Relationship between animal-based on-farm indicators and meat inspection data in pigs

BACKGROUND

This study aimed to validate slaughterhouse indicators collected during meat inspection as an alternative to on-farm animal welfare indicators. For this purpose, the assessments of twelve on-farm and seven slaughterhouse indicators of 628 pigs from three different farms were combined into three indices, differentiated between on-farm and slaughterhouse: (1) limb health, (2) other organ health, and (3) respiratory health. At first, an assessment at animal-level using agreement parameters was carried out to ascertain whether the same welfare or health issues were identified on-farm and at slaughterhouse, taking the production period (farrowing, rearing and fattening period) and the last weeks before slaughtering into account. Second, the connection of slaughterhouse findings on the individual on-farm health indices was examined using logistic regressions, to determine whether certain welfare issues can be better monitored using slaughterhouse indicators.

RESULTS

Acceptable agreement was determined using the Prevalence-Adjusted Bias-Adjusted Kappa (PABAK) for the farrowing and fattening period, but not for the rearing period. A more detailed analysis of the weeks before slaughter shows that there is still a poor agreement 8 weeks before slaughter and an acceptable agreement 4 weeks before slaughter. This indicated the slaughterhouse indicators pneumonia, pleuritis and pericarditis as possible estimators of fever and deviant behavior on-farm and the slaughterhouse indicators bursitis and joint inflammations as possible estimators of lameness. In the second part of the analysis, the connection of slaughterhouse findings on the individual on-farm health indices was investigated; a significant influence of the farm on the limb and respiratory indices and no significant influence of the slaughterhouse findings could be determined, provided that all weekly assessments during the lifetime of the pigs have been taken into account. However, an influence of the slaughterhouse findings on the respiratory index and on the other organ index could be determined if only the weekly assessments four and eight weeks before slaughter, respectively, were taken into account.

CONCLUSIONS

In general, the possible suitable indicators detected by the PABAK, could replace some health-related indicators but a complete substitution of on-farm welfare assessment is not possible. In addition, the traceability over time must be investigated further.

Comparison between two scoring methods to assess tail damage of docked pig carcasses during postmortem inspection in Ireland

Background

Tail inspection in the abattoir is a tool to help determine the welfare status of pigs. However, methodologies vary widely. Moreover, meat inspection is moving from palpation and incision towards visual-only (VIS) examination. This study investigated whether a VIS examination was sufficient to detect tail damage compared to handling (HAND), which ensures examination of all aspects of the tail.

Method

The severity of tail skin damage (0 [undamaged] - 4 [partial/full loss of tail]) and presence/absence of bruises was scored using both methods after scalding/dehairing of 5498 pig carcasses.

Results

There was a good relationship between methods when evaluating tail skin damage (sensitivity, 82.48%; specificity, 99.98%; accuracy, 98.98%; correlation ρ = 0.84). The results were similar for the presence of bruises (sensitivity, 74.98%; specificity, 99.09%; accuracy, 89.94%; correlation ρ = 0.79). However, the percentage of tails classified as undamaged was higher using VIS (69.9%) than HAND (63.55%) examination. Conversely, VIS detected fewer mild lesions (score 1 - 13.64%; score 2 - 11.73%) than HAND (score 1 - 15.21%; score 2 - 15.53%). A higher percentage of bruises was detected using HAND than VIS (37.96% vs. 29.03%).

Conclusions

Visual evaluation is a valid alternative to handling evaluation of carcass tail damage and bruising.

The importance of slaughterhouses in monitoring the occurrence of tail biting in pigs - Review

Tail biting in pigs represents a very serious problem in modern pig farming, particularly with the intensification of the industry. It is considered a multifactorial syndrome and can be caused by various factors, leading to significant economic losses through reduced weight gain and partial or total condemnation of slaughtered carcasses due to secondary bacterial infections. The aim of this article is to summarise the current knowledge regarding tail biting in pigs, with a primary focus on the use of slaughterhouses for evaluating tail lesions and monitoring their prevalence. The introduction addresses the factors influencing the incidence of tail biting in pig farms and prevention strategies. Subsequent sections cover topics such as tail docking, the negative effects of pig tail biting, the advantages and drawbacks of examining tail lesions in slaughterhouses, and the methodical procedure for evaluating such lesions. Additionally, the article discusses the relationship between tail lesions and meat inspection findings, as well as the prevalence of tail lesions in various European countries.

Evaluation of carcass quality, body and pulmonary lesions detected at the abattoir in heavy pigs subjected or not to tail docking

BACKGROUND

Nowadays, body and tail lesions and respiratory disease are some of the greatest problems affecting the health and welfare of pigs. The aim of the study was to measure the prevalence of pleurisy, bronchopneumonia (enzootic pneumonia like lesions) and lesions on tail and body of heavy pigs subjected or not to tail docking through the inspection in Italian abattoirs. Additionally, the effect of tail docking and season was investigated on carcass quality (weight, % of lean meat, and Protected Designation of Origin (PDO) classification). For this purpose, a total 17.256 carcasses belonging to 171 batches from 103 farms were inspected in an Italian abattoir between 2019 and 2022. Enzootic pneumonia (EP) like lesions were scored according to the Madec and Derrien method, while pleurisy was scored using the Italian Slaughterhouse pleuritic evaluation system (SPES). For the tail and body, the lesions were scored according to Welfare Quality. The lesion score index (LSI) was calculated for each area. Data were analysed using a general linear model (GLM) including tail caudectomy, season and distance of the farm from the abattoir.

RESULTS

The warm season increased the percentage of lesions in carcasses in all parts of the body observed (P < 0.0001). The presence of undocked tail increased the LSI of the tail (P < 0.0001). The percentage of limbs lesions with score 2 and limbs LSI increase with increasing duration of transport (coef. = 0.003, P < 0.001; coef. = 0.008, P < 0.001; respectively). The hot carcass weight and the percentage of carcasses included in the PDO were higher in batches with docked tails (P = 0.027; P < 0.001, respectively), while the percentage of lean meat was higher in batches with undocked tails (P < 0.001). There was a negative correlation between the percentage of carcasses included in PDO and the LSI of tail (r = - 0.422; P < 0.001).

CONCLUSIONS

In conclusion, the presence of the undocked tail and the warm season can be considered risk factors for the prevalence of tail lesions, while long transport can increase limb lesions. Furthermore, the carcass weight and meat quality were negatively influenced by tail lesions.

Greek Pig Farmers' Perceptions and Experiences of Tail Biting and Tail Docking

Tail biting is both an important economic and a welfare problem. The primary preventive measure, almost on a routine basis throughout Europe, remains tail docking following a risk analysis. This study aimed to get insight on the perceptions of Greek pig farmers towards tail docking, intervention measures, and risk factors of tail biting, as well as opinions on pig welfare themes. Eighty-two farmers answered a questionnaire provided online and in printed form. In the case of a tail-biting outbreak, the most important intervention measure is the removal of the bitten pig (victim), while feed quality, air movements, and stocking density were ranked as the highest risk factors (p ≤ 0.05). Chains are the most common type of enrichment by 67% followed by plastic objects by 29.5%. Almost half of the farmers reported having no tail-biting problem on their farm, while 64.4% of the respondents have already tried at least once to raise pigs with intact tails. To reduce routine tail docking, it is essential to apply specific farm-oriented solutions effectively. To succeed in this aim, it is important to consider farmers' concerns and practices. This study is the first step in that direction.

Undocked Tails, Mycoplasma-like Lesions and Gastric Ulcers in Slaughtering Pigs: What Connection?

Tail biting is an economical and behavioral problem in the pork production system worldwide and systematic tail docking has been applied for decades to decrease the risk of its onset. However, legal and market-driven requirements are leading pig producers to rear undocked animals. The aim of this work was to monitor tail, pluck (lungs, pleurae, and liver), stomach, carcass, and thigh lesions in slaughtering pigs belonging to either docked or undocked batches. A total of 525 batches were evaluated at slaughter: 442 docked and 83 undocked batches. The presence of tail lesions was only recorded in undocked batches (44.0 ± 0.402 vs. 0.2 ± 0.2% compared to docked ones, p < 0.001), with a prevalence of severe chronic lesions of 27.3% ± 0.032, suggesting that more and alternative wide efforts to manage long-tailed animals are needed. On the contrary, docked animals showed more frequent ear lesions (9.6% ± 0.037 vs. 4.6% ± 0.019; p = 0.0001). Severe lung lesions were found more frequently in undocked animals (9.2% ± 0.043 vs. 6.6% ± 0.011, p = 0.006), as well as gastric ulcers (26.1% ± 0.021 vs. 20.3% ± 0.37, p = 0.006). These lesions might share the same predisposing factors of tail lesions; the latter might be investigated as an iceberg indicator for other pathological conditions in undocked pigs and eventual causal association among lesions in these organs should be explored.

