Abstract
Accurate health risk prediction (HRP) is an effective means of reducing the hazards of heavy metal (HM) exposure. It can address the drawbacks of lag and passivity faced by health risk assessment. This study innovatively proposed an HRP method, MEL-HR, based on multilevel ensemble learning (MEL) technology and environment compatibility. We conducted point and interval prediction experiments on health risks using 490 sets of data covering 17 environment factors. The point prediction results indicated that when the model predicts HI and TCR, the R2 values were 0.707 and 0.619, respectively. For P5, P50, and P95 in interval prediction, the R2 values of the model were 0.706, 0.703, and 0.672 for HI, and that for TCR were 0.620, 0.607, and 0.616, respectively. The analysis of feature importance indicated that, in addition to HM factors, longitude, mining area coefficient, and soil organic matter were key environmental factors affecting the MEL-HR model. Comparative experiments showed that compared to soil HMs-based MEL-HR, environment compatibility-based MEL-HR has improved the accuracy for HI and TCR by 19.83 % and 40.36 % for the point prediction and 22.06 % and 40.01 % for interval prediction. This study can provide technical support for targeted and resilient prevention and control of health risks.

Abstract
Heavy metals such as cadmium (Cd), arsenic (As), and lead (Pb) pose significant health risks, particularly in Asia, where rice is a staple for nearly three billion people. Despite their known dangers and environmental prevalence, studies addressing their concentrations in rice across different regions and the associated health implications remain insufficient. This review systematically examines the occurrence and impact of these toxic elements, filling a critical gap in the literature. Data from seven countries indicate mean concentrations in the order of Pb > As>Cd, with values of 0.255 ± 0.013, 0.236 ± 0.317, and 0.136 ± 0.150 mg/kg, respectively. Uncertainty analysis shows extensive variability, especially for Cd, with a 95% confidence interval range from 0.220 to 0.992 mg/kg. The typical daily intake of heavy metals through rice consumption, in the order of As>Cd > Pb, frequently exceeds safe limits. Generally, data obtained from various studies showed that children were more prone to heavy metal contamination through rice consumption than adults. This review is fundamental for ongoing monitoring, future research, and management strategies to reduce heavy metal contamination in rice.

Abstract
INTRODUCTION The safety and health of food products are essential in the food industry, and the risk of contamination from various contaminants must be evaluated. Exposure to HMs from the environment (especially food) causes various adverse effects on the body and increases the risk of cardiovascular disease (CVD). MATERIAL AND METHOD Volunteers in the study comprised both healthy individuals and those with CVD. Patients were chosen using a cohort database of CVD individuals. A random choice of samples was conducted. Medical information (individuals with CVD) related to the participants was obtained from the Hoveyzeh Cohort Study Center. CVD-HM relationships were assessed using various machine-learning techniques. RESULT Based on the results of the GAM statistics approach, the baseline levels (β) of As, Cd, and Cr in rice have been calculated to be 1.05, 1.19, and 1.11, respectively. Based on the investigation's results, rice acts as a mediator between high-magnitude actions and the prevalence of CVD. Eating rice increases the probability of CVD by 0.18 and raises As eating by 0.494. The results showed that rice consumption in the research area is not associated with non-carcinogenic and carcinogenic risk (CRs and ILCRs for both categories were less than 1∗10-6). CONCLUSION There was neither a carcinogenic nor non-carcinogenic threat to adults or children and many hazardous HMs existed at the accepted thresholds. A notable relationship was seen between rice contaminated with HM and CVD.

Abstract
Arsenic (As) contamination in rice is a global public health concern, particularly in Asian countries where rice is the staple food. Current health-based limits for As in rice are typically derived from total As concentrations, resulting in overly stringent values. This study aimed to determine As bioaccessibility in rice, estimate dietary intakes of inorganic As (iAs) at different consumption rates, evaluate the cancer and non-cancer risks associated with iAs exposure through rice consumption, and assess the feasibility of deriving more accurate health-based limits for As in rice after incorporating rice As bioaccessibility. Bioaccessibility of As ranged from 60.7% to 104.5% in rice samples. Estimated iAs intake varied from 0.04 to 1.40 μg/kg BW/day at rice consumption rates of 100-300 g/day. Incorporating rice As bioaccessibility resulted in lower iAs intake estimates of 0.03-1.18 μg/kg BW/day. The non-cancer and cancer risks associated with iAs exposure are concerning for populations with higher rice consumption rates and elevated rice iAs concentrations. Health-based limits for iAs in rice for different regions across China are discussed after incorporating rice As bioaccessibility. This study contributes to the development of regional or national safety limits for As in rice, based on As bioaccessibility in rice.

Abstract
Cadmium, as a typical heavy metal, has the potential to induce soil pollution and threaten human health through the soil-plant-human pathway. The conventional evaluation method based on the total content in soil cannot accurately represent the content migrated from the food chain to plants and the human body. Previous studies focused on the process of plant enrichment of heavy metals in soil, and very few studies directly predicted human exposure or risk through the labile state of Cd in soil. Hence, a relatively accurate and convenient prediction model of Cd release and translocation in the soil-rice-human system was developed. This model utilizes available Cd and soil parameters to predict the bioavailability of Cd in soil, as well as the in vitro bioaccessibility of Cd in cooked rice. The bioavailability of Cd was determined by the Diffusive Gradients in Thin-films technology and BCR sequential extraction procedure, offering in-situ quantification, which presents a significant advantage over traditional monitoring methods and aligns closely with the actual uptake of heavy metals by plants. The experimental results show that the prediction model based on the concentration of heavy metal forms measured by BCR sequential extraction procedure and diffusive gradients in thin-films technique can accurately predict the Cd uptake in rice grains, gastric and gastrointestinal phase (R2=0.712, 0.600 and 0.629). This model accurately predicts Cd bioavailability and bioaccessibility across the soil-rice-human pathway, informing actual human Cd intake, offering scientific support for developing more effective risk assessment methods.

Abstract
The potential risk of heavy metals (HMs) to public health is an issue of great concern. Early prediction is an effective means to reduce the accumulation of HMs. The current prediction methods rarely take internal correlations between environmental factors into consideration, which negatively affects the accuracy of the prediction model and the interpretability of intrinsic mechanisms. Graph representation learning (GraRL) can simultaneously learn the attribute relationships between environmental factors and graph structural information. Herein, we developed the GraRL-HM method to predict the HM concentrations in soil-rice systems. The method consists of two modules, which are PeTPG and GCN-HM. In PeTPG, a graphic structure was generated using graph representation and communitization technology to explore the correlations and transmission paths of different environmental factors. Subsequently, the GCN-HM model based on the graph convolutional neural network (GCN) was used to predict the HM concentrations. The GraRL-HM method was validated by 2295 sets of data covering 21 environmental factors. The results indicated that the PeTPG model simplified correlation paths between factor nodes from 396 to 184, reducing by 53.5 % graph scale by eliminating the invalid paths. The concise and efficient graph structure enhanced the learning efficiency and representation accuracy of downstream prediction models. The GCN-HM model was superior to the four benchmark models in predicting the HM concentration in the crop, improving R2 by 36.1 %. This study develops a novel approach to improve the prediction accuracy of pollutant accumulation and provides valuable insights into intelligent regulation and planting guidance for heavy metal pollution control.

