A commentary on key methodological developments related to nutritional life cycle assessment (nLCA) generated throughout a 6-year strategic scientific programme

Rothamsted Research (RRes) is the world's oldest agricultural research centre, notable for the development of the first synthetic fertilizer (superphosphate) and long-term farming experiments (LTEs) spanning over 170 years. In 2015, RRes recruited several life cycle assessment (LCA) experts and began adopting the method to utilize high resolution agronomical data covering livestock (primarily ruminants), grassland/forage productivity and quality, and arable systems established on its North Wyke Farm Platform (NWFP) and the LTEs. The NWFP is a UK 'National Bioscience Research Infrastructure' (NBRI) developed for informing and testing systems science utilising high-resolution data to determine whether it is possible to produce nutritious food sustainably. Thanks largely to the multidisciplinary knowledge at RRes, and its collaborators, its LCA Team has been at the forefront of methodological advances during a 6-year Institute Strategic Programme (ISP) 'Soil-to-Nutrition' (S2N). While S2N investigated the co-benefits and trade-offs of new mechanistic understanding of efficient nutrient use across scales from pot to landscape, this commentary specifically synthesizes progress in incorporating human nutrition in the context of environmental footprinting, known as 'nutritional LCA' (nLCA). We conclude our commentary with a brief discussion on future pathways of exploration and methodological developments covering various activities along entire agri-food supply-chains.

Comparison of the welfare of beef cattle in housed and grazing systems: hormones, health, and behaviour

Animal welfare encompasses all aspects of an animal's life and the interactions between animals. Consequently, welfare must be measured across a variety of factors that consider aspects such as health, behaviour, and mental state. Decisions regarding housing and grazing are central to farm management. In this study, two beef cattle systems and their herds were compared from weaning to slaughter across numerous indicators. One herd ("HH") were continuously housed, the other ("HG") were housed only during winter. Inspections of animals were conducted to assess body condition, cleanliness, diarrhoea, hairlessness, nasal discharge, and ocular discharge. Hair and nasal mucus samples were taken for quantification of cortisol and serotonin. Qualitative behaviour assessments (QBA) were also conducted and performance monitored. Physical health indicators were similar between herds with the exception of nasal discharge which was more prevalent in HH (P < 0.001). During winter, QBA yielded differences between herds over PC1 (arousal) (P = 0.032), but not PC2 (mood) (P = 0.139). Through summer, there was a strong difference across both PC1 (P < 0.001) and PC2 (P = 0.002), with HG exhibiting more positive behaviour. A difference was found in hair cortisol levels, with the greatest concentrations observed in HG (P = 0.011), however such a pattern was not seen for nasal mucus cortisol, or for serotonin. Overall, providing summer grazing (HG) appeared to afford welfare benefits to the cattle as shown with more positive QBA assessments, but also slightly better health indicators, notwithstanding the higher levels of cortisol in that group.

The impact of feeding supplemental minerals to sheep on the return of micronutrients to pasture via urine and faeces

The form (organic versus inorganic) of minerals (Se, Zn, Cu and Mn), supplemented to sheep (Charolais × Suffolk-Mule (mean weight = 57 ± 2.9 kg) at two European industrial doses, on the return of micronutrients to pasture via nutrient partitioning and composition in sheep urine and faeces was investigated. This gave four treatments in total with 6 animals per treatment (n = 24). The form of the supplemented minerals did not influence the excretory partitioning of micronutrients (Se, Zn, Cu and Mn) between urine and faeces, nor on their concentrations in the excreta. The two doses trialed however, may influence the Se flux in the environment through altering the ratios of Se:P and Se:S ratios in the faeces and Se:S ratio in the urine. Administration of the mineral supplements also improved the retention of P in sheep reducing its excretion via urine. Although the concentrations of readily bioavailable micronutrients in the faeces were not affected by the mineral forms, there were differences in the more recalcitrant fractions of Se, Zn and Cu (as inferred via a sequential extraction) in faeces when different forms of supplemental minerals were offered. The potential impact of these differences on micronutrient flux in pasture requires further investigation.

Performance and enteric methane emissions from housed beef cattle fed silage produced on pastures with different forage profiles

Methane (CH₄) produced by ruminants is a significant source of greenhouse gases from agriculture in the United Kingdom (UK), accounting for approximately 50% of the emissions in this sector. Ration modification is linked to changes in rumen fermentation and can be an effective means of CH₄ abatement. In temperate climate countries, forage silage represents a major feed component for cattle during the housing period. The objective of this study was, therefore, to compare enteric CH₄ emission from cattle offered silage produced from different types of grassland. Beef cattle, steers (n = 89) and heifers (n = 88) with average liveweight (LW) of 328 ± 57.1 kg were evaluated during two housing seasons (2016-2017 and 2017-2018) from November to April, at the Rothamsted Research North Wyke Farm Platform (UK). The treatments corresponded to three diet types, comprising silage harvested from three different pastures: MRG, monoculture of perennial ryegrass (PRG, Lolium perenne L.cv. AberMagic), bred to express the high-sugar phenotype; RG-WC, a mixed sward comprised of the same perennial ryegrass cultivar with white clover (Trifolium repens L.) with a target clover proportion of 30% as land cover; and permanent pasture (PP) dominated by PRG and a small number of non-introduced species. MRG and PP received 160-200 kg N/ha/year. Cattle were weighed every 30 days, and the enteric CH₄ emission was determined using GreenFeed automated systems. No significant differences in enteric CH₄ emission per head or per kg LW were observed between treatments. However, emission expressed per average daily gain (ADG) in LW was greater (P < 0.001) for MRG compared with RG-WC and PP, at 270, 248 and 235 g CH₄/kg ADG, respectively. This related to a lower ADG (P = 0.041) for the animals fed MRG silage compared with RG-WC and PP which were similar, with respective values of 0.67, 0.71 and 0.74 kg/day. The forages compared in this study showed little or no potential to reduce enteric CH₄ emission when fed as silage to growing beef cattle during the winter housing period.

Protein quality as a complementary functional unit in life cycle assessment (LCA)

GOAL AND THEORETICAL COMMENTARY

A number of recent life cycle assessment (LCA) studies have concluded that animal-sourced foods should be restricted-or even avoided-within the human diet due to their relatively high environmental impacts (particularly those from ruminants) compared with other protein-rich foods (mainly protein-rich plant foods). From a nutritional point of view, however, issues such as broad nutrient bioavailability, amino acid balances, digestibility and even non-protein nutrient density (e.g., micronutrients) need to be accounted for before making such recommendations to the global population. This is especially important given the contribution of animal sourced foods to nutrient adequacy in the global South and vulnerable populations of high-income countries (e.g., children, women of reproductive age and elderly). Often, however, LCAs simplify this reality by using 'protein' as a functional unit in their models and basing their analyses on generic nutritional requirements. Even if a 'nutritional functional unit' (nFU) is utilised, it is unlikely to consider the complexities of amino acid composition and subsequent protein accretion. The discussion herein focuses on nutritional LCA (nLCA), particularly on the usefulness of nFUs such as 'protein,' and whether protein quality should be considered when adopting the nutrient as an (n)FU. Further, a novel and informative case study is provided to demonstrate the strengths and weaknesses of protein-quality adjustment.