Automatic monitoring and detection of tail-biting behavior in groups of pigs using video-based deep learning methods

Automated monitoring of pigs for timely detection of changes in behavior and the onset of tail biting might enable farmers to take immediate management actions, and thus decrease health and welfare issues on-farm. Our goal was to develop computer vision-based methods to detect tail biting in pigs using a convolutional neural network (CNN) to extract spatial information, combined with secondary networks accounting for temporal information. Two secondary frameworks were utilized, being a long short-term memory (LSTM) network applied to sequences of image features (CNN-LSTM), and a CNN applied to image representations of sequences (CNN-CNN). To achieve our goal, this study aimed to answer the following questions: (a) Can the methods detect tail biting from video recordings of entire pens? (b) Can we utilize principal component analyses (PCA) to reduce the dimensionality of the feature vector and only use relevant principal components (PC)? (c) Is there potential to increase performance in optimizing the threshold for class separation of the predicted probabilities of the outcome? (d) What is the performance of the methods with respect to each other? The study utilized one-hour video recordings of 10 pens with pigs prior to weaning, containing a total of 208 tail-biting events of varying lengths. The pre-trained VGG-16 was used to extract spatial features from the data, which were subsequently pre-processed and divided into train/test sets before input to the LSTM/CNN. The performance of the methods regarding data pre-processing and model building was systematically compared using cross-validation. Final models were run with optimal settings and evaluated on an independent test-set. The proposed methods detected tail biting with a major-mean accuracy (MMA) of 71.3 and 64.7% for the CNN-LSTM and the CNN-CNN network, respectively. Applying PCA and using a limited number of PCs significantly increased the performance of both methods, while optimizing the threshold for class separation did result in a consistent but not significant increase of the performance. Both methods can detect tail biting from video data, but the CNN-LSTM was superior in generalizing when evaluated on new data, i.e., data not used for training the models, compared to the CNN-CNN method.

The capacity of inspection on farm and at the abattoir to predict post-mortem outcomes in slaughter pigs: A study at animal level

The aim of this study was to investigate associations between ear, tail, and skin lesions, hernias, bursitis, and rectal prolapses at the abattoir and meat inspection outcomes in slaughter pigs, including carcass condemnations and trimmings, carcass weight, and carcass quality. This was an observational study whereby pigs were managed according to routine practices in a single abattoir. Data were collected from 1816 pigs. The relationship between animal-based welfare and post-mortem outcomes was analyzed using generalized mixed models (Proc Glimmix). Our findings showed that tail lesions were associated with entire carcass condemnations and trimmings (P < 0.001), a reduction in carcass weight (P < 0.05), and a potential to impair carcass quality by reducing muscle pH (P < 0.05), especially in carcasses from male pigs (P < 0.05). Additionally, hernias were associated with viscera condemnation (P < 0.05) and a reduction in carcass weight (P  < 0.05). Therefore, our findings confirm that ante-mortem inspection could be useful to predict post-mortem outcomes in the same pigs, especially in cases of tail lesions and hernia, which might trigger attention of the veterinary inspector in charge of the post-mortem inspection.

The capacity of ante-mortem inspection of pigs at the abattoir to predict post-mortem findings and associated financial implications: A study at batch level

This study aimed to investigate the associations between severe ear, tail, and skin lesions, hernias, bursitis, and rectal prolapses and meat inspection finding in slaughter pigs, including carcass weight and financial implications associated with carcass condemnations at batch level. Data were collected from 13,296 pigs from 116 batches from a single abattoir. Spearman's correlation coefficients were calculated to analyze the degree of association between the prevalence of welfare issues and condemnation findings. The association between batch-level results of carcass weight, batch size, and the prevalence of welfare issues was analyzed using generalized linear mixed models. The prevalence of tail lesions was significantly associated with both entire (r = 0.224; p = 0.0432) and partial (r = 0.276; p = 0.0120) carcass condemnation. Batches with pigs affected by more than one welfare issue were 9.9 kg lighter than those without welfare issues (p < 0.05), which was equivalent to a potential loss of €11.28 per pig. Our findings indicate that ante-mortem inspection could be useful to predict post-mortem findings at batch level and that welfare issues in pigs represent a financial loss to producers, as they are paid on a per kg basis and have tight margins.

Prevalence of gross lesions and handling practices in pigs and their association with pork quality, Kiambu, Kenya

Pre-slaughter handling of pigs has been documented to affect the quality of meat though no studies have investigated this relationship in the Kenyan context. This study aimed to determine the prevalence of gross lesions and practices related to sub-optimal welfare in pigs presented for slaughter while analyzing the relationship between occurrence of these lesions and meat quality. A cross-sectional study was conducted at a medium scale, non-integrated pig abattoir supplying to the Nairobi market, with a capacity to slaughter approximately 40 pigs a day. Data on welfare-associated lesions and handling practices were obtained from 529 pig carcasses and traders respectively. 387 pork samples were collected, and their quality evaluated by measuring their pH, meat color and drip loss. These three parameters were used to classify pork into four recognized categories namely: Red, Firm, Non-exudative (RFN), Pale Soft Exudative (PSE), Dark Firm Dry (DFD) and Red Soft Exudative (RSE). Almost all pigs were inefficiently stunned as evidenced by the presence of consciousness post-stunning. The majority of pigs (82.97%) having one or more welfare-associated gross lesions. Other animal welfare malpractices observed were high loading density and inadequate rest periods between transport and slaughter. A quarter of the pork samples were of sub-optimal quality including: RSE (11.36%), PSE (2.58%) and DFD (2.58%). Multinomial logistic regression revealed that pork originating from pigs transported at a high loading density had increased odds of being classified as DFD (OR 13.41, 95% CI 2.59–69.46). The findings indicate the need to educate stakeholders in the pork value chains on improved pig handling before and during slaughter to enhance pig welfare pre-slaughter and pork quality post-slaughter. Animal welfare legislation enforcement and implementation was observed to be insufficient. There is a need to educate key stakeholders on its importance of being put into practice both from economic and welfare perspectives.

Effect of Varying Levels of Dietary Tryptophan on Aggression and Abnormal Behavior in Growing Pigs

Body lesions, resulting from tail-biting and ear-biting, can result in decreased health and welfare in pigs. Tryptophan, an indispensable amino acid, is needed to support protein deposition, and the synthesis of the neurotransmitter serotonin, which is important to mood, sleep-wake and eating patterns and might play a role in aggression and abnormal behavior. Two randomized block design studies were conducted to assess the influence of varying dietary tryptophan levels on aggression and abnormal behavior in 8-week-old pigs. Six diets were formulated which met or exceeded all nutrient requirements yet differed according to the dietary tryptophan content. The first study included control (100% standardized ileal digestible tryptophan), supplemented (175% standardized ileal digestible tryptophan), and supplement-plus (250% standardized ileal digestible tryptophan) experimental diets, while the second study included deficient (80% standardized ileal digestible tryptophan), adequate control (105% standardized ileal digestible tryptophan), and extra-tryptophan (130% standardized ileal digestible tryptophan) experimental diets. Concentrations of plasma tryptophan and large neutral amino acids (tyrosine, isoleucine, leucine, valine, and phenylalanine) were analyzed using ultra-performance liquid chromatography and the tryptophan to large neutral amino acid ratio was calculated. Analysis for time active, lying, and engaging in aggressive interactions was carried out using 10-min scan samples to determine behavioral time budgets of the pigs on different experimental diets. Pigs fed diets with supplemented tryptophan had higher concentrations of both plasma tryptophan and tryptophan to large neutral amino acid ratio compared to the pigs fed the control diet (P < 0.05) in the first study, while no significant differences were detected for plasma tryptophan or the tryptophan to large neutral amino acid ratio in the second study. Diet did not have an effect (P > 0.05) on weight, feed intake or behavior throughout the studies. The results suggest that an increase in dietary tryptophan relative to large neutral amino acids, fed for 29 days, impacts circulating plasma tryptophan and therefore, serotonin concentrations in the pig. Despite an increase in circulating plasma tryptophan in response to an increase in dietary tryptophan in the first study, we failed to see an impact of the dietary treatment on body, tail and ear-biting behavior under the conditions studied.

The Relationship between Carcass Condemnations and Tail Lesion in Swine Considering Different Production Systems and Tail Lengths

Tail biting is considered a major welfare problem in swine production, associated with relevant financial costs for farmers. The European Union has reaffirmed the prohibition of tail docking practices, with all Member States establishing standards for the protection of pigs as well as measures to reduce the need for tail docking and tail biting prevalence. This research aims to assess the importance of tail lesions (using two different scores) and its influence on carcass condemnations considering different production systems and tail length. According to the results, higher tail lesion scores reflected higher total condemnations rates. An intimate association was encountered between the scarring score and total and local carcass condemnations. Tail length was also significant, with undocked animals presenting higher tail lesions scores. Organic batches reported more total condemnations. This research highlights the importance of tail lesions on carcass condemnations that may also be influenced by docking and type of production. These results suggest that scarred tail tissue should be included in the current tail surveillance program.

