Abstract
Rare earth elements (REEs) are a group consisting of the following 17 metals: Ce, Dy, Er, Eu, Gd, Ho, La, Lu, Nd, Pr, Pm, Sc, Sm, Tb, Tm, Y and Yb. In the current century, the number of applications of REEs has significantly increased. They are being used as components in high technology devices of great importance industrial/economic. However, information on the risk of human exposure to REEs, as well as the potential toxic effects of these elements is still limited. In general terms, dietary intake is the main route of exposure to metals for non-occupationally exposed individuals, which should be also expected for REEs. The current paper aimed at reviewing the studies -conducted over the world- that focused on determining the levels of REEs in foods, as well as the dietary intake of these elements. Most studies do not suggest potential health risk for consumers of freshwater and marine species of higher consumption, or derived from the intake of a number of vegetables, fruits, mushrooms, as well as other various foodstuffs (honey, tea, rice, etc.). The current estimated daily intake (EDI) of REEs does not seem to be of concern. However, considering the expected wide use of these elements in the next years, it seems to be clearly recommendable to assess periodically the potential health risk of the dietary exposure to REEs. This is already being done with well-known toxic elements such as As, Cd, Pb and Hg, among other potentially toxic metals.

Abstract
Wild-caught fish are an important subsistence food source in remote northern regions, but they can also be a source of exposure to mercury (Hg), which has known health hazards. We investigated factors and mechanisms that control variability of Hg concentrations in Lake Whitefish (Coregonus clupeaformis) among remote subarctic lakes in Northwest Territories, Canada. Integrating variables that reflect fish ecology, in-lake conditions, and catchment attributes, we aimed to not only determine factors that best explain among-lake variability of fish Hg, but also to provide a whole-ecosystem understanding of interactions that drive among-lake variability of fish Hg. Size-standardized concentrations of total Hg ([THg]) in Lake Whitefish varied threefold (0.05-0.15 mg/kg wet weight) and differed significantly among the twelve study lakes. Stepwise multiple regressions revealed that 84% of among-lake variability in size-standardized fish [THg] was explained by positive relationships with two variables, catchment to lake area ratios (CA:LA) and methyl Hg concentrations ([MeHg]) in benthic invertebrates. Piecewise structural equation modeling indicated that [MeHg] in benthic invertebrates were positively related to [THg] in sediment and [MeHg] in water, which in turn were both positively related to concentrations of dissolved organic carbon (DOC) in water. Fish [THg] and all proximate in-lake drivers were ultimately driven by catchment attributes and were higher in lakes within lower-elevation, relatively larger, proportionally more forested catchments. Revealing interactive processes that influence fish Hg levels, our findings improve the current knowledge about causes of Hg variability among subarctic lakes and highlight factors that can help guide future work.

Abstract
Polychlorinated diphenyl ethers (PCDEs) are a class of chlorinated aromatic compounds with structural similarities to polychlorinated biphenyls (PCBs) and polychlorinated dibenzo-p-dioxins/dibenzofurans (PCDD/Fs). Due to their physicochemical properties, PCDEs are highly resistant to degradation and tend to accumulate in soils, sediments, and aquatic organisms, making them capable of entering and persisting in the food chain. As with other persistent organic pollutants (POPs), diet represents the primary route of human exposure to PCDEs. This mini-review focuses on recent studies evaluating the concentrations of PCDEs in foodstuffs. The most recent available dietary intake, estimated in 2008, was 51.6 ng/day, showing an increase from 41 ng/day (reported in 2004). In both cases, the highest concentrations of ΣPCDEs were observed in fish and seafood (1,094.7 ng/kg wet weight in 2008). Notably, studies indicate that ΣPCDE levels are lower in cooked food samples compared to their raw counterparts. However, the potential health risks associated with dietary exposure to PCDEs remain uncertain, as no tolerable daily intake (TDI) values have been established for these compounds. This gap is directly linked to the absence of assigned toxic equivalency factors (TEFs) for PCDE congeners. Establishing TDIs and TEFs for PCDEs is critical to comprehensively assess their health risks and to inform regulatory and public health interventions.

Abstract
Malachite Green (MG) is an antibiotic with antifungal activity, which is illegal to use in agriculture due to its mutagenic and teratogenic properties. Several scientific papers have been published on MG in fish. Therefore, an attempt was made to determine the meta-analysis concentration of MG in fish based on countries and types of fish subgroups, as well as the health risks of consumers, using the Monte Carlo simulation (MCS) model. The three countries with the highest concentration of MG were Iran (14.697 µg/kg), Brazil (2.840 µg/kg), and China (2.277 µg/kg). The overall pooled concentration of MG in fish was 3.036 µg/kg, 95%CI (2.860-3.212 µg/kg), and the highest concentration of MG was observed in Pacu fish (6.603 µg/kg). The health risk assessment shows adults in Malaysia, China, and Iran and children in Italy, Spain, Brazil, Malaysia, China, and Iran are at considerable risk (MOE <10,000); hence, carrying out control plans in these countries is recommended.

Abstract
This study aimed to examine the distribution of poly- and perfluoroalkyl substances (PFAS) in 15 marine fish species from the northern Bohai Sea, investigate their sources of contamination, and evaluate the benefits-risks associated with the concurrent consumption of fish fatty acids and PFAS. The ∑PFAS concentrations in fish ranged from 9.38 to 262.92 ng·g-1 (dry weight). The highest PFAS levels were found in the viscera and gills, while the lowest levels were found in the muscles. Industrial effluents and sewage treatment plant discharges were the primary sources of PFAS contamination. The individual PFAS concentrations in fish were insignificantly correlated with their trophic levels (p > 0.05). However, the concentrations of hexafluoropropylene oxide dimer acid (HFPO-DA) or long-chain PFAS (C > 8) significantly increased with fish size (e.g., total length, weight) and lipid content (p < 0.001). The benefit-risk analysis suggests that HPFO-DA poses a higher health risk than perfluorooctanoic acid (PFOA) in fish (p < 0.05). Long-term consumption of contaminated fish may significantly increase human serum PFOA concentration and kidney cancer risk (p < 0.05). Daily consumption of 5 g (wet weight) muscle from Ditrema temmincki and Konosirus punctatus is recommended to meet the requirements for fatty acid supplementation without posing health risks.

Abstract
Human exposure to arsenic and other toxic elements such as cadmium, lead and mercury may lead to a wide range of adverse health effects. In relation to this, it is well established that the diet is the main route of exposure to both essential and toxic trace elements. In recent years, the levels of toxic elements in foodstuffs have been measured in numerous studies conducted all over the world. Scientific databases show that, in the current century, China and Spain have been the countries where the most surveys on this topic have been carried out. Regarding Spain, Catalonia is the region where most studies aimed at determining the concentrations of trace elements in food have been performed. The objective of this paper was to review the studies carried out in Catalonia on the concentrations of As and toxic metals (including Cd, Hg and Pb) in food, as well as their estimated dietary intakes (EDIs). The results of total diet studies (TDSs) and duplicate diet (DD) studies have been included. For most toxic elements, a continued reduction in the EDI has been observed. This reduction is associated with a decrease in their concentrations in food, and with certain changes in dietary habits. Fish and seafood is the food group showing the highest content of toxic elements. However, none of the adult groups exceeded-in general-the safety thresholds for As, Cd, Hg and Pb established by the European Food Safety Agency (EFSA).

