Abstract
Eating disorders with skipping meals are considered as a risk factor for chronic non-communicable diseases. Frequent skipping of meals is associated with the risk of developing metabolic syndrome, type 2 diabetes, and obesity. Breakfast is considered to be the most important meal of the day. However, studies on the impact of skipping breakfast on the risk of overweight and obesity are highly controversial. The aim of this study was to analyze the prevalence of skipping the morning breakfast meal and its impact on the actual daily intake of nutrients and energy in the Russian adult population. Material and methods. The data from a sample survey of dietary intake conducted in 2013 by the Russian Federal State Statistics Service have been used. The analysis included adult respondents (19 years and older) in the amount of 163 000 people in 2 stages of the survey (in April and September). The dietary intake of all members of the surveyed households was studied using the 24-hour recall method. Since the survey questionnaires did not contain information about type of meals, therefore, with the help of binning in thзe SPSS program, time intervals of the maximum food energy intake by the respondents were established, which were taken as evidence of the main meals and snacks. Results. Of the main meals, the largest proportion of respondents skipped dinner (23.1%), then breakfast (13.0%), and the smallest proportion skipped lunch (5.7%).The proportion of men and women who skipped breakfast was 12.6 and 13.3%, respectively, a greater frequency of skipping breakfast was observed at a young age (19-30 years, 19.3%) and at an old age (75 years and older, 16.1%). With an increase in the average monthly income of a family, the percentage of those who skip breakfast increases. Adult members of families with many children (3 or more children), whose average per capita income is lower than those in families with 2 children, skip breakfast less frequently. The smallest share of people skipping breakfast was found in the North Caucasian and Southern districts, and the maximum in the Siberian and Far Eastern districts. Adults who skipped breakfast had a higher percentage of malnourished (BMI <18.5 kg/m2) and normal nutritional status (BMI 18.5-24.9 kg/m2). At the same time, the proportion of people who consumed breakfast was significantly higher in overweight people (25.0-29.9 kg/m2), and no differences were found among obese people. It is shown that skipping breakfast is accompanied by a decrease in the energy value of the daily diet by an average of 200 kcal. Despite the increase in the caloric content of the 2nd breakfast, afternoon snack and evening snack in absolute terms (р<0.01), there was no compensation for the loss of energy value in the absence of breakfast. A decrease in the absolute values of nutrient intake associated with a decrease in energy consumption was established. However, skipping breakfast showed a decrease in added sugar intake as a per cent of total calorie intake (12.1±8.6 vs 13.2±9.1%, р<0.01), while the contribution of other macronutrients to energy intake did not change significantly. In connection with the heterogeneity of the actual dietary intake of the population, factor analysis was used to describe the main food models of the breakfast using the principal component method. 6 factors were identified that determine the eating patterns of breakfasts and correlate with 2-4 individual food items of actual dietary intake. Conclusion. The results obtained are consistent in a number of positions with the literature data, in particular, indicating a decrease in daily energy consumption when skipping breakfast.

Abstract
A healthy diet is a necessary condition for the normal physical and mental development of children, which has a significant impact on the ability to withstand the effects of adverse environmental factors and determines the health of future generations. Healthy nutrition of children and adolescents is important not only for the normal physical and mental development of the child, but also as a factor determining the health of future generations. It is important for the preservation of the child's health to have a proper diet, that is, the distribution of the amount of food during the day (the multiplicity of meals), its energy value, chemical composition, food set for individual meals, a certain time of intake and the duration of intervals between meals. The aim of the study - to analyze the diet, nutrient and energy consumption and the structure of the food set of various meals in children aged 3-17 years. Material and methods. Analysis of the actual nutrition of about 18 000 children on the basis of primary materials obtained by the Federal State Statistics Service during the Selective observation of the diets of the population. Results. An analysis of nutrition of children aged 3-17 showed that the majority of children (67.9%) had three main meals with a hot meal (breakfast, lunch, dinner), while they accounted for the largest amounts of energy consumption in all age groups. Supplementary meals (evening snack and second breakfast) were characterized by the lowest calorie value, the afternoon snack occupied an intermediate position in terms of energy consumption. At the same time, energy consumption with the main meals as a % of the daily calorie intake did not correspond to the recommended values. A shift in energy consumption to the second half of the day, including just before bedtime, was revealed, especially in older children, which is a bad eating habit that can contribute to weight gain in a child. Bread products, cereals and cereal dishes made the greatest contribution to the daily calorie intake of children of all ages (32.4- 33.0%). Meat products occupied the second position in the share of daily calorie content (12.8-21.2%), dairy products provided 9.5-14.0% of daily energy, and among preschoolers their consumption, in contrast to meat products, was the highest, and among older schoolchildren - the lowest. An additional 8.3 to 14.9% of energy came from sugars found in non-dairy drinks, confectionery, chocolate, jams, and other sweets. Conclusion. An analysis of the diet and food structure of the daily ration of children aged 3-17 revealed deviations from the principles of healthy eating, especially in schoolchildren: energy consumption with the main meals did not meet the recommended norms, a significant proportion of the calorie intake fell on the second half of the day. Differences in the contribution of meals, as well as individual foods and dishes, to the total daily calorie value of diets in children, depending on age, have been established.

Abstract
The growing prevalence of overweight and obesity is an urgent problem not only in adults but also in children in both developed and developing countries. The purpose of this study was to analyze the prevalence of overweight and obesity and other forms of nutritional disorders in Russian children. Material and methods. The nutritional status of 17 329 children aged 2-18 years was assessed on the basis of anthropometric data, obtained by the Federal State Statistics Service during the "Sample Survey of the Population's Diet" in 2018. The prevalence of various forms of malnutrition was assessed by the Z-score categories: underweight, stunted growth (short stature), thinness, overweight, obesity. Results. Population mean and median values of Z-scores in all sex-age groups do not exceed ±0.5 in relation to WHO standards, which indicates the applicability of the standards to assessing the nutritional status of Russian children population. High body weight (WAZ>2) occurs in 7.6% of children, underweight in 2.6%. The incidence of short stature in boys and girls is 7.0 and 6.8%, respectively. The prevalence of overweight and obesity in boys is 20.4 and 10.4%, respectively, while in girls, 15.4 and 7.6%. In general, in the population of children 2-18 years old, the prevalence of overweight is 18%, and obesity is 9.1%. The index of malnutrition, including the sum of the frequency of various combinations of low Z-scores (<-2), characterizing underweight, short stature, thinness, and their combinations was 8.0%. The multilevel logistic regression showed that overweight and obesity inversely depend on age; the risk of developing these conditions is lower in the city, but higher in male children compared to female children. Conclusion. The population of children 2-18 years old in the Russian Federation is characterized by a low incidence of forms of malnutrition, such as underweight and thinness. However, the prevalence of overweight and obesity is higher than in European countries.

