Abstract
The production of selenium-enriched fish contributes to alleviating selenium deficiency for humans. In this study, selenium nanoparticles (SeNPs) comparable in bioavailability to selenomethionine (SeMet), increased SeMet content in O. macrolepis (Onychostoma macrolepis) muscle. Additionally, dietary SeNPs significantly enhanced selenocysteine (SeCys2) and methylselenocysteine (MeSeCys) levels in O. macrolepis muscle. The effect of SeNPs on selenium speciation in grass carp muscle was consistent with O. macrolepis results. SeCys2 and MeSeCys showed antioxidant capacity in HEK293T cells, indicating enhanced health benefits of Se-enriched fish produced using SeNPs. Furthermore, the addition of 0.3 mg/kg SeNPs significantly improved the flesh quality of O. macrolepis by reducing the content of crude fat and heavy metals, as well as increasing the levels of crude protein, eicosapentaenoic acid (EPA), docosahexaenoic acid (DHA), and the ratio of n-3/n-6 polyunsaturated fatty acids (PUFAs). Therefore, selenium-enriched fish produced from SeNPs is a good source for improving human dietary selenium intake.

Abstract
Rice is an important food in the world, and selenium (Se) is a necessary trace element for the human. So the effects of selenomethionine (SeMet) on photosynthetic capacity, yield and quality of rice at different stages were studied. The results show that SeMet can increase the Ppotosynthetic capacity of rice leaves during each growth stage, the effect of 5 mg/L SeMet treatment was the most significant. At the mature stage of rice, SeMet significantly increased rice yield and total plant biomass, 7.5and 5 mg/L SeMet treatments had the most significant effects, respectively. In addition, SeMet significantly improved the content of Se and processing quality of rice, decreased chalkiness, inhibited amylose synthesis, and optimized flavor. The above indices showed the best results after treatment with 5 mg/L SeMet. It is hoped that this study will provide a theoretical basis for the application of organic selenium in rice production.

Abstract
Monitoring data from several European countries indicate that European hedgehog (Erinaceus europaeus) populations are declining, and research exploring the causes of the decline, including exposure to potentially harmful xenobiotics and metals, may inform conservation initiatives to protect this species in the wild. Hedgehogs are ground-dwelling mammals, feeding on a range of insects, slugs, snails, and earthworms, as well as eggs, live vertebrates, and carrion, including carcasses of apex predator species representing higher levels of the food chain. Consequently, hedgehogs come into close contact with contaminants present in their habitats and prey. This review investigated the studies available on the subject of the occurrence of metals and organic xenobiotics in hedgehogs. This study found that a vast range of different pesticides; persistent organic pollutants (POPs), including organochlorine compounds and brominated flame retardants (BFRs); as well as toxic heavy metals could be detected. Some compounds occurred in lethal concentrations, and some were associated with a potential adverse effect on hedgehog health and survival. Due to their ecology, combined with the opportunity to apply non-invasive sampling techniques using spines as sampling material, we suggest that the European hedgehog is a relevant bioindicator species for monitoring the exposure of terrestrial wildlife to potential toxicants in urban and rural environments.

Abstract
The occupational groups exposed to air pollutants, particularly PM2.5, are closely linked to the initiation and advancement of respiratory disorders. The aim of this study is to investigate the potential protective properties of selenium-enriched soybean peptides (Se-SPeps), a novel Se supplement, in mitigating apoptosis triggered by PM2.5 in A549 lung epithelial cells. The results indicate a concentration-dependent reduction in the viability of A549 cells caused by PM2.5, while Se-SPeps at concentrations of 62.5-500 µg/mL showed no significant effect. Additionally, the Se-SPeps reduced the production of ROS, proinflammatory cytokines, and apoptosis in response to PM2.5 exposure. The Se-SPeps suppressed the PM2.5-induced upregulation of Bax/Bcl-2 and caspase-3, while also restoring reductions in p-Akt in A549 cells. The antiapoptotic effects of Se-SPeps have been found to be more effective compared to SPeps, SeMet, and Na2SeO3 when evaluated at an equivalent protein or Se concentration. Our study results furnish evidence that supports the role of Se-SPeps in reducing the harmful effects of PM2.5, particularly in relation to its effect on apoptosis, oxidative stress, and inflammation.

Abstract
Chickpea is the third most consumed pulse and provides a kit of essential nutrients for an exponential population. High temperatures and drought stress are two major abiotic stresses that cause serious effects on chickpea growth and development. The comprehension of abiotic stresses' impact on chickpea productivity and nutritional quality will permit the selection of promising genotypes. The current study aimed to assess the impact of heat and drought stresses on plant growth, grain yield and its components, grain size, and nutritional quality in chickpea. For this purpose, 43 international chickpea genotypes were evaluated under normal, heat, and combined heat-drought stress conditions. The findings revealed a significant decrease of over 50% in plant height, biological yield, and seed yield under both stress conditions. Grain size and hundred-seed weight were the most heritable traits under normal, heat, and combined heat-drought stress. Proteins were accumulated under both stresses, evolving from 20.26% for normal conditions to 22.19% for heat stress and to 21.94% for combined heat-drought stress. For minerals, significant variation between treatments was observed for Mn, Mg, and Na. Our results also showed a significant impact of genotype and genotype-environment interaction factors only on K content. Using selection indices, 22 genotypes were identified as highly tolerant to the combined heat-drought stress, while eleven genotypes were heat-tolerant. Mineral profile analysis according to the contrasting tolerance clusters revealed decreased potassium content in susceptible genotypes, indicating genetic potential in the studied chickpea collection, ensuring tolerance to both stresses while maintaining good grain quality.

