Abstract
Worldwide, cancer is a great cause of death and a public health issue. Cancer has been the leading cause of death in developing nations for many years. Cancers are typically treated with surgery, immunotherapy, chemotherapy, and radiation therapies. However, these techniques have some undesirable side effects, including neurological illness, high toxicity levels, discomfort, and mental stress. Biologically active compounds discovered in mushrooms may be utilized to reduce ill effects and increase the efficacy of the current therapies. Mushrooms have efficient therapeutic activities such as antimicrobial, antitumor, antidiabetic, anticancer, and antioxidant activity. Bioactive compounds like polysaccharides, terpenoids, β-glucan, steroids, polyphenols, flavonoids, proteins, and peptides have precisely well-recognized anticancer activity. In this review paper, we described the biomedical activities of the mushroom against various cancers. The immune-modulating components in mushrooms activate NK cells and macrophages to target cancer cells. Due to immunomodulatory properties of mushroom-derived bioactive compounds in cancer therapy to highlight the need for further research in this area further studies needs to validate in clinical samples.

Abstract
Proteins are essential biomolecules that perform critical roles in various biological processes, such as building and repairing tissues, transporting substances, signaling hormones, and providing protection. Traditional methods of meeting human protein needs, primarily through animal farming, have significant negative impacts on the environment. In many low-income countries, protein requirements often go unmet due to the high costs associated with animal farming. Additionally, the rise in food allergies has become a serious health concern, highlighting the need for alternative protein sources that cater to individuals sensitive to traditional proteins. As the world's population is projected to reach around nine billion by 2050, there are growing concerns that conventional protein sources may not be sufficient to meet the increasing demand. This situation has led to heightened interest in alternative protein sources that can fulfill nutritional needs without the drawbacks associated with traditional meat consumption. This systematic review aims to explore non-traditional dietary protein sources, focusing on their nutritional and some techno-functional characteristics reported. These sources may include a variety of options such as animals (both vertebrates and invertebrates), plants (like leaves, seeds, and legumes), algae, fungi, and by-products from the food industry.

Abstract
It has been well documented that a number of polysaccharides with potent free-radical scavenging capability possess notable anti-fatigue activity. Interestingly, recent evidence also suggested mixed polysaccharides derived from multiple sources may yield augmented bioactivities compared to the polysaccharides from a single source. Therefore, in the current study, we investigated the anti-oxidant and anti-fatigue activities of a blend of polysaccharides isolated from three mushrooms. The optimal ratio of Pleurotus eryngii polysaccharide, Agrocybe aegerita polysaccharide, and Agaricus bisporus polysaccharide was firstly screened out by in vitro antioxidant assays with a Z-score comprehensive evaluation method. Then, the fatigue-reducing effects of the polysaccharide mixture at optimal ratio (1:2:2) were studied in mice. The results showed that the polysaccharide mixture exerted desirable fatigue-reducing effect evidence by significantly extended exhaustion time in the weight-loaded swimming assay (from 9.45 ± 3.06 min to 27.65 ± 19.84 min). Moreover, the observed fatigue-reducing effect may be attributed to its capacity to decrease fatigue-related metabolites, increase muscle glycogen reserves, and regulate energy metabolism-related transcripts in muscle tissue. Taken together, these findings highlighted the potential application of blending polysaccharides from multiple mushroom sources in mitigating fatigue.

Abstract
This study reviews the feasibility of using cultivated mushrooms in the development of salt-reduced meat products. For this purpose, it is important to know the role of salt in meat products in order to develop viable strategies for its substitution. In addition, mushroom types and properties (composition, nutritional value, umami content, etc.) and examples of successful application as salt substitutes in meat products are addressed. Salt has important roles in meat product processing, mainly affecting its technological, antimicrobial, and sensory properties. Therefore, the different strategies that have been studied (meat product reformulation and technological advances) with the aim of reducing its content have to address these effects. The application of mushrooms as a salt substitute shows several advantages mainly related to the fact that mushrooms are a natural ingredient with a very healthy nutritional composition (rich in protein and dietary fiber but low in fat and sodium) and, from an economic and sustainable cultivation perspective, aligns well with current trends in food production and consumption. Salt substitutions of 50% have been achieved, mainly in fresh meat products (hamburgers) and heat-treated meat products (sausages, pâté, roast meat, etc.), with minimal physicochemical and sensory modifications of the final product. The meat industry could benefit from incorporating cultivated mushrooms as a salt-reducing ingredient, especially in the development of reduced salt meat products with a quality comparable to or superior to traditional products. The optimization of processes for their integration in the formulation of meat products should be the trend to ensure their viability.

Abstract
Spawn aging poses a substantial challenge to the Agaricus bisporus industry. This study focuses on the role of mitochondrial dysfunction in the aging process of A. bisporus spawn. We conducted a comprehensive comparative transcriptome analysis to elucidate the molecular mechanisms underlying A. bisporus spawn aging. A total of 1620 genes with significant expression changes between the normal and aged spawn were identified, including 917 up-regulated genes and 703 down-regulated genes. Our results revealed a notable down-regulation of genes involved in carbohydrate metabolism, mitochondrial energy metabolism, reactive oxygen species (ROS) scavenging, repair mechanisms for oxidative stress-induced damage, fatty acid β-oxidation, and amino acid degradation in aged A. bisporus spawn. Additionally, we observed a decreased expression of genes involved in critical signal transduction pathways associated with mitochondrial function in aged mycelium as well as genes responsible for maintaining mitochondrial stability. The up-regulated genes in aged spawn mainly affect mitochondrial fission and programmed cell death, impacting mitochondrial function. Overall, the present study first provides evidence for the pivotal role of mitochondrial dysfunction in the aging process of A. bisporus spawn and contributes to the development of targeted strategies to enhance mitochondrial function, mitigate spawn aging, and improve the yield and quality of A. bisporus cultivation.

Abstract
OBJECTIVE OF THE REVIEW Edible mushrooms are found to be foods with high nutritional content, which have been shown to be more widely used ingredients in cooking in traditional dishes. This article explores the rising trend in the use of edible mushrooms in new formulations of functional foods, taking advantage of their properties and benefits in human health. RECENT FINDINGS The use of mushrooms as an ingredient in new or modified food formulations is driven by solid evidence of their nutritional content and bioactivity. Mushrooms stand out for their high biological value and high bioavailability protein content, as well as dietary fiber that promotes improved digestive health. Other micronutrients present are B vitamins and minerals such as selenium, phosphorus and potassium. Mushroom flour has been the prevalent mode of addition to food formulations. This type of format aims to preserve and concentrate the nutritional content of mushrooms and has achieved nutritional enrichment of products. The use of this food has also been explored to improve technological qualities in food development, so it is intended to position itself as a natural additive. This review synthesizes data on the nutritional composition, bioactive properties, and physicochemical attributes of mushrooms, emphasizing their multifaceted contributions to modern food formulations. It advocates for further research to optimize mushroom application in diverse food products and to address practical challenges for seamless integration.