Abstract
Introduction People are continuously exposed to contamination, which mainly consists of heavy metals (HMs) and organic compounds. Several metals can get into grains, veggies, and bread through various methods. We estimated the health risk of HM exposure from the consumption of bread, veggies, and rice, considering the per capita amounts of these foods in the Iranian food basket, especially in Hoveyzeh and Azadegan Plain. Material and method The food products analyzed for the assessment of HMs include different veggies, rice, and bread. The health risk assessment was done with the Hazard Quotient and cancer risk formulae. The buying of vegetables, rice, and bread was done in random order during the fall and wintertime seasons. Result Tarom rice has the maximum reported levels of Cd (0.55 mg/kg), but Pakistani rice has the lowest level (0.18 mg/kg). Radish shows the highest concentrations of As, Pb, Cr, and Ni among vegetation, while Cress shows the lowest level. The study findings showed that Lavash bread had the highest levels of As (1.31 mg/kg), Cd (0.2 mg/kg), and Ni (1.2 mg/kg), whereas it indicated the lowest level of Cr (0.056 mg/kg). While the non-carcinogenic risk of HMs was evaluated between two groups of adults and children, both groups' HI and HQ levels were less than 1. The maximum HQ and HI scores for children were associated with Arsenic (As), specifically 0.0127 and 0.0137 for Tarom rice, respectively. Nevertheless, the highest HQ and HI scores for adults were associated with As, namely 0.0059 and 0.0064 for Tarom rice, respectively. Conclusion The evaluation of the carcinogenic risk caused by HM exposure in kids and adults showed that both groups' accumulated lifetime CRs and ILCRs were lower than 1*10-6. Hence, the consumption of veggies, rice, and bread within the study's area does not show an association with the occurrence of chronic diseases resulting from hazardous HMs.

Abstract
Heavy metal pollution is one of the most pressing issues threatening food security and human health. This study assesses heavy metal (chromium, cadmium, copper, zinc, nickel, and lead) exposure via hair metal concentrations in Chengdu residents, reflecting metal intake from food consumption. From June 2020 to February 2021, a sampling survey was conducted on residents' hair (n=182) and food (n=301) in six main urban areas of Chengdu. The concentrations of heavy metals in hair and food were analyzed by inductively coupled plasma mass spectrometry, and the results showed that the residents of Chengdu City had high hair concentrations of Cd (0.17±0.03 mg kg-1) and Zn (293±21.3 mg kg-1). Gender significantly affected the hair Cr, Zn, and Ni concentrations. Based on the survey results obtained from Chengdu City residents, the habits and diet structure are assessed for the influence of six heavy metals in the hair of the residents. Adolescents' (13-18 years old) hair had significantly higher Pb concentrations than adults (19-59 years old). The concentration of Ni in hair was affected by perming and dyeing habits. For dietary exposure, cereals and meat were the main contributors to the residents' daily intake of heavy metals. The bioaccessibility of Cr, Cd, Cu, Zn, Ni, and Pb in food was 2.45-74.67%, 10.6-78.7%, 13.4-82.5%, 8.89-89.2%, 7.70-85.1%, and 15.4-86.2%, respectively. In health risk evaluation based on the bioaccessible fraction of six heavy metals, the hazard quotient of each heavy metal in food was less than 1, indicating no potential non-carcinogenic risk.

Abstract
To assess the total daily mercury intake and main exposure sources of residents, six food groups, including marine fish, freshwater fish, poultry, livestock, vegetables, and cereals, were collected from five districts of Chengdu, China. The median concentrations of total mercury (THg) and methylmercury (MeHg) were 12.8 and 6.94 μg kg-1 ww, respectively. Cereals (32.2%), vegetables (30.5%), and livestock (16.2%) contributed to a much larger extent to the total consumption for the participants in Chengdu. All food categories that contributed the most of THg (2.16 μg day-1) and MeHg 1.44 (μg day-1) to the daily intake in Chengdu were cereals and marine fish, respectively. The total Hazard Ratios values below 1 in this study indicate that there is no health risk associated with Hg ingestion from the consumption of these foods for the residents in Chengdu.

Abstract
INFOGEST is a standardized in vitro digestion method suitable for foods, but rarely used to study the bioaccessibility of heavy metals in food. This study aimed to explore the differences between INFOGEST and the extensively used Physiologically Based Extraction Test (PBET) and Unified Bioaccessibility Research Group of Europe Method (UBM) methods for determining the bioaccessibility of As and Cd in rice. Intestinal As (79.3 ± 8.5 %, 75.8 ± 12.7 %, and 72.3 ± 12.2 % for INFOGEST, PBET, and UBM, respectively) and Cd (47.0 ± 6.4 %, 40.7 ± 13.8 %, and 38.1 ± 15.7 % for INFOGEST, PBET, and UBM, respectively) bioaccessibilities in the rice samples determined by the three methods were generally similar (p > 0.1, except for As bioaccessibility between INFOGEST and UBM). Furthermore, PBET was significantly correlated with INFOGEST for As bioaccessibility (R2 = 0.416) and with UBM for Cd bioaccessibility (R2 = 0.879). Additionally, PBET indicated that the bioaccessibilities of As and Cd in the polished rice were 17.0 % and 19.8 % higher, respectively, than that in the unpolished rice. This study highlights the influence of in vitro methods and rice matrices on heavy metal bioaccessibility values, necessitating a more accurate assessment of health risks associated with rice consumption.

Abstract
To reduce the health risks of exposure to Cd and Pb in wheat, a field experiment was conducted to investigate the differences in Cd and Pb bioaccessibility among the grains of 11 wheat cultivars and their relationships with the nutrient compositions of grains. The grain concentrations (Cd: 0.14-0.56 mg kg-1, Pb: 0.08-0.39 mg kg-1) and bioaccessibility (5.28-57.43% and 0.72-7.72% for Cd and Pb in the intestinal phase, respectively) of Cd and Pb differed significantly among the 11 cultivars. A safe wheat cultivar (Shannong16) with a relatively low health risk and the lowest grain Cd and Pb concentrations was selected. Ca, Mg, phytate, and methionine played key roles in affecting Cd and Pb bioaccessibility in wheat, with Ca and phytate significantly negatively correlated with Cd and Pb bioaccessibility. These findings can be used to optimize the selection strategy for safe wheat cultivars for healthy grain production in Cd-polluted farmland.

Abstract
Heavy metals contamination in rice has been one of the most public concerns globally; thus, many countries and organizations issued the maximum acceptable limits (MALs) of their concentrations in rice to regulate food safety and health risks. However, the applicability of these MALs has rarely been thoroughly evaluated. This study collected the MALs of heavy metals for rice from representative countries and organizations around the world. We assessed the critical health risks in the case of metal concentrations that reached the MALs for the first time. Results showed great variability of rice regulation limits owing to different processing methods (paddy, polished, and brown rice) and metal types (mainly focusing on inorganic As, Cd, and Pb). Risk analysis revealed that the inorganic As limits and part of Cd limits for polished rice generated relatively high health risks, indicating that their risks may be underestimated. Monte Carlo simulation further showed that the daily intake rate of rice (IRrice) is the largest contributor to total variances for the derivation of MALs, and regulation limits decreased with the augment of IRrice. Overall, we suggest a cautious reduction in the allowable limits of certain metals (such as inorganic As and part of Cd) in rice as their health risks and toxicity may be underestimated.

Abstract
Arsenic (As) accumulation in rice is a global health concern that has received increased attention in recent years. In this study, 12 rice genotypes were cultivated at four As-contaminated paddy sites in Taiwan. According to the different crop seasons and As levels in the soil, the sites were further divided into 18 environmental conditions. For As in soils, results showed that 67% of the studied environments were likely to represent As contamination. For As in rice, the mean total As concentration in brown rice grains ranged from 0.17 to 0.45 mg kg-1. The analysis of variance for the environment effect indicated that grain As concentration was mainly affected by the environmental conditions, suggesting that there was a remarkable degree of variation across the trial environments. According to the combination of the GGE biplot and cumulative distribution function of order statistics (CDFOS) analysis, five genotypes-TCS17, TCS10, TT30, KH139, and TC192-were regarded as stable, low-risk genotypes because the probability of grain As concentration exceeding the maximum permissible concentration (MPC) was lower for these genotypes across all environmental conditions. Particularly, TCS17 was recommended to be the safest rice genotype. Thus, grain As levels in the selected genotypes were applied to assess the health risk to Taiwanese residents associated with As exposure through rice consumption. Results showed that the upper 75th percentile values of the hazard quotient were all less than unity. This suggested that the health risk associated with consuming the selected rice genotypes was acceptable for most of the residents. The methodology developed here would be applicable to screen for stable, low-As-risk rice genotypes across multiple field environments in other regions or countries.

