In vitro protein digestibility of RuBisCO-enriched wheat dough: a comparative study with pea and gluten proteins. Food Funct 2024; 15:5132-5146. Abstract
Growing demand for sustainable, plant-based protein sources has stimulated interest in new ingredients for food enrichment. This study investigates the nutritional and digestive implications of enriching wheat dough with RuBisCO, in comparison to pea protein-enriched and gluten-enriched doughs. The protein quality and digestibility of these enriched doughs were analysed through dough characterization, in vitro digestion experiments and biochemical analysis of digesta. Our findings indicate that an enrichment at 10% of RuBisCO or pea proteins improves the chemical score and the in vitro PDCAAS (IV-PDCAAS) score of wheat dough as compared to the control dough. Digestibility assays suggest that RuBisCO introduction modifies the protein hydrolysis kinetics: the nitrogen release is lower during gastric digestion but larger during intestinal digestion than other samples. The analysis of the protein composition of the soluble and insoluble parts of digesta, using size-exclusion chromatography, reveals that the protein network in RuBisCO-enriched dough is more resistant to gastric hydrolysis than the ones of other doughs. Indeed, non-covalently bound peptides and disulfide-bound protein aggregates partly composed of RuBisCO subunits remain insoluble at the end of the gastric phase. The digestion of these protein structures is then mostly performed during the intestinal phase. These results are also discussed in relation to the digestive enzymatic cleavage sites, the presence of potential enzyme inhibitors, the protein aggregation state and the secondary structures of the protein network in each dough type.

Abstract
As the data concerning element concentrations in human milk (HM) samples and their intake by infants are lacking in Poland, the present study aimed to explore this issue. The material consisted of HM samples obtained from 30 exclusively breastfeeding mothers during 4-6 weeks postpartum. Additionally, to identify the factors that may potentially affect HM composition, information regarding maternal data (anthropometry, body composition, and diet) was also collected. Maternal diet was assessed with two methods-a food frequency questionnaire and 3-day dietary records. In total, 18 essential and non-essential elements were determined. For the elements analysis, we used inductively coupled plasma quadrupole mass spectrometry. Most of the elements (n = 11, 61%) were detected in all HM samples. In all HM samples tin concentration was higher (5.67 ± 2.39 μg/L) than the usual range reported by the World Health Organization (~ 1.0 μg/L). HM cadmium content was positively associated with maternal salty snacks intake (r = 0.502, p = 0.005), arsenic with whole-grain products intake (r = 0.37, p = 0.043), and mercury concentration with fruits and seeds/nuts consumption (r = 0.424, p = 0.042 and r = 0.378, p = 0.039, respectively). Higher HM lead concentration was predicted by maternal age (95% CI [0.94-0.97]), intake of fish (95% CI [1.01-1.03]), and vegetables (95% CI [1.02-1.06]). The highest infants' intake was observed for copper (35.24 ± 12.48) and the lowest for arsenic (0.076 ± 0.102). Infants' exposure to lead was associated with maternal frequency consumption of canned fish (p = 0.0045). There is a need to perform further research on this topic to maximize the benefits of breastfeeding by minimizing maternal and infant exposure to potentially toxic elements.

Abstract
BACKGROUND The aim of this study was to examine the relationship between ego-resiliency and the intensity of health behaviors among Polish health sciences students. METHODS The study involved 483 students from health-related faculties in southern Poland, consisting of 314 women (63.7%) and 179 men (36.3%). The average age of the participants was 21.7 ± 2.5 years. To assess resiliency (ER), the Ego-Resiliency Scale (ER89-R12) by Block and Kremen was used in its Polish adaptation. The intensity of health behaviors was examined using the Health Behavior Inventory (HBI) developed by Z. Juczyński. RESULTS The results revealed a positive correlation between the intensity of health behaviors and ER (r = 0.43, p < 0.001), both for the general factor and its categories (positive mental attitude, proper eating habits, preventive actions, and prohealth activities). Students with a high level of health behaviors exhibited significantly higher ER (M = 38.95, SD = 5.15) compared to those with average (M = 35.93, SD = 5.03) and low (M = 32.97, SD = 5.12) HBI levels. Among the HBI categories, Positive Mental Attitude showed the strongest correlation with both general ER and its factors: optimal regulation (OR) and openness to life experiences (OL). Furthermore, the correlation was found to be stronger with the OR and weaker with OL. CONCLUSION Higher ER in students is correlated with a greater frequency of health behaviors. Nurturing the development of ER may contribute to the maintenance of prohealth practices despite life difficulties and temporary loss of motivation. This, in turn, promotes the regularity of health behaviors, which is crucial for their positive impact on overall health.

Abstract
The changes in the secondary structure of individual gluten protein fractions (gliadin and glutenin) caused by the supplementation of model dough with eight phenolic acids were analysed. Gliadins and glutenins were extracted from gluten samples obtained from overmixed dough. The changes in the gliadin secondary structure depended on the amount of phenolic acid added to the dough. Higher acid concentrations (0.1% and 0.2%) led to a significant reduction in the amount of α-helices and to the formation of aggregates, non-ordered secondary structures, and antiparallel β-sheets. After the addition of acids at a lower concentration (0.05%), the disaggregation of pseudo-β-sheet structures and the formation of β-turns, hydrogen-bonded β-turns, and antiparallel β-sheets were detected. In the case of glutenin, most of the phenolic acids induced the formation of intermolecular hydrogen bonds between the polypeptide chains, leading to glutenin aggregation. When phenolic acids were added at a concentration of 0.05%, the process of protein folding and regular secondary structure formation was also observed. In this system, antiparallel β-sheets and β-turns were created at the expense of pseudo-β-sheets.