Abstract
Sediments are the major sink for selenium (Se) in aquatic environments. Se speciation in sediments is crucial for its bioavailability and toxicity in benthos, but this is relatively understudied. In this study, the background levels of Se in the river sediments, fish flakes, and Lumbriculus variegatus were also detected. Then, the dynamic changes of selenium speciation and concentrations in sediments were investigated after adding selenite (Se(IV)) and seleno-L-methionine (Se-Met) in the sediments for 90 and 7 days, and the accumulation and depuration of Se(IV) and Se-Met for 7 days in the oligochaete L. variegatus were also explored. Without the presence of worms, the levels of Se(IV) in the sediments were relatively stable within 7 days but showed a decreasing trend during the 90 days of aging. In contrast, Se-Met in the sediments showed a sharp decrease within 3 days of aging. The LC50-96 h values of Se(IV) and Se-Met in L. variegatus were 372.6 and 9.4 μg/g, respectively. Interestingly, the dominant Se species in Se(IV)- or Se-Met-treated L. variegatus was Se-Met, whose level was increased with time in 7 days of exposure. Se was barely depurated from L. variegatus during the 8 days of the depuration period. This study has provided indispensable data on the levels of total Se in the abiotic and biotic matrices and the biodynamics of Se in a representative benthos, which could better understand the ecological risk of Se to the freshwater benthic communities.

Abstract
Trace minerals play an important role in animal health and productivity. They are involved also in many physiological activities, and their deficiency causes a variety of pathological problems and metabolic defects, reducing consequently the animal productivity. The demand for animal products in semi-arid areas is rapidly increasing, and the supply is still below the required level, partially due to low animal productivity. Camels (Camelus dromedarius and Camelus bactrianus) are considered one of the main sources of healthy, high-quality meat and milk for human consumption within most of the countries in the semi-arid regions. Despite their efficient adaptation to their environment, camels can suffer from the growth retardation of newborns, low feed efficiency, anemia, poor fertility, poor reproduction and many other metabolic disorders. It is well known that trace mineral deficiencies and trace mineral toxicities can influence camels' production and reproductive efficiency, as well as many aspects of their growth and metabolism. Evaluating the trace minerals status of camels and their variability is an obvious step toward improving camels' productivity and health. Thus, the present article reviews the data regarding the status of trace minerals (copper, zinc, iron, selenium, manganese, cobalt, iodine, fluorine, molybdenum, sulfur, bromide and nickel) in camel blood and their physiological variability, with a focus on their deficiency and toxicity effects.

Abstract
Selenium is an essential trace mineral important for the maintenance of homeostasis in animals and humans. It evinces a strong antioxidant, anti-inflammatory and potential antimicrobial capacity. Selenium biological function is primarily achieved by its presence in selenoproteins as a form of selenocysteine. Selenium deficiency may result in an array of health disorders, affecting many organs and systems; to prevent this, dietary supplementation, mainly in the forms of organic (i.e., selenomethionine and selenocysteine) inorganic (i.e., selenate and selenite) sources is used. In pigs as well as other food animals, dietary selenium supplementation has been used for improving growth performance, immune function, and meat quality. A substantial body of knowledge demonstrates that dietary selenium supplementation is positively associated with overall animal health especially due to its immunomodulatory activity and protection from oxidative damage. Selenium also possesses potential antiviral activity and this is achieved by protecting immune cells against oxidative damage and decreasing viral replication. In this review we endeavor to combine established and novel knowledge on the beneficial effects of dietary selenium supplementation, its antioxidant and immunomodulatory actions, and the putative antimicrobial effect thereof. Furthermore, our review demonstrates the gaps in knowledge pertaining to the use of selenium as an antiviral, underscoring the need for further in vivo and in vitro studies, particularly in pigs.

Abstract
Processes controlling selenium concentrations ([Se]) in mine waters were studied at an operating coalmine district in Xuzhou city, China. The geochemistry and mobility of selenium was studied through leaching experiments, multivariate analysis, and numerical modeling. Results showed that selenium leaching was influenced by selenium occurrence in minerals, pH, electron activity (pe), and sulfur concentration in the water. Selenium occurrence in host rock was mainly sulfide minerals, and clay minerals in coal, respectively. Therefore, the oxidation and dissolution of sulfide minerals and transformation of clays may control the release of selenium. Experimental leaching experiments suggested selenium tends to leach more when the solution has more sulfur dissolved. A positive relationship is established between pH and the amount of Se released into solution with four times more Se released at pH 12 compared to pH 2 when leached with high-purity water. This release behavior is higher in O2-rich environments. The numerical modeling results showed that pH, pe, and sulfur presence in the solution play important roles in selenium adsorption. Selenium was desorbed from adsorbing surfaces under alkaline conditions, specifically when the solution pH was higher than 8. Higher pe values in the solution caused reduced selenium adsorption. In addition, dissolved sulfur competed with selenate for surfaces of adsorption, thus, selenium adsorption decreases as the sulfur concentration increased.

Abstract
The Allium genus vegetables are of special interest since being potentially sources for selenium. In this study, the metabolization of selenite and selenate fortification at low and high levels in hydroponically cultivated Allium porrum (Leek) was investigated. The total Se analysis of nutritional solutions which was used in cultivation medium revealed that leeks had potential to accumulate Se above over 1000 mg/kg without any growth disturbance which was proved by comparing dry masses of control group with the ones fortified by Se species. Speciation analyses performed in edible parts which are leaves and stems showed that approximately 90% of total selenium was biotransformed into organo-selenium species in which MeSeCys and SeMet were found to be the most dominant in Se(IV) fortified leeks. However, selenate was found to be the most abundant species in edible parts of selenate fortified leeks especially at high levels. Although bioavailability rate of total selenium in selenate fortified leeks was found to be higher, lower amount of inorganic selenium and higher amount of MeSeCys were found to be bioavailable in Se(IV) fortified.

Abstract
Selenium (Se) is an important microelement with numerous positive effects on human health and diseases. It is important to specify that the status and consumption of Se are for a specific community as the levels of Se are extremely unpredictable between different populations and regions. Our existing paper was based on the impacts of Se on human health and disease along with data on the Se levels in Middle Eastern countries. Overall, the findings of this comprehensive review show that the consumption and levels of Se are inadequate in Middle Eastern nations. Such findings, together with the growing awareness of the importance of Se to general health, require further work primarily on creating an acceptable range of blood Se concentration or other measures to determine optimal Se consumption and, consequently, to guarantee adequate Se supplementation in populations at high risk of low Se intake.