Abstract
Stems are a major by-product of mushroom production. This study optimizes the transformation of Agaricus bisporus stems (ABS) and Pleurotus ostreatus stems (POS) into flour. ABS are attached to the peat, so, the process was divided into two steps. First, four cleaning methods were tested for ABS: pre-drying, brushing, abrasive peeling, and immersion in chlorinated water and brushing. Abrasive peeling was the most effective, showing the lowest color difference (9.18), total aerobic count (3.48 log cfu/g), and the highest profitability (1 kg/h). In the second step, ABS and POS were dried using a freeze-dryer, a dehydrator, and an oven. Dehydration resulted in stems with a lower browning index (24.57 in ABS and 29.95 in POS) than the oven, and a smaller energy consumption than the freeze-dryer. Finally, three dehydration temperatures (40, 50, and 60 °C) were compared. Dehydration at 50 °C resulted in faster moisture loss (24 h) and similar phenolic compound concentrations (3.35 and 7.69 mg GAE/100g fresh ABS and POS, respectively) than at 40 °C (32 h in ABS and 28 h in POS). In conclusion, the transformation of ABS and POS into flours requires processes that influence their chemical composition, physicochemical characteristics, and the profitability of their production. In this project, the optimal process involved cleaning ABS through abrasive peeling and dehydrating both ABS and POS at 50 °C for 24 h.

Abstract
Oxidative stress can disrupt the body's ability to fight harmful free radicals, leading to premature aging and various health complications. This study investigated the antioxidant and anti-aging properties of four medicinal and edible mushrooms: Ganoderma lucidum, Hericium erinaceus, Pleurotus ostreatus, and Agaricus bisporus. The antioxidant activity of mushroom extracts was evaluated using (DPPH-ABTS-Reducing power). The anti-aging effects were assessed using Human Skin Fibroblasts (HSF) cells subjected to D-galactose-induced aging (30 g/L/72 h) and treated with mushroom extracts (0.03-0.25 mg/mL/72 h). The results demonstrated that all mushrooms have significant antioxidant and anti-aging properties, with low concentrations of extracts (0.03 mg/mL) effectively promoting cell proliferation at an 87% rate in the Agaricus bisporus extract, enhancing cell cycle progression by reducing the arrested cells in the G0/G1 phase to 75%, and promoting DNA synthesis in S phase by more than 16.36% in the Hericium erinaceus extract. Additionally, the extracts reduced DNA damage and Reactive Oxygen Species (ROS) levels, protecting cells from oxidative stress and potentially contributing to anti-aging effects. The mushrooms also exhibited immunomodulatory and anti-inflammatory effects by upregulating the IL-2, IL-4, and downregulating IL-6 expression, indicating their potential to promote general health. These findings suggest the potential of mushroom extracts as natural agents for reducing the negative effects of aging while promoting cellular health. Further research is required to explore the specific bioactive compounds responsible for these beneficial effects and to evaluate their efficacy in vivo.

Abstract
Carvacrol (CAR), a naturally occurring phenolic monoterpene compound, has recently received attention for its potential use in food preservation. However, whether it is effective in controlling brown blotch disease caused by Pseudomonas tolaasii in edible mushrooms is unknown. The results of this study showed that CAR effectively inhibits and kills P. tolaasii in vitro by disrupting cell membrane integrity and causing the leakage of cellular components. Intracellular proteins and the DNA of P. tolaasii may not be the targets of CAR. CAR fumigation at a concentration as low as 20 μmol L-1 CAR effectively inhibited P. tolaasii-caused brown blotch disease in Agaricus bisporus, accompanied by a decrease in polyphenol oxidase activation, melanin production, and malondialdehyde accumulation. CAR treatment also significantly increased the activities of β-1,4-N-acetyl-glucosaminnidase, three antioxidant enzymes, and phenylpropanoid pathway-related enzymes, as well as promoting the accumulation of phenolic, flavonoid, and lignin substances in mushrooms, thereby inducing the resistance of mushrooms to the disease. These results demonstrate the potential application of carvacrol to control bacterial disease in A. bisporus mushrooms.

Abstract
Diabetes mellitus (DM) is currently regarded as a global public health crisis for which lifelong treatment with conventional drugs presents limitations in terms of side effects, accessibility, and cost. Type 2 diabetes (T2DM), usually associated with obesity, is characterized by elevated blood glucose levels, hyperlipidemia, chronic inflammation, impaired β-cell function, and insulin resistance. If left untreated or when poorly controlled, DM increases the risk of vascular complications such as hypertension, nephropathy, neuropathy, and retinopathy, which can be severely debilitating or life-threatening. Plant-based foods represent a promising natural approach for the management of T2DM due to the vast array of phytochemicals they contain. Numerous epidemiological studies have highlighted the importance of a diet rich in plant-based foods (vegetables, fruits, spices, and condiments) in the prevention and management of DM. Unlike conventional medications, such natural products are widely accessible, affordable, and generally free from adverse effects. Integrating plant-derived foods into the daily diet not only helps control the hyperglycemia observed in DM but also supports weight management in obese individuals and has broad health benefits. In this review, we provide an overview of the pathogenesis and current therapeutic management of DM, with a particular focus on the promising potential of plant-based foods.

Abstract
Postharvest Agaricus bisporus is susceptible to browning, water loss, and microbial infection. In order to extend its shelf life, cold plasma technology was used to treat and evaluate A. bisporus. Firstly, according to the results of a single factor test and response surface analysis, the optimal conditions for cold plasma treatment were determined as a voltage of 95 kV, a frequency of 130 Hz, and a processing time of 10 min. Secondly, storage experiments were carried out using the optimized cold plasma treatment. The results showed that the cold plasma treatment in the packaging significantly reduced the total viable count in A. bisporus by approximately 16.5%, maintained a browning degree at 26.9% lower than that of the control group, and a hardness at 25.6% higher than that of the control group. In addition, the cold plasma treatment also helped to preserve the vitamin C and total protein content of A. bisporus. In conclusion, cold plasma treatment showed great potential in enhancing the postharvest quality of fresh A. bisporus.