Abstract
The increasing demand for orthodontic treatments due to the high prevalence of malocclusion has inspired clinicians and material scientists to investigate innovative, more effective, and precise bonding methods with reduced chairside time. This study aimed at comparing the shear bond strength (SBS) of metal and ceramic brackets bonded to enamel using the indirect bonding technique (IDB). Victory Series metal brackets (Metal-OPC, Metal-APC) and Clarity™ Advanced ceramic brackets (Ceramic-OPC) (3M Unitek, Monrovia, CA, USA) were bonded indirectly to extracted human premolars through the etch-and-rinse technique. A qualitative assessment of the enamel surface using microscopic methods was performed, and the amount of residual adhesive was reported as per the adhesive remnant index (ARI). Moreover, the bracket surface was evaluated with SEM-EDS. The highest SBS mean values were observed in the Ceramic-OPC group (16.33 ± 2.01 MPa), while the lowest ones were obtained with the Metal-OPC group (11.51 ± 1.40 MPa). The differences between the Metal-AOPC vs. Metal-APC groups (p = 0.0002) and the Metal-OPC vs. Ceramic-OPC groups (p = 0.0000) were statistically significant. Although the Ceramic-OPC brackets bonded indirectly to the enamel surface achieved the highest SBS, the enamel damage was significantly higher compared to that of the other groups. Thus, considering the relatively high bond SBS and favourable debonding pattern, Metal-APC brackets bonded indirectly may represent the best choice.

Abstract
Successful orthodontic therapy, apart from a proper treatment plan, depends on optimal bracket-enamel adhesion. Among numerous factors affecting adhesion, the type of bracket and preparation of the tooth's surface are crucial. The aim of this study was to compare the shear bond strength (SBS) of metal and ceramic brackets to the enamel's surface using direct bonding. Forty extracted human premolars were divided into four groups according to the etching method (etch-and-rinse and self-etch) and bracket type. The SBS and adhesive remnant index (ARI) were determined. The ceramic brackets achieved the highest SBS values both in the self-etch (SE) and etch-and-rinse (ER) protocols. Higher SBS values for ceramic and metallic brackets were found in the ER protocol. In all tested groups, the achieved SBS value was satisfactory to withstand orthodontic and occlusal forces. There was no significant difference in the ARI score between study groups (p = 0.71). The fracture occurred between the bracket base and adhesive material in both types of brackets, which decreased the risk of enamel damage during debonding.

Abstract
The golden eagle (Aquila chrysaetos) and the white-tailed eagle (Haliaeetus albicilla), being apex predators and facultative scavengers, can bioaccumulate different environmental contaminants, including toxic elements that may adversely affect their health. We analyzed the levels of cadmium (Cd), lead (Pb), and other metals and metalloids, including arsenic (As), barium (Ba), beryllium (Be), cobalt (Co), chromium (Cr), copper (Cu), iron (Fe), magnesium (Mg), manganese (Mn), molybdenum (Mo), selenium (Se), thorium (Th), thallium (Tl), uranium (U), vanadium (V), and zinc (Zn) in liver samples taken from three golden eagles and 36 white-tailed eagles that were found dead across Poland to verify their exposure. We also used a systematic review to summarize the available literature data on Cd, Pb, and other studied elements in the liver of both eagle species. Analyses of trace elements in the liver samples of the Polish eagles revealed interspecific differences in Cd, Cu, and Mn and differences in Co, Mn, Tl, and Zn among study regions. All elements tested except Pb were below the suggested thresholds linked with adverse health effects in birds. The hepatic Pb found in almost half of all the tested individuals suggests environmental exposure to this toxic element. One of the tested white-tailed eagles had hepatic Pb above the threshold of sublethal poisoning. Although our results seem optimistic, as previous Polish studies showed a higher prevalence of birds with hepatic Pb exceeding the toxicity threshold, they indicate that exposure to this toxic metal could still pose an additional threat to the health of Polish eagles.

Abstract
Pesticides impair honeybee health in many ways. Imidacloprid (IMD) is a pesticide used worldwide. No information exists on how IMD impact the bees' body bioelement balance, which is essential for bee health. We hypothesized that IMD disturbs this balance and fed the bees (in field conditions) with diets containing 0 ppb (control), 5 ppb (sublethal considered field-relevant), and 200 ppb (adverse) doses of IMD. IMD severely reduced the levels of K, Na, Ca, and Mg (electrolytic) and of Fe, Mo, Mn, Co, Cu, Ni, Se, and Zn, while those of Sn, V, and Cr (enzymatic) were increased. Levels of P, S, Ti, Al, Li, and Sr were also decreased, while only the B content (physiologically essential) was increased. The increase in Tl, Pb, and As levels (toxic) was alarming. Generally, IMD, even in sublethal doses, unexpectedly led to severe bioelement malnutrition in 69% of bioelements and to a stoichiometric mismatch in the remaining ones. This points to the IMD-dependent bioelement disturbance as another, yet unaccounted for, essential metabolic element which can interfere with apian health. Consequently, there is a need for developing methods of bioelement supplementation of the honey bee diet for better preventing bee colony decline and protecting apian health status when faced with pesticides.