Abstract
For the integral assessment of diet, tools have been proposed, called nutritional quality indices, and, as separate options, healthy eating indices (HEI), which assess diets in relation to compliance with existing national recommendations for healthy eating for the population. The aim of this work was to investigate the suitability and reliability of the developed baseline HEI for assessing the nature of the diet, modifications of the diet and eating behavior of the population. Methods. To analyze the suitability and reliability of the HEI for assessing the features of dietary intake and eating behavior of the population, the data on the actual nutrition and eating behavior of adults 19+ years of both sexes obtained by Rosstat in 2013 and 2018 have been used. Along with using the 24-hour food replay method to study actual food intake, the questionnaires included a form for assessing the frequency of consumption of major food groups in a standard format: daily or several times a week, once a week, several times a month, once a month or less often, practically do not consume. Results. The average HEI values for women in all food consumption groups are significantly higher than for men (p<0.01). Changes in average HEI values depending on the level of consumption of various products are multidirectional. When foods such as grains, vegetables and fruits are consumed in quantities greater than the median, the HEI is significantly higher than when consumed at less than the median level. On the contrary, when consuming more than the median of meat products, fatty products and confectionery products, as well as for those who consumed sausages, the HEI for both women and men is significantly lower than for those who consumed less than the median or did not consume these products. The average HEI values in men and women who consumed cottage cheese, kefir or yogurt are significantly higher than among those who did not consume these foods. Significantly higher HEI values were found in vegetarians compared to non-vegetarians. The average HEI values of adults of both sexes in autumn are significantly higher than in spring, which is confirmed by the significantly higher consumption of vegetables and fruits in autumn, w hich are components- indicators of the integral HEI. The dependence of the HEI values on the frequency of consumption of the main food groups, which are its components or affect the consumption of components, has been shown. The higher the frequency of consumpt ion of meat products, butter, salad dressings, chocolate and sweets or sweet carbonated drinks the lower is the HEI. On the other hand, the higher the frequency of consumption of vegetables, fruits, milk, fermented milk, cottage cheese or curd the higher is the HEI. Conclusion. The changes in the values of the HEI at various values, as well as the frequency, of food consumption indicate the possibility of HEI using as a marker for assessing the relationship between diet, health status and the incidence of chronic noncommunicable diseases.

Abstract
The growing prevalence of overweight and obesity has been recognized by WHO as a global obesity pandemic worldwide. The spread of overweight and obesity is also an urgent problem for Russia. The aim of this study was to analyze the nutritional status of the Russian adult population and the prevalence of overweight and obesity depending on a number of socio-demographic factors and family income. Material and methods. The assessment of the nutritional status of adults was carried out on the basis of anthropometric parameters obtained by the Federal State Statistics Service in the course of the "Sample observation of the population's diet" in 2018 based on a random sample of 45 thousand households in all constituent entities of the Russian Federation. 76.960 people aged 19 and over were examined, including 41% of men and 59% of women. The nutritional status of adults was assessed based on the calculation of the body mass index (BMI). According to the WHO classification, BMI values in the range of 18.5-24.9 kg/m2 were taken as normal, BMI 25.0-29.9 kg/m2 was taken as overweight, and BMI≥30.0 kg/m2 indicated obesity. The prevalence of obesity was analyzed depending on socio-demographic variables: gender, age, place of residence (city, village, type of settlement in terms of population, federal district), marital status, educational level, and per capita income. Results. The body weight and height of respondents with a BMI of 18.5-24.9 kg/m2 can be considered as the average normal body weight and height of the adult population in Russia, which amounted to 70.6 kg and 175.4 cm for men, and 60.2 kg and 164 cm for women, respectively. The average body weight of all urban men is 1.3 kg more than that of rural men, while the average body weight of urban women is 2.2 kg less than that of rural women. The growth of urban men and women, respectively, is 2.1 cm and 1.1 cm higher than rural ones. The average BMI values of urban and rural men do not differ, while the BMI of rural women is 1.2 kg/m2 higher than that of urban ones reflecting higher values of the average body weight. The average BMI values of adult men and women are in the zone of values characteristic of overweight (BMI≥25.0 kg/m2). In general, in 2018, only 34.4% of the adult population (33.2% of men and 35.4% of women) had BMI indices corresponding to normal values. Overweight, including obesity (BMI≥25.0 kg/m2), were detected in 66.1%, men and 63.0% of women, and obesity (BMI≥30.0 kg/m2) in 18.8% of men and 27.4% women. The incidence of obesity among adults of both sexes is significantly higher among rural residents, while the incidence of overweight (BMI 25.0-29.9 kg/m2) does not differ. The prevalence of obesity in urban and rural areas decreases with the increase in their population. The frequency of overweight increases with growth in households' average per capita income with high reliability of differences between the 1st and the 5th quintiles of income (p<0.01). At the same time, the incidence of obesity increases from the 1st to the 3rd quintiles, decreasing in the 4th and the 5th quintiles. For men, the dependence of the average BMI values on household income is almost square with high reliability (p<0.001), while for women, a decrease in BMI was revealed only in the 5th quintile of income. Thus, the incidence of obesity among women in the richest population groups is lower than in the less affluent. The incidence of obesity in men increases linearly with age from 19 to 65, and decreases in the age group over 70 years. In women, the frequency of obesity from 19 to 40 years old increases slowly, then there is a rapid increase up to 65 years, and then, like in men, there is a decrease. In young men, the frequency of overweight, including obesity (BMI≥25.0 kg/m2), is 32.3% at the age of 19-25, and 49.3% at the age of 25-30, which, respectively, by 13.1 and 20.0% higher than among women of the same age. Moreover, the frequency of obesity in these age groups of men and women is the same. The highest incidence of BMI≥25.0 kg/m2 in men is observed over 40 (70-76%); in women over 50 (75-83%). The prevalence of obesity (BMI≥30.0 kg/m2) before the age of 50 is approximately the same in men and women, while over the age of 50, the frequency of obesity in women is 12-16% higher than in men. Over the age of 65, there is a decrease of obesity in both sexes, but the incidence remains significantly higher among women than men of a similar age. The prevalence of obesity among urban and rural men in all age groups from 19 to 70 years does not differ significantly. Among rural women the frequency of obesity is significantly higher compared to urban women. Education level affects the prevalence of obesity only in women: the incidence of obesity among women with higher education is considerably lower than among women with less education. Conclusion. Significant differences in the state of nutrition and the prevalence of obesity were revealed depending on the place of residence in urban and rural settlements, the type of settlements in terms of population and the Federal Districts. Noteworthy, there was a significant 10.2% increase in the prevalence of overweight in men in 2018 compared to 2012, while the increase in women was 6.2%. In general, the frequency of overweight increased by 7.8%, amounting to 40.3%. The prevalence of obesity increased in men by 0.9%, while in women decreased by 3.3%. As a result, throughout the adult population, the prevalence of obesity decreased by 1.4%. Based on the available two studies, it is not possible to assert with confidence about the trend of decreasing the prevalence of obesity from 2012 to 2018.

