Abstract
Indoor air quality has a great impact on human health. Cooking, in particular frying, is one of the most important sources of indoor air pollution. Indoor air CO, CO2, particulate matter (PM), and volatile organic compound (VOC) concentrations, including aldehydes, were measured in the kitchen of a small establishment where a special deep-frying margarine was used. The objective was to assess occupational exposure concentrations for cooks of such restaurants. While individual VOC and PM2.5 concentrations were measured before, during, and after frying events using active sampling, TVOC, PM10, CO, CO2, temperature, and relative humidity were continuously monitored through the whole period. VOC and aldehyde concentrations did not increase to considerable levels with deep-frying compared to the background and public indoor environment levels, whereas PM10 increased significantly (1.85 to 6.6 folds). The average PM2.5 concentration of the whole period ranged between 76 and 249 μg/m(3). Hence, considerable PM exposures could occur during deep-frying with the special margarine, which might be sufficiently high to cause health effects on cooks considering their chronic occupational exposures.

Abstract
Concentrations of volatile organic compounds (VOCs), including formaldehyde, in classrooms, kindergartens, and outdoor playgrounds of three primary schools were measured in spring, winter, and fall terms in İzmir, Turkey. A health-risk assessment was conducted for odor detection, sensory irritation, chronic toxic effects, and cancer. Active sampling was applied for VOCs and formaldehyde on Tenax TA and DNPH tubes, respectively. VOCs were analyzed in a thermal desorption-GC-MS system. Formaldehyde analysis was performed using an HPLC instrument. Benzene, toluene, and formaldehyde were the most abundant compounds with 95th percentile indoor air concentrations of 29, 87, and 106 μg/m(3), respectively. Naphthalene and xylenes followed them with an order of magnitude lower concentrations. Two isomers of dichlorobenzene (1,3 and 1,4) were the other notable compounds. The concentrations were utilized to classify the indoor air pollutants with respect to potential health effects. In addition, carcinogenic and chronic toxic risks were estimated using Monte-Carlo simulation. Formaldehyde appears to be the most concerning pollutant with high chronic toxic and carcinogenic risk levels according to the health assessment followed by naphthalene, benzene, and toluene due to their chronic effects.

Abstract
Seasonal variation in concentrations of two different disinfection by-product groups, trihalomethanes (THMs) and haloacetonitriles (HANs), was investigated in tap water samples collected from five sampling points (one groundwater and four surface water sources) in Izmir, Turkey. Estimates of previously published carcinogenic and non-carcinogenic risks through oral exposure to THMs were re-evaluated using a probabilistic approach that took the seasonal concentration variation into account. Chloroform, bromoform, dibromochloromethane and dichloroacetonitrile were the most frequently detected compounds. Among these, chloroform was detected with the highest concentrations ranging from 0.03 to 98.4 microg/L. In tap water, at the groundwater supplied sampling point, brominated species, bromoform and dibromoacetonitrile, were detected at the highest levels most probably due to bromide ion intrusion from seawater. The highest total THM and total HAN concentrations were detected in spring while the lowest in summer and fall. The annual average total THM concentration measured at one of the surface water supplied sampling points exceeded the USEPA's limit of 80 microg/L. While all non-carcinogenic risks due to exposure to THMs in Izmir drinking water were negligible, carcinogenic risk levels associated with bromodichloromethane and dibromochloromethane were higher than one in million.

Abstract
Concentrations of volatile organic compounds (VOCs) were measured in the drinking water in Province of Izmir, Turkey, and associated health risks due to ingestion of these compounds were investigated using population weighted random samples. A total of 100 houses were visited in different districts of Izmir and drinking water samples were collected from consumers' drinking water source. Questionnaires were administered to one participant in each house to determine demographics and drinking water consumption rates. Oral exposure and risks were estimated for each participant and Izmir population by deterministic and probabilistic approaches, respectively. The four trihalomethane (THM) species (i.e., chloroform, bromodichloromethane, dibromochloromethane, and bromoform), benzene, toluene, p-xylene, and naphthalene were the most frequently detected VOCs with concentrations ranging from below detection limit to 35 microg/l. The risk estimates were found to be less than the values reported in the literature with few exceptions. Noncarcinogenic risks attributable to ingestion of VOCs for Izmir population were negligible, whereas the mean carcinogenic risk estimates for bromodichloromethane and dibromochloromethane were above the de minimis level of one in a million (10(-6)). For all VOCs, the concentrations measured in metropolitan area were greater than those in other districts. All THM species were detected in higher concentrations in tap water, whereas nontap water contained more benzene, toluene, p-xylene, and naphthalene. Therefore, the concentrations of the latter four compounds and associated risks increased with increasing income and education level since bottled water was used in larger proportions within these subgroups. The results of this study showed that oral exposure to drinking water contaminants and associated risks may be higher than the acceptable levels even if the concentrations fall below the standards.