Abstract
This study aimed to evaluate the human health risk posed by potentially toxic elements (PTEs) in 59 bottled mineral water (BMW) samples of 25 different brands marketed in Turkey. The concentrations of Ag, Al, As, Cd, Cr, Co, Cu, Fe, Mn, Ni, and Pb in the BMW samples were analyzed using an ICP-OES and compared with maximum allowable concentrations (MACs). A higher concentration of As than MAC was detected in five BMW samples. The concentrations of Cd, Pb, Cr, Ni, and Al in the majority of BMW samples are higher than the MACs. The human health risk was evaluated for adults estimating non-carcinogenic risk index (HI), incremental lifetime cancer risk (ILCR) and total cancer risk (TCR). All HI values estimated for PTEs in BMW samples are less than one, except for one sample. ILCR values for Cd in approximately half of the BMW samples are above the upper limit.

Abstract
Millions of people around the world rely on rice (Oryza sativa) for a significant portion of daily calories, but rice is a relatively poor source of essential micronutrients like iron and zinc. Rice has been shown to accumulate alarmingly high concentrations of toxic elements, such as cadmium. Cadmium in foods can lead to renal failure, bone mineral density loss, cancer, and significant neurotoxicological effects. Several strategies to limit cadmium and increase micronutrient density in staple food crops like rice have been explored, but even when cadmium concentrations are reduced by a management strategy, total cadmium levels in rice grain are an unreliable means of estimating human health risk because only a fraction of the minerals in grains are bioaccessible. The goal of this work was to assess the influence of cadmium and zinc supplied to plant roots on the bioaccessibility of cadmium and essential minerals from grains of three rice lines (GSOR 310546/low grain Cd, GSOR 311667/medium grain Cd, and GSOR 310428/high grain Cd) that differed in grain cadmium accumulation. Treatments consisted of 0 μM Cd + 2 μM Zn (c0z2), 1 μM Cd + 2 μM Zn (c1z2), or 1 μM Cd + 10 μM Zn (c1z10). Our results revealed that an increased grain cadmium concentration does not always correlate with increased cadmium bioaccessibility. Among the three rice lines tested, Cd bioaccessibility increased from 2.5% in grains from the c1z2 treatment to 17.7% in grains from the c1z10 treatment. Furthermore, Cd bioccessibility in the low-Cd-accumulating line was significantly higher than the high line in c1z10 treatment. Zinc bioaccessibility increased in the high-cadmium-accumulating line when cadmium was elevated in grains, and in the low-cadmium line when both cadmium and zinc were increased in the rice grains. Our results showed that both exogenous cadmium and elevated zinc treatments increased the bioaccessibility of other minerals from grains of the low- or high-grain cadmium lines of rice. Differences in mineral bioaccessibility were dependent on rice line. Calculations also showed that increased cadmium bioaccessibility correlated with increased risk of dietary exposure to consumers. Furthermore, our results suggest that zinc fertilization increased dietary exposure to cadmium in both high and low lines. This information can inform future experiments to analyze genotypic effects of mineral bioavailability from rice, with the goal of reducing cadmium absorption while simultaneously increasing zinc absorption from rice grains.

Abstract
Heavy metal(loid)s in the environment threaten food safety and human health. Health risk assessment of vegetables based on total or bioaccessible heavy metal(loid)s was widely used but can overestimate their risks, so exploring accurate methods is urgent for food safety evaluation and management. In this study, a total of 224 frequently consumed vegetables and their corresponding grown soils were collected from Yunnan, Southwest China. The total contents and bioaccessibilities of heavy metal(loid)s in vegetables were measured, their health risks were evaluated using the non-carcinogenic and carcinogenic risk models provided by USEPA. Besides, the gastrotoxicity of high-risk vegetables was also evaluated using a human cell model. Results showed that 6.25-43.8 % of Cr, Cd, and Pb contents in Zea mays L., Coriandrum sativum L., or Allium sativum L. exceeded the maximum permissible level of China, which were not consistent with those in corresponding soils. The bioaccessibility of Cr, Cd, As, Pb, Cu, Zn, Ni, and Mn in vegetables in the gastric phase was 0.41-93.8 %. Health risks based on bioaccessibility were remarkably decreased compared with total heavy metal(loid)s, but the unacceptable carcinogenic risk (CR > 10-4) was found even considering the bioaccessibility. Interestingly, gastric digesta of high-risk vegetables did not trigger adverse effects on human gastric mucosa epithelial cells, indicating existing health risk assessment model should be adjusted by toxic data to accurately reflect its hazards. Taken together, both bioaccessibility and toxicity of heavy metal(loid)s in vegetables should be considered in accurate health risk assessment and food safety-related policy-making and management.

Abstract
This study was performed to determine heavy metals and metalloids in twenty-eight chestnut (Castanea sativa Miller) samples consumed in Turkey by inductively coupled plasma optical emission spectrometry and evaluate health risks for humans through the consumption of chestnut samples. The concentrations of Cd, Cr, Co, Cu, Fe, Pb, Mn, Ni and Zn analyzed in chestnut samples varied from 537 to 635, 608 to 5333, 347 to 972, 207 to 8619, 12,739 to 86,310, 278 to 7549, 8676 to 67,622, 1068 to 18,661 and 3625 to 12,876 µg/kg (dry weight), respectively. The concentrations of Cd and Pb were above the maximum limits determined by the Turkish Food Codex. Healthy risks caused by the heavy metals in the consumed chestnut samples were evaluated by estimating the average daily intake of metal, health risk index (HRI), and total HRI. These results revealed that there is no possible health risk to consumers due to the intake of chestnut samples studied under the current consumption rate.

Abstract
Growing concern has been paid to metals in soil-strawberry system. In contrast, few attempts have been made to investigate bioaccessible metals in strawberries and further assess health risk based on bioaccessible metals. Moreover, the connections between soil parameters (e.g. soil pH, organic matter (OM), total and bioavailable metals) and metal transfer in soil-strawberry-human system still need to be systematically investigated as well. Considering that strawberries are extensively grown under plastic-shed conditions in China, a total of 18 paired plastic-shed soil (PSS) and strawberry samples were taken from the strawberry bases located in the Yangtze River Delta of China as a case study to assess accumulation status, migration and health risk of Cd, Cr, Cu, Ni, Pb, and Zn in the PSS-strawberry-human system. Overall, heavy application of organic fertilizers induced accumulation and contamination of Cd and Zn in PSS. In particular, 55.6% and 44.4% of PSS samples had considerable and moderate ecological risk caused by Cd, respectively. Despite no metal pollution in strawberry, PSS acidification mainly caused by high nitrogen input promoted Cd and Zn uptake by strawberry and enhanced bioaccessible concentrations of Cd, Cu, and Ni. In contrast, the increased soil OM caused by organic fertilizer application decreased Zn migration in PSS-strawberry-human system. Additionally, bioaccessible metals in strawberries induced limited non-cancer and cancer risk. To mitigate accumulation of Cd and Zn in PSS and metal transfer in the food chain, feasible fertilization strategies should be developed and carried out.

Abstract
This thorough study analyses the amounts of 43 minerals and trace elements in non-traditional wheat grains, flakes, and undigested flake portions using ICP-MS and establishes declines in their respective contents after the flake production. It also identifies appropriate dietary intakes, in vitro digestibility values, retention factors, and metal pollution indexes. The element contents in wheat flakes are lower than in wheat grains after the hydrothermal treatment process, and their declines are: Na (48-72%), Ce (47-72%), Sr (43-55%), Tl (33-43%), Ti (32-41%), U (31-44%), Ho (29-69%), Cr (26-64%), Zr (26-58%), Ag (25-52%), and Ca (25-46%). The flakes significantly contributed to the recommended dietary intake or adequate intake of particular elements for men of all categories as follows: Mn (143%) > Mo > Cu > Mg ≥ Cr > Fe (16%); for women: Mn (up to 183%) > Mo > Cu > Cr ≥ Mg > Fe (7-16%); for pregnant women aged 19-30: Mn (165%) > Mo > Cu > Mg > Cr (25%); and finally, for lactating women: Mn (127%) > Mo > Cu > Mg > Cr (17%). The contributions to the provisional tolerable weekly or monthly intakes of all toxic elements were established as being within the official limits. The daily intakes for non-essential elements were also calculated. The retention factors were calculated to assess the element concentrations in the undigested part using the digestibility values (87.4-90.5%). The highest retention factors were obtained for V (63-92%), Y (57-96%), Ce (43-76%), Pb (34-58%), Tl (32-70%), Ta (31-66%), and Ge (30-49%). K, Mg, P, Zn, Ba, Bi, Ga, Sb, Cu, Ni, and As appear to be released easily from flake matrices during digestion. The metal pollution index has been confirmed as being lower for non-traditional wheat flakes when compared with grains. Importantly, 15-25% of the metal pollution index assessed for native flakes remains in the undigested flake portion after in vitro digestion.