CASE STUDY METHODS

To complement current discussions, we present an exploratory virtual experiment to determine how Digestible Indispensable Amino Acid Scores (DIAAS) might play a role in nLCA development by correcting for amino acid quality and digestibility. DIAAS is a scoring mechanism which considers the limiting indispensable amino acids (IAAs) within an IAA balance of a given food (or meal) and provides a percentage contribution relative to recommended daily intakes for IAA and subsequent protein anabolism; for clarity, we focus only on single food items (4 × animal-based products and 4 × plant-based products) in the current case exemplar. Further, we take beef as a sensitivity analysis example (which we particularly recommend when considering IAA complementarity at the meal-level) to elucidate how various cuts of the same intermediary product could affect the interpretation of nLCA results of the end-product(s).

RECOMMENDATIONS

First, we provide a list of suggestions which are intended to (a) assist with deciding whether protein-quality correction is necessary for a specific research question and (b) acknowledge additional uncertainties by providing mitigating opportunities to avoid misinterpretation (or worse, dis-interpretation) of protein-focused nLCA studies. We conclude that as relevant (primary) data availability from supply chain 'gatekeepers' (e.g., international agri-food distributors and processors) becomes more prevalent, detailed consideration of IAA provision of contrasting protein sources needs to be acknowledged-ideally quantitatively with DIAAS being one example-in nLCA studies utilising protein as a nFU. We also contend that future nLCA studies should discuss the complementarity of amino acid balances at the meal-level, as a minimum, rather than the product level when assessing protein metabolic responses of consumers. Additionally, a broader set of nutrients should ideally be included when evaluating "protein-rich foods" which provide nutrients that extend beyond amino acids, which is of particular importance when exploring dietary-level nLCA.

CO2 fluxes from three different temperate grazed pastures using Eddy covariance measurements

Grasslands cover around 25% of the global ice-free land surface, they are used predominantly for forage and livestock production and are considered to contribute significantly to soil carbon (C) sequestration. Recent investigations into using 'nature-based solutions' to limit warming to <2 °C suggest up to 25% of GHG mitigation might be achieved through changes to grassland management. In this study we evaluate pasture management interventions at the Rothamsted Research North Wyke Farm Platform, under commercial farming conditions, over two years and consider their impacts on net CO₂ exchange. We investigate if our permanent pasture system (PP) is, in the short-term, a net sink for CO₂ and whether reseeding this with deep-rooting, high-sugar grass (HS) or a mix of high-sugar grass and clover (HSC) might increase the net removal of atmospheric CO₂. In general CO₂ fluxes were less variable in 2018 than in 2017 while overall we found that net CO₂ fluxes for the PP treatment changed from a sink in 2017 (-5.40 t CO₂ ha^-1 y^-1) to a source in 2018 (6.17 t CO₂ ha^-1 y^-1), resulting in an overall small source of 0.76 t CO₂ ha^-1 over the two years for this treatment. HS showed a similar trend, changing from a net sink in 2017 (-4.82 t CO₂ ha^-1 y^-1) to a net source in 2018 (3.91 t CO₂ ha^-1 y^-1) whilst the HSC field was a net source in both years (3.92 and 4.10 t CO₂ ha^-1 y^-1, respectively). These results suggested that pasture type has an influence in the atmospheric CO₂ balance and our regression modelling supported this conclusion, with pasture type and time of the year (and their interaction) being significant factors in predicting fluxes.

V-QBA vs. QBA—How Do Video and Live Analysis Compare for Qualitative Behaviour Assessment?

Animal welfare is an inextricable part of livestock production and sustainability. Assessing welfare, beyond physical indicators of health, is challenging and often relies on qualitative techniques. Behaviour is a key component of welfare to consider and Qualitative Behaviour Assessment (QBA) aims to achieve this by systematically scoring behaviour across specific terms. In recent years, numerous studies have conducted QBA by using video footage, however, the method was not originally developed using video and video QBA (V-QBA) requires validation. Forty live QBAs were conducted, by two assessors, on housed beef cattle to help fill this validation gap. Video was recorded over the assessment period and a second video assessment was conducted. Live and video scores for each term were compared for both correlation and significant difference. Principle component analysis (PCA) was then conducted and correlations and differences between QBA and V-QBA for the first two components were calculated. Of the 20 terms, three were removed due to an overwhelming majority of scores of zero. Of the remaining 17 terms, 12 correlated significantly, and a significant pairwise difference was found for one (“Bored”). QBA and V-QBA results correlated across both PC1 (defined as “arousal”) and PC2 (defined as “mood”). Whilst there was no significant difference between the techniques for PC1, there was for PC2, with V-QBA generally yielding lower scores than QBA. Furthermore, based on PC1 and PC2, corresponding QBA and V-QBA scores were significantly closer than would be expected at random. Results found broad agreement between QBA and V-QBA at both univariate and multivariate levels. However, the lack of absolute agreement and muted V-QBA results for PC2 mean that caution should be taken when implementing V-QBA and that it should ideally be treated independently from live QBA until further evidence is published. Future research should focus on a greater variety of animals, environments, and assessors to address further validation of the method.

Simulating grazing beef and sheep systems

CONTEXT

Ruminant livestock make an important contribution to global food security by converting feed that is unsuitable for human consumption into high value food protein, demand for which is currently increasing at an unprecedented rate because of increasing global population and income levels. Factors affecting production efficiency, product quality, and consumer acceptability, such as animal fertility, health and welfare, will ultimately define the sustainability of ruminant production systems. These more complex systems can be developed and analysed by using models that can predict system responses to environment and management.

OBJECTIVE

We present a framework that dynamically models, using a process-based and mechanistic approach, animal and grass growth, nutrient cycling and water redistribution in a soil profile taking into account the effects of animal genotype, climate, feed quality and quantity on livestock production, greenhouse gas emissions, water use and quality, and nutrient cycling in a grazing system.

METHODS

A component to estimate ruminant animal growth was developed and integrated with the existing components of the SPACSYS model. Intake of herbage and/or concentrates and partitioning of the energy and protein contained in consumed herbage and/or concentrates were simulated in the component. Simulated animal growth was validated using liveweight data from over 200 finishing beef cattle and 900 lambs collected from the North Wyke Farm Platform (NWFP) in southwest England, UK, between 2011 and 2018. Annual nitrous oxide (N₂O), ammonia, methane and carbon dioxide emissions from individual fields were simulated based on previous validated parameters.

RESULTS AND CONCLUSIONS

A series of statistical indicators demonstrated that the model could simulate liveweight gain of beef cattle and lamb. Simulated nitrogen (N) cycling estimated N input of 190 to 260 kg ha^-1, of which 37-61% was removed from the fields either as silage or animal intake, 15-26% was lost through surface runoff or lateral drainage and 1.14% was emitted to the atmosphere as N₂O. About 13% of the manure N applied to the NWFP and excreta N deposited at grazing was lost via ammonia volatilisation.