Abstract
Mushroom β-D-glucans can be isolated from several species, including the widely consumed Agaricus bisporus. Besides immunomodulatory responses, some β-D-glucans may exhibit direct antitumoral effects. It was previously observed that a β-(1→6)-D-glucan (BDG16) has indirect cytotoxicity on triple-negative breast cancer cells. In this study, the cytotoxicity of this same glucan was observed on estrogen receptor-positive (ER+) breast cancer cells (MCF-7). Cell viability was determined by multiple methods to assess metabolic activity, lysosomal membrane integrity, and adhesion capacity. Assays to evaluate cell respiration, cell cycle, apoptosis, necroptosis, and oxidative stress were performed to determine the action of BDG16 on MCF-7 cells. A gradual and significant cell viability reduction was observed when the cells were treated with BDG16 (10-1000 µg/mL). This result could be associated with the inhibition of the basal state respiration after incubation with the β-D-glucan. The cells showed a significant arrest in G1 phase population at 1000 µg/mL, with no induction of apoptosis. However, an increase in necrosis and necroptosis at the same concentration was observed. No difference in oxidative stress-related molecules was observed. Altogether, our findings demonstrate that BDG16 directly induces toxicity in MCF-7 cells, primarily by impairing mitochondrial respiration and promoting necroptosis. The specific mechanisms that mediate this action are being investigated.

Abstract
Mushrooms exhibit a broad spectrum of pharmacological activities and are widely used for medical purposes and in nutrition. Numerous bioactive metabolites are responsible for these activities. Their distribution and biological effects differ depending on the fungal species and their chemical composition. Biofortification is a sustainable process that aims to improve the nutritional profile of food crops, as most of them are low in key nutrients. This review aims to delve into the process of fungal biofortification and review the most commonly used elements and species. Through biofortification, it is possible to combat hidden hunger, which affects as many as 2 billion people worldwide. "Hidden hunger" is a phenomenon in which the organism lacks the minerals and vitamins needed for development, growth, and good overall health. Mushrooms are increasingly being considered for biofortification due to their ability to accumulate various elements (both micro- and macroelements).

Abstract
In this study, mycosynthesized zinc oxide nanoparticles (ZnONPs) are fabricated via Pleurotus sajor-caju mushroom extract, and their potential medical and environmental applications are demonstrated. The biosynthesized ZnONPs were assessed for their antibacterial, anticancer, and biodecolorization potential efficiency. They were also characterized and morphologically analyzed by UV-visible spectroscopy, XRD, FT-IR, FE-SEM, EDX, HR-TEM, Zeta potential, and GC-MS analysis. The UV visible spectrum analysis of synthesized ZnONPs analyzed outcome 354 nm was the SPR peak that the nanoparticles displayed. The characteristic Zn-O bond was indicated by a strong peak in the FT-IR study at 432.05 cm-1. Based on XRD analysis, P. sajor-caju mediated ZnONPs were crystalline nature, with an average nano particle size of 14.21 nm and a polydispersity directory of 0.29. The nanoparticles exhibit modest constancy, as shown by their zeta potential value of - 33.2 mV. The presence of oxygen and zinc was verified by EDX analysis. The ZnONPs were found to be spherical in shape and crystalline nature structure, with smooth surface morphology and a mean particle size of 10 nm using HR-TEM and SAED analysis. The significant antibacterial activity against S. aureus (6.2 ± 0.1), S. mutans (5.4 ± 0.4), and B. subtilis (5.2 ± 0.1 mm) was demonstrated by the synthesized ZnONPs made using mushroom extract. It was discovered that when the concentration of mushroom extract was increased together with synthesized ZnONPs, the bactericidal activity increased considerably. A higher concentration of ZnONPs demonstrated superior antibacterial activity across the ZnONPs ratio tests. The in vitro cytotoxicity assay showed that ZnONPs, even at low doses, had a substantial number of cytotoxic effects on liver cancer cells (LC50 values 47.42 µg/mL). The effectiveness test revealed that acid blue 129 was degraded. The best decolorization of acid blue 129 at 72.57% after 3 h of soaking serves as evidence for the theory that myco-synthesized ZnONPs by P. sajor-caju mushroom can function as catalysts in reducing the dye. The mycosynthesized ZnONPs from P. sajor-caju extract, and its potential for antibacterial, anticancer, and decolorization are in this investigation. The mycosynthesized ZnONPs suggest a novel use for nanoparticles in the creation of environmental and medicinal products.

Abstract
Phenolic compounds represent a group of secondary metabolites that serve essential functions in plants. Beyond their positive impact on plants, these phenolic metabolites, often referred to as polyphenols, possess a range of biological properties that can promote skin health. Scientific research indicates that topically using phenolics derived from plants can be advantageous, but their activity and stability highly depend on storage of the source material and the extraction method. These compounds have the ability to relieve symptoms and hinder the progression of different skin diseases. Because they come from natural sources and have minimal toxicity, phenolic compounds show potential in addressing the causes and effects of skin aging, skin diseases, and various types of skin damage, such as wounds and burns. Hence, this review provides extensive information on the particular crops from which by-product phenolic compounds can be sourced, also emphasizing the need to conduct research according to proper plant material storage practices and the choice of the best extracting method, along with an examination of their specific functions and the mechanisms by which they act to protect skin.

Abstract
The mushroom industry generates large amounts of stem co-product. This is generated after mushroom harvest; stems are attached to the growth substratum, and their only use has traditionally been as compost. In this study, we investigated extensively for the first time this co-product and the influence of sample size (L->0.510 mm; LI-0.510-0.315 mm; SI-0.315-0.180 mm; S-<0.180 mm) on the characterization and antioxidant activity of flours obtained from stem co-products of Agaricus bisporus (ABSF) and Pleurotus ostreatus (POSF). ABSF was rich in protein (14 g/100 g), calcium (428.23-700.77 mg/100 g), and sorbitol (22.57-26.60 g/100 g), while POSF was rich in β-glucans (36.62-40.34 g/100 g) and linoleic acid (20.57-39.86 g/100 g of lipid). Both species were flush in amino acids and had an umami flavour. ABSF showed more elevated values for emulsifying activity than POSF. The S sizes were highlighted for their yield, hydration properties, and oil holding capacity. Furthermore, ABSF-S exhibited heightened antioxidant capacity in vitro, in consonance with the total phenolic compounds observed (0.91 mg/g). However, the antioxidant assays in POSF presented a positive correlation with β-glucan content. Our study suggests that these co-products could have several food-related applications, such as potential for use as an emulsifier, sweetener, or fortifier in the development of functional food, owing to their rich concentrations of fibre, protein, sorbitol, and β-glucans. Nevertheless, it is necessary to understand the interactions of the flours with the potential food matrix prior to proceeding further with food-related applications.