Abstract

Tail biting has been recognised as an intractable problem in pig production. This study aims to evaluate tail lesion occurrence in slaughtered pigs and explore the relationship between carcass condemnations and tail lesion considering different production systems and tail lengths and to evaluate the importance of creating a detailed tail score classification that includes scarred lesions. Data on a total of 9189 pigs from 73 batches with different tail lengths (undocked; docked mid-length; fully docked) and from distinct production systems (conventional; conventional antibiotic-free and organic) were collected at a Spanish abattoir. Batches with higher tail lesion scores presented a significantly higher chance of total condemnation and total condemnation due to pyaemia, being even more associated with scarring score. The within-batches probability for local condemnations and local condemnation due to abscesses increased significantly with higher scarring scores. Regarding tail length, docked at mid-length and undocked carcasses presented significantly higher odds to be condemned due to abscess. Organic farms showed a higher probability of total condemnations. This research highlights the importance of tail lesions on carcass condemnations that may also be influenced by docking and type of production. Results suggest that scarring score should be included in the tail surveillance program.

The Evidence for a Causal Link Between Disease and Damaging Behavior in Pigs

Damaging behaviors (DB) such as tail and ear biting are prevalent in pig production and reduce welfare and performance. Anecdotal reports suggest that health challenges increase the risk of tail-biting. The prevalence of tail damage and health problems show high correlations across batches within and between farms. There are many common risk factors for tail-biting and health problems, notably respiratory, enteric and locomotory diseases. These include suboptimal thermal climate, hygiene, stocking density and feed quality. The prevalence of tail damage and health problems also show high correlations across batches within and between farms. However, limited evidence supports two likely causal mechanisms for a direct link between DB and health problems. The first is that generalized poor health (e.g., enzootic pneumonia) on farm poses an increased risk of pigs performing DB. Recent studies indicate a possible causal link between an experimental inflammation and an increase in DB, and suggest a link between cytokines and tail-biting. The negative effects of poor health on the ingestion and processing of nutrients means that immune-stimulated pigs may develop specific nutrient deficiencies, increasing DB. The second causal mechanism involves tail-biting causing poor health. Indirectly, pathogens enter the body via the tail lesion and once infected, systemic spread of infection may occur. This occurs mainly via the venous route targeting the lungs, and to a lesser extent via cerebrospinal fluid and the lymphatic system. In carcasses with tail lesions, there is an increase in lung lesions, abscessation, arthritis and osteomyelitis. There is also evidence for the direct spread of pathogens between biters and victims. In summary, the literature supports the association between poor health and DB, particularly tail-biting. However, there is insufficient evidence to confirm causality in either direction. Nevertheless, the limited evidence is compelling enough to suggest that improvements to management and housing to enhance pig health will reduce DB. In the same way, improvements to housing and management designed to address DB, are likely to result in benefits to pig health. While most of the available literature relates to tail-biting, we suggest that similar mechanisms are responsible for links between health and other DB.

Carcass Lesion Severity and Pre-Slaughter Conditions in Heavy Pigs: A Prospective Study at a Commercial Abattoir in Northern Italy

Pre-slaughter conditions and their effects on carcass quality have been largely addressed for pigs of 90–100 kg live weight, while few studies consider the effects of pre-slaughter conditions on the quality of the carcasses obtained from heavy pigs intended for Protected Designation of Origin (PDO) production. A total of 1680 heavy pigs were transported in 72 batches from a farm to a commercial abattoir on 16 different days, avoiding mixing unfamiliar animals. Slaughterhouse conditions, animal behaviors, and human–animal interactions were annotated at unloading and during the race toward the stunning cage. Carcass lesions on the rear, middle, and shoulder parts of the carcasses were scored. The prevalence of carcasses with severe lesions was 6.92%, 11.87%, and 6.83%, for the rear, middle, and shoulder parts, respectively. Among the pre-slaughter events, waiting before unloading and improper handling practices at the abattoir were the major factors affecting carcass lesion severity. Lairage pen space allowance was also found to affect severe rear and shoulder lesions, and the batches that were transported in the trailer had an increased prevalence of severe shoulder lesions. Our results suggest waiting time before unloading should be shortened as much as possible, and educational programs to train operators for more careful management of animals in the abattoir are greatly required to avoid improper animal handling practices.

Changes in tail posture detected by a 3D machine vision system are associated with injury from damaging behaviours and ill health on commercial pig farms

To establish whether pig tail posture is affected by injuries and ill health, a machine vision system using 3D cameras to measure tail angle was used. Camera data from 1692 pigs in 41 production batches of 42.4 (±16.6) days in length over 17 months at seven diverse grower/finisher commercial pig farms, was validated by visiting farms every 14(±10) days to score injury and ill health. Linear modelling of tail posture found considerable farm and batch effects. The percentage of tails held low (0°) or mid (1-45°) decreased over time from 54.9% and 23.8% respectively by -0.16 and -0.05%/day, while tails high (45-90°) increased from 21.5% by 0.20%/day. Although 22% of scored pigs had scratched tails, severe tail biting was rare; only 6% had tail wounds and 5% partial tail loss. Adding tail injury to models showed associations with tail posture: overall tail injury, worsening tail injury, and tail loss were associated with more pigs detected with low tail posture and fewer with high tails. Minor tail injuries and tail swelling were also associated with altered tail posture. Unexpectedly, other health and injury scores had a larger effect on tail posture- more low tails were observed when a greater proportion of pigs in a pen were scored with lameness or lesions caused by social aggression. Ear injuries were linked with reduced high tails. These findings are consistent with the idea that low tail posture could be a general indicator of poor welfare. However, effects of flank biting and ocular discharge on tail posture were not consistent with this. Our results show for the first time that perturbations in the normal time trends of tail posture are associated with tail biting and other signs of adverse health/welfare at diverse commercial farms, forming the basis for a decision support system.

Cost-Effectiveness Analysis of Seven Measures to Reduce Tail Biting Lesions in Fattening Pigs

Tail biting is an important animal welfare issue in the pig sector. Studies have identified various risk factors which can lead to biting incidents and proposed mitigation measures. This study focused on the following seven key measures which have been identified to affect the risk of tail biting lesions: improvements in straw provision, housing ventilation, genetics, stocking density, herd health, provision of point-source enrichment objects, and adoption of early warning systems. The aim of this study was to examine whether these selected measures to reduce the risk of tail biting lesions in pig fattening are cost-effective. The problem was analyzed by first summarizing the most prospective interventions, their costs and expected impacts on the prevalence of tail biting lesions, second, by using a stochastic bio-economic model to simulate the financial return per pig space unit and per pig at different levels of prevalence of tail biting lesions, and third by looking at how large a reduction in tail biting lesions would be needed at different levels of initial prevalence of lesions to cover the costs of interventions. Tail biting lesions of a severity which would require an action (medication, hospitalization of the pig or other care, or taking preventive measures) by the pig producer were considered in the model. The results provide guidance on the expected benefits and costs of the studied interventions. According to the results, if the average prevalence of tail biting lesions is at a level of 10%, the costs of this damaging behavior can be as high as €2.3 per slaughtered pig (~1.6% of carcass value). Measures which were considered the least expensive to apply, such as provision of point-source enrichment objects, or provided wider production benefits, such as improvements in ventilation and herd health, became profitable at a lower level of efficacy than measures which were considered the most expensive to apply (e.g., straw provision, increased space allowance, automated early warning systems). Measures which were considered most efficient in reducing the risk of tail biting lesions, such as straw provision, can be cost-effective in preventing tail biting, especially when the risk of tail biting is high. At lower risk levels, the provision of point-source objects and other less costly but relatively effective measures can play an important role. However, selection of measures appropriate to the individual farm problem is essential. For instance, if poor health or barren pens are causing the elevated risk of tail biting lesions, then improving health management or enriching the pens may resolve the tail biting problem cost-effectively.

Review: The tale of the Finnish pig tail - how to manage non-docked pigs?

Tail biting is a serious behavioural problem in modern pig production, causing impaired animal welfare and economic losses. In most countries, the detrimental effects of tail biting are counteracted by docking pigs tails. Finland is one of the few countries where tail docking in pigs is totally forbidden. The aim of this paper was to look in detail at features of pig production in Finland in order to try to understand how Finnish producers manage to rear non-docked pigs. The way pigs are housed and managed in Finland is influenced by both European and national legislation, but also by governmental subsidies, industry recommendations and voluntary initiatives. Several features of Finnish pig production might indeed have a preventive role regarding the tail biting risk: these include, among others, a comparably larger space allowance, partly slatted flooring, use of manipulable materials, a good animal health status and meal feeding from long troughs. In addition, Finnish producers are motivated to rear non-docked pigs, which is possibly one of the most important prerequisites for success. The experiences from Finland show that even though tail biting is still a challenge on some farms, in general, it is possible to rear non-docked pigs in intensive production. Potential positive side-effects of enhancing management and housing to facilitate the rearing of non-docked pigs include a good growth rate, a reduced need for antimicrobials and better animal welfare levels.