SIGNIFICANCE

The extended model has the potential to investigate the responses of the system on and consequences of a range of agronomic management and grazing strategies. However, modelling of multi-species swards needs to be validated including the dynamics of individual species in the swards, preferential selection by grazing animals and the impact on animal growth and nutrient flows.

Nutritional value of suckler beef from temperate pasture systems

The role of beef in human diets has been questioned over the last few decades, due largely to its typically high mass-based carbon footprint. However, recent advancements in sustainability literature challenge this paradigm based on the new theory that climate impacts of food commodities should be measured relative to their overall nutritional value rather than their nominal mass. This shift has opened a new opportunity for the global beef industry, and especially for pasture-based systems that can avoid food-feed competition for land and other resources, as beef is a nutritionally dense food. Nonetheless, the sector's true capability to supply a wide range of nutrients for humans, consistently across multiple systems under multiple weather patterns, has not been well-documented. Using whole-system datasets from the North Wyke Farm Platform in the South West of England, we investigated the nutritional value of beef produced from the three most common pasture systems in temperate regions: permanent pasture (PP), grass and white clover (GWC) and a short-term monoculture grass ley (MG). Beef produced from these three pasture systems was analysed for key nutrients (fatty acids, minerals and vitamin E) over three production cycles (2015-2017) to determine potential differences between systems. Fatty acid, mineral and vitamin E profiles of the pasture and silage fed to each group were also assessed, with subtle differences between pastures reported. For beef, subtle differences were also observed between systems, with GWC having higher omega-6 polyunsaturated fatty acid (PUFA) concentrations than PP and MG. However, the overall nutritional quality of beef was found to be largely comparable across all systems, suggesting that temperate pasture-based beef can be classified as a single commodity in future sustainability assessments, regardless of specific sward types. A 100 g serving of temperate pasture-based beef was found to be a high source (>20% recommended daily intake: RDI) of protein, monounsaturated fatty acids, saturated fatty acids, vitamins - B2, B3, B12 and minerals - Fe, P, Zn; a good source (10-19% RDI) of vitamin - B6 and mineral - K; and a complementary source (5-9% RDI) of omega-3 PUFA, vitamin - B9 and minerals - Cu, Mg, Se. The nutritional value of a food item should be used in defining its environmental cost (e.g. carbon footprint) to make fair comparisons across different food groups (e.g. protein sources). Here, we showed that pasture-based beef had a nutrient indexed carbon footprint of between 0.19 and 0.23 Kg CO2-eq/1% RDI of key nutrients.

Data to identify key drivers of animal growth and carcass quality for temperate lowland sheep production systems

With the growing demand for animal-sourced foods and a serious concern over climate impacts associated with livestock farming, the sheep industry worldwide faces the formidable challenge of increasing the overall product supply while improving its resource use efficiency. As an evidence base for research to identify key drivers behind animal growth and carcass quality, longitudinal matched data of 741 ewes and 2978 lambs were collected at the North Wyke Farm Platform, a farm-scale grazing trial in Devon, UK, between 2011 and 2019. A subset of these data was subsequently analysed in a study to assess the feasibility of using a lamb's early-life liveweight as a predictor of carcass quality [1]. The data also have the potential to offer insight into key performance indicators (KPIs) for the sheep industry, or what variables farmers should measure and target to increase profitability.

Using a lamb's early-life liveweight as a predictor of carcass quality

The commercial value of lamb carcasses is primarily determined by their weight and quality, with the latter commonly quantified according to muscle coverage and fat depth. The ability to predict these quality scores early in the season could be of substantial value to sheep producers, as this would enable tailored flock management strategies for different groups of animals. Existing methods of carcass quality prediction, however, require either expensive equipment or information immediately before slaughter, leaving them unsuitable as a decision support tool for small to medium-scale enterprises. Using seven-year high-resolution data from the North Wyke Farm Platform, a system-scale grazing trial in Devon, UK, this paper investigates the feasibility of using a lamb's early-life liveweight to predict the carcass quality realised when the animal reaches the target weight. The results of multinomial regression models showed that lambs which were heavier at weaning, at 13 weeks of age, were significantly more likely to have leaner and more muscular carcasses. An economic analysis confirmed that these animals produced significantly more valuable carcasses at slaughter, even after accounting for seasonal variation in lamb price that often favours early finishers. As the majority of heavier-weaned lambs leave the flock before lighter-weaned lambs, an increase in the average weaning weight could also lead to greater pasture availability for ewes in the latter stage of the current season, and thus an enhanced ewe condition and fertility for the next season. All information combined, therefore, a stronger focus on ewes' nutrition before and during lactation was identified as a key to increase system-wide profitability.

Insights into Pasteurellaceae carriage dynamics in the nasal passages of healthy beef calves

We investigated three bovine respiratory pathobionts in healthy cattle using qPCR optimised and validated to quantify Histophilus somni, Mannheimia haemolytica and Pasteurella multocida over a wide dynamic range. A longitudinal study was conducted to investigate the carriage and density of these bacteria in the nasal passages of healthy beef calves (N = 60) housed over winter in an experimental farm setting. The three pathobiont species exhibited remarkably different carriage rates and density profiles. At housing, high carriage rates were observed for P. multocida (95%), and H. somni (75%), while fewer calves were positive for M. haemolytica (13%). Carriage rates for all three bacterial species declined over the 75-day study, but not all individuals became colonised despite sharing of environment and airspace. Colonisation patterns ranged from continuous to intermittent and were different among pathobiont species. Interval-censored exponential survival models estimated the median duration of H. somni and P. multocida carriage at 14.8 (CI_95%: 10.6–20.9) and 55.5 (CI_95%: 43.3–71.3) days respectively, and found higher density P. multocida carriage was associated with slower clearance (p = 0.036). This work offers insights into the dynamics of pathobiont carriage and provides a potential platform for further data collection and modelling studies.

Survey of husbandry and health on UK commercial dairy goat farms

Published research relevant to the UK dairy goat industry is scarce. Current practices and concerns within the UK dairy goat industry must be better understood if research is to have optimal value. A postal survey was conducted of the farmer membership of the Milking Goat Association as a first step in addressing gaps in knowledge. Questions were asked about husbandry practices, farmer observations of their goats and their priorities for further research. Seventy-three per cent of Milking Goat Association members responded, representing 38 per cent of commercial dairy goat farms and 53 per cent of the commercial dairy goat population in England and Wales. Findings were comprehensive and showed extensive variation in farm practices. Farmers reported pneumonia and scours (diarrhoea) as the most prevalent illnesses of their kids. Pneumonia, diarrhoea, failure to conceive and poor growth were the most prevalent observations of youngstock. Overly fat body condition, assisted kidding, failure to conceive and difficulty drying off were the most prevalent observations of adult milking goats. Farmers' top priorities for further research were kid health (79.5 per cent of farmers), Johne's disease (69.5 per cent of farmers), tuberculosis (59 per cent of farmers) and nutrition (47.7 per cent of farmers).

