0.05) but tissue differences varied depending on oilseed supplement (P<0.05). Proportions of conjugated linoleic acid were greatest in tail fat (1.54% vs. 0.82%, 0.79% and 0.70% for kidney, back, and muscle fat, P<0.05) as were total unsaturated fatty acids (49.1% vs. 42.4%, 36.7% and 33.4% for muscle, back, and kidney fat, P<0.05) and tail fat was the most responsive tissue to improvement in fatty acid profile through supplementation. Beneficial fatty acid content of tissues can be increased by oilseed supplementation, but the magnitude of increase varies according to tissue.

Abstract
To evaluate the estrogenic potential of secoisolariciresinol diglycoside (SDG) found in linseed meal (LSM) on visceral organ mass, IGF-I, and thyroid hormone (T(3) and T(4)) concentrations, 48 multiparous, ovariectomized ewes (54.6 +/- 1.1 kg) were used in a 3 x 4 factorial arrangement. Main effects were length of LSM feeding (0, 1, 7, or 14 d) and length of exposure to estradiol-17beta (E(2)) implant (0, 6, or 24 h prior to tissue collection). Implanting ewes with E(2) for 24h increased liver mass relative to empty body weight (EBW; g/kg EBW) compared with ewes implanted for 0 or 6 h (P <or= 0.03), whereas feeding LSM for 14 d decreased liver mass compared with ewes fed LSM for 1 or 7 d (P <or= 0.02). There was an LSM x E(2) interaction (P = 0.01) for duodenal mass (g/kg EBW), LSM, and E(2) tended (P = 0.07) to influence the stomach complex mass; however, ileal mass was not affected. Neither LSM nor E(2) affected (P >or= 0.12) CYP2C or CYP3A mRNA expression or cellularity of the liver. Exogenous E(2) influenced circulating concentrations of IGF-I, T(3), and T(4). The estrogenic or anti-estrogenic potential of LSM is dependent upon the tissue, exposure to E(2), and the duration of LSM feeding. Feeding LSM during gestation, lactation, or during the grow-finish phase warrants further investigation.

Abstract
There is little doubt regarding the essential nature of alpha-linolenic acid (ALA), yet the capacity of dietary ALA to maintain adequate tissue levels of long chain n-3 fatty acids remains quite controversial. This simple point remains highly debated despite evidence that removal of dietary ALA promotes n-3 fatty acid inadequacy, including that of docosahexaenoic acid (DHA), and that many experiments demonstrate that dietary inclusion of ALA raises n-3 tissue fatty acid content, including DHA. Herein we propose, based upon our previous work and that of others, that ALA is elongated and desaturated in a tissue-dependent manner. One important concept is to recognize that ALA, like many other fatty acids, rapidly undergoes beta-oxidation and that the carbons are conserved and reused for synthesis of other products including cholesterol and fatty acids. This process and the differences between utilization of dietary DHA or liver-derived DHA as compared to ALA have led to the dogma that ALA is not a useful fatty acid for maintaining tissue long chain n-3 fatty acids, including DHA. Herein, we propose that indeed dietary ALA is a crucial dietary source of n-3 fatty acids and its dietary inclusion is critical for maintaining tissue long chain n-3 levels.

Abstract
BACKGROUND An increase in plasma n-3 fatty acid content, particularly eicosapentaenoic acid (20:5n-3; EPA) and docosahexaenoic acid (22:6n-3; DHA), is observed after consumption of fish oil-enriched supplements. Because alpha-linolenic acid (18:3n-3; ALA) is the direct precursor of EPA and DHA, ALA-enriched supplements such as flax may have a similar effect, although this hypothesis has been challenged because of reported low conversion of ALA into DHA. OBJECTIVE To address this question, we designed a clinical trial in which flax oil, fish-oil, and sunflower oil (placebo group) capsules were given to firefighters (n = 62), a group traditionally exposed to cardiovascular disease risk factors. DESIGN Firefighters were randomly divided into 6 experimental groups receiving 1.2, 2.4, or 3.6 g flax oil/d; 0.6 or 1.2 g fish oil/d; or 1 g sunflower oil/d for 12 wk. Blood was drawn every 2 wk, and the total phospholipid fatty acid composition of red blood cells was determined. RESULTS As expected, fish oil produced a rapid increase in erythrocyte DHA and total n-3 fatty acids. The consumption of either 2.4 or 3.6 g flax oil/d (in capsules) was sufficient to significantly increase erythrocyte total phospholipid ALA, EPA, and docosapentaenoic acid (22:5n-3) fatty acid content. There were no differences among groups in plasma inflammatory markers or lipid profile. CONCLUSIONS The consumption of ALA-enriched supplements for 12 wk was sufficient to elevate erythrocyte EPA and docosapentaenoic acid content, which shows the effectiveness of ALA conversion and accretion into erythrocytes. The amounts of ALA required to obtain these effects are amounts that are easily achieved in the general population by dietary modification.

Abstract
The objectives of this study were to evaluate the influence of supplemental whole flaxseed level on intake and site and extent of digestion in beef cattle consuming native grass hay. Nine Angus heifers (303 +/- 6.7 kg of BW) fitted with ruminal and duodenal cannulas were used in a triplicated 3 x 3 Latin square. Cattle were given ad libitum access to chopped native grass hay (9.6% CP and 77.5% NDF, OM basis). All animals were randomly allotted to 1 of 3 experimental treatments of hay plus no supplement (control); 0.91 kg/d whole flaxseed (23.0% CP, 36.3% NDF, and 25.5% total fatty acid, OM basis); or 1.82 kg/d whole flaxseed on a DM basis. Supplemental flaxseed tended to decrease (linear, P = 0.06) forage OM intake. However, total OM intake did not differ (P = 0.29) with increasing levels of flaxseed. Total duodenal OM flow increased (linear, P = 0.05) with additional flaxseed in the diet, and no differences (P = 0.29) were observed for microbial OM flow. True ruminal OM disappearance was not affected (P = 0.14) by supplemental flaxseed. Apparent lower tract OM digestibility increased (linear, P = 0.01) with level of whole flaxseed. Apparent total tract OM digestibility was not different (P = 0.41) among treatments. Nitrogen intake increased (linear, P < 0.001) with supplemental flaxseed. In addition, total duodenal N flow tended (P = 0.08) to increase with additional dietary flaxseed. However, true ruminal N digestibility did not differ (P = 0.11) across treatment. Supplemental whole flaxseed did not influence ruminal (P = 0.13) or total tract (P = 0.23) NDF digestibility. Ruminal molar proportion of propionate responded quadratically (P < 0.001) with increasing levels of whole flaxseed. An increase in the duodenal supply of 18:3n-3 (P < 0.001), total unsaturated fatty acids (P < 0.001), and total fatty acids (P < 0.001) was observed with additional dietary whole flaxseed. Apparent postruminal 18:3n-3 disappearance tended to decrease (P = 0.07) as intake of flaxseed increased. Overall, the inclusion of 1.82 kg/d of flaxseed does not appear to negatively influence nutrient digestibility of a forage-based diet and therefore can be used as an effective supplement to increase intestinal supply of key fatty acids important to human health.