Abstract
Effect of overmixing process and structure of selected phenolic acids belonging to hydroxycinnamic and hydroxybenzoic group on the structure of gluten network were analysed with application of FT-Raman Spectroscopy. Modification of gluten by acids resulted in formation of aggregates and unordered structures at the expense of protein stabilizing structures (e.g. β-sheets or β-turns). Supplementation with most of the acids caused reduction in the amount of disulphide bonds in the most stable conformation (g-g-g). Changes in the molecular organization of gluten proteins depended on the chemical structure of particular acids. The presence of bands assigned to aggregates was connected with the number of OH groups present at the aromatic ring of the acids. Acids belonging to hydroxycinnamic group did not incorporate or incorporate only partially into gluten network by formation of covalent or hydrogen bonds. Spectrophotometric analysis showed that hydroxycinnamic acids can interact stronger with gluten proteins compared to hydroxybenzoic acids.

Abstract
Non-ferrous metal mining is considered one of the largest sources of toxic metal released to the environment and may threaten ecosystems, notably biota. We explored how birds that inhabit non-ferrous metal mining sites are exposed to mercury, lead, and other trace elements by analyzing their feathers and verifying which factors may influence element concentrations in feathers. We sampled a total of 168 birds, representing 26 species, with different feeding habits and migration patterns in a non-polluted reference site and two historical metal mining areas: Almadén, which is considered one of the most heavily mercury-contaminated sites worldwide, and the Sierra Madrona mountains where lead has been mined since ancient times. The quantification of aluminum (Al), arsenic (As), barium (Ba), beryllium (Be), cadmium (Cd), cobalt (Co), chromium (Cr), copper (Cu), iron (Fe), mercury (Hg), magnesium (Mg), manganese (Mn), molybdenum (Mo), nickel (Ni), lead (Pb), selenium (Se), thorium (Th), thallium (Tl), uranium (U), vanadium (V) and zinc (Zn) was performed by inductively coupled plasma mass spectrometry (ICP-MS). Feather analysis revealed contamination by Hg and Pb, in Almadén and Sierra Madrona, respectively. We found that granivorous birds had the lowest feather Hg levels compared to those found in omnivorous, insectivorous, and piscivorous species, whereas feather Pb was about twice as high in granivores and omnivores, than in insectivorous and piscivorous birds. We also found differences among study sites in 13 elements and confirmed the influence of feather age, migratory patterns of the birds, and external deposition of elements, on metal concentrations in the feathers. Our results highlight that despite the cessation of metal mining in the study areas, local avifauna are being exposed to Hg and Pb from abandoned mines and old tailings sites, indicating that appropriate measures are needed to protect biota from overexposure to these toxic metals.

Abstract
BACKGROUND Fortification of rolls, one of the most popular snacks for children and adults, with coconut by-products can be interesting in terms of both nutritional enrichment and reduction of food waste. Coconut by-products, such as residues from coconut milk (RCM) and coconut oil (RCO) extraction, are a valuable source of dietary fiber. In the study, coconut flours obtained from RCM and RCO were used (FCM and FCO, respectively) for supplementation of rolls; white wheat flour was replaced with FCM or FCO at levels of 6, 12, and 18 g per 100 g. RESULTS The effect of the addition of the coconut by-products on the nutritional value, sensory evaluation, physical properties, and texture of rolls was determined after 24 and 72 h of storage. The research showed a positive effect of FCM and FCO on the roll yield, crumb moisture, and baking loss. The sensory evaluation revealed that the 12% addition of coconut residues yielded products with high overall acceptability (8 points on a 9-point scale). Compared with the control, a 12% addition of FCO or FCM contributed to an increase in proteins of 7.9% and 3.9% respectively and an increase in dietary fiber of 76% and 57% respectively. Despite the increase in the fat and protein contents, the energy value of the coconut rolls was significantly lower (244.6 kcal and 245.3 kcal for FCO and FCM respectively) than in the control wheat rolls (266.0 kcal). CONCLUSION White rolls with coconut flours obtained after grinding residues from oil or coconut milk extraction significantly increased the nutritional value of the rolls. © 2021 Society of Chemical Industry.

Abstract
Microscopy is a traditional method to perform ex vivo/in vitro dental research. Contemporary microscopic techniques offer the opportunity to observe dental tissues and materials up to nanoscale level. The aim of this paper was to perform a literature review on four microscopic methods, which are widely employed in dental studies concerning the evaluation of resin-dental adhesive interfaces-confocal laser scanning microscopy (CLSM), scanning electron microscopy (SEM), transmission electron microscopy (TEM) and atomic force microscopy (AFM). The literature search was performed using digital databases: PubMed, Web of Science and Scopus. On the basis of key words relevant to the topic and established eligibility criteria, finally 84 papers were included in the review. Presented microscopic techniques differ in their principle of operation and require specific protocols for specimen preparation. With regard to adhesion studies, microscopy assists in the description of several elements involved in adhesive bonding, as well as in the assessment of the condition of enamel surface and the most appropriate etching procedures. There are several factors determining the quality of the interaction between the substrates which could be recognized and a potential for further implementation of microscopic techniques in dental research could be recognized, especially when these techniques are used simultaneously or combined with spectroscopic methods. Through such microscopy techniques it is possible to provide clinically relevant conclusions and recommendations, which can be easily introduced for enamel-safe bonding and bonding protocols, as well as optimal pretreatments in dentine preparation.