Evaluation of Tail Lesions of Finishing Pigs at the Slaughterhouse: Associations With Herd-Level Observations

The prevalence of tail lesions evaluated at the slaughterhouse varies considerably between herds. These lesions result mainly from tail biting, a harmful behavior with multifactorial origin. This study sought to investigate if a batchwise inspection of tails at slaughterhouse could be a useful method to estimate the animal welfare situation in finishing pig herds, and if so, what type and detail of tail scoring such an inspection should utilize. We investigated the distribution of different types of tail lesions and how well their scoring at slaughterhouse was associated with the situation recorded on-farm by a veterinarian as part of routine herd health visits. We also wanted to determine if animal welfare-related herd-level parameters, recorded by herd veterinarians during herd health visits, are associated with tail scoring at the slaughterhouse. A total of 10,517 pigtails from 84 herds were scored for this study. Herd data were collected from the national health classification register for pig farms in Finland and also included annual herd production quality data collected by the slaughterhouse. The scores of the tails varied considerably between the herds. On average, 48.1% (sd = 19.3) of the tails with an average length of 30.4 cm (sd = 2.7) were fully intact, 37.3% (13.9) had healed (length = 26.4, sd = 5.1 cm), 12.4% (9.0) (length = 28.9, sd = 4.3 cm) had minor acute wounds, and 2.3% (2.1) (length = 24.2, sd = 6.0 cm) had major acute wounds. Proportions of different tail lesions at slaughterhouse were associated with or tended to be associated with the following herd-level parameters in regression models: use of wood as enrichment (p < 0.1), one health parameter (leg problems other than arthritis, p < 0.05), and long-term animal welfare estimate (annual mortality, p < 0.05). Detailed tail evaluation at the slaughterhouse shows potential in estimating the tail lesions and long-term welfare level on the farm. By recording only one type of tail condition (such as tails with major acute lesions) at the slaughterhouse, it is not possible to estimate the total tail lesion situation in the herds before slaughter. A more detailed scoring similar to the one used in this trial is recommended.

The multivariate approach identifies relationships between pre-slaughter factors, body lesions, ham defects and carcass traits in pigs

Abattoir meat inspection has been proposed for the collection of welfare outcomes. The identification of suitable animal-based measures (ABM) is still a critical point that needs to be implemented to avoid collinearity among measures. The present study aims to benchmark the presence of ABM such as skin and tail lesions and ham defects in carcasses from 79 batches of Italian Heavy pigs and to identify possible relationships between the assessed ABM and pre-slaughter factors such as the season and the overnight lairage. Furthermore, the study also considers the effect of pre-slaughter conditions and ABM on carcass traits parameters (cold carcass weight and lean meat percentage). Skin and tail lesions were recorded at the slaughter line. The presence of abscesses, muscle tears and veining defects were assessed in the hams at trimming, according to the Parma Ham Consortium. A multivariate analysis was performed to identify relationships between ABM and pre-slaughter factor; therefore, a linear model was built to assess the effect on carcass weight and lean meat percentage. Main welfare issues were represented by skin and tail lesions and muscle tears (prevalence above 10%). Multivariate analysis evidenced that skin lesions and veining defects were mostly associated with the warm season. Abscesses and muscle tears in the hams were more likely related to overnight lairage, while tail lesions contributed equally to both season and lairage. Moreover, lairage related factors showed to affect lean meat percentage. The findings of the present study suggest that ham defects might be useful indicators of pre-slaughter stress. The validation of these findings with physiological parameters could be of interest for further studies.

The Welfare of Cattle, Sheep, Goats and Pigs from the Perspective of Traumatic Injuries Detected at Slaughterhouse Postmortem Inspection

The occurrence of traumatic injuries was assessed in cattle, sheep, goats and pigs reared and slaughtered in the Czech Republic. For the purposes of the study, the results of veterinary postmortem examinations at slaughterhouses in the period from 2010 to 2019 were analyzed. In the studied animal species, findings of traumatic lesions were detected at low frequency. The low frequency of traumatic lesions is favorable from the perspective of the welfare of slaughtered animals. In terms of further improvements to animal welfare, it would be desirable to focus on the prevention of trauma in cattle in particular, in which findings of trauma were more frequent than in the other species studied. The category most affected by trauma both to the limbs and body was cows.

Abstract

The welfare of cattle, pigs, sheep and goats was assessed by measuring trauma detected during veterinary postmortem inspection at slaughterhouses. The subject of this evaluation were all bovine, porcine, ovine and caprine animals slaughtered at Czech slaughterhouses in the monitored period, i.e., a total of 1,136,754 cows, 257,912 heifers, 1,015,541 bulls, 104,459 calves, 586,245 sows, 25,027,303 finisher pigs, 123,191 piglets, 22,815 ewes, 114,264 lambs, 1348 does and 5778 kids. The data on the numbers of traumatic findings were obtained retrospectively from a national veterinary database collecting data from slaughterhouse postmortem examinations. The results showed that findings of trauma were observed at a low frequency in the studied species. Injuries were detected most frequently in cows (1.71%). In contrast, no findings associated with the presence of trauma were recorded in does and kids. From the viewpoint of trauma localization, findings on the limbs were more frequent than findings on the body (p < 0.01). The only exceptions to this were lambs, does and kids, for which there was no statistically significant difference between findings on the limbs and the body (p = 1.00). The results show that housing system (bedding, the presence of slats, floor hardness), transport of animals to the slaughterhouse (moving animals to the vehicle, loading ramps, floors in transport vehicles and the transport of animals itself) and design of the slaughterhouse (unloading ramps, passageways and slaughterhouse floors) have a greater impact on the limbs than the bodies of animals in the majority of species. A difference was also demonstrated in the occurrence of findings of trauma in the limbs and body (p < 0.01) between culled adult animals and fattened animals, namely in cattle and pigs. A difference (p < 0.01) between ewes and lambs was found only in the occurrence of traumatic injury to the limbs. The results showed that fattened animals are affected by the risk of trauma to a lesser extent than both culled adult animals and young animals. Statistically significant differences (p < 0.01) were also found between the studied species and categories of animals. The category most affected from the viewpoint of injury both to the limbs and body was cows. In contrast to cows that are typically reared indoors, the low frequency of traumatic findings was found in small ruminants and in bulls, i.e., animals typically reared outdoors. Assumedly, access to pasture may be beneficial considering the risk of traumatic injury.

Abattoir-Based Measures to Assess Swine Welfare: Analysis of the Methods Adopted in European Slaughterhouses

The welfare of pigs is a major concern among some consumers and pig producers. This concern has driven welfare specialists into the validation of methods and protocols that can be used to evaluate the welfare status of pigs on farms. These protocols require the use of animal-, management and resource-based measures, although data collected from the animals are generally considered more useful. However, due to some limitations, these schemes are not always applicable; therefore, the use of simplified schemes involving the collection of data from pigs at the slaughterhouse has been advocated. Methods and scoring schemes recently described and used in studies performed in European slaughterhouses to determine pig welfare and health are reviewed in the present manuscript. A focus on the scoring schemes for lesions of the body and viscera during post-mortem activities at the abattoir is provided. These methods can be used to benchmark a welfare scheme suitable for all European competent authorities and professionals working in the context of pig welfare.

Abstract

The assessment of swine welfare requires feasible, reliable, and reasonable indicators. On-farm evaluation of pig welfare can provide valuable information to veterinarians and farmers. However, such protocols can result expensive and time-consuming. With this regard, an interest in the appraisal of swine welfare at abattoir has grown over the recent years. In particular, the use of certain lesions collected directly from slaughtered animals to determine the welfare status of pigs has been evaluated by several authors. In the present review, the different methods developed to score lesions collected directly from the body and the viscera of animals slaughtered in European abattoirs (“abattoir-based measures”) are presented. The text specifically focuses on the methods currently available in the literature for the scoring of body, pluck and gastric lesions during post-mortem activities. Moreover, the strengths and weaknesses of abattoir-based measures schemes are discussed. To conclude, the future perspectives of the assessment of pig welfare at the slaughterhouse are described, appealing for a benchmarking system that can be systematically used by veterinarians and other professional figures involved in the process.

Severe tail lesions in finisher pigs are associated with reduction in annual profit in farrow-to-finish pig farms

OBJECTIVES

We investigated the financial impact of different prevalence levels of severe tail lesions (STL) during the finisher stage associated with changes in average daily gain (ADG) in farrow-to-finish pig farms.

METHODS

Prevalence of STL was estimated for 31 farrow-to-finish pig farms. Regression tree analysis was used to identify a threshold for STL associated with differences in ADG. Then, a financial analysis was carried using the Teagasc Pig Production model.

RESULTS

A threshold of ≥0.86% prevalence of STL was associated with a 4.8% decrease in ADG which translated into pigs requiring 7 days more to reach target slaughter weight than in farms below the threshold. Reduced ADG meant that farms with higher prevalence of STL used 3.6% more weaner and 1.4% more finisher feed per year increasing feed costs by 1.5%. This reduced mean annual farm profit by 15.1% in farms with higher prevalence of STL.