The potential of silage lactic acid bacteria-derived nano-selenium as a dietary supplement in sheep

Context Selenium (Se) is a trace element essential for cellular function in animals as a component of the enzymes glutathione peroxidase and iodothyronine-5-deiodinase. In many parts of Europe, Se is often deficient in livestock diets due to the low Se status of soil. Supplementation of diets with selenised yeast (predominately as seleno-methionine) or inorganic sodium selenite is common practice in most livestock systems, including ruminants. Lactic acid bacteria have been shown to convert inorganic Se into predominantly elemental nano-Se, which has been used recently in human pro-biotics as a less toxic form of Se. Therefore, silage lactic acid bacteria may provide a supplementation route of bioavailable nano-Se for ruminants. Aim Here, we report on the effect of feeding inoculated silage enriched with a supra-nutritional level of nano-Se (Selage) versus control inoculated silage (Silage) on the Se status of finishing lambs and their products, followed by a second study where blood parameters were investigated in ewes. Methods In the first study, 40 Charollais × Suffolk lambs (42 ± 1.7 kg) were paired according to weight and sex, then allocated to the two treatments for 8 or 10 weeks. Uptake of Se into wool was temporally assessed, as well as excretion of Se into faeces. Selenium concentrations in blood and muscle, carcass characteristics and meat quality are reported postmortem. In the second study, individually penned Suffolk × Mule ewes (n = 12; 76 ± 4.5 kg) were offered the same diets as in the first study. Blood parameters were assessed at the start and after 6 weeks, with intake and excretion into faeces and urine assessed temporally throughout the study. Key results In the first study, dry-matter (DM) intake was similar in both treatment groups, at 0.8 ± 0.03 kg/day, but Se concentrations of the diets were significantly different, resulting in intakes of ~0.14 and 1.60 mg/day on the Silage and Selage diets, respectively. This was reflected in higher Se concentrations in faeces (0.4 vs 2.0 mg/kg DM; P &lt; 0.001), wool (0.11 vs 0.25 mg/kg DM; P &lt; 0.001), blood (0.19 vs 0.46 mg/L; P &lt; 0.001) and muscle (0.31 vs 0.41 mg/kg: P &lt; 0.01) on the Selage than on the Silage diet. Colour (chroma) shelf life of the meat was significantly higher on the Selage treatment (8.05 vs 9.2 days; P &lt; 0.05). In the second trial, for ewes fed Selage, blood seleno-methionine increased from 0.21 to 0.25 mg/L and seleno-cysteine from 0.25 to 0.35 mg/L after 6 weeks on the treatment, whereas there was no change in ewes fed Silage. Glutathione peroxidase increased, whereas haematocrit, haemoglobin and platelet count were decreased across time during the study, but there was no difference between the treatments. Conclusions Nano-Se provided by the Selage treatment was shown to be available to sheep and improve shelf life, with no adverse haematological effects. Implications There is potential to use silage inoculants to provide bioavailable Se to ruminants. Further research is required to determine the most appropriate dose for animal performance and product quality.

Nitrogen and fatty acid rumen metabolism in cattle offered high or low polyphenol oxidase red clover silage

Polyphenol oxidase (PPO) in red clover (RC) has been shown to reduce both lipolysis and proteolysis in silo and implicated (in vitro) in the rumen. However, all in vivo comparisons have compared RC with other forages, typically with lower levels of PPO, which brings in other confounding factors as to the cause for the greater protection of dietary nitrogen (N) and C18 polyunsaturated fatty acids (PUFA) on RC silage. This study compared two RC silages which when ensiled had contrasting PPO activities (RC+ and RC-) against a control of perennial ryegrass silage (PRG) to ascertain the effect of PPO activity on dietary N digestibility and PUFA biohydrogenation. Two studies were performed the first to investigate rumen and duodenal flow with six Hereford×Friesian steers, prepared with rumen and duodenal cannulae, and the second investigating whole tract N balance using six Holstein-Friesian non-lactating dairy cows. All diets were offered at a restricted level based on animal live weight with each experiment consisting of two 3×3 Latin squares using big bale silages ensiled in 2010 and 2011, respectively. For the first experiment digesta flow at the duodenum was estimated using a dual-phase marker system with ytterbium acetate and chromium ethylenediaminetetraacetic acid as particulate and liquid phase markers, respectively. Total N intake was higher on the RC silages in both experiments and higher on RC- than RC+. Rumen ammonia-N reflected intake with ammonia-N per unit of N intake lower on RC+ than RC-. Microbial N duodenal flow was comparable across all silage diets with non-microbial N higher on RC than the PRG with no difference between RC+ and RC-, even when reported on a N intake basis. C18 PUFA biohydrogenation was lower on RC silage diets than PRG but with no difference between RC+ and RC-. The N balance trial showed a greater retention of N on RC+ over RC-; however, this response is likely related to the difference in N intake over any PPO driven protection. The lack of difference between RC silages, despite contrasting levels of PPO, may reflect a similar level of protein-bound-phenol complexing determined in each RC silage. Previously this complexing has been associated with PPOs protection mechanism; however, this study has shown that protection is not related to total PPO activity.

Roles of instrumented farm-scale trials in trade-off assessments of pasture-based ruminant production systems

For livestock production systems to play a positive role in global food security, the balance between their benefits and disbenefits to society must be appropriately managed. Based on the evidence provided by field-scale randomised controlled trials around the world, this debate has traditionally centred on the concept of economic-environmental trade-offs, of which existence is theoretically assured when resource allocation is perfect on the farm. Recent research conducted on commercial farms indicates, however, that the economic-environmental nexus is not nearly as straightforward in the real world, with environmental performances of enterprises often positively correlated with their economic profitability. Using high-resolution primary data from the North Wyke Farm Platform, an intensively instrumented farm-scale ruminant research facility located in southwest United Kingdom, this paper proposes a novel, information-driven approach to carry out comprehensive assessments of economic-environmental trade-offs inherent within pasture-based cattle and sheep production systems. The results of a data-mining exercise suggest that a potentially systematic interaction exists between 'soil health', ecological surroundings and livestock grazing, whereby a higher level of soil organic carbon (SOC) stock is associated with a better animal performance and less nutrient losses into watercourses, and a higher stocking density with greater botanical diversity and elevated SOC. We contend that a combination of farming system-wide trials and environmental instrumentation provides an ideal setting for enrolling scientifically sound and biologically informative metrics for agricultural sustainability, through which agricultural producers could obtain guidance to manage soils, water, pasture and livestock in an economically and environmentally acceptable manner. Priority areas for future farm-scale research to ensure long-term sustainability are also discussed.

Data to calculate emissions intensity for individual beef cattle reared on pasture-based production systems

With increasing concern about environmental burdens originating from livestock production, the importance of farming system evaluation has never been greater. In order to form a basis for trade-off analysis of pasture-based cattle production systems, liveweight data from 90 Charolais × Hereford-Friesian calves were collected at a high temporal resolution at the North Wyke Farm Platform (NWFP) in Devon, UK. These data were then applied to the Intergovernmental Panel on Climate Change (IPCC) modelling framework to estimate on-farm methane emissions under three different pasture management strategies, completing a foreground dataset required to calculate emissions intensity of individual beef cattle.