Abstract
Heat stress as a result of global warming has harmful consequences for livestock and is thus becoming an urgent issue for animal husbandry worldwide. Ruminants, growing pigs, and poultry are very susceptible to heat stress because of their fast growth, rapid metabolism, high production levels, and sensitivity to temperature. Heat stress compromises the efficiency of animal husbandry by affecting performance, gastrointestinal health, reproductive physiology, and causing cell damage. Selenium (Se) is an essential nutritional trace element for livestock production, which acts as a structural component in at least 25 selenoproteins (SELs); it is involved in thyroid hormone synthesis, and plays a key role in the antioxidant defense system. Dietary Se supplementation has been confirmed to support gastrointestinal health, production performance, and reproductive physiology under conditions of heat stress. The underlying mechanisms include the regulation of nutrient digestibility influenced by gastrointestinal microorganisms, antioxidant status, and immunocompetence. Moreover, heat stress damage to the gastrointestinal and mammary barrier is closely related to cell physiological functions, such as the fluidity and stability of cellular membranes, and the inhibition of receptors as well as transmembrane transport protein function. Se also plays an important role in inhibiting cell apoptosis and reducing cell inflammatory response induced by heat stress. This review highlights the progress of research regarding the dietary supplementation of Se in the mitigation of heat stress, addressing its mechanism and explaining the effect of Se on cell damage caused by heat stress, in order to provide a theoretical reference for the use of Se to mitigate heat stress in livestock.

Abstract
As an essential trace element, selenium (Se) plays a tremendous role in the functioning of the human organism being used for the biosynthesis of selenoproteins (proteins containing one or several selenocysteine residues). The functions of human selenoproteins in vivo are extremely diverse. Many selenoproteins have an antioxidant activity and, hence, play a key role in cell antioxidant defense and maintenance of redox homeostasis, which accounts for their involvement in diverse biological processes, such as signal transduction, proliferation, cell transformation and aging, ferroptosis, immune system functioning, etc. One of the critical functions of selenoenzymes is participation in the synthesis of thyroid hormones regulating basal metabolism in all body tissues. Over the last decades, optimization of population Se intake for prevention of diseases related to Se deficiency or excess has been recognized as a pressing issue in modern healthcare worldwide.

Abstract
A Selenium (Se) is an element belonging to the nonmetallic group. It was first discovered in 1817 by J.J. Berzelius. Until the 1950s, it was considered to be toxic to animals. However, with increasing research conducted on laboratory animals, it is now clear that Se is necessary for the proper functioning of both plants and animals. Recent studies indicate that Se is necessary for the proper functioning of metabolic pathways in animals. It was evidenced that Se is a component of about 100 proteins involved in the immune system, antioxidant homeostasis, or release of an inflammatory mediator. Therefore, it is of key interest to find the appropriate dosage for the supplementation of Se in the diet of farm animals and thereby eliminate physiological disorders in the body associated with Se imbalance. In this study, we present a literature review on the importance and appropriate dosage of Se in the diet of poultry concerning their health status, production results, and the quality of animal-origin products.

Abstract
In this study, selenium-enriched soybean peptides (<3 kDa, named Se-SPep) was isolated and purified from the selenium-enriched soybean protein (Se-SPro) hydrolysate by ultrafiltration. The in-vivo immunomodulatory effects of Se-SPep were investigated in cyclophosphamide-induced immunosuppressed mice. Se-SPep treatment could alleviate the atrophy of immune organs and weight loss observed in immunosuppressive mice. Besides, Se-SPep administration could dramatically improve total protein, albumin, white blood cell, immunoglobulin (Ig) M, IgG, and IgA levels in blood. Moreover, Se-SPep strongly stimulated interleukin-2 (IL-2), interferon-gamma (IFN-γ), nitric oxide (NO), and cyclic guanosine monophosphate productions by up-regulating mRNA expressions of IL-2, IFN-γ, and inducible NO synthase in spleen tissue. Furthermore, Se-SPep exhibits more effective immunomodulatory activity compared to Se-SPro and SPep. In conclusion, Se-SPep could effectively enhance the immune capacity of immunosuppressive mice. These findings confirm Se-SPep is an effective immunomodulator with potential application in functional foods or dietary supplements.

Abstract
This paper is aimed at purifying and identifying selenium (Se)-containing antioxidative peptides from Se-enriched soybean peptides (SSP). In this work, the SSP was separated into five fractions (F1 to F5). Fraction F4, displaying the highest antioxidative activity, was further separated, and sub-fractions F4-1 to F4-5 were selected for antioxidative activity evaluation using 1,1-diphenyl-2-picrylhydrazyl (DPPH), 2,2-azino-bis-(3-ethylbenzo-thiazoline-6-sulphonic acid)diammonium salt (ABTS), and OH− radical scavenging assays. The Se-containing antioxidative peptides with sequence Ser–SeC–Ala–His–Lys (SSeCAHK) were identified in sub-fraction F4-1 and chemically synthesized. This Se-containing pentapeptide showed a preventive effect against hydrogen peroxide (H2O2)-induced oxidative stress in HepG2 cells. Pretreating the cells for 2 h with SSeCAHK (0.13–0.50 mg mL−1) induced strong intracellular, reactive oxygen species (ROS) scavenging activity while preventing a decrease in reduced glutathione (GSH) and an increase in malondialdehyde (MDA). Therefore, SSeCAHK treatment improved H2O2-induced oxidative stress in HepG2 cells, demonstrating the significant potential of SSeCAHK as a natural antioxidative functional material for dietary supplementation. Se-containing antioxidative soybean peptides were isolated and identified as SSeCAHK. The SSeCAHK had protective effects against H2O2-induced oxidative stress in HepG2 cells and could be used as a natural food-born antioxidant.![]()

Abstract
Selenium (Se) is a micronutrient essential for life. Dietary intake of Se within the physiological range is critical for human health and reproductive functions. Selenium levels outside the recommended range have been implicated in infertility and variety of other human diseases. However, presently it is not clear how different dietary Se sources are processed in our bodies, and in which form or how much dietary Se is optimum to maintain metabolic homeostasis and boost reproductive health. This uncertainty leads to imprecision in published dietary guidelines and advice for human daily intake of Se and in some cases generating controversies and even adverse outcomes including mortality. The chief aim for this review is to describe the sources of organic and inorganic Se, the metabolic pathways of selenoproteins synthesis, and the critical role of selenprotenis in the thyroid gland homeostasis and reproductive/fertility functions. Controversies on the use of Se in clinical practice and future directions to address these challenges are also described and discussed herein.