Abstract
The objective of this study was to evaluate the effect of lactose and dried whey supplementation as dietary component on growth performance and histology of lymphoid organs and ileum in broilers. A total of 480 day-old chicks were utilised for 42 days. Animals were assigned randomly to one of three treatments: control, lactose (2.5%), and dried whey (3.85%). Body weight was greater for animals supplemented with lactose or dried whey than for those not supplemented. There were no effects of treatments on feed intake and feed efficiency. In general, the effects of lactose or dried whey supplementation on histology of lymphoid organs and ileum were variable. Plasma cell counts were lower for animals supplemented with lactose than for those supplemented with dried whey. However, the length of intestinal villi during the starter period was greater for experimental groups than for control group.

Abstract
1. This study was conducted as three trials. 2. In the first trial, zinc, manganese, copper and iron concentrations were determined in dietary raw materials collected from various regions of Turkey. 3. In the second trial, 200 Hisex Brown laying hens, 30 weeks of age, were divided into two groups. The first group served as controls and were fed on a standard commercial layer diet. The second group were fed on a commercial layer diet that was not supplemented with trace minerals and vitamins. Egg production, egg weight, specific gravity, food consumption and food efficiency of the birds in each group were determined. In the unsupplemented group, egg production (0.75 vs 0.83) and food intake (114 vs 122 g) were lower than the those of the control group (P < 0.05). Food efficiency was 2.42 (kg food/kg gain) in the group consuming the unsupplemented diet and 2.36 in the controls. 4. In the third trial, as in Trial 2, Hisex Brown laying hens, 62 weeks of age were used. In the unsupplemented group, the mean egg weight was significantly lower than that of controls (68.0 vs 69.6 g) (P < 0.01). 5. At the end of the second and third trials, egg samples collected from experimental groups were hard boiled in water. The levels of zinc, manganese, copper and iron in the egg yolk were determined. The zinc level of the egg yolk from the control group of second trial was higher (23.5 mg/kg) than those of the unsupplemented group (13.6 mg/kg).

Abstract
1. This study was conducted using male broiler chickens to determine the effects of ascorbic acid, aspirin, ascorbic acid+aspirin, vitamin E+selenium and ascorbic acid+aspirin+vitamin E+selenium supplementations on haematological parameters and serum superoxide dismutase concentration. 2. One hundred and twenty day-old male Hubbunt broiler chicks were randomly divided into 6 experimental groups of 20 chicks each and placed in different pens. Groups 2, 3, 4, 5 and 6 were given a diet supplemented with ascorbic acid, aspirin (in water), ascorbic acid+aspirin, vitamin E+selenium and ascorbic acid+aspirin+vitamin E+selenium, respectively for 45 d while group 1 was given a commercial broiler diet. 3. There was no significant effect of ascorbic acid, aspirin, ascorbic acid+aspirin, vitamin E+selenium supplementations on any of the haematological parameters (red blood cell, haemoglobin, haematocrit, mean corpuscular volume, mean corpuscular haemoglobin concentration, mean corpuscular haemoglobin) in broilers but ascorbic acid+aspirin+vitamin E+selenium supplementation significantly decreased the white blood cell counts. 4. In addition to this, ascorbic acid, aspirin, ascorbic acid+aspirin and ascorbic acid+aspirin+vitamin E+selenium supplementations had no significant effect on the serum superoxide dismutase level, but vitamin E+selenium supplementation increased the serum superoxide dismutase level.

Abstract
This research, which was designed and carried out as two consecutive experiments, investigated the effects of four different levels (0, 4,000, 12,000, and 24,000 IU/kg) of vitamin A supplementation on egg yield, plasma vitamin A levels, and immune responses of laying hens. Transmission of maternal immunity to their descendants was also studied. In the first experiment, egg yield, blood vitamin A levels, and various parameters of the immune system such as T lymphocyte levels in the peripheral blood, plasma cell counts in the spleen, and antibody titers against Newcastle Disease Virus (NDV) in the sera were investigated for a 1-yr period. A total of 864 Hisex-brown laying hens were used in this experiment. The chicks were reared as commercial flocks until the 18th wk of age. No significant differences occurred among the parameters of the different diet groups. In the second experiment, maternal immunity was assessed in the chickens, supplied by hatching the eggs from hens in the first experiment. Maternal immunity was assayed by using the parameters as in Experiment 1. For this purpose, both blood and tissue samples were taken on the 2nd, 7th, and 10th d posthatch. Vitamin A supplementation had no significant effects on maternally, derived antibody titers or histologic structure of the lymphoid organs.