The North Wyke Farm Platform: effect of temperate grassland farming systems on soil moisture contents, runoff and associated water quality dynamics

The North Wyke Farm Platform was established as a United Kingdom national capability for collaborative research, training and knowledge exchange in agro-environmental sciences. Its remit is to research agricultural productivity and ecosystem responses to different management practices for beef and sheep production in lowland grasslands. A system based on permanent pasture was implemented on three 21-ha farmlets to obtain baseline data on hydrology, nutrient cycling and productivity for 2 years. Since then two farmlets have been modified by either (i) planned reseeding with grasses that have been bred for enhanced sugar content or deep-rooting traits or (ii) sowing grass and legume mixtures to reduce nitrogen fertilizer inputs. The quantities of nutrients that enter, cycle within and leave the farmlets were evaluated with data recorded from sensor technologies coupled with more traditional field study methods. We demonstrate the potential of the farm platform approach with a case study in which we investigate the effects of the weather, field topography and farm management activity on surface runoff and associated pollutant or nutrient loss from soil. We have the opportunity to do a full nutrient cycling analysis, taking account of nutrient transformations in soil, and flows to water and losses to air. The NWFP monitoring system is unique in both scale and scope for a managed land-based capability that brings together several technologies that allow the effect of temperate grassland farming systems on soil moisture levels, runoff and associated water quality dynamics to be studied in detail.

The effect of high polyphenol oxidase grass silage on metabolism of polyunsaturated fatty acids and nitrogen across the rumen of beef steers

Polyphenol oxidase (PPO) activity in red clover (Trifolium pratense) has been reported to reduce both proteolysis and lipolysis, resulting in greater N use efficiency and protection of PUFA across the rumen. Although high levels of PPO have been reported in grasses such as cocksfoot (orchard grass; Dactylis glomerata), no in vivo research has determined whether grass PPO elicits the same response as red clover PPO. To test the hypothesis that silage ensiled from grass with high levels of PPO protects N and PUFA across the rumen, 6 steers with ruminal and duodenal cannulas were offered cocksfoot silage (CO; high-PPO grass), perennial ryegrass silage (PR; Lolium perenne; low-PPO grass), or red clover silage (RC; high-PPO control) at 16 g DM/kg BW daily with the experiment consisting of two 3 × 3 Latin squares with 21-d periods, consisting of 12 d of diet adaptation, 6 d of duodenal marker infusion, 2 d of duodenal sampling, and 1 d of ruminal sampling. All silages were well preserved, with DM of 34.4, 55.3, and 45.4% for CO, PR, and RC. Activity of PPO in silages was low due to deactivation but was greater in CO than either PR or RC (0.15 vs. 0.05 and 0.08 μkatal/g DM). Protein-bound phenol (mg/g DM) as a measure of the degree of oxidation and an indication of PPO protection was greatest for RC (15.9) but comparable for PR (10.1) and CO (12.2). Biohydrogenation of C18 PUFA was significantly lower on RC compared to the 2 grass silages with CO greater than PR. Despite lower levels of total fatty acid intake and subsequent duodenal flow, CO resulted in greater levels of phytanic acid and total branched and odd chain fatty acids in duodenal digesta than RC or PR. Ruminal ammonia concentration was greatest for RC, with no difference between the grasses. Duodenal flow of microbial N and efficiency of microbial protein synthesis were lowest for CO and comparable for RC and PR. The CO (high-grass PPO) did not result in elevated levels of C18 PUFA escaping the rumen or improve efficiency of total N transfer through the rumen compared to PR. The RC resulted in a greater flow of N and nonmicrobial N to the duodenum than the 2 grasses with PR greater than CO.

Effect of replacing grass silage with red clover silage on nutrient digestion, nitrogen metabolism, and milk fat composition in lactating cows fed diets containing a 60:40 forage-to-concentrate ratio

Diets based on red clover silage (RCS) typically increase the concentration of polyunsaturated fatty acids (PUFA) in ruminant meat and milk and lower the efficiency of N utilization compared with grass silages (GS). Four multiparous Finnish Ayrshire cows (108 d postpartum) fitted with rumen cannulas were used in a 4 × 4 Latin square design with 21-d periods to evaluate the effect of incremental replacement of GS with RCS on milk production, nutrient digestion, whole-body N metabolism, and milk fatty acid composition. Treatments comprised total mixed rations offered ad libitum, containing 600 g of forage/kg of diet dry matter (DM), with RCS replacing GS in ratios of 0:100, 33:67, 67:33, and 100:0 on a DM basis. Intake of DM and milk yield tended to be higher when RCS and GS were offered as a mixture than when fed alone. Forage species had no influence on the concentration or secretion of total milk fat, whereas replacing GS with RCS tended to decrease milk protein concentration and yield. Substitution of GS with RCS decreased linearly whole-tract apparent organic matter, fiber, and N digestion. Forage species had no effect on total nonammonia N at the omasum, whereas the flow of most AA at the omasum was higher for diets based on a mixture of forages. Replacing GS with RCS progressively lowered protein degradation in the rumen, increased linearly ruminal escape of dietary protein, and decreased linearly microbial protein synthesis. Incremental inclusion of RCS in the diet tended to lower whole-body N balance, increased linearly the proportion of dietary N excreted in feces and urine, and decreased linearly the utilization of dietary N for milk protein synthesis. Furthermore, replacing GS with RCS decreased linearly milk fat 4:0 to 8:0, 14:0, and 16:0 concentrations and increased linearly 18:2n-6 and 18:3n-3 concentrations, in the absence of changes in cis-9 18:1, cis-9, trans-11 18:2, or total trans fatty acid concentration. Inclusion of RCS in the diet progressively increased the apparent transfer of 18-carbon PUFA from the diet into milk, but had no effect on the amount of 18:2n-6 or 18:3n-3 at the omasum recovered in milk. In conclusion, forage species modified ruminal N metabolism, the flow of AA at the omasum, and whole-body N partitioning. A lower efficiency of N utilization for milk protein synthesis with RCS relative to GS was associated with decreased availability of AA for absorption, with some evidence of an imbalance in the supply of AA relative to requirements. Higher enrichment of PUFA in milk for diets based on RCS was related to an increased supply for absorption, with no indication that forage species substantially altered PUFA bioavailability.

The development of chlorophyll-based markers in poultry diets to aid detection of fluorescent fecal contamination

Incidents of foodborne illness associated with consuming undercooked or raw chicken are often linked to 2 causative pathogens: Campylobacter spp. or Salmonella spp. Numerous studies have shown that contamination of carcasses results when pathogens are transferred from the intestinal tract or fecal material on feet and feathers to the dressed carcass. Ultraviolet spectral imaging to detect surface fecal and ingesta contamination on poultry carcasses may provide a solution to aid detection. However, poultry diets do not provide sufficiently high levels of natural fluorophores for this system to be reliable. This study investigated the potential of chlorophyll-based feed additives to improve fluorescence of the feces and narrow the excitation and emission wavelengths to aid in the development of a simple visualization system. Twenty-four hens (Gallus gallus domesticus) were allocated at random to 1 of 4 treatments: control (C, no marker), Zn chlorophyllin, Mg chlorophyllin, or Fe chlorophyllin. All markers were incorporated into mash before pelleting at a rate of 1 g/kg of DM. The experiment consisted of two 4 × 4 Latin squares with each period consisting of 2 wk. Feces were collected and extracted in acetone:water (50:50; vol/vol) with fecal fluorescence emission spectra determined using a Jasco FP-6200 Spectrofluorometer with excitation at 382 nm. A main peak evolved at wavelength 670 nm with the total area under the peak used as fluorescence intensity. Following 7 d of marker supplementation, the 3 markers improved the fluorescence intensity by ×14.8, 12.8, and 6.9 for Fe, Mg, and Zn chlorophyllin, respectively, compared with the control. The addition of feces containing Mg chlorophyllin to chicken carcass increased detection of the feces compared with feces with no marker. Also, due to the plain background of chicken skin, a simple image at 675 nm with appropriate thresholds would allow detection of contaminated carcasses at the current slaughter line speed without the need of expensive hyperspectral imaging.