Abstract
The assessment of the individual dietary intake of the population acquired critical importance in the Russian Federation when implementing socio-economic reforms in the 1990s. This was due to the difficulties of the transition period from a planned economy to market relations, which was reflected in a decrease in the level of the socio-economic condition of the population. The purpose of this study was to analyze objective and reliable information about the nature of consumption of nutrients and energy, as well as food products by the adult population of Russia in the period 1994-2018. Material and methods. The paper analyzes and summarizes the results of sample surveys of household budgets conducted by the Federal State Statistics Service (Rosstat) in 1991-2018 and of large-scale epidemiological studies of the actual dietary intake of the population of the Russian Federation, which are presented by the data of the "Russian Longitudnal Monitoring Surveys" (RLMS) in 1994-2012 and large-scale nutrition surveys conducted by Rosstat in all constituent entities of the Russian Federation in 2013 and 2018. All nutrition surveys were carried out according to a unified methodology for collecting, processing and reporting actual data developed at the Federal Research Center of Nutrition, Biotechnology and Food Safety. Using a unified methodological basis allows us to build an analysis of the dietary intake of the population for the period from 1994 to 2018. Results. The objective data on the consumption of energy, nutrients, individual and aggregated groups of food products were analyzed depending on a number of socio-demographic and socio-economic variables that determine the nutrition pattern of the population of the Russian Federation during the period of economic reforms in the 1990s and 2000s. According to budget surveys, over the past years, the structure of the diet in households has changed significantly: the consumption of potatoes decreased by 45% and bakery products by 6%, the consumption of fish and fruits almost doubled, the consumption of meat products increased by 60%, of vegetables by 20%. According to epidemiological studies, the fat content increased from 31 to 36.8% of calorie content, the protein content didn't changed significantly, although in recent years there has been a tendency to increase to 12.1% of calorie content. The average per capita consumption of protein and fat by adults, including saturated fat acids were significantly higher in 2005-2018, compared with the 1990s, both in absolute quantities and in per cents of the caloric intake. At the same time, the consumption of total carbohydrates in per cents of the calorie intake and the amount of dietary fiber in the diet decreased. Parallel to fat intake changes, an increase in the prevalence of overweight and obesity in the adult population has been shown. A consistent decrease in adult consumption of added sugar in per cents of the total calorie intake was revealed from 14.0% in 1994 to 12.3-12.8% in 2012-2018. Changes in the structure of energy consumption and macronutrients are due to changes in the structure of the food ration set that have occurred over the years of observation. The total consumption of dairy products in terms of milk increased: the consumption of the amount of dairy products (drinks and "spoons"), curd products and cheeses increased, only the consumption of drinking milk did not change. In 2012 and 2013 consumption of meat products and sausages was significantly higher than in previous years. There was an increase in the consumption of fish, vegetables, fruits, fats and oils, juices in the 2000s compared with the 1990s. On the contrary, over the years of observation, a consistent decrease in the consumption of the total grain products was observed. These changes in the consumption of macronutrients and foods are a characteristic feature of the transition period from "poor" to "rich" dietary intake and the increase in 2000s in the diet energy density due to an increase in the proportion of fat and a decrease in the proportion of carbohydrates, which contribute to weight gain and an increase in the prevalence of overweight and obesity. The dependence of the structure of the diet on the economic situation of the family has been established, which implies the problem of malnutrition, both general malnutrition and insufficient intake of micronutrients (vitamins and minerals), in poor families. Conclusion. An assessment of the current nutritional status of the Russian population implies a double burden of disruption, determined both by the simultaneous presence of malnutrition problems and the increase in the prevalence of overweight and obesity.

Abstract
The fundamental cause for the development of overweight and obesity in adults is a positive balance of energy. However, many environmental factors can contribute to or restrain the development of obesity. These, of course, include the composition of the diet and the structure of its energy value. The aim of the study was to explore the relationship between the prevalence of overweight and obesity with the macronutrients' energy intake of Russian adult population. Material and methods. Assessment of dietary intake and anthropometric parameters (height, weight) of the adult population were obtained in a cross-sectional survey of households in Russia (Russian longitudinal monitoring surveys, RLMS project). For analysis, we selected data from a survey of adults of both sexes (24 767 men and 30 040 women) aged 19-60 years, obtained in 7 rounds of the project during the period 2000-2012. Association of dependent variables of macronutrients' energy as a percentage (%E) (fat, protein, total carbohydrates, natural mono- and disaccharides, added sugar), and independent (factor) variables namely gender and 4 categories of body mass index (BMI), characterizing nutritional status, was investigated using the ANOVA. The total daily energy intake and age were used as covariates in the model. Results and discussion. The intake of total daily energy, the absolute values of macronutrients' intake and %E of macronutrients are significantly higher in obesity (with the exception of the consumption of various fractions of carbohydrates) compared to normal BMI values. A direct association of the %E protein and the BMI category has been established. This relationship is more pronounced in men, but statistically significant in women as well (p<0.001 when comparing all BMI groups). A linear increase in the proportion of %E of fat with an increase in the BMI category in the direction from malnutrition to obesity was found in men (p<0.001 when comparing all BMI groups). In women, statistically significant differences in %E of fat intake in BMI groups were observed only between obesity and normal. In men, the consumption of %E due to total carbohydrates is lower in groups with overweight and obesity compared with normal and malnutrition. The exception is only for %E of natural mono- and disaccharides, the consumption of which in men increases in the range from malnutrition to obesity. In women with overweight and obesity, consumption of %E due to polysaccharides and natural sugar doesn't differ from consumption in persons with normal BMI. Consumption of %E due to added sugar and the frequency of consumption of more than 10%E due to sugar are reduced in people of both sexes in the direction normal, overweight, and obesity. The opposite effect of BMI on the consumption of %E of fat and carbohydrates is clearly manifested in an increase in the ratio of %E fat/%E carbohydrates in people with overweight and obesity. Analysis of variance was confirmed when assessing the frequency of distribution of respondents with overweight and obesity in quartiles of macronutrients' %E differentiated by gender. The frequency of overweight and obesity is significantly higher in the groups of highest quartiles of %E of protein, total fat, saturated fatty acids and lowest quartiles of %E of total carbohydrates and their individual fractions, including added sugar. Conclusion. The data obtained indicate a more significant role of the energy of the diet fat component in the prevalence of overweight and obesity, while the energy of carbohydrates, including added sugar, has no direct association with the prevalence of these conditions. The results obtained should be taken into account when developing measures to prevent and reduce the prevalence of obesity, both at the population and individual levels.

Abstract
The conventional presentation of data on the actual average daily consumption of energy, nutrients, food products, as well as critically important risk factors complicates a holistic dietary assessment, consisting of at least a dozen indicators only for nutrients. The aim of the study was to develop a healthy eating index (HEI), based on epidemiological data on the actual nutrition of the Russian population and the criteria and principles of healthy nutrition adopted in the country. Material and methods. We used the data on the dietary intake of nutrients, energy and the main food groups obtained from the cross-sectional nutritional survey of members of 45 000 households over the age of 3 years conducted by Federal Statistics Service (Rosstat) in all regions of the Russian Federation in 2013. The criteria for scoring the indicator-components of the HEI were developed taking into account modern recommendations about the magnitudes of consumption of the most important food groups, as well as the levels of consumption of critical risk factors for chronic non-communicable diseases. Results and discussion. The HEI design included 5 indicators characterizing the adequacy of consumption of the main food groups, as well as 5 indicators of nutritional risk factors for chronic non-communicable diseases. Consumption of food groups (cereals, dairy, meat products, excluding sausages, vegetables, fruits) and added salt was calculated in g per 1000 kcal, and critical risk factors (total fat, saturated fat, added sugars) were estimated as a percentage of total energy. As a result of transformations of quantitative variables of consumption of macronutrients (risk factors) and food products, quantitative scores were obtained (0-10 points) for all 10 indicator-components of the HEI. The assessment of the reliability of the HEI (validation) showed that a statistically significant positive correlation can be traced between the integral HEI and the indicators. This is a sign of reliability and objectivity of the HEI design. At the same time, a negative correlation was found between the value of the HEI and the scores of meat products, including sausages, that was the basis for excluding sausages from calculating the amount of meat products. It has been shown that HEI is significantly higher in females in age groups older than 11 years. A pronounced dependence of HEI on the age of people of both sexes has been established, that may be an indicator of the high sensitivity of HEI to changes in dietary patterns. The maximum HEI values were noted in children, the minimum - in adults 19-60 years, with a subsequent increase in the age group over 60 years. There were no changes in HEI in obese men, but HEI in women with body mass index (BMI) above 30.0 was significantly higher than in those with normal body weight (BMI 18.5-24.9). Conclusion. Further research is needed on the sensitivity of the HEI in terms of assessing the dietary patterns and dependence on socio-economic and other variables, including a wide range of dietary modifications.