Abstract
The mushrooms oyster (Pleurotus ostreatus) and white button (Agaricus bisporus) contain bioactive compounds that have potential beneficial effects on hypercholesterolemia and cardiovascular diseases. In this study, hypolipidemic and antioxidative potential of these mushrooms' extract were explored using hypercholesterolemic (HC) rats as animal model. For the study, 56 adult rats were divided into seven groups, i.e., G1 (negative control), G2 (positive control group), G3 (HC rats with statin drug orally), G4 and G5 (HC rats @ 100 and 200 mg/kg body weight (BW) dose of oyster mushroom extracts), and G6 and G7 (HC rats @ 100 and 200 mg/kg BW dose of white button mushroom extracts). The hypercholesterolemia was induced experimentally in fasted rats through a high-fat diet along with injection of triton WR-1339. After 48 h, the treatment groups were given extract for 28 days along with standard diet. At the trial termination, we analyzed the blood sugar levels, antioxidant parameters, lipid profile, and renal function, as well as conducting liver function tests of the rats. The results indicated that positive control group rats exhibited increased levels of total cholesterol (TC), triglycerides (TG), low-density level (LDL), and very-low-density level (vLDL) by 19%, 37%, 52%, and 32%, respectively, and 53% decrease in HDL, whereas treatment groups that received 200 mg oyster and white button mushroom extracts reported 15%, 34%, 22% reduction in TC, TG, vLDL, respectively, and 22% improvement in HDL level. The enzyme profiles of different groups showed non-significant differences, although both mushroom extracts provision reduced glutamic oxaloacetic transaminase (GOT) and glutamic pyruvic transaminase (GPT) levels. Overall, the results indicated that mushroom extracts were helpful in maintaining oxidative stress and have the potential to improve dyslipidemia in the tested rat animal model.

Abstract
The gut microbiota plays a central role in maintaining human health and has been linked to many gastrointestinal diseases such as ulcerative colitis (UC). Agaricus bisporus is a famous edible mushroom, and Agaricus bisporus polysaccharides (ABPs) and the two purified fractions (ABP-1 and ABP-2) were demonstrated to exhibit immunomodulatory activity in our previous study. Herein, we further found that ABPs, ABP-1, and ABP-2 possessed therapeutic effects against dextran sodium sulfate (DSS)-induced colitis in mice. ABPs, ABP-1, and ABP-2 could relieve body weight loss, colon atrophy, and histological injury, increase tight junction proteins, restore gut-barrier function, and inhibit inflammation. ABP-2 with a lower molecular weight (1.76 × 104 Da) showed a superior therapeutic effect than ABP-1 with a higher molecular weight (8.86 × 106 Da). Furthermore, the effects of ABP-1 and ABP-2 were microbiota-dependent, which worked by inducing Norank_f__Muribaculaceae and Akkermansia and inhibiting Escherichia-Shigella and Proteus. In addition, untargeted fecal metabolomic analysis revealed distinct modulation patterns of ABP-1 and ABP-2. ABP-1 mainly enriched steroid hormone biosynthesis, while ABP-2 significantly enriched bile secretion and tryptophan metabolism. In summary, ABPs, especially low-molecular-weight fraction, represent novel prebiotics for treatment of inflammatory gastrointestinal diseases.

Abstract
This work uses the response surface methodology to optimise ergosterol recovery from Agaricus bisporus mushrooms by supercritical fluid extraction. The influence of pressure, temperature, co-solvent use, and solvent-to-mushroom mass ratio was evaluated on yield and extract composition. Considering temperature, pressure, and co-solvent volume percentage, predictive models were regressed for extraction yield, ergosterol purity in the recovered fractions, and ergosterol recovery. The co-solvent volumetric fraction was the most influential factor, increasing the extraction yield and reducing the extract's ergosterol purity. A maximum ergosterol extract purity of (547.27 ± 2.37) mg ergosterol ·g extract -1 was obtained at a pressure of 100 bar, temperature of 50 °C and co-solvent volume percentage of 5 % v/v . The highest ergosterol recovery was (6.23 ± 0.06) mg ergosterol ·g dw -1 for operating conditions of 244 bar, 56 °C, and 8 % v/v of co-solvent. Coefficients of determination close to one were obtained for all models, indicating good agreement with experimental data.

Abstract
This study aimed to elucidate how the Maillard reaction (MR) affects the flavor and bioactivities of Lentinula edodes hydrolysates (LEHs). Changes in flavor were investigated using non-targeted metabolomics techniques (GC-MS and LC-MS/MS) and sensory evaluation. Simultaneously, UV absorption, fluorescence, and FT-IR spectra were used to characterize the process of MR. We also evaluated the effects of MR on the antioxidant activity, hypoglycemic activity and antimicrobial activity of LEHs in vitro. The results revealed that MR produced many volatile aldehydes and ketones and decreased the content of most amino acids, sugars and flavonoids in the LEHs while increasing the content of l-theanine and succinic acid. MRPs had a strong caramel and like-meat flavor and an obvious improvement in umami, taste continuity, and total acceptability. Furthermore, MR improved the antioxidant and antimicrobial properties of LEHs. This research establishes a theoretical foundation for MR in the deep processing of edible mushrooms.

Abstract
BACKGROUND Agaricus bisporus is the most widely cultivated and consumed mushroom worldwide. Pseudomonas 'gingeri' is the only pathogenic causative agent of ginger blotch in A. bisporus. Current research on mushroom pathogenic biotoxins is limited to P. tolaasii, which causes brown blotch, while understanding of P. 'gingeri' is lacking, therefore identifying the toxins produced by P. 'gingeri' and evaluating their toxicity on A. bisporus is essential for understanding its pathogenic mechanisms. RESULTS A pathogenic bacterium isolated from fruiting bodies of A. bisporus with ginger blotch was identified as P. 'gingeri', and its main toxin identified as 2', 4', 6'-trihydroxyacetophenone monohydrate, also known as monoacetylphloroglucinol (MAPG). Its first known extraction from a mushroom pathogen is reported here. MAPG at 250 μg/mL significantly inhibited the host's mycelial growth, increased branching, caused the structure to become dense and resulted in folds appearing on the surface. An MAPG concentration of 750 μg/mL MAPG led to mycelial death. P. 'gingeri' had high MAPG production in medium containing 0.1 mol/L of either glucose or mannitol (4.30 and 1.85 μg/mL, respectively), and mycelia were inhibited by 69.6% and 41.1%, respectively. The MAPG content was significantly lower in other carbon source media. CONCLUSION This work provides a detailed description of the structure and virulence of the P. 'gingeri' biotoxin, which has implications for understanding its pathogenic mechanism and for exploring precise control strategies for A. bisporus ginger blotch disease, such as the development of MAPG inhibitory factors. © 2023 Society of Chemical Industry.