Abstract
The purpose of this study was to evaluate the neuroprotective effect of local implantation of a controlled delivery system of chitosan hydrogel loaded with selenium nanoparticles in rats with spinal cord injury (SCI). For this purpose, 60 adult female rats were randomly divided into three equal groups. In all three groups, SCI was induced by aneurysm clamping at the level of thoracic vertebrae under inhaled anesthesia with isoflurane. In one group after spinal cord injury, chitosan hydrogels loaded with selenium nanoparticles (treatment group), and in the other group, only chitosan hydrogels (positive control group) were placed at the site of injury. In the last group (negative control), no material was placed in the injury site. Hematoxylin-eosin and glial fibrillary acidic protein (GFAP) staining evaluated histological changes at the site of injury on days 3, 7, 21, and 28 after surgery. Evaluations show that hemorrhage and inflammation also have a marked decrease in inflammatory cells at different times in the treatment group. This decrease was also seen in the chitosan group but was less severe than in the treatment group. The formation of nerve fibers was also observed in the treatment group over time of injury. Immunohistochemical studies of damaged tissue showed higher expression of GFAP protein in the astrocytes of the treatment group than in the other two groups and the chitosan group compared with the negative control group. A controlled drug delivery system containing selenium nanoparticles seems to play a role in the protection of nerve cells through its anti-inflammatory effect.

Abstract
The use of toxic and less bioavailable inorganic selenium can now be supplemented with an alternative organic source from bacterial species in nutrition for human and animal benefit. This study investigated the effects of selenium sources on laying performance, egg quality characteristics, intestinal morphology, caecum microbial population, and digesta volatile fatty acids in laying hens. One hundred and forty-four Lohman Brown Classic laying hens, at 23 weeks of age, were divided into four experimental groups (36 hens in each), differing in form of Se supplementation: no Se supplementation (Con), 0.3 mg/kg of inorganic Se in the form of sodium selenite (Na2SeO3), 0.3 mg/kg of organic Se from selenium yeast (Se-Yeast), and 0.3 mg/kg of organic Se from Stenotrophomonas maltophilia (bacterial organic Se, ADS18). The results showed that different dietary Se sources significantly affected laying rate, average egg weight, daily egg mass, feed conversion ratio (FCR), and live bodyweight (LBW) (p < 0.05). However, average daily feed intake and shell-less and broken eggs were unaffected (p > 0.05) among the treatment groups. The findings revealed that selenium sources had no (p > 0.05) effect on egg quality (external and internal) parameters. However, eggshell breaking strength and Haugh unit were significantly (p < 0.05) improved with organic (ADS18 or Se-yeast) Se-fed hens compared to the control group. In addition, egg yolk and breast tissue Se concentrations were higher (p < 0.05) in the dietary Se supplemented group compared to the control. Intestinal histomorphology revealed that hens fed ADS18 or Se-Yeast groups had significantly (p < 0.05) higher villi height in the duodenum and jejunum compared to those fed Na2SeO3 or a basal diet. However, when compared to organic Se fed (ADS18 or Se-Yeast) hens, the ileum villus height was higher (p < 0.05) in the basal diet group; with the lowest in the SS among the treatment groups. A significant increase (p < 0.05) of Lactobacilli spp. and Bifidobacteria spp., and a decrease of Escherichia coli and Salmonella spp. population were observed in the organic (ADS18 or Se-yeast) compared to inorganic supplemented and control hens. The individual digesta volatile fatty acid (VFA) was significantly different, but with no total VFA differences. Thus, bacterial selenoprotein or Se-yeast improved the performance index, egg quality characteristics, egg yolk and tissue Se contents, and intestinal villus height in laying hens. Moreover, caecum beneficial microbes increased with a decrease in the harmful microbe population and affected individual cecal volatile fatty acids without affecting the total VFA of the laying hens digesta.

Abstract
Fresh milk is an important source of essential mineral supplement for humans. However, the levels of trace elements in milk are an important component of its safety and quality. Trace elements also act as a bio-indicator of agricultural pollution. Samples of raw cow milk (n = 68), animal feed [forage (n = 36) and concentrates (n = 14)], and water (n = 35) were collected from different agro-climatic regions of Sri Lanka. The concentrations of 15 trace elements including toxic heavy metals such as Cd, Pb, and As were quantified using inductively coupled plasma mass spectrometry after microwave-assisted digestion. Among the studied trace elements, the mean elemental concentrations of Se, Cd, As, and Cu in cow milk were 18.1, 1.45, 7.35, and 71.7 μg L-1, respectively. The mean concentrations of these elements in forage were 0.216, 0.066, 0.046, and 9.21 mg kg-1, and in concentrate feed were 0.329, 0.202, 0.229, and 2.28 mg kg-1, respectively. The As content of the studied milk was well below the maximum permissible level while 15% of the samples had Pb exceeding the permissible limit of 20 μg L-1. However, As, Cd, and Pb levels in drinking water provided to animals were well below the WHO permissible limits. The results of this study revealed that the trace elements in cow milk depend mainly on the feed, and hence, levels of these contaminants in feed materials should be monitored. Although due to the consumption of milk, the populations have a minor exposure to trace elements and also minimum health risks, a detailed study with a large number of samples is highly recommended.