Fatty acid oxidation products ('green odour') released from perennial ryegrass following biotic and abiotic stress, potentially have antimicrobial properties against the rumen microbiota resulting in decreased biohydrogenation

AIMS

In this experiment, we investigated the effect of 'green odour' products typical of those released from fresh forage postabiotic and biotic stresses on the rumen microbiota and lipid metabolism.

METHODS AND RESULTS

Hydroperoxyoctadecatrienoic acid (HP), a combination of salicylic and jasmonic acid (T), and a combination of both (HPT) were incubated in vitro in the presence of freeze-dried ground silage and rumen fluid, under rumen-like conditions. 16S rRNA (16S cDNA) HaeIII-based terminal restriction fragment length polymorphism-based (T-RFLP) dendrograms, canonical analysis of principal coordinates graphs, peak number and Shanon-Weiner diversity indices show that HP, T and HPT likely had antimicrobial effects on the microbiota compared to control incubations. Following 6 h of in vitro incubation, 15.3% of 18:3n-3 and 4.4% of 18:2n-6 was biohydrogenated in control incubations, compared with 1.3, 9.4 and 8.3% of 18:3n-3 for HP, T and HPT treatments, respectively, with negligible 18:2n-6 biohydrogenation seen. T-RFLP peaks lost due to application of HP, T and HPT likely belonged to as yet uncultured bacteria within numerous genera.

CONCLUSIONS

Hydroperoxyoctadecatrienoic acid, T and HPT released due to plant stress potentially have an antimicrobial effect on the rumen microbiota, which may explain the decreased biohydrogenation in vitro.

SIGNIFICANCE AND IMPACT OF THE STUDY

These data suggest that these volatile chemicals may be responsible for the higher summer n-3 content of bovine milk.

Comparison of ryegrass and red clover on the fermentation pattern, microbial community and efficiency of diet utilisation in the rumen simulation technique (Rusitec)

An in vitro experiment was designed to investigate the effects of incubating two forages with a different energy/nitrogen (N) ratio [perennial ryegrass (GR) vs red clover (RC)] on the efficiency of N utilisation by rumen microbes. Second-cut forages were incubated in artificial rumen fermenters (n = 8). Ryegrass represented a supply of quickly available N and energy for the rumen microorganism which led to a rapid fermentation and bacterial growth 2–4 h after feeding. Ryegrass also promoted greater numbers of anaerobic fungi, methanogens and cellulolytic bacteria, which tended to increase neutral detergent fibre disappearance, gas production, volatile fatty acid and methane production than observed using RC diets. On the contrary, RC provided slowly degradable N and energy, which led to a relatively slow bacterial growth (4–8 h after feeding). In terms of diet utilisation, RC diets promoted a higher N outflow (mainly as undegraded-N) and efficiency of microbial protein synthesis per organic matter disappeared. Even so, microbial protein yield was similar on both diets indicating a better N capture by microorganisms fed GR than in those fed RC diets. The use of 15N-labelled forages demonstrated that this high ammonia incorporation by bacteria-fed GR occurred mainly during the early fermentation coinciding with the highest bacterial growth. In conclusion, this experiment demonstrated that the use of isotopic labelling combined with molecular techniques provided an insight into forage utilisation by the rumen microbes; GR diets led to a better efficiency of N utilisation compared with RC; moreover the lower N outflow on GR diets may be partially compensated for a higher proportion of microbial protein leaving the system and the greater volatile fatty acid production. These findings seem to indicate that RC grazing may increase the N pollution compared with GR without substantial improvements on the rumen function, however this must be confirmed in vivo.

Beef, chicken and lamb fatty acid analysis--a simplified direct bimethylation procedure using freeze-dried material

When fractionation of meat lipids is not required, procedures such as saponification can be used to extract total fatty acids, reducing reliance on toxic organic compounds. However, saponification of muscle fatty acids is laborious, and requires extended heating times, and a second methylation step to convert the extracted fatty acids to fatty acid methyl esters prior to gas chromatography. Therefore the development of a more rapid direct methylation procedure would be of merit. The use of freeze-dried material for analysis is common and allows for greater homogenisation of the sample. The present study investigated the potential of using freeze-dried muscle samples and a direct bimethylation to analyse total fatty acids of meat (beef, chicken and lamb) in comparison with a saponification procedure followed by bimethylation. Both methods compared favourably for all major fatty acids measured. There was a minor difference in relation to the C18:1 trans 10 isomer with a greater (P<0.05) recovery with saponification. However, numerically the difference was small and likely as a result of approaching the limits of isomer identification by single column gas chromatography. Differences (P<0.001) between species were found for all fatty acids measured with no interaction effects. The described technique offers a simplified, quick and reliable alternative to saponification to analyse total fatty acids from muscle samples.

Assessment of dietary ratios of red clover and grass silages on milk production and milk quality in dairy cows

Twenty-four multiparous Holstein-Friesian dairy cows were used in a replicated 4 x 4 Latin square changeover design experiment to test the effects of changing from ryegrass (Lolium perenne) silage to red clover (Trifolium pratense) silage in graded proportions on feed intakes, milk production, milk organoleptic qualities, and whole-body nitrogen partitioning. Four dietary treatments, comprising ad libitum access to 1 of 4 forage mixtures plus a standard allowance of 4 kg/d dairy concentrates, were offered. The 4 forage mixtures were, on a dry matter (DM) basis: 1) 100% grass silage, 2) 66% grass silage: 34% red clover silage, 3) 34% grass silage: 66% red clover silage, and 4) 100% red clover silage. In each of 4 experimental periods, there were 21 d for adaptation to diets and 7 d for measurements. There was an increase in both DM intakes and milk yields as the proportion of red clover in the diet increased. However, the increase in milk yield was not as great as the increase in DM intake, so that the efficiency of milk production, in terms of yield (kg) of milk per kg of DM intake, decreased. The concentrations of protein, milk fat, and the shorter chain saturated fatty acids decreased, whereas C18 polyunsaturated fatty acids (PUFA) and long-chain PUFA (C20+) increased as the proportion of red clover in the diet increased. There was little effect of dietary treatment on the organoleptic qualities of milk as assessed by taste panel analysis. There were no effects on the aroma of milk, on aftertaste, or overall liking of the milk. Milk was thicker and creamier in color when cows were fed grass silage compared with red clover silage. The flavor of milk was largely unaffected by dietary treatment. In conclusion, increasing the proportion of red clover in the diet of dairy cows increased feed intakes and milk yields, decreased the concentration of fat and protein in milk, increased PUFA for healthiness, and had little effect on milk organoleptic characteristics.