Abstract
To assess the daily intake of total arsenic (tAs) and arsenic speciation and their potential health risks, different food groups, including vegetables, rice, meat, viscera, freshwater fish, and seafood from Chengdu, China were analyzed. The concentrations of tAs ranged from 41.3 to 1185 μg kg-1 with a median of 238 μg kg-1, and 26.0% of tAs in the food groups was of inorganic toxic form. The median concentration of As(V) in rice (184 ± 21.6 μg kg-1) was approximately 2 to 6 times higher than those in other food groups. The bioaccessible inorganic arsenic (iAs) concentrations of the food items obtained from the local markets of Chengdu ranged from 1.07 to 24.6 μg kg-1 (mean of 6.04 μg kg-1). Rice contributed toward the largest amount of daily iAs intake (66.2%). The mean daily iAs intake from vegetable, meat and viscera contributed 10.7%, 12.5% and 6.04% of total iAs intake, respectively. The actual concentration of arsenic in the food exposed to the human body depends on oral bioaccessible fraction. The oral bioaccessibility estimated daily intake (μg kg-1 bw d-1) of tAs and iAs for the residents of Chengdu was 0.32 and 0.16. Health risk assessments carried out based on bioaccessible iAs concentrations showed that the food items were safe for consumption from the iAs perspective.

Abstract
In the present study, a field experiment was conducted to investigate arsenic (As) concentrations in soils and in grains of 15 rice varieties in a contaminated site in Taiwan. The studied site was divided into two experimental units, namely plot A and plot B. The results showed that mean total As concentrations were 70.94 and 61.80 mg kg-1 in plot A and plot B, respectively, and thus greater than or approximate to the soil quality standard for total As in Taiwan (60 mg kg-1). The As levels in rhizosphere soil in plot A (19.71-32.33 mg kg-1) were much higher than in plot B (6.41-8.60 mg kg-1); however, As accumulation in brown rice did not significantly differ between the plots. These results implied that a significant variation in the bioconcentration factor (BCF) value of As existed among different rice genotypes, and a negative correlation was observed between BCF value and rhizosphere As level in the soil. In phytotoxicity, the median values of the ecological risk indicator were 104.85 and 103.89 in plot A and plot B, respectively, indicating considerable risk. In human health risk assessment, the median and 97.5%-tile values for cancer risk for both male and female residents were markedly higher than the acceptable risk (1 × 10-4). Furthermore, non-cancer and cancer risks were higher for males than females, mainly due to the greater rice ingestion rate of males. Sensitivity analysis showed that total As concentration in soil was the main factor affecting health risks, suggesting that priority should be given to the reduction of soil As levels. To better manage the phytotoxicity of As on rice, as well as the health risk to residents resulting from exposure to As-contaminated soils, the soil quality standard for As in farmland soils should be set between 5 and 10 mg kg-1. The methodology developed in this study could also be applied to provide the basis for refining and revising the soil quality standard for heavy metals in farmland in other regions and countries.

Abstract
Although hydroxyapatite (HAP) can prominently lower Cd uptake by celery from Cd-polluted soil, its high application rates in reality may lead to high cost and potential environmental risk. Therefore, we aimed to clarify whether combined amendments of HAP and another low-cost material (hydrated lime, corn straw-derived biochar, or zeolite) with reduced application rate of each single amendment could significantly decrease Cd transfer in soil-celery-human system without side effect on celery growth through a pot experiment. Results revealed that adding biochar, HAP, zeolite, or combined amendments had no obvious side effect on celery growth, while adding 0.3% hydrated lime significantly decreased fresh edible celery yield by 69.0%. Conversely, adding 0.5% HAP + 0.05% hydrated lime increased fresh edible celery yield by 39.8%. Additionally, adding HAP, zeolite, or hydrated lime rather than adding biochar effectively decreased total and bioaccessible Cd in edible celery. Similarly, HAP + hydrated lime and HAP + zeolite were much more efficient than HAP + biochar in lowering Cd transfer in soil-celery-human system. The total and bioaccessible Cd in edible celery were even reduced by over 50.0% after adding HAP + hydrated lime or HAP + zeolite at low rates. Considering the effects on celery growth and Cd transfer, HAP + hydrated lime and HAP + zeolite have the potential in remediating soil Cd contamination.

Abstract
Numerous studies have studied the health risk assessment of human exposure to As or bioaccessible As via rice intake; however, the bioaccessibility of different As species in rice is seldom reported. In the present study, 31 rice samples were collected from markets or individual growers to investigate the speciation and bioaccessibility of As. Five different species (AsIII, AsV, DMA, MMA, and AsB) were detected in rice samples from different regions, among which AsIII accounted for the largest proportion (62.95% in average), followed by DMA and AsV. In addition, the cooking method could facilitate the release of As from rice into gastric and intestinal juice, and subsequently increase the bioaccessibility of As. The bioaccessibility of inorganic As in cooked rice ranged from 71.83 to 100%, and that of organic As ranged from 31.69 to 61.04%. Non-carcinogenic and carcinogenic risk assessment of children and adults exposure to As via rice intake considering the bioaccessibility of cooked rice was carried out. The target hazard quotient (THQ) of iAs and total As for children ranged from 0.21 to 1.61 and 0.48 to 2.26, respectively, while those for adults ranged from 0.12 to 0.88 and 0.26 to 1.23, respectively. Incremental lifetime cancer risk (ILCR) for children and adults ranged from 9.57 [Formula: see text] 10-5 to 7.25 [Formula: see text] 10-4 and 5.21 [Formula: see text] 10-5 to 3.95 [Formula: see text] 10-4, respectively. The results of risk assessment indicated that children would face a higher health risk than adults when they took the same type of rice as their staple food.

Abstract
Arsenic exposure has been reported to alter the gut microbiome in mice. Activity of the gut microbiome derived from fecal microbiota has been found to affect arsenic bioaccessibility in an in vitro gastrointestinal (GI) model. Only a few studies have explored the relation between arsenic exposure and changes in the composition of the gut microbiome and in arsenic bioaccessibility. Here, we used simulated GI model system (GIMS) containing a stomach, small intestine, colon phases and microorganisms obtained from mouse feces (GIMS-F) and cecal contents (GIMS-C) to assess whether exposure to arsenic-contaminated soils affect the gut microbiome and whether composition of the gut microbiome affects arsenic bioaccessibility. Soils contaminated with arsenic did not alter gut microbiome composition in GIMS-F colon phase. In contrast, arsenic exposure resulted in the decline of bacteria in GIMS-C, including members of Clostridiaceae, Rikenellaceae, and Parabacteroides due to greater diversity and variability in microbial sensitivity to arsenic exposure. Arsenic bioaccessibility was greatest in the acidic stomach phase of GIMS (pH 1.5-1.7); except for GIMS-C colon phase exposed to mining-impacted soil in which greater levels of arsenic solubilized likely due to microbiome effects. Physicochemical properties of different test soils likely influenced variability in arsenic bioaccessibility (GIMS-F bioaccessibility range: 8-37%, GIMS-C bioaccessibility range: 2-18%) observed in this study.