Abstract
Fortification of Se is vital importance for both nutritional demand and prevention of Se-deficiency-related diseases. To better understand t selenium distribution, concentration, speciation, its effects on proteins, and cytotoxic activity, the biofortification of exogenous Se in peanut was conducted in this study. Our data have shown that foliar spraying of Se-riched fertilizer was more efficient for biotransformation of inorganic Se to organic Se by peanut plant. Besides, the Se content in peanut was increased in a dose-dependent manner. Our present study also confirmed that SeCys2, MeSeCys, and SeMet were the main Se speciation within peanut proteins. Moreover, the secondary structure and thermostability of peanut protein were altered as a result of the Se treatments, and these alterations could be attributed to the replacements of cysteine and methionine by selenocysteine and selenomethionine, respectively. The Se-enriched peanut protein could significantly inhibit the growth of Caco-2 and HepG2 in a concentration-dependent manner.

Abstract
Selenium (Se) is an essential nutrient associated with several physiological processes in humans and has raised interest because of its antioxidant and immune properties. Se deficiency is related to a variety of diseases and dysfunctions in humans. Due to its higher bioavailability and lower toxicity, organic Se is more recommendable than inorganic Se in the frame of a balanced diet. Se is present in 25 identified selenoproteins that commonly occur in human organisms. As part of selenocysteine (SeC), Se becomes co-translationally incorporated into the polypeptide chain and involved in the regulation of oxidative stress, redox mechanisms, and other crucial cellular processes responsible for innate and adaptive immune responses. This review presents the current information regarding the presence of selenoproteins in the human body, and the separation of selenoproteins and selenopeptides from various plants and their physiological roles in the immune and oxidation systems of humans. In general, the application of selenoproteins and Se-enriched peptides are practically important for the clinical arena, whereby it can be used for exploring new healthy foods.

Abstract
RESUMO Objetivou-se avaliar a influência da suplementação com minerais biocomplexados sobre a qualidade da carne de frangos da linhagem Label Rouge, de ambos os sexos, criados em sistema alternativo. O delineamento experimental foi inteiramente ao acaso (DIC), disposto em esquema fatorial (3x2), sendo três dietas (controle; 0,50ppm de selênio; 0,40ppm de cromo) e dois sexos. Para a estabilidade lipídica, foi utilizado o DIC, disposto em esquema fatorial (3x2x2), sendo três dietas, dois sexos e dois tempos de armazenamento (zero e 12 meses). Os parâmetros avaliados no peito e na coxa foram: pH final, cor (L* - luminosidade, a* - índice de vermelho, b* - índice de amarelo, C* - índice de saturação e h* - ângulo de tonalidade), perda de peso por cozimento (PPC), força de cisalhamento (FC) e estabilidade lipídica. Além disso, foram avaliadas a proporção das formas químicas da mioglobina da coxa e a quantificação do conteúdo de selênio no peito. Não houve efeito isolado da dieta sobre os parâmetros físicos e químicos do peito e da coxa e sobre a concentração de selênio no peito. As fêmeas apresentaram médias superiores de L* (57,57), b* (10,55) e C* (10,60) do peito; e os machos de L* (55,09) da coxa. Entre os machos, as aves alimentadas com a dieta controle e com cromo expressaram valores superiores de FC da coxa em relação às suplementadas com selênio; para o tratamento com cromo, os machos apresentaram média superior de FC da coxa e, em contrapartida, para o tratamento com selênio, as fêmeas manifestaram a maior média. As amostras submetidas ao período de 12 meses de armazenamento mostraram maiores valores de substâncias reativas ao ácido tiobarbitúrico (TBARS) em ambos os cortes. A suplementação com cromo e selênio biocomplexados não provocou alterações na qualidade da carne; as fêmeas demonstraram melhores atributos de qualidade da carne.

Abstract
Selenium (Se) is a widely distributed trace element with dual (beneficial or toxic) effects for humans, animals, and plants. The availability of Se in the soil is reliant on the structure of the parental material and the procedures succeeding to soil formation. Anthropogenic activities affect the content of Se in the environment. Although plants are the core source of Se in animal and human diet, the role of Se in plants is still debatable. A low concentration of Se can be beneficial for plant growth, development, and ecophysiology both under optimum and unfavorable environmental conditions. However, excess Se results in toxic effects, especially in Se sensitive plants, due to changing structure and function of proteins and induce oxidative/nitrosative stress, which disrupts several metabolic processes. Contrary, Se hyperaccumulators absorb and tolerate exceedingly large amounts of Se, could be potentially used to remediate, i.e., remove, transfer, stabilize, and/or detoxify Se-contaminants in the soil and groundwater. Thereby, Se-hyperaccumulators can play a dynamic role in overcoming global problem Se-inadequacy and toxicity. However, the knowledge of Se uptake and metabolism is essential for the effective phytoremediation to remove this element. Moreover, selecting the most efficient species accumulating Se is crucial for successful phytoremediation of a particular Se-contaminated area. This review emphasizes Se toxicity in plants and the environment with regards to Se biogeochemistry and phytoremediation aspects. This review follows a critical approach and stimulates thought for future research avenues.

Abstract
Selenium (Se) is a widely distributed trace element with dual (beneficial or toxic) effects for humans, animals, and plants. The availability of Se in the soil is reliant on the structure of the parental material and the procedures succeeding to soil formation. Anthropogenic activities affect the content of Se in the environment. Although plants are the core source of Se in animal and human diet, the role of Se in plants is still debatable. A low concentration of Se can be beneficial for plant growth, development, and ecophysiology both under optimum and unfavorable environmental conditions. However, excess Se results in toxic effects, especially in Se sensitive plants, due to changing structure and function of proteins and induce oxidative/nitrosative stress, which disrupts several metabolic processes. Contrary, Se hyperaccumulators absorb and tolerate exceedingly large amounts of Se, could be potentially used to remediate, i.e., remove, transfer, stabilize, and/or detoxify Se-contaminants in the soil and groundwater. Thereby, Se-hyperaccumulators can play a dynamic role in overcoming global problem Se-inadequacy and toxicity. However, the knowledge of Se uptake and metabolism is essential for the effective phytoremediation to remove this element. Moreover, selecting the most efficient species accumulating Se is crucial for successful phytoremediation of a particular Se-contaminated area. This review emphasizes Se toxicity in plants and the environment with regards to Se biogeochemistry and phytoremediation aspects. This review follows a critical approach and stimulates thought for future research avenues.