Abstract
Macrofungi (or mushrooms) act as an extraordinarily important part to human health due to their nutritional and/or medicinal value, but the detailed researches in growth and development mechanisms have yet to be explored further. Transcription factors (TFs) play indispensable roles in signal transduction and affect growth, development, and metabolism of macrofungi. In recent years, increasing research effort has been employed to probe the relationship between the development of macrofungi and TFs. Herein, the present review comprehensively summarized the functional TFs researched in macrofungi, including modulating mycelial growth, fructification, sclerotial formation, sexual reproduction, spore formation, and secondary metabolism. Meanwhile, the possible effect mechanisms of TFs on the growth and development of some macrofungi were also revealed. Specific examples of functional characterizations of TFs in macrofungi (such as Schizophyllum commune and Coprinopsis cinerea) were described to a better comprehension of regulatory effect. Future research prospects in the field of TFs of macrofungi are discussed. We illustrated the functional versatility of the TFs in macrofungi based on specific examples. A systematical realization of the interaction and possible mechanisms between TFs and macrofungi can supply possible solutions to regulate genetic characteristics, which supply novel insights into the regulation of growth, development and metabolism of macrofungi. Abstract
INTRODUCTION Lead (Pb) is a toxic pollutant, which can affect different tissues of the human body. The use of natural elements, as medicinal mushroom can reduce the toxic effects of Pb. OBJECTIVE We evaluated, through preclinical tests, the oral co exposures to mushroom Agaricus bisporus (Ab) by gavage and Pb in drinking water, and the capability of Ab be a protective agent for both pregnant rats and their fetuses. METHODS Female Wistar rats were divided into four groups (n = 5/group): Group I-Control; Group II-Ab 100 mg/kg; Group III-Pb 100 mg/L; Group IV-Ab +Pb -100 mg/kg +100 mg/L. Exposure was performed until the 19th day of gestation. On the 20th day, pregnant rats were euthanized, and the outcomes evaluated were weight gain; hematological profile; biochemical markers; oxidative stress markers; reproductive capacity; and embryo fetal development. RESULTS The characterization of mushrooms reveals them to be a valuable source of nutrients. However, Pb ingestion resulted in reduced weight gain and negative impacts on hematological and biochemical parameters. Fortunately, co administration of mushrooms helped to mitigate these negative effects and promote recovery. The mushroom also showed antioxidant activity, improving parameters of oxidative stress. In addition, Ab partially recovered the damage in fetal morphology and bone parameters. CONCLUSION Our findings indicated that the co administration of Ab improved the toxicity caused by Pb, and the mushroom could be used as a natural alternative as a protective/chelator agent.

Abstract
Contemporary scientific findings revealed that our daily food stuffs are enriched by encrypted bioactive peptides (BPs), evolved by peptide linkage of amino acids or encrypted from the native protein structures. Remarkable to these BPs lies in their potential health benefiting biological activities to serve as nutraceuticals or a lead addition to the development of functional foods. The biological activities of BPs vary depending on the sequence as well as amino acid composition. Existing database records approximately 3000 peptide sequences which possess potential biological activities such as antioxidants, antihypertensive, antithrombotic, anti-adipogenics, anti-microbials, anti-inflammatory, and anti-cancerous. The growing evidences suggest that BPs have very low toxicity, higher accuracy, less tissue accretion, and are easily degraded in the disposed environment. BPs are nowadays evolved as biologically active molecules with potential scope to reduce microbial contamination as well as ward off oxidation of foods, amend diverse range of human diseases to enhance the overall quality of human life. Against the clinical and health perspectives of BPs, this review aimed to elaborate current evolution of nutritional potential of BPs, studies pertaining to overcome limitations with respect to special focus on emerging extraction, protection and delivery tools of BPs. In addition, the nano-delivery mechanism of BP and its clinical significance is detailed. The aim of current review is to augment the research in the field of BPs production, identification, characterisation and to speed up the investigation of the incredible potentials of BPs as potential nutritional and functional food ingredient.

Abstract
As one of the most popular edible fungi in the market, the quality of Agaricus bisporus will determine its sales volume. Therefore, to achieve rapid and nondestructive testing of the quality of Agaricus bisporus, this study first built a portable spectrum acquisition device for Agaricus bisporus. The Ocean Spectromeper was used to calibrate the spectral data of the device, and the linear regression analysis method was combined to analyze the two. The results showed that the Pearson correlation coefficient of significance between the two was 0.98. Then, the spectral data of Agaricus bisporus were collected, the spectral characteristic wavelength of Agaricus bisporus was extracted by the SPA and PCA algorithms, and the moisture content and whiteness prediction models based on a BP neural network and PLSR, respectively, were built. The parameters of the BP neural network model were optimized by SSA. The R2 values for the final moisture content and the predicted whiteness were 0.95 and 0.99, and the RMSE values were 5.04% and 0.60, respectively. The results show that the portable spectral acquisition and analysis device can be used for the accurate and rapid quality detection of Agaricus bisporus.

Abstract
Different constituents of the cultivation substrate have significant effect on the yield and quality of edible mushrooms. The residue after the extraction of instant tea has exhibited to be biologically significant, and could be used as a substrate for cultivation. This study aimed to investigate the feasibility of tea extraction residue (TER) on button mushroom (Agaricus bisporus) cultivation, as an ingredient in the substrate, and assess the growth status, nutritional values, and sensory characteristics of fruiting body. The results showed that the strains could grow well on the cultivated substrate with 20% addition of TER. The total amount of hydrolyzed amino acids in the fruiting bodies of three TER-based groups (TER accounted for 10%, 20%, and 37.5%, respectively) was higher than that of the control group, and the total amount of essential amino acids was increased by 33.33%, 22.47%, and 9.92% compared with the control group, respectively. In addition, the results of gas chromatography-mass spectrometry (GC-MS) revealed that the addition of TER to the cultivation of substrate significantly enhanced the content of typical mushroom-flavor compounds in button mushroom, such as 1-octen-3-ol, 3-octanol, and 1-octen-3-one. It can be concluded that TER may be an ideal choice for the substrate in commercial cultivation of button mushroom.

Abstract
This study aimed to evaluate the changes in Agaricus bisporus (white and brown) characteristics (colour and acidity parameters, lactic acid bacteria (LAB) and mould/yeast counts, biogenic amine content, fatty acid (FA) and volatile compound (VC) profiles, overall acceptability, and emotions induced for consumers) during a 48 h lactic acid fermentation with Lacticaseibacillus casei No. 210, Lactiplantibacillus plantarum No. 135, Lacticaseibacillus paracasei No. 244, and Pediococcus acidilactici No. 29 strains. Fermented white and brown A. bisporus showed higher LAB count and lower pH, lightness, redness, and yellowness than non-fermented ones. Yeast and fungi counts were similar between non-fermented and fermented samples. All samples contained spermidine (on average, 191.5 mg/kg) and some of the fermented samples had tyramine (on average, 80.7 mg/kg). Saturated FA was the highest in non-fermented brown A. bisporus. The highest monounsaturated and polyunsaturated FA contents were found in Lp. plantarum No. 135 fermented white and brown A. bisporus, respectively. For the first time, the VC profile of fermented A. bisporus was analysed. 1-Octen-3-ol content significantly decreased while benzyl alcohol, acetoin, and 2,3-butanediol increased in most fermented samples. Fermented A. bisporus received good acceptability scores. The emotional evaluation showed that the LAB strain and the interaction of the LAB strain and A. bisporus variety were significant on the intensity of emotions "happy" and "sad", while all analysed factors and their interactions were significant on the intensity of "angry" and "disgusted" (p ≤ 0.05). The findings of this study show the potential of the selected LAB strains and contribute to the increasing body of research on fermented mushrooms.