Abstract
(1) Background: "Blue food" is a recently coined term referring to seafood, emphasizing health benefits and sustainability. This study compares nutrient intake levels between Koreans who consume fish and shellfish and those who do not. (2) Methods: Data from the eighth Korea National Health and Nutrition Examination Survey (2019-2020) were used. A total of 9442 individuals were analyzed (≥1 year old). A complex sample design was applied. (3) Results: Younger individuals aged 9 to 29 consumed less fish and shellfish, while those with higher education and income levels consumed more. Compared with the non-consumption group, individuals in the fish and shellfish consumption group exhibited a higher nutrient density in their diets, excluding total fat, saturated fatty acids, monounsaturated fatty acids, and riboflavin (p < 0.01). They also had a higher proportion of nutrient intakes relative to the Recommended Nutrient Intake level for all nutrients than the non-consumption group (p < 0.001), particularly in eicosapentaenoic acid and docosahexaenoic acid intakes. Conversely, the non-consumption group had a higher proportion of nutrient intakes below the Estimated Average Requirement compared with the consumption group. (p < 0.001). (4) Conclusions: Individuals consuming blue food exhibited higher levels of nutrient intake. Developing strategies to promote the consumption of blue food, considering factors such as age, education, and income, is essential.

Abstract
Fish is an important source of animal protein for local communities in the Amazon basin, whose food safety must be assured. However, certain potential toxicants elements, can bioaccumulate in fish species, which inhabit anthropogenically polluted waters, ultimately posing a risk to human health. In the present study, the concentrations of nine elements (Al, As, Cd, Cr, Cu, Hg, Ni, Pb and Zn) were determined in raw and cooked samples of eight fish species consumed in Santarém (northern Brazil, Amazon biome). The potential for non- carcinogenic human health risks linked to the consumption of cooked fish were evaluated for adults and children in two different scenarios. Four carnivores, three omnivores and one detritivore, all of them regularly marketed and consumed by the Santarém population, were the target species. The safety reference values set by national and international guidelines for humans, in both raw and cooked preparations, were used. In most cases, the cooking process showed a trend to increase elements concentrations compared to raw samples, however the differences were not significant. Moreover, the risk assessment showed danger for children in relation to Hg from the consumption of fish, in both scenarios evaluated. For adults, in one of the scenarios, there was a health risk associated to Hg as a result of carnivorous fish consumption. In a context of combined exposure to all elements, children were at risk when consuming fish, especially carnivorous and omnivorous species. For adults, the mixture of elements posed a risk to health human only for carnivorous fish consumption. The results reveal an environmental scenario of Hg contamination, which requires monitoring actions to preserve the aquatic biodiversity and human health in the Brazilian Amazon biome.

Abstract
The release of endocrine-disrupting chemicals (EDCs) into the aquatic environment, specifically the oceans, is increasing, leading to adverse effects on the marine ecosystem. Using optimized QuEChERS extraction methods, the study created the first contamination profiles of 44 EDCs, including organic ultraviolet compounds, pharmaceutically active compounds, hormones, and phthalate esters, in 114 fish muscle samples from five species collected along the Vietnamese coast. The study found that largehead hairtail exhibited the highest total EDCs at 208.3 ng g-1 lipid weight (lw), while Indian catfish displayed the lowest concentration at 105.5 ng g-1 lw. Besides, the study observed notable variations in the total EDCs across distinct fish species. This study hypothesized that the marine economic characteristics of each research location have a significant role in shaping the pollution profile of EDCs found in fish specimens taken from the corresponding area. As a result, a notable disparity in the composition of organic ultraviolet compounds has been observed among the three regions of North, Central, and South Vietnam (Mann-Whitney U test, p < 0.05). Despite these findings, EDC-contaminated fish did not pose any health risks to Vietnam's coastal population.

Abstract
Environmental regulations were concerned with support in reaction to the enormous ecological harm caused by mining in the past. Because mining, dumping, and tailings can generate waste and radioactive consequences, society must develop methods for successfully treating mining waste from mine dumps, tailings, and abandoned mines. Strict policies associated with environmental regulations to avoid the possible dangers caused by garbage and radioactivity. Several characteristics, including background contamination from natural sources related to mineral deposits, contamination from industrial activities in three-dimensional subsurface space, a problem with long-term remediation following mine closure, a problem with secondary contaminated areas near mine sites, land use conflicts, and abandoned mines, distinguish it. Reusing and recycling mine waste occasionally results in cost-effective advantages in the mining sector by offsetting natural resource requirements and reducing the volume of garbage materials. These benefits stem from recycling and reusing mining waste, which can lower the amount of garbage that must be managed. This review focuses on realistic strategies for anticipating mining exploration control and attempts to examine those methods in-depth. Management strategies for limiting the environmental impact of mining dumps, stockpiles, and tailings were discussed. The environmental assessment was also mentioned to carry out specific control and take preventive actions.

Abstract
Seaweeds are widely consumed as natural seafood in various Asian countries. Chemical contaminants, such as pesticide residues (PRs), can contaminate it due to its high bio-accumulation nature. Limited research exists on the presence of PRs in edible seaweeds, their decrease in levels during cooking processes, and the evaluation of hazard indices and associated health risks to humans. This study investigated the effects of different cooking methods on the levels of organochlorine pesticides in Caulerpa racemosa seaweed. It also assessed the potential health risks associated with consuming seaweed by estimating daily intake, hazard quotient, and hazard index. The PRs were reduced after different cooking methods. The impact of thermal cooking on PRs in C. racemosa was found to be notably beneficial. The PRs decreased following MWC, boiling, and steam cooking. Several PRs were analyzed, and endrin, DDT, endosulfan, and cypermethrin were found to be the most prevalent. The HQ and HI values for raw and cooked seaweeds were found to be below one, suggesting that the PRs in C. racemosa pose no risk to consumers of seaweed. In summary, thermal cooking proves to be an efficient method for minimizing PRs, while the cooking of seaweeds ensures a high level of safety during consumption.

Abstract
The objectives of this study were to assess concentrations of three groups of persistent organic pollutants (POPs) and polycyclic aromatic hydrocarbons (PAHs) in 44 fish oil-based food supplements, to estimate their daily intake by consumers and, to evaluate the compliance of the oil samples with the oil origin declarations (cod liver oil or fish oil). The concentrations of ∑PCBs (7 congeners), OCPs (19 compounds, represented mainly by ∑DDTs), ∑PBDEs (10 congeners), and ∑PAHs (16 compounds) found in samples ranged between 0.15-55.7 µg kg-1, 0.93-72.8 µg kg-1, 0.28-27.5 µg kg-1, and 0.32-51.9 µg kg-1, respectively. Besides, the authenticity of the oils was assessed based on the fingerprints obtained by DART-HRMS, an ambient mass spectrometry technique. Four samples declared as fish oil were probably prepared from cod liver oil, which is much cheaper. Furthermore, these samples contained elevated concentrations of halogenated POPs when compared to supplements produced from fish oil.