Abstract
Tea plants (Camellia sinensis (L.) O. Kuntze) can hyperaccumulate fluoride (F). The accumulation of F in tea leaves may induce serious health problems in tea consumers. It has been reported that selenium (Se) could reduce the accumulation of heavy metals in plants. Thus, the aim of this study was to investigate whether exogenous Se could reduce F accumulation in tea plant. The results showed that Se treatment could decrease F content in tea leaves, increase F accumulation in roots, decrease the proportion of water-soluble F in tea leaves and increase the Se content. Low F levels promoted the accumulation of Se in tea plants. Se treatment could modulate F-induced oxidative injury by decreasing malondialdehyde level and increasing the activities of superoxide dismutase, peroxidase and catalase. Moreover, Se inhibited F-induced increase in leaf iron, calcium, aluminum, leaf and root magnesium and lead contents. These results showed that Se application could decrease F content and increase Se content in tea leaves, which may be served as a novel strategy for production of healthy tea.

Abstract
Dietary consumption of selenium-rich agro-food is an effective way to avoid selenium deficiency diseases, however, over consumption of selenium-rich agro-food will result in potential risk of selenosis and problems with associated metals. In this study, we measured the concentrations of selenium and its associated metals in 2756 common and 4894 selenium-rich agro-food samples in 10 regions of China. We found that selenium-rich rice, flour, edible fungi and algae, meat, and tea contain higher levels of associated metals than other selenium-rich agro-food samples. Increasing the consumption of selenium-rich agro-food could make the actual intakes (AIs) of selenium for all population to meet respective recommended daily intakes (RDIs). Benefit-risk assessment results indicated that increasing the consumption of selenium-rich agro-food make AIs of selenium for all populations meet RDIs, chromium intakes for people under 18 years old exceed provisional tolerated daily intake (PTDIs), while arsenic and cadmium intakes are close to PTDIs. The main dietary contributors of selenium, chromium, arsenic and cadmium were meat, edible fungi and algae, rice, and rice, respectively. The study supported the consumption of selenium-rich agro-food for effective selenium supplement, but also emphasized potential risk from associated metals in selenium-rich agro-food, especially chromium.

Abstract
Rice is the leading staple food for more than half of the world's population, and approximately 160 million hectares of agricultural area worldwide are under rice cultivation. Therefore, it is essential to fulfil the global demand for rice while maintaining food safety. Rice acts as a sink for potentially toxic metals such as arsenic (As), selenium (Se), cadmium (Cd), lead (Pb), zinc (Zn), manganese (Mn), nickel (Ni), and chromium (Cr) in paddy soil-rice systems due to the natural and anthropogenic sources of these metals that have developed in the last few decades. This review summarizes the sources and basic chemical behaviours of these trace elements in the soil system and their contamination status, uptake, translocation, and accumulation mechanisms in paddy soil-rice systems in major rice-growing countries. Several human health threats are significantly associated with these toxic and potentially toxic metals not only due to their presence in the environment (i.e., the soil, water, and air) but also due to the uptake and translocation of these metals via different transporters. Elevated concentrations of these metals are toxic to plants, animals, and even humans that consume them regularly, and the uniform deposition of metals causes a severe risk of bioaccumulation. Furthermore, the contamination of rice in the global rice trade makes this a critical problem of worldwide concern. Therefore, the global consumption of contaminated rice causes severe human health effects that require rapid action. Finally, this review also summarizes the available management/remediation measures and future research directions for addressing this critical issue.

Abstract
Heavy metals in particulate matter (PM) are of great concern, and their effects on the environment and human health depend on their solubilities and species present. In this study, the solubility of As, Se, Sb, V and Cr and their species eluted in water was investigated. As, Se, Sb, and V were present mostly in fine particles, and they were predominantly water-soluble in fine particles (<2.5 μm, PM2.5) but insoluble in coarse particles (>2.5 μm). Solubility of Cr was poor even in fine particles. It was found that for fine particles, solubilities of the heavy metals were related to the nitrate and sulfate contents. This suggests that the higher the acidity of the particles, the higher the solubility of the heavy metals. Oxoanions of the five kinds of heavy metals in water extracts of fine particles were determined by inductively coupled plasma mass spectrometry preceded by ion chromatography. The results suggested the presence of atmospheric oxidation during the aerosol transportation. Also, the As(iii)/As(v) (arsenite/arsenate) ratios for the fine particle extracts were related to the transition metal concentrations, which indicated that Fe, Cu, etc. in fine particles affected the As redox equilibrium. It was suggested that the heavy metals exist as complexes with iron hydroxide and dissolved organic matter in addition to the free oxoanions. These investigations were performed for PM samples collected in winter and summer in Kumamoto, west Japan, where the site is strongly exposed to westerly winds from continental East Asia. The obtained results improve our understanding of the behavior of the heavy metals in airborne PM after depositing on a wet environment and biota.