CONCLUSIONS

Our results provide an indication of the financial effects of STL in intensive pig production systems. The identified threshold for the prevalence of STL could provide a tangible target for farmers to focus on in developing strategies to reduce tail lesions and allow farmers to complete a cost benefit analysis of controlling STL.

Meat Consumers' Opinion Regarding Unhealthy Pigs: Should They Be Treated with Antibiotics or Euthanized on Farm?

The aim of this study was to investigate the opinions of meat consumers (n = 1780) on on-farm management of unhealthy pigs, whether support for treatment with antibiotics varies according with chance of recovery, and the effect of knowledge on the use of antibiotics on these opinions. Most participants believed that the use of antibiotics was the best solution for unhealthy pigs, and this was associated with a low level of knowledge about antibiotics. Increasing the probability of recovery after treatment increased support for treating pigs with antibiotics. However, the majority of participants rejected the consumption of meat from animals housed in "hospital pens". After price, concern with food safety was the second main factor that influenced participants' choice when buying meat. Support for the use of antibiotics to deal with unhealthy pigs in "hospital pens", as well as for consumption of the meat from these animals, was higher among participants involved in agriculture. This shows that consumers are unaware of the potential negative repercussions for animal welfare associated with banning or reducing the use of antibiotics in livestock production, which is an important concern for the industry.

Shortening the immunocastration-to-slaughter interval from 3 to 2 weeks reduced carcass backfat and weight, increased sexual behaviour and carcass skin blemishes in group-housed male pigs sold at fixed age

Context Pig producers require strategies to temporarily slow growth rate, particularly when markets impose penalties on over-weight and fat carcasses. Immunocastrated pigs usually have higher feed intakes (e.g. during the 3–5-week immunocastration-to-slaughter interval, which is commonly used in Australian pig industry), resulting in higher carcass weight and backfat thickness. Shortening the immunocastration-to-slaughter interval by delaying the second vaccination by a week may be a fine-tuned strategy to reduce carcass backfat and weight of male pigs. However, postponing the age receiving immunocastration as a method to achieve a shorter immunocastration-to-slaughter interval may increase aggressive and sexual behaviours of pigs. Aims The experiment aimed to quantify the effects of shortening the interval between the second dose of immunocastration and slaughter from 3 weeks to 2 weeks on growth performance, carcass traits, aggressive and sexual behaviours, and carcass skin blemishes in group-housed male finisher pigs slaughtered at a fixed age. Methods Pigs (n = 58 pens; 45 pigs per pen) were selected into the experiment at 16 weeks of age. Half of the pens received the second anti-GnRH vaccine (V2) as a means of immunocastration at 19 weeks (a common immunocastration age used in Australian pig industry; control group), and the remaining half of the pens received V2 at 20 weeks of age. All the pigs were slaughtered at 22 weeks of age. Growth performance was recorded between 16 and 22 weeks of age. Behavioural observation was conducted at 20 and 21 weeks of age. Carcass weight, backfat thickness and severity of skin blemishes on carcasses were recorded in the abattoir. Key results Results showed that shortening the immunocastration-to-slaughter interval from 3 to 2 weeks reduced average daily feed intake by 9%, growth rate by 8%, carcass weight by 3%, and backfat thickness by 7% (all P &lt; 0.05), but the percentage of pigs that displayed sexual behaviour and carcasses with &gt;25 lesions both increased (both P &lt; 0.05). Conclusions Shortening the immunocastration-to-slaughter interval from 3 to 2 weeks by delaying V2 is an effective strategy to reduce feed intake, growth rate, carcass weight and backfat in group-housed male pigs, but at a risk of increasing carcass skin blemishes. Implications The increased sexual behaviour and carcass skin blemishes will need to be managed when using a shortened immunocastration-to-slaughter interval to temporarily reduce carcass weight and backfat.

Association Between Tail-Biting and Intestinal Microbiota Composition in Pigs

Tail-biting (TB) in pigs is a serious behavioral disorder. It is an important challenge in swine production as it impacts animal welfare and health and the economics and safety of the pork meat supply chain. To prevent TB, approaches including enrichment material and tail docking are proposed but none are optimal. Nutrition appears to be an important factor in TB behavior, perhaps by modulating the intestinal microbiota (IM). Our aim was to assess the association between TB behavior and IM in pigs through comparisons of IM in groups of biter, bitten and non-biter/non-bitten pigs. Each group composed of 12 pigs was formed at the beginning of the growing/finishing phase based on a target behavior analysis centered on TB behavior for the biter group and a score of damages caused to the tail for the bitten group. Blood and fecal samples were collected from each pig during a TB episode, at time 0, t0, and when the TB episode was considered finished, 4 weeks later, at time 1, t1. Serum cortisol level was determined by ELISA and used as an indicator of stress. The pig's fecal microbiota was analyzed from DNA extracted from freshly collected fecal matter using amplicon sequencing of the V4 hypervariable region of the 16S rRNA gene. Serum cortisol levels were significantly higher in either the biter or bitten pig groups compared to the negative control group (p = 0.02 and p = 0.01, respectively). The microbiota alpha-diversity was not significantly different between all groups, biter, bitten and negative control. Analyses of beta-diversity, however, revealed a significant difference between either the biter or the bitten group in comparison to the non-biter/non-bitten negative control group in terms of structure and composition of the microbiota. Lactobacillus were significantly more abundant in the negative control group compared to the two other groups (p = 0.001). No significant difference was revealed between the biter and bitten groups. Quantitative real-time PCR (qPCR) confirmed that lactobacilli were more abundant in the negative control group. Our study indicates that TB behavior is associated with the IM composition in pigs.

A Retrospective Study after 10 Years (2010-2019) of Meat Inspection Activity in a Domestic Swine Abattoir in Tuscany: The Slaughterhouse as an Epidemiological Observatory

The control activities performed at the slaughterhouse comprise inspections before and after slaughtering to verify the health and welfare of the animals and the wholesomeness of the animal products. In this study, data deriving from ten years (2010–2019) of meat inspection activity in a pig slaughterhouse in Tuscany (Italy) were analyzed to investigate the frequencies of death during transport of whole carcass and partial condemnations and their causes. In total 1,246,309 pigs from 8 different regions of Central and Northern Italy were slaughtered. The mortality rate was found to be lower than the threshold internationally recommended to ensure animal welfare and in line with the mortality values reported at the European level. Overalls 372 carcasses were condemned mainly due to erysipelas, generalized jaundice, lipomatous pseudohypertrophy, generalized abscesses, acute or generalized enteritis, and peritonitis. As regards partial condemnations, liver, lungs, and kidney were the most frequently condemned organs. The results of this study describe a non-worrying situation as regards to the investigated aspects and confirm the slaughterhouse as a privileged observation point for monitoring the trend of the main diseases over time, the results of the efforts for their control, and also the compliance with animal welfare standards.

Abstract

The activities performed by the Official Veterinarian at the slaughterhouse represent a useful source of data for the control of issues affecting human and animal health and welfare. This study analyzed the data deriving from ten years (2010–2019) of meat inspection in a pig slaughterhouse in Tuscany (Italy) to investigate the transport mortality rate and the frequencies and main causes of whole carcass and partial condemnations. In total, 1,246,309 pigs were slaughtered from 8 different regions of Central and Northern Italy. Overall, 1153 pigs died during transport (mortality rate 0.09%). Whole carcass condemnation affected 372 carcasses (0.03%), mainly due to erysipelas, generalized jaundice, lipomatous pseudohypertrophy, generalized abscesses, acute or generalized enteritis, and peritonitis. As regards partial condemnations, the liver was the most frequently condemned (~30% of the pigs), followed by lungs (17.3%), heart (6.9%), and kidney (0.9%). The main causes were “milk spot liver” and perihepatitis for the liver; pneumonia and pleurisy for the lungs; pericarditis and polyserositis for the heart; and polycystic kidney and nephritis for kidneys. The results of this study describe a non-worrying situation as regards the investigated aspects and confirm the slaughterhouse as a valid epidemiological observatory for monitoring the trend of the main diseases over time, the results of the efforts for their control, and the compliance with animal welfare standards.

Assessment of Animal-Based Pig Welfare Outcomes on Farm and at the Abattoir: A Case Study

The study assessed the prevalence of animal-based pig welfare outcomes on one Chilean farm and one abattoir. A total of 198 pens of slaughter pigs (9,049 pigs) were observed on farm and 54 batches (8,843 pigs) were observed at the abattoir. All assessments were conducted from outside the pen on farm and from outside the corridor where pigs were unloaded from the truck at the abattoir. Batch size and number of pigs with ear, tail and skin lesions, hernias, rectal prolapse, bursitis, and lameness were recorded. Data were analyzed using generalized linear mixed models. There was a large variation among pens on farm and among batches at the abattoir for all outcomes. Bursitis was the most prevalent outcome recorded in both locations, followed by ear lesions recorded on farm and by tail lesions recorded at the abattoir. Ear lesions' prevalence was higher on farm (P < 0.001), while tail lesions, hernia, and bursitis prevalence were higher at the abattoir (P < 0.001). Ear lesions' prevalence on farm was higher in female and mixed-sex groups than in male groups (P < 0.01), but male groups tended to have a higher tail lesions' prevalence (P < 0.1). The results show a difference in welfare outcomes, suggesting that assessment of outcomes on farm could complement ante-mortem inspections at the abattoir. However, as the same animals were not inspected in the two locations and there is the possibility of a seasonal influence on the results, the findings should be interpreted with caution and further research is required.