Abstract
Fish are good bio-indicators of the health status of the aquatic environment and can be used as biomarkers to assess the aquatic behavior of environmental pollutants, the exposure of aquatic organisms, and the health risk for consumers. Goldfish are a significant bioindicator in the Lake Trasimeno aquatic system (Umbria, Italy). This study aimed to characterize the health status and the chemical and biotic contamination of Lake Trasimeno to define its anthropogenic and natural pressures and the risk associated with consuming its fishery products. 114 determinations were performed on Carassius auratus samples from 2018 to 2020, and the occurrence of brominated flame retardants, non-dioxin-like polychlorinated biphenyls, heavy metals, and microplastics was analytically investigated. Dietary exposure assessment, risk characterization, and benefit-risk evaluation were performed for schoolchildren from 3 to 10 years old. Flame-retardants registered high levels of non-detects (99% for polybrominated diphenyl ether and 76% for hexabromocyclododecanes), while polychlorinated biphenyls were found in all samples with a maximum level of 56.3 ng/g. Traces of at least one heavy metal were found in all samples, though always below the regulatory limit. Microplastics were found with a 75% frequency of fish ingesting at least one particle. Dietary exposure and risk characterization reveal negligible contributions to the reference values of all contaminants, except for mercury, which reached up to 25% of admissible daily intake. The benefit- risk assessment highlighted that the benefits of freshwater fish intake outweigh the associated risks. The examination of goldfish as indicator fish reveals the quality of Lake Trasimeno's aquatic environment and the safety of its products.

Abstract
Introduction Sprat (Sprattus sprattus) is an underutilized fish species that may act as an economic and sustainable alternative source of protein due to its good amino acid (AA) profile along with its potential to act as a source of multiple bioactive peptide sequences. Method and results This study characterized the physicochemical, technofunctional, and in vitro antioxidant properties along with the AA profile and score of a sprat protein enzymatic hydrolysate (SPH). Furthermore, the impact of the SPH on the growth, proliferation, and muscle protein synthesis (MPS) in skeletal muscle (C2C12) myotubes was examined. The SPH displayed good solubility and emulsion stabilization properties containing all essential and non-essential AAs. Limited additional hydrolysis was observed following in vitro-simulated gastrointestinal digestion (SGID) of the SPH. The SGID-treated SPH (SPH-SGID) displayed in vitro oxygen radical antioxidant capacity (ORAC) activity (549.42 μmol TE/g sample) and the ability to reduce (68%) reactive oxygen species (ROS) production in C2C12 myotubes. Muscle growth and myotube thickness were analyzed using an xCELLigence™ platform in C2C12 myotubes treated with 1 mg protein equivalent.mL-1 of SPH-SGID for 4 h. Anabolic signaling (phosphorylation of mTOR, rpS6, and 4E-BP1) and MPS (measured by puromycin incorporation) were assessed using immunoblotting. SPH-SGID significantly increased myotube thickness (p < 0.0001) compared to the negative control (cells grown in AA and serum-free medium). MPS was also significantly higher after incubation with SPH-SGID compared with the negative control (p < 0.05). Conclusions These preliminary in situ results indicate that SPH may have the ability to promote muscle enhancement. In vivo human studies are required to verify these findings.

Abstract
Different anthropogenic activities as well as natural sources contribute enormously towards various heavy metal contaminations in aquatic habitats. Cadmium (Cd) is one of most prevalent and toxic heavy metals with a long half life. Unlike terrestrial animals, exposure of Cd in fishes may happen not only through feeds but also from its habitat water. Bioaccumulation of Cd in fishes occurs in many tissues, but mainly in gill, liver, kidney, skin, and muscle. The concentrations of Cd in fish tissues depend upon the extent and duration of Cd exposure, species and age of fishes, dietary minerals and antioxidant concentrations, and habitat water quality. Specific histopathological observations in liver, kidney, and gill are useful to understand the effects of Cd, which could help to determine the ameliorating methods to be adopted. Exposure of Cd exerts several adverse effects on general growth and development, reproductive processes, osmoregulation, morphological and histological structures, stress tolerance, and endocrine system, mainly due to changes in biological functions induced by differential expressions of several genes related to oxidative stress, apoptosis, inflammation, immunosuppressions, genotoxicity, Cd chelation and carbohydrate metabolism. Chronic biomagnifications of Cd exceeding the permitted level may be harmful not only to the fishes itself but also to humans through food chains. Amelioration of such toxic heavy metal that has been categorized as a potent carcinogenic in humans is of utmost importance. Main modes of amelioration encompas reducing oxidative damages by promoting the antioxidative defenses, decreasing Cd absorption, increasing excretion through excretory system and improving the tolerance of fishes to Cd toxicity. Many amelioration measures such as use of minerals (for example, zinc, calcium, and iron), vitamins (vitamin C, A, and E), different herbs, probiotics and other agents (taurine, bentonite, chitosan, zeolite, and metallothionein) have been explored for their effective roles to reduce Cd bioaccumulation and toxicity symptoms in fishes. The present review discusses bioaccumulation of Cd, histopathological alterations, oxidative stress, synergism-antagonism, and gene regulation in different tissues, and its amelioration measures in fishes.

Abstract
Mussels are an important source of the essential omega-3 polyunsaturated fatty acids (n-3 PUFAs), which play a critical role in human health, preventing a variety of diseases. This study aimed to evaluate, for the first time, the combined effect of glyphosate (Gly) and culturing temperature on the lipid content and fatty acid (FA) profile of the Mediterranean mussel M. galloprovincialis. In addition, a number of lipid nutritional quality indices (LNQIs) were applied as important tools to assess the nutritional value of food. Mussels were exposed for 4 days to two Gly concentrations (1 mg/L, 10 mg/L) and two temperatures (T°: 20-26 °C). Statistical analysis showed significant effects of T°C, Gly, and T°C × Gly interaction (p < 0.05) on the lipid and FA profiles of M. galloprovincialis. Mussels exposed to 10 mg/L Gly at 20 °C showed a decrease in eicosapentaenoic (EPA, from 14.6% to 12% of total FAs) and docosahexaenoic acids (DHA, from 10% to 6.4% of total FAs), compared to the control mussels. Both stressors caused a considerable decrease in n-3 PUFAs, which resulted in a less favorable n-6/n-3 PUFA ratio. Overall, this study demonstrated a decline in the nutritive values of mussels, most prominently in groups exposed to 10 mg/L Gly at a temperature of 20 °C and in those exposed to a temperature of 26 °C. This was confirmed by such LNQIs as EPA + DHA, PUFA/Saturated FAs, atherogenic and thrombogenic indices (AI and TI), the health promoting index (HPI), and the unsaturation index (UI). Further investigations into chronic exposure to both stressors are desirable to predict the impacts on aquatic ecosystems and food quality.