Abstract
In this study, 41 common rice varieties and 211 selenium-rich rice varieties from ten representative areas in China were collected in 2017–2019. The selenium contents of rice were analyzed with optimized inductively coupled plasma mass spectrometry (ICP-MS). Selenium concentrations of common rice and selenium-rich rice ranges were 0.81–7.26 and 0.76–180.73 µg/100 g, respectively. The selenium contents in selenium-rich rice from different areas were significantly different (p < 0.001) while those in common rice from different areas were not. The selenium-rich rice in Harbin and Keshan showed the lowest selenium level and those from selenium-rich areas (Enshi and Ankang) were highest. Based on the estimation of the risk assessment software @risk7.0 (Palisade Corporation, New York, NY, USA), the consumption of selenium-rich rice can effectively increase dietary selenium intake for the population. However, the risk index of P95 (Percentile 95) selenium exposure at the tolerable upper intake level for children at 2–14 years old exceeded 100%, with potential risk currently. Therefore, the consumption of selenium-rich rice should be properly monitored for young children and adolescents.

Abstract
To understand the effects of micronutrients have particular biological functions that are involved mainly in the antioxidant system, which has essential implications for the development of diseases, this study investigated how vitamin E, selenium, and their combination affect lipid, protein, carbohydrate, and malondialdehyde (MDA) content; antioxidant enzyme (catalase [CAT], superoxide dismutase [SOD], glutathione-S-transferase [GST]) activity; and the total hemocyte count (THC) in larvae of Galleria mellonella L. fed different diets. Diet 1 (100 µg of selenium) significantly decreased carbohydrate and lipid content. Diets 2 (100 µg of vitamin E), 3 (100 µg of selenium and vitamin E each), and 5 (Tween 80) did not significantly affect protein and carbohydrate content. Diet 2 significantly increased the lipid content compared to diet 4 (control). Diet 1 increased CAT, SOD, and GST activity and MDA content (highest at 27.64 nmol/mg protein). Diet 2 significantly decreased SOD activity and MDA content compared to other diets. Diet 1 significantly decreased the THC compared to other diets. These results suggested that selenium changes oxidative stress parameters, energy reserves, and THC in G. mellonella. These changes could be a physiological adaptation against selenium-induced oxidative stress. Vitamin E could play a protective role in selenium toxicity.

Abstract
The diatomic transition metal selenides, MSe (M = Sc, Y, Ru, Os, Co, Rh, Ir, and Pt), were studied by resonant two-photon ionization spectroscopy near their respective bond dissociation energies. As these molecules exhibit high densities of vibronic states near their dissociation limits, the spectra typically appear quasicontinuously at these energies. Spin-orbit and nonadiabatic couplings among the multitudes of potential curves allow predissociation to occur on a rapid timescale when the molecule is excited to states lying above the ground separated atom limit. This dissociation process occurs so rapidly that the molecules are dissociated before they can be ionized by the absorption of a second photon. This results in an abrupt drop in the ion signal that is assigned as the 0 K bond dissociation energy for the molecule, giving bond dissociation energies of 4.152(3) eV (ScSe), 4.723(3) eV (YSe), 3.482(3) eV (RuSe), 3.613(3) eV (OsSe), 2.971(6) eV (CoSe), 3.039(9) eV (RhSe), 3.591(3) eV (IrSe), and 3.790(31) eV (PtSe). The enthalpies of formation, ΔfH0K° (g), for each diatomic metal selenide were calculated using thermochemical cycles, yielding ΔfH0K° (g) values of 210.9(4.5) kJ mol-1 (ScSe), 203.5(4.5) kJ mol-1 (YSe), 549.2(4.5) kJ mol-1 (RuSe), 675.9(6.5) kJ mol-1 (OsSe), 373.9(2.6) kJ mol-1 (CoSe), 497.4(2.7) kJ mol-1 (RhSe), 557.4(6.5) kJ mol-1 (IrSe), and 433.7(3.6) kJ mol-1 (PtSe). Utilizing a thermochemical cycle, the ionization energy for ScSe is estimated to be about 7.07 eV. The bonding trends of the transition metal selenides are discussed.

Abstract
Seleno-polymannuronate (Se-PM) was prepared from alginate-derived polymannuronate (PM) through a sulfation followed by a selenylation replacement reaction. The organic selenium content of Se-PM was 437.25 μg/g and its average molecular weight was 2.36 kDa. The neuroprotection effect of Se-PM and corresponding molecular mechanisms were investigated. Our results showed that, comparing to both sulfated PM (S-PM) and PM, Se-PM remarkably inhibited the aggregation of Aβ1-42 oligomer in vitro and significantly reduced the APP and BACE1 protein expression in N2a-sw cells, highlighting the critical function of the selenium presented in Se-PM. Moreover, Se-PM decreased the expression of cytochrome c and the ratio of Bax to Bcl-2, and enhanced the mitochondrial membrane potential in N2a-sw cells. These results suggested that Se-PM treatment can markedly inhibit N2a-sw cell apoptosis and promote N2a-sw cell survival and that Se-PM might be a potential therapeutic agent for the prevention of neurodegeneration owing to its remarkable neuroprotection effect.

Abstract
The present study was undertaken to generate a database for selenium (Se) content present in minced and processed meat products abundantly available in the market and to estimate the dietary Se intake in different types of minced/raw and processed meat in Pakistan. The concentration of Se was determined in meat samples of different brands of beef, chicken, and mutton, consumed among the local population of different cities of Pakistan. For pretreatment of the meat samples, microwave-assisted acid digestion procedure (MAD) was developed for the Se analysis in the meat samples of different brands. The validity of the designed method was checked by certified reference samples of BOVM-1 (bovine muscle certified reference material 1). Digested meat samples were analyzed by graphite furnace atomic absorption spectrophotometry. Results showed that among different meat types, average Se concentration of beef was close to those of chicken samples. The mean Se concentration in the meat observed in reducing order was established in mutton (120 μg/kg), beef (91 μg/kg), and chicken (90 μg/kg). These results suggest that mutton and chicken samples have significant differences in their average concentrations. There was no significant difference in the average concentration of beef and chicken (p > 0.05), while there was a significant difference in average concentrations of Se in beef and mutton (p < 0.01) meat samples. Mutton minced meat contains higher Se than different branded processed products. As far as variation in brands was concern among mutton samples, B1-minced mutton meat sample contain higher Se (107 μg/kg) followed by B3-shish kabab (123 μg/kg) and B3-meat balls (129 μg/kg). Among minced and processed chicken products, Se ranged from 83 to 97 μg/kg. Whereas in beef samples, B1-minced meat and B3-chapli kabab contain higher Se, i.e., 99 and 92 μg/kg respectively compared with other beef brands. Taking into account, the average daily intake of meat by Pakistani's, the dietary Se daily intake was 4.184, 9.263, and 6.605 μg per capita for mutton, beef, and chicken, respectively.