In order to acquire scientific evidence for the application of thiamethoxam (TMX) in Agaricus bisporus cultivation, residue and dissipation experiments for field trials were performed with the application of TMX in compost and casing soil, respectively. An effective QuEChERS method was established to analyze TMX and its two metabolites, clothianidin (CLO) and thiamethoxam-urea (TMX-urea), in compost, casing soil, and fruiting bodies. The results indicated that the TMX dissipation half-lives (t1/2) at dosages of 10 and 50 mg kg-1 were 19.74 d (day) and 28.87 d in compost and 33.54 d and 42.59 d in casing soil, individually. TMX, CLO, and TMX-urea were observed after TMX application in compost and casing soil. For TMX applied to the casing soil, only TMX residues were detected in fruiting bodies with bioconcentration factors (BCFs) of 0.0003~0.0009. In addition, both the chronic risk quotient (RQ) and acute risk quotient (HQ) values of TMX in fruiting bodies were far less than 1, which means the dietary health risks to humans were acceptable. However, in the TMX application to the compost, these analytes were not detected in the fruiting bodies. This suggested that the application of TMX in compost was safer than in casing soil during A. bisporus cultivation.

Abstract
Diabetes mellitus is a complex illness in which the body does not create enough insulin to control blood glucose levels. Worldwide, this disease is life-threatening and requires low-cost, side-effect-free medicine. Due to adverse effects, many synthetic hypoglycemic medications for diabetes fail. Mushrooms are known to contain natural bioactive components that may be anti-diabetic; thus, scientists are now targeting them. Mushroom extracts, which improve immune function and fight cancer, are becoming more popular. Mushroom-derived functional foods and dietary supplements can delay the onset of potentially fatal diseases and help treat pre-existing conditions, which leads to the successful prevention and treatment of type 2 diabetes, which is restricted to the breakdown of complex polysaccharides by pancreatic-amylase and the suppression of intestinal-glucosidase. Many mushroom species are particularly helpful in lowering blood glucose levels and alleviating diabetes symptoms. Hypoglycaemic effects have been observed in investigations on Agaricussu brufescens, Agaricus bisporus, Cordyceps sinensis, Inonotus obliqus, Coprinus comatus, Ganoderma lucidum, Phellinus linteus, Pleurotus spp., Poria cocos, and Sparassis crispa. For diabetics, edible mushrooms are high in protein, vitamins, and minerals and low in fat and cholesterol. The study found that bioactive metabolites isolated from mushrooms, such as polysaccharides, proteins, dietary fibers, and many pharmacologically active compounds, as well as solvent extracts of mushrooms with unknown metabolites, have anti-diabetic potential in vivo and in vitro, though few are in clinical trials.

Abstract
AbstractMushroom production is a growing sector as the demand for this product is increasing. The quantity of waste and by-products generated along the supply chain is however considerable (about 20% of the fresh weight is disposed). Although the recovery of chitosan from mushrooms has been extensively studied, little has been done to optimize the recovery of proteins, which make up to 20% of dry weight. In the present work, six different by-products were studied for their crude composition and their protein fraction was characterized in detail. Then, a comparative study was conducted on three different extraction techniques (environmentally friendly aqueous extraction, ultrasound-assisted extraction, and enzyme-assisted extraction). Enzyme-assisted extraction has proven to be the most efficient technique in terms of protein extraction yield, even though the protein fraction is extracted in the form of peptides and not whole proteins. The lowest degree of hydrolysis is instead given by the ultrasound-assisted extraction, which however shows a rather high degree of racemization which decreases the quality of the proteins. The aqueous extraction, despite the low extraction yield, gave the purest protein extracts.

Abstract
White button mushroom (Agaricus bisporus (J.E. Lange) Imbach) is one of the widely consumed edible mushrooms. Indeed, A. bisporus fruiting bodies are a rich source of nutrients and bioactive molecules. In addition, several enzymes with biotechnological applications are found in A. bisporus (e.g., enzymes for lignocellulose degradation). Here, a novel ribotoxin-like protein (RL-P) from the edible mushroom A. bisporus was purified and characterized. This RL-P, named bisporitin, is a monomeric protein (17-kDa) exhibiting specific ribonucleolytic activity by releasing the α-fragment (hallmark of RL-Ps) when incubated with rabbit ribosomes. In addition, bisporitin shows magnesium-dependent endonuclease activity and displays a similar far-UV CD spectrum as ageritin, the prototype of RL-Ps, isolated from Cyclocybe aegerita fruiting bodies. Interestingly, bisporitin is the first member of RL-Ps to have noticeably lower thermal stability (Tm = 48.59 ± 0.98 °C) compared to RL-Ps isolated in other mushrooms (Tm > 70 °C). Finally, this protein is only partially hydrolyzed in an in vitro digestive system and does not produce adverse growing effects on eukaryotic cell lines. This evidence paves the way for future investigations on possible bioactivities of this RL-P in the digestive system.

Abstract
White button mushroom polysaccharide (WMP) has various health-promoting functions. However, whether these functions are mediated by gut microbiota has not been well explored. Therefore, this study evaluated the anti-aging capacity of WMP and its effects on the diversity and composition of gut microbiota in D-galactose-induced aging mice. WMP significantly improved locomotor activity and the spatial and recognition memory of the aging mice. It also alleviated oxidative stress and decreased the pro-inflammatory cytokine levels in the brain. Moreover, WMP increased α-diversity, the short-chain fatty acid (SCFA) level and the abundance of beneficial genera, such as Bacteroides and Parabacteroides. Moreover, its effect on Bacteroides at the species level was further determined, and the enrichments of B. acidifaciens, B. sartorii and B. stercorirosoris were found. A PICRUSt analysis revealed that WMP had a greater impact on the metabolism of carbon, fatty acid and amino acid, as well as the MAPK and PPAR signaling pathway. In addition, there was a strong correlation between the behavioral improvements and changes in SCFA levels and the abundance of Bacteroides, Parabacteroides, Mucispirillum and Desulfovibrio and Helicobacter. Therefore, WMP might be suitable as a functional foods to prevent or delay aging via the directed enrichment of specific species in Bacteroides.