Abstract
The long-term consumption of heavy metal-rich rice can cause serious harm to human health. However, the existing health risk assessment (HRA) can only be performed after the rice has been harvested, and this approach belongs to a passive and lagging pattern. This study is the first to explore the feasibility of health risk (HR) prediction by proposing the indirect model CNNHR-IND and the direct model CNNHR-DIR based on the convolutional neural network (CNN) technology. The dataset included 390 pairs of soil-rice samples collected from You County, China, with 17 environmental covariates. The R2 values for CNNHR-IND for non-carcinogenic and carcinogenic risks were 0.578 and 0.554, respectively, and those for CNNHR-DIR were 0.647 and 0.574, respectively. The results demonstrated that both models performed well, especially CNNHR-DIR had a higher estimation accuracy. The spatial autocorrelation analysis indicated that CNNHR-DIR exerted no systematic bias in the prediction results for health risks, confirming the rationality of the CNNHR-DIR model. The sensitivity analysis further confirmed the generalizability and robustness of CNNHR-DIR. This study proved the feasibility of HR prediction and the potential of CNN technology in HRA, and is significant regarding early risk warnings of rice planting and the sustainable development of public health.

Abstract
As the staple food for Asian countries and with its ability in arsenic accumulation, rice consumption becomes a dominant pathway for As exposure to humans. Here, we collected 108 rice samples from local markets and online sources in 13 major rice-producing regions in China, and determined As contents, speciation and bioaccessibility in the samples. Total As contents were 25-327 μg kg-1 (averaging 120), showing regional differences, with Hunan province being greater than other provinces at 180 vs 110. In rice grains, inorganic As was the dominant species, being 39.9-88.5 (61.1 %), but all being within the Chinese standard at 200 μg kg-1. Based on the modified physiologically-based extraction test (MPEBT), arsenic bioaccessibility in rice samples was 20.1-82.2 (52.3 %) in the gastric phase and 47.2-113 (81.2 %) in the intestinal phase. Strong positive correlation between total As and bioaccessible As suggested bioaccessible As was content-dependent. Based on the intestinal phase, the rice samples from northern region had lower As bioaccessibility than other regions (59.2 vs 83.2 %), and Japonica variety had lower As bioaccessibility than Indica variety (71.1 vs 83.1 %). This study suggests that rice from markets in China is safe, with their As contents and bioaccessibility showing regional and variety differences.

Abstract
In vitro bioaccessibility assays have been developed for high-throughput prediction of relative bioavailability (RBA). However, methods to reliably and efficiently assess pesticide residues remain limited, hindering the precise estimation of pesticide exposure risk. The inclusion of a sorption sink material to simulate intestinal sorption could be a promising approach to optimize in vitro bioaccessibility methods. The current study aimed to explore the feasibility of incorporating Tenax into the Rijksinstituut voor Volksgezondheid en Milieu (RIVM) method for accurate evaluation of the bioaccessibility of triazole fungicides. The use of 1.0 g of Tenax enabled the valid trapping of triazole fungicides released from grape, resulting in a significant increase of 23.59-38.51 % in the value of bioaccessibility. A strong in vivo-in vitro correlation was observed between pesticide RBA and bioaccessibility, suggesting that the Tenax-assisted RIVM method is a suitable replacement for time-consuming and laborious in vivo alternatives. In addition, the exposure assessment indicated that the hazard quotients for triazole fungicides in grape may be overestimated by 5.79-27.34 % without considering bioaccessibility based on the Tenax-assisted RIVM method. These results provide further insights into the assessment of bioaccessibility-based human exposure to pesticides as well as dietary exposure and related risk for human health.

Abstract
The present field study evaluates the health status of the catfish Clarias batrachus reared in coal mine effluent (CME)-fed pond water at Rajrappa mining complex using biochemical, haematological and histopathological parameters. Simultaneously, risk assessment along with recovery response of the CME intoxicated fish following their treatment with CME-free freshwater was also studied. The CME-fed pond water fish revealed significant decrease in biomolecules concentrations and considerable increase in activities of several enzymes along with metallothionein level as compared to control. The impaired regulation of metabolic function was also revealed by blood parameters showing significant decrease in haemoglobin content (8.78 ± 0.344 g/100 mL) and red blood cells count (1.77 ± 0.12 × 106 mm3) while substantial elevation in white blood cells (187.13 ± 9.78 × 103 mm3). The histopathological study also confirmed the changes including hypertrophy of club cells of skin, swelling of secondary lamella of gills, extensive fibrosis in liver and glomerular shrinkage with increased Bowman's space in kidney. Potential health risk assessments based on estimated daily intake and target hazard quotient indicated health risks associated with the consumption of such fishes. The CME-contaminated fish when transferred to CME-free freshwater exhibited decreased metal content accompanied by eventual recovery response as evident by retrieval in biochemical and haematological parameters. Withdrawal study also revealed restoration in the activity of different marker enzymes in fish tissues including blood as well as recovery in their cellular architecture. The results of the present study validate the depuration process as an effective practice for detoxification of fish contaminated with effluent.

Abstract
Food safety is crucial in today's competitive trading market, as it directly affects human health and promotes seafood exports. The effects of thermal processing (boiling, frying, grilling, and microwave cooking) on pesticide residues (PR) in P. vannamei were assessed. The PR in raw and processed shrimp ranged from 0.007 to 0.703 μg/kg for uncooked/raw, not detected (ND) to 0.917 μg/kg for boiled, ND to 0.506 μg/kg for fried, ND to 0.573 μg/kg for grilled and ND to 0.514 μg/kg for microwave cooked shrimps. The Endrin, endosulfan sulfate, and heptachlor were predominant PR found in the raw and processed shrimp. The PR content in raw and cooked shrimps were below the maximum residue limits (MRL) set by the Codex Alimentarius Commission (2021) and the European Commission (86/363/1986 and 57/2007). The estimated daily intake (EDI) of PR from raw and processed shrimps were below the ADI prescribed by CAC. The hazard quotient (HQ) and hazard ratio (HR) values were <1, indicating no non-carcinogenic or carcinogenic health implications through shrimp consumption. The estimated maximum allowable shrimp consumption rate (CRlim) suggests an adult can eat >100 shrimp meals/month, which is over the USEPA's (2000)recommendation of >16 meals/month without health issues. The Effect of thermal processing was detected in the following order: boiling < grilling < frying < microwave cooking. The processing factor (PF < 0.7), paired t-test (t < 0.05), Tukey post hoc (p < 0.05) test, Bray-Curtis similarity index, and matrix plot exhibited that all the four thermal processing methods have a considerable impact on pesticides in the processed shrimps. But frying (59.4%) and microwave cooking (60.3%) reduced PR far beyond boiling (48.8%) and grilling (51.3%). Hence, we recommend frying and microwave processing are better methods for minimizing PR in seafood than boiling or grilling.

Abstract
This study investigated the human biomonitoring of heavy metals in the water, sediments, and tissues of mostly consumed fish species using Turkmen pregnant women's biomarkers in winter 2019, at the Miankaleh Peninsula, north of Iran. Metal concentrations were measured in various fish organs as well as pregnant women's blood, hair, and nail as biological indicators. For this purpose, a total of 20 water and sediment, 14 fish, and 16 human samples were collected. Inductively coupled plasma mass spectrometry (ICP-MS) was used to evaluate the concentration of Cr, Co, Cu, As, Hg, and Pb. Results showed metals with the highest concentrations as Cu and Cr in water (93.35 and 80.91 µg/l, respectively), Hg and Pb in sediment (7.40 µg/g for both), Cu and Pb in the liver (27.00 and 18.9 µg/g for C. carpio; 1414 and 31.7 µg/g for L. auratus), muscle (10.00 and 18.80 for C. carpio; 37.20 and 8.27 µg/g for L. auratus), and skin (26.40 and 9.90 for C. carpio; 10.80 and 11.74 µg/g for L. auratus). In addition, Cu, in pregnant women samples, had the highest values at 2.53 mg/l, 8.87, 36.46, and 29.04 µg/g for blood, hair, fingernail, and toenail, respectively. However, Co showed the lowest concentration in all studied samples. Fish liver and fingernail of pregnant women did reveal the highest heavy metal accumulation, whereas fish muscle and blood of pregnant women had the lowest accumulated heavy metals. The concentration of Hg in water, sediment, fish muscle, and women's blood and hair exceeded the limits suggested by various organizations. Therefore, this study highlighted that heavy metal concentration, in particular Hg, in water, sediments, and fish is a serious risk to the health of local inhabitants who rely on fisheries products and recommended that necessary information should be provided to warn Turkmen pregnant women in consumption of Hg-contaminated fish in this area.