Abstract
Glutathione Peroxidase activity in whole blood is well correlated with the Selenium (Se) levels in cattle hence can be used effectively to assess the supply of Se to farm animals. In this study, Se status of cattle from five different geographic regions of Sri Lanka were assessed based on glutathione peroxidase (GSH-Px) activity. The GSH-Px activity was determined in whole blood samples collected from 80 cattle from 31 different farms in five districts viz. Kandy, Anuradhapura, Batticoloa, Trincomalee and Jaffna using photometric method. Mean GSH-Px activity was found to be 825, 1239, 1039, 849 and 1307 μkat L-1 in above districts, respectively while the reference value was considered as 665.4 μkat L-1. Among the studied animals, insufficient Se levels were detected in 50%, 17%, 9%, 27% and 5%, respectively, from above districts. Kruskal Wallis test indicated a significant variation among the sampled locations with respect to the GSH-Px activity (p = 0.001). Selenium content in pasture and water collected from studied locations varied from 6.0 to 554 μg kg-1 and < 0.03-1.14 μg L-1, respectively. The lower Se levels in feeds recorded from Kandy region infer the lower GSH-Px activity in the animals from the same region. This variability may be due to differences in nutrient supply, age and species of cattle, and lactation stage. Although the assessing method has some limitations, the activity of GSH-Px of the samples indirectly confirms that considerable numbers of cattle from Sri Lanka are with insufficient selenium levels.

Abstract
The effect of selenium on excessive fatty acid-induced apoptosis and abnormal amino acid metabolism in the liver is well known, because it is an important site in the fatty acid metabolism pathway. However, the protective role of nano-elemental selenium (nano-Se) supplementation against hexavalent chromium (K2Cr2O7)-induced abnormal fatty acid metabolism has not been evaluated yet. Therefore, we conducted chicken experiments with different nano-Se supplementation doses to investigate the role of nano-Se against Cr(VI)-induced adverse effects. For this purpose, a total of 120 1-day-old chicks were randomly divided into control group, Cr(VI)-exposed group, protection group, treatment group, prevention group, and nano-Se control group. The results of RT-qPCR showed that the nano-Se supplementation notably downregulated (P < 0.01) the messenger RNA (mRNA) expression levels of fatty acid synthase (FASN), whereas nano-Se supplementation significantly upregulated (P < 0.01) the mRNA expression level of acyl-coenzyme A oxidase 1 (ACOX1) in chicken's liver at day 35 of the experiment. Similar results were further verified by western blot analysis. Moreover, nano-Se supplementation significantly enhanced and reduced the antibody expression levels of ACOX1 and FASN in immunohistochemical analysis, respectively. Thus, finally, it was concluded that nano-Se can alleviate K2Cr2O7-induced abnormal fatty acid metabolism in chicken's liver.

Abstract
Selenium is an important nutrient for humans and livestock. Soil selenium concentration in the world is highly variable; deficiency and toxicity occur in populations living short distance apart. Knowledge of Se concentrations in humans and the environments, especially because the range for toxicity and deficiency is narrow, is important for effective intervention. Dietary data and serum samples were collected from children (n = 555) 69-78 months old from rural villages of the Amhara Region, Ethiopia. In addition, information on the socio-demography of households was collected. Serum Se was analyzed by inductively coupled plasma mass spectrometer. Almost all (90.3%) of participants reported eating grain, roots, or tubers 24 h preceding the survey followed by legumes, nuts, and seeds (64.6%). Consumption of animal source foods was very low (4.6%). Compared to children from the western part of the region, children from eastern Amhara had higher dietary diversity score (2.1 ± 0.9 vs 1.8 ± 0.7; p < 0.001).The median serum Se concentration was 70.6 μg/l (IQR 48.2, 96.6). Selenium inadequacy (serum Se < 70 μg/l) was detected in 49.1% of children. However, the distribution had an important geographical pattern across administrative zones. Children from the western part of the Amhara Region were highly deficient (up to 91.1% prevalence), while there was little or no Se deficiency in children from the eastern part of the region. Serum Se level exhibited an important spatial variation in the Amhara Region, Ethiopia. Further studies investigating contributing factors for the variation such as soil characteristics and Se concentration in staple crops are needed.

Abstract
This study examined the effects of sources and levels of selenium (Se) on performance, carcass parts yield, meat quality and tissue Se concentration in broilers. A total of 960 one-day-old male broilers were divided into 8 treatments in a 4 × 2 factorial arrangement. Chicks were penned in groups of 20 with 6 pens per group. Selenium sources were sodium selenite (SS), Se enriched yeast (SY), DL-selenomethionine (SM) and nano-selenium (NS) and dietary supplemental Se levels were 0.1 and 0.3 mg/kg diet. The average daily gain (ADG), average daily feed intake (ADFI), feed:gain ratio, mortality, and carcass parts yield were not affected by dietary treatments. The level of 0.3 mg/kg Se decreased lightness and increased yellowness of the breast and thighs (P < 0.001). Nano-selenium improved yellowness, redness and meat quality (P < 0.05). The interactive effects of sources and the levels of Se affected Se retention (P < 0.001). Inorganic Se showed poor retention compared to other sources of Se; and NS showed equal retention with the organic sources. With consideration to meat quality responses, NS had a more significant positive effect compared to SS as an inorganic source of Se. Overall, NS and organic sources of Se resulted in better meat quality compared with the inorganic source. Moreover, the highest Se retention percentage was achieved by supplementation of NS followed by organic sources at 0.1 mg/kg compared to SS.