Abstract
The aim of the present work was the comparison of antimicrobial activity, mechanism and components of the ethanol extract (EE) from Lentinula edodes Berk (Pegler) and Agaricus bisporus Sing (Lange). The main component of EE of A. bisporus was dianhydromannitol (20.1%), while isosorbide/dianhydromannitol (21.8%) was detected at a high rate in L. edodes ethanol extract by GC-MS . The common phenolic acids were determined as chlorogenic acid, syringic acid, rutin, p-coumaric acid, ferulic acid, 2-hydroxy cinnamic acid, protocatechuic acid, abscisic acid, and trans-cinnamic acid in both mushroom extract by HPLC-MWD . The MICs (minimum inhibitory concentration) of L. edodes EE on Klebsiella pneumoniae, Staphylococcus aureus, Enterococcus faecalis and Acinetobacter baumannii were between 5.1 mg ml-1 and 6.01 mg ml-1, while MICs of A. bisporus EE on the pathogens were between 5.8 mg ml-1 and 9.54 mg ml-1. The highest DRA decrease was in E. faecalis (69.1%) for L. edodes and S. aureus (71.0%) for A. bisporus in the 20th minute. As a result, L. edodes and A. bisporus have a similar antibacterial effect on the pathogens, and this inhibition effect caused DNA, protein leakage and destruction of permeability of bacterial cell membrane by bioactive molecules in mushroom extract.

Abstract
BACKGROUND Fresh mushrooms (Agaricus bisporus) are highly perishable and easily lose quality during storage. The packaging system can retard the deterioration of fresh mushrooms. However, water vapor transmission rates of commodity plastic films are lower than the transpiration rate of mushrooms, resulting in increased moisture condensation in the package and perishability of mushrooms due to microbial growth. A possible solution for controlling the humidity level in the package is to use a hygroscopic material. Acid leaching can improve the chemical and physical properties of expanded vermiculite (EV). The aim of this study was to develop a novel hygroscopic agent from acidified expanded vermiculite (AEV) and calcium chloride (CaCl2 ) that has a high moisture absorption capacity and maintains a powdered form in the packaging system for fresh mushrooms. RESULTS Our findings revealed that leaching EV with hydrochloric acid increased porosity and hydrophilicity. The combination of AEV:CaCl2 at 6:4 (w/w, AEV/CS40) showed the highest moisture adsorption capacity at 1.724 ± 0.03 g water per gram of material. Then, 1.55 g of AEV/CS40 was applied to the mushroom packaging and stored at 4 °C. The results indicated that AEV/CS40 could delay mushroom deterioration in terms of color change, firmness, pH, total soluble solids, and microbial growth. CONCLUSION The study findings indicate that the alternative solid hygroscopic material obtained by combining AEV with CaCl2 has potential for use as a hygroscopic material for preserving the quality of white button mushrooms. © 2021 Society of Chemical Industry.

Abstract
Reported herein is the purification of the pigment of black sturgeon caviar and its unambiguous identification as a typical eumelanin by means of chemical degradation coupled with electron paramagnetic resonance (EPR) evidence. HPLC and LC-MS analysis of oxidative degradation mixtures revealed the formation of pyrrole-2,3,5-tricarboxylic acid (PTCA), a specific marker of eumelanin pigments, in yields compatible with a 6.5% w/w pigment content. EPR spectral features and parameters were in close agreement with those reported for a typical natural eumelanin such as Sepia melanin from squid ink. The identification for the first time of eumelanin in a fish roe is expected to provide a novel molecular basis for the valorization of black caviar and production wastes thereof in food chemistry and diet.

Abstract
It is well-known that the utilization of mushrooms as therapeutic agents is not new. Over the past years, they have been used by local individuals as food, as well as medicines, throughout the world. Nowadays, mushrooms are excessively used in the medicine, pharmacy, food, and fermentation fields as well. Wild mushrooms are of particular interest, especially Trametes versicolor (commonly known as turkey mushrooms) due to their various uses in the food and pharmaceutical industries. They represent not only a huge storehouse of vitamins, minerals, and dietary fiber, but they are also an important source of bioactive polysaccharides. They are widely used in traditional oriental therapies. The fruiting bodies are used in the preparation of health tonics and tea. The present review is necessary to explore more about this mushroom-like classical taxonomy, morphology, nutritional value, bioactivity, various health attributes, mechanism of bioactive components against various diseases, and food applications. The influence of processing processes on the nutritional properties and bioactivity of the fungus is discussed. Potential bioactive components promising health attributes of Trametes versicolor are extensively described. Additionally, several in vivo and in vitro studies have demonstrated the beneficial effects of polysaccharopeptides (PSP) and Polysaccharide-K (PSK) on the aspects related to immune function and inflammation, also presenting an anticancerous effect. Moreover, PSP and PSK were successfully described to decrease several life-threatening diseases. The potential food applications of Trametes versicolor were detailed to signify the effective utilization of the mushroom in functional food formulation.

Abstract
BACKGROUND Many species of mushroom contain an assortment of free radical scavengers (Phenolics and Flavonoids compounds) that have made them nutritionally beneficial and a source of expansion of drug production. In this study, we examined the preventive and remedial role of total phenol extract from Pleurotus columbines (TP) in alleviating the consequences of cyclophosphamide (CTX) on the ovaries of female rats. Rats were randomly assigned to four groups: healthy controls, cyclophosphamide (CTX), received a TP (100 mg/kg) orally daily for 14 days and curative group: CTX-TP, we determined and identified a total phenol from a mushroom extract and examined it as an antioxidant agent. To investigate the therapeutic influence, it was administrated 2 weeks after CTX. To assess the impact of TP on ovarian damage caused by CTX, ovarian hormone tests were performed such as luteinizing hormone (LH), 17-β-estradiol (E2), and anti-mullerian hormone (AMH). Besides, follicle-stimulating hormone (FSH) in serum was evaluated, and histopathological analysis of the ovary was examined. RESULTS This study indicates that treatment with TP decreased the severity of cyclophosphamide-induced ovary injury by reducing inflammation and apoptotic effects and increasing the activity of antioxidants. CONCLUSIONS TP could be used to alleviate cyclophosphamide-induced ovary injury.

Abstract
The purpose of this study was to develop oral films (OFs) based on agar-agar with the incorporation of mushroom powder (MP) as a source of phenolic compounds. To this end, three different OFs were produced using different concentrations of MP, containing sorbitol and agar-agar. The OFs were characterized based on visual assessment, mass, thickness, moisture content, folding endurance, surface pH, contact angle, and phenolic compound content, scanning electron microscopy, X-ray diffraction, and FTIR, as well as an assessment of their antioxidant capacity. In general, all the OFs showed film-forming capacity after the incorporation of MP, although their mass, thickness, moisture content, and folding endurance differed significantly. The surface pH value remained close to neutrality (∼6.7), regardless of MP concentration. The incorporation of MP increased the crystallinity of the OFs in comparison to that of the agar-based film, but all the OFs showed similar FTIR spectra. The oral films containing 2 g of MP showed antioxidant capacity by ABTS●+ and FRAP of 3.68±0.23 and 14.61±0.66 mMol ET/g OF, respectively, and total phenolic content of 3.55±0.27 µmol GAE/g OF. Thus, oral films offer an innovative source of delivery of active compounds, and their consumption does not cause oral mucosal irritation.