Abstract
The review presents an analysis of the construction and properties of indices of diet quality (IDQ), developed in different countries and known under different names: Diet quality index (DQI), Healthy eating index (HEI,) and other names. The analysis of the data on three directions of research on validation of IDQ - correlation with its components (internal validation), association with risk assessments of morbidity and mortality, and association with biomarkers of nutritional status and risk of noncommunicable chronic diseases (NCD), which strongly indicate the possibility of IDQ as a tool for epidemiological studies of the relationship of nutrition, nutritional status and health has been submitted. Analysis of the composition of various types of IDQ allowed to formulate general principles of their development (construction). IDQ are based on recommendations for healthy nutrition of the population and assess the degree of commitment of the population to adhere to the recommendations. The design of the IDQ should be applicable to all categories of the population, regardless of gender, age (older than 2 years), national and regional characteristics of nutrition of the population, which allows a comparative assessment of the diet quality of different categories of the population. IDQ focus on the assessment of four main aspects of a healthy diet: food diversity, adequacy of consumption of adequacy of consumption of major groups or some subgroups of the most valuable foods, moderation and balance of the diet. All IDQ consist of two groups of indicators-components: indicators of adequacy of food consumption and indicators of consumption of critically important food factors, the consumption of which should be limited, i.e. indicators of risk factors of NCD. The standard values of adequacy of consumption of both groups of indicators should be expressed in the «density» of consumption of foods and nutrients per 1000 calories or as a percentage of the total calorie intake. Based on these principles, it is planned to develop and evaluate the reliability and objectivity of IDQ according to the study of the dietary intake of Russian population.

Abstract
Increasing the adaptive capacity of professional athletes depends on proper nutrition, especially in training and competitions' period. In this regard, it is relevant to study the actual nutrition and assess its compliance with the energy expenditure of athletes. The aim - to study the actual nutrition and energy expenditure of athletes from male water polo national team of the Russian Federation in the competitive period. Material and methods. In March 2018, 15 highly skilled sportsmen-men engaged in water polo were examined; qualification - 11 masters of sports, 4 candidates for the master of sports; Slavic ethnos. The average age was 23.1±0.6 years. The actual nutrition was studied by a 24-hour food record method and by the frequency method. The anthropometric examination was carried out according to a unified method using standard medical scales, a medical height meter and a rubberized measuring tape. Measurement of energy expenditure and heart rate at rest and under load was performed on a bicycle ergometer using an wireless ergospirometer and a chest pulse meter. Results and discussion. The determination of daily energy expenditure in athletes of the men's Russian national water polo team showed that the average value was 4350±129 kcal. А peculiar feature of the diet of water polo players is its high caloric value (5165±539 kcal/day), caused by energy expenditure during physical exertion and additional thermogenesis in conditions of long training in water. Excessive (1.5 times in comparison with the recommended values) consumption of fats, including saturated fatty acids by 1.3 times, added sugar and added salt is a risk factor of cardiovascular diseases, diseases of digestive organs, endocrine system, including type 2 diabetes. Low values of consumption of vegetables and fruits, dairy products, fish products and high levels of sugar and confectionery have been established. Conclusion. The imbalance of diets on two basic nutrients (fats, carbohydrates) has been revealed. The data obtained were the basis for the formation of individual recommendations on nutrition for each athlete, taking into account athletes' metabolic parameters and the level of physical activity. It is necessary to continue studies of anthropometric indices in dynamics for the most adequate assessment of the compliance of actual nutrition with energy consumption, and further correction of the diet in order to improve athletes' performance.

Abstract
It is known that adequate calcium intake determines formation of skeleton and genetic predisposition of its weight and density peak. Optimal calcium intake in the childhood determines risk reduction of density loss and osteoporosis in the adulthood. This research explored contribution of different food sources, as well as eating occasions on calcium dietary intake among preschool and school children (4-13 years old). Mean daily Calcium intake and dairy products consumption depending on family income have been analyzed. Dietary intake was evaluated by 24-hour recall method. National food composition data tables have been used to estimate mean nutrient intake. Dairy products were classified in accordance with local food grouping system. Percent of children consuming products - sources of calcium, amount per consumer, contribution of eating occasions to Calcium intake, foods consumed at breakfast as well as Calcium intake and dairy products consumption depending on household income has been analysed. Nationally representative sample of preschool and school age children, Russia National Nutritional Survey, was conducted in all regions of Russia in 2013 by state Federal Statistics Service - Rosstat. Sample size was 22 771 children split in four age groups: 4-6 y.o. (n=7303), 7-8 y.o. (n=4391), 9-10 y.o. (n=4691) and 11-13 y.o. (n=6386). The study confirmed the indications in the domestic and foreign literature that calcium intake was insufficient in children aged 4-13 years. Data showed age related particularities in consumption of products-sources of Calcium: percent of children consuming milk and milk-based beverages, milk porridges, cottage cheese declined rapidly in older age groups in comparison to preschoolers. A slight increase of cheese consumption was shown in older age groups. Breakfast is an important eating occasion that provides a significant proportion (23-28%) into calcium daily intake in children. Habit of skipping breakfast puts calcium daily intake at risk as it is not compensated throughout the day at other eating occasions. Our results indicate lower daily Calcium intake in breakfast skippers (11-14% of children) compared with kids of the same age who had breakfast at the day of survey. Sweetened tea and coffee consumption increased in older age groups and contrary, a milk and milk based beverages consumption droped in school age. We found lower Calcium intake and lower accessibility to variety of Calcium food sources in low socio-economic class of the children population, where milk seems to be the main product from milk and dairy food group. The findings can assist in developing food-based recommendations for optimal intake of calcium in children's daily diet. Consumption of dairy products is required to meet adequate intake and to low down prevalence of inadequate intake. There is room for improvement of dairy product consumption in terms of variety and number of serving a day especially, for children in older age groups. More attention to be dedicated to breakfast as it is an important eating occasion that contributes significantly to calcium daily intake. Study findings call for intervention programs aiming to correct the inadequacies of calcium intake in schoolchildren's diets, including nutrition education for families and support for accessibility of the products rich in calcium by low socio-economic population groups; for example, by inclusion of milk and dairy products into the school feeding programs.