A comparison between red clover silage and grass silage feeding on fatty acid composition, meat stability and sensory quality of the M. Longissimus muscle of dairy cull cows

Sixteen Holstein-Friesian dairy cull cows were offered either ad libitum grass (G) or red clover (RC) silage for 12 weeks. Dry matter (DM), total nitrogen, and pH was higher for the RC than the G silage and organic matter, water-soluble carbohydrate, fibre, DM digestibility, ammonia-N, vitamin E and acetic acid higher for the G silage (P<0.05). Fatty acid compositions were different (P<0.05) with G silage having higher levels of C12:0, C14:0, C16:1cis-9, C18:3n-3 and total fatty acids whereas RC had higher levels of C18:0, C18:2n-6 and C20:0. Daily liveweight gain was high and not different between groups (average 1.22 kg/d). Body condition score and back fat thickness at slaughter along with conformation, fat grade and slaughter weight were not different between groups. Animals offered the G silage produced larger M. longissimus length (P<0.01) and a trend (P<0.1) for width. RC fed animals had higher proportions of C18:3n-3 (P<0.001), total n-3 fatty acids (P<0.01) and total PUFA compared to animals offered the G silage despite greater intakes of these fatty acids on G (P<0.001). Vitamin E concentration and stability of aged meat during simulated retail display, were lower (P<0.05) from animals offered RC than animals offered G. Shear force and ultimate pH, however were not different in steaks and sensory attributes were similar; the only difference being a higher score (P<0.01) for fishy in the RC steaks. The results suggest that feeding high DMD silage to dairy cull cows can result in a high standard of finish and liveweight gain. Furthermore RC silage as opposed to G silage can increase the beneficial fatty acid profile of the resultant meat.

Effects of Fatty Acid Oxidation Products (Green Odor) on Rumen Bacterial Populations and Lipid Metabolism In Vitro

This study investigated the effects of green odor fatty acid oxidation products (FAOP) from cut grass on lipid metabolism and microbial ecology using in vitro incubations of rumen microorganisms. These compounds have antimicrobial roles in plant defense, and we hypothesized that they may influence rumen lipid metabolism. Further, they may partially explain the higher levels of conjugated linoleic acid cis-9, trans-11 in milk from cows grazing pasture. The first of 2 batch culture experiments screened 6 FAOP (1 hydroperoxide, 3 aldehydes, 1 ketone, and 1 alcohol) for effects on lipid profile, and in particular C(18) polyunsaturated fatty acid biohydrogenation. Experiment 2 used the most potent FAOP to determine effects of varying concentrations and identify relationships with effects on microbial ecology. Batch cultures contained anaerobic buffer, rumen liquor, and FAOP to a final concentration of 100 microM for experiment 1. Triplicates for each compound and controls (water addition) were incubated at 39 degrees C for 6 h. The hydroperoxide (1,2-dimethylethyl hydroperoxide, 1,2-DMEH) and the long chain aldehyde (trans-2 decenal) had the largest effects on lipid metabolism with significant increases in C(18:0) and C(18:1) trans and reductions in C(12:0), C(14:0), C(16:0), C(18:1) cis, C(18:2n-6), C(18:3n-3), C(20:0) and total branch and odd chain fatty acids compared with the control. This was associated with significantly higher biohydrogenation of C(18) polyunsaturated fatty acid. In experiment 2, 1,2-DMEH was incubated at 50, 100, and 200 microM for 2, 6, and 24 h. Increasing 1,2-DMEH concentration resulted in a significant linear increase in C(18:1) trans-10, trans-11, conjugated linoleic acid, and C(18:0) and a linear decrease in C(18:2n-6) and C(18:3n-3), although the scale of this response declined with time. Microbial profiling techniques showed that 1,2-DMEH at concentrations of 100 and 200 microM changed the microbial community from as early as 2 h after addition, though microbial biomass remained similar. These preliminary studies have shown that FAOP can alter fatty acid biohydrogenation in the rumen. This change was associated with changes in the microbial population that were detected through DNA and branched- and odd-chain fatty acid profiling approaches.

The effects of fish oil supplementation on rumen metabolism and the biohydrogenation of unsaturated fatty acids in beef steers given diets containing sunflower oil

Duodenally and ruminally fistulated steers were offered grass silage and one of three concentrates at a ratio of 60: 40 (forage: concentrate on a dry-matter basis) : F0, F1 or F4 at 14 g/kg live weight. The concentrates were designed to be iso-lipid and to provide the same amount of sunflower oil but increasing amounts of fish oil : 0, 1 and 4 g per 100 g, respectively. Ruminal characteristics were measured along with fatty acid intakes and duodenal flows to determine the effect of fish oil on : ruminal pH, ammonia-N concentration, volatile fatty acid (VFA) concentration and polyunsaturated fatty acid (PUFA) metabolism. Fish oil had no significant effect on ruminal pH, ammonia-N concentration or the molar proportions of the major VFA, although total VFA concentration was significantly reduced at the highest level of fish oil inclusion. Fish oil significantly increased the flow of long chain PUFA, total conjugated linoleic acid and vaccenic acid to the duodenum and decreased the flow of stearic acid. Biohydrogenation, as determined by the net loss of fatty acid between the mouth and duodenum, of oleic and linolenic acid was not affected by fish oil inclusion and averaged 0·64 and 0·92, respectively. There was a small increase in the biohydrogenation of linoleic acid with increasing fish oil from 0·89 to 0·92 (P< 0·01) on F0 and F4, respectively. Biohydrogenation of the long chain PUFA C20 : 5(n-3) and C22 : 6(n-3) increased from 0·49 and 0·74 to 0·79 and 0·86 (P< 0·01), respectively when fish oil in the concentrate increased from 1 to 4 g per 100 g. The net effect of fish oil on lipid metabolism appears to inhibit the transition of vaccenic acid to stearic acid in the rumen resulting in a build up of this intermediate in the biohydrogenation pathway of C18 PUFA.