Abstract
Polychlorinated diphenyl ethers (PCDEs) are a class of synthetic halogenated aromatic compounds, which have gradually attracted widespread attention due to potential environmental risks to humans and ecosystems. This paper presents a literature review of research on PCDEs using PubMed, Web of Science and Google Scholar as search engines/databases with no constraints on publishing year or number. A total of 98 publications on the sources, environmental levels, environmental behavior and fate, synthesis and analysis and toxicology of PCDEs were retrieved. Existing studies have shown that PCDEs widely exist in the environment with the ability of long-range transport, bioaccumulation and biomagnification, which are almost comparable to polychlorinated biphenyls. They can elicit adverse effects including hepatic oxidative stress, immunosuppression, endocrine disorders, growth retardation, malformations, reduced fertility and increased mortality in organisms, among which some seem to be related to the activation of the aryl hydrocarbon receptor. PCDEs can be metabolized into other organic pollutants, such as hydroxylated and methoxylated PCDEs and even polychlorinated dibenzo-p-dioxins and furans through biotransformation, photolysis and pyrolysis reactions in the environment. Compared with reviews on PCDEs published previously, some new information and findings are summarized in this review, such as new sources, current environmental exposure levels, main metabolism pathways in aquatic organisms, acute toxicity data for more species and relationships between structural parameters and toxicity and bioaccumulation potentials of PCDE congeners. Finally, current research deficiencies and future research perspectives are proposed to facilitate the assessment of health and ecological risks of PCDEs.

Abstract
In the context of the problem of the organization of high-quality nutrition for consumers, the ways of its solution by expanding the range of products based on raw fish materials are considered. The necessity of creating combined semi-finished products with adequate substitution for plant components is justified, which allows increasing the amount of dietary fiber consumed and reducing the caloric content of the product, enriching minced fish with carbohydrates (polysaccharides and dietary fibers), amino acids, as well as macro- and microelements. Thus, a comparative analysis of the content of essential amino acids in the muscle tissue of fish in the inland waters of the Republic of Kazakhstan with some oceanic and marine fish showed that the content of amino acids such as leucine, lysine, threonine, phenylalanine is slightly higher. They are characterized by a high content of essential amino acids limiting the biological value, g/100 g of protein: lysine – 8.8-11.6; methionine – 2.1-3.1; tryptophan – 1.0-1.1. The data analysis shows that a higher pH value of fish meat corresponds to a higher elasticity value. The pH shift to the alkaline side of more than 7.5, although it promotes the release of myosin, reduces the elasticity of meat. In our study, we used minced fish from Carp, Pikeperch, Bream, and Pike. It was found that with the addition of 30% of the functional supplement of kelp, the moisture-retaining capacity of the fish semi-finished product was 48.6% and pH 6.67. With the addition of 30% of the functional pumpkin additive, the moisture-retaining capacity of the fish semi-finished product was 49.27% and pH 6.04. Developing semi-finished fish products with plant components makes it possible to obtain products of high biological value with a juicy consistency, which meets modern trends in healthy nutrition.

Abstract
Mining activities can result in severe heavy metal contamination in freshwater ecosystems and lead to significant health risks. In this study, eight heavy metal concentrations in the water, sediments and aquatic organisms, including eighteen fish species, two shrimp species, one crab species and one amphibian frog species of the abandoned Shimen Realgar Mine area, were analysed. The results showed that most of the heavy metals detected in water, sediments and fish from the mine area were at relatively high levels, and historical realgar mining activities were a major source of arsenic (As) contamination in this area. We concluded that heavy metal bioaccumulation is species- and tissue-specific and is different for each element and sampling site. The concentration of heavy metals in fish was generally lower than that of the other aquatic organism species; these concentrations varied among different species with different feeding habits and habitats. The study showed that heavy metal concentrations were lower in muscle tissue than in other tissues (e.g. liver, skin, exoskeleton). A significant positive correlation between the As concentrations in sediment and fish was observed, indicating that sediment is an important factor affecting As accumulation in fish; thus, for fish protection, controlling the sources of water and sediment contamination is essential. Furthermore, the estimated daily intake (EDI) of all metals was acceptable, and the corresponding target hazard quotient (THQ) and total target hazard quotient (TTHQ) values were less than 1; hence, there was no serious health risk through fish consumption in this area.

Abstract
The chronic exposure to heavy elements, i.e. Ni, As, Cd, Hg and Pb the evaluation of toxicological risk through intake of raw or seaweed based foods for Belgian consumers is presented in this study. The bioaccessible fraction, obtained for different metals, were used to refine the exposure values to avoid overestimation in the reported exposures. The decrease in the exposure values was higher for As with average bioaccessible fraction of 56.8% followed by Pb, Cd, Ni and Hg. The pure seaweeds show more approximation or exceeding of toxicological limits compared to the composite foodstuffs. For all elements (except Hg), toxicological limits are approached at the maximum exposure situation due to consumption of certain seaweed-based foods. Further, the study demonstrates that the introduction of innovative foods on an emerging market may result in potential health issues due to the shift in consumption patterns as the increased consumption of seaweed and their derivatives in Europe.

Abstract
Many women of childbearing age, and pregnant and nursing women in particular, do not consume enough seafood to derive optimal health benefits for themselves and their children. We sought to identify how seafood consumption advice could be designed to encourage pregnant women to eat recommended amounts of seafood. In three focus groups with pregnant or recently pregnant American women, we examined reactions to three aspects of seafood consumption advice. First, we found focus group participants preferred gain-framed statements emphasizing benefits of taking action vs. loss-framed statements emphasizing costs of failing to take action. Many participants indicated the gain-framed statements would encourage them to eat seafood and increase their consumption. Second, we compared responses to a recommendation to eat seafood and a recommendation to eat lower mercury seafood because fear of mercury is a known barrier to seafood consumption by pregnant women. We found no clear preference in our focus groups for either message, suggesting potential value of both messages in communication. Lastly, we examined preferences for systems of categorizing seafood into different consumption categories where the number of categories and the number of species listed in each category varied. We found shorter, dichotomous lists of species to eat and avoid were preferred by some participants for their clarity and ease of use. Longer, more comprehensive lists with additional species and consumption categories (e.g., eat once a week), however, were preferred by many participants because they provided more options and were more likely to be used as a reference. These findings suggest using a layered approach to communication might be helpful by providing short, dichotomous lists of best seafood to eat and seafood to be avoided followed by a link to a longer, more complete list of recommended seafood to be eaten and seafood that should be avoided.