Variations in the Behavior of Pigs During an Open Field and Novel Object Test

Tail biting is a serious welfare concern in pig production. It not only causes distress for victims, but may occur where pigs are unable to cope, and become biters. An animal's ability to cope with stressful situations may vary between individuals, but the behavioral response could be consistent across different fear eliciting situations. We exposed 75 pigs to open field (OF) and novel object (NO) tests at 14 weeks of age. Within each pen of pigs (n = 16 pens, 55 pigs/pen), 6 pigs were selected for testing using the following criteria: 3 pigs that had severe bite wounds (BITTEN), 1 confirmed biter (BITER), 1 pig which could be easily approached and trained to provide a saliva sample (BOLD) and 1 pig which was extremely evasive, and was unable to be trained to willingly provide a saliva sample (SHY). Given that responses may be consistent in different scenarios, we hypothesized that SHY pigs would display more characteristics of a fear response (i.e., less movement in the open field, more time spent by the door, and longer latency to approach the novel object) than human BOLD pigs. We also hypothesized that BITTEN pigs would behave similarly to SHY and BITERS similarly to BOLD. The BOLD and BITER pigs spent more time exploring (P < 0.05) and less time by the door (P < 0.01) than the BITTEN and SHY pigs. Although there was an overall increase in cortisol level from before to after the tests (P < 0.001), this was only significant for BITTEN (P < 0.001) and SHY (P < 0.05) pigs. Therefore, as hypothesized, for several measures, BOLD, and BITER pigs behaved similarly, and differently to SHY and BITTEN. However, the low sample size potentially meant that for several measures, although numeric differences were in the direction hypothesized, there were no statistical differences. Further work in which a greater number of BITER pigs were included in the sample, may elucidate our hypotheses more clearly, as to whether responses to fear tests in pigs could be associated with the likelihood of being a tail biter, or victim.

Intact Tails as a Welfare Indicator in Finishing Pigs? Scoring of Tail Lesions and Defining Intact Tails in Undocked Pigs at the Abattoir

Tail biting lesions are a potential measure of on-farm animal welfare, as a large range of stressors increase the risk for tail biting outbreaks. Further, tail biting is a major challenge, as lesions due to tail biting decrease animal welfare and health, as well as production efficiency and carcass quality. The aim of this study was to suggest a tail scoring system for use at slaughterhouses processing undocked pigs, and to link tail lesion scores to meat inspection data. A further aim was to suggest a definition for an intact enough tail. To validate the suggested scoring system we assessed tails before and after scalding and compared results to pathological examinations. In total, 14,433 tails were scored, and 117 tails were collected for pathological examination. After scalding, 49.2% of all tails were scored as fully intact. Of tails with lesions 2.5% were scored as having major acute wounds (>2 cm), while 11.6% had minor acute wounds (<2 cm), and 36.7% healed lesions. Intact tails were on average 31.5 cm (SD 2.5 cm) long. Lesion scored at the slaughter-line agreed well with the pathological assessment. Tail lesions were associated with several meat inspection findings: tails with more severe lesions and of shorter length increased the risk for meat inspection findings to a higher degree. A detailed lesion scoring method helps to identify carcasses at risk for condemnations, as well as being a potential method for on-farm welfare estimation. We suggest that a system for scoring tail lesions in undocked pigs should utilize a combination of scoring of the lesion and measuring the tail length. As bite marks or bruises on an otherwise intact tail were not a concern for meat hygiene, we suggest the definition of an intact enough tail could allow the inclusion of tails with these mild changes. Meat inspection findings in carcasses with tails scored as healed, but with no fresh lesions, and with more than 75% of the average intact length remaining were rather similar to those of fully intact tails. Based on these findings we suggest that a tail of this length, and with no visible fresh lesions could also be considered intact enough.

Skin Temperature of Slaughter Pigs With Tail Lesions

The aim of this study was to assess the effect of tail lesion severity on skin temperature of slaughter pigs measured at the base of the tail and the ear by infrared thermography camera and to evaluate the association between the temperature measurements. Pigs were randomly selected in the lairage, containing ~200 pigs/pen. Tail lesions were scored according to severity, using a 0-4 scale. Tail lesion scores 0 and 1 were summed as it was difficult to distinguish healed lesions from mild lesions due to animal dirtiness. In total, 269 study pigs were imaged at the two locations. The effect of tail lesion score and sex of the pig on the highest temperature of the infrared image areas were analyzed using linear mixed models. Association between the tail base and ear base temperatures was evaluated using Pearson correlation. Skin temperature measured at the base of the tail was significantly lower for tails scored 0-1 than for all other tail lesion scores (P < 0.05). Pigs with tail lesion scored 2 had significantly lower skin temperatures at the base of the tail than pigs with tail lesion scored 3 or 4 (P < 0.05) while there was no difference in skin temperature at the base of the tail between pigs with tail lesion scored 3 and 4 (P > 0.05). Skin temperature measured at the ear base was significantly lower for pigs with tail lesion scored 0-1 than pigs of all other tail lesion scores (P < 0.05) with no difference between the other scores (P > 0.05). Furthermore, there was an association between the two measurements (r = 0.50; P < 0.001). The findings suggest that even pigs with moderate tail lesions (score 2) may have general inflammation and infection, evidenced by the elevated systemic temperature compared to pigs with none or mild tail lesion (score 0-1).

Irish pig farmer's perceptions and experiences of tail and ear biting

Abnormal behaviours such as ear and tail biting of pigs is of significant welfare and economic concern. Currently, pig welfare legislation is under renewed focus by the EU commission and is likely to be enforced more thoroughly. The legislation prohibits routine tail docking and requires adequate enrichment to be provided. In Ireland, tail-docking is still the most utilised control mechanism to combat tail biting, but biting is still widespread even in tail-docked pigs. In addition, as pig farms are almost all fully slatted, bedding type material cannot be provided. Thus, the opinions, and practices of farmers in countries like Ireland, which may need to make significant adaptations to typical pig management systems soon, need to be considered and addressed. We carried out a survey of pig farmers during 2015 in order to gain a greater understanding of the extent of biting on Irish farms, perception on the most important preventive measures, current enrichment use and actions following outbreaks. Fifty-eight farmers from 21 Counties responded with an average herd size of 710 ± 597 sows (range 90–3000 sows). Only two farms had experienced no biting in the last year. Of the farms that had experienced tail biting (88%), 86% had also experienced ear biting. The most common concerns relating to biting were condemnation and reduced productivity of bitten pigs with both receiving an average score of 4 (most serious). Ear biting occurred most commonly in the 2nd stage (approximately 47–81 days from weaning) weaner and tail biting in the finishing stage. The most important preventive measures were felt to be taking care of animal health, restricting density, maintaining an even quality of feed/content and maintaining good air movement. Sixty-five percent of respondents added additional enrichment following an outbreak. Chains were the most common form of enrichment currently used (83%). Those not using chains favoured wood, toys and rope (17%). Identification of the most effective and accessible control and prevention measures both for the animals and for the farming community is thus essential. Improved understanding of the concerns and practices of producers, which this survey contributes to, is a first step towards this aim.

An investigation into the effectiveness of compressed straw blocks in reducing abnormal behaviour in growing pigs

The provision of manipulable material to pigs is a legal requirement to ensure their good welfare. Loose straw is edible, chewable, investigable and manipulable, and has been proven to be effective in reducing abnormal behaviour. However, it is incompatible with slatted systems and therefore not a viable option for many intensive units. Thus, there is a need to identify enrichment materials that are as effective as loose straw and compatible with slatted floors. This study investigated the viability of using compressed straw blocks on a commercial farm in terms of cost and effectiveness in reducing biting relative to plastic hanging toys. A total of 880 slaughter pigs were used, among which half (n = 440, 8 groups) were provided with commercial pig toys (TOY) and the other half (n = 440, 8 groups) were provided compressed straw blocks (STRAW BLOCK). Animals were separated according to sex to investigate whether there was a higher propensity to tail and ear bite depending on sex. Pigs were monitored from weaning to slaughter, with tails being examined post scalding and any condemnations recorded at the abattoir. Throughout their life, the tails and ears of all pigs were examined individually, and behavioural observations of each pig group were conducted fortnightly. Salivary cortisol was also obtained from a subsample of pigs from each group every fortnight to monitor stress levels. The highest straw usage was recorded in the second weaner stage (39 to 67 days after weaning). Enrichment type or sex had no effect on tail lesion scores or cold carcass weight recorded at the abattoir. There was also no effect of enrichment type or sex on body, tail, or ear lesion scores during either the weaner (0 to 39 days after weaning) or finisher stage (67 to145 days after weaning). Female pigs showed more biting behaviour than males, and female pigs that were provided STRAW BLOCK performed better than those provided TOY. In both the weaner and finisher accommodation, more instances of interaction were recorded with TOY pens as enrichment than with STRAW BLOCK, but the interaction duration was not recorded. There was no effect of sex on either stage. More instances of aggression were observed with the TOY than with STRAW BLOCK in the weaner stage (P < 0.05). Enrichment type or sex had no effect on cortisol levels. Thus, relative to plastic hanging toys, compressed straw blocks provided in this manner did not benefit pig welfare.