Abstract
BACKGROUND Rice can be a source of arsenic (As) exposure, causing health impacts after ingestion. OBJECTIVE This study analyzed health risks due to As exposure through rice consumption, focusing on both bioaccessible (bAs) and total (tAs) As levels. METHODS Monte Carlo simulations were applied to determine health risk uncertainties and to analyze factors influencing health risks. RESULTS Cooked white and brown rice contained lower tAs and bAs than FAO/WHO standards of 0.20 and 0.35 mg/kg, respectively. As became less bioaccessible after cooking (14.0% in white rice and 18.5% in brown rice). Non-carcinogenic effects (MOS < 1) were found in 5% of children. Carcinogenic effects (MOE<100), especially lung cancer, were found in 75% of adults, with a probable incidence of 7 in 1,000,000. The lowest and highest annual cancer cases were 18 in 10,000,000 adolescents and 15 in 1,000,000 adults, respectively. The risks were mainly affected by body weight and bAs concentration. SIGNIFICANCE The results identified a certain risk level of non-carcinogenic effects in children and adolescents as well as carcinogenic effects in adults. The per capita consumption of rice in Thai adults should be reduced to prevent incidences of lung cancer.

Abstract
This study aimed to determine the mechanism of exogenous melatonin application in alleviating the combined Pb and Cd (Pb-Cd) toxicity on aromatic rice (Oryza sativa L.). In this study, a pot experiment was conducted; two aromatic rice varieties, Yuxiangyouzhan and Xiangyaxiangzhan, were selected, and sprays using 50, 100, 200, and 400 μmol L−1 melatonin (denoted as S50, S100, S200, and S400) and irrigation using 100, 300, and 500 μmol L−1 melatonin (denoted as R100, R300, and R500) were also selected. The results showed that, under the S50, S100, and S200 treatments, the Pb content of aromatic rice grain decreased, and the grain yield increased significantly. Moreover, the application of exogenous melatonin significantly reduced the accumulation of H2O2 in rice leaves at maturity under Cd–Pb stress and reduced the MDA content in Xiangyaxiangzhan leaves. In addition, the microbial community structure changed significantly under S50 and R300 treatments. Some pathways, such as the synthesis of various amino acids and alanine, aspartate, and glutamate metabolism, were regulated by S50 treatment. Overall, melatonin application improved aromatic rice grain yield while reducing heavy metal accumulation by regulating the antioxidant capacity and metabolites in aromatic rice plants and altering the physicochemical properties and microbial community structures of the soil.

Removal of Toxic and Essential Nutrient Elements from Commercial Rice Brands Using Different Washing and Cooking Practices: Human Health Risk Assessment. Abstract
This study determined the influence of different cooking procedures on the removal of toxic elements (TEs) including arsenic (As), cadmium (Cd), and lead (Pb) along with other nutrient elements from different commercially available rice brands sold in Bangladeshi markets. We observed 33%, 35%, and 27% average removal of As, Cd, and Pb accordingly from rice when cooked with a rice to water ratio of 1:6 after washing 5 times. We also found a significant reduction in essential elements: Zn (17%), Cu (10%), Mn (22%), Se (49%), and Mo (22%), when rice cooking was performed as in traditional practice. Daily dietary intakes were found to be between 0.36 and 1.67 µg/kgbw for As, 0.06 and 1.15 µg/kgbw for Cd, and 0.04 and 0.17 µg/kgbw for Pb when rice was cooked by the rice cooker method (rice:water 1:2), while in the traditional method (rice:water 1:6) daily intake rates ranged from 0.23 to 1.3 µg/kgbw for As, 0.04 to 0.88 µg/kgbw for Cd, and 0.03 to 0.15 µg/kgbw for Pb for adults. The HQ and ILCR for As, Cd, and Pb revealed that there is a possibility of noncarcinogenic and carcinogenic risk for As but no appreciable risk for Cd and Pb from consumption of rice.

Abstract
The potential impact of exposure to toxic elements in rice on human health has become a global public health issue. This study analyzed the pollution characteristics and probabilistic health risks of exposure to iAs, Pb, Cd, Cr, and Hg in rice produced in a typical multi-mining county using Monte Carlo simulation, a geographic information system, and bioavailability analysis. The results showed that the enrichment of As and Cd was prominent in rice, with mean tAs, iAs, and Cd contents of 0.34 ± 0.20, 0.15 ± 0.09, and 0.48 ± 0.50 mg·kg-1, respectively. The probability of non-carcinogenic risk via rice consumption in adults and children exceeding the threshold was 72% and 78%, respectively, and that of carcinogenic risk was as high as 100%. Among toxic elements, Cd and iAs were the main risk factors for health risks. The high-level health-risk areas mainly occurred in the north-eastern and central parts of the study area. Sensitivity analysis highlighted that the top three influential parameters for non-carcinogenic risk in adults were Content(Cd), Content(iAs), and Bioaccessibility(Cd), whereas those in children were ingestion rate of rice, Content(Cd), and Content(iAs). The Content(Cd) was the decisive factor for carcinogenic risk, with a sensitivity coefficient of 78.0% in adults and 64.7% in children. Considering the high risk of ingestion of local rice in this area, it is imperative to place strict supervision and take control measures.

Abstract
Many metals are involved in the pathogenesis of diabetes, but most of existing studies focused on single metals. The study of mixtures represents real-life exposure scenarios and deserves attention. This study aimed to explore the potential relationship of urinary copper (Cu), zinc (Zn), arsenic (As), selenium (Se), and strontium (Sr) contents with fasting plasma glucose (FPG) levels in 2766 participants. The levels of metals in urine were determined by inductively coupled plasma-mass spectrometry. We used linear regression models and the Bayesian kernel machine regression (BKMR) to evaluate the association between metals and FPG levels. In the multiple metals linear regression, Zn (β = 0.434), Se (β = 0.172), and Sr (β = -0.143) showed significant association with FPG levels (all P < 0.05). The BKMR model analysis showed that the results of single metal association were consistent with the multiple metals linear regression. The mixture of five metals had a positive over-all effect on FPG levels, and Zn (PIP = 1.000) contributed the most to the FPG levels. Cu and As were negatively correlated with FPG levels in women. The potential interaction effect between Cu and Sr was observed in participants aged ≥ 60 years old (Pinteraction = 0.035). In summary, our results suggested that multiple metals in urine are associated with FPG levels. Further studies are needed to confirm these findings and clarify the underlying mechanisms.

Abstract
In French Guiana were detected high lead (Pb) levels in blood of Amerindian people. Lead exposure is a serious hazard that can affect the cognitive and behavior development. People can be exposed to Pb through occupational and environmental sources. Fingerprinting based on stable Pb isotopes in environmental media is often used to trace natural and anthropogenic sources but is rarely paired with blood data. The objective of this study was to determine the main factors associated with high Blood Lead Levels (BLL). Soil, manioc tubers, food bowls, beverages, wild games, lead pellets and children blood were sampled in small villages along the Oyapock River. children BLL ranged between 5.7 and 35 µg dL-1, all exceeding 5 µg dL-1, the reference value proposed in epidemiologic studies for lead poisoning. Among the different dietary sources, manioc tubers and large game contained elevated Pb concentrations while manioc-based dishes were diluted. The isotopes ratios (207Pb/206Pb and 208Pb/206Pb) of children blood overlapped these of lead shots and meals. These first results confirm for the first time, the diary consumption of manioc-based food as the main contributor to Amerindian children's BLL in French Guiana, but don't exclude the occasional exposure to lead bullets by hunting activities. This is a specific health concern, since previous studies have shown that these same villagers present high levels of mercury (Hg). These communities are indeed subject to a double exposure to neurotoxic metals, Hg and Pb, both through their diet. The farming activity is based on manioc growing, and explaining that this ancestral practice can induce serious health risks for the child's development may seriously affect their food balance and cultural cohesion.