Abstract
Regular consumption of seafood and, in particular, fish has been associated with important health benefits. A fish product that has been increasingly included in the human nutrition is roe. Despite its nutritional value has been established (fatty acid profile and protein content), the knowledge of the composition of its aqueous extracts is still limited. This work describes the bioactive compounds profile in the roe-derived aqueous extracts of three different marine species (sardine, horse mackerel and sea bass) using a method based on liquid chromatography coupled to high-resolution mass spectrometry with an electrospray ionisation source (LC-ESI/HRMS). The presence of substances with well-known nutritional and functional properties (e.g., antioxidant and anti-inflammatory properties) was demonstrated, namely essential amino acids (e.g., taurine), peptides (e.g., anserine and carnosine), B-group vitamins (e.g., nicotinamide) and gadusol. Therefore, roe-derived aqueous extracts are excellent sources of bioactive compounds and may be used as a font of functional components for several medical and veterinary applications.

Abstract
Fish makes an important part of the Mediterranean diet, which has been scientifically proven to help preserve human health by protecting against major chronic and inflammatory diseases. Eating fish and seafood is very important, not only for its proven health benefits but also for its positive impact on the environment. Due to many fish and seafood significant positive effects on human health, this study aimed to investigate the socio-demographic factors associated with the consumption of fish and seafood in the population of Primorsko-goranska County in Croatia. Another aim was to determine people's attitudes, choices, and reasons for the consumption of fish and seafood. Self-reported data from 2,910 participants were used. According to the European dietary recommendations for fish consumption, the participants were divided into two groups; the very low to low fish consumption group and the moderate to high fish consumption group, in order to examine the differences in socio-demographic and lifestyle variables, and their attitudes, opinions, and reasons for fish and seafood consumption. More fish and seafood were consumed by women, the elderly, the more educated, non-smokers, and more physically active participants. Age, the highest level of education, and a diet even moderately adherent to the Mediterranean diet was found to significantly increase the likelihood of recommended fish consumption. Participants considered the best reasons to consume more fish lower prices, buy much more locally produced fishery products, and prefer to eat wild-caught fish rather than farmed fish. The study has found a slight increase in fish consumption, although still lower than the European average. It also showed significant socio-demographic associations, also the reasons and attitudes toward higher fish and seafood consumption of the Croatian population. The obtained research data are valuable for planning future public health programs in Croatia aimed at greater consumption of fish and seafood, as well as their promotion as an important part of a sustainable diet.

Abstract
BACKGROUND Fish is a dietary staple in the United States. Risk of exposure to persistent contaminants through fish consumption is a significant health concern. Great Lakes basin states, along with the US Environmental Protection Agency and the Great Lakes Consortium for Fish Consumption Advisories, have developed and continuously updated fish consumption advisories specifically for the Great Lakes basin residents. OBJECTIVES To characterize Great Lakes basin residents' fish consumption and advisory awareness, we conducted a point-in-time survey to describe fish consumption habits and awareness of state and EPA/FDA fish advisories. METHODS We used a randomized, address-based sampling approach to recruit respondents from the eight Great Lakes basin states. Weighted survey analysis procedures were used to estimate population prevalence of fish consumption habits, state and EPA/FDA advisory awareness, and demographic and background characteristics. Logistic regression models were used to assess the associations between demographic and background factors and fish consumption and awareness of advisories, respectively. RESULTS About 92% of respondents, representing an estimated 61 million adults, reported eating fish in the last 12 months. About 64% of respondents only consumed commercial fish, and an estimated 5 million fish consumers exceeded the EPA/FDA recommended limit for fish meals. Minorities were more likely to exceed the EPA/FDA recommended limit. About half of the respondents were aware of state or EPA/FDA advisories; however, minorities and women were less aware of the EPA/FDA advisory. After adjusting for demographic characteristics, sportfish consumption was significantly associated with state advisory awareness; commercial fish consumption was significantly associated with EPA/FDA awareness. DISCUSSION Most respondents only consumed commercial fish, but an estimated 18.6 million adults consumed sportfish. While half of the fish consumers were aware of state or EPA/FDA advisories, minorities and women continue to be less aware of fish advisories. Improved outreach strategies are needed to inform them about safe fish-consumption guidelines.

Abstract
Food safety is crucial in today's competitive trading market, as it directly affects human health and promotes seafood exports. The effects of thermal processing (boiling, frying, grilling, and microwave cooking) on pesticide residues (PR) in P. vannamei were assessed. The PR in raw and processed shrimp ranged from 0.007 to 0.703 μg/kg for uncooked/raw, not detected (ND) to 0.917 μg/kg for boiled, ND to 0.506 μg/kg for fried, ND to 0.573 μg/kg for grilled and ND to 0.514 μg/kg for microwave cooked shrimps. The Endrin, endosulfan sulfate, and heptachlor were predominant PR found in the raw and processed shrimp. The PR content in raw and cooked shrimps were below the maximum residue limits (MRL) set by the Codex Alimentarius Commission (2021) and the European Commission (86/363/1986 and 57/2007). The estimated daily intake (EDI) of PR from raw and processed shrimps were below the ADI prescribed by CAC. The hazard quotient (HQ) and hazard ratio (HR) values were <1, indicating no non-carcinogenic or carcinogenic health implications through shrimp consumption. The estimated maximum allowable shrimp consumption rate (CRlim) suggests an adult can eat >100 shrimp meals/month, which is over the USEPA's (2000)recommendation of >16 meals/month without health issues. The Effect of thermal processing was detected in the following order: boiling < grilling < frying < microwave cooking. The processing factor (PF < 0.7), paired t-test (t < 0.05), Tukey post hoc (p < 0.05) test, Bray-Curtis similarity index, and matrix plot exhibited that all the four thermal processing methods have a considerable impact on pesticides in the processed shrimps. But frying (59.4%) and microwave cooking (60.3%) reduced PR far beyond boiling (48.8%) and grilling (51.3%). Hence, we recommend frying and microwave processing are better methods for minimizing PR in seafood than boiling or grilling.

Abstract
Implications of the ‘changing world’ for nutrition and nutritionists are considered, using the UK within a global context as an illustration. The first section summarises the slow recognition by policy makers of the significance of the changing world of food and nutrition. The second section ‘Food system stress is now at a critical level’ considers the present scale of global food system stress and the failure so far sufficiently to narrow the gap between evidence and policy change. The year 2021 was earmarked when three major UN conferences had the opportunity to chart food changes ahead. The third section ‘Multi-criteria analysis helps frame 21st century nutrition science’ proposes that multi-criteria analysis is an essential methodology for nutrition within this more complex policy world; nutrition studies can no long exclude social and environmental criteria. The penultimate section ‘Nutrition science can reconnect its life science, social and environmental nutrition traditions to contribute to new paradigm formation’ suggests that nutrition science can now recombine three traditions within its own history to address this complexity: social nutrition, environmental nutrition and life sciences. The final section ‘Priorities ahead’ concludes that this multi-criteria approach to nutrition offers new routes for science and policy influence. Five priorities are identified: (1) clarification of the features of a good food system; (2) new sustainable dietary guidelines which integrate different determinants of sustainability; (3) helping consumer engagement with change; (4) developing improved policy frameworks and (5) contributing to professional channels in these processes. In the UK, while the challenge of narrowing the gap between evidence, policy and change remains daunting, the risks of not attempting to improve the transition to an ecologically sound public health nutrition are even greater.