Providing Effective Environmental Enrichment to Pigs: How Far Have We Come?

Science has defined the characteristics of effective environmental enrichment for pigs. We provide an overview of progress towards the provision of pig enrichment in the three largest global pork producing regions. In the USA, enrichment has not yet featured on the policy agenda, nor appeared on farms, except when required by certain farm assurance schemes. China has very limited legal animal welfare provisions and public awareness of animal welfare is very low. Food safety concerns severely restrict the use of substrates (as enrichment) on farms. Providing enrichment to pigs is a legal requirement in the EU. In practice, enrichment is not present, or simple (point-source) objects are provided which have no enduring value. Other common issues are the provision of non-effective or hazardous objects, inadequate presentation, location, quantity and size or inadequate maintenance of enrichment. Improvements can be made by applying principles from the field of experimental analysis of behaviour to evaluate the effectiveness of enrichment; providing welfare knowledge transfer, including training and advisory services; highlighting the economic benefits of effective enrichment and focusing on return on investment; increasing pressure from the financial sector; using novel drivers of change, such as public business benchmarking. The poor implementation of scientific knowledge on farms suggests that the pig industry has not fully embraced the benefits of effective enrichment and is still a long way off achieving an enriched pig population.

Rearing Undocked Pigs on Fully Slatted Floors Using Multiple Types and Variations of Enrichment

In fully slatted systems, tail biting is difficult to manage when pigs' tails are not docked because loose enrichment material can obstruct slurry systems. This pilot study sought to determine: a) whether intact-tailed pigs can be reared with a manageable level of tail biting by using multiple slat-compatible enrichment; b) whether a variation of enrichment has an effect; and c) whether pigs show a preference in enrichment use. Ninety-six undocked pigs were given the same enrichment items from one week after birth until weaning. At weaning, four different combinations of 8 enrichment items were utilized based on predefined characteristics. These were randomly assigned to 8 pens (n = 12 pigs/pen). Four pens had the same combination (SAME) from assignment and four pens switched combinations every two weeks (SWITCH). Individual lesion scores, interactions with the enrichment, and harmful behaviours were recorded. The average tail score during the experiment was low (0.93 ± 0.02). Only one pig in a SAME pen had a severely bitten tail (partly amputated). The overall level of interaction with enrichment did not decline over time. Pigs interacted with a rack of loose material most frequently (p < 0.001). The study showed promising results for rearing undocked pigs on fully slatted floors using slat-compatible enrichment.

'Phasing out pig tail docking in the EU - present state, challenges and possibilities'

BACKGROUND

European legislation dictates that pig tail docking is not allowed to be performed routinely (European Union. Council Directive 2008/120/EC of 18 December 2008 laying down minimum standards for the protection of pigs. OJ L 47, 18.2.2009). Nevertheless, tail docking is still practiced routinely in many European countries, while four countries stopped routine tail docking completely. Tail docking is also practiced in many countries outside Europe.The Federation of Veterinarians of Europe (FVE), the European Association of Porcine Health Management (EAPHM) together with the European Commission carried out an online survey to investigate the situation regarding the practice of pig tail docking and the provision of enrichment material across 24 European countries. It also focuses on the role of the veterinary profession and gives an overview on published literature regarding the challenges and possibilities related to the raising of pigs with intact tails.

RESULTS

Fifty-seven (57) usable survey responses from 24 countries were received. On average 77% (median = 95%) of pigs are routinely tail-docked. In Finland, Norway, Sweden, Switzerland, less than 5% of the pigs are tail-docked. According to the respondents, 67% of pigs (median = 76%) across the 24 EU countries surveyed are given suitable enrichment materials. Training of veterinary practitioners, their role in advising the producer and undertaking a risk assessment of tail biting were more positively valued in countries that stopped routine tail docking than in countries that had not stopped routine tail docking. Initiatives such as training from national authorities to encourage abandoning tail docking and routine recording of tail biting at the slaughterhouse were identified as two successful items to promote the raising of pigs with entire tails.

CONCLUSION

In many European countries the majority of the pigs are still routinely tail-docked, which is a violation of the European legislation. To stop routine tail docking it is necessary to raise the awareness and education about risk factors to prevent tail biting. The growing knowledge about the reasons for failing voluntary national initiatives as well as about successful measures taken by some countries to make pig production with intact tails feasible should be distributed throughout the EU pig producing community. The veterinary profession has a significant role to play in raising awareness, facilitate knowledge transfer and to identify risk factors and solutions on farm level for the benefit of pig health and welfare.

Skin lesion monitoring at slaughter on heavy pigs (170 kg): Welfare indicators and ham defects

In order to evaluate at the slaughterhouse external carcass lesions on heavy pigs (170 kg) as potential welfare indicators, and the prevalence of ham defects determining ham exclusion from Protected Designation of Origin (PDO) markets, 732 pig batches from northern Italy were monitored during a 12-month period, and then processed analysing the effect of slaughter season, overnight lairage, and production type. On the slaughter line, skin scratches were separately scored in the posterior region (defined as the area including the hind legs and the tail) and the anterior one (as the remaining area), while the whole carcass was examined for external hematomas. Chronic ear and tail lesions referable to the rearing phase, and bursitis were recorded as retrospective welfare indicators. The annual median prevalence of carcasses per batch with severe anterior scratches was 64% while 46.4% had severe posterior scratches. The highest autumn score for both skin scratches (P < 0.001) and traumatic ham defects (P = 0.005) is reflected in the positive correlation between severe posterior scratches and ham hematomas (r² = 0.27; P < 0.001). Overnight lairage batches resulted in higher prevalence for scratches, while among ham defects only veining increased. Among binary records, only ear lesions were frequently recorded (annual median = 10%). A comparison analysis between pigs in and out of PDO circuit was performed to evaluate the variation related to the different genetics, showing differences for ear and tail lesions and for almost all the considered ham defects. The present study confirms that skin lesions represent a problem also for heavy pigs and that overnight lairage and season can affect their prevalence, with the associated possibility to give ham defects. Ear lesions are suitable to be used as retrospective welfare indicator, while tail lesions usage is nowadays limited by the extensive use of tail docking.

Tail lesions in fattening pigs: relationships with postmortem meat inspection and influence of a tail biting management tool

Tail biting is a major welfare and economic problem in intensive pig production. The objectives of this study were to (1) determine tail lesion prevalence at a German abattoir, (2) test for associations between meat inspection findings and tail lesions, (3) assess the agreement between tail necrosis recorded during meat inspection and scored from pictures and (4) test whether the tail biting management tool 'Schwanzbeiß-Interventions-Programm' (SchwIP) had an effect on tail lesion prevalence. A total of three observers scored tail lesions from pictures of 43 328 pigs from 32 farms where SchwIP had been applied, and of 36 626 pigs from 32 control farms. Tail lesions were classified as score 0: no visible lesion, score 1: mild lesion, score 2: severe lesion and score 3: necrosis. In addition, complete loss of tail (CL) was recorded. Tail necrosis was the only tail-related carcase finding recorded by meat inspectors. (1) Tail lesion prevalences in pigs from control farms were 23.6% for score 1, 1.02% for score 2, 0.55% for score 3 and 0.41% for CL. The combined prevalence of any lesion and/or CL was 25.4%. (2) Pleurisy, lung findings, signs of inflammation in the legs, arthritis and abscesses were the most frequent meat inspection findings (prevalences of 8.46%, 8.09%, 2.99%, 0.83% and 0.23%, respectively; n=79 954 pigs). Leg inflammation, arthritis and abscesses were more prevalent in pigs with tail lesions of any degree compared with pigs without tail lesions (3.39% v. 2.83%, 1.06% v. 0.75% and 0.39% v. 0.17%, respectively; all P&lt;0.001, n=79 954 pigs). Pigs with severe tail lesions also had more lung findings (2.00% v. 0.17%, P&lt;0.001). (3) Tail necrosis scored during meat inspection resulted in lower prevalence than scored from pictures (0.22% v. 0.69%; n=79 954 SchwIP and control farm pigs). (4) Although tail lesion prevalence was significantly higher in pigs from SchwIP than in pigs from control farms during the first 3 months (32.2% v. 23.8%, P=0.015), it was not significantly higher during the remainder of the year (22.6 v. 26.9, 24.4 v. 21.4 and 24.0 v. 28.0, second, third and fourth quarters, respectively). In conclusion, meat inspection results in much lower tail lesion prevalences than tail lesion assessment from pictures, even if only the category 'necrosis' is compared. Advising farms on tail biting using the management tool SchwIP helped to decrease the prevalence of tail lesions on problem farms.