Abstract
Application of hydrogen-rich water (HRW) could improve plant growth under stress conditions; however, its effects on early growth and related physiological functions of fragrant rice under cadmium (Cd) and lead (Pb) toxicity are unknown. The present study was composed of two HRW treatments, i.e., H0: without H2 and HRW: with 500ppb H2 gas, three treatments with two metals, i.e., M0: without heavy metal, Cd: 75 μmol l-1 of Cd, Pb: 750 μmol l-1 of Pb applied to two popular fragrant rice cultivars, i.e., Yuxiangyouzhan and Xiangyaxiangzhan. The growth and physio-biochemical attributes of fragrant rice at 5 and 10 days after treatment (DAT) were assessed. Results showed that HRW treatment promoted the growth of rice seedlings in terms of increased dry biomass of shoot, root, and the whole seedling at 10 DAT. Moreover, HRW also improved early growth of fragrant rice under Pb stress with substantial increase in fresh and dry weight of roots and the whole seedling at 5 and 10 DAT. Application of HRW slightly alleviated the root inhibition caused by Cd toxicity in rice seedlings at 10 DAT. In addition, antioxidant activities, i.e., catalase (CAT) and peroxidase (POD), were increased with HRW application at 10 DAT while decreased root Pb and Cd contents of both rice cultivars. Overall, HRW alleviated the inhibitory effects of Cd and Pb toxicity by regulating the antioxidant defense response in growing rice plants.

Abstract
Widespread contamination of soil, dust, and food with toxic metal(loid)s pose a significant public health concern. Only a portion of orally ingested metal(loid) contaminants are bioavailable, which is defined as the fraction of ingested metal(loid)s absorbed across the gastrointestinal barrier and into systemic circulation. Bioaccessibility tools are a class of in vitro assays used as a surrogate to estimate risk of oral exposure and bioavailability. Although development and use of bioaccessibility tools have contributed to our understanding of the factors influencing oral bioavailability of metal(loid)s, some of these assays may lack data that support their use in decisions concerning adverse health risks and soil remediation. This review discusses the factors known to influence bioaccessibility of metal(loid) contaminants and evaluates experimental approaches and key findings of SW-846 Test Method 1340, Unified BARGE Method, Simulated Human Intestinal Microbial Ecosystem, Solubility Bioaccessibility Research Consortium assay, In Vitro Gastrointestinal model, TNO-Gastrointestinal Model, and Dutch National Institute for Public Health and the Environment bioaccessibility models which are used to assess oral absolute bioavailability and relative bioavailability in solid matrices. The aim of this review was to identify emerging knowledge gaps and research needs with an emphasis on research required to evaluate these models on (1) standardization of assay techniques and methodology, and (2) use of common criteria for assessing the performance of bioaccessibility models.

Abstract
Natural selenium (Se)-rich areas in China are generally characterized by high geological background of cadmium (Cd). However, the interaction between Se and Cd in the soil-rice-human continuum in such areas remains elusive. The concentrations, bioaccessibilities, and biomarkers of Se and Cd in a typical Se-Cd rich area were determined through chemical analysis, in vitro digestion model and cross-sectional study, respectively. The results showed that the molar ratio of available Se/Cd in the soil was averaged at 0.55 and soil Se did not reduce Cd accumulation and transportation in rice. Se bioaccessibility increased from the gastric phase to the intestinal phase, but the opposite was the case for Cd bioaccessibility. Moreover, bioaccessible concentration of Cd was positively correlated to corresponding total concentration in rice but negatively associated with the logarithm of molar ratio of Se/Cd. The risk of Cd-induced nephrotoxicity for the exposure group was not higher than the reference group, which could be ascribed to the mitigative effect of Se. Males and elders were at higher risk of Cd-induced injury owing to higher urinary Cd (U-Cd) and β2-microglobulin (U-β2-MG), and lower urinary Se (U-Se). Our results suggested that Cd-induced health risk should be assessed from a soil-rice-human perspective and the interaction between Se and Cd should be taken into account.

Abstract
Heavy metals (HMs) in crops and processed foods are a concern and pose a potential serious health hazard. This study investigated possible presence of HMs in grains and processed products in the Region of Arequipa in Peru. Concentrations of Cd, As, Sn, Pb, and Hg were determined for commonly consumed grains in 18 districts of the region and processed products from 3 popular markets of Arequipa city, using Inductively Coupled Plasma Mass Spectrometry (ICP-MS) and Cold Vapor Atomic Absorption Spectroscopy (CVAAS). HM concentrations above the Codex General Standard limits were found for As (0.17 mg kg-1) and Cd (0.11 mg kg-1) in cereal grains. Elevated Pb concentrations of 0.55, 0.75, and 5.08 mg kg-1 were found for quinoa, maize, and rice products, respectively; and attributed to processing conditions. The Total Hazard Index (HI) for polished rice and rice products had values between 1 and 10, showing non-carcinogenic adverse effects. Total Target Cancer Risk (TRT) and uncertainty analysis of percentile P90% for polished rice and quinoa products gave values above permissible limit of 10-4, indicating an unacceptable cancer risk. The Nemerow Composite Pollution Index method (NCPI) showed that processed products had a significant pollution level due to the presence of Pb. While most crops grains had acceptable low HM levels, this is the first report of concerning HM concentrations in some consumed grains and processed products in southern Peru and indicates the necessity to find ways to decrease certain toxic metals in foods.

Abstract
The toxicity of arsenic (As) can be influenced by many nutrients in food. However, the combined effects and underlying mechanisms of As and palmitic acid (PA) are still unclear. Here, cell viability, oxidative stress, lipids accumulation, gene expression profiles, and metabolome profiles of human hepatoma HepG2 cells exposed to As, PA, and As + PA were analyzed and compared. Results showed that co-exposure of 100 μM PA and 2 μM As induced lower cell viability, higher intracellular reactive oxygen species level, more lipid droplet accumulation, and more intracellular triglyceride contents than As alone or PA alone exposure. High-throughput quantitative PCR and 1H NMR-based metabolomics analysis showed that co-exposure of As and PA caused all toxic effects on gene expression and metabolome profiles induced by As alone or PA alone exposure, and showed higher toxicities. Gene expression profiles in the As + PA group had higher similarity with those in the As group than the PA group. However, PA played a more important role in metabolism disorder than As in their interactive effects. Oxidative stress and lipid metabolism disorder were found to be the main toxic effects in the As + PA group. Several differentially expressed genes (such as OXR1, OXSR1, INSR, and PPARA) and changed metabolites (such as pyruvate, acetate, and L-phenylalanine) were involved in the combined toxicity of As and PA. This study provides basic information on the interactive effects of As and PA, which is useful for the health risk assessment of As and FFA.

Abstract
A field experiment was conducted to study the transport and uptake of arsenic (As) from soil to rice roots and the subsequent translocation from roots to shoots and grains. Twelve rice cultivars were used in the field experiment. The amount of As accumulated in rice grains and sequestered by root iron plaque and rhizosphere soil, were determined to establish the relationship between As concentrations in brown rice and As sequestration by iron oxides. Human health risk was then assessed for Taiwan's population exposed to As through rice consumption. The result of this study showed that the mean total As concentrations in the experimental site and in brown rice were 93.02 mg/kg and 0.158 mg/kg, respectively. The As sequestration by iron oxides on root plaque (3.48-9.51) was higher than that of the rhizosphere soil (1.86-4.09) for all tested rice cultivars. Therefore, the partition ratio (PR) representing the relative tendency of As sequestration by rhizosphere soil to that in root iron plaque was all less than 1. In addition, there was a significant negative linear relationship between inorganic As concentration (iAs) in brown rice and PR value (r2 = 0.38, p < 0.05). Based on the iAs in brown rice, the median value of hazard quotient (HQ) and target cancer risk (TR) was 1.13 and 5.10 × 10-4, respectively, indicating potential cancer and non-cancer risk for Taiwan residents exposed to As through the consumption of rice grown on the studied site. Various PR values were then successfully used for estimating risk, implying that screening the PR of the rice plant before harvest could serve as an early warning signal for protecting consumers' health. However, more experiments with different rice cultivars for the paddy soils were suggested in the future to establish a comprehensive relationship between iAs in brown rice and PR value.