Abstract
The aim of this work was to collect and harmonize the results of several studies achieved over the years, in order to obtain a database of georeferenced observations on polycyclic aromatic hydrocarbons (PAHs) in Western and Central Mediterranean seafood. For each observation, some information on the taxonomy and the ecology of the sampled species are reported, as well as details on the investigated hydrocarbon, and spatial and temporal information on sampling. Moreover, two health risk indexes were calculated for each record and included in the database. Through several statistical methods, we conducted a meta-analysis of the data on some of the species in this database, identifying trends that could be related to the biology of the investigated organisms, as well as to the physico-chemical properties of each hydrocarbon and to the oceanographic characteristic of this part of the Mediterranean. The analysis of the data showed that, at a consumption rate like the one typical of the Italian population, seafood caught from the area considered in the present work seems to pose a minimal risk to health. However, we also found evidence of an increasing trend of PAH concentrations in Mediterranean mussels, pointing to the need for constant monitoring.

Abstract
Mussels have a particular nutritional value, representing a highly valued food source and thus sought after worldwide. Their meat is a real culinary delicacy, rich in proteins, lipids, carbohydrates, trace elements, enzymes, and vitamins. The seasonal variation of mussels’ biochemical composition has been studied to determine the best harvesting period to capitalize on various biologically active fractions. In this work biochemical determinations have been performed on fresh flesh samples of Mytilus galloprovincialis specimens from the Black Sea coast to study seasonal variations in mussels’ biochemical compounds. An analysis of significant lipid classes and the fatty acid composition of lipid extracts obtained from mussel flesh has also been performed. Since mussels retain pollutants from the marine environment, in parallel, the concentration of heavy metals in the meat of mussels collected for the analysis of the chemical composition was investigated. The impact and risk of heavy metal poisoning due to food consumption of mussels contaminated due to pollution of the marine harvesting area was evaluated by the bio-concentration factor of metals and estimated daily intakes of heavy metals through mussel consumption.

Abstract
Risk-benefit Assessment (RBA) is an emerging methodology in the area of Food and Nutrition that offers a simultaneous evaluation of both risks and benefits linked to dietary choices. Communication of such research to consumers may present a challenge due to the dual nature of RBA. We present a case study of a communication strategy developed for the NovRBA-project. The NovRBA-project (Novel foods as red meat replacers—an insight using Risk Benefit Assessment methods) performed a risk-benefit assessment to evaluate the overall health impact of substituting red meat (beef) by a novel food (house cricket), considering the microbial, toxicological and nutritional characteristics of the respective dietary choices. A literature review of risk perceptions and acceptance of beef and insects as food formed the basis of the communication strategy for the study's results, drawing on environmental and emotional as well as health-related motivations to consume or avoid either food and considering the sociodemographic characteristics of likely consumers. Challenges and future directions for consumer protection organizations communicating findings of risk-benefit analyses on food safety are discussed.

Abstract
Background/Aim. Dietary intake of n-3 long-chain polyunsaturated fatty acids (LC-PUFA) is important in prevention and treatment of different diseases. In general population, the average intake of n-3 LC-PUFA is often significantly lower than recommended levels. Fish lipids are rich sources of these fatty acids, of which the most important are eicosapentaenoic (20:5 n-3, EPA) and docosahexaenoic (22:6 n-3, DHA) fatty acids. This study was designed to determine and compare fat, fatty acids and lipid quality indices in 10 commercial fish species available on the Serbian market, as well as relation between their price and nutritional value. Methods. Freshwater fish originated from the Danube River in the Belgrade Region, while seawater fish were mostly from the Adriatic Sea. A gas chromatography method was used to define fatty acids in 40 fish samples after lipid extraction. Cost-minimization analysis was conducted to assess the economic utility. Results. Seawater fish had a significantly higher value of flash lipid quality compared to the freshwater fish (p < 0.05). Value of hypercholesterolaemic fatty acids (OFA) for the freshwater group was 18.70 (17.40?21.30) while the seawater group had a similar range of values 18.90 (17.55?22.75). Hypocholesterolaemic fatty acids (DFA) also showed similar ranges for both groups: 68.80 (66?70.20) for freshwater and 68.40 (64.85?73.05) for seawater group. The ratio of DHA/EPA ranged from 1.8 for sardine samples and up to 10 for tuna samples, indicating that the amount of DHA in natural samples exceeds the amount of EPA in many cases. The values of atherogenic (AI) and thrombogenic index (TI) were lower than 1 for all analysed samples. Conclusion. Sardine and mackerel had the highest content of n-3 LC-PUFA and presented the least expensive sources of EPA and DHA. The low values of AI and TI obtained from studied fish indicate its benefits from a health point of view.

Abstract
Eating seafood has numerous health benefits; however, it constitutes one of the main sources of exposure to several harmful environmental pollutants, both of anthropogenic and natural origin. Among these, methylmercury and polycyclic aromatic hydrocarbons give rise to concerns related to their possible effects on human biology. In the present review, we summarize the results of epidemiological investigations on the genetic component of individual susceptibility to methylmercury and polycyclic aromatic hydrocarbons exposure in humans, and on the effects that these two pollutants have on human epigenetic profiles (DNA methylation). Then, we provide evidence that Mediterranean coastal communities represent an informative case study to investigate the potential impact of methylmercury and polycyclic aromatic hydrocarbons on the human genome and epigenome, since they are characterized by a traditionally high local seafood consumption, and given the characteristics that render the Mediterranean Sea particularly polluted. Finally, we discuss the challenges of a molecular anthropological approach to this topic.

Abstract
Sea cucumbers represent an important part of the diet in Asian and Pacific regions and are also used in traditional medicine. These habits have led to the overexploitation of local sea cucumber populations in these areas, driving the pursuit of new stock regions, such as Mediterranean areas. In Italy, contrarily to that observed for other Mediterranean countries, the exploitation of sea cucumber stocks is not extensive, which opens a new market opportunity. Thus, from a food safety perspective, this work aims at reporting the first assessment of trace metal concentrations (As, Cd, Cr, Cu, Hg, Ni, Pb) in the edible tissues of Holothuria polii and Holoturia tubulosa collected in Sardinia, the second-largest island in the Mediterranean Sea. Metal concentrations found in H. polii were generally higher than in H. tubulosa. However, in both species, they were lower than those reported for other areas of the Western Mediterranean. Cd, Hg, and Pb were below the limits established for seafood in Europe. As concentrations were in the range of those measured in other commercial seafood species in the Mediterranean. Thus, these species may be harvested and traded to fulfil the demands of local and international markets.