Abstract
The goal of this paper is to assess the current status and trends of total mercury (THg) contamination of the atmosphere and terrestrial ecosystems in Poland. The study shows that the reduced domestic and worldwide atmospheric emission of Hg resulted in decreased THg level in the terrestrial biotope and biosphere. Considering that Poland is one of the main Hg emitters in Europe, the THg concentrations in its abiotic environment are still elevated. However, the THg level in terrestrial organisms is relatively low, which is because a large proportion of Hg deposited on land is accumulated in organic-rich soils. Regarding the THg concentration, consumption of wildlife and livestock from Poland is safe for humans. Nevertheless, the authors indicate the need for effective environmental monitoring, based on selected bioindicators, which is crucial considering the slowing reduction of Hg emission combined with the consequences of the changing climate.

Abstract
Grain hardness is the single most important trait in determining technological properties and end-use quality of wheat product. This trait is controlled by two genes (Pina-D1 and Pinb-D1) at the Hardness (Ha) locus. Soft endosperm kernels are characterized by the presence of alleles 'a' in both genes (Pina-D1a and Pinb-D1a), while the medium hard and hard grain is the result of deletion in the Pina-D1 gene or single mutation of the Pinb-D1 gene. The aim of the current study was to determine the relationship between common wheat grain hardness and the presence of puroindoline genes. Eighty-one spring common wheat cultivars from Europe were analysed for grain hardness by SKCS (Single Kernel Characterization System) and Pin-D1 genes. The analysed genotypes were divided into three hardness classes: hard, medium and soft and they showed four allelic combinations in Pin-D1 genes. The SKCS results showed that hard wheat was the major type in European cultivars, whereas molecular analysis showed differential allelic combinations of puroindoline genes among these classes. The conducted analyses suggest that another major gene or other factors were influencing kernel texture. Abstract
Thermal analyses were used to determine thermal properties and transitions in model dough and gluten network induced by five oil pomaces obtained from seeds of black seed, pumpkin, hemp, milk thistle and primrose. The model dough was supplemented with 3%, 6% and 9% of the pomaces. Analysis of TGA parameters of supplemented model dough and gluten showed that both objects were thermally stable. However, analysis of difference TGA thermograms indicated that samples supplemented with pomaces differ in thermal behaviour. The differences were confirmed by DSC results. In the case of model dough, supplementation caused appearance of two endothermic peaks at ca. 295 and 340 °C and significant increase in transition enthalpy. Modified gluten thermograms showed one exothermic peak at 280 °C which enthalpy changed slightly with increase in pomace content. The present results indicated that model dough is characterized by more ordered structure comparing to control and gluten samples.

Abstract
Red deer antlers have a number of advantages that make them a unique material for monitoring trace elements. As antlers are shed and regrown every year, results of toxicological investigations can be applied to a particular region and time. We analyzed the content of four toxic (Pb, Cd, Hg, As) and three essential (Cu, Zn, Fe) trace elements in 254 red deer antler samples spanning between 1953 and 2012. Age of stags did not influence concentrations of analyzed elements in antlers, except for Zn whose level increased with age. The highest concentrations of toxic elements occurred at the beginning of the analyzed period. Levels of Pb, Hg and Zn in antlers decreased over the course of the study. Levels of Cd and As were low and presented a steady trend. Variations in the levels of the analyzed elements in red deer antlers are considered to reflect levels of exposure of animals in their habitat over the sixty-year study period. The range of essential element levels did not indicate any contamination. Environmental conditions in the Mazury Region during the last decades appeared to have improved significantly, as established by declining trends of toxic elements levels in deer antlers.

Abstract
Food is a major source of minerals for humans. The main objective of this study was to determine the intake level of 10 essential macro- (Na, K, Ca, and Mg) and trace elements (Cu, Zn, Mn, Fe, Cr, and Se) with major food groups among young adults. Dietary intake of elements was evaluated using the 24-h dietary recall technique in combination with F-AAS and ICP-OES methods. A very high intake of sodium and a very low intake of calcium, combined with inappropriate sodium/potassium ratio, may be harmful to the health of the population. Dietary intake of trace elements was within the range of reference values in the subjects, with cereals being the major source of a majority of those elements, while meat (38% for Na), vegetables (25% for K), and milk products (75% for Ca) were the main contributors to the daily dietary intake of macroelements. PCA revealed several visible trends in the datasetAmong men, the intake of Zn, Cr Na and K was significantly correlated with the consumption of meat and vegetables, whereas Mg, Se, Fe and Cu with cereals and water and beverages. Among women, the intake of Mg was significantly correlated with the consumption of meat and vegetables.

Abstract
The bioaccumulation of mercury (Hg) in the food chain may pose a threat to human health. The risk of dietary Hg intake is mostly caused by the consumption of fish and seafood, therefore the knowledge on the exposure from land animal products is limited. In our article, we summarized the results of analyses of Hg in muscle tissue and liver of different livestock and game animals obtained during ten years of official monitoring that was carried out in Poland from 2009 to 2018. The majority of the results in muscle tissue were below the limits of quantification (LOQs). The mean Hg concentrations in muscle tissue ranged from 0.6 to 5.6 μg kg-1 of wet weight and the mean liver Hg concentrations were within the range of 0.8-16.4 μg kg-1 of wet weight, with lowest levels in chickens and highest in wild boars. The results revealed decreasing trends in liver Hg in cattle and cervids over the years, which was congruous with decreasing emission of Hg in Europe. Our results showed that the consumption of meat and liver of livestock and game animals in Poland may be considered to be safe for human health, which was confirmed by the low number of noncompliant samples relative to the applicable legal limits, as well as by estimated dietary exposure.