Effect of forage: concentrate ratio on ruminal metabolism and duodenal flow of fatty acids in beef steers

The objective of this study was to determine the proportion of forage in the diet which would maximize duodenal flow of unsaturated fatty acids in beef steers supplemented with linseed oil. A second objective was to determine how diets differing in forage content, but equal in nitrogen (N), energy and lipid supply, would affect the duodenal flow of C18:1and conjugated linoleic acid (CLA) isomers. Eight Hereford×Friesian steers (533±13·6 kg), prepared with rumen and duodenal cannulae were offered one of four forage:concentrate (F:C) ratios: F80C20; F60C40; F40C60 and F20C80 on a dry-matter (DM) basis. All diets were offered at 0·013 body weight and designed to be isonitrogenous and isoenergetic with total lipid made up to 0·06 DM intake with linseed oil. The experimental design was a replicated incomplete 4×4 Latin square with three periods. Increasing the concentrate component in the diet from 0·20 to 0·60 reduced rumen pH from 6·58 to 6·37 and caused a small but significant shift in volatile fatty acid molar proportions, decreasing the non-glucogenic ratio. Rumen ammonia-nitrogen concentration was also significantly reduced with increasing concentrate, from 156·8 to 101·0 mg N per l on F80C20 and F20C80, respectively. Microbial nitrogen (MN) and the efficiency of microbial protein synthesis was significantly elevated as forage level decreased from 51·6 to 72·4 g/day and 17·2 to 27·3 g MN per kg organic matter apparently digested in the rumen, respectively for F80C20 and F20C80. Intake and duodenal flow of C18:1n-9 and C18:2n-6 were significantly higher with increasing concentrate level in the diet whereas C18:3n-3 intake and flow was not different, averaging 143·6 and 6·37 g/day, respectively. There were no differences in the flows of total C18:1transor CLA (47·7 and 1·79 g/day, respectively) across the diets. However, although not significantly different in duodenal flow there were trends (P<0·1) for an increasing proportion of trans-10 and a decreasing proportion oftrans-11 when increasing the concentrate in the diet. Biohydrogenation of C18:2n-6 decreased from 0·91 to 0·85 when increasing concentrate in the diet from 0·20 to 0·40 but further increases had no effect. F:C ratio had little effect on the flow of unsaturated fatty acids, C18:1transand CLA to the duodenum of beef steers, and this may relate to the ability of the rumen to buffer the large changes in concentrate intake.

Effects of high-sugar ryegrass silage and mixtures with red clover silage on ruminant digestion. 2. Lipids1

The experiment investigated the digestion of lipids from different forage silages in beef steers. Six Hereford x Friesian steers prepared with rumen and duodenal cannulas were given ad libitum access to a high-sugar grass silage, control grass silage, red clover silage, or mixtures of the red clover and each of the grass silages (50:50, DM basis). The experiment was conducted as an incomplete 5 x 5 Latin square, with an additional randomly repeated sequence. Total fatty acid and C18:3n-3 concentrations were greater (P < 0.05) for the high-sugar grass silage than the control grass silage or the red clover silage. Dry matter and total fatty acid intake were less (P < 0.05) for steers fed the control grass silage than for steers fed the other diets. Duodenal flow of C18:3n-3 was greater (P < 0.05), and flows of C18:0 and total C18:1 trans were less (P < 0.05), for the red clover silage compared with the 2 grass silage diets, with the mixtures intermediate. These results were supported by a reduction (P < 0.05) in biohydrogenation of C18:3n-3 for the red clover silage, with the mixtures again being intermediate. Flows of total branched- and odd-chain fatty acids were greater (P < 0.05) for the high-sugar grass silage diet, possibly as a result of greater microbial flow, because these fatty acids are associated with bacterial lipid. Duodenal flows of the chlorophyll metabolite, phytanic acid, were greater (P < 0.05) for animals fed the high-sugar grass silage treatments compared with the other treatments. These results confirm the potential for modifying the fatty acid composition of ruminant products by feeding red clover silage.

Effects of high-sugar ryegrass silage and mixtures with red clover silage on ruminant digestion. 1. In vitro and in vivo studies of nitrogen utilization1

Two experiments were carried out to determine the effects of feeding grass silages differing in their water-soluble carbohydrate content, with or without red clover silage, on the efficiency of nutrient use. High-sugar grass, control grass, and red clover were ensiled in laboratory silos for use in an in vitro experiment (Exp. 1). For an in vivo experiment (Exp. 2), the same forage types were baled and ensiled. All silages were well preserved; within experiments the grass silages had similar composition, except for greater (P < 0.05) water-soluble carbohydrate concentrations in the high-sugar than the control grass silage. In Exp. 1, high-sugar grass, control grass, and red clover silages were fed alone or as mixtures (30:70, 50:50, or 70:30 on a DM basis, respectively) of each grass with the red clover silage to a simulated rumen culture system. There were no significant differences in microbial N flow or efficiency of microbial protein synthesis between individual forages. However, the corresponding values for the 70:30 ratio of high-sugar grass:red clover silage were greater (P < 0.05) than for the red clover silage. The value for the efficiency of N use (g of microbial N/g of feed N) was greater (0.86; P < 0.05) for high-sugar grass silage than the control grass silage. In addition, the high-sugar grass:red clover silage mixtures all gave greater (P < 0.05) values for the efficiency of N use than red clover silage alone; this difference was not achieved with the control grass mixture. Experiment 2 was an incomplete Latin square design conducted with 6 Here-ford x Friesian steers (163 +/- 5.9 kg of BW) with rumen and duodenal cannulas fed the following 5 silage diets: high-sugar grass silage; control grass silage; high-sugar grass and red clover silage (50:50 DM basis); control grass and red clover silage (50:50 DM basis); and red clover silage. Rumen NH3-N concentration was lowest (P < 0.05) with the high-sugar grass silage. Microbial N flows to the duodenum and efficiency of microbial protein synthesis were greater (P < 0.05) for steers fed the high-sugar grass silage than for control grass and red clover silages, and mixing red clover with grass silages increased (P < 0.05) these values compared with red clover silage alone. In both experiments, the efficiency of incorporation of silage N into microbial N was more than 20% greater (P < 0.05) for high-sugar grass than for control grass silage. These data suggest that grass silage with high-sugar content provides a forage-based strategy for balancing N and energy supply and improving the efficiency of use of grass silage N in the rumen.

Forage breeding and management to increase the beneficial fatty acid content of ruminant products

The declining consumption of ruminant products has been partly associated with their high proportion (but not necessarily content) of saturated fatty acids. Recent studies have focused on the less prominent fact that they are also important sources of beneficial fatty acids, including n-3 fatty acids and conjugated linoleic acids. alpha-Linolenic acid (18 : 3n-3) is of particular interest because it also contributes to improved flavour of beef and lamb. Many recent studies showed large effects of special concentrates on levels of fatty acids in milk and meat. However, the 'rumen protection' treatments, needed to ensure a worthwhile level of fatty acid in products, are expensive. Herbage lipids are the cheapest and safest source of these fatty acids and so breeding to increase delivery of fatty acids from plants into ruminant products is an important long-term strategy. Plant lipids usually contain high levels of polyunsaturated fatty acids, particularly 18 : 2n-6 and 18 : 3n-3 which are the precursors of beneficial fatty acids. Whilst some plants are particularly rich in individual fatty acids (e.g. 18 : 3n-3 in linseed), there are also useful levels in grass and clover (Trifolium Spp.). Levels of fatty acids in forages in relation to species and varieties are considered, as well as management and conservation methods. Relationships between levels of fatty acids and existing traits and genetic markers are identified. The effects of forage treatments on the fatty acid content of ruminant products are reviewed. The higher levels of polyunsaturated fatty acids in milk from cows fed clover silages show that the level of fatty acids in herbage is not the only factor affecting levels of fatty acids in ruminant products. Further effort is needed to characterise susceptibility of unsaturated fatty acids to oxidative loss during field wilting and biohydrogenation losses in the rumen, and the relative importance of plant and microbial processes in these losses. The pathways of lipolysis and lipid oxidation are reviewed and other plant factors which offer potential to breed for reduced losses are considered.