Abstract
Abstract Dietary intake of polychlorinated dioxins and furans (PCDD/Fs) and dioxin‐like polychlorinated biphenyls (dl‐PCBs) from various foods (fish and seafood, meat and meat‐based products, milk and dairy products, hen eggs, olive oil and fats) was investigated for various sex/age groups of the Italian population. The concentrations of PCDD/Fs and dl‐PCBs and their contribution to total TEQ values varied depending on food matrix. Fish (0.50 pg WHO‐TEQ/g wet weight) and seafood (0.16 pg WHO‐TEQ/g wet weight) showed the highest mean concentrations of PCDD/Fs plus dl‐PCBs, followed by meat (1.70 pg WHO‐TEQ/g lipid weight), meat based products (1.03 pg WHO‐TEQ/g lipid weight), milk and dairy products (0.78 pg WHO‐TEQ/g lipid weight), hen eggs (0.71 pg WHO‐TEQ/g lipid weight), fats (0.27 pg WHO‐TEQ/g lipid weight) and olive oil (0.09 pg WHO‐TEQ/g lipid weight). In all samples WHO‐TEQ PCDD/F plus dl‐PCB concentrations fulfilled the European Union food law, except in pork loin samples (1.39 pg WHO‐TEQ/g lipid weight). Differences in exposure depending on the sex/age groups (children > teenagers > adults > elders) and hypotheses considered (lower bound and upper bound) were encountered. Non‐cancer risk values showed a low exposure. Carcinogenicity risk results revealed that highly exposed individuals were distributed over all sex/age groups, even though the proportion of individuals exceeding the safe limit was higher in children. These data once again underline the importance of trying to control the levels of these contaminants in fishery products, particularly in fish, who represents one of the main exposure sources for consumers. Practical Application This paper may help the consumer in making food choices to minimize the exposure risk to dioxins, furans and PCBs

Abstract
The digestion properties of sturgeon myofibrillar protein (MF) treated by low temperature vacuum heating (LTVH) at different processing temperatures (50, 60 and 70 °C) and times (15 and 30 min) were studied and compared with those of sturgeon MF treated by traditional cooking (TC). The results showed that as the temperature and time increased, the protein digestibility decreased, whereas the particle size and protein aggregation increased. It was observed that the band intensity of myosin heavy chain and myosin heavy chain 7 weakened; however, the band intensity of actin showed little change. MALDI-TOF-MS analysis revealed that the digested products of the samples treated by LTVH had a larger proportion of 750-1000 Da peptides than those treated by TC, which was consistent with the trend of the number of unique peptides identified in each group. Fourier transmission infrared (FT-IR) spectroscopy showed that the contents of α-helices and β-sheets exhibited negative and positive correlations with the temperature, respectively. Overall, compared to TC, LTVH can relieve the heat stress of protein conformation, reduce protein aggregation to improve the accessibility of the protein to digestive protease, and increase digestibility.

Abstract
Since seafood is a significant source of nutrients with known health benefits, its consumption is promoted as a healthy food choice. However, seafood can also contain potentially hazardous environmental pollutants. In the context of the ECsafeSEAFOOD FP7 project, FishChoice (www.fishchoice.eu) was developed as a communication tool to help to the consumers to take the most appropriate decisions on their seafood consumption habits. FishChoice relies on scientific information that allows calculating, on an individual basis, intakes of nutrients and pollutants derived from seafood consumption. In the framework of the EU-H2020 funded SEAFOODTOMORROW project, an optimized version of the online tool has been released. FishChoice is available in 25 EU languages with a customized list of seafood species per EU country, considering specific (national) consumption habits. The list of nutrients has been extended according to the latest EFSA recommendations, while pollutants data incorporate results from recent studies. The sustainability of seafood consumption has been also implemented, providing recommendations to help preserve the marine environment. Finally, FishChoice is suitable not only for consumers, but also health professionals, schools and academia, as well as the industrial sector and public health providers.

Abstract
PURPOSE OF REVIEW Our comparative analysis sought to understand the factors which drive differences in fish consumption advisories across the USA - including exposure scenarios (acute and chronic health risk, non-cancer and cancer health endpoints), toxicity values (reference dose, cancer slope factor, acute tolerance level), and meal size and bodyweight assumptions. RECENT FINDINGS Fish consumption provides essential nutrients but also results in exposure to contaminants such as PCBs and methylmercury. To protect consumers from the risks of fish contaminants, fish consumption advisories are established, most often by state jurisdictions, to estimate the amount of a certain fish species a person could consume throughout their lifetime without harm. However, inconsistencies in advisories across the USA confuse consumers and undermine the public health goals of fish advisory programs. To date, no rigorous comparison of state and national fish consumption advisories has been reported. Our work identifies discrepancies in key assumptions used to derive risk-based advisories between US states, reflecting differences in the interpretation of toxicity science. We also address the implications for these differences by reviewing advisories issued by contiguous states bordering two waterbodies: Lake Michigan and the Lower Mississippi River. Our findings highlight the importance of regional collaboration when issuing advisories, so that consumers of self-caught fish are equipped with clear knowledge to make decisions to protect their health.

Abstract
Aquaculture is seen as an essential requirement for improving food security and nutrition. Fish such as salmonids are a primary source of protein and essential nutrients. Aquaculture provide income for communities across the world and have a smaller carbon footprint than terrestrial animal-production systems. However, fish diseases are a constant threat, and the use of antibiotics is a source of concern due to its adverse impacts on the environment and human health. Chilean salmon farming has made several efforts to reduce the use of antibiotics for the eradication of piscirickettsiosis, a disease caused by the gram-negative bacteria Piscirickettsia salmonis. Excessive amounts of antibiotics continue to be used in Chilean aquaculture, playing an important role in the emerging public health crisis of antimicrobial resistance. Without doubt, P. salmonis is becoming increasingly resistant to important frontline antimicrobial classes, with severe implications for the future treatment of infectious human and animal diseases. Antimicrobial-resistant bacteria as well as antibiotic residues from salmon production are spreading in the environment, and thus both salmon food commodities and wild organisms can become a source of resistant bacteria that can be transmitted to humans as foodborne contaminants. This urgent threat needs to be addressed by implementing national strategies in compliance with international standards that include both prudent antimicrobial use in marine salmon farms and the investment towards a One Health approach, which combines human, animal and environmental health.

Abstract
Although sushi is considered as a healthy food, it can also be a route of exposure to chemical contaminants such as potentially toxic trace elements. In this study, we analysed the concentration of Cd, I, Ni, Pb and total Hg, as well as iAs and MeHg in sushi samples. Iodine levels were higher in samples containing seaweed, while iAs concentrations were greater in rice-containing sushi. In turn, total Hg and MeHg were significantly higher in sushi samples with tuna. Health risks of sushi consumption were assessed for three population groups: children, adolescents and adults. Considering an average intake of 8 sushi pieces for adults and adolescents, and 3 sushi pieces for children, the estimated exposure to MeHg by adolescents exceeded the tolerable daily intake set by EFSA, while MeHg intake by children and adults was below, but close to that threshold. A relatively high daily exposure of Ni and Pb was also found, especially for adolescents. Since this study focused only on the consumption of sushi, the contribution of other food groups to the overall dietary exposure should not be disregarded. It might lead to an exposure to MeHg and other trace elements above the health-based guideline values.