Abstract
The aim of the work was to study the association of overweight and obesity with the consumption of basic types of dairy products among the adult population of Russia. Data from the survey of the diet of adult members of 45,000 households, conducted in 2013 by the Federal Service of State Statistics in all regions of the country, have been used. The actual consumption of food among all members of the surveyed households was studied by 24-hour (daily) diet recall in April and September 2013. The body mass index was calculated on the basis of self-esteem by respondents of body weight and height. It was shown that average daily intake of kefir, yogurt and cottage cheese was higher in women, while consumption of drinking milk and cheeses was higher for men. Consumption of drinking milk and kefir in men and women was much higher in groups with overweight and obesity than with normal body weight. Consumption of yogurt, on the contrary, was much less in people of both sexes with overweight and obesity. Consumption of milk, kefir and cottage cheese increased with age, while consumption of yogurt and cheeses, on the contrary, decreased with age. The data of the variation statistics indicated the existence of a relationship between obesity and consumption of individual dairy products. However, the dependence of these same parameters on age reduced the reliability and evidentiary strength of the results of the variation analysis, since the prevalence of obesity increases significantly with age. To study the association of dairy consumption and the spread of obesity, a logistic regression model was used with the calculation of the odd ratio of the risk of obesity in the consumption of dairy products with adjustment for age, education level and per capita family income. The results of the association analysis, with adjustment for socio-demographic variables, unambiguously showed a significant reduction in the risk of obesity in persons of both sexes consuming yoghurt (OR mean 0.76; CI 0.71; 0.82; р<0.001), cottage cheese (OR mean 0.88; CI 0.85; 0.91; р<0.001), as well as in women with consumption of drinking milk (OR mean 0.87; CI 0.84; 0.91; р<0.001). The increase in the risk of obesity was observed only in men with consuming kefir (OR mean 1.08; CI 1.01; 1.16; р=0.023) or hard cheeses (OR mean 1.14; CI 1.08; 1.20; р<0.001) with adjustment for socio-demographic variables.

Abstract
The purpose of the study was to evaluate the actual intake of fluids by athletes of various sports during the day with one and two training sessions before, during and after workout. The dietary intake, including consumption of various types of liquid foods and beverages, was evaluated by the method of 24-hour recall in 280 athletes of high qualification (candidates for masters and masters of sports) of both gender of various sports during the training period. It has been established that the main drink of rehydration was drinking bottled water. Bottled water was consumed on average by 86% of athletes. It was consumed by 95-96% of sportsmen from the group of single combats and power kinds, whereas in other groups the share of water consumers was less - 67-79%. In second place in terms of percentage of consuming was tea. Consumption of sports drinks was observed only during training by athletes from the group of cyclic sports (31%) and single combat (11%). Calculating the per capita fluid intake of athletes who had 2 workouts a day showed that athletes from the martial arts group consumed the largest volumes of fluid in the mode of both training sessions as compared to representatives of other sports. Athletes of other sports consumed on average less liquid in the 2nd training mode compared to the 1st one. The total fluid intake during two training sessions was maximum in the group of martial arts and was minimum in the group of complex coordination sports. It should be specially noted a small proportion of athletes who consumed specialized sports drinks - only 17% of athletes and more than half of them - cyclical sportsmen. Consumption of liquid food outside training has been observed in 76% of athletes. The mean volume of consumed liquid products varied by the user from 382 and 437 ml in complex coordination and game sports up to 504-553 ml in other sports. The daily fluid intake was maximum (2326 ml) in athletes engaged in martial arts, minimum (1009 ml) - in athletes of complex coordination sports.

Abstract
By results of a research of the International Bureau of Work (IBW), malnutrition at work costs the world community of 20% work decline in production. Chronic noninfectious diseases which risk factors are disturbances of nutrition cause about 46% of morbidity and 60% of mortality in the world, including to 30% of mortality from cardiovascular diseases. Economically developed countries face larger financial losses from an obesity. So annual expenses, such as medical insurance, paid sick days, holidays and other payments make from 2 to 7% from the total amount of expenses on health care. Catering establishments in institutions are capable to provide the maximum approach to an optimum nutrition of employees, including, regimen of meals (a breakfast, a lunch and an afternoon snack, and sometimes and a dinner) that will provide prophylaxis of a series of the major noninfectious diseases, such as infarct, stroke, diabetes mellitus of the II type, cancer.

Abstract
The objectives of this study was to analyze energy and nutrient intakes in Russian children 3-19 years old, based on the National Survey conducted by Rosstat among 45 thousand households in all regions of Russia in 2013. Dietary intake assessment was investigated using method of 24-hour recall. The analysed sample consisted of 34 637 records. Sampling distribution of children by place of residence (urban, rural) and by Federal Districts has a representative character. The values of the mean daily energy and nutrients consumption were compared to Russia recommendations (based on physiological needs), or compared to WHO recommendations (for added sugars and salt). It has been shown that values of energy consumption in children are similar to the Russia recommendations for the corresponding age and gender, although a bit lower standards - which is typical for data got by 24-hour food recall. It reveals clearly the association of energy consumption with the age and sex in groups of children over 11 years. Nutrient intakes in the most cases were slightly lower Russia recommendations and varied depending on gender and age, similar to the change in the energy consumption level. The findings showed that the major issues in children aged 3-19 years are an excessive consumption of the total fat, saturated fatty acids, added sugar and salt in combination with calcium and iron deficiency. Protein and fat intakes in percentage of the total calories intake of children of all ages are directly associated with the family income, while total carbohydrates and added sugars intake reduces by increasing the income. Results of the analysis of macronutrients consumption indicate significant effects of socio-economic factors on child nutrition, which confirms the data obtained in the early 1990s.

Abstract
Fermented dairy products comprise a large food group in Russia and are an important source of dietary nutrients like protein, calcium, fat. Obesity is a rising public health issue in Russia. Observing the role of fermented dairy in the maintenance of healthy weights is important. Current study objective was to explore the association between obesity/overweight prevalence and yogurt consumption in Russian adults. Data from RLMS-HSE 1994-2012 was used. Primary materials are available on http://www.cpc.unc.edu/projects/rlms-hse, http://www. hse.ru/org/hse/rlms. Data collected included dietary intake by single 24h recalls and anthropometric measures for 72.400 adults (≥ 19 y.o.). Logistic regression models were used to explore the relationships between yogurt consumption and obesity prevalence (BMI > 30.0 compared with. 18.5-25.0), controlling for age and gender. Daily average intake (g/day) of yogurt significantly increased from 1994 to 2012. Yogurt consumption decreased over 40 y.o. in both gender. Women yogurt consumption is inversely correlated with the magnitude of the BMI: the consumption of yogurt in women with normal BMI values (> 18.5-25.0) was significantly higher than in women who are overweight and/or obese (BMI > 25.0; or > 30.0). The mean values of BMI in women who ate yogurt, were significantly lower than in women not consuming yogurt. In men, the relationship between consumption of yogurt and BMI is not revealed. Thus, among women, a significant inverse association was observed between yogurt consumption and obesity (OR 0.582, CI 95% 0.497, 0.680; p < 0.001). The observed association between yogurt intake and prevalence of obesity is dependent on gender: yogurt is associated with lower obesity prevalence only in women.