Abstract
Small terrestrial mammals could be used as accumulative biomonitors of different environmental contaminants, but the knowledge of the level of Hg in their bodies is scant. The aim of our research was to verify the factors influencing Hg bioaccumulation and to analyze the concentration of total mercury (Hg) in the livers of four species of wild terrestrial rodents from different rural areas of Poland: the yellow-necked mouse (Apodemus flavicollis), striped field mouse (Apodemus agrarius), common vole (Microtus arvalis), and bank vole (Myodes glareolus). The concentration of total Hg was analyzed in liver tissue by atomic absorption spectrometry using a direct mercury analyzer. The concentration of Hg found in the livers of rodents ranged from <1 to 36.4 µg/kg of wet weight, differed between study sites, species, and sexes, and was related to body weight. We addressed feeding habits as potential causes of differences in liver Hg concentration among species.

Abstract
Purpose The purpose of this study was to assess the relationship between objectively measured physical activity and perceived work ability and musculoskeletal disorders among adult, middle-aged, and older women. Patients and methods This study used a cross-sectional design with a convenience sample of 348 women divided into 3 age groups: 30–49 years (n=111), 50–65 years (n=120), 66–75 years (n=117). Weekly physical activity was monitored using tri-axial accelerometer ActiGraph Gt3X. Perceived work ability was assessed using the standardized Work Ability Index (WAI) questionnaire. Information about the occurrence and intensity of musculoskeletal disorders was collected using standardized Nordic Musculoskeletal Questionnaire (NMQ) expanded by visual analog pain intensity scale (VAS). Results Regardless of age, women who met physical activity recommendations achieved higher scores in each part of the WAI, and also in the total WAI scores. However, the most significant differences were found in women aged 50–64 years, and included the following items: subjective work ability, work ability in relation to demands, work impairments, sick leave in the past year. Total WAI scores were also significantly higher in women aged 30–49 and 50–64 years who met PA recommendations in comparison to women who did not meet recommendations. Also, significant relations between the frequency of occurrence of musculoskeletal problems and meeting physical activity recommendations were found in women aged 50–64 years. Those who were more physically active reported less musculoskeletal problems in shoulders (p=0.006) and ankles/feet (p=0.018) regions. Conclusion Adherence to Global Recommendations on Physical Activity for Health disseminated by WHO is related to better-perceived work ability among adult (30–49 years) and middle-aged (50–64 years) women. There is also a relationship between adherence to recommendations of physical activity and frequency and intensity of musculoskeletal pain among middle-aged women.

Abstract
Volatile organic compounds (VOCs) are natural markers useful in rapid assessment of adverse changes occurring in biological material. The use of an electronic nose seems to be a good, fast, and cheap method to determine particular VOCs. This paper presents a new method determination for VOCs and their concentration based on three sensorgram parameters: maximum of normalized sensor response, reaction time, and cleaning time measured from the end of the test to the half value of the maximum of normalized sensor response. The novelty of the method consists in the use for the first time of two parameters: reaction time and cleaning time measured from the end of the test to the half value of the maximum of normalized sensor response. The VOC sensorgrams at different VOC concentrations (26 to 3,842 ppm) were measured by an electronic nose Food Volatile Compound Analyzer (Agrinose) equipped with eight metal oxide semiconductor sensors dedicated to detect different gases. In the present studies, only six sensors that best respond to the VOCs were used. The highest responses to VOCs were obtained for two sensors-TGS2602 and AS-MLV-P2. The results showed that the dependence between the sensorgram parameters on VOC concentration was well described by a logarithmic curve in the whole range of concentrations. Detailed analysis revealed that the cleaning time increases with an increase in the number of carbon atoms in aliphatic molecules. The principal component analysis (PCA) was used to verify the utility of the new three parameters method in VOCs differentiation. The PCA analysis of these parameters showed that maximum of the normalized sensor response alone, which has been used for identification of particular VOCs so far, could not be regarded as a good parameter used for this purpose. Application of all the three parameters gave the best results in VOC identification. The research indicates that the use of three parameters of a volatile compound instead of only one parameter can allow precise determination of substances. Moreover, the results indicate that the analyzed parameters depend on the chemical structure of VOCs.

Abstract
The objective of the experiment was to investigate the stability of the composition of selected essential oils in the model systems containing methanol and hexane solutions which were treated with ultrasound. Solutions of the oils, with a concentration of 90 mg/ml, were subjected to the effect of ultrasounds with a frequency of 20 kHz and an output power of 200 W for periods of 2 min and 10 min at 50% and 80% power. The experiment has shown no significant effect on the composition of the essential oils resulting from the applied parameters of the process in the tested model systems. The study indicates that the sonication parameters adopted in the experiment can be applied in the case of analogous systems containing essential oils in their composition.