Abstract
PURPOSE OF REVIEW Healthy dietary patterns are recommended for prevention of cardiovascular disease, which remains the leading cause of morbidity and mortality globally. In this review, we discuss dietary patterns that are not only optimal for CVD prevention and management but also sustainable in maximizing health, environmental, and economic benefits. RECENT FINDINGS The growing literature on sustainable diets in the context of environmental sustainability includes subtopics of climate change, land use, biodiversity loss, freshwater use, and reactive nitrogen emissions. Similarly, economic sustainability, beyond the retail cost of food, extends to healthcare costs and the economic costs of environmental destruction related to current agricultural practices and food choices. Dietary patterns that are high in plant foods and low in animal foods could maximize health, environmental, and economic benefits; however, questions remain about how to best promote these patterns to achieve wider adoption in an environmentally and economically sustainable way.

Abstract
Eating fish is often recommended as part of a healthful diet. However, fish, particularly large predatory fish, can contain significant levels of the highly toxic methylmercury (MeHg). Ocean fish in general also contain high levels of selenium (Se), which is reported to confer protection against toxicity of various metals including mercury (Hg). Se and Hg have a high mutual binding affinity, and each can reduce the toxicity of the other. This is an evolving area of extensive research and controversy with variable results in the animal and epidemiologic literature. MeHg is toxic to many organ systems through high affinity for -SH (thiol) ligands on enzymes and microtubules. Hg toxicity also causes oxidative damage particularly to neurons in the brain. Hg is a potent and apparently irreversible inhibitor of the selenoenzymes, glutathione peroxidases (GPX), and thioredoxin reductases (TXNRD) that are important antioxidants, each with a selenocysteine (SeCys) at the active site. Hg binding to the SeCys inhibits these enzymes, accounting in part for the oxidative damage that is an important manifestation of Hg toxicity, particularly if there is not a pool of excess Se to synthesize new enzymes. A molar excess of Se reflected in an Se:Hg molar ratio > 1 is often invoked as evidence that the Hg content can be discounted. Some recent papers now suggest that if the Se:Hg molar ratio exceeds 1:1, the fish is safe and the mercury concentration can be ignored. Such papers suggested that the molar ratio rather than the Hg concentration should be emphasized in fish advisories. This paper examines some of the limitations of current understanding of the Se:Hg molar ratio in guiding fish consumption advice; Se is certainly an important part of the Hg toxicity story, but it is not the whole story. We examine how Hg toxicity relates also to thiol binding. We suggest that a 1:1 molar ratio cannot be relied on because not all of the Se in fish or in the fish eater is available to interact with Hg. Moreover, in some fish, Se levels are sufficiently high to warrant concern about Se toxicity.

Abstract
Shellfish, including various species of mollusks (e.g., clams, oysters, and mussels) and crustaceans (e.g., shrimp and crab), have been a cornerstone of healthy dietary recommendations. However, beyond providing basic nutrition needs, their health-promoting effects have been suggested to include inflammation reduction and prevention of various chronic non-communicable diseases. Currently, studies on the association between shellfish consumption and health outcomes have reported conflicting results. The present comprehensive review summarized the latest studies on shellfish consumption and synthesized the available evidence on the potential health benefits or risks of shellfish consumption. The findings demonstrated that shellfish consumption may increase the risk of hyperuricemia and gout but may not increase the risk of type 2 diabetes, cardiovascular diseases, and thyroid cancer. Adequate evidence is lacking on the association between shellfish consumption and the risk of colorectal cancer, pancreatic cancer, oral cancer, endometriosis, hip fracture, cognitive function, wheeze, eczema and food allergy. Raw shellfish consumption may cause gastroenteritis and other diseases infected by bacteria or viruses. This review thus provides consumers and other relevant stakeholders with the latest evidence-based information on the potential benefits and risks of shellfish consumption.

Abstract
We developed, validated, and confirmed with proficiency tests a fast ultra-high-performance liquid chromatography with diode array detector (UHPLC-DAD) method to determine histamine in fish and fishery products. The proposed method consists of two successive solid–liquid extractions: one with a dilute solution of perchloric acid (6%) and the second only with water. The instrumental analysis with UHPLC provides a very fast run time (only 6 min) with a retention time of approximately 4 min, a limit of quantification (LOQ) of 7.2 mg kg−1, a limit of detection (LOD) of 2.2 mg kg−1, a recovery around 100%, a relative standard deviation (RSD%) between 0.5 and 1.4, and an r2 of calibration curve equal to 0.9995. The method detected optimal values of the validation parameters and required a limited number of reagents in comparison to other methods reported in the literature. Furthermore, the method could detect histamine in a very short time compared with other methods. This method, in addition to being validated, precise, specific, and accurate, avoids wasting time, money, and resources, and limits the use of organic solvents.

Abstract
INTRODUCTION The diet of Poles became similar to the western style of nutrition. It is rich in saturated fats, it contains significant quantities of salt, and has very low fruit and vegetable content. On the other hand, introducing an incorrectly planned diet that eliminates animal products may be associated with the risk of deficiencies of certain vitamins and minerals. Taking into account the regular diet of Poles, a properly balanced vegetarian menu may be a better and safer choice for the proper functioning of the organism. AIM The analysis of the content of individual types of vegetarian diets and a comparison with the menus of the regular diet of the Polish population. MATERIALS AND METHODS 70 menus were subjected to a quantitative analysis, 10 menus for each 7 type of diet eliminating products of animal origin and regular diets without elimination. The caloricity of the designed diets was ±2000 kcal. The quantitative evaluation of the menus was performed using the Dieta 6d dietary program. Statistical significance was established at p ≤ 0.05. RESULTS It was observed that the regular diet of Poles (RD) featured the highest content of total fats, as well as saturated acids and cholesterol. The VEGAN diet was characterized by the lowest total protein content and the lack of wholesome protein and cholesterol. RD was characterized by the lowest average content of dietary fiber. The highest content of saccharose was observed in RD. Sodium content in RD significantly exceeded the recommended daily norm. RD featured insufficient content of the following minerals and vitamins: potassium, calcium, magnesium, iodine, Vitamin E, Vitamin C, folates, and Vitamin D. The norm for calcium has not been fulfilled also in milk-free and vegan diets. All of the analyzed diets lacked proper amounts of iodine and Vitamin D. The highest content of polyunsaturated fatty acids was observed in the VEGAN diet. The periodic elimination of meat and fatty dairy products should be included in the treatment of the metabolic syndrome, hypertensions, hyperlipidemia, obesity, and type 2 diabetes. CONCLUSIONS The regular diet of Poles turned out to be more dangerous for health in terms of deficiencies than properly balanced diets eliminating products of animal origin.