Abstract
The analysis of the prevalence of overweight and obesity in adult age and sex groups of the Russian population in the dynamics of observation from 1994 to 2012 was based on anthropometric measurements of weight and height in Russian Longitudinal Monitoring Survey. The mean values of body mass index (BMI) and the frequency of obesity (BMI > 30.0) of the entire population have been increased during the observation period. The analyzing the data by gender revealed a significant increase in the frequency of obesity mainly among men, especially in the period 2005-2012, whereas among women increased incidence of obesity was negligible. The most rapid increase in the frequency of overweight and obesity in men noted in the age period of 20-30 years, and further increase in frequency of overweight and obesity with age were negligible. The rate of overweight and obesity in women had almost linear increase in the age period of 20-60 years. Comparative analysis of the prevalence of obesity showed that the obtained values for the 2000-2012 period were close to those characteristic of the developed world in recent decades. The growth of obesity rate in the general adult population in 2000-2005 and the 2005-2012 was 0.4% per year. At the same time, men showed a significant acceleration of the growth rate of obesity in the period 2005 to 2012 (0.61% per year) compared with the period 2000-2005 (0.44% per year). Increase in the frequency of obesity was observed in all regions in 2000 to 2012. The data should be considered as a rationale for research into the causes of gender differences in the prevalence of overweight and obesity in the first place to find differences in the peculiarities of dietary intake between men and women at different ages of life, leading to the development of overweight and obesity.

Abstract
The data of the literature on the impact factors of the extrusion cooking on physical and chemical properties of food proteins, biological value and digestibility have been discussed. Extrusion cooking is a high temperature short-time process, characterizing by a minimal loss of nutrients. and biologically active substances compared to other methods of heat treatment of food. Studies of the properties of protein-containing products, protein isolates and concentrates in the extrusion are examined in different ways: the inactivation of antinutritional factors; improvement in digestibility and availability; changes in the content and chemical modification of amino acids; Maillard reactions involving amino acids; mutual enrichment of protein mixtures during the composite food extrusion; formation of functional technological properties of the extruded protein products.

Abstract
The analysis of experimental, clinical and epidemiological data on the phytoestrogen properties of the components of flaxseed Linum Usitatissimum L., especially lignans and products of their biotransformation in humans and animals enterodiol (END) and enterolactone (ENL) are presented. Flaxseed is the richest in the vegetable world source of lignans (up to 0,7-1,5% of dry weight of seed), among which prevails secoisolariciresinol diglycoside (SIR-DG). Plant lignans are characterized as natural phytoestrogen that reduce the risk of hormonedependent cancers of breast, uterus and prostate. Anticancerogenic activity of flaxseed lignans due to antioxudant effect END and ENL in the human body. The antioxidant activity of SIR, END, ENL and SIR-DG is higher than that of vitamin E and the antioxidant activity of SIR, END and ENL higher than SIR-DG. On the basis of evidence-based biomedical researches on various models in experimental carcinogenesis, on the tumor cells in vitro, in clinical trials in patients with hormone-dependent tumors, and, finally, in epidemiological studies have proved the anticarcinogenic activity of the components of the flaxseed and validity of recommendations for preventive and curative use in hormone-dependent tumors.

Abstract
The nutritional value and functional properties of flaxseed Linum Usitatissimum L. are analyzed. There are three groups of compounds in the flaxseeds, characterized by specific biological activity and functional properties: PUFA omega-3 family, soluble dietary fiber in the form of mucus, and lignans, which have phytoestrogen properties. Data on the chemical composition of flaxseed, obtained from various sources, are characterized by high variability. The flaxseeds contain 35-45% oil, which contains 9-10% of saturated fatty acids (palmitic and stearic), about 20% monounsaturated fatty acids (mainly oleic acid), and more than 70% alpha-linolenic fatty acids acid. The protein content in seeds of flax varies from 20-30%. Proteins of flaxseeds are limited by lysine, but are characterized by a high coefficient of digestibility (89,6%) and biological value (77,4%). The content of dietary fiber reaches 28% by weight of whole seed, with the ratio of soluble and insoluble fractions from 20:80 until 40:60. According to the content of B-group vitamins and some minerals flaxseeds are close to the crops. Vitamin E in the flaxseeds is mainly in the form of gamma-tocopherol (9,2 mg/100 g of seeds). Flaxseed is the richest in the vegetable world source of lignans (up to 0,7-1,5% of dry weight of seed), among which prevails secoisolariciresinol diglucoside. The chemical composition of flaxseed has identified areas in the study of preventive and functional properties. PUFA omega-3 family, dietary fibers and phytoestrogen lignans determine hypolipidemic and antiatherogenic actions of flaxseed. Flax seeds under the conditions of storage and processing technologies are harmless food product. Consumption of 50 g/day of flaxseed showed no adverse effects in humans.

Abstract
Literature data on the nutritional value of sesame seeds (Sesamum indicum L.), their use in feeding the world population and food production are presented. Sesame seeds contain up to 55% oil and 20% protein. Sesame proteins are limited by lysine but rich in tryptophan and methionine. Sesame oil is rich in linoleic and oleic acids, the predominance of gamma-tocopherol over the other isomers of vitamin E and high content of fat-soluble lignans (sesamin and sesamolin). Thanks to recent sesame oil has a phytoestrogen activity; it has a cholesterol-lowering effect.

Abstract
We studied the actual consumption of specific food groups of patients with osteoarthritis (OA) and analyzed the nutritional risk factors for OA in case-control study. Level of consumption of all types of dairy products was significantly lower in the group of patients with OA compared with controls. The relative risk of developing OA in the consumption of less than 573 g (median) of dairy products in terms of milk increases by 5-6 times.

Abstract
The study gives the characteristic of the social situation of patients with osteoarthrosis (OA), among which is dominated by people with disabilities and senior citizens (60%), most of which belongs to the poor. The actual nutrition of patients with OA is characterized by low energy intake and macronutrients. Feeding low-income patients with OA was characterized by inadequate intake of ascorbic acid and calcium, whereas the intake of vitamin A, E and beta-carotene was higher in patients with OA compared with the control group.

Abstract
Aim of present study was the getting data on black and green tea and coffee consumption among Russian population in 1995-2003. The consumption of beverages tea and coffee was estimated by 24-hour recall of dietary intake in course of Russian Longitudinal monitoring surveys of economics and health. About 82% of population have consumed the black tea and only 2.2%--the green tea. Mean daily black and green tea intake among all population were 446 ml and 10 ml, correspondingly. The prevalence of black tea consumption was decreased and green tea and coffee consumption were increased from 1995 to 2003.

Abstract
Aim of present study was the getting data on dietary intake of antioxidant vitamins in Russian population in 1995-2002. The consumption of food was estimated by 24-hour recall methodology in course of Russian Longitudinal monitoring surveys of economics and health. Mean intake of vitamin A is less than recommended level and 25th procentile is near to zero. Mean and median of vitamin E intake are equal of recommended level. Dietary intake of vitamin A per 1000 kcal is maximal in group of children 0-6 year old and in adults aged 30-60 y. Nutrient density of daly diet in relation to antioxidant vitamins has maximal level in old group of population 60+ and minimal level in 6-18 year old children.