Abstract
The objective of the study was to perform micromorphological analyses of the secretory structures of leaves and stems of oil-bearing industrial plants from the Lamiaceae family such as lemon balm (Melissa officinalis L.), peppermint (Mentha × piperita L.), sage (Salvia officinalis L.), marjoram (Origanum majorana L., syn. Origanum dubium Boiss.), rosemary (Rosmarinus officinalis L.) and common thyme (Thymus vulgaris L.) using light microscope and scanning electron microscope. In addition, an estimation of the content of volatile substances in the plant species under study was performed using GC-MS, as well as the qualitative and quantitative analysis of essential oil, that is an important component in terms of the estimation of raw material applicability for use in the industry. In the epidermal cells of studied plants, 2 types of Lamiaceae-type glandular trichomes were identified: short- and long-stalked capitate glandular trichomes with single- and bicellular secretory capitulum, and peltate glandular trichomes with eight- and over a dozen-cell secretory capitulum. Capitate trichomes were densely distributed on the surface of the epidermis, while peltate trichomes were sparse, though regular, and were situated in depressions. Glandular trichomes were found more frequently on leaves than on stems. The cuticle of the abaxial of leaf was characterized in most cases by the occurrence of larger average diameter peltate trichomes compared to the cuticle of the adaxial side of leaf. Peppermint produced the largest structures accumulating essential oil on the leaves (average diameter of peltate trichomes – 78.48 µm on the adaxial side of leaf, up to 96.43 µm), while on the stem, the highest average diameter of the peltate trichomes was observed in sage (an average of 75.53 µm, up to 85.99 µm). The lemon balm was characterized by the presence of capitate and peltate trichomes with the smallest diameter (an average of 44.26 µm). Lemon balm was characterized by the greatest density of glandular trichomes compared to other plant species. Among the plants studied, the highest content of oil was noted in the case of thyme and peppermint (2.22% and 2.20% v/w, respectively), and the lowest in green parts of lemon balm (0.17% v/w). The isolated essential oils contained predominantly components from the groups of monoterpenes and sesquiterpenes, and it is the presence of those substances that determines the possibility of utilizing the plants studied for a variety of purposes.

Abstract
INTRODUCTION A vital role in health maintenance and the prevention of non-communicable chronic diseases is played by an adequate level of physical activity. In recent decades, numerous guidelines have been developed to determine the criteria of physical activity levels that are essential to obtain overall health benefits. OBJECTIVE The aim of the presented study was evaluation of the physical activity of adult members of non-governmental organizations promoting active lifestyle, in compliance with recommendations of the World Health Organization and the American College of Sport Medicine. MATERIAL AND METHODS The study examined 95 adult members of non-governmental organizations (NGOs) promoting an active lifestyle in the Silesian Province of Western Poland. In order to make a comprehensive physical activity evaluation (including all criteria of most complex health-recommendations), both an objective tool (ActiGraph GT3X) and a subjective tool (Daily Physical Activity Log) were used. RESULTS Compliance with a weekly total time of moderate to vigorous aerobic efforts were observed in 47% of women and 44% of men with regard to WHO guidelines, and in 29% of women and 23% of men, respectively, regarding ACSM guidelines. The criterion for the frequency of strength exercises was met by 24% of women and 15% of men. Flexibility exercises level was adequate in 35% of women and 28% of men. CONCLUSIONS The most frequent cause of non-meeting the criteria of the above- mentioned organisations were insufficient frequency of the weekly resistance (strength) exercises and flexibility exercises. There is a need to create public health programmes based on the complex physical activity recommendations, including all types of physical efforts (aerobic, strength, flexibility), and to emphasise the fact that meeting all of them is essential to obtain overall health benefits.

Abstract
The article reports a case of acute copper sulfate (CuSO4) poisoning in 2-day-old turkeys. The first incidences were noticed 2 h after placing the animals in the poultry house, where turkeys were provided with wood shaving bedding. Post-mortem examination showed wood shavings present in gastric and intestinal contents and numerous lesions in the alimentary tract: dark green color of the koilin lining, and surface erosions, deep ulceration, and severe congestion of the gizzard. The copper (Cu) concentration in samples of the liver, kidney, heart, gizzard content, gizzard muscle, gizzard lining, and wood shavings from the bedding was determined. Our results showed that the level of Cu in the livers of affected birds was more than sevenfold higher than the recommended value and the Cu content in bedding material was above the value considered to be toxic to turkeys. Our investigation identified the bedding disinfected using a CuSO4 solution as a possible cause of turkey fatalities.

Abstract
Gluten-free bread making success is closely linked to the biophysical behaviour of dough. Quality of these doughs is largely determined by the properties of their proteins and starch. This study aimed to explain, at the structural level the rheological behaviour of gluten-free rice-field bean dough compared to that of soft wheat. The conformational aspects of proteins and starch were studied using Fourier transformed infrared spectroscopy (FT-IR). Doughs of soft wheat, rice, field bean, mixture of rice-field bean flour and the same mixture where a portion of rice flour underwent hydrothermal treatment were studied. The results show that viscous and viscoelastic components of gluten-free doughs were changed by supplementation of rice with field bean flour. Most of gluten-free doughs possessed a higher storage modulus in comparison with soft wheat dough. Analysis of FT-IR spectra in the amide I region conveyed to find the differences relative to soft wheat flour dough showed that in non-gluten doughs the increase in β-sheet content was observed at the expense of β-turns.
These results were confirmed by amide I deconvolution. Gluten-free doughs contained more β-sheet structure as compared to soft wheat dough and less β-turns inducing high structuralization level that characterized this type of dough matrix. Concerning starch, the supplementation with rice-field bean generated the reorganization of field bean and rice doughs starches approaching that of wheat dough.