Abstract
Green leafy vegetables are economical and nutritious, but they may be contaminated with heavy metals. In this study, we assessed the total and bioaccessible concentrations of As, Cd, Pb and Cr in a popular vegetable cabbage (Brassica oleracea) from four major producing cities in Yunnan, Southwest China. With the mean concentrations of As, Cd, Pb and Cr being 0.24, 0.20, 0.32 and 1.28 mg kg-1, the As, Cd and Pb concentrations were within the limits of 0.2-0.5 mg kg-1 based on Chinese National Standards and the WHO/FAO, but Cr concentration was 2.6-times greater than the limit of 0.5 mg kg-1. Based on an in vitro bioaccessibility assay of the Solubility Bioaccessibility Research Consortium (SBRC), As bioaccessibility was the lowest at 11% while those of Cd, Pb and Cr were much greater at 68-87%. The estimated daily intake (EDI) of metals through cabbage ingestion was similar for children and adults. Among the four metals, only Cr's EDI at 2.29-1.87 exceeded 1 based on total and bioaccessible concentrations. The high Cr concentration at 1.28 mg kg-1 coupled with its high bioaccessibility at 67.5% makes Cr of concern in cabbage. However, human gastrointestinal cells exposed to the gastric digesta with high bioaccessible heavy metals and risky EDI, showed no obvious cytotoxicity, indicating that existing models based on total or bioaccessible heavy metals may overestimate their human health risk. Taken together, to accurately assess the human health risk of heavy metals in cabbage, both total/bioaccessible concentrations and the gastrointestinal cell responses should be considered.

Abstract
ANCs in pangasius and tilapia, fish feed, pond sediments and water were analysed comprehensively. Residual ANCs except heavy metals were not found in farmed pangasius and tilapia flesh. Residual toxic heavy metals lead and chromium in fish were above the permissible limit. Heavy metals sourced primarily from fish feed with secondary sources such as groundwater. Lead and chromium concentrations in fish flesh pose potential carcinogenic risks to human health.
Intensive feeding and the use of drugs and other chemicals for enhancing yield characterised commercial pangasius and tilapia aquaculture in Bangladesh. The residual presence of prohibited antibacterial substances, nitrofuran metabolites and other chemicals (ANCs) in fish, and their effect on public health are a concern for consumers. This study collected samples from 15 pangasius and 15 tilapia ponds to assess the contamination of ANCs, including pesticides, dyes and heavy metals in fish flesh, and heavy metals in feed, sediments and water. Antibacterial substances, nitrofuran metabolites and dyes in fish flesh were detected using LC–MS/MS. Organochlorine pesticides and heavy metals were detected applying GC–MS and AAS, respectively. We found very low residue of the most ANCs in pangasius and tilapia flesh, however, both species contained heavy metals, particularly lead (Pb) and chromium (Cr). The level of metal contamination was affected by the age of the pond; the highest concentration of Pb was in pangasius from old ponds (> 10 years), and the highest concentration of Cr was found in pangasius from new ponds (< 10 years), and tilapia from old ponds. The feed sampled in this study, particularly the commercial pellet and farm-made feed, were highly contaminated with heavy metals. Pond water and sediments were contaminated by heavy metals; fish, water and sediment samples from older ponds had higher concentrations of heavy metals. The concentration of these heavy metals in fish flesh above regulatory limits poses potential risks to human health. To ensure the production of safe fish for human consumption, commercial aquaculture in Bangladesh requires a functional regulatory framework.

Abstract
Frequent cyanobacterial blooms in eutrophic waters produce a variety of toxins such as microcystins (MCs), which are seriously harmful to waterbodies and human health. The spatiotemporal distribution characteristics of the MC-LR concentration in drinking water sources in seven river basins in China were investigated in this study. The removal rate of MC-LR in the purification process of water treatment plants and the human health risk of MC-LR in drinking water are also discussed. The results show that the detection frequency of MC-LR in source water was 55.46% and its concentration ranged from 0.06 × 10-3 to 52 × 10-3 μg L-1 (mean of 12.47 × 10-3 μg L-1), which are both below China's drinking water quality standard for algal toxins. The MC-LR concentration in lakes and reservoirs was higher than that in rivers, and exhibited an obvious spatiotemporal variation. The mean removal rate of MC-LR varied with river basin, and was also slightly higher for the advanced water treatment process (97.46%) in comparison to that of the conventional process (96.74%). The concentration of MC-LR in 8.26% of treated water samples was higher than that of raw water, thus indicating that MC-LR may be further released during the purification process. The risk index of MC-LR in treated water samples ranged from 2.29 × 10-3 to 8.40 × 10-3 (mean of 4.73 × 10-3), which corresponded to an extremely low level of risk. However, intensive monitoring should still be carried out in some high-concentration watersheds during the summer to ensure the safety of public drinking water.

Abstract
We assessed the phytoavailability of heavy metals in wheat and rice grown on soils along flood plains of Sutlej river (India) and its effects on human health. Surface soil samples along with wheat (pre-monsoon season) and rice (post-monsoon season) grain samples were collected during the years 2017 and 2018. Soil samples were analysed for total and DTPA-extractable metals and, wheat and rice grains samples for total metals. There were no significant (p < 0.05) changes in total metal concentration during both the years, but the concentration of DTPA-extractable metals was higher during pre-monsoon than post-monsoon season. The concentration of Pb, Cd, and Co in wheat grains, whereas the concentration of Cr, Co, Pb and Cd in rice grains surpassed their safe limits. Both DTPA-extractable metals (water soluble plus exchangeable) and non-exchangeable fractions explained more than 80% of the variations in metal uptake by plants. The bioaccumulation factor for DTPA-extractable metals (BCF) was above one, but Pollution Load Index for these metals (PLI) was less than one. The carcinogenic risks due to ingestion of wheat and rice grains were higher for Cd. The BAF, PLI and health risks were higher along transboundary of the river. These results suggest that exchangeable and non-exchangeable fractions are contributing towards metals uptake by wheat and rice along flood plain soils of the Sutlej river and the present study may act as a model for carrying out similar studies to find out the risks of heavy metals and it effect on human health in future.

Abstract
Background: Rice is one of the most commonly consumed grains. It could be a good source of nutrients in a diet, but its consumption could also contribute to exposure to toxic elements. All rice products available on the Polish market are imported, which may pose a particular concern as to the safety of their consumption. The aim of our study was to estimate the content of As, Cd, Pb, and Hg in rice products and to assess the health risk indicators related to exposure to toxic elements consumed with rice products among the adult population in Poland. Methods: A total of 99 samples from 12 groups of rice products (basmati, black, brown, parboiled, red, wild, white rice and expanded rice, rice flakes, flour, pasta, and waffles) available in the Polish market were obtained. The content of Hg was determined using the atomic absorption spectrometry method (AAS). To measure As, Cd, and Pb, inductively coupled plasma-mass spectrometry (ICP-MS) was used. The health risk was assessed by calculating several indicators. Results: The average As, Cd, Pb, and Hg contents in all studied products were 123.5 ± 77.1 μg/kg, 25.7 ± 26.5 μg/kg, 37.5 ± 29.3 μg/kg, and 2.8 ± 2.6 μg/kg, respectively. Exceedance of the limit established by the Polish National Food Safety Standard was observed in one sample as regards the As content and exceedance of the European Commission standard in two samples for Hg. The samples of foods imported from European markets (n = 27) had statistically higher As content (p < 0.05) than those imported from Asian countries (n = 53). The values of health risk indicators did not show an increased risk for the Polish adult population. However, the daily intake of 55 g of rice corresponds to the benchmark dose lower confidence limit (BMDL) for Pb. Conclusion: The studied rice products could be regarded as safe for consumption by the Polish population as far as the content of As, Cd, Pb, and Hg is concerned.