Abstract
The plasticity of the gut microbiota (GM) creates an opportunity to reshape the biological output of gut microbes by manipulating external factors. It is well known that edible fungal polysaccharides (EFPs) can reach the distal intestine and be assimilated to reshape the GM. The GM has unique devices that utilize various EFPs and produce oligosaccharides, which can selectively promote the growth of beneficial bacteria and are fermented into short-chain fatty acids that interact closely with intestinal cells. Here we review EFPs-based interventions for the GM, particularly the key microorganisms, functions, and metabolites. In addition, we discuss the bi-directional causality between GM imbalance and diseases, and the beneficial effects of EFPs on host health via GM. This review can offer a valuable reference for the design of edible fungal polysaccharide- or oligosaccharide-based nutrition interventions or drug development for maintaining human health by targeted regulation of the GM.

Abstract
Vitamin D deficiency is a severe worldwide health issue. Edible mushrooms are an excellent vitamin D2 source and have gained popularity worldwide as a nutritional food. The objective of this study was to investigate the conversion efficiency of ergosterol to vitamin D2 in Agaricus bisporus and Cordyceps militaris mushrooms under ultraviolet (UV) irradiation directly through dry powder or in ethanol suspension (1:20 g/mL, solid to liquid ratio). Several parameters of UV irradiation conditions such as the material form (dry powder or dry powder in ethanol suspension), exposure time (30, 60, or 120 min), wavelength type (UV-C, UV-B, or UV-A), wavelength combination (UV-C plus UV-B, UV-C plus UV-A, UV-B plus UV-A, or UV-C plus UV-B plus UV-A), and wavelength sequence (UV-C → UV-B, UV-C → UV-A, UV-B → UV-A, or UV-C → UV-B → UV-A), were optimized. Under the optimal UV irradiation conditions (dry powder in ethanol suspension irradiated with UV-C at 40 cm for 120 min), vitamin D2 concentrations increased from not detectable to 72 μg/g (dw) in the A. bisporus dry powder and 1104 μg/g (dw) (about 15-fold increase) in the ethanol suspension. After UV irradiation, the vitamin D2 concentration increased from undetectable to 57 μg/g (dw) in the C. militaris dry powder. In contrast, UV irradiation increased the concentration to 877 μg/g (dw) (about 15-fold higher) in the ethanol suspension. Comparison of the effect of various wavelength combinations showed that UV-C irradiation is more effective than UV-A or UV-B. Furthermore, when irradiated by UV-C at a 40 cm irradiation distance in the ethanol suspension, the increase in vitamin D2 in A. bisporus and C. militaris mushrooms was time- or dose-dependent. The conversion rate of vitamin D2 was low to undetectable under dry powder irradiation, but its ergosterol loss rate was higher than in ethanol suspension irradiation. The ergosterol loss rate in dry C. militaris mushrooms was higher than in the dry A. bisporus mushroom powder. Ultraviolet irradiation in ethanol suspension could greatly increase the vitamin D2 concentration than directly on the dry powder and thus make edible mushrooms more practical as a natural vitamin D source for consumers after entirely removing the ethanol.

Abstract
In this study, we tested the compatibility of two extracts from the plant Jerusalem artichokes and button mushrooms with two different Lactobacillus probiotics (Lactobacillus acidophilus; La and Lactobacillus delbrueckii subsp. Bulgaricus; Lb) to develop a synbiotic formulation to improve the growth, survival, and reproductive performances of farmed fishes. Initially, we employed in vitro approach to monitor the growth of the probiotic lactobacilli in the presence of the different doses of the plant-based prebiotics, with the aim of selecting interesting combination(s) for further verification under in vivo conditions using zebrafish as a model. Results from the in vitro screening assay in the broth showed that both the probiotic species showed a preference for 50% mushroom extract as a source of prebiotic. A synbiotic formulation, developed with the selected combination of L. acidophilus, L. bulgaricus, and 50% mushroom extract, showed a positive influence on the growth and reproductive performances of the zebrafish. Our findings also imply that the improvement in the reproductive indices was associated with the upregulation of a cyp19a gene. Overall results suggest that a combination of L. acidophilus, L. bulgaricus, and mushroom extract can be considered as a potential synbiotic for the successful production of aquaculture species.

Abstract
Edible mushrooms are important nutraceutical sources of foods and drugs, which can produce various nutritional ingredients including all essential amino acids. The method of rapid screening for the strains producing specific functional components is very indispensable. Homocitrate synthase is one of the key enzymes in the α-aminoadipate pathway for lysine biosynthesis and has preferable sequence conservation in Agaricales. Based on the blast of homocitrate synthase homologous genes of strains of Agaricales, we achieved combinations of degenerate primers as molecular markers to rapidly screen the lysine-producing edible mushrooms. The experimental results revealed that the consistency between PCR amplification and HPLC analysis attained 82 and 75% in strains of Agaricales and Polyporales, respectively. The finding showed that the molecular marker has higher universality for screening edible mushroom resources of Agaricales. This PCR-based approach shows excellent potential in evaluating and discriminating edible wild-grown mushrooms with high lysine content in Agaricales.

Abstract
Liver fibrosis can be caused by non-alcoholic steatohepatitis (NASH), among other conditions. We performed a study to analyze the effects of a nontoxic, water-soluble extract of the edible mushroom Agaricus bisporus (AB) as a potential inhibitor of fibrosis progression in vitro using human hepatic stellate cell (LX2) cultures and in vivo in LDLR-/- mice. Treatment of LX2 cells with the AB extract reduced the levels of fibrotic and oxidative-related markers and increased the levels of GATA4 expression. In LDLR-/- mice with high-fat diet (HFD)-induced liver fibrosis and inflammation, the progression of fibrosis, oxidative stress, inflammation, and apoptosis were prevented by AB extract treatment. Moreover, in the mouse model, AB extract could exert an antiatherogenic effect. These data suggest that AB mushroom extract seems to exert protective effects by alleviating inflammation and oxidative stress during the progression of liver fibrosis, possibly due to a decrease in Toll-like receptor 4 (TLR4) expression and a reduction in Nod-like receptor protein 3 (NLRP3) inflammasome activation. In addition, we observed a potential atheroprotective effect in our mouse model.