Abstract
The investigation of vitamin sufficiency of young basket-ball players 14-16 years old (17 girls and 14 boys) has been carried out 59-77 per cent of the children had the deficiency of B group vitamins, 24-54 per cent--vitamin E insufficiency, most of them (82-100 per cent)--deficit of carotenoids while they were sufficiently vitamins C and A supplied. The girls were supplied with vitamins better than boys. There was no one adequately supplied with all vitamins among boys while 12 per cent of girls had adequately sufficiency. The girls had deficit of 1-2 vitamins more often whereas the combined insufficiency of 3-4 vitamins took place in 1.8-2.3 fold more frequently among boys. Daily intake of multivitamin containing 10 vitamins in daily recommended doses, lipoic acid, methionin and 9 minerals by boys lead to their blood plasma vitamin C, E, B-2 and beta-carotene level increase. Vitamin C insufficiency disappeared. Deficit of beta-carotene and vitamin B-6 became 1.5 fold rarely, vitamin B-2--2 fold, vitamin E--6 fold. Thus daily intake of recommended doses of vitamins eliminates biochemical signs of vitamin deficiency.

Abstract
The energy expenditure and requirements and dietary intake were studied in basketball players aged 14-16 years during 3 week-training period. The subjects of study were 14 boys and 18 girls as of the members of reserve of Russian Olympic basketball team. The dietary intake was estimated by dietary record of all food consumed within 24 hours last 7 days of training period. The energy expenditure was estimated by registration of time on different physical activity of team and multiplication on physical activity coefficient. The decrease of body mass and body mass index were observed in boys with height 195 cm and more to the end of training period. These tall boys did not consume enough food to satisfy the estimated energy requirement. It is estimated that energy need of tall basketball players is no less then 5000 kcal for boys and 3100 kcal for girls.

Abstract
The epidemiological research of the nutrition and health status of the low-income people was held in five regions of the Russian Federation. The analyze of the nutrients, energy, micronutrients and of the main groups of foods consumption in the families with the different level of income was executed. The estimation of the nutrition status was made with using body mass index. The results of this work showed the need of the development of nutrition support in social service and using the medical criteria for this support in low-income people.

Abstract
The method of actual feeding evaluation on frequency of food-stuffs consumption was developed. The method of 24-hour reproduction of a feed and the method of consumed food registration in a diary by testing person himself. The main results of study testified to reliability of data, received by a developed method.

Abstract
Actual nutritional status and dietary intake of different iron forms of the women in Sankt-Peterburg were investigated. The concentration of blood hemoglobin was studied. Signs of deficiency of nutrition of the investigated women were not found both by analysis of foodstuffs and energy intake and by anthropometric estimation of nutritional status.

Abstract
The probability approach analysis was carried out for assessment of risk of inadequate intake of vitamin B1, B2 and protein in Moscow's school; children in 1992-1994. Inadequate protein, vitamin B1 and B2 intakes were found in 11%, 8% and 26% of schoolchildren respectively. It was shown that probability approach calculations give lower percentage of inadequate intake all nutrients than simple comparison of intake values with recommended allowances.

Abstract
Annual surveys of the food intakes and nutritional status of schoolchildren (aged 10 and 15 y) in a Moscow district were conducted in 1992-1995, a period of rapid economic transformation in Russia. Food intake was assessed through use of two 24-h recalls. A few socioeconomic variables-parental educational level, family size, participation in organized sports, and use of school breakfast and lunch options-were included in the dietary interview. Nutritional status was assessed by measurement of height and weight and comparison with international standards. There was a slight difference in the food pattern in the two age groups and some differences between boys and girls. Milk and other dairy products, fruit, juices, and vegetables were consumed in small quantities and relatively infrequently. Bread and bread products, porridge, confectionery, and meat and meat products were consumed more frequently and in larger quantities. Protein contributed approximately 12% and fat 29-32% of dietary energy. About 70% of the subjects had low intakes of riboflavin and calcium compared with reference values. Mean nutrient intakes did not change significantly during the study period. During the first 3 y of the study period, there was a nonsignificant overall decrease in height and weight but this was within the limits of normal variation.

Abstract
In this part of the study the nutritional status of Moscow's schoolchildren was assessed by height and weight. The anthropometric data were compared with the CDC/WHO international growth references standards by ANTHRO version 1.01 software. The prevalence of low weight-for-age (Z-score < -2) was more frequent in boys of 15 years of age. Low height-for-age was more prevalent in the group of boys of 15 and girls of 10 years of age. In the period under study there was a slight decrease in height and weight of schoolchildren, but this was within the limits of expected normal variation. A few selected socio-economic variables such as parental education, family size, participation in organized sports and use of school breakfast/lunch options were included. The size of the family or whether it is a one- or two-parent household does not seem to influence energy or nutrient intake, nor are the anthropometric variables significantly affected. The more size of family and the lower the father's education than lower the children's total fat intake and intake of energy from fat.

Abstract

It was part of multicentre study of schoolchildren dietary intake evaluation sponsored by WHO/UNICEF. Information on food intake was collected using two 24-hour recall interviews. The design of study was carefully elaborated by international group of nutritional epidemiologists. There was a slight change in food pattern with age, and some differences between boys and girls of 15 years old. Nutrient intakes in the groups studied did not change significantly during the period of study. Protein contributed about 12% and fat 29-32% of the dietary energy, and total energy intake was overall on a satisfactory level. 70% of the subjects had low intake levels of vitamin B2 and calcium compared with the chosen reference values. Milk and dairy products, fruits, juices and vegetables were consumed in small quantities and relatively infrequently. The consumption of bread and bread products, porridge, confectionery, meat and meat products were consumed more frequently and in larger quantities.

Abstract
Nutrient and energy intake was studied in 892 pregnant women during III trimester of pregnancy. Daily total protein intake was 65-66 g and animal protein made up 60% of total protein intake. Total fat consumption was 80-81 g, carbohydrates intake was 240-250 g. Total energy intake in Ekaterinburg's and Moscow's pregnant made up 2031 and 1978 kcal respectively. Body mass gain from I to III trimesters have formed about 9 kg or 0.41 kg per week. Body mass index (BMI) averaged 25,1 and 25,7 in Ekaterinburg's and Moscow's pregnant on day of survey. About 2,5% of women had BMI lower than 19,8. The results were compared with data of developed countries and conclusion was made about sufficient energy and macronutrient intakes, but fat intake was moderately high and formed 33-35% of total energy. The usefulness of Russian RDA are discussed for evaluation of results of dietary surveys.

Abstract
The questionnaire method was used in the study of the actual nutrition of 20 vegetarians. A group of subjects who received mixed food were observed for comparison. The mean day ration of the two groups differed in the increased proportion of vegetables, fruit, milk products, nuts and vegetable seeds in the vegetarians' nutrition. The analysis of the chemical composition of the ration has shown that the absolute content of protein, fat, carbohydrates, some vitamins of group B in the vegetarians' nutrition is lower than the values recommended. Besides that this nutrition is deficient in Fe, Zn, vitamin B12. However, vegetarian rations with low calorie value are capable of providing physiological requirements of the body in food fibres, vegetable oil, beta-carotene and ascorbic acid.

Abstract
Activity of microsomal hydroxylation and conjugation enzymes was studied in the liver of rats that received food concentrate of protein from sunflower groats (SPC) produced in the USSR, and soya protein isolate (SPI) produced by Ralston Purina, USA. SPC consumption during 3 months was attended by elevation of cytochrome-450 content, and activity of microsomal hydroxylation and uridinephosphate-glucuroniltransferase (UDP-GT) in hepatic microsomes, that may evidence the presence in SPC of chemical compounds of natural origin, or chemical modification of the own amino-acid products. SPI did not influence activity of microsomal hydroxylation enzymes, but it raised UDP-GT activity. Both protein products produced no effect on activity of enzymes associated with glutathione metabolism--glutathione-S-transferase and glutathione-reductase in hepatic cytosol. However, SPC and SPI induced a manifold rise in glutathione-peroxidase activity in cytosol of the liver and blood that indicates the presence of the trace element selenium in the products studied.