Abstract
The paper presents application of a new three-parameter method for identification of volatile organic compounds (VOCs) and creation of fingerprints based on the impregnation time (tIM ), cleaning time (tCL ), and maximum response ([ΔR/R]max ) of chemically sensing sensors for detecting spoilage of agricultural commodities. The novelty of this method consists in the use of two additional parameters: an impregnation time and a cleaning time for the first time. An Agrinose built of eight metal oxide semiconductors was used for identification of loss in the rapeseed quality during a short period of storage after harvest. Principal component analysis was applied as a method of data analysis to verify the suitability of the new three-parameter method and visualization of groups of different quality of raw materials. Fourier transform infrared spectroscopy spectra for identification of the infrared bands of fungal polysaccharides and gas chromatography-mass spectrometry analysis of the headspace was applied to describe volatile metabolite contents in reference to the electronic nose technique. The investigations and analyses have demonstrated that the new three-parameter method for determination of volatile compounds ([ΔR/R]max , tIM , tCL ) describes the changes in VOCs more efficiently than the single-parameter approach based only on the maximum sensor response ([ΔR/R]max ). The proposed method for generation of electronic fingerprints clearly discriminated between rapeseed samples infected with field and storage microflora. Three-parameters method can be useful for quality control in food microbiology and safety, as a rapid method of analysis and detection, including electronic nose sensor technology. PRACTICAL APPLICATION: The use of the proposed method for generation of fingerprints requires no interference with the hardware of the electronic nose but necessitates modification of the software only. This facilitates implementation of the three-parameter method in available devices. This kind of methods and devices can be useful for example in storage process with active ventilation.

Abstract
Proper bioelement content is crucial for the health and wellness of all
organisms, including honeybees. However, the situation is more complicated in
these important pollinators due to the fact that they change their physiology
during winter in order to survive the relatively harsh climatic conditions.
Additionally, honeybees are susceptible to many diseases such as
nosemosis, which during winter can depopulate an entire
colony. Here we show that summer bees have a markedly higher content of
important bioelements such as: Al, Cu, P, V, (physiologically essential); Ca, K,
Mg, (electrolytic); Cr, Se, Zn, (enzymatic); As, Hg, (toxic). In contrast, a
markedly higher content of: Fe (physiologically essential); Mn, Ni, (enzymatic);
Cd (exclusively toxic) were present in winter bees. Importantly,
N. ceranae infection resulted in an
increased honeybee bioelement content of: S, Sr (physiologically essential) and
Pb (exclusively toxic), whereas the Nosema-free worker-bees had
higher amounts of B and Si (physiologically essential). We propose that the
shortages of Fe, Mn, Ni, and Na observed in Nosema-infected
bees, could be the reason for the higher mortality of
Nosema-infected bees throughout overwintering. In addition, a
shortage of bioelements such as B and Si may be a reason for accelerated aging
in foragers that is observed following N.
ceranae infection. Therefore, in winter, bioelement content
was more strongly affected by N. ceranae
infection than during summer. We found a strong correlation between the
bioelement content of bees and seasons (summer or winter) and also with
Nosema infection. We conclude that the balance of
bioelements in the honeybee is altered by both seasonal affects and by
Nosema infection.

Abstract
The electronic structure of excited photosensitizer adsorbed at the surface of a solid is the key factor in the electron transfer processes that underlie the efficiency of dye-sensitized solar cells and photocatalysts. In this work, Stark effect (electroabsorption) spectroscopy has been used to measure the polarizability and dipole moment changes in electronic transitions of pyrene-1-carboxylic (PCA), -acetic (PAA) and -butyric (PBA) acids in ethanol, both free and adsorbed on colloidal TiO2, in glassy ethanol at low temperature. The lack of appreciable increase of dipole moment in the excited state of free and adsorbed PAA and PBA points that two or more single bonds completely prevent the expansion of π-electrons from the aromatic ring towards the carboxylic group, thus excluding the possibility of direct electron injection into TiO2. In free PCA, the pyrene's forbidden S0→S1 transition has increased intensity, exhibits a long progression in 1400cm-1 Ag mode and is associated with |∆μ| of 2 D. Adsorption of PCA on TiO2 causes a broadening and red shift of the S0→S1 absorption band and an increase in dipole moment change on electronic excitation to |∆μ|=6.5 D. This value increased further to about 15 D when the content of acetic acid in the colloid was changed from 0.2% to 2%, and this effect is ascribed to the surface electric field. The large increase of |∆μ| points that the electric field effect can not only change the energetics of electron transfer from the excited sensitizer into the solid, but can also shift the molecular electronic density, thus directly influencing the electronic coupling factor relevant for electron transfer at the molecule-solid interface.

Abstract
The investigation of the dynamics of gas cell coalescence, i.e. a phenomenon that deteriorates the homogeneity of the cellular structure of bread crumb, was carried out performing simultaneously measurements of the dough volume, pressure, and viscosity. It was demonstrated that, during the baking expansion of chemically leavened wheat flour dough, the maximum growth rate of the gas cell radius determined from the ratio of pressure exerted by the expanded dough to its viscosity was on average four-fold lower than that calculated from volume changes in the gas phase of the dough. Such a high discrepancy was interpreted as a result of the course of coalescence, and a formula for determination of its rate was developed. The coalescence rate in the initial baking expansion phase had negative values, indicating nucleation of newly formed gas cells, which increased the number of gas cells even by 8%. In the next baking expansion phase, the coalescence rate started to exhibit positive values, reflecting dominance of the coalescence phenomenon over nucleation. The maximum coalescence rates indicate that, during the period of the most intensive dough expansion, the number of gas cells decreased by 2-3% within one second. At the end of the formation of bread crumb, the number of the gas cells declined by 55-67% in comparison with the initial value. The correctness of the results was positively verified using X-ray micro-computed tomography. The developed method can be a useful tool for more profound exploration of the coalescence phenomenon at various stages of evolution of the cellular structure and its determinants, which may contribute to future development of more effective methods for improving the texture and sensory quality of bread crumb.