Effects of tail docking and tail biting on performance and welfare of growing-finishing pigs in a confinement housing system

A study was conducted to evaluate the effect of tail docking on the welfare and performance of victimized pigs by tail biting and tail biters. Pigs ( = 240; 25.7 ± 2.9 kg average weight), including 120 pigs that were tail docked at birth and 120 pigs that remained with intact tails, were used. Pigs were housed in 8 pens of 30 pigs in a confinement barn for 16 wk, with 4 pens each housing pigs of both sexes with docked or intact tails. Tail biters and victimized pigs with damaged tails were identified during outbreaks of tail biting. Growth performance was monitored, and skin lesions on the tail, ears, and body were assessed. Blood samples were collected from focal tail biters, victimized pigs, and nonvictimized pigs for analysis of total serum protein, IgG, and substance P concentrations. When pigs were marketed, carcass weights and the number of pigs with carcass trim loss were recorded. During the growing-finishing period, 48% of pigs with docked tails and 89% of pigs with intact tails experienced lesions on their tails, including 5% of docked pigs and 30% of intact pigs identified as victimized pigs that experienced puncture wounds with signs of infection on their tails or loss of tails ( < 0.001). Victimized pigs tended to gain less weight ( = 0.07) between 17 and 21 wk of age than other pigs when tail biting prevailed in this study. Victimized pigs were more frequently ( = 0.04) sold for less than full value and had a lower dressing percentage ( < 0.001) compared with nonvictimized pigs. For victimized pigs, total serum protein and IgG concentrations were elevated 5 d after tails were injured, suggesting that tail damage can cause inflammation, which may lead to carcass abscesses and trim loss. Compared with victimized pigs and nonvictimized pigs, tail biters had lower total serum protein ( = 0.01) and IgG ( = 0.01) concentrations, indicating that tail biters may experience poor immune functions. Results of this study demonstrated that tail docking reduced tail damage in pigs kept in a confinement system. Tail damage can cause inflammation and reduce the value of market pigs. More research is needed to test whether compromised immune functions predispose pigs to tail biting.

Automatic early warning of tail biting in pigs: 3D cameras can detect lowered tail posture before an outbreak

Tail biting is a major welfare and economic problem for indoor pig producers worldwide. Low tail posture is an early warning sign which could reduce tail biting unpredictability. Taking a precision livestock farming approach, we used Time-of-flight 3D cameras, processing data with machine vision algorithms, to automate the measurement of pig tail posture. Validation of the 3D algorithm found an accuracy of 73.9% at detecting low vs. not low tails (Sensitivity 88.4%, Specificity 66.8%). Twenty-three groups of 29 pigs per group were reared with intact (not docked) tails under typical commercial conditions over 8 batches. 15 groups had tail biting outbreaks, following which enrichment was added to pens and biters and/or victims were removed and treated. 3D data from outbreak groups showed the proportion of low tail detections increased pre-outbreak and declined post-outbreak. Pre-outbreak, the increase in low tails occurred at an increasing rate over time, and the proportion of low tails was higher one week pre-outbreak (-1) than 2 weeks pre-outbreak (-2). Within each batch, an outbreak and a non-outbreak control group were identified. Outbreak groups had more 3D low tail detections in weeks -1, +1 and +2 than their matched controls. Comparing 3D tail posture and tail injury scoring data, a greater proportion of low tails was associated with more injured pigs. Low tails might indicate more than just tail biting as tail posture varied between groups and over time and the proportion of low tails increased when pigs were moved to a new pen. Our findings demonstrate the potential for a 3D machine vision system to automate tail posture detection and provide early warning of tail biting on farm.

Understanding Tail-Biting in Pigs through Social Network Analysis

The objective of this study was to investigate the association between social structure and incidence of tail-biting in pigs. Pigs (n = 144, initial weight = 7.2 ± 1.57 kg, 4 weeks of age) were grouped based on their litter origin: littermates, non-littermates, and half-group of littermates. Six pens (8 pigs/pen) of each litter origin were studied for 6 weeks. Incidence of tail injury and growth performance were monitored. Behavior of pigs was video recorded for 6 h at 6 and 8 weeks of age. Video recordings were scanned at 10 min intervals to register pigs that were lying together (1) or not (0) in binary matrices. Half weight association index was used for social network construction. Social network analysis was performed using the UCINET software. Littermates had lower network density (0.119 vs. 0.174; p < 0.05), more absent social ties (20 vs. 12; p < 0.05), and fewer weak social ties (6 vs. 14, p < 0.05) than non-littermates, indicating that littermates might be less socially connected. Fifteen percent of littermates were identified as victimized pigs by tail-biting, and no victimized pigs were observed in other treatment groups. These results suggest that littermates might be less socially connected among themselves which may predispose them to development of tail-biting.

End-Cycle Sow Carcass Condemnation in a French Slaughterhouse

Surveillance at an abattoir allows all animals or carcasses that present a potential public health risk to be withdrawn from the human food chain. Whole-carcass condemnation results in important economic losses, not only for the producer but also for other participants in the meat industry. Access to the personal electronic database of an abattoir in France enabled us to run logistic regression models to investigate the risk factors for whole-carcass condemnation of end-cycle sows in that abattoir. When end-cycle sows that were slaughtered and eviscerated between 22 June 2015 and 8 December 2015 (185 days) were considered (n = 19,866), the results highlighted the importance of the total theoretical time off feed, which represents the fasting period from leaving the farm of origin to the time of slaughter (including transportation and waiting time at the abattoir). Each 10-h increase in the theoretical time off feed was associated with a 31% greater likelihood of whole-carcass condemnation [odd ratio (OR) = 1.31, CI 95% (1.27; 1.34)], and a 10 kg increase in carcass weight before refrigeration was associated with a 23% lower likelihood of carcass condemnation [OR = 0.77, CI 95% (0.75; 0.78)]. The results also indicate the importance of the producer group that the farmer belonged to (P < 0.01). A relatively small number of variables was available in the actual database to study the relevant risk factors for whole-carcass condemnation associated with or without diseases at the farm of origin. This derives partly from the fact that traceability at the abattoir in France is done per batch rather than individually for pigs; further, limited information is available at the farm level. An investigation of the reasons for whole-carcass condemnation could have been informative; however, it was not feasible in a reasonable timeframe because these data were not saved in a database in a systematic way. Some of the difficulties encountered in this study should soon be alleviated by using the meat inspection information system software for collecting livestock meat inspection data. Implemented recently by the French ministry of agriculture, this new tool should allow for broader perspectives in swine surveillance.

A link between damaging behaviour in pigs, sanitary conditions, and dietary protein and amino acid supply

The tendency to reduce crude protein (CP) levels in pig diets to increase protein efficiency may increase the occurrence of damaging behaviours such as ear and tail biting, particularly for pigs kept under suboptimal health conditions. We studied, in a 2×2×2 factorial design, 576 tail-docked growing-finishing entire male pigs in 64 pens, subjected to low (LSC) vs. high sanitary conditions (HSC), and fed a normal CP (NP) vs. a low CP diet (LP, 80% of NP) ad libitum, with a basal amino acid (AA) profile or supplemented AA profile with extra threonine, tryptophan and methionine. The HSC pigs were vaccinated in the first nine weeks of life and received antibiotics at arrival at experimental farm at ten weeks, after which they were kept in a disinfected part of the farm with a strict hygiene protocol. The LSC pigs were kept on the same farm in non-disinfected pens to which manure from another pig farm was introduced fortnightly. At 15, 18, and 24 weeks of age, prevalence of tail and ear damage and of tail and ear wounds was scored. At 20 and 23 weeks of age, frequencies of biting behaviour and aggression were scored for 10×10 min per pen per week. The prevalence of ear damage during the finisher phase (47 vs. 32% of pigs, P < 0.0001) and the frequency of ear biting (1.3 vs. 1.2 times per hour, P = 0.03) were increased in LSC compared with HSC pigs. This effect on ear biting was diet dependent, however, the supplemented AA profile reduced ear biting only in LSC pigs by 18% (SC × AA profile, P < 0.01). The prevalence of tail wounds was lower for pigs in LSC (13 ± 0.02) than for pigs in HSC (0.22 ± 0.03) in the grower phase (P < 0.007). Regardless of AA profile or sanitary status, LP pigs showed more ear biting (+20%, P < 0.05), tail biting (+25%, P < 0.10), belly nosing (+152%, P < 0.01), other oral manipulation directed at pen mates (+13%, P < 0.05), and aggression (+30%, P < 0.01) than NP pigs, with no effect on ear or tail damage. In conclusion, both low sanitary conditions and a reduction of dietary protein increase the occurrence of damaging behaviours in pigs and therefore may negatively impact pig welfare. Attention should be paid to the impact of dietary nutrient composition on pig behaviour and welfare, particularly when pigs are kept under suboptimal (sanitary) conditions.