Abstract
Workers of two chemical plants exposed to chlorobenzene were examined for actual nutrition and effects of the treatment and prophylactic diet on the food status. Investigation of the actual nutrition has demonstrated that the energy value of the daily diets approaches the magnitudes established for the given occupational and age group whereas the daily distribution of food with respect to the caloric value and alimentary substances does not correspond to the hygienic standards. The treatment and prophylactic diets developed for the workers were also characterized by disproportion between the dietary components. As compared to the control group, the workers exposed to chlorobenzene demonstrated a lower content of total glutathione in blood plasma. The majority of the workers manifested ascorbic acid deficiency. In accordance with the study of the coefficients of the activation of erythrocytic enzymes, it may be concluded that the workers placed on the treatment and prophylactic diet are better provided with vitamins B1, B2 and B6 than the workers of the housing and communal services. Thirty percent of the workers showed vitamin B6 deficiency. This may have an adverse action on the resistance to industrial substances conjugating with glutathione. The rate of vitamin B1 deficiency was also fairly high, whereas in the workers of one of the plants the magnitude of the TDP-effect appeared higher than normal.

Abstract
Three series of experiments were conducted to study the effects of varying food factors on lipid peroxidation (LPO) activity in rat liver microsomes. The food rations contained heat-treated sunflower oil, soybean protein isolate, krill protein concentrate. A long-term intake of heat-treated oxidation products was attended by significant activation of LPO in the enzymatic system, by elevation of cytochrome P-450 level, by increased activity of ethylmorphine N-demethylase and aniline n-hydroxylation. The period of half-inactivation of cytochrome P-450 was significantly shortened in NADPH-dependent LPO. The rate of NADPH-dependent LPO was not significantly different in the animals given equal amounts of soybean protein isolate or casein (control). Activation of NADPH-dependent LPO and induction of cytochrome P-450 were recorded in liver microsomes of the animals given krill protein. The high concentration of cytochrome P-450 (in the homogenate and microsomes) correlated with the acceleration of hydroxylation of standard substrates ethylmorphine and aniline.

Abstract
In experiments on dogs with Pavlov's pouches it was shown that glutathione infusion into the blood produced a highly pronounced stimulating effect on the gastric secretion induced by pentagastrin. Endogenous glutathione produced similar effect. It was found that intake as a drink of mono-sodium glutamate led to a significant increase of glutathione concentration in the dogs' blood, that was, probably, the result of its intensified production in the intestinal wall and passing into the blood. The growth of glutathione concentration in the blood coincided with its stimulating effect on the gastric secretion. Glutathione administered separately into the blood, or intake of glutathione without pentagastrin did not produce stimulating effect on gastric secretion. The data presented have evidenced that glutathione, besides its known functions, plays a role of the factor engaged in the regulation of gastric secretion.

Abstract
Processes of biotransformation of xenobiotics in the rat liver at consumption of rations containing caseine (5, 14 or 18%) or 18% of soya protein isolate (SPI). Consumption of SPI caused a decrease of restored glutathione concentration in the liver, an increase of glutathione reductase and a sharp activation of glutathione peroxidase in the liver cytosole. The equalizing of the amount of sulfur-containing amino acids in the ration with 14% of caseine with their amount in the ration containing 18% of SPI was followed by the equalizing of the liver restored glutathione concentration. The enrichment of SPI ration with 0.35% of L-methionine led to an increase of the liver restored glutathione concentration to the level observed at 18% of caseine. The activity of the liver microsomal uridine diphosphate-glucuronyltransferase raised under the influence of SPI.

Abstract
The content of P-450 cytochrome and vitamin A was determined in the liver of mature male rats who received for a month daily parenteral administrations of phenobarbital solutions (Pb; 40 mg/kg), rheopyrine (a mixture of equal aliquots of amidopyrine and butadione; 200 mg/kg), amidopyrine (100 mg/kg) or water (control). The animals were kept on a semisynthetic diet, receiving once, every week 400 IU of retinol-palmitate per rat. Pb administration markedly (more than threefold) increased P-450 cytochrome content in the liver. Rheopyrine and amidopyrine also elevated its level, but to a lesser extent than Pb. Pb and rheopyrine also depressed vitamin A levels in the liver and caused either a trend towards its decrease (Pb) or a significant decrease (rheopyrine) of its overall content in the liver. The effect of amidopyrine on the concentration and storage of retinol in the liver was less pronounced. The data obtained suggest that the drugs inducing P-450 cytochrome are capable of disturbing vitamin A content in the body.

Abstract
The total glutathione content was studied in the liver, kidneys and erythrocytes of rats given semisynthetic rations containing protein with 5, 10 and 15% of calorific value, as well as protein with 18% of calorific value supplemented with 0.125-0.425% of L-methionine. The total glutathione content in the liver directly depended on the protein content in the ration, while that in the kidneys did not vary with the protein level. The glutathione concentration in erythrocytes was significantly reduced with the rise of the protein quota in the ration. The addition of L-methionine to the ration also produced a reverse effect on the glutathione content in the liver and erythrocytes. However, the growth of the glutathione concentration in the liver and its lowering in the erythrocytes were recorded only after the addition of 0.125 and 0.225% of methionine. The rise of the methionine added up to 0.325 and 0.425% produced no effect on the glutathione concentration in the liver and erythrocytes, at the same time the glutathione concentration and gamma-glutamyltranspeptidase activity in the kidneys rose. It has been concluded that the methionine level in the ration, at which the glutathione content in the liver and erythrocytes is stabilized, can serve as a criterion of an adequately balanced ration for animals (with respect to methionine) with the use of casein as a protein source.

Abstract
Correlation of actual consumption of vitamins B1, B2 and B6 with biochemical parameters of their utilization has been studied in two groups of workers (one group was engaged in the synthetic leather industry, the second one in the diamond treatment industry). It is shown that the actual utilization of vitamins B1, B2 and B6 correlated well with the stimulation coefficients (SC) of the basal activity of the corresponding erythrocytic enzymes. This correlation can be expressed in an equation of linear regression with a preset SC. Solution of this equation gives the values that can be used in the diagnosis of changes in the vitamins B1, B2 and B6 requirement in certain population groups. The results of the study evidence that vitamin B1 and B6 are especially necessary for workers whose activity is associated with manifest nervous-emotional stress, while the workers engaged in the synthetic leather industry being exposed to dimethyl formamide are in need of vitamin B2.

Abstract
After a decrease of protein in rations of rats content of total glutathione was decreased in liver tissue, whereas the glutathione reductase activity was increased in liver cell cytosol. The glutathione reductase activation occurred due to an increase in the enzyme affinity to the substrate. In the rations containing 15%, 10% and 5% of protein the apparent Km values of the glutathione reductase reaction in liver cytosol constituted 91 microM, 74 microM and 50 microM, respectively. The glutathione-S-aryltransferase activity was decreased in liver tissue only under conditions of a distinct protein deficiency.