Abstract
Enterococcus faecalis is one of the most significant bacterial pathogens associated with the first-week mortality of chickens. Here, the surface properties of bacterial cells and the selected virulence factors of E. faecalis strains isolated from the hearts of clinically healthy broiler chickens were studied. Investigations were carried out on live and autoclaved cells. E. faecalis (ATCC 29212) was used as a reference strain. The bacterial cells revealed different haemolytic activities. Their surface free energy was dominated by the hydrophobic component. The cell walls of the bird isolates showed slightly weaker acidic characteristics than those of E. faecalis (ATCC 29212). Moreover, the bacterial cells from the chicken hearts showed higher electrophoretic mobility and surface electrical charge than the reference strain, and consequently demonstrated a low ability to form biofilms.

Abstract
European bison is classified as a vulnerable species because of many threats. We analyzed the content of toxic and essential elements (Ag, Al, As, Ba, Be, Cd, Co, Cr, Cu, Hg, Mg, Mn, Na, Ni, Pb, Se, Th, Tl, U, V, and Zn) in the livers of 30 captive and free-ranging European bison from the Bison Breeding Center in Smardzewice and from Białowieża Primeval Forest in Poland. The contents of toxic elements were lower than reported previously in European Bison and were similar to those of wild ungulates from non-polluted areas. Accumulation of Cd and Cr was related to the age of animals. We compared the mineral status between captive and free-ranging European bison to verify whether the maintenance type could affect concentrations of trace elements in the liver. The concentration of Mn and Zn differed between captive and free-ranging group. Our results were compared to the reference values of essential elements for cattle. All animals from this study were Se-deficient and more than 80% of them have Cu deficiency. Deficiency of Mn was present in 20% of captive and 37% of free-ranging animals whereas Zn in 37% and 3% respectively. Statistical analysis confirmed that Mn and Zn deficiencies were related o the maintenance of animals (p<0.05). We revealed that mineral deficiencies could be an additional threat to the Polish population of European bison. Thus, the monitoring of essential minerals is necessary and future work is required to optimize the supplementation and foddering for preventing the occurrence of mineral deficiencies.

Abstract
OBJECTIVE The aim of this study was to evaluate the association between meeting recommendations on physical activity for health in leisure-time and the ability to work among Polish white-collar workers. METHODS The study used a cross-sectional design with a convenience sample of 360 white-collar workers. Participants recorded 7-day physical activity logs, including form, duration and intensity of leisure-time physical activities. The results were compared to health recommendations. A standardized Work Ability Index (WAI) questionnaire was used in assessing the ability to work. RESULTS Participants who met health recommendations achieved higher scores of the WAI (mean score = 41.93) in comparison to those who were not sufficiently physically active (mean score = 39.35) (p < .001). The results of binary logistic regression show that meeting health-related physical activity recommendations almost double the odds of reaching at least good work ability (OR = 1.94, 95% CI = 1.12-3.36). CONCLUSIONS Meeting leisure-time physical activity recommendations (especially the criterion of vigorous physical activity) is significantly related to higher self-assessed ability to work among white-collar workers.

Abstract
FTIR spectroscopy was used to determine changes in secondary structure, as well as water state, in gluten and model doughs supplemented by four fibre polysaccharides (microcrystalline cellulose, inulin, apple pectin and citrus pectin). The gluten and model doughs were obtained from commercially available wheat gluten and model flour, respectively. The polysaccharides were used in five concentrations: 3%, 6%, 9%, 12% and 18%. Analysis of the FTIR spectra indicated that polysaccharides could be divided into two groups: first - microcrystalline cellulose and inulin, second - apple and citrus pectins that induced opposite structural changes. Changes in secondary structure concern mainly β-sheets and β-turns that form aggregated β-structures, suggesting dehydration of the gluten matrix as a result of competition for water between gluten proteins and polysaccharides. Moreover, the positive band at ca. 1226 cm-1 in the spectra of pectin-modified samples indicates formation of 'ether' type hydrogen bonds between gluten proteins and pectins.

Abstract
BACKGROUND Modern research of health determinants and health-related behavior patterns places a particular emphasis on the assessment of physical activity levels in various social and professional groups. The deficit of physical activity has become a common cause of serious diseases. Following the ecological model of health behavior, physical activity as a biological and cultural phenomenon can be indirectly modified by such interpersonal factors as age, sex, somatic traits and education. OBJECTIVES The aim of the present study was the identification and assessment of habitual physical activity of adult inhabitants from the Katowice Urban Area with regard to selected physical traits and social determinants. MATERIAL AND METHODS The study was carried out in the Katowice Urban Area in May and June, 2012-2014. The research material comprised 2,173 inhabitants, including 1,017 women and 1,156 men, aged 30 to 65 years. The respondents’ habitual physical activity was assessed with the use of the International Physical Activity Questionnaire - Short Version (IPAQ-SF). The obtained data on the respondents’ physical activity were compared with the American College of Sports Medicine (ACSM) recommendations RESULTS The results of the study showed that the frequency and duration of high-intensity physical activity and duration of moderate-intensity physical activity were significantly greater in the male inhabitants. The age was also a significant factor affecting the levels of high-intensity physical activity in men. Body build was not a significant determinant of the frequency and duration of physical activity in both men and women from Katowice. The education level only affected the level of physical activity in men. Sex, age, and education of the respondents were statistically significant determinants of their level of fulfilment of the ACSM recommendations. CONCLUSIONS Propagation of physical activity among adults and the elderly, and women in particular, remains a continuing challenge facing health promotion professionals.
